Method 1. In a bowl fitted with a beater, mix the Doughnut Concentrate, bread flour, water and yeast for 2 minutes on slow speed and then 6minutes on fast speed. 2. Sheet out to 10mm and place in the freezer for 10minutes to firm up. 3. Cover half with 10mm of chilled Danish Pastry Margarine. 4. Fold over dough to give 2 layers of dough and 1 layer of fat. Give 2 book turns then chill for at least 1 hour. 5. Give further book fold then reduce to 7mm. 6. Cut with ring donut cutter; each cronut dough should be 50g in weight. 7. Prove at 30ºC for 45 minutes approximately. 8. Fry at 190ºC for 2 minutes per side. 9. Once cooled, filled with Mactop Extra and top with 5th Avenue® Icing range.

Method 1. Place Doughnut Concentrate into spiral mixer with the bread flour, yeast and water and mix for 2 minutes on 1st speed, then 6 minutes on 2nd speed. 2. Divide into round 60g dough pieces. 3. Prove for approximately 50 minutes at 38°C / 75-80% R.H. 4. Remove doughnut from Prover 5-10 minutes before frying to allow a dry skin to form. 5. Fry at 375ºF (190°C) for 90 seconds each side. 6. Inject with Luxury Banoffee Filling (20g) and finish with 5th Avenue® Caramel Icing and dried banana.
Method 1. Place the Choutex in a machine bowl and add water and beat on slow speed for 2 minutes. 2. Scrape down and beat for a further 7 minutes on middle speed, until a smooth paste is obtained. 3. Ensure baking tray is lightly greased and pipe the batter into long éclair shapes, approximately 6 inches long. 4. Bake at 195-215ºC for approximately 30-40minutes. 5. Pull out the damper towards the end of bake to evacuate all steam. 6. Meanwhile, prepare the cream by whipping Mactop Traditional, drizzle in Luxury Orange Filling.
Serving Suggestion
7. Once cooled, slice the éclairs in half and using a star nozzle, pipe the cream, drizzle edges with Luxury Orange Filling and sandwich. 8. Finish with 5th Avenue® Lemon Icing.
