TEAR AND SHARE FOCACCIA WITH SUNDRIED TOMATOES AND OLIVES Ingredients 2kg Bread Flour 1.1 10kg Water Olive Oil

200g Softie™ 100g Yeast

Sundried Tomatoes Olives

Method 1. Place flour, water, yeast and Softie™ into a spiral mixer and mix for 2 minutes on 1st speed followed by 4 minutes on fast. 2. Remove dough from bowl and chop through sundried tomatoes and olives. 3. Scale 300g of the chopped dough into a 6" diameter sponge tin or foil. 4. Prove at 38°C 85% R.H for approximately 40 minutes. Sprinkle with mixed herbs. 5. Bake at 220°C (435°F) for approximately 15 minutes. 6. Brush with olive oil immediately after removing from oven.

SEEDUCTION™ LOAF Ingredients 1kg Seeduction™ Multiseed 950g Water

1kg Bread Flour 45g Yeast

Method 1. Place Seeduction™, flour and water (tempered to give final dough temperature of 27°C (80°F) into a mixer. 2. Mix for 10 minutes on 1st speed followed by 5 minutes on 2nd speed. 3. Scale dough into loaf shapes as required and prove at 40°C (104°F R.H 85% for approximately 50 minutes. 4. Bake at 240°C (460°F) for 25 minutes (adding steam for crusty top).

HOAGIE ROLLS Ingredients 1.8g Bread Flour Jumbo Oats (for topping)

200g Macphie Softie 80g Yeast

200g Oatmeal 1.150g Water

Method 1. Place all ingredients (excluding Jumbo Oats) into a spiral mixer and mix for approximately 2 minutes on 1st speed and 6 minutes on 2nd speed. 2. Remove dough from bowl and scale at 100g. Mould into round shapes and rest for 10 minutes. 3. Roll into finger shapes, brush with water and dip into jumbo oats before placing on French stick tray with silicone paper. 4. Proof for 50 minutes approximately at 38°C/90% humidity. 5. Bake for approximately 12 minutes at 230°C (450°F).

CIABATTA ROLLS Ingredients 4kg Bread Flour 80g Olive Oil

2.8L Water 120g Bread Conc.

120g Yeast

Method 1. Mix flour, 2.4L of water and Bread Conc. for 2 minutes on 1st speed followed by 5 minutes on 3rd speed in a spiral mixer. Add the remaining water and oil and mix for a further 4 minutes on 2nd speed until dough is soft and smooth. 2. Transfer dough onto a heavily floured 30 x 18, 4 sided tray and flatten. 3. Dust with flour and leave to ferment for 1 hour. 4. Mark 12 x 8cm with wheels then cut through with metal scraper. Carefully remove rectangles of dough and place onto rice dusted trays (12 per tray), rest on trays for 30 minutes then gently pull to Ciabatta shape. 5. Rest for a further 10 minutes then bake at 230°C (450°F) with steam for 25 minutes, opening damper after 20 minutes. Serving Suggestions
