Recipes Swiss Roll

Fatless Sponge Cake

Victoria Sponge

Ingredients ● 1kg Macphie sponge Mix ● 550g Water Method 1. Add the water to the Macphie Sponge Mix and whisk for 1 minute on slow speed. 2. Scrape down. 3. Whisk on middle speed for 10-15 minutes followed by 1-2 minutes on slow speed. 4. Deposit 1200g into a 30” x 18” tray and spread level. 5. Bake at 240 degrees c for 5 minutes 6. Allow to cool then spread and roll.

Ingredients ● 1kg Macphie Sponge Mix ● 500g Water Method 1. Add Sponge Mix to mixer fitted with a whisk. 2. Add water and mix for 1 minute on 1st speed. 3. Scrape down and whisk on top speed for 10-15 minutes, followed by 2 minutes on 1st speed. 4. Deposit approximately 150g of batter into o a 6” sponge tin and bake at 190 C for 18 minutes (dependent on type of oven).

Ingredients ● 1kg Macphie Sponge Mix ● 500g Water ● 150g Shortening/Cake Margarine Method 1. Follow steps 1,2 and 3 on Fatless Sponge Cake adding shortening/cake margarine at step 1. 2. Deposit 230g into a 15cm (6”) round o tin and bake at 170 C for approximately 30 minutes.

Following a very successful 2013 campaign, Craft Bakers’ Week will encourage consumers to ‘Love Your Baker’ and invite them to visit their local baker for fabulous bread, cakes and so much more. National and local PR will highlight the skill of craft bakers, focussing on those who are taking part in CBW 2014. The campaign will include Twitter and Facebook activity which you and your customers can join in with, and will be supported by a website where you can download advice and customers can find their local participating baker. CBW will be supporting ‘Make-A-Wish’ Foundation.
