We are the official charity for Craft Bakers’ Week 2015, your support will help grant magical wishes to enrich the lives of children and young people fighting life-threatening conditions. Everything you do will make a difference and help grant wishes to more desperately ill children. RECIPES CHERZIPAN CAKE • Cake batter • Water icing 1. 2. 3. 4. 5.

• Renshaw Original Marzipan White • Glace Cherries

Line a loaf tin with baking parchment and half fill with your cake batter. Place in half the cherries and top with a layer of white marzipan. Fill with the remaining batter and sprinkle over the cherries. Bake until golden and cooked through. To decorate, drizzle with a thin water icing.

HANDY HINT!

You can sprinkle Demerara sugar over the loaf cake whilst it is still hot as an alternative decoration.

BEESTING CAKE • Crème cake mix into a sheet tray – mix in 20% Macaroona at the end of mixing the batter • 200g Butter 1. 2. 3. 4. 5.

200g Caster sugar 100g Honey 150g Cream 200g Flaked Almonds

Add all ingredients apart form the almonds to a pan and heat until a golden caramel colour, remove from heat and add almonds. Pour over the cake mix when it is just baked, as evenly as possible. Return it to the oven and bake until the caramel has set. Allow to cool. Whip double cream and add in equal quantities of ready-made custard. Slice cake and pipe mixture into the centre, replace the lid. Slice and chill.

CHERRY MACS • 2000g Macaroona or Renmac 1. 2. 3. 4.

• 120g Renwhites solution*

Place Macaroona and Renwhites in a bowl with a beater and mix on top speed for three minutes. Pipe onto lined trays at required size. Sprinkle over with flaked almonds and dust with icing Sugar. Place a cherry half on top Open damper on oven. Bake at 175ºC (350ºF) until golden brown, 20 to 25 Mins. When cold remove from tray

FRUITED BAKEWELL • 1200g Renshaw Macaroona or Renmac • 800g Butter or Margarine 1. 2. 3. 4. 5. 6. 7. 8. 9. 10.

• 800g Egg • 600g Rice flour • 1000g Sultanas

• 500g Whole cherries • Raspberry jam to seal the pastry

• Caster sugar for dusting • Vanilla to taste

Cream the Macaroona and butter together on 2nd speed. Scrape down. Add the egg in portions on 2nd speed and scrape down. Add vanilla. Fold in the flour. Finally blend in the fruit. Line a 30” x 18” baking sheet with sweetpaste and part bake for 10 minutes. Remove from oven then spread a thin layer of raspberry jam over base. Cover with mix, then bake at 175 C / 350F until golden brown. Once cool, sprinkle over with caster sugar and cut into required shapes.

Mincemeat Rainbow Vanilla Frosting

Method 1. Add the margarine and Viennese Mix to a machine bowl fitted with a beater. 2. Mix on slow speed for approximately 30 seconds or until fat is dispersed. 3. Mix for a further 5 minutes on second speed. Fold in mincemeat (10% of batter weight). 4. Deposit using a piping bag fitted with a star nozzle onto a silicone lined baking tray. 5. Bake at 190°C for 15 minutes. 6. Once cooled, layer one side of the biscuit with Rainbow Vanilla Frosting and deposit a small amount of mince meat. Sandwich with another biscuit.

Method 1. Add Soft & Chewy Cookie Mix to a machine bowl fitted with a beater and gradually add water whilst mixing on 1st speed. 2. Continue mixing on 1st speed for a further 1½ minutes or until the dough has bound together. 3. Deposit 30g of cookie dough onto a baking tray and flatten gently into puck shape. 4. Bake at 170°C for 14-16 minutes. The baked cookies should be soft in the centre when leaving the oven to give a soft moist chewy eating cookie when cooled.

Serving Suggestion

5. Sandwich together with Rainbow Vanilla Frosting and roll in hundreds and thousands.

Method

1. Add the butter and Shortbread Mix to a machine bowl fitted with a beater. 2. Mix on a low speed until a stiff dough is formed (approximately 5-10 minutes). 3. Roll out dough to 5mm and cut out snowflakes using a cookie cutter. 4. Bake at 150°C for 20-25 minutes until lightly golden brown. 5. Once cooled, pipe 5th Avenue® White Icing to decorate.
