MOCKTAIL CUPCAKES (Mojito, Berry Daiquiri and Pina Colada) INGREDIENTS For the Frosting 1kg American Crème Cake Mix i-zings™ 360g Whole Egg Vanilla Rainbow Frosting 300g Vegetable Oil Edible Decorations/Sweets 220g Water METHOD Place 1kg American Crème Cake mix with 360g whole egg into a mixer and mix for 1 minute on 1st speed then a further 3 minutes on 2nd speed. On 1st speed add 300g oil and 220g water over 1 minute mixing. Scrape down and continue mixing for 3 minutes on 1st speed. Deposit 30g of batter into cupcake cases and bake at 195oC (380oF) for 30 minutes. Finishing: Mix i-zing™ and Vanilla Rainbow Frosting at a ratio of 50:50 to create a flavoured filling. Once cool, pipe a rosette onto the cupcake and finish as desired. i-zing™ TARTS INGREDIENTS 1kg Macphie Shortbread Mix 400g Cake Margarine 150g Water

METHOD To make pastry bases: Place Shortbread Mix in a mixer fitted with a beater. Add cake margarine and mix for 2 minutes on 1st speed until a breadcrumb type consistency is obtained. Add water. Mix on 1st speed until a dough is formed. Rest in chill for 30 minutes (if possible). Pin out and line individual foils. Bake at 180oC (360oF) for 20 minutes. Once cool, pipe lemon curd or jam onto the base. To make filling: Whip up Macfil as per TIS recipe using lowest water level. Pipe a bulb into pastry cases. Flood with i-zings™- Do not overheat the i-zing™ or it will run off the filling. i-zing™ PUSH POPS INGREDIENTS Lemon Sensation Cake Mix Chocolate Orange Cake Mix

i-zings™ Vanilla Rainbow Frosting

METHOD Bake the Sensation Cake Mixes as standard tray bakes recipe. Once cool, thinly slice the cake into horizontal layers. Using a round cutter with the same diameter as the push pop, cut out cake discs. Place a layer of cake at the bottom of the push pop then use alternate layers of frosting and cake. Finish the push pop with a spiral bulb of frosting on top. SHORTBREAD SANDWICHES INGREDIENTS 1kg Macphie Shortbread Mix

360g Softened Butter

Filling: Mix i-zing™ and Vanilla Rainbow Frosting at a ratio of 50:50 to create a flavoured filling. METHOD Place Macphie Shortbread Mix and softened butter in a mixer. Mix on slow speed until a stiff dough is formed. Pin out to required thickness. Cut into rounds using a cutter. Place onto baking tray and bake at 170 -185oC (350 - 380oF) for 18 minutes. Leave to cool, pipe a small amount of flavoured filling onto one round and sandwich together. PINEAPPLE SLICES INGREDIENTS 1kg Genoese Mix 400g Water 145g Margarine

Pineapple i-zing™ White 5th Avenue® Icing

METHOD Place cake margarine and Genoese Cake Mix in a mixer. Mix on 1st speed for 1 minute. Add water on 1st speed for 1 minute. Scrape down and beat for a further 4 minutes on 2nd speed. Reduce to 1st speed and mix for a further minute. Deposit 900g batter into a 12" x 7" foil and bake at 180oC (360oF) for 25 minutes. Once cool, cut in two, layer together with i-zing™ and whipped Mactop® Traditional. Top with i-zing™ and White 5th Avenue® Icing. SUMMER FRUIT ECLAIRS INGREDIENTS 1kg Macphie Choutex 1.65g Cold Water

Summer Fruits i-zing™ Mactop® Extra or Traditional (whipped)

METHOD Place Choutex into mixing bowl fitted with a beater, add water and beat for 2 minutes on 1st speed, scrape down and mix on 2nd speed for 6 minutes. Transfer into a piping bag and pipe 4 rows of eclairs, approximately 5" long and 3/4" wide onto a silicone lined baking tray. Leave for 1 hour prior to baking. Bake for 35 minutes at 220oC (425oF), open damper after 25 minutes. Leave to cool and slice in half. Heat i-zing™ to 45oC and dip the top of éclair into i-zing,™ leave to set. Pipe Mactop® onto the other half.
