MINI MUFFINS Recipe: 1000g Mississippi Cake/Muffin Mix s 235g Vegetable Oil s 425g Water Method: Place powder ingredients into a mixing bowl. Add liquids and mix for 1 minute on 1st speed, followed by 6 minutes on 2nd speed. Deposit approx 35g of batter into mini muffin cases. Baking: 375°F (190ºC) for approx 25 minutes. Top Heat 5/Bottom heat 2. Finishing: Once cool, heat i-zing™ to 45ºC and dip tops of mini muffins and finish with sprinkles.

FONDANT FANCIES Recipe: 1kg Genoese Mix s 400g Water s 144g Margarine s i-zings™ Method: Place Genoese Mix in a mixer. Add margarine and mix for 1 minute on slow speed. Add water on slow mix for 4 minutes on medium speed. Deposit 900G batter into rectangular foil and bake at 180ºC (360ºF) for 30 minutes. Leave to cool then cut into squares. For best results put individual cakes into the freezer for at least one hour before enrobing with i-zing.™

FRUIT i-zing™ SALAMI Recipe: 700g i-zing™ s 400g Digestive Biscuits s 200g Mini Marshmallows Method: Heat i-zing,™ add in broken biscuits - stirring until fully covered and then add in marshmallows. Press into a long sausage shape and wrap in cling film. Place in fridge for 2 hours to set up.

ALOHA CAKE POPS Recipe: 700g Cake Crumb s 500g 5th Avenue® White Icing (heated to 45ºC) s i-zings™ Method: Mix crumb and icing together to form a paste, form into 30g balls. Dip the lollipop stick into melted chocolate them push into the base of the pop and leave to set. Dip the pop into melted chocolate and leave to set. Heat i-zing™ to 45ºC and dip pops then finish with sprinkles.

MARSHMALLOW KEBABS Method: Push 4-5 marshmallows onto a lollipop stick. Heat i-zing™ to 45ºC and dip the kebabs, wipe excess i-zing™ off with finger. Finish with sprinkles.

DOUGHNUTS Recipe: 2000g Fermented Doughnut Mix s 80g Yeast s 840g Water s Dough Temperarture 28ºC Method: Place all ingredients into spiral mixer and mix for 2 minute on 1st speed, then 8 minutes on 2nd speed. Remove dough from spiral mixer, chaff up and rest for 10 minutes. Pin dough out to desired thickness and cut out doughnuts with ring cutter (50g). Place on baking trays lined with doughnut cloths. Remove doughnuts from prover 10 minutes before frying to allow dry skin to form. Hold at ambient. Proving: Approximately 30 - 50 minutes at 35- 40ºC (R.H. 70%). Serving Suggestions

Frying Temperature and Time: 375ºF (190ºC) for 60 seconds each side. Once cooled, heat i-zing™ to 45ºC and dip doughnuts and finish with sprinkles, jelly beans etc.
