Matt Okine gets clever in the kitchen techniques by the chefs, and he didn’t need any convincing to get on board. “Who wouldn’t want a job that involves smashing food into your face for eight hours a day?” he said. “I’ve always loved cooking so to get paid to learn secrets from the best is genuinely a dream. The only problem is I put on about 6kgs during filming, so if the next season could be the same idea, but with Australia’s best personal t wasn’t hard to convince trainers that’d be ace.” comedian Matt Okine to go The former triple J host into the home kitchens of was a spaghetti bolognese Australia’s top chefs including man before filming this show, Neil Perry, Jill Dupleix and but now wouldn’t be averse Colin Fassnidge for a new TV to rustling up a pan-fried show. salmon, with cauliflower In Short Cuts To Glory: Matt puree and honey-roasted Okine vs Food, the comedian carrots to impress his gets taught some basic, girlfriend. “I’m more relaxed in the and world class, cooking

or a hard-earned thirst, Aussies can’t go past a big cold beer. And the best cold beer by far is full-strength, according to new data. Figures published recently show beer made up 40 per cent of the 189 million litres

of pure alcohol available for consumption in Australia in 2015-16. That’s about 3.9 litres per person aged 15 years or older. It’s the first time in nearly a decade that number has increased, bucking the longterm trend.

kitchen now. If something goes wrong, there’s usually always a way to save it. Stay calm, and remember that you learn most from the mistakes. So embrace the stuff-ups,” he said. While the chefs he worked with were diverse, there were a few tricks of the trade he noticed they had in common. “Sharp knives, I was so jealous of their knives,” he said. “They all had fun and nobody follows the rule book. Cook to your tastes, use the ingredients that you’ve got, and take some risks. One person’s trash is another person’s treasured tomato relish recipe, so never get stuck thinking there’s a right or a wrong in the kitchen.” He also learned what not to do in the kitchen, and found his biggest problem was trying to cram too many ingredients into the one frying

pan. “Pots and pans are like trains. It’s a million times better being in one if you don’t have your face mushed into someone else’s armpit. Give your food some space,” he said. There was one piece of advice from one chef in particular that really stuck with Okine. “Mark LaBrooy (The Blue Ducks) taught me that salt is like a microphone for flavour,” he said. “If you want to make a drum kit sound loud, don’t just stick a big mic in front of the whole thing, because then you can’t control how loud you want the kick or snare to be. And the same goes for salt - so salt things in stages.” *Short Cuts To Glory: Matt Okine vs Food airs on Thursdays at 8pm (AEST) on ABC and ABC iview

Wine accounted for 37.5 per cent of total volume, spirits and ready-to-drink beverages 18.8 per cent and cider 3.8 per cent. In total, there was 9.7 litres of pure alcohol was available for drinking per person equivalent to an average of 2.1 standard drinks a day. The amount available is up from 2014-15, marking the first rise in nine years, but still consistent with the downward trend over recent decades.

Beer was the main contributor to that increase, although the volume of pure alcohol available for consumption as pre-mixed drinks and spirits also rose. The data, released by the Australian Bureau of Statistics, does not take into account duty-free alcohol brought into Australia by travellers, stored or cellared alcohol, or that used in food or thrown out.

Quinoa is good for the heart, say researchers

A

ustralian researchers say they’ve proven that eating quinoa is good for the heart and recommend occasionally swapping a bowel of rice for the ancient grain. A small study published in journal Current Developments in Nutrition found the consumption of 50 grams of quinoa every day for 12 weeks significantly lowered levels of triclycerides - a type of fat in the blood linked to heart disease - in a group of overweight and obese people. “Whether quinoa is a ‘superfood’ is still up for debate, but we can now confidently say it does deliver health benefits,” said lead author Diana Navarro-Perez at La Trobe University. High levels of triclycerides

have been extensively linked to a greater risk of cardiovascular disease because essentially their is more fat circulating through the body. Navarro-Perez explains this fat can eventually lead to a blockage in the arteries. “If you have lower levels of triclycerides you reduce your vascular disease risk,” she told AAP. As part of the study, participants were randomly broken up into three groups. One group was allocated to eat 25g of quinoa, another 50g and the third group stuck to their normal diet and avoided eating quinoa. At the end of the three months, no significant differences were observed in body size or effect on total

cholesterol. However, a significant difference was noted for triglycerides. Triglyceride levels reduced by an average 12.7 per cent among the participants who ate 50g, according to the findings. No significant change in triglycerides were observed in the control and 25g groups. It’s still not understood why quinoa consumption resulted in a reduction of triglycerides. Previous animal studies suggest that proteins found in the grain may boosts the ability of the bile acid in the stomach to better absorb the fat. Ms Navarro-Perez says in light of the findings more

Australians should eat quinoa. “You will get more benefits from eating quinoa than eating rice because in rice there is really no functional ingredients whereas in quinoa we know now that if you eat 50 grams of quinoa, which is four tablespoons, per day you have a decreased risk of cardiovascular disease,” she said.

Breakfast vital for kids’ nutrition: study

C

hildren and teenagers who skip breakfast are missing out on key nutrients needed for their growth and development, British research suggests. The findings appear to support the claim that “breakfast is the most important meal of the day”. Scientists used food diaries to assess the breakfast habits of 802 children aged four to 10 and 884 young people aged 11 to 18 across the UK. More than a quarter of the older participants missed

breakfast every day between 2008 and 2012 compared with just 6.5 per cent of the four to 10-year-olds. The study showed that 31.5 per cent of those who skipped breakfast were not getting the recommended minimum daily amount of iron. Nineteen per cent did not meet the lower recommended nutrient intake (LRNI) for calcium, and 21.5 per cent did not meet the LRNI for iodine. None of the children who consumed breakfast every

day had a folate intake below the LRNI, compared with 7.3 per cent of those who avoided the morning meal. Lead researcher Dr Gerda Pot, a lecturer in nutritional science at King’s College London, said: “This study provides evidence that breakfast is key for parents to ensure that their children are getting the nutrition they need.” The findings are published in the British Journal of Nutrition.

Mornington Peninsula. The festival will showcase some of the Peninsula’s most popular venues while also shining the spotlight on lesser-known, hidden gems. “The Mornington Peninsula is wellknown for its wineries and is also celebrated for its microbreweries and cideries. We are bringing a selection of these together for a fun-filled festival weekend, so people can experience the diversity of the Peninsula,” said Lisa MacGregor, Event Producer of the Peninsula VineHop Festival. “It is not just another wine festival,” said Lisa. “There is something to excite craft beer lovers, pinot drinkers, cider sippers – there is even a distillery involved that produces gin and other spirits.” The ten festival locations are Blue Range Estate Wines, Dromana Estate, Hickinbotham Estate and Hix Beer, Merricks General Wine Store at Baillieu, Mock Red Hill, Mornington Peninsula Brewery, Nazaaray Estate Winery, Phaedrus Estate, Red Hill Brewery and Red Hill Estate. “There are also three pop-up bars –

Jetty Road Brewery at Dromana Estate and Bass and Flinders Distillery and Mr Banks Brewery at Red Hill Estate – which really adds to the variety people can enjoy during the festival,” Lisa said. Festival-goers gain exclusive ‘behind the scenes’ access at some venues. Baillieu vineyard, rarely open to the public, will be opening for the weekend and the Mornington Peninsula Brewery will host the festival at its production site. Mornington Peninsula Brewery and Red Hill Brewery will also be developing special brews exclusively for the VineHop Festival. Each location will feature live bands or DJs and will have food available, either through their own restaurant or from some of Melbourne’s best food trucks. Details are being finalised and will be announced shortly. Tickets for the Peninsula VineHop Festival are now on sale and start from $38. A limited number of Festival PreSale tickets are available. Transport can also be booked, including shuttle buses, set tours and private buses. For more information about tickets, transport, participating venues, food trucks and entertainment visit the official website vinehopfestival.com.au

hen John Farnham records two of your songs, Take You Back & Sometimes, on his ‘Anthology’ album, and you’ve played with Renee Geyer, Tommy Emmanuel and Daryl Braithwaite, as well as slide guitar on Glenn Shorrock (Little River Band) acoustic CD; it’s little wonder that local lad, Steve Romig had the cream of Australian music recently jump on board and record his Come My Children, an environmental song with a story spanning 25 years. Supporting him were Russell Morris, Mike Brady, Mike Rudd, Joshua Romig and Yvens Ferraz De Camargo to name a few. Says Romig, “The story is a call to arms as well as an affirmation. People can have a positive effect on the environment by making simple decisions about what they buy and how they live each day. Our united voices will make the changes necessary to create energy sources that are environmentally responsible and renewable. Know this: The fate of the entire world is in the hands of mankind. This is the message of the song.” YouTube link: Steve Romig Come my Children. Story by Terri Lee Fatouros
