food | drink French oysters on sale in vending machines

I

n a change from chocolates and champagne, the French are starting to offer fresh oysters from vending machines in the hope of selling more of the delicacy outside business hours. One pioneer is Tony Berthelot, an oyster farmer whose automatic dispenser of live oysters on the Ile de Re island off France’s western coast offers a range of quantities, types and sizes 24 hours a day, seven days a week. French oyster farmers are following in the footsteps of other producers of fresh food who once manned stalls along roadsides for long hours but now uses machines. “We can come at midnight if we want, if we have a craving for oysters. It’s excellent; they’re really fresh,” Christel Petinon, a 45-year-old oyster lover holidaying on the island, told Reuters.

The Ile de Re’s refrigerated dispenser, one of the first and with glass panels so customers can see what they are buying, is broadly similar to those that offer snacks and drinks at railway stations and office buildings worldwide. Customers use their bank card for access, opening the door of their choice from a range of carton sizes and oyster types. Berthelot, 30 years an oyster farmer, sees it as an extra source of revenue rather than an alternative to normal points of sale like food markets, fishmongers and supermarkets. “We felt as though we were losing lots of sales when we are closed,” he said. “There was a cost involved when buying this machine, of course, but we’re paying it back in instalments ... And today, in theory, we can say that the calculations are correct and it’s working.” Selling oysters from a machine bets on more than just open-mindedness among consumers. Live molluscs not kept cool enough or stored too long out of seawater can cause food poisoning when opened. The Berthelots say the machine has an appeal to a younger generation accustomed to buying on the internet and unperturbed by the absence of a shopkeeper.

Gourmet Farmer plates up a new challenge

I

n the first season of Gourmet Farmer, Matthew Evans had a simple dream: to run his own farm in Tasmania. The former Sydney Morning Herald food critic allowed cameras to document his move from big-city life to rural Tassie, running a farm for the first time. Then he met his partner Sadie, they had a son, Hedley, and the farm had to get bigger - two pigs became 22 and season two was born. By season three, things got a whole lot more ambitious and the family had taken up residence on the bigger Fat Pig Farm. Now, season four, the goal is even bigger as Evans pursues his dream to open a restaurant on Fat Pig Farm. The cameras followed the family for nearly two years as they made this dream a reality for the SBS series. “It’s quite funny it’s like our holiday pics sometimes, and my son sometimes likes to watch old episodes,” he said. Evans combines the TV work, making Gourmet Farmer and several documentary projects, with farm work, writing recipes, making appearances at Hobart’s Salamanca Market to sell Fat Pig Farm produce and making and selling bacon. On top of all that, they’ve decided to open a restaurant. “I’d had this idea in my head but I was a bit clueless about what it might entail,” he said. “We bought this property and thought ‘oh we could

probably do something here’ but we didn’t really know how hard that might be in terms of the cost of the infrastructure and the length of the time to build it, the hoops that we would have to go through to get it done. We were quite naive about what it might take.” To say the show captures some trials and tribulations is an understatement. There are building delays, extra costs and some things that were truly out of their hands, all captured for the whole country to see. “It was a pretty wet year so we were sort of battling to build a wood oven at the worst time of year in the worst weather to build a wood oven. And I guess there’s a bit of frustration in how long it took to open, we were probably seven months late by the time we opened,” he said. It’s been a long and eventful road to get to that place where their focus is now on the customer. And it’s all been documented for them as the series kicks off again for its fourth season, serving as a reminder in case they ever want to take something like this on again. “In terms of new projects for us, I’m not sure we’ll be rushing into anything,” he said. “Certainly nothing as grandiose as this.” *Gourmet Farmer airs on Thursdays at 8pm (AEST) on SBS and is also available on SBS OnDemand Catchup TV.

Wine study aims to end cork-or-cap debate

ritish scientists could soon provide a definitive answer to the years-long debate over whether wine tastes better from a cork or screw cap bottle. Members of the public can take part in the Oxford University experiment that is using brain-scanning technology to test how the sounds, aromas and sensations associated with opening a wine bottle influence their taste buds. Researchers will also fit participants with brainscanning headwear, monitoring their pleasure receptors as they take part in a further series of tests. The experiment aims to end years of debate among the wine industry and consumers

alike about which method produces the best taste. The most widely held opinion so far seems to be that no closure - natural or synthetic cork, screw cap or even the latest screw cork - is perfect. Professor Charles Spence, head of experimental psychology at the Crossmodal Research Laboratory, said the experiment marked the first effort by scientists to definitively prove which closure provided the most positive drinking experience. “Our brains have a powerful hold over our taste buds, and it will be interesting to see the differing effects the multi-sensory aspects of wine drinking have on our perception of taste,” he said. “This is a debate that has

fascinating question.” The live experiment ran from July 28 to July 29 in London’s Soho and the results will be released later this year.

Compliments pay when it comes to food

P

aying compliments pays off, at least when it comes to fast food, Austrian economists have found in a study that involved buying 100 cones of ice cream and 800 kebab wraps. The Innsbruck University researchers sent several people to fast food restaurants over a series of days to buy soft serve ice cream, the university said. To measure the effect of praise and recognition in

consumer interactions, the experimenters ended their order with the sentence “You have the best ice cream in town.” They then left the shop to weigh their serving with a small scale. They found that the praise got them 10 per cent more ice cream on average than when they ordered without paying a compliment. Instead of praise, the researchers also tried tipping

the salesperson at the time of ordering. This increased the serving by an average of 17 per cent, but after accounting for the tip, the actual value increase was only 7 per cent. Praising and tipping kebab vendors brought similar results. Over several days, customers who paid compliments got continuously growing portions that ended up being bigger than the ones that were only

accompanied by tips. Lead author Michael Kirchler said his study showed that “there is a tendency to underestimate immaterial incentives such as recognition and praise and to overestimate monetary incentives.” To reach their findings, the experimenters did not have to gorge on fast food, but they gave most of the ice cream to passers-by and the kebab to a charity.
