BEEF

We source all our beef from the Orkney Islands where the beef is selected from the very finest grass fed naturally reared cattle possible. All our beef is from slower maturing traditional beef breeds which have been born and reared on the same farm in Orkney and reared to the highest standards of welfare and animal husbandry possible. All our Orkney beef is from the gold classification where the beef has to be even better than the norm. We then mature selected cuts for up to 4 weeks to ensure the most tender and tasty beef possible. We don’t want lean shiny meat that looks good we want dark, well marbled meat which tastes great! Rump Steak

Steaks

Our Orkney Gold steaks are matured for up to 28 days before sale (minimum 23 days). We select our beef so that the steaks have a good cover of fat and a nice level of marbling to ensure tenderness and flavour. Our steaks are a different eating experience to that of the supermarkets! Popeseye

My personal favourite, best fried! This cut has a heavier texture than sirloin, rib or fillet but is still tender. I believe the flavour to be the best of the steak cuts.

Ribeye

This is Helen’s (the wife) favourite. We trim all the fat to leave the eye of the rib. Amazing flavour, nice open texture and easy to cook. Great on the BBQ! It can however have a little extra fat inside the steak, but this fat is the key to the flavour.

Fillet

The most expensive and has a nice mild meaty flavour. Very popular, as tenderness is always guaranteed. Orkney Gold fillets have bags of flavour and are easy to cook. We trim our fillets to the limit so you only have lean tender meat. £40.00 per kg.

Cooking tips for the perfect steak.

1. Bring your steaks to room temperature for 1-2 hours prior to cooking.

2. Brush your steaks with only a little oil, season only with black pepper.

3. After cooking, rest your steaks for a few minutes prior to eating.

4. Our steaks WILL take less time cook than conventional beef.

The most tender roast. Available as a full fillet, or as selected cuts.

Cooking tips for roasting joints These tips only apply to our beef due to the quality and aging. For Silverside and Salmon Cut. Pre-heat the oven to 200° C/GM6. Place meat in a roasting tray in the oven for 30 mins uncovered, after this time cover with foil and return to the oven at 170 °C /GM6 for 25 mins per 500g. If you like it very pink reduce final time by 20 mins. Allow to stand for the time it takes to make the gravy. For Popeseye and Rib follow the instructions as above but allow only 20 mins per 500g for medium. For flat Sirloin, bring the beef out and rest at room temperature for 3-4 hours prior to cooking. Pre-heat oven to 200-220° C /GM6. Brush meat with a little oil season only with black pepper or mustard. Place in roasting tray and put in oven. For rare – medium give the roast 30-35 mins for 1kg. 40-45 mins for 2kg and 55-60mins for a 3kg joint. Remove from oven and rest. Delicious served with rich creamy dauphoinnoise potatoes and green beans.

LAMB

From July – April our lambs come from Orkney where they enjoy almost continual grazing on the greenest pastures possible. Orkney Gold lamb delivers in the same way as the beef; great on flavour with most tender delicate texture. Early spring lambs come from selected farms in the central belt, where earlier lambs are available, they are from the texel breed and have a delicate texture with a sweet mild flavour. Minced lamb

All our pork is 100% free range and 100% Scottish. All our pigs are selected by size and fat covering, to ensure flavour. Unlike supermarket pork where chemicals are added to make the pork tender without any weight loss, we hang our pigs for 7-10 days so they will be naturally tender and flavoursome. Cooking tips for Pork Listening to what customers tell me, I feel people think it’s not safe to eat until it has been cooked to death. Simply cook pork for less than you think. Roast pork for 25 mins per 500g plus 20 mins. Pork steaks and chops should take no more than 4 minutes each side. Also when roasting pork, sprinkle generously with Maldon sea salt to produce great crackling and flavour.

Now, let me tell you! I am so proud of our bacon, I believe it is up there with the best you can buy, why? All our bacon is cured from selected loins of 100% Free Range Scottish pork, drycured with just the right amount of salt, curing salt and sugar to give maximum flavour and a nice pink colour. Every loin is hand rubbed and allowed to cure for 1 week, then air dried for 2 days befor being sliced or smoked over oak and beech in our own smoker. NO added water, No nasty addition just pure Scottish bacon. Unsmoked Back

These are one of our best sellers. Thin cut rump steak with our own beef based sage and onion stuffing rouladed into the steak. Not just a chunk of sausage meat a wee piece of beef. These are easy to cook. Simply add a little water or beef stock, an onion and little carrot, cover with foil or casserole lid and cook for 45 minutes at 180°C/GM 4. Or use 1 jar of our Cacciatora 395g and simply brown the olives for 5 mins uncovered then add the pasta sauce and cook as above. QUICK COOKING GUIDE STEAKS Sirloins/Ribeyes/Fillets Leave your steaks out of the fridge for at least 2 hours on a plate covered with foil to allow them to come to room temperature. Brush your steaks with a little olive/rapeseed oil and grind black pepper to taste over your steaks. Pre heat your heavy based pan, until its nearly smoking. Place steaks in pan and reduce heat to medium heat. Here is the times I think work well for our beef. Degree of doneness

After cooking the steaks to your chosen way, leave them to rest on a warm plate covered with tin foil for at least 4 minutes. Remember to pour any juices back into your sauce or on the plates. ROAST GAMMON Now our gammons have no excess water added therefore these times are only for OUR products. Whatever size of ham you have chosen , place in a pot of boiling water and simmer for 10 minutes. After 10 mins pour off the water and refill the pot with freshly boiled water and simmer for another 20mins. Then remove from the water and place in a preheated oven at 170°C / GM 4 for the following times. At this point remove the skin and cover /glaze with your choice of glaze. To make your gravy, simply de-glaze your roasting dish with either boiling water / beef stock (jars available 500ml only £2.79) To thicken simply add a 1 to 2 oz of butter flour mix . to make 2 oz add 1 oz of plain flour and 1 oz of butter melt and mix together. Add this to the gravy mix and stir. Strain through a sieve for a delicious smooth gravy. You can also just add a good dollop of redcurrant jelly to your gravy to thicken and this also gives it a sweet flavour. These times work very well for lamb and pork. For great Yorkshire puddings:

115grams.(4oz) plain flour, 2 large free range eggs, 300ml milk, salt and pepper and 3 tablespoons of vegetable oil. Simply mix all ingredients except oil to make you batter. Pre-heat oven to 230°C/450°F/GM 8. Place a muffin tin in for 10 mins to heat up, remove brush muffin hole with oil and fill half way with the above batter mix, return to the oven for 20 mins. For the roast potatoes:

Boil 18 -20 , ½ potatoes for 10 mins in boiling water. Drain the water and give the potatoes a shake in the pot. Pre-heat the oven on a high heat with an oven tray with 4-5 tablespoons of olive oil or goose fat once heated, remove from oven and place potatoes in tray and coat the potatoes in the oil/fat. Season with a little salt and roast in the oven at 220°C/425°F/GM 7 for 45 -50 mins. STEAK PIES
