RAYS (continued): • Famous chef Rachael Ray grew up in the restaurant business with restaurant manager parents. But her first job in New York City was working at the candy counter at Macy’s, where she worked her way up to manager of the fresh foods department. It was while working at a gourmet market in Albany, New York, that she conceived the idea of “30 Minute Meals” for customers who were unenthusiastic about cooking. The local television station asked her to host a weekly segment during the newscast, which led to a best-selling book and a contract with the “Today Show.” Five years later, she debuted her own Emmy Award-winning talk show. • Sugar Ray Robinson is ranked one of history’s greatest professional boxers, with 108 knockouts in 200 pro bouts. His 91-fight unbeaten streak ranks third longest in boxing history. Muhammad Ali referred to Robinson as “the king, the master, my idol.” Sugar Ray wasn’t really a Ray at all, but was born Walker Smith, Jr. in 1921. When he retired from boxing in 1965, his record was 173 – 19 – 2, and he had never been physically knocked out in a fight. He was also was owner of a fashionable restaurant, Sugar Ray’s, a hangout of Frank Sinatra, Joe Louis, Lena Horne, and Jackie Gleason. Unfortunately, at the time of his retirement, Robinson had spent all of the $4 million in career earnings. He appeared in a few minor film roles, but health problems plagued him, and he passed away from complications of diabetes and Alzheimers Disease at age 67.

RAYS (continued): • Sugar Ray Robinson was followed by another pro boxer, Sugar Ray Leonard, born in 1956. Leonard’s mother named him after her favorite singer, Ray Charles. Leonard was the first boxer to earn more than $100 million in the ring and was named the 1980s Boxer of the Decade. His career included eight world titles. His first big victory was the National Golden Gloves Lightweight Championship in 1973. Leonard was chosen for the 1976 U.S. Olympic Team, a team that is considered the greatest boxing team in the Olympics’ history. After capturing a gold medal that year, Leonard intended to study business administration at the University of Maryland. However, financial difficulties forced him into the professional arena, and in 1977 he made his professional debut, being paid $40,044 for the evening’s work. Leonard retired in 1982, then made a comeback, retired again in 1984, followed by another comeback. The action was repeated in 1987 and 1991, with his final retirement in 1997, following the only time he was ever knocked out. He has been a TV boxing analyst for ESPN, a television and movie actor, and contestant on Dancing with the Stars. He is also deeply involved with the Juvenile Diabetes Research Foundation. • Singer-songwriter Ray Stevens is known for his humorous novelty hits such as “Gitarzan,” “Ahab the Arab,” and “The Streak.” Born Harold Ray Ragsdale, Stevens grabbed five Grammy nominations and a win in 1970 for his serious recording “Everything is Beautiful.” But his most famous hit is “The Streak,” Number One on the charts in 1974, a song about that decade’s fad of running nude in public. TO YOUR GOOD HEALTH By Keith Roach, M.D. The Mysterious Rise in Meat Allergies DEAR DR. ROACH: I heard that there is a sudden surge in people coming down with severe meat allergies. Is there any information as to why, after years of eating red meat, you suddenly can become extremely allergic? -- E.V. ANSWER: Meat allergies are uncommon; however, there has been a recent surge of meat allergies due to tick bites. I have read that over 5,000 cases of meat allergy have been estimated in the United States, mostly in the Southeast. The allergy is most often caused by a bite of the Lone Star tick, which carries the carbohydrate alpha-gal. If introduced into the bloodstream, it can cause a reaction from eating meat, especially beef, pork and lamb. Interestingly, it is much more likely in people with blood types A and O. It isn’t yet clear if the allergy will be temporary or long-lasting, but it can be very severe, and people who develop this allergy should avoid meat and carry an epinephrine device in case of exposure. ***

DEAR DR. ROACH: A few days ago, I heard a report on breast cancer recurrence. I had cancer in my left breast in 1995, and on my right side in 2003. What are your thoughts on the subject? There is no history of breast cancer in my family. -- P.M. ANSWER: Breast cancer sometimes runs in families, but 70 percent to 80 percent of women with breast cancer have no family history. Once a woman has had breast cancer, she is at higher risk for developing a second breast cancer. Survivors of breast cancer should get regular physical exams and mammograms. A team of researchers from Johns Hopkins University recently published a study promising that in the near future, a new type of blood test may be able to identify DNA from breast cancer cells and find recurrence much earlier than current methods. If confirmed, this would be a big relief to the many women (and a few men) with breast cancer at risk for recurrence. *** DEAR DR. ROACH: Would you please address stem-cell treatment for a torn rotator cuff? My son is facing his second surgery for this problem and is considering stem-cell treatment instead. He had such terrible pain from surgery the first time. -- L.P.

ANSWER: A torn rotator cuff is a common sports injury in athletes. Complete tears usually are repaired surgically. A new surgical technique is to inject the body’s own stem cells (obtained from the bone marrow) to help promote healing. It is too new of a technique for me to be able to compare it with standard surgical therapy, but the preliminary studies are very promising. I often have said that only an individual’s surgeon can decide the right surgical procedure, based on far more information than we could include in this column. It’s really true that you never trust anyone quite the way you trust your surgeon. There are surgeons who are using the stem-cell technique, and it would be reasonable to get a consultation with one of them. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. • Businessman Ray Kroc didn’t actually found the McDonald’s hamburger chain, but he did build it into the world’s most successful fast food restaurant. Kroc had been involved in many different undertakings before becoming involved in the hamburger business in his 50s. At age 15, he lied about his age to begin serving as a Red Cross ambulance driver in World War I. It was here he met Walt Disney, who would remain his lifelong friend. After the war he became a paper cup salesman, a pianist, and a radio DJ. Kroc met the McDonald brothers, Dick and Mac, when he was working as a milkshake machine salesman. Peddling a machine that mixed five shakes at a time, he sold several machines to the brothers’ restaurant chain. The ambitious Kroc worked as a franchising agent for them in exchange for a percentage of profits, and at age 53, he became president of the corporation. At age 59, he was the owner, buying out the brothers for $2.7 million. When he died at age 81, McDonald’s was an $8 billion corporation with 7,500 locations in 31 countries. Not bad for a man without a high school diploma! With a personal worth of $500 million, Kroc was also the owner of the San Diego Padres baseball team for the final 10 years of his life. Time magazine included Ray Kroc in their list of the “Top 100 Most Important People of the 20th Century.” Today, the chain has 36,000 locations in more than 100 countries. • “I guess to be an entrepreneur you have to have a large ego, enormous pride, and an ability to inspire others to follow your lead.” - Ray Kroc

In keeping with the theme of “rays,” Tidbits goes underwater to gather info on the beautiful and unusual creatures known as rays. • The scientific classification Batoidea includes the cartilaginous fish known as rays. The flat-bodied rays have a boneless skeleton consisting of a tough elastic material. The flat body enables the ray to conceal itself while seeking out its prey. The ray stirs up the sand and hides beneath it. • About 600 species of rays exist, with varying kinds found in every ocean around the world, from the warm tropics to the freezing cold waters in the Arctic. Many species are closely related to the shark. The largest species is the manta ray, with its central disc measuring up to 29.5 feet (9 m) wide. It also has the largest brain of all fish. More than 300 rows of tiny teeth line the lower jaw. A manta consumes about 60 lbs. (27.2 kg) of plankton and fish every day. Found only in the warmer tropical waters, it can live for 25 years. It is completely harmless to humans. • A ray’s mouth is on the underside of its body, and its eyes are on top. Because the ray can’t use its eyes to seek its prey, electro-sensors help them detect electrical charges emitted by the clams, oysters, shrimp, crabs, and mussels it feeds on. • The smallest ray is a tiny electric ray measuring just 4 inches (10 cm) across and weighing only 1 lb. (0.5 kg). • Electric rays are capable of producing an electric charge from 8 to 220 volts. They hide in the sand, waiting for their prey, which they stun and capture. The genus Torpedo, one of the 69 species of electric rays, gave us the name for the warfare device known as the torpedo, a word that translates from the Latin torpere, meaning to be stiffened or paralyzed.

As early as 46 AD, a Roman physician recorded the use of torpedo fish for the treatment of headaches and gout. • Stingrays have a barbed stinger measuring about 14 inches (35 cm) in length on their tail used for self-defense. Two grooves contain venom, concentrated under a thin layer of skin. They are not hostile creatures and don’t aggressively attack humans, and normally swim away; however, they will sting if stepped on. A sting usually causes pain, swelling, and muscle cramps, but is very rarely life-threatening to humans. Usually, the stinger breaks off in the wound, and surgery is sometimes required to remove it. • It’s not unusual for large stingrays to reach a weight of 790 lbs. (358.3 kg). Baby stingrays are born fully developed, emerging as a little adult, and begin to take care of themselves as soon as they’re born. • Stingrays prefer warmer, shallower, near-theshore waters. • In ancient Greece, the venom of stingrays was used by dentists as an anesthetic. • The death of wildlife expert Steve Irwin occurred in 2006 when a stingray barb pierced him in the chest, puncturing his thoracic wall, while Irwin was filming an underwater documentary film. • A group of stingrays is known as a “fever.”

Eat Healthy Now to Keep Active Sticking to a healthy diet now may help with mobility as we age. So says a new study that looked at preventing or delaying a physical decline later. Continued physical function equates to continued independent living, so this study needs a close look. A portion of the Nurses’ Health Study looked at diet patterns of 54,762 women and compared their health to the Alternative Healthy Eating Index, checking in with them every four years between 1992 and 2008. Here’s what it learned: * Those with a healthy diet were less likely to develop physical impairments. * More fruit and vegetables; less sugared drinks, trans fats and sodium; and moderate intake of alcohol equated to reduced physical impairment later. * Foods with the biggest health impact were oranges, pears, apples, leaf lettuce and walnuts, although an overall healthy diet was more important than individual foods. The Nurses’ Health Study has been ongoing since 1976, and over the years it’s revealed a wealth of information about women’s health, courtesy of (so far) 275,000 participants. The Alternative Healthy Eating Index is a dietary guideline used by, among other things, the U.S. Department of Agriculture to monitor the quality of the American diet. The newest version, called the HEI-2010, gives each food value points. If you need help sorting out what constitutes a healthy diet (especially when it comes to portions), go online to choosemyplate.gov and look around. Did you know: A serving size of apples and oranges are not the same? Or that one slice of bread has the same value as a half cup of cooked pasta? Or that one egg and twelve almonds are equal? A great make-ahead brunch recipe. Serve with bacon or sausage and fruit salad. 6 tablespoons butter or margarine 1 1/2 cup packed brown sugar 5 large ripe bananas 1 long loaf French or Italian bread 6 large eggs 2 cups milk 2 tablespoons vanilla extract 1 teaspoon ground cinnamon 1/2 cup sliced almonds or coarsely chopped walnuts or pecans 1. In microwave-safe small bowl, heat butter in microwave oven on High for 1 minute or until melted. Stir sugar into butter until moistened. With fingertips, press sugar mixture onto bottom of 13- by 9-inch glass baking dish. (It’s OK if mixture does not cover bottom.) Spread fruit over sugar mixture; top with bread slices, cut sides down. 2. In medium bowl, with whisk, beat eggs; whisk in milk, vanilla and cinnamon. Slowly pour milk mixture over bread; press bread down to absorb egg mixture. Sprinkle with nuts. Cover with plastic wrap and refrigerate at least 2 hours or overnight. 3. Heat oven to 350 F. Remove plastic wrap from baking dish. Bake, uncovered, 45 to 50 minutes or until bread is golden brown and knife inserted in center comes out clean. Let stand 10 minutes before serving. TIP: If you don’t have bananas, substitute 3 to 4 very ripe pears or peaches (about 1 1/2 pounds), sliced; or 1 cup dried cherries, cranberries or raisins.
