F R E N C H O N IO N S O U P As the weather starts to cool down, this hearty classic soup will warm you up. Melt butter in large cast-iron casserole dish or oven-safe skillet over medium-low heat; add onions and sugar; cover and cook, stirring occasionally, for 30 minutes or until onions are soft but have not yet started to turn golden. Uncover pan, increase heat slightly and continue to cook, stirring regularly until onions are rich caramel colour, 10-15 minutes. Whisk in flour until well blended; gradually add wine and cook, whisking constantly, until mixture boils and thickens. Whisk in broth and pepper; bring to boil. Reduce heat, cover and simmer 15 minutes. Ladle soup into six 11⁄ 2-cup oven-proof bowls. Top each with bread slice; sprinkle with cheeses. Place bowls on baking sheet and place under the grill until cheese melts and bubbles.

BR E A D PUDDING W ITH WAR M BOUR BON SAUCE Pudding: In a pan over low heat, warm raisins in bourbon for 5 minutes; remove from heat; set aside. In a large mixing bowl, whisk together eggs and sugar, then whisk in cream, vanilla, nutmeg and cinnamon. Place bread cubes in egg and cream mixture, press down lightly, stir gently, cover and let stand in refrigerator for 1 hour. Preheat oven to 180°C; grease a Lamington pan. Remove bread mixture from refrigerator; add raisin bourbon mixture and half of butter, stirring gently. Place in baking dish and bake 35-45 minutes or until a knife inserted into the centre comes out clean. Brush top with remaining butter. Serve warm with warm sauce. Sauce: Melt butter in a small saucepan; whisk in sugar until incorporated, then add cream and cook 3-5 minutes until thickened. Blend in cane syrup and bourbon.
