Gainan’s has its last holiday downtown

By TARA CADY tcady@billingsgazette.com In the seven years Gainan’s Flowers Downtown has hosted its Christmas Dream Home, families have seen everything from lift chairs swinging overhead to reindeer figurines made of cork. This year, it will be “A Christmas to Remember,” coined for the floral shop’s last year in downtown Billings before its move to Grand Avenue next spring. The big red doors opened Nov. 4 and remain open through the holiday season. Jim Gainan, President of Gainan Floral Inc., and his team spend a year developing the holiday theme. Floral Inc., and his team spend a year developing the holiday theme. Gainan flies as far as Germany just for ornaments and it takes three weeks to set up the displays. The products have evolved alongside a changing market. Gainan explains that items are tailored to a price-conscious consumer, and many things for sale are also eco-friendly and for a good cause. It’s what he calls “buying with a purpose.” The Christmas trees are made of biodegradable and recycled

materials. And Gainan’s sells items from The Blessing Basket Project, an African company that builds the economy of small villages through its sales. “A village in Uganda is going to have their first college graduate in three years,” Gainan said. Despite its name, the Christmas Dream Home is meant to inspire homeowners with ideas that go beyond seasonal decorating. “It gives us a way to focus on the story we’re trying to tell for the year,” he said. Examples include paint color combinations and textures, like deep navy blue, green and live plants. Combined with black

and tan, you’ve got the “it thing” in your dining or living room. Gainan’s is calling this look, “Love by Nature.” In line with this year’s Pantone Color of the Year, greenery, the “Love by Nature” Christmas tree has real succulents amid the ornaments. Gainan’s CEO Mick Gainan says they can be misted weekly and then set in a soil and sand mix after the holidays. “The number-one accessory for millennials are live green plants,” Jim Gainan added. “We found a way to incorporate them into Christmas trees.” It’s that outside-the-box thinking that Gainan hopes to rub off on homeowners.

“I want it to be over the top because there’s a lot of benefits to being creative,” he said. Gainan understands not everyone is ready to embrace Christmas the first weekend of November, nor are some ready to put it all away come 2018. That’s why many of the products can be utilized year-round, or have elements that translate to Montana’s long winter, like snowflakes. The “Winter Spice” display incorporates warm colors like red and orange alongside gold and copper. A metallic ball garland replaces tinsel and pinecone ornaments resemble hedgehogs. The “Winter Sky” display includes several shades of green that Gainan says people wouldn’t normally place together. Aqua is the happy medium between the trending green and blue combination and can be seen accented with many white owl ornaments. “Altier,” or industrial, is the fourth theme featured in the holiday displays. Included are varying textures and lots of gray. “Anything that you don’t see other places is what we try to have,” he said. Gainan’s wants to tip its hat to the

VERONIKA’S PASTRY SHOP By TARA CADY tcady@billingsgazette.com Veronika Baukema moved to Billings in 1999. For the previous 12 years, she has worked various jobs downtown; at the county attorney’s office, at a collection agency. But her real passion was always baking. Born in Uzbekistan with many years spent in Russia, Baukema’s palate was influenced by Russian, French and Eastern European cuisine. She began baking at 11 or 12 years old. The epicure didn’t think she could do more than bake for her family, but when they suggested she start an athome baking business last year, she quit her job. By posting products on Facebook, she had clients not only in Billings, but Roundup and Park City. She didn’t consider having a website because she still did not expect popularity. But companies requested her baked goods for parties, and growing interest ate her out of house and home. To keep up with demand, her family proposed she have a storefront. Baukema and her husband, Toby, reached out to Big Sky Economic Development and the Downtown Billings Alliance for ideas. “Like a parent teaching a toddler to walk,” Big Sky’s Dena Johnson walked Baukema through developing a business plan. The DBA showed her how to apply for grants, Baukema said. Veronika’s Pastry Shop has hit two records since opening Sept. 2.: It once had everything sold within the first business hour; and it

once remained open until 3 p.m. due to a lack of customers. To keep consistent and not waste product, the pastry shop at 2513 Montana Ave. opens at 8 a.m. Tuesday through Friday, and Saturday at 9 a.m. The business stays open until all products are sold. Baukema greeted her first customer on Oct. 19 in Russian. She asked the regular customer how his mom was, and told him, “Alright, stay cool as you are,” as he left with five pastries. MoAV Coffee House owner Jeff Hosa sent in the next two clients, women on their biannual visit to Billings from Spearfish, South Dakota, looking to see what’s new in downtown Billings. “We walked around and pressed our nose against the window,” Janice Nankivel said.

Nankivel’s family is from Hungary, so when she was perusing the shop’s selection of pastries, she found some she recognized. “I was complaining to (my friend) the other day that you don’t buy a croissant from a grocery store because they don’t put butter in them,” she said, complimenting Veronika’s for its authentic ingredients. A Finnish customer came in and said she can’t buy pastries like that anywhere else in town. And one Billings husband came in to prove to his wife that they don’t have to drive to Jackson, Wyoming for apricot croissants anymore. Averaging $3.50 apiece, customers can choose from French almond croissants, hazelnut escargot, raisin escargot, pain au

chocolat, raspberry puff turnovers and chocolate bouchons. Baukema says the problem with American pastries is that the fat was eliminated and replaced with sugar. To her, it’s a science worth perfecting. That’s why she and her husband drive to Spokane for flour. Baukema’s daughter’s stories of living and dining in Portland were part of the business’s inspiration. When she’d describe the West Coast’s “many funky places,” Baukema reflected on downtown Billings and decided it needed something more. If it weren’t for her family’s ideas and support, Veronika’s Pastry Shop may still be Veronika’s home kitchen. “They were the biggest inspiration in my life.”

mances. Patrick Wilson, co-founder of Sacrifice Cliff Theater Company, has put on a few productions in the space. He says that because of 2905’s intimate design, it brings audiences and performers close together. The 1200-square-foot front room and additional 400-squarefoot middle room with unfinished brick walls hold up to 123 occupants, but where each person stands within the space is up to interpretation. “Many times, the artists re-

Alberta Bair Theater 2801 3rd Ave. N.

The Alberta Bair Theater has been a downtown destination for the arts since 1931. It first opened as The Fox Theater, coined after one of its financiers, 20th Century Fox

Corporation, after the lot was purchased from the Charles M. Bair family. Designed by Robert C. Reamer, the entertainment venue was the last Art Decostyle theater in the United States built by the corporation. Ownership changed hands in the late ‘70s, and then was renovated a decade later with a new name, the Alberta Bair Theater. Alberta Bair was born on the property when it was her family’s homestead and provided the lead gift for the theater’s renovation.


Thirty years later, the ABT continues to attract large audiences and support. City council approved $3.5 million in TIF assistance for its $10.5 million renovation and expansion plan, which includes doubling lobby space for the 1,400-seat venue. Art House Cinema & Pub 109 N. 30th St.

Not your average movie theater, the Art House Cinema & Pub provides a more intimate setting for movie-goers all the while serving beer, wine and concessions. The nonprofit independent theater took the place of Center Lanes, formerly a bowling alley in downtown, in 2015. With one screen, Art House introduces a new film on Fridays and showcases two films weekly. Event coordinator Brittany Stevens says the cinema tries to bring in films “all across the board artistically, politically and philosophically.” “Our heart in this is to invite conversation among friends and strangers, to begin discussions in a friendly and non-judgmental environment,” she said. Fundraising for an expansion is in the works, with two additional screens planned as well as a redesigned pub space that will offer artisanal food and extended hours. Babcock Theatre 2812 2nd Ave. N.

As the oldest historic theater in Billings, the Babcock Theatre has transitioned from featuring operas and vaudeville upon its 1907 opening to showcasing films, dance, comedy and concerts into the 21st century. The 750-seat theater is listed on the National Register of Historic Places and most recently hosted Ani DiFranco, a Grammy award-winning musician. NOVA Center for the Performing Arts is a melting pot of local talent, and that in part was its intention when it began as a merger between two longstanding theater companies — Rimrock Opera Company and Venture Theatre – in 2013. Like the gift-bearing Magi who visited baby Jesus, the Billings Food Bank wants to give the community another reason to celebrate the twelfth day after Christmas. The annual event takes place at 5:30 p.m. Jan. 5, just as the food bank closes its doors to the public and opens for a private party. The Fortin Culinary Center and Passages serve all-you-can-eat crawfish to the tune of Louisiana music provided by the 2nd Avenue Stompers. At $25 a ticket or $250 for a table of 10, all of the proceeds benefit the food bank. Door prizes, a raffle and auction are additional fundraisers at the event, where attendees could win bottles of wine or tickets to Mardi Gras Montana. Volunteers and additional donations are welcome. Thanksgiving at Billings Food Bank You don’t have to be homeless or otherwise disadvantaged to take in the hospitality that Billings Food Bank provides on Thanksgiving Day. With help from their very own Fortin Culinary Center and executive chef, David Maplethorpe, alongside the Chefs and Cooks of Montana and Passages, more than 400 guests are slated to be served Thanksgiving dinner and all of its delicious fixings. Chefs begin cooking the Monday before the holiday, with half of the 90-plus turkeys going to the Montana Rescue Mission. Food bank executive director Sheryle Shandy says culinary students are receiving job skills training from the experience. Dinner is served from 1 to 4 p.m. Nov. 23. 32nd annual Festival of Trees Some families dream for more than a white Christmas, they desire one filled with fun and happiness. For the previous 31 seasons of giving, The Family Tree Center has raised funds for its mission to prevent child abuse and neglect in Yellowstone County so that no family has to say “bah humbug” around the holidays. This year is no different. The MetraPark Expo Center plays host for the center’s Festival of Trees fundraiser beginning Thursday, Nov. 28 at 6 p.m. with a gala and tree auction. The charitable event continues Dec. 1 and 2 with various events for seniors, children and the whole family. From 9 to 11 a.m. Friday, a special tree viewing is available for kids and elderly. Then, Tea in the Trees transpires from 1 to 3 p.m., with a craft and gift show and public tree viewing from 3 to 8 p.m. Family Fun Night and other entertainment commences at 5 p.m. until 8 p.m. The public is welcomed back Saturday, Dec. 2 at 9 a.m. with a tree viewing, children’s activities, craft and gift show and entertainment.
