Real Wholefoods is a new range of ready-made meals that Bioshop Noosa is producing in-house and offering for sale in store.

The team at Vanillafood, Belmondos Organic Market, are excited to announce the opening of their second cafe in Lanyana Way, Noosa Junction, in early December.

Uwe Wullfen, the owner of Bioshop Noosa, has created this brand to help support local chefs and offer their range of foods to our customers. Uwe is passionate about supporting local chefs who share his vision of healthy eating and organic lifestyle. He is excited about the potential of this new range. Klaudia Bajon is our first chef to join this line, and is producing home-made traditional Pierogies in three different flavours: beef, cheese and mushroom. Klaudia is a young pastry chef, originally from Poland. She brings her traditional, homestyle dish ‘Pierogi’ into Noosa. Every single piece is individually made with passion, using quality and local organic ingredients. We also have a new chef, Shivas, joining our team soon, producing wonderful traditional curries. Shiva is originally from Nepal and arrived in Noosa in 2009. He is a chef, with more than 15 years experience at high-end celebrity restaurants.

We found an unexpected gem in the Junction having spent months searching for the perfect location. The idea is to create a community gathering place for locals to enjoy, an ambient, friendly atmosphere with the sort of food locals ask for. For those who love Vanillafood, expect something a little bit different deco wise, but with the same quality organic food and now also serving Clandestino coffee. Gut Health By Dr. Carlos Sanchez - Ibuki Health

AS AN INTEGRATIVE DOCTOR, I see a lot of people suffering from different medical conditions, where the start of their problems is in the gut. Unfortunately, a lot of degenerative diseases started with the modern diet. Process refined foods and sugars are the major culprits to this. These foods feed the wrong bacteria in our gut, causing fermentation, with production of alcohol and acetaldehyde, both toxic to the gut lining. Small intestinal Bacterial Overgrowth or SIBO, is something fairly commonly seen in my practice. There is excessive bacteria in the small intestine, causing a range of different symptoms, from mild to severe, like bloating, chronic diarrhoea/constipation, weight loss, malabsorption, etc. This is seen typically in patients where iron and B12 levels are low and possible causes have been ruled out through history, endoscopy and blood tests. Over the recent years this have been

aggravated with the excessive use of antiacids, as unhealthy processed foods and alcohol causes reflux, adding more issues to the problem of an unhealthy gut. From my clinical experience, removing these foods, normally results in symptoms disappearing. There are studies showing an association between SIBO and lots of medical conditions like coronary artery disease, irritable bowel syndrome, liver disease, to name a few. Add to this the use of common herbicides disrupting the soil bacteria and it is a recipe for disaster. If we poison the soil, we are poisoning ourselves, having an effect on our gut health. Clean up your diet, use organic, have regularly probiotic foods, (I personally recommend Kultured Wellness) and drink clean water to keep those little bugs healthy and you will save visits to the doctor.

LEMON AND SUGAR BODY SCRUB • 2 tbsp Brown Sugar • 1 tbsp Honey • 1 Whole Lemon

My first job was when I was 14 and was able to ride a little motorcycle. I was a courier for a printing company. What do you do to relax? I do a lot of photography and videography and love listening to music. Cooking is also one of my favourites.

Private: My next challenge will be to raise money for an orphanage in Nepal which I support and build a house for the 22 children I am supporting. What is your favourite dish at the moment? My favourite dish at the moment is breakfast at Periwinkle in Peregian Beach, Smoked Salmon Roesti - Potato galette with smoked salmon and two poached eggs... yum!

FARMING for the future

NESTLED IN A VALLEY between two mountains at Goomboorian, north-west of Gympie, Beau-Vista Park Organic Farms is a peaceful place with four generations of family-farming history. In the afternoons the gentle lowing of the 120-strong Jersey herd floats across the property as they make their way in for milking. Trevor Mahaffey cares for his cattle and works the rich red soil on the ridges and black soil of the flats, alongside his sons Peter and Brendan. They are the fourth generation to farm the 80ha property, growing vegetables and running a dairy. But it was Trevor who decided nearly 20 years ago to leave behind the conventional farming methods his family had used for decades, and go organic. “My father was always interested in alternate health and that way of farming, even though he still farmed conventionally,” Trevor says. “Then with the deregulation of the dairy industry in 2000, we sort of thought that was the time and we should be making a move into the direction of the future.” Beau-Vista Park is the home of Cleopatra’s Bath Milk, raw, unpasteurised milk sold for cosmetic use, and a range of organic vegetables, from beans, to zucchinis, peas, ginger and sweet potatoes.

Trevor admits transitioning a dairy and mixed horticulture farm into an organic operation in 2000 was a difficult task, but he never once looked back. “It was tough at times and but we had the support of a lot of people, and that’s why it’s still around,” he says. “A lot of people thought that it was going to be impossible for us to dairy without being able to control ticks and buffalo fly and all those sorts of other things, to do that all organically and to produce good quality pasture without chemical fertilisers, and weed control, and it does take time. “All those things, you have to have a totally different mind-set for, and there’s a lot of experimenting and learning. “And I’m pleased to say there’s an awful lot more that can help you in organic farming now than there was 20 years ago. “I believe in what we do and I certainly enjoy the challenges, and to be able to solve those problems gives me a lot of satisfaction.” Trevor believes whole-heartedly in principals of the organic movement, and he thinks the key to ensuring the industry’s integrity lies with whole-of-farm-certified producers and small retailers who share the same values.


“One thing we intend to do is start labelling so people know we have whole-of-farm organic certification,” he says. “I think the sincerity and integrity of the industry has to be preserved and that starts with the farmers and the small retailers.” Bioshop Noosa founder Uwe Wullfen is proud to work alongside Trevor to promote and support a healthy organic industry. Connecting Nature and Community through Art FOR HUNDREDS OF YEARS a towering Queensland Red Gum stood sentinel over Doonan, until one day in 2015 the old giant fell on the road. What happened to the tree next is the centre of Tree Place, in which dozens of local artists and community groups have collaborated to explore culture, history and connection through art. Lake Weyba potter Angus McDiarmid is one of 28 artists to create works for the exhibition. Using locally-dug clay and age-old techniques, he has crafted a bowl, fired with timber from the fallen gum and finished in an ash glaze. “I feel the essence of the tree is so ancient and it would have seen so many things pass it by, and clay has been around with humans since the beginning of time,” Angus says. “I thought the bowl was kind of a similar thing to the tree. It sits on the table and observes life, and people converse around it but it sits there, always observing.”

Mezzo Sopprano vocalist Amanda Cole also draws inspiration from history for her multi-media work, pairing her recordings of Saint Hildegard’s 12th century chants with images, including ethereal photographs shot by Uwe Wullfen. “A lot of Hildegard’s chants are about a twig; the twig representing Mary in the Christian mythology … the beginning of all human kind,” Amanda says. “The twig is the same sort of metaphor for potential. Kind of like an ancestor of the world.” Tree Place curator Anne Harris says Tree Place has been a way to bring people together and start new conversations while honouring the fallen gum. “If things were left to the natural cycle the tree would have fallen down and new inhabitants would have come in to make use of it, then it would have decomposed or be left to burn,” she says. “The tree in the physical sense would go but a whole new set of things would continue out of that death. “… my role was to take back what I could of that physical tree and let it have its more natural course in a metaphysical sense; let it go back out into the community and have a new life and a new story.” Visit treeplace.com.au for details.

RISING FROM THE INDIAN OCEAN off the coast of North Sumatra, the remote Indonesian island of Asu is where Ruby and Channa Senaratne began their honeymoon, and their culinary journey, together. A tropical paradise of pristine white sands, swaying palms, clear blue waters teaming with marine life, and world-class surf breaks, Asu is the northern-most of the Hinakos islands west of Nias. Newly married, the Coolum Beach couple sold up everything they had and set off to find new adventures and opportunities. Their wedding journey became an eight-year epic taking them across South East Asia, the Mediterranean and beyond, where they pursued a passion for food. Born in Sri Lanka, Channa migrated to Australia with his family at the age of 12, and later trained as a chef in Brisbane before he and Ruby were married and headed to the tiny, isolated island of Asu, with its pristine surf breaks.

They sailed to Thailand, Sri Lanka and spent a season working the boat off Nias – Channa as first mate and cook, Ruby as “general dog’s body”. From there they travelled to Europe for 18 months, where they spent time working on a boat out of Turkey, before sailing to the Seychelles then returning to Indonesia. With the money they saved working the boats they opened a café back on Asu, and Ruby moved into the kitchen too. So small you could walk around it in two hours, in 1998 the island had no roads, no cars, no electricity, and a handful of local residents.

Everything was made from scratch. They used local fish when they could get it, and set up a complex operation in which locals helped them source produce from the markets on the mainland. It was a process that saw money and shopping lists pass through something like six sets of hands, and took days. Some things were hard to come by, so Ruby and Channa had to improvise with what was available.

“While we where there… a surf charter boat pulled up at the break one day and Channa paddled over and asked if they needed any crew,” Ruby says.

From their rented timber house beside the lagoon, Channa and Ruby served up pizzas and burritos, burgers, curries and smoothies to the visiting surfers sitting on cushions around lowset tables on the verandah.

“We both learned a whole lot of different stuff as we went along,” Ruby says. “We made up the recipes together; I was experimenting and trying recipes I liked.

“I learned a lot of the Sri Lankan recipes from Channa’s mum, Chandra; she would come to stay with us a lot.” After two tough years in business following the fall of former Indonesian president Suharto, terrorist threats and travel warnings, the Senaratnes moved on to Padang, and later returned to Australia for a time before heading back to Asu to help with recovery efforts in the wake of the devastating 2004 Boxing Day tsunami. Now, Ruby and Channa and their four children, share the exotic foods they discovered and developed, their creative flair and their family bond, through their catering business, Journey Street Foods. “I really believe that food is an amazing point of connection between people,” Ruby says.


“I come from a big family. Whenever we have family dinners they’re noisy affairs, there’s a lot of food on the table being passed around. “I wanted that feeling around our catering too; people come together, break the ice, communicate together and experience food they haven’t tried before.” In a bid to bring their unique flavours to even more people, Journey Street Foods has just launched its new range of individually-packaged frozen meals, free of chemicals and preservatives. Inspired by the nasi bungkus common in Indonesia (a meal of curry and rice wrapped up in a banana leaf), the range includes Indonesian, Sri Lankan and Mediterranean options. “I saw what I thought was a hole in the market for really flavoursome frozen foods,” Ruby says. “Convenient food is not always healthy or tasty. “We wanted to offer something that tastes good and is healthy.”Her sauces are stocked in seven local specialty stores and by direct order.

Roast Pear, Lentil & Tuscan Kale Salad

INGREDIENTS

METHOD

2 pears 2 tbsp rice malt syrup Pinch of salt 1 tsp sunflower oil 400 g brown lentils 2 tbsp pepitas 1 tbsp sunflower seeds 3 cups Tuscan kale 2 tbsp orange juice 1 tsp hibiscus vinegar 1 tbsp olive oil

1. Preheat the oven to 180°C

2. Slice the pears and place them in a bowl with the rice malt syrup, half the salt and the sunflower oil. Toss everything together to coat the pears. 3. Place the pears on a baking tray and bake for 15 minutes until nicely roasted. 4. Drain and rinse lentils and place them in a bowl with the pepitas, sunflower seeds, remaining salt and mixed salad leaves. Mix together and place in two to four serving bowls or plates. Top with the roasted pears. 5. In a small bowl combine the orange juice, hibiscus vinegar and olive oil and lightly drizzle this dressing over the salad at the last minute before serving.


Tropical Coconut Smoothie INGREDIENTS 1 ripe banana 1 orange peeled and quartered 1 cup frozen mango chunks 1 cup frozen pineapple chunks 2 tbsp coconut chips 1 cup coconut water or milk (optional: 1 teaspoon chia seeds or ground flax seed)

METHOD Add all ingredients to a blender, and blend until smooth. Serve immediately.

Storage Tips Mangoes: Do not need to be refrigerated until they are ripe. Fully ripe mangoes can be stored in the refrigerator for a few days. Never store mangoes in plastic bags – mangoes need air!

Cherries: Keep the cherries cool to keep them fresh for longer. So put that bowl full of cherries in the fridge! Store dry and loosely packed in a covered container in the fridge until needed. Leave the stems on – they help keep the cherries fresh.

Handy Hints and Tips Baking Soda Wonders

Fight pet smells Deodorize the soft furnishings around your home – including the dog’s bed – by sprinkling surfaces with a little baking soda, letting it sit for 15 minutes, and then vacuuming clean. Smelly Runners? Freshen up after a gym class by sprinkling some baking soda inside your shoes (and your gym bag while you’re at it). Just tap it out before you wear again. Make an easy, all-purpose cleaner Here’s a quick cleaning recipe that can make most surfaces sparkle. Combine 4 tablespoons of baking soda and 1 litre of warm water. Use it with a sponge to wipe messes away. This all-purpose cleaner is especially good for cleaning kitchen counters, appliances and inside the refrigerator. Clean a slow drain When you notice your drain is starting to clog, sprinkle ½ a cup of baking soda down the sink, followed by ½ a cup of white vinegar. Cover with a wet cloth to contain the fizz.
