PUBLISHERS
LETTER
You can always tell it’s November by the way the mood shifts. The business of everyone’s lives becomes more intense, the stores frantically fabricate a winter wonderland and the children eagerly write Santa their wish lists. But we often forget that there is much more to this beautiful tri-fecta of seasons. No matter what holidays you celebrate or don’t, these next two months are meant for giving thanks for our blessings and sharing our wealth with the ones we love and hold dear. It is during times like these, when we might become consumed in the hustle and bustle of our own lives, we risk looking past those truly in need. In this Holiday Issue, we want to help remind you of the true meaning of these holidays and share how some amazing people in our community give back. Every issue we publish, we become more humbled by the people in our community. Small acts of kindness, or simply ideas to help others may seem insignificant, but often make the biggest difference. Continue reading and find out how a Lincoln couple turned a simple competitive family light show into a life-changing extravaganza, and how twelve small ideas to help others turned into twelve sustaining non-profits that make our community great. Happy Thanksgiving, Merry Christmas and Happy New Year from Bismarck Magazine! We hope you travel safely this holiday season and share time with the ones you love.
POLITICS ASIDE...
Getting to know the North Dakota Governor Candidates on a personal level
DOUG BURGUM BM: What are you doing for the holidays? Burgum: Depends on what happens on Nov 8th.
branding or fall hunting, holds some of the greatest memories for me and family.
BM: Do you and your family have any specific holiday traditions? Burgum: Christmas Eve church service and a family gathering afterward in Arthur, North Dakota, with all the Burgum relatives.
BM: What does an average night look like for Doug Burgum? Burgum: I have been on earth as of today 21,980 nights. The average of those nights includes everything from learning to walk and talk, to running for governor. In between I had the pleasure of parenting three kids (who have recently passed me with 22,719 collective earth nights between them).
BM: What's your favorite part of North Dakota? Burgum: Traveling over 25,000 miles in North Dakota this year, I’ve had a chance to visit and return to some very special places, including many of our beautiful state parks. Other favorites include snow-skiing in Pembina Gorge and the Turtle Mountains, spending time on the water at Lake Metigoshe and the Missouri River, plus enjoying historic Medora and breathtaking Theodore Roosevelt National Park. I love my hometown of Arthur, the wooded Red River valleys and the wide open prairies of eastern North Dakota. Our time spent in Slope County and the North Dakota Badlands, however, whether during spring 10
BISMARCK MAGAZINE | NOVEMBER-DECEMBER 2016
BM: If you could have dinner with anyone, who would it be? Burgum: Thomas Jefferson – who wrote our Declaration of Independence, the Virginia Statue for Religious Freedom. He was also Father of the University of Virginia, an architect, designer, inventor, author, founding father, farmer and more, including Vice President, and then President of the United States. BM: What's your favorite food? Burgum: Spaghetti
BM: What are you doing for the holidays? Nelson: Our traditional family thing is we double down and do a ham day and a lutefisk day. BM: What are your holiday traditions? Nelson: Normally we go back to Mom's farm near Rugby. We also try to have an every other year get together with my sisters down in Brownsburg, Indiana, but that doesn’t always happen. BM: What is your favorite part of North Dakota? Nelson: I really love the Turtle Mountains. I went to college in Bottineau, I'm at Rolla now and they have always been around. Maybe it's my favorite in some way because it’s so different from the rest of the state. It really is a unique and wonderful place. I am however a plains guy, so if I spend too many days in the trees I need to get out. I prefer rural North Dakota over the city. My first job was as an inspector for the Department of Agriculture. My territory was the west half of North Dakota so I have been around the whole state. I really have seen the state and it’s all beautiful, but the getaway place would be the Turtle Mountains.
MARVIN NELSON
BM: What are some of your hobbies? Nelson: I like to fish and hunt. I’ve also taken up horn playing again. I was a French horn player in high school. I play the alto horn now. Last winter I was playing in the British Brass Band in Minot. It’s the only brass band for five states! BM: What does an average night look like for Marvin Nelson? Nelson: I’m an Ag Consultant, so there is no 'done with work!' I haven’t been done for 25 years! I usually don’t get home 'til after dark and then there is paper work to be done. BM: If you could have dinner with anyone who, would it be? Nelson: If I could just get the whole family together that would probably be my first choice. BM: What's your favorite color? Nelson: I have always liked a tan brown color.
Our name has changed. What’s important to you will
never change.

Christmas on by: Madalyn Laske • photos: Glasser Images
‘Twas the night after Thanksgiving and all down Chesnut Drive, tummies were full and the sky was alive. The light strings were strung ‘round the house and much more. There’s no question Greg and Sharon will touch more hearts than before. hen Greg Wilz sports a red coat in the winter months, he knows what he’s getting himself into. “Especially when he grows his beard out,” Sharon Wilz, Greg’s wife said, “he really does look like Santa Claus.” Greg smiles as Sharon continues to tell one of many stories about children mistaking him for Mr. Claus.
“The little boy asked Greg if his name was Santa and Greg said, ‘Yes! Ho Ho Ho!” Sharon said. “He looked up at his mom and with a cute little attitude said, 'I told you.” No, Greg and Sharon’s name is not ‘Claus,’ but it might as well be. For the last 10 years, Chesnut Drive has transformed into Bismarck’s version of the North Pole.
The Wilz’s illuminate the neighborhood with over a quarter of a million Christmas lights hung around their home that flash to synchronized music each night for a month. “Friday night after Thanksgiving there’s people waiting for us to turn them on,” Greg said, “some for 15 to 20 minutes.” The light extravaganza spiraled from a friendly competition with Greg’s sister, Gigi, who lives across the street, to a staple in the community. “When Sharon and I lived out in the country, we started razzing (my sister) about how few lights she put up but considered it wonderful decorating,” Greg said. From then on, competition sparked. The siblings started to have family members judge their lights every holiday. Greg put a Charlie Brown-like needle-less evergreen in Gigi’s yard to tease her decorating. Greg and Sharon started handing out Hershey chocolate to entice viewers, so Gigi started handing out candy canes.
we add a string of lights it can take 15 to 20 hours to add those lights.” Not to mention, the couple builds and welds all the decorations themselves. “It is truly a labor of love for us,” Greg said, “because at the end of the day we get stories from the people.” How many people? The Wilz’s handed out 10,000 candy canes and ran out last year. How many marriage proposals have happened in front of their home? At least three. How many smiles created? They will probably never know.
“I had one guy tell me, 'My wife is lying in a hospital bed with cancer tonight and she asked me to come out here and take some pictures because she heard about it,” said re-telling the man's story. "I “It was pure competition have not had a lot to smile about in years, to the point where we and you made me smile tonight.’ Sharon and I came into the house crying.” were sneaking out at
night, and adding some more to outdo the other house."
“It was pure competition to the point where we were sneaking out at night, and adding some more to outdo the other house,” Greg said. “We never let them know what our plan was for that year. We would never let them see our workshops.” Three years later, the Wilz’s began collaborating with a company called Light-O-Rama, which triggered the transformation to the show seen today. Partnering with Light-O-Rama allowed them to coordinate the flashing of the lights with the beat of a song. Programming one song can take up to 60 to 70 hours of labor.
The Wilz’s typically run the show from 5:30 p.m. to 10:45 p.m. during the week, and 5:30 p.m. to 11:30 p.m. on the weekends. However, the week of Christmas they keep them on until 1 a.m.
Greg says he is often asked how many bulbs exactly does he think they have. He used to know, but not anymore. “I read an article one time. If you count how many Christmas lights you have, you don’t have enough,” he said. Hours of labor aside, and a rough estimate of 357,000 bulbs, the expense to back the show seems relatively low. “You’d be surprised. It’s not that high,” Sharon said. “Our highest is $320. And our normal bill is in the low $200s. It’s because we use LEDs and we don’t have them on all the time.”
“That’s why we only do one song each year,” Greg said. “If

The rest of the year, Greg sets aside the red suit for a more serious one. Greg was appointed Homeland Security Division Director and State Security Advisor in 2006. Preceding that he retired from a 29-year career in the National Guard touting a long list of accomplishments including Commander of the Engineering School. Military bloodlines run thick through the Wilz’s veins as Gigi is also in the armed forces and hosts a large gathering for hundreds of veterans and their families each year.
And, of course, Greg and Sharon dress up as Mr. and Mrs. Claus for the kids at Gigi’s party. “It was the first year we decided to surprise my sister and we met everyone,” Greg said. “The next year, the kids were scattered around the house and I’m walking around with a big bag of toys and this one little boy just takes off running toward me. 'Santa! I knew you’d come back!' And he leapt in the air. I had to drop the bag to grab the kid and I fell right back into a recliner.” “Merry Christmas,' I said. 'I missed you, too.”
The first of January, the show has to end. But don’t you worry it will soon come again. And we heard Greg exclaim ‘midst a string of long lights, “Happy Christmas to all, and to all a good-night!”

Happy Holidays
It’s a busy time of year. In what seems to be the season of expectations - all the parties, programs, buying the perfect gifts - the end of the year can start to feel like the end of sanity! Here are some simple, personal challenges to incorporate into the upcoming holiday season. 1. Keep your expectations real. In 2014 the University of London did a study to prove that the key to happiness is low expectations. Instead of expecting everything to go perfectly or that you can do it all, take a step back and be realistic. That may mean declining a holiday party invitation, creating a more honest holiday budget for shopping, or realizing lumpy mashed potatoes don't mean a failed Thanksgiving. Extend yourself some grace.

2. Make self-care a priority. Yes, it's easier to say than do. But get adequate sleep (6+ hours), drink lots of water, eat right, and get up and move. Falling apart because of a hectic, self-deprived schedule only makes daily tasks more difficult. Don’t wait until January to start taking care of your health. You will still be busy then. Do it now! 3. Simplify. Check out our tips for making holiday meals healthier and worry-free at www.proximal50.com/ bismarckmagazine. Simplifying the menu while keeping all of the traditional dishes means more time for family and friends. Taste, nourishment and comfort can come from the simplest of dishes, so why add stress by making complicated recipes that monopolize precious time? Watch football, go for a walk, play a game or just reminisce with family and friends!
4. Put some thought behind your holiday shopping. Shopping for Christmas gifts can start to feel like just another thing on the to-do list adding to the stress of the season or causing last-minute purchases that feel like an afterthought. Expressing our love and gratitude through material gifts often blurs the true sentiment of celebrations.
5. Finally, consider giving the gift of health by helping a loved one (or yourself!) get started the on a wellness journey. Getting away from the superficial and size oriented world we live in, view these types of gifts as an investment in your future together which truly is the ultimate gift.
Think about the gifts that you can’t always buy. Quality time together, words of appreciation and affection to tell those you love how you feel about them, thoughtful actions for a loved one can bring more joy than unwrapping a box filled with clothes.
Tana Trotter, PT, DPT, is the owner and CEO of Proximal50 Life Center. As an employer, she knows the importance of creating a culture of health while balancing expenses and rising healthcare costs. As a Physical Therapist and Personal Trainer, she also sees the consequences of poor health and chronic disease and is motivated to change the mindset of Bismarck/Mandan through prevention, education and services to promote independence in personal health.
For kids, it can be helpful to try to the four gift rule: something they need, something they want, something they wear and something they read. One gift from each category and that’s it. Ask grandparents and other family members to do the same.

Christmas Dinner With Chef Grego
Photos by: Glasser Images
A
re you in the mood to try something new this holiday season? Or are you struggling to find the perfect recipe to really wow the extended family? Don’t worry, we can help. Well…Grego DiDonna can help. Grego is a New Yorker who was raised in Los Angeles and spent most of his life in a kitchen. In nearby kitchens, he's made us fabulous dishes at The Walrus, then opened his own restaurant called DiDonna's. He’s known for his Italian cooking, but can make literally anything. How did the Bismarck/ Mandan/Lincoln community get so lucky? You can thank his wife for making him move to our beautiful city and spoil us with his cuisine. These days, you can find him at sixteen03 Main Events as the executive chef, always trying out new recipes and experimenting for his guests. We know the holidays get busy, and you may not have time to search for the perfect Christmas dinner recipe, so Grego agreed to share some of his genius with us. 38
BISMARCK MAGAZINE | NOVEMBER-DECEMBER 2016
Prime Rib, Rosemary Potatoes and Balsamic Asparagus: * Grego didn’t want to give all his secrets away, but he gave some tips on how to marinate the meat. Prime Rib: Step 1: Begin by marinating your prime rib in olive oil, salt and pepper, and a hint of rosemary to help tie well with the potatoes. Step 2: Let the roast marinate for at least an hour. Then bake for 1 hour at 475 degrees. Step 3: After the roast sears for an hour reduce heat to 110-115 degrees (depending on how hot your oven gets) and let it sit 2 hours uncovered. Potatoes: Serving 6 * Use 24 small red potatoes or 6 whole potatoes depending on time frame. Step 1: Chop potatoes into large cubes (or if using small red potatoes simply leave uncut and season).
Step 3: Bake potatoes 45 minutes at 325 degrees. Balsamic Asparagus: Grill, bake or steam your asparagus and add balsamic reduction. Balsamic Reduction recipe: Step 1: In a heavy-bottomed sauce pan, bring 1 cup balsamic vinegar to a low boil (about a medium heat) and add ½ Tbsp sugar. Step 2: Whisk constantly to prevent burning--about 15 minutes. Step 3: Reduce heat to low, while whisking, turn heat off and let sit. This will reduce to about a ½ cup of thick syrup. Pair this meal with any dry red wine and impress your guests! Grego suggests a Cabernet Sauvignon by 14 Hands. Its fully body and hints of spice bring out the seasoning in the meat and enhance the flavors.
Step 2: Season potatoes with ¾ cup olive oil, a ½ tsp pepper, ¾ tsp salt (add more if you desire) and ¾ tsp rosemary.

Photos provided by each local nonprofit.
By “speaking up for those who cannot speak for themselves” and through working together, we can make a difference in the fight against modern day slavery. 31:8 Project was created to equip and challenge society to proactively address issues regarding human trafficking starting right here in North Dakota. Since 2010, Project 31:8 has incorporated the verse Proverbs 31:8 as a guide to provide informative seminars, conduct research, and create curriculums applicable to all levels of education and forms of human trafficking. Their continued work is dependent upon whom they are working with, as they are able to tailor trainings and presentations to fit the needs of each individual group.
2 Carrie's Kids

Everyone has a role to play in combating human trafficking. Children and teens that are in high-risk situations are resilient, especially when given the opportunity to be successful. Hosting events all year is essential in connecting Carrie’s Kids and the community with children and teens and their families. The events allow for compassion, involvement, leadership and the ability for children and teens to have hope. Children living in high-risk situations are the least likely to possess essential coping and social skills or have the emotional and social support necessary to deal with and overcome stress and become successful in the face of adversity. We want children and teens to
