Thailand’s relationship with the US is currently pretty tense, to say the least. So it’s no wonder the army might be feeling nervous about this year’s joint US-Thai military exercise Cobra Gold falling so close to Valentine’s Day. And news has now broken that China’s been invited to join in for the first time. We see what’s going on here: Dear Leader wants to spice things up with a threesome. Which is totally fine. We’re not judging. But here are some tips to make this work:

#2. Build intimacy. Go slow. It’s natural that you might all be a little tense at first. Take as long as you need to get to know each other. We find a little locker room foreplay makes a nice starting point. #3. Make sure no one gets left out. Sure, playing with China might seem fun and fresh, but remember: you’re doing this to save an old relationship, not start a new one. It’s important the US doesn’t wake up the next morning thinking China means more to Thailand than it does. #4. Stay calm. Thailand and the US have been holding joint military exercises for over 30 years, so of course it’s going to seem weird having China there too. Everyone’s thinking the same, so there’s no need to freak out. #5. Don’t be selfish. You’re not in a Ratchada bathhouse now. Things work differently in the real world. You’re there to satisfy the other parties as much as yourself. #6. Use protection. You can’t be too careful when getting involved with a new country. Cobra Gold has been between the two of you for so long—who knows what China might be carrying. #7. The morning after. Yes, the three of you did military exercises together. But you’re not the first countries, and you definitely won’t be the last. Use that spirit of openness to talk to each other and explain your feelings—just don’t bring up democracy.

Hot: Dining in the Dark Not: I’m Blind “I’m Blind” is the name given to the latest dining experience to serve dinner in complete darkness—and there are three of these things in Thailand right now (see Escapes, page 10). They’re a good way to heighten your senses and enjoy food differently. But they’re not a window into the world of the visually-impaired. So no, we are not blind, and we have no idea what it’s like to be blind, hence our outrage at this pop-up dinner’s name.

Japanese-Peruvian cuisine has been hot for over a decade, but with the opening of 22 Kitchen (see page 24) and the imminent arrival of chefs Vergilio Martinez and Mitsuharu Tsumura for the San Pellegrino awards in Singapore this March, we feel it’s finally reaching our shores in a big way. Unlike sipping coconut milk laced with rum out of Easter Island heads, which we can still only do at U.N.C.L.E.
The UDDC (Urban Design and Development Center, Chulalongkorn University) has teamed up with the Thai Health Promotion Foundation to introduce the Bangkok: GoodWalk Project, encouraging Bangkokians to get out and walk more. But as project manager Adisak “Tor” Guntamuanglee (center), 29, and urban designers Kulacha “Fang” Sirikhan (left), 27, and Podchara “Ou” Tangswanit (right), 24, told us, this will involve a lot more than fixing the city’s pedestrian-unfriendly streets. What is the GoodWalk Project?

Watching Bang La Merd (see page 29) is pretty surreal. Among other things, performer Ornanong Thaisriwong details her ordeal registering her play with the army. Meanwhile, sitting with you, are two people from the United Nations who are observing two actual plainclothes soldiers who are recording the performance. It’s all very Rosencrantz and Guildenstern. Note to the grunts: if you want to fit in with the art crowd, don’t pop your collar.

What are the cool kids doing? They’re getting down to wild nights of folk music over at the Jam Factory (see BK Now, page 28), where the only thing anyone’s taking is Instagram shots while sitting on pillows that they brought to the gig from home. We hope the trend’s gonna catch on, because pillows seem like a great way to keep kids off drugs.
Tor: Bangkok still has lots of problems as a walkable city. Government policies and city development plans are far, far behind our European counterparts, for instance. We want people to see that benefits of walkability are immense; one of them is health. B angkok’s city plan wasn’t designed to benefit pedestrians from the start. What’s the solution? Tor: If you scrutinize the anatomy of Bangkok, you’ll realize that the biggest problem isn’t exactly rooted in physicality. Simply put, the behaviors of Bangkokians are more of a challenge to overcome. Fang: Bangkokians are so accustomed to spending our daily life comfortably that we’ve overlooked the importance of walking. We are not only focusing on improving pavements; we want people to walk just about anywhere they can. The problem is that the very act of walking is tied in with clashes between social classes, social values and economic aspects. For instance, there’s this
perception that walking means you don’t own a car.
What areas are the UDDC currently working on?
How will you encourage people to walk more?
Tor: We will start from the inner city––Silom, Sathorn or Siam. We want these areas to be a blueprint for how to nurture the idea of walking throughout Bangkok.
Tor: According to our surveys, people in many other tropical countries, such as Malaysia and Singapore, are still able to walk in perhaps even more extreme climates. We just create excuses not to walk. Fang: Actually, since the BTS, we’ve started walking much longer distances; we’re just not conscious about that. The BTS actually encourages people to walk more, at least from the station to other places nearby. Tor: So, it’s important that our pavements provide an incentive for people to walk: properly-installed food stalls, more trees and shelter. That’s where we also come in. Obviously, infrastructure is only one aspect. We should raise awareness of walking. In saying that, we don’t mean everyone should walk from their home to work, which could be kilometers apart.
What do you expect to see if the project achieves its goal? Fang: Not only will people benefit physically, but there will also be more economic interaction between walkers and street vendors. Crime rates will hopefully decrease too, due to streets being busier. They also organize their own competitions around Thailand, like the Singha Cha Am Beach Bikini Beach Run, taking place Mar 13.

Looking for people to run with? Check out the running community at www.meetup.com/Bangkok-Runners. They use the global network of local groups, Meetup.com, to organize training sessions around Bangkok. It’s been going since 2012 and now has over 400 members of various nationalities. Many of their events (they had seven scheduled for Feb when we checked) are geared at training for specific races across the country. They also welcome anyone to come and join on two or three runs before signing up for the group.
This running club focuses on promoting healthy habits and community. Though run by Sathavorn Chanpongsri, the first Thai man to win a medal in the SEA Games marathon, it is absolutely non-competitive, and open for anyone to join. Simply check the meet-ups on their Facebook page.

MIKKELLER RUNNING CLUB The good folks behind Ekkamai’s best beer house also operate a monthly running club, part of a worldwide network of runners started by the Danish Mikkeller brand. THE BANGKOK MONDAY HASH HOUSE HARRIERS These guys claim to be the oldest running community in Bangkok. Founded in 1977 by Englishman Bob Boulter (or as he’s known in the club, the Grand Master), they’ve faithfully met every Monday ever since to run around the footpaths on the outskirts of Bangkok followed by a beer. Up to 30 people turn up each Monday at 5:30pm, paying a fee of B200 (men) or B150 (women) each—which covers the post-run beer, too. Though the Monday group is Bangkok’s oldest, they’re actually part of a larger network of running social clubs known as hashers—visit their website for the full list of groups. www.bangkokmondayhhh.com

Using the wrong types of sneakers can seriously strain your ankles and soles. Ari Running Concept Store at CentralWorld offers a 30-minute in-depth analysis service dubbed the Digital Gait Analysis, which requires customers to run barefooted on a treadmill for five to ten minutes while the staff records a video of their running stance. Data is then put through a computer program to determine, from the way you run, which type of feet you have, and which shoes would be best suited for you. Sneakers generally start from B4,000, with the more costly ones going up to B7,000.
This isn’t just the biggest Nike store in Southeast Asia; it’s also one of the best places you can go to browse running gear. The two-floor shop offers soccer and basketball gear on the bottom floor, while the upper floor is dedicated solely to running. We dislike: No BTS or MRT means runners can only get there by braving the horrendous traffic.
How long have you been running in Bangkok? I moved to Bangkok five years ago, and I felt running was an easy way to exercise and keep myself in shape. You don’t need a team or any special gear to do it. In that time, have you seen a change in the number of people at running events? Absolutely! When I first started participating in events five years ago, t h e re we re way fewe r p e o p l e attending. You could walk up to the desk in front of the event on race-day and register right then and there because so many spots would still be vacant. Now though, registrations fill up months in advance. How does Bangkok stack up as a city for runners? Honestly, Bangkok isn’t exactly the ideal place for running. It’s passable, but definitely not ideal. The traffic conditions are always challenging, the temperature is always hot and the b u m py, u n eve n s i d ewa l ks a re cramped with stalls. You really need to start very early in the morning to get the best experience out of running in Bangkok. Are most people that attend events competitive or not? It skews towards the casual, noncompetitive side. A lot of people I know are only recreational or hobby runners who view it as a productive way to hang out with friends. Generally, though, the atmosphere tends to vary from event to event. Some events are definitely much more competitive than others. Where do you usually run? A l o n g S u k h u m v i t Ro a d i n t h e morning, when the heat isn’t too bad. I also often run in the parks around the city—my favorite is Lumphini Park by far. I find that one lap around the park is just about right for me. I also enjoy the fact that there are always tons of activities going on, which makes running much more interesting.
Pounding the Pavement If running in parks isn’t your thing, try visiting www.walkjogrun.net, which maps out various sidewalk running routes across the city. The website is global, but there are plenty of routes submitted by local users—we found 109 different routes spread across Bangkok— including information on distance and terrain.

Take Chivas Regal, for example; from Speyside in Scotland, it has an elegant and floral taste which I personally like very much. It’s all about personal taste. 1

hough the whisky-tasting scene is quite small in Bangkok compared to wine, the Scottish spirit is just as well loved by those who appreciate the production and craftsmanship that goes into making a really special drink. And as is so often said, the same goes for wine as for whisky: the best bottle is the one you enjoy the most.

How To Taste It
Generally, whisky is distilled from grain, mainly malt but sometimes rye and wheat play a part, too. Despite commonly just being referred to as whisky, most of the bottles we drink in clubs are actually blended whisky; the result of mixing at least two types of distilled malt (or other grain) together. But whether single malt (whisky distilled from a single type of malt) or blend, fabulous flavors can arise from the simple production process of mixing malt with water. And that’s the fun part of whisky tasting. Now pick a bottle and be sure to pour it into a proper whisky tasting glass (see picture 1 ). The narrow shape is designed to provide space for the aroma to reach your nose as strongly as possible.
Swirl it a little to let the some oxygen bring out the aroma. Now forget everything you’ve been told about how the whisky was made and just follow your senses. It’s true that no fruit or spices are used in the whisky production process, but you may well pick out pear, dried fruit or cinnamon—some of the most common whisky tasting notes. So where do all those aromas come from? That’s where barrel type and age come into play. Chivas Regal Extra, for example, has notes of vanilla, cinnamon and almond.
Now you’ve picked up the aromas, mouthfeel will confirm if you got it right. The youngest age gives a fresher, fruity feel, while more maturing brings out tastes of dried fruit and woodiness. This is not a rule but more of a common guide. Try comparing two bottles of different ages from the same distillery to see how different they can taste. While Chivas 18 has a rich notes of dried fruit and dark chocolate, in the younger Chivas 12, you’re more likely to pick out the freshness from apple and sweetness from vanilla note. It’s also partly true that the older the bottle, the smoother the result, though blending spirits of different ages from the same distillery can also bring about wildly different flavors (and the result is still considered a single malt).
Your Drink of Choice Once you know what whiskey you like, it’s time to find out how you like to drink it. Most whisky buffs advise to skip the ice and simply add a dash of water to “open it up”—a measure that can actually enhance the flavor rather than dilute it. That means that after adding water, you should repeat your whole tasting to see how the tastes and smells have opened up.
Where do flavors like fruits and spices come from? These will come predominantly from the maturation process. That’s when you age the so-called ‘new spirit’—the freshly distilled product that later becomes whisky after it’s been put in a cask. The spiciness and the fruitiness will come from the oak cask, basically, but can also come from the spirit itself. Chivas Regal is a blend of malt and grain whisky, and from that you get two distinct tastes. For Chivas Regal Extra, the latest member in Chivas Regal family, a proportion of the blended Scotch whisky is matured in sherry casks, which plays a part in transferring more fruitiness. Dash of water, crushed-ice or ice-ball, what’s better? And how does it affect your whisky? It makes a big difference, but again, it’s down to personal preference. Adding water to whisky does two things: first, it reduces the alcohol content; second it opens up the whisky and allows you to get more tasting notes. For example, with Chivas, adding water gives it a creamy taste, but also brings out more subtle notes. Whether ice or ice ball depends how much water you want in your drink—an ice ball is going to melt more slowly while also keeping it chilled.

22 Kitchen and Bar The Dusit Thani’s former French fine dining haunt gets a casual, Pacific Coast-inspired makeover. The buzz: Following the closure of D’Sens, the Dusit Thani has placed its 22nd floor under the control of chef Hawaiian Nikolas Ramirez, who's turning out what they coin “Pacific coastal cuisine”—a mix of flavors from Mexico, Hawaii, Peru and Japan. The décor: The coastal theme is emphasized with a white and aqua-marine color palette, while richly polished wooden tables and leather-upholstered chairs make clear that, though casual, this is still high-end. As you enter, you’ll see a dark brown-and-white bar, which can seat about 15 people, while there’s space for about 30 more in the restaurant proper plus three private dining rooms that can accommodate 8-16 people each. Of course, the view is fantastic thanks to huge glass windows looking right over Lumphini Park.

The food: The menu is only small, and focuses mainly on seafood. Drawing on his Hawaiian upbringing and experience working in Santa Barbara, the chef makes use of various Pacific Rim flavors, from Peruvian ceviche like the barbecue salmon belly on pressed potato and tomato relish (B290) to Japanese Hamachi in miso broth (B550). The whole grilled fish of the day (market price) served with Peruvian seafood paella and pickles is a real highlight. Though the presentation is rustic, the fish is completely deboned so you can tuck in worry-free. Dessert packs a few fun twists, too. We really like the baked coconut custard, candied pineapple and parmesan cream (B250).
The drinks: The well-stocked bar offers wine, beer, cocktails, mocktails, coffee and tea. Cocktails are fruity and inventive, like the Passionate Thunderball (gold tequila, passion fruit and chili, B350), which has a fiery kick from the rim smeared with prik ka gluer (chili powder, salt and sugar). In fact, 22 Kitchen is intended to be as much a bar as it is a restaurant, and they plan to introduce a few drinks promos in the near future. Among the restaurants in the so-called “Korean Town” of Sukhumvit Plaza, this old favorite proudly claims to be one of the first Korean restaurants in Bangkok— open since 1992—and still has quite a following. On our last visit, the ground floor was full so the staff seated us on the second floor in one of their five private rooms. These look as old as the opening year suggests, and at first our room had a slightly musty smell to match (though this soon disappeared once the air-con was turned up). The table has a built-in stove, but the wait-staff are the ones who grill your meat and cut it into bite-size portions, as well as mix your bibimbap (rice with meat, vegetables and egg). The menu focuses on barbecue and other Korean staples like kimchi jjigae (kimchi stew, B250), which is served in a sizzling hot stone pot. The dish is nicely balanced,

Set in the heart of the Sathorn business district, this sister restaurant of Thonglor’s Mugendai is similarly sushi-oriented. Yet its modern café-style décor and creative menu mark it out as something quite different from the many Japanese restaurants across town. While much of the office building it resides in is creepily empty at 8pm, Muteki is still alive with a white-collar crowd who see no need to drag themselves from Sathorn to Thonglor. Its dishes tick many boxes for Instagrammers, especially the mouthwatering all-day breakfast options like fluffy soufflé pancake served with truffle butter (B135) and the colorful and addictive banana and strawberry nutella French toast (B165)—we suggest adding some milky Hokkaido soft cream (B50/ B65) to the mix, too. The menu itself resembles a tabloid newspaper and is

and doesn’t let the sourness of the pickled cabbage overwhelm the other flavors, while the accompanying rice is also pleasant—slightly sticky and lightly scented. The dolsot bibimbap (mixed rice, B230) also comes in a hot stone pot, which nicely chars the sticky Korean rice to the bottom for a satisfying crunch. The dwaeji galbi (marinated pork rib, B350) is served wang galbi style (filleted in layers with the bone still attached). The waiters quickly grill it and then portion it out once cooked through. The pork is tender but there’s no distinct seasoning— it only becomes identifiably Korean when wrapped in lettuce and eaten with the side dishes of napa cabbage kimchi, pickled cucumber, radish kimchi, garlic, seasoned spinach, shredded scallion salad, Korean-style pancake and plenty more. We really like the thinly sliced pickled white radish. Though service is generally efficient and the staff will replace your grill before you need to ask, the meat is sometimes left sitting on the heat for too long. By the time you get to the second half of your rib it ends up too dry. There’s no dessert menu but they provide complimentary fruit after the meal. As for drink, soju starts at B300/ bottle. Though the 23-year-old restaurant has lost something in the way of looks, we’re happy to say that, on the whole, you can still rely on the food.
packed with hundreds of dishes, from maki to sashimi, tempura and lots of agemono (deep-fried sets) and don (rice). One dish that ranks highly is the engawa l ava d o n ( s ea re d h a l i b u t f i n a n d mayonnaise truffle oil on a bed of rice, B395). The engawa and mayonnaise combine for an incredibly soft texture, while the initial sweetness is balanced by the slightly sour rice, the spicy chili powder and the charred aftertaste of truffle oil. The Twilight roll (seared salmon, scallop and flying fish roll, B410) is another interesting mix of flavors: sweet due to the teriyaki sauce and salty from the miso sauce. But the complex flavors don’t always work, as in the akami mentago (salad with avocado and Bluefin tuna, B390), in which the freshness of the fish is overpowered by the spicy mayo and ponzo sauce. Sometimes we’d just rather play it safe with their impressive nigiri and sashimi. As you’d expect these days, they offer omakase (chef’s choice) sets, which start from a low B500 and go up to B3,200. We especially love the Three Musketeers set (B1,200 for nigiri/B2,400 for sashimi), which contains akami, chutoro and marbled fatty otoro, just like at their original Thonglor joint. Even if its dishes don’t always come off, Muteki feels a bit like the Mugendai team’s playground, where they can exercise their creativity. Set to expand to Paragon and Emquartier, we can only hope Muteki’s new branches live up to this one’s standards.

LIBRA (Sep 23-Oct 22): Hall-of-Fame basketball player Hakeem Olajuwon had a signature set of fancy moves that were collectively known as the Dream Shake. It consisted of numerous spins and fakes and moves that could be combined in various ways to outfox his opponents and score points. The coming weeks would be an excellent time for you to work on your equivalent of the Dream Shake, Libra. The recommended top speed for a car is five miles per hour. So on the one hand, you’ve got to proceed with caution. On the other hand, the quaint, brick-paved road is lined with flower beds, and creeping along its wacky route is a whimsical amusement. CAPRICORN (Dec 22-Jan 19): In the baseball film The Natural, the hero Roy Hobbs has a special bat he calls “Wonderboy.” Carved out of a tree that was split by a lightning bolt, it seems to give Hobbs an extraordinary skill at hitting a baseball. There’s a similar theme at work in the Australian musical instrument known as the didgeridoo. It’s created from a eucalyptus tree whose inner wood has been eaten away by termites. Both Wonderboy and the didgeridoo are the results of natural forces that could be seen as adverse but that are actually useful. Is there a comparable situation in your own life, Capricorn? Traithep Wongpaiboon Veteran musician Traithep Wongpaiboon, 45, managing director of Kantana Sound Studio, made headlines last year for his sound editing in Wong Kar Wai’s film The Grandmaster, which won him a gong in the Golden Reel Awards, the self-described Oscars for sound editors. Now he’s plotting his music career comeback next month as one half of the pioneering electro-pop duo Kidnappers, after 10 years off the scene. My love of music opened up a world of sound. I always loved to listen to music but I wasn’t good at playing it. Then I read the credits in an album sleeve and realized there are many people working behind the scenes. That’s when I decided to study to be a sound engineer and form Kidnappers. I predicted the downfall of the music industry. By the late 90s, sales were down, producers were turning to home studios. At this same time a foreign movie studio contacted me to work on the sound editing for their movie and trained me up, too. It was pretty fun. Whether making sounds for movies or music, it’s pretty much the same goal: entertaining people. But movies require much more attention to detail. Music alone can create a feeling, but with film you must create sounds that will sync the audience with the movie’s mood. Be open-minded and you will grow faster. I work on 25-30 movies a year. It’s not easy dealing with so many directors and producers who all have

their own ideas. But it’s their movies. Their imagination pushes me to learn more skills and earn their trust. Understanding your clients’ pressures can help you get the right attitude. A filmmaker might stump up a B50 million budget for their movie, book all the cinemas, and if you can’t finish the soundtrack in time, they will lose a lot of money. Luckily I have a good team who love their job and understand that we need to work under pressure to finish at least two movies a month. Winning at the Golden Reel Awards gave us the confidence to compete globally. Our position in Asia is pretty good as lots of foreign clients come to us because we are relatively cheap, but still very good quality. In Asia, Thailand is second only to Japan and maybe Hong Kong when it comes to sound editing. Technology can be a distraction. I often meet young people who can do a lot with sound and editing but they don’t know what they want to be. It’s good that they know so
much, but they need to put their knowledge to good use. Sound editing isn’t something you do straight after graduating. The industry is pretty small in Thailand because the equipment’s so expensive. You think movie-makers are spending B10-12 million on their film only to put it in the hands of an unexperienced sound editor? It’s not like something you post on YouTube.
geeks to do it at home. It’s really satisfying to learn, as I was born in the analogue era. I can die happy now. Vinyl is back for sure. The sound quality is incomp a ra b l e. I ’ m producing limited-run vinyl under the name Boop Records, so I know the market is growing. I used to make about four records a month; now it’s more than 20. It’s a time-consuming process. My clients range from artists in Thailand and abroad to collectors who want to make a copy of their original vinyl.

I love to visit record shops, especially in Oxford Street and Soho in London. It’s heaven. I will stay in a shop for hours. As for Bangkok, my favorite places for vinyl are Eight Music in Thonglor and Fat Black Records at Crystal Design Center.
People today are so lucky that they have lots of music to listen to and making it is so much cheaper. The only problem is the drop in quality. In the old days, musicians needed to play really well before going to record at a top-notch studio. Now you can record all the instruments separately. Poor quality MP3s are also to blame. Why should record labels spend big to create a sound that will eventually only be compressed into MP3? Kidnappers’ new album will be electro-pop, as always. May [Pakawat Wiwitaya] and I just want to stick to our old style instead of chasing the trends. Luckily, vintage is in vogue now! I think our analog synths are in now. Just like before, we have a new singer—it’s always been our concept to kidnap a girl to be our singer. I make music because I love it, but I work as a sound editor to make a living.
