Triam Udom Suksa senior Nattanan “Nice” Warintarawet, 17, waded into political waters last month by submitting a blank piece of paper for her civic duty exam, followed by an open letter to Prime Minister Prayuth Chan-ocha. The co-founder of the Education for Liberation of Siam (ELS), a student-run group that opposes “the usage of education as an instrument for propaganda,” was then accused of suffering from mental illnesses by a Triam Udom administrator. Tell us what you think about civic duty.
And what about the “attitude adjustments”?
I think civic duty here is heading down the wrong path. In other countries, civic duty is called “civic education,” which encourages students to think critically and differently. Civic duty under the junta encourages conformity. How can Thai students think critically and engage in debates if we’re trained to conform and to blindly follow things that people with power say?
I’m quite afraid of that to be honest, but then again, I’m still a minor. Anyway, I strongly disagree with attitude adjustments. I don’t think that the junta has any right to control what people think.
Do you disagree with the “12 core values of Thai people”? It’s not that I disagree with the values specifical ly, but I disagree with the way that they’re being taught. I don’t think a junta that came into power unrighteously should be teaching people what is right and what is wrong.

How did you react to the teacher who released the statement regarding your mental health? I didn’t think a teacher would accuse a student of mental illness. I was really angry and disappointed. I met with him during lunch break, and the article come out by the end of the day. It was a matter of hours. But you’re not taking any legal action against him, right? Right, because I consider him as a teacher. He’s not my teacher, but he’s still a member of faculty at my school. If he was convicted, he would face jail since defamation in Thailand has imprisonment penalties. I think that’s too harsh.

Any plans after graduation? I plan to study abroad because I really value academic freedom, and I don’t think that I can endure the suppression of freedom of expression in this country. I want to let my mind grow and to be able to freely discuss and express my thoughts. I think going abroad is much better for me. Much healthier. Are you going to go into politics? I’ll need to grow up a bit more to consider it. I’m interested in economics. It’s my favorite subject, but I haven’t decided what I’m going to study yet. What’s next for you? Any plans for the Education for the Liberation of Siam? I don’t actually have plans yet. I want to study and to prepare for my exams but if I feel the urge to speak out about an issue, it’ll be quite unavoidable for me to do so. Interview by Pimploy Phongsirivech.

The runny egg yolk is complemented by ooey-gooey parmesan cheese with aromatic bell pepper cream and sauteed mushroom. Nothing can stop us from wiping the bowl clean with their complimentary baguette—good thing the bread’s free-flow.

2. The clam chowder at Crab & Claw (B220) Although the hype surrounding this place centers on the big red lobsters, don’t let that stop you from trying this relatively humble dish. Without being too rich, this New England-style clam chowder is satisfyingly creamy and aromatic, with lovely texture from the clams and bacon. 3. The oil-yaki at Mikaku (B3,500/100g) 5. The Chicken Movie at Err (B150) Everything just comes together perfectly in this dish: from the well-marbled wagyu beef and seasoning to the cooking expertise of the chef, the third-generation owner of this 80-year teppanyaki restaurant. The tender oil-yaki is made from thin, handsliced tenderloin (only about 2mm thick), cooked and served one strip at a time. The result: melt-in-your-mouth goodness with a slightly sweet note.
The food at Err is comforting and casual, with a focus on drinking snacks. But seeing as it’s designed by chefs Bo and Dylan (of Bo.lan fame), you can expect authentic local flavors. The funkynamed Chicken Movie is little more than thin and crisp deepfried chicken skin served with a house-made Sriracha sauce, but the dish manages a perfect balance between sweetness, sourness and pure heat.

Five-spiced egg is a Thai staple, as is tom saeb. When the two dishes collide, as at Baan, the results are nothing short of amazing, just bursting with herbal notes. The dish, taken from chef Ledu’s Thitid Tassanakajohn’s family recipe, looks set to stand the test of time.
The wonderfully tender steak is made from 60-day aged Tajima wagyu. The beef itself is packed with flavor, but it’s the potent ponzu jelly that takes the dish to another level and makes it worth the price tag.

For the first time in its history, Narai Hotel, led by Deputy Managing Director Mr. Nathee Nithivasin, has decided to enter the mooncake market this year. What’s more, Executive Chef Kangwal Charoensri has developed his own recipe and made all of the cakes in-house. Narai mooncakes stand out for their dense filling, which stands out all the more thanks to their super-thin onemillimeter crust. Though the cake itself is not as big as the normal 10-centimeter ones, they don’t skimp on adding a whole egg yolk to the fillings. With no preservatives, the little goodies can be kept at room temperature for 30-45 days and come in eight different flavors—four classics and four contemporary updates.

Taking real and wonderfully sweet OTOP durian paste from Chanthaburi, the chef adds some watermelon seeds for a dense yet heavenly smooth filling.
You can’t have a green tea sweet without its best pairing ingredient, red beans. From the first bite, you’ll experience the intense aroma of real matcha, which also incorporates some roughly mashed red beans for a delicious flavor and surprising texture.
DURIAN WITH EGG YOLK Chef Kangwal adds a twist to the classic durian with salted egg yolk flavor by inventing his own milk-cookie-like dough especially for this filling. The flaky crust has a nice, buttery aroma that compliments the sweet notes of the thick durian paste.

The classic filling is made with a paste base imported from Hong Kong. The chef develops his own flavor by adding a whole egg yolk to the middle of the cake.
Lotus seeds, chestnuts and gingko seeds are chopped up and mixed to create a unique filling. Whole almonds and walnuts are also added for a crunchy texture.
This creative flavor is another big twist from Chef Kangwal. Made with dried Sunkist and mandarin orange peels, dried pulp and concentrate orange juice, the result bursts with citrusy flavor.
On top of the chocolate paste, a 10-gram chunk of semi-sweet chocolate is added to Narai’s chocolate mooncake to balance the flavor and add a rice quality to it.
Unlike other brand’s custard-stuffed mooncakes, Narai’s filling is made of custard paste that’s blended with salty egg yolk, instead of putting it inside like the durian or lotus seed ones. With a slightly rough texture, the custard filling has both nice flavor and texture.

Forming a 50-gram mooncake takes skills, from measuring the exact weight of both the dough and the filling to delicately wrapping the filling with the super thin dough, without breaking it, pressing it into a mold and removing it. The final cherry on top is to brush it with some egg wash after baking.

Designed by acclaimed Singaporean landscape architect Damian Tang, the flower display boasts more than 8,000 orchids arranged in deference to 10 local folklores under the theme From Tales to Legends: Discover Singapore Stories. Among the classic tales recounted is the one of the mythical Merlion saving a fishermen’s village from a 10-meter-high wave. Step Back If you’ve visited Singapore, chances are you’ve wandered around Chinatown. But if you really want to get the most out of your walk, we recommend joining a Red Clogs Down the Five Foot Way walking tour (S$35 [B890] per person, goo.gl/ fqwQAO), which recalls the extraordinary journey of Singapore over the past half a century by focusing on the country’s preservation efforts. The route starts at Thien Hock Kheng, the oldest Hokkien-Chinese temple in Singapore, before heading to Amoy Street, lined with beautifully preserved shop-houses that originally belonged to some of the earliest Chinese immigrants. Cutting through Ann Siang Hill Road, you will reach Chinatown via South Bridge Road. Here, you’ll pay a visit to the Chinatown Wet Market, a hidden spot off-the-radar for most visitors. The two-and-a-half hour tour starts early in the morning, so we suggest continuing your nostalgic trip with a visit to the Chinatown Heritage Centre on Pagoda Street. Peranakan Treasures The Peranakans—aka Baba Nonyas, the descendants of Chinese migrants—make up one of Singapore’s most distinctive cultures. The best place to explore their colourful heritage is in the Joo Chiat and Katong areas where you can go house-hopping. Katong Antique House (goo.gl/ZUUuXo) displays old furniture and costumes, and features a gallery on the top floor, while NUS Baba House, the first Peranakan museum on Neil Road, is free but you need an appointment (see goo.gl/GypWm5). River Run Set aside an afternoon to get in touch with nature through River Safari (open daily 9am-6pm, ticket S$5 [B128, separate from the zoo admission fee of S$28 [B712], riversafari.com.sg), a newly expanded activity of Singapore Zoo. The boat ride takes you on a tour of the Upper Seletar Reservoir, a wonderfully preserved eco-system that’s home to marine lives from around the world. The reservoir is split into zones named after famous rivers (Mississippi, Congo, Nile, Ganges, Yangtze and Mekong). Don’t miss the stunning giant aquarium dubbed Amazon Flooded Forest which has the green and mysterious atmosphere of a submerged Amazon.
Vivid Festivals Gardens by the Bay
Even if you don’t identify as Hindu, there’s no time to visit Singapore quite like Deepavali Festival, aka Festival of Lights, which sees Little India transform into a colourful fantasy land. This year, the celebration starts on Nov 11. Further afield, Chinese New Year (early February, 2016) is packed with must-see events such as Chingay Parade, a samba-like carnival, and the River Hongbao lantern festival. Plan ahead.

Four years since opening, Flow House Bangkok remains the only surfing ride in central Bangkok. Now the team has partnered up with brewery giant Chang Beer and redecorated the second floor as a Californian beach-theme bar, dubbed Chang Surf Bar. There’s also a new menu created by Chef Thamasak Choothong (Iron Chef for European cuisine) including Californian crab cakes with mango chutney, grilled fish tacos, minced lamb kebab and Shanghai noodles with squid and pesto sauce serve with green chili salsa. Bangkok’s Mexican food scene is flourishing. On top of all the recent brick-and-mortar openings, there are now two new taco trucks (see page 31 for Taco Taxi). One of them, Cactus is co-owned by a Le Cordon Bleu graduate, who’s based his specialty tacos on traditional Mexican recipes. The truck’s offerings include the special flour tortilla chips with salsa (B60) or guacamole (B100), tacos (two per serving) with fillings like chicken tinga (B160), al pastor (pork, B180), shredded beef (B200) and the vegetarian cocoa bean, corn and zucchini (B150). Or opt for the trio option (one each of chicken, pork and beef) at B300. We’re impressed not only with the flour and corn tortilla, made in-house from scratch, but also the salsas. Beer mogul Chris Foo (Brew Beers & Ciders) has given the spot that used to be live music staple Cosmic Cafe a slight retro makeover. As well as European pub grub and spicy Thai-fusion dishes, you’ll find some 100 bottled beers, including Rogue, Triple Karmeliet, Bacchus and Floris (from B240). The beers on tap are completely different from those at Brew, including Limburgse Witte (B140/240 per half pint/pint) and the fruity Bacchus Cherry (B160/280).
Situated a few steps from Salt Smoke on Ari Soi 1, this is not your average Irish bar. The decor is rustic enough, with a few industrial twists in the form of nicely-designed steel and wood table sets, but the beer selection is quite possibly the best this side of town. Verdict: Just stick to their lovely smoothies.

The Dining Room The signature restaurant at the much-hyped House on Sathorn goes for East-meets-West flavors. The buzz: After three years of restoration, the beautiful mansion just next to W Hotel has opened its doors as The House on Sathorn. Formerly a wealthy merchant's home, the 1914 building became the Hotel Royal in 1927, then the Soviet Embassy from 1948-1999 before falling into neglect and disrepair. Located on the left wing at the front of house, The Dining Room is billed as the place’s signature restaurant. There are also a bar and courtyard with their own distinct food and drinks menus. The decor: The compact restaurant is designed for an exclusive and intimate meal with only 40 seats, almost half of which sit at the long, wooden counter facing the kitchen’s working space. Old structural elements, like the fluted Corinthian columns featuring carved boar heads, representing the zodiac sign of the original owner, remain, while the newly installed sharp rect-

angular counter and matching chairs give the place a slightly modern update. The food and drinks: The kitchen is headed by Turkish chef Fatih Tutak, who previously worked at The Belbrook in Hong Kong, Nihonryori Ryugin in Tokyo and Noma in Denmark. Doing what he calls New Asian Cuisine, the chef takes his well-traveled background as inspiration to create dishes that, he says, narrate stories. The results keep things fun, though in a more dressed-up way than other W outlets. Hunting (B790), for example, is symbolic of a European hunting day, with duck breast lying on splashes of red pomegranate sauce and burnt onion powder as gunpowder. The Red Parfait (B750) is equally stylish: foie gras torchon wrapped with beetroot jelly, served with brioche and aged balsamic vinegar. As for sweets, On My Way to Silom (B350) is inspired by a local grilled banana stall
not far from the chef’s residence. There's a compact list of white, red, rose and sparkling wines, starting at B210 by the glass. Signature cocktails are priced at B370 with options like The Talisman (Singleton 12, Antica Formula Vermouth, port wine, Peychaud's bitters) and Gemstone (charmomile tea infused Tanqueray London dry gin, lemon juice, cinnamon, vanilla). Why you should care: Though the food is not really promoted as fusion, chef Tutak does an interesting blend of East and West, also using modern techniques alongside local ingredients. Paste is a beautiful restaurant serving refined and delicious Thai dishes. The double-height window panes facing CentralWorld make for an impressive backdrop for the minimal decor and handful of showpieces: giant strips of silkworm cocoons rising up to the ceiling, glass domes housing leafy arrangements and circular nooks formed by sculptural banquettes. Paste’s plating is equally becoming: relaxed and effortless despite a painterly attention to color. The vibrant multitude of ingredients makes for a complex layering of lively flavors, too, like in the duck salad, which comes with (deep breath) banana flower, coriander, chili, lychee, white sesame seeds, cucumber, toasted rice, roasted coconut slices, soy sprouts, fried garlic, flecks of seaweed, shallots and Vietnamese mint. Despite this incredible diversity, flavors and textures remain distinct. Bangkok’s not the only city going through a street-food crisis. Gokfayuen claims to serve the type of dai pai dong -style dishes, specifically wonton noodles, which were once ever-present on the streets of Hong Kong. And it’s a satisfying homage in terms of both authentic taste and price—especially for Thonglor. Occupying a shop-house at the entrance to the relatively quiet Thonglor Soi 9, the restaurant boasts a rather retro silver-andwhite theme that’s complemented by a soundtrack of old Chinese songs. The brief menu specializes in late-night drinking food like the highlight wuntun meen (B79), which is just as aromatic as the ones in Hong Kong. The dish is delicious,

coconut—delicious! Mains are pared back in contrast with the yam, leaving more space for the quality meats to shine through: Australian beef cheek, wild seabass, kurubota pork belly... Our top pick would be the seabass, served in a curry so light they call it a foam (thankfully, it remains rather creamy), whose white turmeric, lemongrass and fennel notes support the fish’s firm, white flesh perfectly. Service also gets high marks for actually knowing what’s on the plate. More importantly, you can really feel husband and wife chefs Jason Bailey and Bongkoch Satongun’s creativity and personality in their food, which is not always the case at traditionalists like Nahm or Bo.lan. Dishes here remain clearly and authentically Thai, but also refreshingly unique. Before you book, a few caveats. The place is in a mall (even if it is easy to forget once you’re inside) and a walk through Gaysorn’s corridors is not a fun way to start a meal—neither is an empty dining room. Does it have to do with the prices? Appetizers are mostly B300-390, mains B500-750. The sets are gargantuan but ring in at B950 for lunch (per person, 2 diners minimum) or B1,600/1,900 for dinner (per person, 4 diners minimum). And do note that water comes in the shape of B190-plus-plus bottles of Vittel—French water with Thai food, really? At those prices, the tables’ cheap and chipped laminate deserves mention, as does the absence of the pastry chef on our last visit—not that dessert is included in any of the aforementioned sets. Nitpicking aside, Paste deserves much, much more recognition for its superlative offerings.
with big, dense wontons and fragant and flavorful soup. Being picky, we’d say the shrimp wontons are a little salty and the thin egg noodles too dense, but they’re just minor quibbles. While the menu’s heavily focused on noodles, other mains like jin cha siu (barbecue pork, B139) and tender boiled chicken with rice (B79) are just as impressive. The former is definitely among the best barbecue pork dishes we’ve tasted in town, with a sweet and salty flavor that’s so intense you’ll definitely need to order a side of rice. The chicken, meanwhile, is super-tender and juicy, even if the dipping sauce (blended ginger, spring onion with oil and salt) is a touch bland. The Chinese kale topped with lard and oyster sauce (B79) is perfectly steamed—our only problem being the small portion of sauce. Some of the fullflavored dishes are a bit too much, like the jin ngou lam (braised beef, B139) with its overpowering spices that detract from the taste of the beef. Despite its tiny portion of noodles, the cha jurng lo (spicy pork sauce with noodles, B89) is another dish that’s quite hard to finish due to its extratangy, sweet sauce. On the whole, though, this late-night joint delivers a winning mixture of no-frills comfort food and reasonable prices.

What’s impressed me most is probably the changing behaviours of attendees in using the right bins for organic, recyclable or general waste. That’s part of the legacy of sustainable events management. How has ISO 20121 certification helped with attracting overseas clients? This certification has helped us to respond effectively to any client who is looking for service providers with sustainable standards. ARIES (Mar 21-Apr 19): Charles de Lint is a novelist whose stories are influenced by folklore and science fiction. In his book Yarrow, a wizardly character named Toby is skilled at conjuring. He can make small objects appear and disappear. But Toby yearns for more. “I want to be magic,” he says. “I want to be a friend of elves and live in a tree.
