Korean Food, Hansik

A free new guidebook in English and Thai highlights the best Korean food in Bangkok.

“To introduce Korean food in Bangkok, MAFRA (Ministry of Agriculture, Food and Rural Affairs) and Korean Food Foundation are publishing “Korean Restaurant Guide” in Bangkok, January 2015.”

The guidebook, which was previously released in Tokyo, Western Europe, USA and China will include a list of 40 of the most excellent Korean restaurants in Bangkok, with testimonies from authoritative Thai sources like S.E.A. Write Award winner Prabda Yoon and famed architect Duangrit Bunnag. The restaurants have all been picked by a team of three judges, who looked for aesthetics as well as the taste of the food. Among the team of judges is celebrity travel writer Palida Phimphakorn, best known for her series of Japan-focused guidebooks. Although new to Korean food, Palida was quickly impressed with the exquisite and colorful nature of the cuisine. “I found the arrangement and colors of a dish to be absolutely attractive,” she said. “Eating good Korean food is an experience, one that satisfies both the stomach and the eyes.” Looks aren’t all it has to offer. With a heavy emphasis on health without compromising taste, Korean food is also cooked using an assortment of incredibly varied herbs and spices to give each dish a subtly different and exciting taste. Palida’s favorites are also wildly different in taste, with the hot and spicy kimchi soup standing in stark contrast to the muted flavors of samgyetang (ginseng chicken soup), though both are now her go-to Korean dishes.

To mark the book’s official release, Bangkok Information magazine (agency) will be hosting a street event by setting up booths in various locations around Bangkok. Passersby can receive free copies of Korean Restaurant Guide: Bangkok, as well as win various complimentary prizes by downloading the mobile-app version, available for both iOS and Android (Search: kff, Korean Restaurant Guide). Just 8,000 copies of the book will be printed—with information in Thai, English and Korean—which can be found at the Korean Culture Center (KCC) on Sukhumvit Soi 15 as well as the Korean Embassy on Ratchadaphisek Rd. along with an accompanying map showing the location of all listed restaurants. The e-book version is available for download from the Korean Food Foundation website at www.koreanfood.net, www.hansik.org.

Thanks for the food trucks, the flea markets and the coldbrew coffee, 2014 (see our cover story, page 6). It’s been great. But one last big drunken teabased-cocktail-fueled bash (see our roundup of NYE parties, page 30) and we should be ready to move on to whatever silly trends 2015 will bring us.

Hot: Rumoured rumours Not: Journalism Ever since the stock market took a nine percent nosedive on Dec 15, there’s been talk that the rumours that caused the crash were completely unfounded. But what are these rumours? We’ve heard several rumours about them, not that we can tell you what they are. Maybe you should ask a journalist.

STREET TALK Operated by a small team of young entrepreneurs with a social conscience, travel start-up Local Alike aims to establish sustainable tourism as a reliable source of income for hilltribe and agricultural communities living in remote, rural areas of Thailand. Patomporn “Bow” Pongnin, 24, the sustainable tourism initiator, and Somsak “Pai” Boonkam,31, the co-founder and CEO, sit with BK in their cozy one-room office to discuss how it works. Why did you start Local Alike?

We hate GoPros, which topped our wish lists for Xmas 2013. They make you realize how unadventurous your vacations really are compared to the guy in the squirrel suit. With drones (see our roundup, page 18), it should take even less time to realize buying one was a terrible idea. In fact, keep it under 14 days and you might even get your money back (see refund policies, page 16).

Lately, our friends in the PDRC have been getting noticed for full-on fist fights and throwing boiling noodles on airplanes. This is a marked improvement on the previous Chiang Mai poopgate.

Bow: Thailand’s second highest source of income is tourism. But the only people who seem to be profiting are hotels and tourism agencies, not the local tribes and communities who are a large part of the reason tourists come in the first place. Currently, businesses like hotels and tour agencies are estimated to receive about 70 percent of the total income generated [by tourism] each year, whereas a measly 10 percent is going back into these communities. We’d like to see income generated by tourism being used to improve the quality of life in these areas.

On the customer side, however, we still face challenges in setting expectations and communicating what we actually do. Most of our problems are common among startups so we’re not particularly worried. The biggest problem is money, especially when it comes to preparing and improving the local communities. How do you see Local Alike growing?

What differentiates Local Alike from other tourism agencies?

Pai: We’d love to become the leading organization in sustainable tourism.

Pai: The average tourism agency’s biggest concern is the tourists themselves, not the tourist attractions. Local Alike operates in three phases: The first phase sees us working with local communities, teaching them how to manage and plan tours by themselves. Then, we establish connections between locals and tourists through the Local Alike website. Once that’s done, we work to monitor these

Bow: Ultimately though, we’d like to show people that you can do good things just by traveling. We are starting to receive corporate clients, most of whom have their own CSR plan. The message we’re trying to send here is that it may seem like you’re just traveling, but if you do it right, then it can also become a chance for you to do good things. We’d like to be a role model of giving back, as a social enterprise.

What changes have you witnessed among communities you operate in? Pai: Tourism isn’t just a source of income, but also a source of hope: By making their community popular and well-known, these people hope that their children will see the value of their homeland and return to help them improve the village. Bahn Baht, one of our partner communities, used to be known for its excellent craftsmanship in making alms bowls. In the past, there were hundreds of craftsmen living in the village. Now, there is only a handful left. The community’s culture is slowly dying. They can’t keep up with factory-made products anymore, and it really affects them. Bow: Tourism is also seen as a tool for community bonding. Everyone pitches in to help make their community more welcoming for tourists. It gives them a chance to fight back against the corrupt authorities in the area, something they’d normally be too afraid to do. Smuggling groups also avoid these villages, as there are more people around. Interview by Kanin Srimaneekulroj

The New Rustic One of our favorite recent openings in the Northern capital, the small tearoom Rustic & Blue ( 0 8 6 - 6 5 4 -7 1 7 8 . O p e n d a i l y 8am-midnight), has found new digs, just around the corner on Nimmanhaemin Soi 7. Naturally, the place is still very big on rustic décor, with a gleaming oakwood table, hanging plants and black steel shelving. There are even tiny chairs made from hay bales out front. More impressive than the façade is the menu, which is focused on local produce and all-day breakfast. We love the photogenic gluten-free chickpea crust pizza (B265), and craft beer and cocktails. Also, grab some home-grown, organic vegetables like heirloom tomato (B65/kg), baby carrots (B55/kg) and kohlrabi (B60/kg), as well as aromatic herbal teas, to take back home.

Ever had a bad experience returning goods in Bangkok?

It’s the season of giving, but what if you don’t like what you’re given? Here’s what you need to know about returning unwanted presents. By Tewit Phanitprachaya and Vasachol Quadri

I

t’s a sad fact that, if you just want to return something because you don’t like it, Thai law pretty much leaves you screwed. That means you’re at the mercy of retailers’ return policies when it comes to offloading that unwanted red reindeer sweater. For those whose friends and loved ones stuffed up this year, here’s what some of Bangkok’s biggest malls and online shops promise to do for you.

Items in good condition can be returned within 7 days of the date of purchase (excluding items on sale). A genuine receipt must be presented with the returned items. Things get tricky for faulty of damaged items: It is up to the purchaser to ensure an item is not damaged or faulty prior to purchase. Exceptions are made on a case by case basis.

If any defect is found under scrutiny from King Power, the company promises to refund the price in full. Unwanted items without any defects are non-refundable. The claim must be made within 30 days.

Sporting a 360-degree, tilt-able, 14-megapixel camera, helped by a three-axis camera stabilization mechanism, the drone can take crystal clear pictures mid-flight. It can even record 1080p, HD videos at both 30 and 60 frames-per-second. The range isn’t bad, either, extending to 700 meters with the controller. The live video-feed can only be transmitted 300 meters, though.

The front-mounted camera relays live footage to the smartphone app, allowing you to fly the drone in first-person view. The camera also supports video capture at a decent resolution of 720p in 30fps. The single biggest issue with this model is the Wi-Fi-only connectivity––no cellular networks–– which limits the drone’s usability in outdoor areas.

The drone is very easy to keep in the air thanks to its six gyro sensors, which allow it to do neat tricks like the classic barrel roll.

The drone has a control distance of 600 meters, and can also be set to hover in place––an interesting choice for people who already own decent cameras.

There’s always going to be something to love about a restaurant in a house as beautiful as this one, but the food at Hemingway’s didn’t used to match the same standard as the charming teak mansion. After ditching the original chef, they’ve re-launched with a completely overhauled menu that’s as much Tex-Mex and comfort food as it is Cuba-Florida. Think nachos, fajitas, pizzas, burgers and ribs as well as seafood with various Latin-American i n f l u e n ces . I t d o es n ’ t s c rea m E r n est Hemingway as loudly as the rest of the branding, but it’s basically the stuff most people want to eat. To that end, the restaurant does a fairly decent job at prices no one but the tightest diner could complain about (our oversized meal for two with a couple of stiff drinks fell short of B2,000). There are also

loads of different happy-hour and food promotions, so turn up at the right time and you can really dine at this place for a song. On a late Sunday afternoon, it seems many got the message, since the outdoor bar is packed and lively with Western expats, while a few Asian families are already seated in the dining room. The food menu’s most extensive section is its small plates, which are also where Hemingway’s does its best work . The Albondigas Criolla (Cuban meatballs, B150) are excellent—bigger than expected and served in a sharp, intensely-flavored tomato stew. Likewise the beef sliders (B160) are so tasty we regret not ordering the proper-sized burger. But it’s not all good. The nachos (B280) are perfunctory at best, benefitting as much from the delicious tomato salsa as they are let down by a tasteless salsa verde. The half rack of ribs (B360) is not far off a disaster, nowhere close to the decadent, sticky treat you might expect. A fine barbecue sauce can only do so much to help the dry, gelatinous meat, especially when used so sparingly. But a rich, heavy and, again, heftily portioned slab of cheesecake with passion fruit sorbet (B190) does much to bring about forgiveness—even when it is the only dessert we ask for that’s n ot o u t of sto c k . S o, yea h , co m e to Hemingway’s at the right hour of the day, pick whichever drinks are on promo (the cocktail list holds few surprises but does a good Mojito at B240), stick to the small plates, and you’ll see why so many people go in for this slice of Key West transplanted to Asoke junction.

The steamed goby fish in soya s auce (B400) is one dish that’s wonderfully fresh, though: the meat is tender and juicy, while the sauce is perfectly rounded. Crispy on the outside, soft on the inside, the deep-fried squid with salt, chili and garlic (B200) is more of a guilty pleasure, but equally rewarding. The aromatic Sichuan-style fried bean curd (B90) is similarly up to standard, as are the stir-fried eggplant with salty fish (B100) and stir-fried string beans (B100). While most of the comforting menu hits home, some dishes, like the Hong Kong fried noodles (B80), take a bizarre turn. Served in a crispy style, the largely dull-tasting noodles are far too oily for our tastes. Similarly, the steamed hog maw in soy sauce (B200) comes in a diluted sauce and does not have the tenderness you would expect in such a dish. At these prices, though, you can expect to endure some missteps. But if you’re after simple Chinese dishes you can enjoy with friends in a no-frills environment, Boon Pochana delivers big-time.

Indian kebabs transported to a plush, modern setting, with cocktails to match.

The buzz: Rohit Sachdev, the managing director of Soho Hospitality, the team behind Nikkei rooftop bar Above Eleven, has looked to his homeland, India, for his new venture. With Charcoal, also set in the Fraser Suites, he says he wants to change the image of Indian restaurants as staid and overly formal. The décor: With its wooden floorboards, floor-to-ceiling windows and brickwork at the open kitchen, Charcoal feels like a contemporary steakhouse. The Indian touches are subtle but abundant, from the latticework to the display of spices in glass jars and, of course, the tandoors (brick ovens). One corner is decorated in tribute to the famous dabbawalla (lunch box delivery service), while the restrooms are soundtracked with recordings of Indian public markets. There’s a pool on the outdoor terrace.

The food: Forget about curries. Like The Great Kabab Factory, opened earlier this year, Charcoal serves a wide range of kebabs and grills, ranging from vegetarian to meats and seafood. Unlike its competitor, though, the menu is not all throwback. As a result of extensive hours marinating in cream, yogurt and spices, grilled highlights like the murgh malai kebab (a tender version of chicken tikka, B420), paneer tikka (fresh cottage cheese, B350) and galauti (finely minced mutton patty, B600) are tender and packed with flavors. The breads aren’t an afterthought, either, with soft and chewy roti (starting B80) and naan (starting B100) going particularly well with the dal Charcoal (stewed lentils, B200). Do try the variety of tobacco-free paan (various spices, fruits and sugars wrapped in betel leaf, B100), shipped over from Delhi.

The drinks: Ubiquitous mixologist Joseph Boroski traveled over to India to perfect a list of cocktails (all B350) infused with authentic spices. The heady 1947 Independence mixes mace and clove-infused Grey Goose vodka, Indian pomegranate, fresh lime, hibiscus syrup and frothed egg, into something that goes down far too easily. There’s also a long list of wines and mocktails (B250). The crowd: Very similar to Above Eleven’s mix of moneyed locals and expats. Traces of the Past Celebrated artist and curator Viet Le occupies the upstairs H Project Space at H Gallery for a complex installation and performance exploring the history of Southeast Asia since the beginning of American military engagement some 40 years ago. Vestige asks the audience to interact with the artist between Dec 24-29 by donating strings, beads and other objects to create a beaded curtain installation piece, while the windows of the space will be hand-painted with images from the region’s troubled past. Beijing-based photographer Ren Hang, 27, has made a name for provocative, nude portraits that have been exhibited across the world. Following the successful opening of his first Bangkok exhibition, Hide, at Soy Sauce Factory, BK managed to speak to him about censorship, porn and artwork. Let’s talk a bit about your background. How did you become an artist? I write poems, take photographs, make short films and paint. I still write poems today, and I’m in the process of working on my next one. As for how I got into photography, I dabbled in communications, advertising and public relations at university, but those things were too boring for me, so I decided to take photographs instead. I didn’t exactly “teach” myself to take photographs, I just went for it. I wouldn’t call myself an artist because, to me, it suggests you’ve been professionally trained and taught how to produce artwork—I never went through that process. Do you have any major influences? A Japanese avant-garde poet and photographer named Shuji Terayama had a great impact on my worldview, but I don’t think I have a specific style. My photographs are just the way they are. All my photographs are taken on film. I love developing them and the authenticity. I feel like photographs from digital cameras can feel photoshopped—they’re meant to make it easy to photoshop. I don’t want my photos to appear like that. How do you expect audiences to react to your work? I personally don’t see my photographs as graphic or whatever. It’s just another form of expression, and I love expressing myself using sexuality. Having said that, I don’t intend to produce images with any hidden messages. All of my photographs are based on expressionist, fluid views; there’s no straightforward message. You might love my photos, and you might hate them. Many of your photos are of naked bodies. Is there a running theme? I am inspired by everything that happens to me in my daily life. I just take photographs of whatever I think looks good, whatever I think I would like to see. So there’s no running theme. For instance, this exhibition was named Hide because these 41 photos were curated from the vast body of my previous work and all of the models are partially covered—hidden— in some way. But there is no concrete theme when I produce my work. Have you encountered problems with censorship? It’s very difficult in China to publicize this genre of photography. I got busted twice for taking “inappropriate” photographs of naked models outdoors. I would say I am against censorship in any form of art. It restricts freedom of expression. I am aware that there is always a risk, wherever I exhibit my work, even here. But I’m not looking to change things, there is no hidden message—I still operate within the law. Do you see pornography as a legitimate art form? I would be more than happy if people see my art as pornography. What’s so wrong with it? How have you found Bangkok’s art scene? Will you be back for another exhibition? I don’t know any artist in Thailand, but I really like it here. This is my third visit, and even though I haven’t had a chance to explore much this time, I will probably come back again to do a proper trip. Rossukon Kongket After working as an acting coach on a number of hit movies like Pee Mak, Dear Dakanda and Fan Chan, Rossukon “Kru Ngor” Kongket, 35, has now entered the world of directing. She speaks to BK about her career journey, including her upcoming stage play Hom Rong The Musical (with Theerawat Sung Anuwatudom), which will open in early 2015, and her plans for a solo show.

I’ve always wanted to be an actress as far back as I can remember. When I was in second grade I was chosen to be a cheerleader. It felt so cool to dress up beautifully, dance and have everyone come to see me. When I was little, I thought of acting as expressing yourself in order to gain people’s attention. It’s a lot more than that. It’s about getting into someone’s heart and finding that person hidden inside you. I never knew it was possible to have a career as an acting coach. Luckily, my teacher would tell us students that in order to find ourselves we must participate in all sorts of activities. That’s how I found my dream job—teaching people to act. I started my job in casting. The problem was I would spend too much time trying to make every applicant right for the role, rather than picking the right one to start with. I felt that everyone can do it, and it’s down to me to ensure they do.

My boss then asked me to coach children. I love observing people and overcoming obstacles. I learned that children don’t do what they are told. So, I would tell them to stop smiling—and that’s when we would get the perfect shot! Not long after I was recruited to work with the child actors on Fan Chan (My Girl). People in Asia, particularly Thailand, are taught to restrain from being expressive, but the world of acting sets them free. It’s like they get to experience things that they can’t do in real life. I remember watching the movie Revolutionary Road and Kate Winslet was crying while laughing. I was crying along with her, as what she conveyed really hit home. Thais don’t usually achieve this because we are taught one-dimensional patterns of emotion: anger means to scrunch up your mouth and raise your voice, sadness is to sob. Human emotions are much more complex than that.

Acting lets you share the same breath as your character. Your heart beats in the same time. When the character’s hands go cold, yours do too. That’s the case with good actors, anyway.

Thai people have not been trained to be thinkers from a young age. Once in a while they have an idea, and then they try desperately to protect it. Even if they know they are wrong, they are not going to accept it.

Acting provides the space to face your true emotions

Acting has always had a bad rap in Thailand. Some people think it’s an easy thing, not something to be learned. Just copying and making faces. Studying acting is to know how to fake your emotion. In fact, acting provides the space to unmask yourself and face your true emotions. If you don’t know your emotions, you will become their slave. You are not your clothes, makeup or hair. That’s just your appearance, not you. I can wear anything to my classes; it doesn’t change the knowledge I have in my head.

Studying acting in the States, I learned to let go of my ego. I went from being afraid of receiving feedback to accepting whatever the tutors say about me, which has pushed my boundaries even further. I saw people practicing their lines alone on the train in New York. At first, I thought they were mental, but then I started doing it as well. It’s so liberating to do what you want without caring about what others think.

My problem was my health. I used to work non-stop for three months, sometimes until 3am in the morning, and carry on the next day. I needed to stop and ask myself, what do I live for? I want to do a solo performance, in which I play seven different characters, which will happen next year. I also want to make a semi-improvised movie where I direct actors who, when I throw something at them, can manage to take charge of their role. My favorite actress is Meryl Streep, who manages to balance her life so well. She diversifies her acting roles and always adapts to them brilliantly, while also doing a great job as a mother and wife. I always ask myself whether my job is right for me or not. You need to follow your feelings, without bringing in other factors that bother you like workload—they will only confuse you in making the right decision.
