We know that keeping up with regional politics can be tough when you’ve got a Halloween costume to plan. That’s why this week we’re here to remind you that on Nov 8 our friends across the border in Myanmar—you know, the ones who clean our homes, wait in our restaurants and take the blame for our crimes—are having their first free elections for nearly 50 years. And there are some who say the whole thing’s a sham; a ruse; that the generals are never going to relinquish power to an official elected by the people for the people. Well, if that’s the case, we hope our band of charter-drafting heroes are taking notes: no elected prime minister; the most popular candidate crippled; one-quarter of the seats in parliament automatically going to old men in army uniforms—this could be the gold dust they need to get their own constitution up for a referendum before the decade’s out. Yes, it seems like the days when Burma might have looked to Thailand for tips on becoming a democratic, forward-looking nation are seriously numbered. In fact, on a recent trip to Yangon we picked up on a whole lot more we could learn from our neighbors: 1. Look after old things We know. They’re crumbly, there’s no air-con and most old buildings don’t even have their own parking spaces, but tourists really, really love that stuff. They want our architecture to remind them of when they were in charge—even in Thailand, where they never actually were in charge. 2. Copy Brooklyn’s food, not just it’s decor. Have you tried the food at Port Autonomy, Yangon’s number-one dangly light-bulb Williamsburg-referencing restaurant? It’s delicious. Which definitely can’t be said of the grub at our own Casa Lapin or Karmakamet. 3. Men in dresses What’s wrong with a bit of national costume? And we don’t just mean on National Costume Day and for your wedding. Thais should dress like Thais just for the heck of it. Now we just need to figure out what our national costume is, since it got banned then reinvented to death by Field Marshal Phibunsongkhram. 4. Khao gaeng served in bowls When did Thais get all selfish and start ordering their lunch curry toppings all vomited onto a single plate? Yuck. In Myanmar, everything stays in its own little plate, which all get piled onto the table, which all get shared, and much more joy is had by all. 5. Books In Myanmar, there seems to be an impromptu bookshop or stall at every street corner. You can even spot locals holding and reading the damn things. How is that a good thing? It creates a thriving market for secondhand copies of Burmese Days for visitors whose Kindles can’t get Wi-Fi connections over the single digital gateway. And who needs Facebook when you’ve got Orwell? latest news and trends

But now it’s back and it couldn’t have picked a better time since dead cow is apparently all anyone wants to eat right now. Just look at the crowds at any of the restaurants on page 18. Thai investigative journalist Mutita Chauchang, a 33-year-old reporter for Prachathai, was recently awarded the 2015 Kate Webb Prize by Agence France-Presse (AFP) for her reporting on Thailand’s royal defamation law as well as other human rights abuses. The prize, which also comes with a 3,000 euro grant, is awarded each year to a journalist from the ASEAN region who works under dangerous conditions. Here, Mutita discusses the difficulties facing journalists in Thailand. What does this award mean to you?

That’s why you’ll be much more likely to find us at any one of the markets taking place that very same weekend (see BK Now, page 35), only a couple of which are vaguely Halloween-related.

It’s official Asia’s 50 Best Restaurants 2016 will happen in Bangkok, ending its run in Singapore. And so will 50 Best 2017 and 2018. We can’t wait to find out where Gaggan and Nahm will place in this edition, but the results won’t be out until Feb 29, 2016. How nice of them to provide an amuse bouche to the ranking you’re really waiting for, BK Top Tables 2016. Chai mai?

I’m honored to receive this award. It’s a good opportunity to spread this kind of story to the general public. However, my daily life still remains the same, working and reporting news. Personally, I do not go public very much. It was actually my colleague who applied for the prize, nominated my name and sent in my CV.

I know where the appropriate line lies for reporting these kinds of stories, which need to be very carefully checked for factual errors before they get reported. But I am concerned about being misunderstood by Thai people and royalists. What sort of background do you come from?

Because no one else does. Basically I report news and information about local communities, but I delve deep into political issues. I strongly feel that issues like royal defamation cases need to be discussed, but no one seems to follow them up and dig out the details. It just does not make sense that the punishment for cases like these should be more severe than for murder. Leading mainstream media could do such a better job than me.

I grew up like any ordinary Bangkokian. I graduated from Thammasat University majoring in journalism and mass communication but I wasn’t really into it. While I was studying, I attended more political science classes than I did for my major. After graduating I also interned as a journalist at Matichon for a while, which made me thoroughly dislike this job. They offered me a full-time job just as Prachathai was about to launch. I decided to move to Prachathai because it’s less strict and would let me cover the topics I wanted to.

Do you fear for your freedom or safety?

try is very competitive, and arguably it’s those who are fastest who win. That means journalists are not capable of focusing all their efforts on one topic, which can consume a lot of time and resources. We should encourage the next generation of journalists to think more critically. What do you think holds Thai journalists back? It might be our social atmosphere which is very conservative, as well as our judicial system. Expressing yourself as a journalist feels risky. Right from the start, people can have the impression that you want to overthrow the monarchy with your work. What makes you keep doing it? I like the freedom to find the truth. If you want to know something, find it out through people’s minds and perspectives. Eventually, you can spread it to the Thai public to make them recognize what’s really going on around their lives. Now, one of its most trusted names, Ristr8to, has opened a second, more experimental branch between Nimmanhemin sois 3 and 5. At Ristr8to Lab (between Nimmanhemin Soi 3 and 5, 053-215-278, www.fb.com/ristr8to) owner-barista Arnon Thitprasert gets free rein to show off what he’s learned from coffee-making competitions and trips around the world. That means cult drinks from the world’s largest coffee hubs such as Melbourne and San Francisco, plus boozy offerings like the Ethiopian Monkey (hot mocha with creme de menthe). Elsewhere in town, more and more cool micro-cafes are popping up. Chiang Mai seems to welcome new open-air markets every month. The latest is Ploen Rudee Night Market on Chang Klang Road (open every evening from 5pm-midnight), where

you’ll find vendors selling handmade wares, accessories and clothing. The highlight, though, is quite possibly the large food zone with its country-style seating and food trucks selling sushi, pizza, burgers and more. Another new night spot is Hako Town (6/5 Moo 1, Thakradat Rd., 097-975-5975), a Japanese-themed community mall located right by the Ping River that’s home to an array of reasonably-priced street stalls and restaurants. It also hosts Japanese fairs and outdoor concerts.

Nimmanhaemin’s New Digs You’re never short of cool cribs in Chiang Mai, but the past 12 months have seen a flurry of activity in arguably the city’s hippest quarter. Among the new arrivals are the luxurious allsuite hotel Akyra Chiang Mai (2212 Nimmanhemin Soi 9, 053-216-219), the first five-star hotel in the ‘hood, and the design-centric X2 Chiang Mai Nimman (36/6-7 Nimmanhemin Soi 11, www.x2resorts.com), a huge mid-century modern style villa that sleeps up to 14 in seven bedrooms. Another neighbor is Ananda Everingham’s Hotel Yayee (17/5 Sainamphueng Rd., 099-269-5885), a four-story shop-house whose 14 casual but luxurious rooms are decorated with Lanna handwoven shawls and carpets from the actor’s mother’s homeland, Laos. The rooftop terrace boasts great views of Doi Suthep, too.

cover story Winter Festival Season Chiang Mai’s most vibrant craft festival, NAP (Nimmanhemin Soi 1, www.fb.com/nimmansoi1), returns this year from Dec 5-10 under the theme “Les Pops.” It will see more than 100 shops gather around the Nimmanhaemin area, including leading local craft brands like Ginger, Inclay Pottery Studio, Things Called Art and Chabaa. On the same dates, the small community art village Baan Khang Wat (opposite Wat Ram Poeng, 095-691-0888, www. fb.com/BannKangWat) will host its first ever craft fest, called Sawasdeecraft Chiang Mai (on.fb.me/1Gdoka3), with stalls and workshops from local craftsmen. Baan Khang Wat will hold its second Nang Khang Wat film festival from Dec 24-28, too.

Arty Arrivals Speaking of Baan Kang Wat, the art community has just unveiled its Gallery Kang Wat (www.gallerykangwat.tumblr.com), which aims to promote local artists through monthly exhibitions. It also sells handmade stuff like postcards, notebooks and ceramics. Art meets cold pressed juice at the new Arttitude Gallery (Nimmanhemin Soi 5, www.fb.com/ arttitudegallery). Aside from regular galleries, all the drinks here are named after famous paintings, like the Monet Sunrise (carrots, passion fruit and pineapple). With its unfinished barn-like appearance of bare brick and exposed beams, Thapae East (88 Thapae Rd., 081-765-5246, www.fb.com/ThapaeEast) is another intriguing addition to the art scene, hosting everything from experimental music to poetry nights.

New Bites It’s been a pretty low-profile year for Chiang Mai’s dining scene, but there’s still plenty to be excited about . The new, semi- outdoor restaurant Meena (Baan Mon Moo 2, Soi 11 087-177- 0523) adds a new twist to Thai and Asian dishes by substituting some of their staple ingredients with rice. Try the tempura shrimp, which is battered and deep-fried in rice rather than breadcrumbs, or the rice-based roti and ice cream. One of the city’s most checked-in and reputable coffee makers, Graph Cafe, has also branched out with a bigger food-focused venue. With its dark-hued wooden façade, window boxes and hanging plants, Graph Table (Moonmuang Soi 6, 086-5673330) certainly makes a pretty picture, while the kitchen specializes in homemade Italian dishes made from organic ingredients.

Fresh Brews Small-batch craft spirits are all the rage in Bangkok, but Chiang Mai beat us to the punch, with Maa Jai Dum (www.maajaidumonsales. com). Founded in 2007, the original Maa Jai Dum, also known as “flower spirit,” is made from distilled sugar extracted from coconut flowers. They’ve since expanded with other lines made from distilled potatoes and bananas. Four other brands generating buzz are Mana, Manee, Piti and Choojai. Choojai is a rice wine, while spin-offs Manee and Piti are made with the addition of jasmine and roselle for the former, and tea and tea leaves, for the latter. Both brands can be found at specialty bars across Chiang Mai; our picks are Living Machine (Nimmanhemin Soi 7, 089-192-4314 and Ma Nung (Nimmanhemin Soi 2, 088269-2086).

The single narrow road through the town is lined with homestays, a small cafe overlooking the valley and a coffee cottage next to a small stream. On top of nearby Flight of the Gibbon (Huay Kaew District, www.treetopasia. com) activities, you can also undertake a small trek to Mae Kam Pong waterfall, too.

Mountain High Looking to combine magnificent views and a proper workout? Doi Chiang Dao in Chiang Mai province should be the next destination on your wish-list. A steep and grueling eight-kilometer trail leads you to Thailand’s third tallest peak , standing at 2,225 meters above sea level. The trek (upwards only) takes approximately 4-5 hours. The sunset, in particular, is stunning. Camping is allowed, but this is the real deal: no electricity or bathrooms. They also limit visitors to 150 people a night. And if you’re more of a slow-life person, now’s the perfect time to revisit the Jam Factory for its end-of-the-month Knack Market.

Hotels are really cheap in Bangkok right now. Why not save yourself the airfare and spend a night or two in the old town. Walking around Rattanakosin isn't any less cool or charming than a weekend in Kyoto. Udon Thani, long dismissed as a final outpost before you hit Laos, is finally forging a reputation as a hip destination with cool cafes, restaurants and guesthouses. Leading the charge is Naowarat Kuwajanakul’s popular cafe Dose Espresso, which just opened a spinoff called Dose Factory (112/1 Naraesuan Alley, 097-313-4222). The new restaurant puts more emphasis on Western dishes made with organic ingredients—but you can still find a killer cup of coffee, thanks in part to the owner’s close connections with Dose Espresso in Sydney (where she used to work as a barista). Phu Lang Ka in Pha Yao province is famous for its breathtaking views, where limestone cliffs appear like islands peeking through a sea of mist at sunrise. Sleepy Town Ban Pa Miang village in Lampang’s Pan district has recently found a small slice of fame among local travelers seeking an ultra-quiet escape. Tucked inside Jae Son National Park, the town has been compared to what Pai used to be like 10 years ago. A small stream flows throughout and villagers eke a living from tea and coffee plantations. One of the biggest trends in local product design over the past year has seen designers working with Thai craftspeople to create contemporary home decor pieces using traditional methods. Now, interior designers and bar owners are embracing the same approach. At Tep Bar, everything from the old shophouse setting and the menu of Thai spirits to the Thai orchestra and selection of furniture has a local focus. We love the low tables on the second floor matched with triangular pillow back rests, as well as the bamboo and banana leaf tableware. The renovated Bamboo Bar at the Mandarin Oriental, though less overtly Thai, also plays on local materials like woven rattan and water hyacinth chairs. The resulting gentleman-on-safari style goes to show how local design can contribute to international looks.

There’s no fat-shaming at CentralWorld’s newest dessert cafe. Run by the people behind Chocolate Ville and Wine I Love You, Big Fat Bread serves up all-American kids’ favorites like donuts, apple pies and bread pudding. The signature dishes comprise a huge hand-size donut with whipped cream, ice cream and various toppings like strawberry cream cheese (B205); brownie-peanut butter (B165); and banana Nutella (B175). The speakeasy lounge trend has now made its way from Thonglor and Silom to Ari with this latest addition to five-year-old neighborhood favorite Salt. Located on the restaurant’s second floor, the 30-seat Eleven Twelfth pulls off that intimate, partyamong-friends feeling thanks to casually placed lounge furniture, a barman within earshot of the tables, and an impromptu band setup. The upstairs menu is also completely different from Salt’s, comprising 10 bite-size tapas options and a drinks list dominated by whiskey and single malt, including five signature cocktails created by Niks Anuman-Rajadhon (of Teens of Thailand bar and the owner of Drink Academy). But unlike the flashy W Does Brunch every first Saturday of the month, Lazy Sundays is all-you-can-eat homestyle dishes selected from an a la carte menu. 1. Play with adorable Shiba Inus Shiba Inu dogs are super cute Husky-like Japanese pooches and Hua Hin now has a cafe where you can hang with 12 of them. Inu Cafe (www.fb.com/inucafehuahin) doesn’t stand out for its standard industrial decor (bare bricks, dangling light bulbs) or menu (burger with cheese-filled meat patty—yum). In fact, they stopped serving coffee because patrons were feeding the caffeinated drinks to the dogs. Instead, you’ll have to settle for smoothies and sodas like the Passiony (passion fruit and honey, B75). The adorable Shiba Inu make it all worth it, though. Planning on bringing your own mutt? Call ahead as the Shibas can be naturally territorial.

2. Pamper yourself at the new organic spa The brand behind one of our Bangkok spa favorites (Panpuri Organic Spa at Gaysorn Plaza) has branched out to Hua Hin with Yuthika Well-Being Spa (www.yuthikawellbeing.com). Covering 300 sq meters of a fisherman’s village-themed resort, the spa boasts seven treatment rooms and over 20 treatments, including Thai massage, Swedish massage and facial treatments. The spa’s “follow the sun” concept tailors each package to the body’s different requirements for every time of the day, from the rosy-scented morning massage oil to the uplifting, minty daylight treatment and relaxing sunset-themed treatment with lavender.

3. Get some action at these two water parks Hua Hin is not all cafes, spa treatments and lazing about. Jungle-themed Vana Nava (www.vananava.com) boasts Thailand’s tallest waterslide, Boomerango, as well as the country’s first “Abyss,” an award-winning slide that allows up to six friends to soar from a height of 28 meters. Shoot down some zombies Recently-opened shooting range Siam Milsim (www.siammilsim.com) is divided into two sections: one for regular shooting practice, where players are also trained about security measures; and another where shooters are tasked with beating the clock to shoot targets set up around various obstacles. The venue also specializes in simulation games. “Zombie Infection” sees players needing to stop the spread of a zombie virus. Heightening the excitement, the game is held in a secret location decked out with ATVs, boats and real buildings. Tickets is B4,000 including food and drink buffet.

Check in at a themed hostel Of course, Hua Hin has no shortage of luxe resorts (see #7), but recently it’s welcomed a slew of low-key hostels that target the cool crowds, whether it’s cyclists, shutterbugs or musos. My Way Hua Hin Music Hotel (www.mywayhuahin.com, from B1,200/night) takes its music theme seriously: each room is decorated in dedication to different music legends, from Elvis and The Beatles to Santana and the Rolling Stones. Remix Photo House (www.remixphotohouse.com, from B1,500/night) reflects its owner’s love for photography with bathrooms designed to imitate dark rooms and vintage film cameras on display throughout. WWA Cafe x Chooseless Ekkamai’s stylish brunch spot combines fashion and food. The buzz: Siam Square’s best brunch place just branched out to Ekkamai. And this new spot is (slightly) less hidden. WWA, a cafecum-fashion shop on the third floor of the now-defunct Swensens in Siam Square, has partnered with boutique Chooseless (of the same crowd behind Cocue in Siam Square Soi 1) to open up its second cafe. The decor: Cocue’s Hong Kong-born owner Donnie Tsui tore down the old Baan Ekkamai building and replaced it with this two-story, oddly-shaped, bare concrete space. The minimalist interior gets some character in the form of two actual-size BTS pillars and flooring that resembles outdoor pavement bricks. On the ground floor, WWA’s style shines through in mismatched tables and chairs. Taking the rail-less stairs to the mezzanine, you’ll also spot Chooseless’s

well-curated fashion items, with a corner devoted to WWA’s clothes. The food and drinks: There are two menus, offered up on two separate sheets of white A4 paper. WWA’s half is basically the same as you find at the Siam Square branch, which we enjoy a great deal, so expect English chef Davina Pickering’s breakfast staples like maple nutmeg butter pancake with pumpkin Italian sausage (B350), toasted welsh rarebit with pickled peppers and peach, (B220) and rocket and sunflower sprout salad (B350). There are also decadent desserts like warm rum chocolate brownie and cream shot (B160) and the scone set (B170). Plus, there’s also a cake display, meaning you don't have to pre-order a whole one like at the original branch. On the other menu, Pum Tsui of Chooseless cooks up a changing list of Thai dishes made from her grandma’s other recipes, such as the

bold-flavored platoo pad priktai orn kaprao (stir-fried short mackerel with holy basil and young green peppercorns, B180) and desserts like faktong gaeng buad (pumpkin in coconut milk, B50). The far-flung Ladkrabang neighborhood has welcomed Timber Cafe (611 Chalong Krung Soi 1, 089-202-7882). The decor of exposed walls and dark brown wood pulls in a crowd of King Mongkut uni kids, while the menu keeps things pretty predictable (pasta, pizza, salads with deep-fried protein, monstrous desserts) but affordable. Expect hot and spicy spaghetti with chicken meatballs and fried basil (B59) and pizza topped with shrimps and hot chilli (B159). As for dessert, the Timber Tower (B159), lives up to its name: three layers of buttery waffles with seven scoops of ice-cream and mixed berries—it serves at least four. Theerada Moonsiri

Two big-name local chefs, Chumpol Jangprai of Siam Wisdom and Boontham Pakpoh of Honmono Sushi, have collaborated to open this Thai restaurant which makes all its dishes using the finest Japanese ingredients. This oversized, crisp white coffee shop inside the Piman 49 complex serves brews so good they’ve made local office and brunch crowds migrate over from Rocket S49. But D’Ark looks upon itself as a whole lot more than a coffee shop. In fact, there’s not much they don’t do. Want a lazy eggy brunch? They’ve got you covered from 6am-8pm every day. Burgers and comfort food? Kitchen’s open for business at 11am. An elaborate three-course dinner? They’ll whip one of those up too, with an a la carte menu of dainty, small-portioned dishes that speak to the roots of head chef Jeriko Van Der Wolf’s Michelin-star background (he previously worked in an unspecified capacity at the three-starred Regis et Jacques Marcon in south-central France). But in focusing on everything and nothing at all, D’Ark comes undone. The fine-dining dishes are a particular sore point thanks to an over-fondness for complex, caramelized and fruity flavors.

This small Japanese shop-house restaurant differentiates itself from Silom’s sea of izakayas and sushi bars by dedicating itself almost solely to Hokkaido-style grilled pork. Specializing in butadon (pork on rice), it claims to use a grill method unique to the town of Tokachi, where the meat is cooked over a charcoal fire while it gets coated over and over again with a sweet soy sauce. There’s nothing particularly sophisticated about the setting; a mixed crowd of Japanese salarymen, Thai office workers and couples sit either at the plain wooden tables or prop up the bar, where you can see into the tiny open kitchen, occupied almost entirely by a sizable grill. The menu is super simple; apart from the

The foie gras with coconut and passion fruit (B390) tastes like a tropical cocktail’s been splashed over the plate, while our lardo-wrapped lukewarm tuna with refrigerator-cold figs (B480) features sickly globs of an unidentified marmalade hiding under a tasteless daikon root foam. Even a combination so tried and tested as duck and orange (B450) is ruined under the weight of a claggy onion sauce. Why it comes with a side order of rice is a mystery known only to the kitchen. Don’t try looking for solace in the simpler end of the menu e i t h e r. O u r Co m te c h e e s e b u rg e r (actually two sliders, B240) is about as inspiring as something you’d find at a convention center buffet line, saved only by the accompanying portion of perfectly crisp, skin-on French fries. (Really, they’re some of the best we’ve tasted in town. Hats off.) We have tried the coffee before and can confirm that D’Ark does an amazing latte, but don’t go looking for an after-dinner espresso. By the time our last visit ended at 9:45pm, the coffee machine was switched off and none of the consistently uninformed staff members were willing to switch it back on. We took some consolation in the sticky chocolate brownie with coffee ice cream (B160) and the rest of a glass of Gruner Veltliner (B260), but these small pleasures are far from enough to ever recommend D’Ark for a dinner date­­— mark this one for coffee and croissants only.

The butadon can be enjoyed with either plain miso soup (B190/220/270) or the more substantial house soup (B220/250/B300), which comes with mixed vegetables, tofu and potato. The latter is particularly wellrounded owing to the saltiness of the miso being balanced by the sweetness of the potato. The pork bowl is a sight to behold— all golden brown pork dripping with a thick, caramelized sauce—and yet the flavor is far lighter than expected, though still enjoyable. For us, the star dish is probably outshone by the grilled chicken (B150/190/230), which is juicier, tenderer and simply more flavorful. The salted grilled mackerel, too, comes in a delicious, crispy skin but the flesh remains nice and succulent. Disappointingly, when it comes to drinks, Hokkaido Butadon Tokachi runs a little dry, with only a small selection of plum sake and Asahi beer. Evidently this is no place for after-work drinks. Yet, if you’re looking for some decent and affordable grilled meat, this is the spot—just don’t expect too many fireworks.
