Don’t: Show disdain for mass running and cycling events So for the first time ever, you had to walk to the motorcy’ stand on Ruamrudee because the one nearer your office on Wireless Road was closed. If you’d been out there cycling with the rest of us you wouldn’t have been in that mess. So sign up for whatever Run with Hello Kitty or Run in Traditional Thai Dress event is coming soon. We’re warning you: people who don’t like to do the same thing as thousands of other people are not normal. Do: Share pics of your various boho outfits from Wonderfruit Clearly, this festival is not about the music lineup. Which of you has ever heard of Elektro Guzzi, Heartthrob, Goldroom or Papercutz? None of you, that’s who. And what’s the point of spending B8,000 on the perfect ethnic ensemble from Soda if the only people who get to see it are the two dozen other Wonderfruit attendees? Thank you, social media, you just made Wonderfruit (and Soda) worth the money. Don’t: Share infographics about public park funding Infographics are so 2010 floods (damn you, Yingluck!). No one likes infographics anymore. Instead, share a GIF of goats singing “Joy to the World”—now that Facebook finally does GIFs. Or if you really must share an infographic, how about something about the rice pledging scheme? Those never get old. Do: Tweet about your opening night tickets for Star Wars: The Force Awakens You got them; your friends didn’t. And that, we’re sure you’ll agree, is something they want to have rubbed in their noses on a public forum. Preferably with plot spoilers. “Wow, sucks that Luke had to die like that.” Don’t: Tweet with an undercurrent of dry British humor Everyone knows that sarcasm just doesn’t work in writing. In fact, we’ve tried jokes about the right to assembly in 140 characters or less on Twitter, and they were met with just as much enthusiasm as the British ambassador’s own sardonic intervention: relations were downgraded to icy cold with no hope of a rapprochement in sight. latest news and trends

Taking good ol’ Thai street food level to the next level is red-hot. This year alone, there was the opening of David Thompson’s Long Chim in Singapore (and he just opened a second one opening in Perth) and that of Err (by Bo.lan’s chefs) in Bangkok. In the trinity of Bangkok’s most celebrated Thai chefs, that left Thitid Tassanakajorn (Le Du, Taper, Baan) to make a move. With Baa Ga Din’s recent opening, he’s finally joined the fray. Some 40 communities are under threat in the old town, due to the construction of 10 subway stations on the blue, orange and purple lines. And just in case the destruction of historic shop houses is not something you’re going to lose sleep over, the BTS has also killed discounts for Rabbit Card starting Jan 1, 2016. Happy new year! Funny how every time they add more ads to the BTS, they tell us it’s to keep the fares low. And then they increase fares anyway.

Chef Thitid “Ton” Tassanakajohn, 29, has been the toast of Bangkok’s restaurant scene in 2015. His debut restaurant, Le Du, scooped third place in our yearly Top Tables fine dining guide. Since then, the Culinary Institute of America graduate has opened three more restaurants: Taper (brunch staples and Asian breakfast dishes); Baan (home-style Thai dishes); and Baa Ga Din (deconstructed Thai street food). Quite a few Bangkok chefs have gone down the street food route recently, from Bo Songvisava and Dylan Jones’s Err to David Thompson’s Long Chim in Singapore. Why did you decide to as well? Yeah, but they’re quite different. Baa Ga Din is basically inspired by street food but recreated with modern, fun twists. If you order chicken rice then it’s nothing like the chicken rice you would get on the street. We use a lot of the same equipment as we do in Le Du, and the thinking is actually very similar: taking inspiration from classic dishes and doing them in a modern way. The difference with Baa Ga Din is that it’s much more casual. David Thompson said he would never do a Thai street food restaurant in Bangkok because we have the real thing. Right, David did say that. How are we going to make street food better than someone on the street when they’ve been doing one dish for 20 years? I totally respect those people. But I want to create something that people can relate to as street food but in a different setting.

You now have four restaurants. Which is closest to your heart? Definitely Le Du. It’s really my passion—my first restaurant—it’s everything I want to do as a chef. It speaks to the soul of my style of food. It’s still where I spend most of my time; it’s like my baby. The dining experience at Le Du is very chef-driven. Do you get customers who aren’t happy with that still? Some people have a problem with that, but that number is fewer and fewer. People who come to the restaurant now have studied about it before they arrive so they know what they’re going to get. But I still get the usual questions: Why is it priced like this? Why are there only a few a la carte options? We encourage people to take the full experience. Would you rather get rid of the a la carte menu altogether? Yeah, I’d love to. But some people want that. Even if they order the entire menu, we tell them, that’s going to be more expensive than the set menu and the portions are the same, still that’s what they want to do. giveaways, updates, stories

What would you like to see change on Bangkok’s restaurant scene? I want to see more young chefs doing Thai food—any style of Thai food. It could be traditional or it could be modern. But I want to see people come out and do something that relates to Thai cuisine. I don’t actually see a lot of new young chefs. We have a tight community—Paolo [Vitaletti of Appia, Peppina], Dylan [Jones of Bo.lan, Err], David [Thompson of Nahm], Gaggan [Anand of Gaggan], Nan [Bunyasaranand of Little Beast]— all these people are older than me! I don’t have any connection with anyone who’s upcoming. Any more restaurants planned in the New Year? Not for now. I really want to focus on Le Du. I opened so many restaurants this year! Baan and Baa Ga Din came out of nowhere. We will be relaunching Taper with a dinner service. I’m still discussing with my partner but we plan to close at lunch on weekdays and turn into dinner service and lunch at weekends. Interview by Oliver Irvine

If you’re over 30, you’ll know Tapas as a survivor of the late-'90s sangria and salsa days; the Silom Soi 4 bar where you could take your gay and straight friends and all have a good time. There are many reasons why you should go a bit out of town to try this new bar. First, it’s run by the people behind Chiang Mai’s Mixology, a bar which pours some serious drinks. Even when B350 has become the new standard price for cocktails, this French restaurant managed to open in one of the hippest downtown areas (see Most Happening Area, page 6) with prices that make sense. We highly recommend knocking back a Baudelaire (spiced rum, ginger, honey syrup and lemon, B270) or classic negroni (gin, campari, martini rouge, B220) while perusing the compact list of 18-or-so wines from France and Italy (B1,150-B2,400). Courtesy of hotel industry faves P49 design studio, the new look maintains lovably Orientalist touches—tiger-print upholstery, wicker chairs—but the whole thing looks a lot moodier, with acres of laquered dark wood and a mirrored ceiling. One of a handful of recent openings looking to play upon Thai tradition without pandering to tourist cliches, the bar draws in the same cool crowd as its Soi Nana neighbors thanks to a blend of classic Central region music, Thai tapas dishes and a good line of home-infused ya dong (Thai herbal whiskey) that they blend into some surprisingly fresh-tasting cocktails.

Open right at the start of the year, this tightly-packed late-night haunt didn’t take long to become the new favorite of Thonglor-Ekkamai’s more subversive cliques. Almost one year down the line and its lost none of its shine—not that the crumbling walls and makeshift bar ever had much of that to begin with.

W Hotel’s plan to renovate the colonial house next door has been whispered about for as long as the hotel’s been open. But finally they did it this year, opening its doors as The House on Sathorn, with a bar on one side and restaurant on the other. The Bar not only looks stunning thanks to its classic architecture and gentleman’s club furniture, but also dishes out some serious cocktails thanks to Italian mixologist Michele Montauti (formerly of J.Boroski). 106 Sathorn Rd., 02-344-400. Best New Bar That Should Open More Often

Dark Bar was such a success that its owner snagged another spot in the same Ekkamai complex and opened this place; Dark Bar’s futuristic electro-loving neighbor. Sounds like a great idea until you factor in that, whenever it opens its doors, the crowd from one disappears to the other. Perhaps that’s why we’re never sure whether it’ll be open or not. Bumthang, in central Bhutan, encapsulates all that’s great about the Himalayan mountain kingdom. By Ric Stockfis

Essentials WHERE TO STAY

Bumthang Valley

T

he four valleys that make up the once independent kingdom of Bumthang aren’t exactly easy to get to. The main town of Jakar is a 12-hour drive from Bhutan’s capital, Thimpu, along bumpy, twisting mountain roads (locals say there’s a turn every nine seconds) that cross several passes more than 3,000 meter in elevation. Jakar itself sits at a breezy 2,580 meters. Break up the journey over several days, and, if you can, return on one of the occasional domestic flights back from Bumthang to the country’s only international airport in Paro. But make it out this far and you’re rewarded with breathtaking scenery, endless hiking trails, millennia-old temples, fascinating festivals and even Bhutan’s best beer. Here are four highlights.

Hiking to temples There are some serious treks around Bumthang, with the six-day Rodang La and eight-day Duer Hot Springs treks both accessed from Jakar. There’s also the more straightforward Owl Trek (named for all the hooting at night) which takes just three days. Unlike many parts of Bhutan where a tent is pretty much unavoidable, there are plenty of day hikes or multi-stop walks with overnight stops in villages where you can relax in a traditional hot stone bath. Hiking up and down the main valley is a great way to acclimatize, and means you can take in Bumthang’s religious highlights, which include the Pelseling Goemba (lotus tree monastery) perched high above the treeline; the Jampey Lhakhang, built as far back as 659 A.D.; and the Kurjey Lhakhang, a huge temple complex built into a rockface. We found temple fatigue kicking in after six or so stops, but taken alone, any one of these is an incredible experience.

Lifting giant rocks for fun Colorful religious festivals known as tshechu— fabulous, four-day affairs that attract everyone from the surrounding region—are an important part of local life and you should try and catch at least one (check www.visitbhutanyear.com/category/events for what’s on where and when). But there are also a host of lower profile festivals in every corner of the country. We were in Bumthang in February and spent a fun day watching archery and strongman contests and trying on traditional headgear at the annual Nomad Festival, which draws herdsmen and hill tribes down from the Himalayas.

WHEN TO GO March through May and September through November are neither too cold, nor too wet, though there are lots of great festivals in February if you don’t mind packing extra layers.

Feeling like an extra on the set of Game of Thrones Of Bumthang’s four valleys (Chhume, Chokor, Tang and Ura) most of the action is in Chokor, but Ura in particular is worth a detour. (Look out for views of Gangkhar Puensum, the world’s highest unclimbed peak, on the journey over there.) The highest of the valleys, it offers some spectacular hiking, as well as an easy, hour-long descent through the forests to the village of Ura itself, a tiny settlement of traditional wooden farmhouses and smoking chimneys. If visiting Bhutan feels like stepping into Westeros, nowhere is that feeling more intense than in Ura. The village also plays host to its own annual festival—the lively, local liquor-fuelled Ura Yakchoe.

Drinking beer named after the original firefox The valleys of Bumthang look remarkably like Switzerland, and in fact the two countries have been actively cooperating for more than 40 years, with the Swiss introducing modern farming machinery and techniques to the previously closed-off country. The most visible and fun legacy of this project is the Swiss Farm, where cheese-making and beer brewing were first introduced to the valley. The Red Panda weissbeer, produced since 2006 by the Bumthang Brewery (+975 363 1197) in a tiny, unassuming facility (tours should be booked ahead of time and cost US$6/person), is the country’s best brew, and you can pick up honey, cheese and jam for a perfect picnic from the neighboring cheese factory. It’s a five minute drive out of Jakar up the eastern side of the valley.

Aman Resorts have five small lodges across Bhutan. Even for us mere mortals it’s worth considering a night at one, just to experience the luxury. Amankora Bumthang (from B32,000 plus 20% local charges/night, all-inclusive) sits just back from the river and houses both a functioning monastery and a crumbling royal palace within its grounds. The 16 rooms all face the huge mountains on the other side of the valley, and feature traditional wood-fired bukhari heaters. They offer a host of daily activities from farmhouse dinners to birdwatching and local astrology readings, though we were more interested in the in-house spa after a day of hiking in the hills. Another hotel that also offers great views is the newly opened 78-room Le Meridien Thimphu Bhutan’s first international-standard business hotel. Aside from the odd night of luxury, all our accommodation was included as part of our package with Druk Asia (see below) and in Bumthang we also spent a few happy nights at the threestar, family-run Rinchenling Lodge.

They can also plan and coordinate your trip, with a 10-day itinerary incorporating Paro, Thimpu, and the Punakha, Phobjika and Bumthang valleys starting from $2,209 (B56,501) in Summer/Winter and $2,659 (B68,004) for Spring/Fall, including all tourist royalties, your driver and guide, daily meals and threestar accommodation. They set us up with a truly outstanding guide, Dorji Tshering, who seemed to know everything about anything and was happy to adjust our itinerary on the fly. CURRENCY B1 = 1.85 Bhutanese Ngultrum. While you’ll want a small amount of local currency for incidentals, most places where you’re likely to actually spend money will take USD. The only credit card accepted is Visa.

Where do chefs get their stuff? At this cool little food market in the middle of Ratchada-Rama 4, called El Mercado. The large deli counter stocks cheese and charcuterie from Europe while the cold storage room is packed with fresh imported seafood mainly from France and Spain like fine de claire oysters, Mediterranean seabass and turbot. Though there’s no food menu, they’re happy to put together a sandwich using their cheeses, cold-cuts and Amantee’s delicious bread—and they won’t mark up the prices either! El Mercado’s resident chef can even whip up dishes from the available produce, but don’t expect restaurant service as they have to prepare everything a-la-minute and it can take time. The craze for Korean shaved ice desserts, bingsu, has reached fever pitch with the opening of the mother of them all, Sulbing. The behemoth, which now has more than 490 stores in the Land of the Morning Calm, had humble beginnings 453 kilometers southwest of Seoul, in the the port city of Busan. Your classic bingsu comes topped with injeolmi (soy powder) and red bean (both B210), milk syrup and the occasional tteok (rice cake) but you can also order melon (B385) and yogurt melon (yogurt, cheesecake and half-melon, B395). Backed by the renowned French chef Herve Frerard, Café Parisien rolls out some serious French dishes, from the specially-selected cheese plate and sauteed frogs’ legs with champignon to the dense morteau sausage served with stewed lentil and balsamic vinegar and the flavorful grilled pepper steak with smooth ratte potato puree and black pepper sauce. Frerard also plays a consulting role at Café Milano, where wood-fired pizzas with nine toppings are served alongside nibbles like homemade fries and calamari with pink mayonnaise. Misho joins with premium Japanese dishes like burikama yaki (grilled yellowtail gill), delicate sushi rolls and fresh sashimi. To get the party going, the drink list includes all manner of choices, from soft drinks to the stronger ones. Led by barman Sompong Boonsri, CigarOne offers up best-loved classic mixes. The Summer House Project The Never Ending Summer’s new glass-house restaurant by the river. The buzz: The team behind The Never Ending Summer have just launched a new diner. This time, they’ve branched out from Thai dishes to serve European comfort food with a seafood focus in a newly built space next door to the original restaurant. The decor: Starchitect Duangrit Bunnag maintains so many of his design signatures, from the dangling lamps to the hanging ferns, that it almost resembles Never Ending Summer’s interior. But the wonderful views of the river through expansive picture frame windows connect the space far more to its location, as does the vast alfresco terrace. The food: Head chef Nakul Kavinrat rolls out comforting Western favorites on a menu overrun by seafood dishes like The Fisher-

man’s Stew (a tomato-based seafood soup, B240), crab cakes with slaw (B350) and beer-battered fish and chips (B550), while still leaving some space for other staples like Caesar salad with apple and glazed walnuts (B350) and penne carbonara with roasted red pepper (B380). Taking care of the dessert menu, celebrity chef Phol Tantasathien of Spring Summer and Wicked not only serves some of his signature sweets like Cup C (fudgy baked chocolate cake in a cup, topped with vanilla ice cream, B220) in a new presentation with a mixture of pink peppercorn, pistachio, coffee beans, cacao nibs, sea salt and crystalline sugar in a pepper grinder, but also creates special new treats including the flourless Spanish orange and almond cake (B170) and the Rosemelon sorbet (rose and watermelon, B90).

Shake and Bake Originating in Sapporo in Northern Japan, Bake (G/F, opposite Harrods Cafe, Emquartier, Sukhumvit Rd.) is causing queues for its tarts filled with three different kinds of cheese. The yellow kiosk’s specialty combines mild cream cheese from Hakodate and Betsukai in Japan with some saltier French cheese—the result being a thick and tasty cheese mousse. This Bangkok shop is the chain’s second outlet outside the motherland, after Hong Kong. The price for one palm-sized tart is a fairly steep B80. For now, the shop limits the number of tarts to three per customer.

Thonglor Tower Siam Square’s dessert-oriented Once Cafe, known for its towering bowls of soft shaved ice, has opened a more grown-up spin-off in Thonglor. Once Social Bar & Cafe (308 Thonglor Soi 10, 084-777-7322) puts more focus on proper meals in the form of all-day brunch dishes, salads, pastas and burgers, as well as

Named after that most neon-lit Hong Kong district, this Silom institution is best known for its B429 all-you-can-eat dim sum buffet (11am-2pm daily), for which you’ll probably have to book ahead. That’s a decent deal for penny-pinchers, but you can’t really expect top quality for that price. While inconsistent, Kowloon isn’t without appeal. They also serve dim sum for dinner (until 9pm), when all dishes come in at B100. The flurry of menus, with various conflicting “chef recommendations,” don’t exactly help the ordering process—not that there are to o m a ny s ur p r i s es i n sto re. We recommend steering clear of the doughier options; with their meagre fillings, the barbecue pork buns are gummy and all but tasteless. Stick to the

Though they asked us what level of doneness we wanted our beef (medium), the meat still came out overcooked and so chewy that the wellp o a c h e d e g g a n d t h e n i ce s p i c y hollandaise couldn’t really help. It was the same problem with our Tex-Mex BBQ salmon (B480); despite being ordered medium rare, the thick salmon fillet came out well-browned yet simply too dry. This was unfortunate because the bed of light and tangy grilled corn salad (with cubed beets, bell pepper, onion and green peas) was delicious. The pulled-pork burger (B320), too, comes in a fluffy brioche with some nice, crisp fries on the side, but we can’t get over the alltoo-dry pork. Apart from these somewhat flawed dishes, we love their harvest salad (B240), in which the crisp lettuce and candied walnuts complement the mellow grilled peach, zucchini and beetroots, resulting in a fun dish with many textures and flavors. The classic French clafoutis (pancake-like dessert, B260) also hits the spot, with the sweet batter balanced out by tangy berries and a rich vanilla ice cream. While some dishes are undoubtedly good, there’s clearly a problem with service: main courses served before appetizers and some unwelcoming staff are not what we expect from a restaurant that charges so much.

thinly-cased dumplings, which are a much safer bet, whether the shrimp, pork or superb chive filling. We also rate the steamed sponge cake with its airy texture and sweetness. Mains span the whole gamut, from double-boiled soups and greasy fry-ups to Peking duck and shark fin, and the results tend to be competent rather than amazing. The stirfried garoupa fillets with XO sauce (B280) and honey and chrysanthemum chicken (B240) won’t win any awards for delicacy, but do revel in a sort of sticky, one-dimensional charm. The latter lacks that caramelized crunch to make it truly satisfying, but we love that the former comes with big crispy chunks of Chinese bok choy to balance out the salty flavors. With its vivid red faux bamboo and hanging lanterns, Kowloon looks a lot more impressive from the outside looking in through the floor-to-ceiling windows. Inside, though, the saturated red light doesn’t amount to any sort of mood. Like many Chinese restaurants, things can get pretty chaotic—and don’t expect too much attention from the staff. We’ve heard Kowloon praised as a cheaper, tastier alternative to Tim Ho Wan and the likes, but we’re not buying it. Cheaper; that’s about it.
