That Bunker finally opens next week This project was the talk of the town. Opposite’s Jess Barnes and Eat Me’s Tim Butler refurbishing a huge shop-house in Sathorn and doing what they do best: farm-focused dishes made from mostly local ingredients. Barnes is no longer on board, the name got changed to Bunker and now, after several postponements, it finally opens this Apr 26. www. bunkerbkk.com That churros are the doughy treat of the moment Yet to receive any oozing, gooey-filling treatment, the delicious Spanish-style pipes of dessert Nirvana can currently be enjoyed in their non-bastardized form at just about every restaurant and dessert cafe to have opened in the last three months such as Dolly Churros, Warm Wood Cafe and the new Chu near Chong Nonsi. This past experience, he clarified, was working in public relations for the Petroleum Authority of Thailand (PTT). Given the amount of time his family members and fellow soldiers spend in front of press conferences, we can see absolutely nothing wrong with this logic.

upfront HOT OR NOT

Hot: Kakigori

Not: Bingsu

We can officially report that bingsu has melted from our hearts like a Korean-style mountain of shaved frozen soymilk topped with red bean paste. What you should be eating is the Japanese equivalent, kakigori, and Bangkok’s young entrepreneurs are wasting no time ensuring every neighborhood has its own ready supply. Find the best of them at ow.ly/4mNusI.

INTERVIEW

Hot: Sleep pods

Not: 5-star hotels

The days of crunching your prone body between airport seats’ armrests are over now that Suvarnabhumi has followed in Don Muang’s footsteps to offer “sleep pods”—yours for two hours at B600. Netizens were quick to point out that it would cost you about the same to stay the night at that rate as it would to head into town and check into the St. Regis. But does the St. Regis have dangling ferns and tasteful Scandinavian-style furnishings? No, no, it does not.

Hot: Laos Beer

Not: Thai Beer

If you read BK, you’ll already know that small-batch beer-making is illegal in Thailand. But the same doesn’t apply to our friends in Laos, and so our country’s brew pioneers have been upping sticks and bottling their beers across the border. What that means is Thai craft beer that might not technically be Thai, but which is fully legal. Go to page 16 to find out the new brews you can drink without getting arrested.

Hot: Parties

Not: The EC

After what must have been a very nice run of state-funded thumb twiddling, Thailand’s election commission finally has a job to do: preparing Thailand for an August referendum on the latest charter. So far both major political parties have come out in favor of a “no” vote, while occupying the “yes” camp sit Suthep and Suthep’s son’s wife. We predict the EC can go back to many more days of doing nothing before this country sees its next election.

THAT’S WHAT SHE SAID

4

After the floods of 2011, Sasin Chalermlarp, 48, the secretary general of Sueb Nakasatien Foundation, has stood to oppose a range of environmental issues, from the Phu Kradueng cable car to the governmental greenlight for mega projects to dodge city planning laws and environmental studies. To coincide with Earth Day on Apr 22, BK chats with him about the state of Thailand’s natural resources and environment. Why do you think a cable car is a bad idea for Phu Kradueng? Phu Kradueng is Thailand’s best trekking trail. The cable car project was actually initiated by Loei’s Designated Areas for Sustainable Tourism Administration (DASTA), which wants to boost local tourism numbers, but they didn’t consult the national park department which owns the area. Note that Phu Kradueng is a “firstclass watershed type A” national park [which must be strictly preserved as a water source]. DASTA’s study didn’t include any environmental consequences of such large numbers of tourists going up to Phu Kradueng’s plateau. It’s a pity to see the park lose its uniqueness. For me, there are many more suitable places that would benefit from a cable car, like Phu Luang and Phu Rua. How do you feel about the government’s decision to use Section 44 to circumvent environmental legislation? I think the junta have failed us in many ways. We hoped they would enact reforms but, in my view, reform should be about fixing illegal problems, not trying to make shortcuts. If contractors invest money into building the project prior to an EIA

[environmental impact assessment], I’m afraid that it will create more conflict between them and locals. Contractors have the money and the power to threaten locals and push the project through—don’t even mention big projects like dams. There will be tremendous problems if it goes ahead without an EIA study. I think the junta still governs in an old-fashioned style where development comes at the cost of people. They want to show that they can achieve everything quickly in order to please people, but they don’t need to do that since they didn’t get voted in by anybody. They came to fix the conflicts in Thai politics; and I still hope they will eventually achieve that. How bad do you think things are for Thailand, environmentally? We’re really at a turning point between good and bad. I don’t think the government has a shared space that allows thinkers to help them reform this country. Environmental concerns are crucial to Thailand’s development. All governments think the same about how to make the economy grow with quick solutions—boosting tourism, bringing in foreign investors. We should fix

the economy by developing sustainable natural resources. Why do we need to develop a country with the environmental concerns instead of developing environment with economic concerns? Why do we need to trade our good soil, good water and good sea when we can have both [development and our natural resources]? We just need to change direction and develop with a green strategy. Do you think the drought situation is being handled appropriately? We might survive until June or at least August if there are rains as usual. I must give credit to the Ministry of Agriculture and Cooperatives for their work communicating with farmers to not grow a second crop out of season. But it seems the government needs to do more to educate urbanites about water usage. Eventually, I’m sure that the drought problem will be more severe. We should plan more water reserves around Bangkok and the suburbs because there is more rain here. Urbanites should stock water in large water jars, like people in the old days. FUTURE SOUND Ten Thai bands to watch in 2016. By Carl Dixon and Vasachol Quadri

Triggs & The Longest Day Label

These rockers, led by Tokin Teekanun (aka the driving force behind the Stone Free and Keep on the Grass indie festivals), have been around seemingly forever but are only truly conquering the city this year. Earlier this month they finally launched their debut album, Almost Ready, at a star-studded affair at Moose. Lead single “Sometime, Somewhere” gives an idea of what to expect: over a wall of Jesus & Mary Chainlike guitar fuzz, Tokin grunts along like a young ( and dr u nk) Ca l vi n Joh n son . Obscure underground comparisons aside, Triggs are probably Bangkok’s most exciting rock band right now. Don’t sleep on this. Catch them next: Supporting Basement Tape at their Farewell Party at Studio Lam on Apr 24. Where to listen: www.fb.com/ Triggsandthelongestday

This four-piece band—Phakawat Charoenlarp (drums), “Free Man” (bass), Boripat Saengsiri (guitars and synthesizers) and Chonlawat Buranasing (vocals and guitars)—make the sort of woozy electro-pop Bangkok’s indie kids go crazy for. But there’s a nice dark edge and enough genuine hooks on their Honey, I’m Lonely EP, released at the tail-end of 2015, to suggest they’re more than just flavor of the month. Expect to see them filling plenty of plum support slots (see below) in the months to come.

4 Vivid Dream Label

Comet Records

The internet works in mysterious ways. It all started with a YouTube clip in 2011 that showed a band heavily jamming in front of a ramshackle sound-system in a field somewhere in the Thai countryside. It was followed two years later by a blog post titled “MINDBLOWING PSYCHEDELIA FROM THAILAND” (caps not ours). Now this multi-generational group of wedding performers from Phetchabun province are taking their psych-rock sounds to packed-out audiences all over the world. Since L.A. music producer Josh Marcy managed to track the band down and convince them to lay their jams down on tape, the result has been two critically acclaimed instrumental albums, including last month’s II.

When it comes to all-female dream-pop bands, Bangkok has its fill. But while Yellow Fang and Jelly Rocket keep things upbeat, new fourpiece Vivid Dream revel in the relative doom and gloom of ‘80s synth pop: think lushly layered atmospherics with breathy vocals buried deep in the mix. Made up of Chatchanok Wongvachara (vocals/synth), Methasit Kittikullayoot (synth), Sarun Vachiravanichkij (guitar) and Keerati Arpornrat (bass), the band debuted back in 2014 with the single “Into the Sky,” which was later included on Comet Records’ second compilation. After a brief hiatus, they made a comeback this year with their second single “Silence” followed by a live performance at Fungjai Mun (Apr 7). We’re sure there’s a lot more to follow.

Catch them next: Currently touring Europe again; we can only hope they’ll visit Bangkok one day soon. Where to listen: khunnarin.bandcamp.com

Pyra is the stage name of Peeralada Sukawat, who’s worked behind the scenes in the music industry since the age of 16. This year sees her finally take center stage. With a singing style reminiscent of old-school r’n’b, Pyra explores many different sonic directions. We were first attracted by her single “Fire” in collaboration with Comet Records, a retro disco number made for the club. Her vocal cameo in Jayrun & Akarin’s r’n’b track “Take Me” hints at even more diverse sounds to come. We’re seriously looking forward to her upcoming work with Gramaphone Children and Yaak Lab, too.

This Chiang Mai-based molam singer took home three awards at the Kom Chad Luek Music Awards in March: best female singer, best album for Isan Soul and best song for “Maya.” While Bangkok is well acquainted with Isaan roots music thanks to Zudrangma Records, Paradise Bangkok Molam Band and the likes, Rasmee is the real deal. Born into a musical family in Isaan (her father was the founder of a Khmer folk band), Rasmee kick-started her commercial career by moving to Chiang Mai, where she’s worked with a number of international artists. “Maya” is a sparse, slow and yearning folk song in which Rasmee’s captivating vocals steal the show. James Alyn Wee, aka Alyn, is a young singersongwriter who entered our radar when he provided vocals on The Missing Teeth’s single “Missing” last year. But you wouldn’t guess that his debut solo single “Addicted” was a product of Thailand. This slab of pop-rock goodness sounds like something out of a ‘00s American rom-com—and we mean that as a compliment. The melody will stay with you for days. Followup single “Yon Wela” takes an acoustic pop route that suggests Alyn has plenty more tricks up his sleeve.

Comet Records

This Atlanta-via-Bangkok producer/emcee has been doing the city’s party rounds for a while now. But our introduction to his recorded works came with last year’s Comet Records compilation, which gathered pretty much all our favorite electro acts in the capital. Fusing r’n’b, electronica and soul, Unda’s “Kowloon” was one of our top singles of 2015. After a couple of EPs and collaborations with synth-pop band Naked Astronaught, we can’t wait for a full-length release. Catch them next: TBA Where to listen: soundcloud.com/undaworld

The latest addition to the Spicy Disc roster gathers together five big players—Notapol Srichomkwan, Martrachai Makroodthong (both Groove Riders), Pete Tanskul (Blissonic), Teddy Theodior Gaston (Flure) and Win Sirivongse (Sqweez Animal). The first single “Nan Pai Leaw [Way Too Long]” has that beat-driven dance vibe we miss about Sqweez Animal, which is a perfect match for Win’s smooth vocals. This is that rare thing: a super-group we’re actually excited about.

With their 2014 single “Chapter 1,” Polycat pretty much single-handedly took ‘80s synth-pop mainstream again. This full-length release lives up to the hype.

This brother and sister-led melodic pop band’s latest release is extremely cute— and arrives right on time for your next beach trip.

The Rats Records’ alt-rock band follows up muchplayed singles “Be With You” and “Give Up on Love” with a full album of catchy gems that don’t disappoint.

We named these guys one of our bands to watch for 2015 and their finely-crafted, outsider psych-pop is a treat. This EP comprises five tracks of twisted beauty.

escapes TAIWAN

Due South Head south from Taipei to discover three Taiwanese destinations well worth hopping on a train for. Text and photos by Monruedee Jansuttipan

Chimei Museum

Pier-2 Art Center

Fo Guang Shan

Tainan The oldest city in Taiwan (it was the country’s capital for 200 years) sustained considerable damage during the earthquake in February this year. Dubbed the “Phoenix City” thanks to its rise and fall under various Chinese dynasties and Dutch colonists (162483), it’s now home to the new Chimei Museum (www.chimeimuseum.org), a grandiose neoclassical private museum founded by Shi Wen-long, one of the world’s richest men according to Forbes. The museum is separated into five categories of collections: Western arts, natural history, arms and armor, antiquities and artefacts, and musical instruments (here, you’ll find one of the largest violin collections in the world). Next stop is Ten Drum Cultural Village (www.ten-hsieh.com.tw), which has transformed the old Rende Sugar Refinery into a cultural park where the Ten Drum percussionists perform in an amazing factory space where audience members sit above the old machinery. Inside is full of other attractions like a skywalk connecting the giant old molasses tanks and a stunning hidden cafe. It’s also home to a secondhand book shop, drum museum and classes, and even a movie set from the 2013 Taiwanese film Good Luck! Boy!, telling the story of a young musician chasing his dream. Another warehouse has been turned into a restaurant, Ten Drum Diner, where you can get a good meal beside five train carriages set beneath camphor trees. Next, head to the wooden fort Chikan Lou or Fort Provintia, a 360-year-old Dutch outpost praised for its architectural and artistic significance. Save your remaining energy to visit Hayashi Department Store (www.hayashi.com.tw), Taiwan’s second oldest mall. It underwent a renovation in 2014, but the five-story space retains plenty of vintage charm and is filled with both local designers selling souvenirs as well as a Japanese restaurant and cafe on the rooftop. Eat here: You’ll find authentic local flavors at A Sha (goo.gl/FZ73mS), a Southern Taiwanese restaurant famous for its dried mullet roe (a pricy Southern delicacy) as well as mud crab with sticky rice.

Kaohsiung Taiwan’s second largest city has emerged as a top tourist destination, offering natural and cultural attractions, a vibrant arts scene and delicious food. Start your exploration with a peaceful trek at the Fo Guang Shan Buddha Memorial Centre (www. fgsbmc.org.tw), which is home to an enormous, 108-meter tall seated Amitabha Buddha surrounded by stupas representing the Four Noble Truths. Inside the 625-rai compound, you’ll also find the stunning golden Twin Pavilions Tea House, which offers visitors tea ceremonies and calligraphy workshops (book three days in advance). Though designed for clergy, the Welcoming Hall is now filled with shops and restaurants including a rare vegetarian Starbucks branch and Hi-Lai Vegetarian Restaurant, which offers super-delicious zero-meat dishes. Get a taste of contemporary Taiwanese creative culture at Pier-2 Art Center (goo.gl/M8Em1F), a modern art wharf which sits in a transformed warehouse complex at the old port. It includes an art plaza, exhibition warehouses, bookshop, theater, design shops and cafes along with a bike path. After dark, check out Liuhe Night Market, a food mecca packed with Chinese dishes, especially fresh seafood. Don’t leave without trying the local milk and papaya smoothies, either. Also save enough time to visit Formosa Boulevard MRT Station for its “Dome of Light,” a massive colored glass installation that displays a small light show every evening at 7:30pm. Eat here: Traditional Chinese restaurant Fwu Keh Lai (goo.gl/Kkvq6x) is one of the top spots for a grand meal. There are three branches: Ziyou 1st Rd., Linsen 3rd Rd., Qianzhen and Lane 229, Jiangong Rd. Stay here: Located right in the city center, the 186-meter tall Grand Hi-Lai Hotel (www.grand-hi-

Chiayi Known as the “Doorway to South Taiwan,” Chiayi has long been the starting point for travelers heading to the picturesque Alishan National Scenic Area. Now though, the city is also home to the newly opened, NT$7.934-billion Southern Branch of the National Palace Museum (south.npm.gov.tw). Founded late last year, this sister museum of the National Palace Museum in Taipei displays precious artefacts from the Chinese revolution including the reputed Jadeite Cabbage. Expect to find permanent and rotating exhibitions of other Asian artefacts, too. You can easily reach the museum from Chiayi highspeed railway station, from which it’s just a five-minute taxi ride. Spare some time to stroll around Hinoki Village (www.hinokivillage.com), the cultural village on Linsen Road which used to be the official Japanese residential area during the logging era of the 1900s. It consists of 28 newly-renovated traditional Japanese wooden houses built from cypress tree (called hinoki in Japanese). It’s now home to tea houses, craft shops and eateries. Cross the road to take pictures at Peimen Train Station, which was built in 1899 as the starting point of the gorgeous Alishan Forest Railway that runs through cherry blossom tree tunnels every spring. Now though, the station is no longer in use. Eat here: Chicken rice is the craze here. Head to Spraying Water Chicken Rice Restaurant on Zhongshan Road, where they have been serving this famous treat since 1949. The menu contains a huge list of other Chinese delicacies, too.

PHUKET

On Point The ever-stunning Point Yamu by COMO (076-360-100, www.comohotels.com/pointyamu) hotel on Phuket has unveiled what might be its finest work yet: 27 brand new, vast pool villas ranging in size from 170-620 sq meters. Italian designer Paola Navone keeps the extension in keeping with the rest of the hotel, with a serene, largely white palette accented with aquamarines, Thai motifs and craftsmanship such as gray Sino-patterned tiles. The floor-toceiling windows offer spectacular views of the Andaman Sea and limestone karsts of Phang Nga Bay. All rooms come with butler service along with in-villa private barbercue dinner. Their website is now offering a pretty good low-season deal starting from B14,629 for Bay Pool Suite, B14,025 for Verandah Pool Suite and B36,268 for Como Suite. Stay tuned for a new beach club currently in the works, too.

SA KAEO

Wheelie Good Times This hotel in Sa Kaeo Province in the easternmost part of Thailand has got to be the country’s coolest bikethemed lodgings. The Velo’s Hotel & BMX Pump Track (037-231458, www.fb.com/velohotel) actually features a BMX circuit on the grounds of the hotel. Its owner, Anurak Tianthong, is chairman of the Sa Kaeo Provincial Federation of Thai Industries, and he brought on board world mountain bike champion Claudio Caluori to help design the track, which features a series of smooth asphalt bumps to simulate riding downhill. It’s not just reserved for bike riders, either: practitioners of other extreme sports like skateboarding and rollerblading are welcome to come and have a go, too. The hotel has 90 rooms, 20 of which are dedicated to cyclists under the name Bike Type. Riders can leave their beloved wheels in the well-designed bike parking section, situated right next to the track. Other room types are Deluxe Pool Access, Deluxe Pool View and Superior. Room rates range from B1,500-B3,000.

HUA HIN

Macho Pampering The luxurious spa The Barai at Hyatt Regency Hua Hin (032-521-234, huahin.regency.hyatt. com) recently launched its new men-only treatments. To coincide, the highlight “Men’s Health” package is slashed in price from B7,700 to B5,500. The 2.5-hour package includes a 90-minute body wrap and body massage called the Noir Sonic Treatment, followed by a “Day & Night” facial. Another highlight includes “Body Energise” massage for sport fanatics and those who love heavy rubs (B4,200). There’s even more good news since the hotel right now offers a ‘buy-two-stay-three’ promotion until Jun 30, starting from B5,000/night and in effect for all the coming weekends. If you want to book The Barai Suite, that’ll be B19,000/night.

MALAYSIA

Eastern Riviera One-percenters, listen up: St Regis has opened its latest property and this time it’s on the beach. The St. Regis Langkawi (www.starwoodhotels.com/stregis) takes over a 600-meter-long stretch of private beach on Malaysia’s yachting island, peppering it with four overwater villas and 85 suitably luxe suites (20 of them get their own pool). Bangkok’s architectural king of resort chic, Bill Bensley, played a part in designing the brand’s vision for a sort of tropical-rainforest-meets-Italian-Riviera take on luxury—think obscenely high ceilings, huge chandeliers and marble everything surrounded by jungle. We love the stunning green-house-like dining room, called L’Orangerie & Lounge. The pleb suites start at US$794 (B27,736), but what you really want is an overwater villa—yours for 24 hours at $3,174 (B110,800).

Japan Invasion Japanese streetwear brand Beams is like a more fashionable Muji, sticking to minimal looks and top-quality materials. After launching in Thailand last year at Emquartier, they’ve now expanded to Siam Paragon with their second branch, where you’ll find the new Spring/Summer collection in a wood-dominated space. Look out for the recently launched Vaporize line designed by James Iha, the American-born Japanese rocker best known as a guitarist for the Smashing Pumpkins. There’s also a corner dedicated to special collaborations like the current one with Star Wars. 2/F, Siam Paragon, Rama 1 Rd., 02-610-7752. BTS Siam. www.fb.com/ beamsthailandofficial

MENSWEAR

Beach Escape Bangkok has a new local swimwear label for guys selling styles eerily reminiscent of Timo but for around half the price. Sand & Salt offers basic shorts and shirts for summer beach trips produced in line with Iodine Global Network (IGN) to donate parts of their revenue to fighting iodine deficiency children. The main line features nylon swim shorts that start from B1,400 for whole colors in options like classic midnight blue and bright orange, while the navy striped shorts cost a little more at B1,600. Beach tees (B600), shirts (B1,300) and cotton lounge pants are also available. www.sandandsalt.com

FASHION

Shared Style After presenting her Spring/Summer 2016 collection at Bangkok Fashion Society’s fashion showcase in March, designer Milin Yuvacharaskul has now launched a new collection for sister line Mimi. Called What’s Yours is Mine, the collection draws inspiration from the wardrobes of different family members—Dad’s oversized jacket, Mom’s vintage dresses, little bro’s basic tees—to mix and match various styles. While previous Mimi collections have been all about the weekend, this one introduces some semi-casual and smart work looks, depending on how you choose to match pieces like floral print A-line skirts, vintage highwaist shorts, guitar-printed shirts, oversized jackets and band T-shirts, all in a unifying pastel color palette. The much-hyped sneaker brand released its spring/summer 2016 collection which sees its original Achilles and Achilles Velcro strap leather sneakers given faded pastel tones. Good news: they’re available at Siwilai store (Central Embassy) with prices starting from B19,500.

The classic American streetwear label veers away from the punkrock aesthetic with this recently launched festive collection to welcome its 50th anniversary. The series includes Van’s classic models like Sk8-Hi and Old Skool leather sneakers in cute pastel shades like pink, mint green and blue. Again, we suggest keeping an eye on carnivalbkk.com.

The brand’s big collaboration with Raf Simons adds a cute palette of lime yellow, salmon orange and deep blue to the classic Stan Smith model. Too bad it might not be available in Bangkok—but do try contacting pre-order sites like IG: Bosom_Towear and www.fb.com/ eazyorder.

Long before Adidas NMD or Yeezy, Thai boys and girls would queue up for pair after pair of Nanyang plimsoles. Now there’s a new lifestyle line. Nanyang Sugar mixes things up by adding a colored inner sole and seven different pastel shades of laces to the classic white model. The blue-white sport stadium-themed Munch provides a friendly space for all-day casual dining. Mugendai’s head chef dishes out easy Western dishes like Munch mac & cheese with ground angus beef (B320), grilled chicken salad (B180), spaghetti olio bacon (B240), seared-maguro pasta (B650) and burgers (B280550). Fans of Muteki’s desserts may want to try the fluffy souffle pancake (B280) served with caramelized banana, maple cream cheese sauce and Hokkaido soft cream as well as croissant & butter pudding (B250) with an espresso shot and soft serve. 145 Thonglor Soi 10, 02-381-4711. www. fb.com/munchbkk

Despite the consultation of Eduard Bosch, a former chef de cuisine at El Bulli in Spain, Islero does something far more traditional. Head chef Pedro Serrano dishes out authentic Spanish food like Iberico ham croquettes (B480), grilled octopus tentacles (B460) served with beans in Castilian stew, baked fish fillet with potatoes and almonds (B680) and Josper-grilled, Segovian-style suckling pig (B3,900 for a half pig). That said, there are still some items that nod to El Bulli’s modernism, like olive spheres (B80) and deconstructed Spanish omelet (B380) served in the form of cream and espuma in a martini glass. For dessert, try tocinillo de cielo (egg yolk flan, B230). The Cava wine bar takes over one side of the restaurant, serving tapas and Spanish wine (starting at B260). It takes 10 hours of simmering and a bunch of whole chickens to make Menya Takeichi’s thick soup. You won’t find the usual tonkotsu pork ramen here—this chain is regularly lauded as one of Tokyo’s top names for chicken ramen. Choose from shoyu (soy sauce), shio (salt) or spicy sauce to go with the soup and tuck into the tender slow-cooked chicken breast chashu. A bowl of ramen starts at B135 for small and B195 for regular size. Also try the deboned chicken wing karaage (B120-180) and rice ball with fried chicken (B40). 2/F, K Village, Sukhumvit Soi 26, 02-2599300. www.fb.com/takeichithai

Ku De Ta Bangkok has officially changed its name. You can now find the club on Sathorn Square’s roof filed under the name Ce La Vi Bangkok, which is KDT-speak for “c’est la vie,” which in turn is French for “that’s life.” The move follows Ku De Ta Singapore’s announcement in June 2015 that they’d also be trading under the name Ce La Vi Singapore. Don’t expect any big changes straight away, though. The design renovations aren’t coming until later, and the entertainment policy remains pretty much the same, too. Bangkok-based big-name DJs like the Bangkok Invaders and Kimball Collins still rule the stage, with monthly parties from international guest DJs and weekly theme night. 39/F, Sathorn Square Complex, 98 Sathorn Rd., 02-108-2000. blends Guy’s Night Out Bangkok’s best cigar-and-whisky bars for the perfect gentleman’s night out.

Q&A

Black Amber Thonglor Social Club

Black Amber Thonglor Social Club The occasion: After-work nights out with no suit and tie needed. The vibe: Chavin “Kwan” Nantaterm started Black Amber last year as a super-stylish gentleman’s barbershop and tattoo business before introducing a whisky bar. The Victorian curiosity cabinet-inspired decor features the owner’s private collection of Gothic trinkets, from an alligator skull to an ostrich skeleton. The atmosphere isn’t nearly as moody as it looks, making it a great spot to kick back, whisky in hand, to the old-school R&B, jazz and blues soundtrack. The best pairing: Whisky is the main focus here. The shelves are filled with familiar bottles like The Glenlivet, Jameson and Chivas Regal 12. Romeo y Julieta cigars, with their medium body and creamy, gentle touch on the pallet, are great with any Chivas Regal expression. 160/17 Thonglor Soi 6, 092-276-2772. Open daily 6pm-1am. Facebook: Black Amber Thonglor Social Club

Humidor Cigar Bar at InterContinental The occasion: When you’re looking for a classy place to impress. The vibe: Kick off the night at Fireplace Grill before heading over to the lobby floor of InterContinental Bangkok for an after dinner drink. The Balcony Lounge & Humidor is a handsome, day-and-night hangout with plenty of wood, leather and chrome to keep you in the mood. The place offers an extensive range of whisky with rare and exclusive bottles as well as a selection of cigars. Live music Mon-Fri 9pm-midnight is an added bonus.

The best pairing: Learn about the art of tasting with their Whisky Journey tasting flight (B499/person), which includes Ballantine’s 17 Year Old, Chivas Regal 18 Year Old and Royal Salute 21 Years, alongside Speyside Glenlivet water. You can also choose an additional Romeo y Julieta No.2 cigar with the flight at B1,499/ person. L/F, InterContinental Bangkok, 973 Phloen Chit Rd., 02-656-0444 ext. 6477. Open daily 8-1am

Whisgars The occasion: Indulgent nights out with the guys. The vibe: This whisky-and-cigar institution is known for having one of the longest whisky menus in town for both single malt and blends from all around the world. There are now three locations in the city center, each featuring a 1920s-style bar filled with dark wood décor and leather couches— classy but also comfortable. The best pairing: Go for their whisky flights if you want to explore, or buy a full bottle to drink neat or on the rocks with the right cigar like the highly recommended Perdomo Grand Cru Grand Robusto. 981 Silom Rd., 02-630-1996, Open daily 2pm-2am. www.fb.com/WhisgarsSilom 16 Sukhumvit Soi 23, 02-664-4252, Open daily 2pm-2am. www.facebook.com/whisgars23 2/F Mahatun Plaza, 888/25-26, Ploen Chit Rd., 02-650-8157. Belle’s Room The occasion: You love the masculine feeling of Whisgars but need something more exclusive. The vibe: Located inside Whisgars’ Silom branch, Belle’s room is a secret bar inspired by the Victorian era. Find the secret pathway that leads from Whisgars’ main room and you’ll be transported into an intimate, exclusive atmosphere. The best pairing: You can pick your favorite bottle and let the barman work his magic or keep up the gentleman vibe with Chivas Regal Extra paired with Perdomo Grand Cru Grand Robusto Connecticut cigars. 981 Silom Rd., 02-630-1998. Open daily 6pm-2am. www.fb.com/bellesroomsilom

Humidor Cigar Bar

Q&A The occasion: When you want something more elaborate than a neat whisky in a charming gentelmanly setting. The vibe: Hidden inside a little alley, this speakeasy-style bar is rated as one of Asia’s best bars and comes courtesy of the team who created Sugar Ray bar. The long, narrow space replicates a classic railway carriage dining car with a ‘20s New York vibe. Just 10 leather-upholstered seats are lined up along the deeply polished bar, where the barman specializes in personalized drinks. The best pairing: Chat to the barman about your favorite spirits or pick one from the list of the signature cocktails to reward your evening. The bar man can make one upon your request, adding his own flair and character.

Cigar Tips The Perfect Cut Don’t cut the cap too far, this will cause the wrapper (the outer leaf) to unravel and the cigar may come apart. Or you can even try a “punch” which will cut a hole in the centre of the cap, and bring out a slightly different note.

Lighting Up Avoid using matches. These con-

tain chemicals that can alter the flavor of the cigar. Instead, invest in a high-quality butane lighter. Or, if you really want to impress, use a cedar wood splint which can be found inside most cigar boxes.

Don’t Tap It’s not a cigarette so let the ash stay on the cigar. When it’s about to crash onto your seersucker

jacket, you’re allowed to gently bring your cigar to the ashtray and break off the ash.

ter, as well as the type of tobacco used for the filler and the wrapper.

Take it Easy

Keep at It

Don’t go for the biggest cigar if you’re new to this. Instead why not take a look at the region where the cigar comes from, such as Nicaragua or Cuba. Much like whisky, this will be a heavy influence on its charac-

If your cigar goes out, that’s totally fine. When you’re ready to keep going, you can just take a match to scrape off some of the ash and light up. Belle’s Room

CRAFT BEER

BK ASK

Legally Brewed Bangkok’s craft beer scene is making the move from illegal underworld business to above-board cottage industry. Here are the two officially licensed new brands and how they managed it. By Vasachol Quadri Chalawan Pale Ale (4.7% ABV)

Chiang Mai Brewing Company

The story: Sukij Thipatima, who has over 10 years’ experience in the booze industry working with leading companies like Thai Asia Pacific Brewery and Diageo, founded this company as a progression of the Full Moon Brewworks microbrewery which he started in 2010. Largely unheard of in Bangkok, Full Moon is located and registered as a microbrewery on Phuket, meaning that Sukij can’t bottle or distribute the beer elsewhere. He started Chalawan last year, first selling on tap but now having the beer bottled in Cambodia to import it back legally (see box, bottom right). The taste is designed to be easygoing and light to suit Thailand’s tropical climate, playing around with local ingredients like brown rice, brown sticky rice and wild honey.

The story: After a bit of trial and error with last year’s first batch, Chiang Mai Beer now has a mass-produced product which finally arrived Bangkok in February with a party at Wishbeer Home Bar. Chiang Mai Beer is brewed in Laos and imported legally to Bangkok. The brand has two styles: Red Truck IPA and Chiang Mai Weizen (both 5% ABV).

The beer: Yellow like a lager in color yet with a sharp, floral aroma which spells out its craft credentials. The taste is very malty with a hint of citrus (this actually comes from lychee), sweet and with a bitter finish. The texture is not too heavy and nor is it too fizzy—easygoing all round.

Where to get it: Wishbeer Home Bar (Sukhumvit Soi 67, 02-650-2113), Teens of Thailand (76 Soi Nana, 081-443-3784) and Bricks & Bone (2 Rama 9 Soi 41, 091-040-5174).

The beer: It has actually received good and bad feedback about taste changes since going mass. We called the Red Truck IPA very bitter, floral and with citrus notes coming both on the nose and in the taste, but lacking in the hoppiness you might expect. The Chiang Mai Weizen is lighter in both body and taste. However, we haven’t lost any faith that the team will hit their stride again soon.

Where to get it: Bo.lan (24 Sukhumvit Soi 53, 02-260-2961/2), Err (394/35 Maharaj Rd., 02-622-2291), Rabbit Hole (125 Sukhumvit Soi 55, 081-822-3392) and Tep Bar (69-71 Soi Nana, Charoenkrung Rd., 098-467-2944).

NEW CAN Cheers Riceberry Selection (B49) Style: Lager beer Abv: 5% While everybody has shifted their attention from US to local craft beers, mass lager brand Cheers jumped on the trend by launching a new lager using riceberry for a more floral flavor. Produced under the umbrella of Thai Asia Pacific Brewery, which also represents Heineken and Tiger beers, Cheers is a pale lager with 5% alcohol by volume (ABV), while the maltier Cheers X-Tra contains 6.25% ABV. The beer: There’s a roasted rice aroma on the nose. The color is darker than Cheers X-Tra and closer to a standard amber ale. Most Thai beers are fizzier than imported ones and that’s true here, too, despite the heavier body—the fizziness is the first thing to hit you before the body. There’s plenty of bitterness but it’s also a little sweet. Let the taste develop and you’ll get that roasted aroma which kicks in at the end and is quite unexpected. Available at 7-Eleven nationwide

16

Sukij Thipatima Founding partner and head brewer at Full Moon Brewworks and Chalawan Beer What do you think about how the Thai craft beer industry has developed? “It is great to see more people interested in home brewing and enjoying it as a new cool hobby. They are becoming more creative with their brewing, too, using advanced techniques. But the most important thing is to understand the basics. Brewers have to ensure that every brew they make, whether for personal consumption or sharing with others, is done under the highest sanitization and hygiene standards. Safety needs to be the top priority no matter how fancy your style of brew.”

The Trouble with Thailand’s Liquors Act Since 1950, Thailand has only licensed mass-production beer factories turning out volumes of 100,000 liters per year, while smaller operations needed to register as brew pubs and were banned from bottling their product for retail— hence the rise of lively breweries-slash-entertainment halls like Tawandaeng. Since this minimum requirement of brews per year is too high and costly for craft manufacturers, the easiest way to get licensed is to brew or bottle outside the country and import the beer back to Thailand as a foreign product. The bottle will get the stamp and be taxed at 60% for customs duty and another 48% excise tax.

OPEN DOOR

Mana Cuisine The reborn nightclub has opened its new dining wing. The buzz: After Sukhumvit Soi 11’s legendary nightclub and restaurant Bed Supperclub closed down in 2013, the avant-garde spaceship building was reborn on Sukhumvit Soi 13 as Chi Ultralounge. Now, the fine dining portion of the project has opened as Mana Cuisine, in collaboration with Blue Elephant restaurant. The decor: No longer white and futuristic, the good old building is now decked out in maximal, Chinese referencing decor. A giant dragon’s head dominates the two rooms, with the shape of the bar representing its body. The restaurant section still maintains the fun vibe with DJs playing electro-house beats. In another break from Bed Supperclub, you also get proper dining tables. The food: Blue Elephant strays from traditional Thai cuisine to do something different here. Chef Anthony Bish (formerly of Blue Elephant Phuket) helms the kitchen, going for Pan-Asian dishes pre-

18

sented in a contemporary Western style. Meals are served over four-course sets (B1,800 per person), which rotate every month and come in three options: meat and poultry (dubbed Fire), seafood (Water) and vegetarian (Earth). Though the beautifully-plated dishes look down-the-line Western, the taste is, for the most part, Asian. Highlight dishes on the current menu include the beef salad that sees four cubes of well-cooked premium local beef tenderloin served with nam jim jaew sauce and confit quail egg, while more fusion tastes make their appearance in the Eastern European borscht soup made with beetroot and red cabbage and chicken roulade (sous-vide chicken rolls) served on organic black rice risotto. Funkier items include the deconstructed desserts like cheesecake in the form of mango puree, passion fruit sauce, cream cheese foam, solidified brown butter and Belgian biscuit.

The drinks: A space like Mana deserves something fancier than a bottle of beer. A team of Diageo World Class contestants has created the cocktail list. Recommended drinks include the Golden Dragon (Johnnie Walker Gold Label Reserve, passion fruit puree, basil leaves, lemon juice and syrup, B390) and The Striding Collins (Johnnie Walker Gold Label Reserve, lemon juice and elderflower syrup topped with ginger ale and Peychaud’s bitters, B390). Tequila is also trending right now, so have a taste of their Enter the Dragon (B350), which uses Don Julio mixed with blackcurrant liqueur and lime topped with ginger ale. Why you should care: Despite the nightclub vibes, Chi Ultralounge does turn out impressive food—and the restaurant wing is a lot more peaceful. Bulgogi Brothers HHHH Korean. 8/F, Emquartier, Sukhumvit Rd., 098-2460888. Open daily 10am-10pm. No corkage charge. B-BBB F

Though you can find most of Bangkok’s best Korean restaurants outside malls, this spot from a Gangnam-hailing restaurant chain is one exception. Located on the eighth floor of Emquartier’s Helix zone, Bulgogi Brothers steps away from the traditional Korean vibe to offer a contemporary dining room highlighted by floor-to-ceiling windows overlooking Benjasiri Park. It’s also the brand’s first attempt to go premium, falling under the new name Bulgogi Brothers Gold. Despite the upscale rebrand, we only found small differences between this menu and those of Bulgogi Brothers restaurants abroad. Dishes like abalone chicken porridge (B550), ginseng chicken with abalone soup (B600) and spicy lobster seafood hot pot (B2,300) account for the more upscale direction, but elsewhere it’s business as usual with quite delicious

Rasayana Raw Food Cafe HHHH Vegetarian. 57 Sukhumvit Soi 39, 02-662-4803. Open daily 9am-9pm. No corkage allowed. BB F

In keeping with Rasayana Retreat wellness center’s treatments, this cafe in front of the spa serves raw-vegan food. Not only are the dishes made using no meat, wheat, dairy products or processed food, but they’re also strictly cooked at temperatures under 42 degrees Celsius. The restaurant even grows its own wheatgrass, which it serves in cocktails (B120) alongside regular juices (B100). All in all, it’s a haven for raw vegan eaters and the health conscious among us, going well beyond salads (though you will find plenty of those, priced between B160180) to play with dishes like vegetable sushi (B160), spaghetti nutballs (B190), sandwiches and “burgers” (B170-190). But the restaurant has its problems. On the Ratings

bulgogi (marinated grilled meat) barbecue. The signature Bulgogi Brothers Special offers two different meat options: Thai ribeye (B465) and US beef (B850). The first proves that they do a good job at sourcing quality local meat. While the patties themselves are not that flavorsome, the beef is plenty tender and a good match for their tangy ssamjang (a Korean-style spicy paste of soybean and fermented red chili). The “Stew Brothers” soup (B540) is also wonderful, combining both a well-rounded, sour kimchi pork stew and a cleansing soy stew to wash away any greasiness from the grilled dishes. The tofu cubes are a nice additional texture, too—more like springy fish balls than the usual soft soy tofu. Also, don’t miss the traditional-style Bonguri kimchi. Made from two-day-fermented mushroom, pear and apple wrapped in cabbage, it offers a sweeter alternative to more modern kimchi recipes. But the kitchen does have some flaws. The King’s Bibimbab (B350), for example, has lovely flavor and a good assortment of ingredients, but the rock bowl isn’t hot enough to create the all-important crispy rice underneath. The seafood pajeon (Korean pancake, B350) also wasn’t served hot enough on our last visit, while the pieces of seafood were also pretty tiny. Does Bulgogi Brothers serve the best versions of its dishes in Bangkok? No. But they’re superior to most, making it a good choice when you’re in the area.

plus side, everything packs a fresh, wholesome feeling—especially the summer tomato soup (B150), which is full-bodied yet light, made with tomato, avocado, lime and basil. The sunflowerflaxseed crust Hawaiian pizza (B170) is also a fine interpretation of the lesshealthy dish it imitates, with a nutty, slightly salty, flavor-packed crust topped with fresh pineapple chunks, tomatoes, marinated veggies and macadamia cream. But that’s not the case with the Thai pasta (B170), in which the combination of tamarind-ginger sauce, zucchini, celery and coconut-meat pasta tastes nothing like the name implies it might. Some of their dairy-free cakes and pies also miss the mark. The carrot cake (B140) has an icy texture in the middle and fails to deliver beyond the taste of frozen raw carrot. Leave it and go for the strawberry cream mousse pie (B140), instead—the macadamia mousse and almond crust really hit the spot. We’re quite surprised at how poorly informed the service staff are too—they’re perfectly friendly and swift, but don’t seem that knowledgeable about what’s in the dishes they’re serving. Though not everything at Rasayana is perfect, it still makes for a strong spot to refuel on a single healthy dish when you need a break from the meat and grease.
