This Spanish brunch is worth waiting one month for Uno Mas is that rarest of beasts: a hotel restaurant which gets foodies excited. Bangkok is losing another live music venue After three years, Sukhumvit Soi 22’s The Overground is calling it a day with two final parties this weekend (Jul 8-9). We’ll also fondly remember Popscene’s sold-out Blue Hawaii concert when it felt like the floor was going to give way. Don Mueang has finally stepped up its dining game Frequent flyers no longer have to live with only Fuji or McDonald’s. The airport’s Magic Garden food court has the kind of places which can make people queue for hours— think BonChon and Garrett popcorn. Add to that some cheap street-food staples and Don Mueang no longer seems like the headache in airport form that it once was.

But we never thought they’d be replaced by this: cocktails that taste just as good but cost half the price. Go try the Manhattan Latino at UNCLE (B195) or the Tommy’s Margarita at Touche Hombre (B275) and tell us otherwise.

Early last month, Pailin “Milk” Sajjanit, 28, the bartender at Vesper and Il Fumo, was named Southeast Asia Bartender of the Year 2016 at the Diageo World Class awards in Bali. Next up, she’ll represent the region at the global final in Miami this September. BK chatted to Milk about her bartending journey so far. W h a t i n s p i re d y o u t o b e a bartender? I studied hospitality management at Bangkok University, where there is a restaurant lab that allowed us to learn the ropes. I knew I couldn’t cook, but my friends suggested I try managing the bar. That’s where I started picking up the basics of bartending. Before I graduated, I undertook more training at Witoon’s Cocktail & Wine School at Fortune Town. Then I got a job at Sofitel So Bangkok before moving to W Bangkok and eventually Vesper, because I really liked their concept of reintroducing forgotten classic cocktails. The journey has taken around four years, but time has flown. What have you learned along the way? The world of cocktails is fascinating. It’s like food or wine. People will go out of their way to visit Michelin-starred restaurants or try the best wines. It’s their passion. Cocktails are becoming this way, too. Bangkok has come a long way. What’s your favorite spirit? Right now I really love single malt. It’s taken years to get to know my
palate, but I really love a smokey single malt as I also love to smoke cigars. Oban, Talisker, Lagavulin—I will choose a different one to match the mood. How did you prepare for the Diageo World Class competition in Bali? After we got the brief, we had three weeks to prepare everything. The first challenge was to create cocktails made from local ingredients that best represent your country. I decided to create the “Thai Thai” cocktail, which I made from khao mak (sweet jasmine rice) infused with sweet olive flowers and mixed with coconut oil, kaffir lime syrup, grapefruit bitters and Ketel One Vodka. It won the first challenge. The second brief was to create a new “classic twist.” I took the classic winter cocktail hot toddy and made a cold version you can enjoy anytime. The third brief was a speed challenge, in which we had to create four cocktails in eight minutes. After they announced I was Southeast Asia Bartender of the Year, I was completely shocked. I just wanted to do my best to help the Thailand team win. It was totally unexpected.
Apart from Miami, what’s next for you? I plan to go to London to explore the world of cocktails there. The bar scene there is really creative with everyone driven to create new trends. I also want to explore Australia, Amsterdam and Prague, where I’ve seen a lot of cool bars on YouTube. How do you see the bar scene in Bangkok right now? Four years ago, we only had classic cocktails made in big martini glasses. Now we’re sort of going back to basics and we have lots of great bars opening up. I hope we can establish a culture of bar-hopping in Bangkok, which will help drinkers try a greater variety of drinks. I love that bartenders in the region are really helpful to each other and are driven to make our bars recognized globally on lists like World’s 50 Best Bars. Interview by Monruedee Januttipan

RESTAURANTS About Eatery Bangkok’s first attempt at a “natural” wine bar offers only bottles from organic and biodynamic producers, or ones who use trusted natural winemaking processes. There’s also plenty to eat with a cold-cuts counter and raw bar alongside tapas plates and more substantial dishes like chickpea soup, cucumber and zucchini salad with Greek yogurt sauce, house-made pasta and oven steamed sea bass with white wine. Not into wine? Go for one of the Italian craft beers.

Avra Run by Greek owners, and helmed by a Greek chef, this Santorini-evoking restaurant promises authentic Mediterranean flavors. The pita bread is some of the softest in town, and comes with delicious best friends tzatziki (yogurt dip), melitzanosalata (eggplant dip), fava (split peas dip) and taramas (cod roe dip). Mains span moussaka (layered minced beef with eggplant, potato and zucchini) and gyros kotopoulo (grilled chicken kebab with onion and tomato).

Bunker Fresh, simple, well-executed, original yet devoid of gimmicks, there's a reason why the food at Bunker has been more hotly anticipated than any other restaurant this year. Some of the menu's 16 dishes verge on tapas portions, but the flavors are anything but small: the wagyu beef tartar is spiked with daikon radish and radish sprouts; the cured foie gras torchon paired with candied cashew and chili mango; the smoky plate of fatty wagyu short rib falls from the bone in perfectly glazed, inch-thick slices. The Commons Good food takes center stage at Thonglor's loftlike, open-plan new community mall. Its ground floor spans vendors including Maison Jean Philippe (bread), Roots (coffee), Peppina (pizza), Meat & Bones (ribs), The Beer Cap (craft beer), Xiao Chi (Taiwanese buns) and Eastbound (Vietnamese). Il Fumo This grand old villa reborn as a cocktails and Italian grill restaurant boasts some of Europe's most prized meats, including Galician beef and

prosciutto and pork neck from the Ca' Lumaco Estate (between Modena and Bologna). On top of this, fresh seafood is also on the menu, cooked on big wood-fired ovens and then grilled to accompany pasta or risotto. Overall, there's a lightness of touch here that makes this much more than just an ordinary steak house. Despite the consultation of Eduard Bosch, a former chef de cuisine at one of history's most prestigious modern kitchens El Bulli in Spain, Islero does something far more traditional. Head chef Pedro Serrano dishes out authentic Spanish food like Iberico ham croquettes, grilled octopus tentacles served with beans in Castilian stew, baked fish fillet with potatoes and almonds and the highlight Josper- grilled, Segovianstyle suckling pig. There are still some nods to El Bulli's modernism, like olive spheres and deconstructed Spanish omelet served in the form of cream and espuma in a martini glass. Lady Brett (72 Courtyard) Punjab Grill The highlight of Thonglor's hip 72 Courtyard is this casual, European tavern-referencing barbecue specialist. Amid tiled walls, rich leather dining chairs and geometric lighting sculptures, the kitchen dishes dout hearty barbecue like ribeye steak and pink snapper alongside burgers, pastas and down-to-earth starters made for sharing. Meatlicious Gaggan Anand, culinary whiz behind this continent's best restaurant according to the voters of Asia's 50 Best, went down a totally different route with this steakhouse. Order up a pint of Vedette and tuck intosucculent meat cooked on wood-fired ovens. Here the name says it all with a wide menu ranging from premium Japanese beef to some funkier creations like the "foie grass breakfast"—foie gras, egg and cream baked like a creme brulee alongside brioche and cherry compote. 8 Ekkamai Soi 6, 091-698-6688. This Indian fine-dining chain has chosen Bangkok for its third destination outside of the motherland following Abu Dhabi and Singapore, where Punjab Grill even made it to the Top 10 in SG Magazine’s Top Tables 2015. Indian chef Bharath Bhat draws on his experience at five-star hotels and Michelin-star openings to present the likes of avocado papdi chaat, which tastes like an Indian version of guacamole served in flour roll cones, as well as classics such as kebabs like grilled tiger prawns, chicken tikka and lamb chops, all cooked in the tandoori oven. Rocket X 72 Courtyard The fourth branch of the chic Scandinavian brunch and coffee spot Rocket comes in the form of a quick “grab and go” pit-stop at Thonglor's 72 Courtyard community mall. Suhring The debut restaurant of twin German chefs Thomas and Mathias Suhring follows their departure from Mezzaluna, the ultra-fine-dining restaurant at LeBua hotel. It's been a hot topic among Bangkok’s foodie community. Partly because they’ve opened in partnership with Gaggan Anand—owner of the top restaurant in Asia's 50 Best two years in a row—and partly because the twins have always cooked superb food. BARS Beam Thonglor's showpiece nightclub is truly world class, featuring Asia’s first "body kinetic" dance floor that shakes vibrations into dancers' feet. The style is minimal, raw, casual and loud. This latest opening by the duo behind Escapade is a fun, compact space with a bit of a construction site feel—stickered and sprayed zinc roof sheets and bare, cracked concrete. Here, the focus is on the well-stocked bar, with a short list of rotating cocktails and customized drinks as highlights. Inspired by the food you can find in traditional larb restaurants, chef Van plays with Thai dishes that draw on his Isaan roots and countrywide research.

While working as head chef at New York's Jewel Bako, Japan-native Masato Shimizu became the youngest chef in NYC ever to win a Michelin star at just 29. Now he's moved to Bangkok and opened this omakase (chef’s selections) sushi restaurant serving just 20 diners a night. Having trained from the age of 18-25 in Tokyo's toughest kitchens, his creations are superb. Reservations essential long in advance.

The latest attraction to hit Chanthaburi province is this new resort themed after a Canadian fisherman’s village. Sitting on Khung Wiman Beach, Peggy’s Cove Resort (039-460345, www.peggyscoveresort.com) features brightly painted weatherboard cottages, rickety driftwood bridges and a lobby styled after the chapel at the real Peggy’s Cove in Nova Scotia. Moon Meals Phuket Town’s latest Southern food cafe comes from Napapatch Chetsadawal, the niece of the owner of the legendary Raya Restaurant. Chom Chan (076-605-954, www.fb.com/ChomchanPhuket) follows on the success of Napapatch’s other shop-house restaurant, One Chan Cafe n' Restaurant, this time transforming a 60-year-old home and garden filled with Sino-Portuguese touches into an airy contemporary restaurant. The menu features Phuket food like crabmeat yellow curry with rice vermicelli (B350/B450) and prawns in tamarind sauce (B280), as well as new dishes only found here like somtam Phuket (papaya salad with shrimp paste, B150) and moo kong klua (deep-fried salted pork belly, B150). After a year-long delay, Thai VietJet Air (www.vietjetair.com), the Thai offshoot of the low-cost airline from Vietnam, has finally begun flights from Bangkok’s Suvarnabhumi Airport to Hanoi (one flight a day) and Ho Chi Minh (two flights a day). Promo fares on their website go as low as B1,000 for the ticket, but when we tried to book flights to Hanoi, with additional fees the round-trip ticket comes out at B4,805 (not including luggage). That makes it slightly more expensive than Thai low-cost carriers covering the same route like Nok Air (www.nokair.com) at B4,268 (free 15kg luggage) and AirAsia (www.airasia.com) at B4,224 (without luggage).
Situated on the bank of Garonne River in Bordeaux, the staggeringly ambitious La Cite du Vin (www.laciteduvin.com) wine museum is finally open. 2 x 350g Rangers Valley ribeye steaks Freshly crushed black peppercorns Sea salt The zest and juice of 2 lemons 4 garlic cloves, skin on and crushed 2 long sprigs of fresh rosemary 40g butter 30ml olive oil A few sprigs of flat leaf parsley, chopped roughly
How to cook
1. Take the steaks out of the chiller an hour beforehand (this allows even cooking and the fibers to relax) and rub them generously with sea salt and crushed black pepper. 2. Also rub with the garlic and rosemary. Let the steaks sit for an hour. 3. Take a heavy based pan, preferably cast iron, and heat over a high flame till the metal begins to turn blue. 4. Remove the garlic and rosemary from the steaks and rub with olive oil. 5. Place in the pan carefully and, after 1 minute, flip the steaks. 6. Flip every 30 seconds for 2 minutes. 7. Slightly reduce heat. Add butter, garlic and rosemary. 8. Spoon the frothing butter over the steaks. Continue flipping the steaks for 3 more minutes. 9. Remove them from the pan and rest on a warm plate for 5-10 minutes. 10. Dress with the lemon and parsley and enjoy.

How to cook
1. Slice the salmon fillet into bite-sized pieces. 2. Mix Japanese rice with vinegar, mould it into a sushi base, place a piece of salmon on top. 3. Put the sushi in a pan and blowtorch the salmon till it is about 30-percent cooked on the surface. 4. Spread the saikyo miso on top of the salmon and burn it again. 5. Top with grilled foie gras, pickled salmon eggs and caviar. Bon appetit!

Meruto Sushi, the restaurant of self-trained chef-owner Kirati Butdeevong, started a bit over a year ago way out on Nuanchan Road and has now expanded to Sathorn. At any one time, the new place can accommodate only six diners, who get to watch the chef making sushi from the best possible seasonal ingredients, delivered every other day. His highlight creations include fresh oyster from Hiroshima served with house-cured ponzu, and grilled gindara (TK)on a bed of Japanese seaweed. Kind of Blue The latest bar at 72 Courtyard, Evil Man Blues, provides live music in an homage to American West Coast jazz bars. By Vasachol Quadri
The buzz: 72 Courtyard is right now the hottest nightlife spot on Thonglor and this ground-floor bar is its latest addition. Unlike imports Toro and Touche Hombre, Evil Man Blues is an all-new creation from the team behind the mall. Themed after a 1950s American diner, purple and blue neon lights illuminate a well-polished space manned by new-intown bartender Liam Baer, who serves a list of creative twists on classic cocktails. The decor: Imagine the layout of an American diner, where you can sit in a booth or prop up the bar on one of the stools, except it’s all a very photogenic mix of wood, marble, brass and neon. The end result is a rather glitzy homage to the American West Coast jazz bars of the ‘50s and ‘60s. Charge your phone before you visit—this is Instagram gold. The music: Funk, old-school hip-hop and r ‘n’ b are on shuffle during normal hours, while there’s live jazz and blues on Wed-Sat from the likes of Dan Philips Bangkok Edge Quartet. The food: The American-Korean chef rolls out a short list of diner essentials in slimmed-down, drink-friendly portions. Snacks include the Mac ‘n’ Cheese Balls, made with jumbo crabmeat and Cajun spice and served with cheese dip (B220), and the hot wings served with ranch sauce (B220). Mains feature the Evil Man Burger (topped with truffle mayo,
roasted onion and mushroom, cheddar, bacon, lettuce and tomato, B360) and the oh-so-good Royale Grilled Cheese (stuffed with roasted beef, gruyere, caramelized onions and beer broth, B280). They serve ice cream from Guss Damn Good (olive oil, bourbon and yuzu sorbets, B150), too. The drinks: Bartender Baer is also behind the drinks lists at 72 Courtyard’s Beam, Toro and Little Bao. Here, his creative offerings are made from carefeully selected top-shelf bottles and house-made spirits. For something sweet and sour try the Self(ie)-Adored (B440), made with Bison Grass flavored vodka, elderflower liqueur, raspberry and egg white garnish, that’s completed with your very own polaroid shot. We really enjoy his savory version of the negroni, named Salad Days (B390), in which he “washes”—that is, he sous-vides—his gin with cherry tomatoes then mixes it with French aperitif liqueur (replacing Campari’s bitterness), bianco vermouth and pink peppercorn tincture topped with smoked olive oil. Also check the board for the monthly slushie special. On our visit, we had the Kentucky Buck , made of bourbon, strawberry, house-made lemon cordial and ginger, which packed a refreshing punch. Ekkamai’s new whiskey bar has Suchada “Fahbeer” Sopajaree (one of 2016’s 12 finalists at Diageo World Class Thailand Competition and previously behind Hugo Eatery & Bar) manning the bar. The Great Grey is the strongest choice out of her first set of three signature drinks. She uses Johnnie Walker Black Label as the base spirit, mixed with Cynar artichoke liqueur, port cherry and Patron XO Cafe. It’s a spirit-forward creation (think negroni) that comes with a nice coffee kick for aftertaste.
We’re obsessed with this new bar’s (see above) coffee drink. Served in a coupe glass with a cold brew ice cube, Jet Lagged is a spirit-forward cocktail made with bourbon, coffee liqueur, sweet vermouth, black walnut bitters and Grand Marnier. It tastes as fancy as it sounds.
This is a great spot for gin enthusiasts. Martin Miller’s is the house pour, but the bar stocks another 50 -plus bottles. Each is carefully selected for each cocktail, as in this cocoa negroni, which is based on Colombian Gin that’s aged in rum barrels and carries a hint of vanilla. The negroni is made with sweet vermouth, white cacao syrup and cedar wood-infused Campari for a more smoky finish. It’s garnished with orange and vanilla stick.
Run by six leading bartenders from the Diageo World Class family, this theater-themed bar is undoubtedly one of the hottest new spots for craft cocktails. Here, you’ll find twists on vintage classics like the Manhattan and martini. This drink reminds us of Rob Roy (Scotch whiskey and sweet vermouth) but with the addition of Aperol and, of course, coffee. Stirred with ice and served on the rocks, the drink is garnished with orange and coffee beans.

Azul Latin American flavors that evoke the Cuban diaspora in Miami. The buzz: Veteran chef Kip Oxman (formerly of Hemingway’s and Monsoon) presents what’s called Nuevo Latino (new latin) at this Thonglor restaurant. The decor: Nestled in the Adelphi hotel on Sukhumvit Soi 49, the restaurant takes one side of the ground floor—a deep strip of a space which the new owners have decked out in reds, browns and flashy neon signage. A long bar takes pride of place, while outdoors offers some alfresco seating. The food: Nuevo Latino cuisine was born in Miami, where acclaimed Cuban-American chef Douglas Rodriguez ("the godfather of Nuevo Latino Cuisine") grew up and learned his culinary skills. In short, the cuisine borrows flavors from Cuba and other Spanish-speaking

countries. Oxman is on a mission to prove there’s more than tortillas to Latin American food. Cuban fare spans the nation’s wellloved sandwiches (B240) and meatballs (albondigas criolla, B160) to a Cuban take on seafood paella (B460). The chef also uses the adobo technique (marinating raw food in a stock made of paprika, oregano, salt, garlic and vinegar) for dishes like grilled half chicken (B340) and wagyu flank steak (B740), and serves the typically Latin mojo sauce. He’s also added his own take to several dishes like using crabmeat instead of red meat for the empanadas (B160) and duck instead of beef in the delicious ropa vieja stew (B220) served with poached egg on a grilled corn cake. Elsewhere in the menu, there are ceviche, croquetas, soup, salad and the chef’s signature hamburger (B380). Miami’s classic key lime tart (B180) is of course
available, along with churros (B140), tres leches (three milk cake, B180) and avocado panna cotta (B160). The drinks: The signature drinks list sees twists given to classic cocktails like Azul Colada (passion fruit, rum, dark rum and cocoa liqueur) and Mojito Lychee (lychee, rum, mint, lime, syrup and lychee liqueur, both B240). Why you should care: Chef Oxman not only introduces Bangkok to a new cuisine, but he’s also doing a great job of it—there are definitely some flavors happening in Azul’s food which are new to Bangkok and well worth exploring. For years Miyatake has had an upstanding reputation as a solid after-work salaryman’s spot. Its single-counter space inside the oldschool Tokyu Supermarket at MBK shopping mall has been praised as one of the most-affordable spots for fresh sushi inside a mall. But time hasn’t been kind to Miyatake. While we don’t expect fireworks from anything at MBK, it’s a shock to see how disappointing things have gotten here. Not only is the menu an unappealing mess of pixelated food images, but it lists many dishes the restaurant no longer serves. Fans of fatty otoro tuna flesh, the servers tell us, now need to make do with cyu-

Dating back to the ‘80s, Sorrento is one of the city’s oldest names for Italian food long before everyone became an expert on authenticity. Saving it from closure, Diageo World Class 2015 winner Pongpak “Ton” Sudthipongse and his partners decided to take over the restaurant earlier this year, and their efforts don’t fall short. Visit day or night and you’ll find the place buzzing with customers. The new photogenic, wow-evoking dishes don’t just appeal on Instagram; they taste great too. The pasta cacio e pepe (cheese and pepper pasta, B360-460), for instance, is made in the well of a large ParmigianoReggiano wheel that imbues every bite with rich, decadent taste, then flamed with cognac for even more flavor. The pizza Salute (B390), too, features gushing cheese between its two perfectly crispy crusts. Fancy
toro (medium fatty tuna, B350 for sushi/B1,100 for sashimi) instead. On our last visit, the Matsuwa Set (B690), four pieces of red tuna sushi and two cyu-toro sushi, had clearly not been sliced well, the result being chewy pieces of fish sinew in every bite. We found the same problem with the tetsuka don (red meat tuna in shoyu sauce, B380), which is also let down by mushy, dull rice. There’s similarly little to write home about regarding the grilled eel dragon roll (B350), in which the onedimensional eel is covered in a tedious, sweet yaki sauce. Surprisingly, the only real highpoint at Miyatake comes from their teppan (grill) station, which manages to serve a tender, flavorful sirloin steak (B500/200g) complemented by a shoyu and mashed peppers dipping sauce instead of the usual mayonnaise mixed with spring onions. But that’s not enough to make Miyatake worth recommending. Thanks to poorquality sushi coupled with inattentive service, MBK’s best kept secret is one we’ll happily take to the grave.
dishes aside, the kitchen team (led by the original Sorrento crew) can roll out reliable staples as well. The burrata salad (B340) tastes impressively fresh, from the chilled burrata and sliced tomatoes to the black olives, pesto and raspberry balsamic dressing. The fettuccine with wild boar ragu (B320) is also rich and spicy, the house-made pasta blending well with the tender stewed meat. The osso buco alla Milanese (B690) sees a thick crosscut veal shank braised until the meat falls from the bone, and though the accompanying saffron risotto may be overcooked, the aroma of saffron and lemon blended with melted cheese make it a decadent treat. We also like the pumpkin cream soup (B190) for its warming, balanced taste, even though the promised hints of truffle oil seem all but absent. The only real let-down is our tiramisu (B165), a cut-out block so smothered in thick, bland cream that one can hardly taste the ladyfingers. Never mind. Washed down with the drinks of the award-winning bartender-owner it’s an easy misstep to forgive. With its relaxing, family-friendly atmosphere and reliable food, this is an unpretentious Italian restaurant which we can happily recommend.

With the renovation of the new Siam Discovery comes a brand new contemporary art gallery, Galerie Adler Bangkok. Set on the ground floor of the mall, the space is designed to pay homage to the style of Dutch painter Piet Mondrian and his signature pattern of intertwining white and colored grids which spread across the floor and walls of the gallery. The art itself is displayed across a series of rooms connected by tunnels in a minimalistic style. In collaboration with its sister branch in Paris, the gallery works with a mission to exhibit paintings, sculptures and photography from both local and international artists. The country’s most romantic music festival returns in a brand new location, promising quality live music while camping out under the stars. This year’s event, under the theme “Singing in the Rain,” invites festival-goers to throw on their raincoats and rainboots to enjoy music from top pop artists including 25Hours, Two, Stamp, Rose Sirintip, Pop Pongkul, Klear, Seasonfive and Atom.

OVERCOAT MUSIC FESTIVAL
Back for its 7th year, one of the country's biggest winter outdoor music festivals promises live romantic pop music amid beautiful mountain scenery. Temperatures usually hover around 13-15 degrees Celsius, making it the perfect destination for snuggling up in winter coats and catching some live music. Although the lineup has yet to be announced, previous years have seen big names like Singto Numchok, Lipta, 25 Hours, Ben Chalatit and Tor Saksit take the stage.
