But working alongside her at Vesper until now has been Oil Wareewan, another dab-hand at pouring out the kind of pure booze drinks that go down as easily as water. Now though, Oil’s jumped ship and will be moving over to Sukhumvit Soi 47’s Freebird, whose cocktail menu has been given the Liam Baer treatment—man responsible for Evil Man Blues’s heady concoctions. INTERVIEW Back in June, brewer brothers Nattachai “Ob,” 36, and Teerapat “Art” Ungsriwong, 34, won best beer at the Beer Camp: Fightclub competition for their Devanom IPA. They are also the guys behind Thailand’s first hops farm, Deva Farm & Cafe, which opens to the public this Aug 20 (sorry, tickets are sold out). As they wait for their next batch of hop flowers to be ready, the pair talk to BK about their journey. What did you do before you started Devanom? Ob: We first worked together to open a mobile phone software company called Crie. My brother was the designer while I was the software engineer. We sold it to a giant Thai telecom company but continued to run it for a while before deciding to close it last year. We just felt the market had pretty much reached its saturation point. How did you get into brewing? Art: By the time we decided to close the company, the world of brewing had already drawn us in. We regularly visited Chit Beer, founded by Wichit Saiklao, at Pak Kret and decided to become his students when he opened his first craft beer class in 2014. Ob: We slowly began experimenting with brewing before finally releasing our first craft beer under the Devanom brand last June. What triggered you to grow hops here? Art: We were just curious. Hops get their character from where they’re grown, so we knew that hops grown in Thailand would be unique. It has always been impos-
sible to make beer from fresh hops in Thailand as we need to use dry hops from abroad imported in pellets. Now, Thai brewers are keen to make fresh or wet-hop beer, which is brewed using fresh hop flowers. This farm allows us to do so. It adds a fresh taste to the beer. I first tried to grow hops in our bedroom by running the air-conditioning 24/7 before deciding last year to test growing them outside. It worked! That’s when we decided to expand to a farm and now have plans to sell hops in the future. So when will you release your first beer made using fresh hops? Ob: Not any time soon. We do currently brew it but only for ourselves, not to sell. We want to make sure that it’s made with high-quality hops. We’re still in the experimental period. How was it moving from the digital world to agriculture? Ob: We were already growing hydroponic vegetables so it wasn’t a new thing for us. Actually, we use a lot of technology and science to grow our hops here, like watering sensor systems and greenhouse technology which feeds good bugs
that work to expel bad bugs organically. What do you see as the distinct characteristics of Thai craft beer? Ob: In the US or Europe, they brew beer at a temperate climate. We need to make beer that matches Thailand’s natural temperature of 30 -34 degrees Celsius. We also need to use our native microbes and yeast derived from local plants to deliver genuinely Thai-style craft beer—not just add Thai herbs like krapao, lemongrass or Thai fruit and call it “Thai-style beer.” These ingredients are all being used in the West as well. Our focus now is on delivering the best taste based on traditional beer recipes. Once we’ve mastered that, we’ll start experimenting more. Have you ever had trouble with Thailand’s laws about brewing beer? Ob: Never. Maybe the excise department understands our situation. We’re now in the process of making Thailand’s first craft brewery, led by Wichit of Chit Beer. Hopefully we will see it open later this year. Interview by Monruedee Jansuttipan

THE AFTERMATH On the anniversary of the Erawan bombing (Aug 17), we meet with the people who work and worship at the shrine to see how their lives have been affected one year later. By Nicha Patradhilok and Monruedee Jansuttipan

Has the bombing affected your profession? I was dancing when the bomb went off but none of the dancers were injured because we were a bit further away from the blast. Some of us suffered from ruptured eardrums and bone pain from the impact but there were no severe injuries.
caretaker How has the bomb affected your life? My vocal cords are permanently damaged so speaking is a bit painful, and I can no longer hear properly due to ear damage. My legs still hurt and I can’t move as well as I used to. I was so afraid that I would never be able to work again but the Erawan hotel's Than Tao Mahaprom foundation, which distributes funds to hospitals all over Thailand, kindly let me stay here and continue my work despite my physical limitations, which I am very grateful for.
How long have you been working here? I came from Roi Et and started working here in 1996. When the bomb went off, I was standing about four meters away from the blast and severely injured my neck and my legs. I didn’t break any bones luckily. I was hospitalized for a month and stayed at home for two more months.
Did you feel safe coming back here? Honestly, I didn’t feel scared at all. The thing that worried me most was losing my job and not being able to work again. Personally I don’t think that this kind of incident will happen again. And if it does, dying doesn’t scare me anymore. One of my co-workers passed away at that time but I survived despite being so close to the bomb. It should have been my time then but I made it through. This place is like a home to me and I couldn’t imagine working elsewhere.

How do you feel about the security here now? I was quite anxious and frightened about coming back to work but I needed the money for my education. I have been working here for four years. They’ve now put more security cameras in the area and given the guards metal detectors but I’m still worried because a lot of people come and go every day. I think there could still be more security presence here. Still, I believe that the holiness of the shrine will protect us from dangers based on the fact that none of the dancers were hurt at that time.

AKE CHIMKUM, 34 motorcycle taxi driver Where were you when the bomb went off? I was near the shrine about five minutes before the bomb went off. Luckily I had reached the other side of the road at the time of the blast so I was not hurt. What was your feeling at that moment? I was shocked and didn’t know what to do for a while, then I called my family. They told me to go home but I decided that I needed to help the injured people because I once took a first aid course. As I was crossing the road to the shrine, it was so slippery. I could only help give CPR to people who were outside the fenced area, then the rescue team arrived shortly after that. After I came home, I couldn’t sleep that night as I had never seen such a tragic accident before. I couldn’t cope with that. Has the bombing affected your income? I used to make about B600 a day but I barely made B50 after the bombing because people were avoiding the area. After three months, I decided to change my job and became a

I used to feel a bit concerned coming back here, but I think it is better now. Police and soldiers make people feel safer. However I think you can only half-trust security in Bangkok as we hear about things like broken CCTV cameras all the time.

As for me, I just moved from inside the hotel two weeks ago to work out here. The hotel has security guards here both day and night. I’m responsible for the day shift and have to count the number of visitors each day and look out for suspicious people.
Have you seen the number of visitors change since the bomb? The number of people dropped a bit after the bomb, but it began to increase after just one month. Visitors still come to pay respect to the shrine every day and most of them are Chinese tourists despite the recent car accident.

cover story Has the bombing affected your tour group numbers? Yes, for a few weeks after the bomb it did. But the government was very quick to reassure tourists from Southeast Asian countries, who are my main clients. Overall, I think the bomb has had very little impact on tourism. Many foreigners still want to come to Thailand and this shrine is still one of the highlights of Bangkok.
How were you personally affected by the bomb? I was scared at first. Days after we came back to sell we still saw people’s flesh on the footpath. But today we feel safe. There are new security protocols and people here keep an eye out for anything unusual. How has the bomb affected your business? The number of visitors has not declined tremendously. Lots of foreigners still come here. If tourists were to stop coming here then that would be very bad because Thais don’t usually visit this shrine. Our main concern now is the threat of eviction from the BMA. I don’t know where we would go to sell if that happened. I have been working here for about 30 years. This is my second home.

Do you think anything in the situation was handled poorly? Thai media should be quicker to distribute correct information. There were a lot of misleading reports that spread on social media very quickly. The international press also needs to check that it is reporting the correct information.

I was making less than B100 profit a day straight after the bomb, so me and other vendors decided to set our stalls up outside the shrine instead in order to make the area seem more bustling and to prove to people this is a safe place to visit. Customers soon began coming back. How did you personally feel following the bomb? I felt sorry for the loss of so many lives. At first, I was afraid to come back here but I still had to make money. However, I think the area is now perfectly safe. There are always police and military officers standing by.

Police officers from Lumphini, Phra Khanong and Klongton Police Station, together with soldiers, are relayed here 24/7. There needs to always be officers here on the lookout for suspicious characters. We also prohibit people from leaving their belongings unattended inside the shrine. Do you feel there is enough security in the area? I don’t think that people have to be worried about safety here. Everything is back to normal. We always have officers staying here and watching the place closely through security cameras.

What is your opinion about the security here? I was comfortable coming here during the day but might have second thoughts about coming at night. I don’t see that the security is any stricter now than before the bomb.

Into the Air Hua Hin’s latest restaurant taps into the resort town’s aviation heritage (it was the first place in Thailand to train commercial pilots, don’t you know?). Air Space (063-916-0999, www. fb.com/airspacehuahin) in the Khao Takiab area features a stunning interior dominated by a full-scale model of the world’s first ever aircraft, the 1903 Wright Flyer, which hangs from the ceiling of the PIA-designed, barn-like space. Food is an all-Thai affair courtesy of one of our favorite chefs, Bangkok Bold’s Supanut “Ann” Kanarak (previously head of Four Season's Spice Market). Her signature treats include miang som o (pomelo salad on fried wild betel leaves, B250) along with seven aviation-themed cocktails like the Concorde, Captain, Black Box and 1903 Wright Flyer Gold Age, all are the same price at B250. Island Sounds It seems Wonderfruit has company. Early next year (Jan 7-8, 2017), Koh Samui's Big Buddha Beach will welcome a new two-day arts and music event called Paradise Island Festival. Organized by Soundcrash, the UK-based party organizers known for events such as Croatia's Soundwave Festival, the event promises a lineup of both international and local artists and it's already announced some heavy-hitters in the form of De La Soul, LTJ Bukem, Goldie, Maribou State, Anchorsong and Mad Professor with more to come. Like so many things the Japanese put their mind to—whiskey, cars— the country’s mechanical timepieces have an incredible reputation, and the Grand Seiko GMT has risen as Japan’s most iconic model. It’s a classic-looking thing with a flawlessly finished dial and impeccable movement housed in a case that sticks to convention.
The archetypal first-time expensive watch is also one of the smartest buys you can make. Prices for used models are all over the place owing to the huge number of model derivations, but generally a new model won’t lose too much of its value should time come to sell and you’ve kept in in good condition. Along with Rolex’s Daytona, the Speedmaster is like “the” chronograph watch. Early models date back to 1957, and the timepieces which Omega is putting out now hark back strongly to those original watches' styling. There are a hell of a lot of these watches out there—with early models way, way more highly prized— meaning new Speedmasters don’t quite carry the same kudos as their vintage counterparts. Little Bao Hong Kong's super-popular bao burger specialist arrives on Thonglor. The buzz: The 20-seater Little Bao in Hong Kong is always packed out. And now it's branched out with a considerably bigger space in Bangkok. The decor: Tucked on the ground floor of Thonglor’s 72 Courtyard dining and drinking complex, the place is easy to spot thanks to neon signage—much like other outlets in the building—in the form of Little Bao’s smiling baby logo. Inside, it’s a Hong Kong-style diner meets Wes Anderson movie palette of green and pink, with some retro touches in the upright wooden seats and metal bar stools. The food: Drawing on her American upbringing, chef May Chow offers a playful, fast food-inspired take on traditional Chinese fare. The star of the place—bao buns—are treated

like burgers, split in half, buttered and griddled, before being stuffed with one of the four filling options, all brought from the Hong Kong branch’s menu: pork belly, crispy Sichuan chicken, fish tempura and shiitake tempeh (B240 each). On top of that, the compact placemat menu is all about sharing appetizers, categorized into hot and cold dishes. The smoked eggplant salad (with chili garlic miso, yogurt, pine nuts and shiso, B220) is derived from a classic Chinese stir-fried eggplant recipe featuring garlic and bean paste, while her take on the orange chicken (B220) features fried chicken tossed with salted egg yolk sauce, in addition to orange zest. Also don’t miss the ice-cream bao (B120), which feature Guss Damn Good’s creamy flavors sandwiched between golden fried buns.
The drinks: As with the food, the drinks here look at Chinese ingredients from a Western perspective. That results in things like Chrys’ Lemonade (Cana Brava rum, chrysanthemum, honey and lemon, B340) and Snake Master (snake wine, Aylesbury vodka, agave syrup, lime, B360). U n l i ke i t s n e i g h b o r, t h e co o l , minimalist Ryoku by Boy Japanese salon, Sumibi Yakiniku Kura has little to entice people inside, other than a couple of barely noticeable signs showing off its prized Japanese beef. Enter and you’ll find the two-story restaurant a fairly sedate affair: plain dark gray walls, wooden tables with Japanese-style mat seats separated by a few partitions. The menu goes beyond yakiniku to a variety of Japanese and Korean dishes, but the u n d o u bte d h i g h l i g h t s a re t h e premium cuts of beef that range from atsugiri jyo rosu (thickly sliced wagyu loin, B1,280) to tokujo ribu rosu (thickly sliced rib loin, B1,380). For a solid selection, we recommend the wagyu mori set (B1,580), which comes with three types of meat (the two mentioned above, and tokujo karubi [wagyu spare rib]) for you to grill on the charcoal stove at your
table. The juicy meat is worth every baht, especially the wagyu loin with its delicious, guilty-pleasure marbling. Their pork choices are also awesome, like the umami-tasting buta kata rosu (pork shoulder with salted rice malt, B249), whose crunchy rice mixes mildly sweet notes with salt and sesame oil. The kitchen’s raw dishes are just as enjoyable, like the beef liver sashimi, which is surprisingly mild and goes perfectly with the salted sesame oil dipping sauce. Even better is the oxtail soup (B279) whose dense broth and melt-in-yourmouth meat are a heavenly combination. The beef bibimbap on a hot stone pot (B269) tastes even better than at many dedicated Korean restaurants thanks to its flavorful sauce and crunchy bottom layer of rice. Wash down all the meatiness with their complimentary passion fruit ice cream, which is superrefreshing. While there’s little to fault about the food, we do have some issues with Sumibi Yakiniku Kura’s layout, which sees tables squeezed closely together, especially at the entrance and on the second floor. Combine this with the below-average ventilation and you can expect to walk out with pretty smelly hair and clothes. However, this doesn’t seem to perturb the Japanese families and office workers who crowd out the place night after night. If you love a good meal of grilled meat, this is a small price to pay.

This compact restaurant in the Old Town has been around for over two decades, serving home-style Vietnamese food that draws on recipes from the owner’s Hanoihailing grandmother. Revamped in 2015, the shop-house space now looks contemporary—crisp white walls, teal accents, artworks hanging from the wall—yet it remains just as homey as it has always been. on the inside, and comes packed with well-seasoned minced pork and shrimp. The signature Grandma spring rolls (B150) are another hit: delightfully crunchy, stuffed with flavorful stir-fried glass noodles and pork . Many of the Vietnamese staples satisfy, whether it’s the mild yet flavorful pho (with pork, B75), steamed fried-pork wontons (B95) or nem nuong (Vietnamese pork ball wraps, B160), which really benefits from the fresh veggies and yummy peanut sauce. The menu also offers a playful dish it calls nem nuong fried rice (B110), which features fried rice with pork balls, nem nuong sauce and condiments like chili and cucumber served sizzling in a hot bowl a little like Korea’s bibimbap. There are a few missteps, like the yum pla yuan (Vietnamese spicy fish salad, B100), which tastes like little more than reheated CP dory fish with seafood sauce, and the fresh Hanoi noodle rolls (summer rolls with seasoned minced pork, B80), which are rather more noodles than filling. In general though, combining comforting flavors with reasonable pricing , Le M ai Anh is a good everyday option for reliable Vietnamese flavors.

The 57-year-old performer will take the stage on Oct 18 at Moonstar Studio (Ladprao Soi 80) as part of his international tour around the US, Asia and Australia. Other Asian destinations include Singapore, China, Indonesia and Japan. As lead singer of The Smiths, the popular English rock band known for '80s hits like "How Soon is Now?" and "Heaven Knows I'm Miserable Now," Morrissey found global fame for his deadpan delivery and lyrics dripping with dry wit and political themes.
