Siam Paragon has a whole new dining zone worth getting excited about The mall’s innermost north zone has reopened after a huge renovation with a seemingly endless list of cafes and restaurants. Some are familiar names like Mugendai (now as a steakhouse, though), La Creperie, Shio, Brix, Holy Moly and Veganerie, but there’s also a ton of all-new players like Milch, Gokoku and Homsuwan. Clinton Street joins later this month too. Yum! The Pattaya-Hua Hin ferry may not be happening after all Originally set to launch on Jan 1, the ferry claiming to cut travel between the two coastal towns from five hours to less than two has hit a real snag. Pattaya council members say the city’s Bali Hai Pier already needs millions of baht of repairs— and adding more boats and passengers will only make it worse. We should hear a final decision on the ferry’s future any day now. A Thai ad is one of the most viral videos of 2016 Back in January, 7-Eleven released a nine-minute ad titled “Teachers,” a heartbreaking true story about a school principal who fights to save a school after its future is threatened by property developers. The fact that it has nothing to do with 7-Eleven didn’t stop the video from getting nearly 800,000 shares, making it to no. 10 in video ad tech company Unruly’s top 20 viral videos of 2016. Last year, France stood up to World’s 50 Best Restaurants (the yearly list which tends not to favor French restaurants) with La Liste: 1,000 restaurants picked by a computer algorithm to be completely impartial. And this year it’s back with an equally confusing list of restaurants from Thailand that made the cut. Right up there with Le Normandie and Nahm is a place on Samui called Ocean 11 and somewhere else called Breeze. What is Breeze? A quick Google search reveals it could be a detergent, a spa, or a restaurant at Lebua State Tower.

Better late than never. Despite this year’s December being an out-of-town festival wilderness, news is quickly rolling in that Jan-Feb will have us more than covered in places to go exercise our inner hippie, starting this Jan 14 with Keep on the Grass. And this year they’re even loosening the rules: we still have to be quiet during the songs but can clap politely after.
By day, Pitipong Somboonpon, 29, works as an electrical engineer at the National Astronomical Research Institute of Thailand (NARIT) in Chiang Mai. But in his freetime, he’s an inventor who creates synthesizer machines from scratch as Piti Loves Our Instruments. His latest work, a simplified version of a synth designed for children, just exhibited at New Originals: Chiang Mai Design Week 2016. Here he discusses his work as well as how he plans to use those same skills to help Thai farmers. What drew you to the word of synthesizers? As a kid I loved to listen to music before I became a guitarist with friends during high school. I loved ‘90s Bakery Music bands and then a new generation of musicians like Slot Machine, Death of a Salesman and bands from the Smallroom label. I learned the importance of synthesizers and finally bought one, a MicroKorg, and started dreaming of making my own sounds. I researched about how to make a sound card first, before aiming to build a synthesizer while studying to be an electrical engineer at Naresuan University. But I was never successful. So when did you succeed? Things got clearer when I started working as an electrical engineer at NARIT in Chiang Mai. I had the chance to work with better technology while also developing electronic systems and writing new software to support them. Making a synthesizer from scratch was so new in Thailand. No one had done it before. Nobody understood what I was trying to do.

How was the feedback? Pretty mixed. People wanted more options from it so I decided to study with professors at Chiang Mai University to learn more advanced mathematical formulas. After that I released MBXone M2 in late 2015. Now I’m making new models, both higher in performance and less complicated, such as MBX Kids, the prototype just showed at Chiang Mai Design Week 2016. How do your synthesizers compare to others on the market? They have many more functions than other synthesizers in the same price range, because I use only one chip to process all the sounds. The chip I use is just like the one in smartphones.
Do you have much international business? Yes, people from the US and UK have placed orders. Most musicians play around with many synthesizers anyway, so they love to try something new. Thais aren’t as into this stuff, but we’ll still open a booth at electronic music events in Chiang Mai like Delicate Decibel (goo.gl/iKcLAH). The MBXone M2 sells for US$198 [B7,056]. What’s next for you? We’re using our knowledge about sound and light waves to create a color sorting machine for Thai rice farmers. As my family grows rice in Nakhon Pathom, we thought we could do something to help them. Normal color sorting machines are big and really expensive as they have to be imported. Only big rice mills can afford them. We had the idea of producing a cheaper, smaller version to help farmers refine their rice product. We have got the patent and will continue to develop it. I worked alone for nearly a year before I released the MBXone, my first synthesizer, in late 2014.

The Italian mixologist who used to be at W Bangkok, Michele Montauti, brought nightlife to Pan Road when he opened Mikys—a space which, though a bit too plain for a crazy night, pitches things just right for pre-drinks with friends. Most of the drinks are priced at B340, for which you get the likes of “Julie”—a heady mix of Broker’s gin, Mancino Bianco vermouth, Earl Grey tea, jasmine syrup, lime and egg white. Think this place is a restaurant? Think again. This Mexican bar and tapas joint really comes to life later (and stays open through till two in the morning) thanks to some of the best hip-hop played anywhere in town. Behind a set of industrial, steel-rimmed glass doors and a rich velvet curtain sits this sultry den of high-class cocktail cliches from Japanese bartender Hidekuyi Saito. Our top picks include “Sei”—a deliciously rich blend of Bacardi Ocho, umeshu (plum wine), cacao, port wine, molasses and matcha, with a side treat of housemade rum yokan (Japanese dessert jelly)—and "The Butter," which sees the classic Sazerac mix of absinthe, cognac and American whiskey infused with melted butter.

The Thonglor nightclub with its fancy laser lightings and expensive sound systems is easy to love (bar the drink prices) thanks to music that’s nowhere near as cheesy as Levels or Demo. Original and sophisticated yet playful and edgy, Kelly Wheatley’s design of Bunker makes us want to drink there as much as the cocktails from Diageo World Class 2015 finalist Natakorn Changrew (try the Bourbon Maple Sour, B360). They call it “Fashion Hour,” we call it the best damn drinks deal in the city: two-for-one on all standard drinks, every night of the week, for three hours (5-9pm). Count B400 net for two drinks. And this being Vogue Lounge, bear in mind their idea of “standard” drinks are anything but.

Fun and experimental, the recently-added bar snacks at Rabbit Hole are anything but ordinary. Chef Riley Sanders uses the bar as a practice space for his upcoming restaurant project, Canvas, rolling out small plates that are big on flavors and complexity. His uni toast, for example, bursts with flavors of shoyu, brown butter, roast garlic and slices of kaffir lime leaf.
It sits 26 floors above the Chao Phraya River, so instead of just a sky-high view of tall buildings, you also get a clear sight of the river as it meanders through the city. To drink, French mixologist Alexandre Hersent rolls out refreshing signature cocktails like the Bora Bora Paradise Island (Absolut pear vodka, curacao, Joseph Cartron banana liqueur, apple juice and coconut ice cream, B380).
Focusing more on home-infusions than pricey spirits means that the follow up to Sathorn’s UNCLE manages to sell all its cocktails for less than B200 while guaranteeing a taste that still packs a punch. It’s back! After letting Sathorn and Chinatown steal the limelight for two years on the trot, Thonglor hit back in 2016 with a vengence. The Commons and 72 Courtyard were just the start of a big year for Bangkok’s original highend party strip.

Sense of the Sea The ultra-luxurious design hotel Iniala Beach House (076-451-456, www.iniala.com) has partnered with Tim Butler of Bangkok’s Eat Me (No.23 on Asia’s 50 Best Restaurants 2016) to open a new seafood venture called Esenzi. The first Butler restaurant outside of Bangkok replaces the property’s old restaurant, Aziamendi, with seafood dishes that pluck flavors from all around the world. A5 marbled wagyu beef from Shiga prefecture comes served with swordfish belly in red curry, while the Dutch Harbor king crab salad features heirloom tomatoes, basil sorbet and bloody Mary. For the full experience, go with the eight-course tasting menu at B8,000 or B12,500 with wine pairing.

Glamping Island Samui is getting in on the Northern glamping trend (see goo.gl/FVPvMI). Mountain Club There’s a new restaurant at Khao Yai’s giant Tuscan-themed estate, Toscana Valley. Club Lago (089-308-6555, 098-308-6555, www.toscanavalley.com) takes its name from the Italian for lake and sits right beside a pool. On the menu you’ll find Thai staples (somtam with grilled chicken, B280) as well as fusion dishes like grilled Australian rib eye with jaew dipping sauce (B290), salmon tacos with guacamole (B310), massaman pie (B260), and baked mussels with white wine and spicy wasabi seafood sauce (B350). Rates at Toscana’s two hotels currently start at B5,225 and B6,423 for a suite.

Digital Forest The National Museum Singapore (nationalmuseum.sg) just unveiled a trippy new art piece, Story of the Forest, where indigenous flora and fauna populate 360-degree screens. Designed by Japanese artists teamLab, the installation is a sensory overload of tropical flowers slowly falling from a starlit sky and exotic beasts peacefully pacing about, all of which are native to the city state. It's all based on the museum's prized collection of watercolors, the William Farquhar Collection of Natural History Drawings. The team used sensors and a drum-shaped projector to animate the 69 drawings on the dome’s 15-meter-high and 170-meter-long walls. Admission tickets cost SG$8-15 (B200-376) for the exhibition and SG$18 (B451) for an all-access pass to the whole museum.

The supposed highlight features "onsen concentrate" brought over from Japan's renowned Gero hot springs (42 degrees Celsius), while you can also take a tub in the milky-textured silk bath (40 degrees), soda bath (38 degrees) or standup whirlpool bath (36 degrees), before cooling off in the cold bath (a bracing 18 degrees). A few added goodies differentiate this from the other onsens in town, namely the hot stonebed room and 12-degree-Celsius cool-down zone. Located a little bit out of town, this spa offers private onsen tubs and a full line of spa treatments, from traditional Thai massage to body scrubs, manicures and pedicures. It’s designed to look like a traditional bath-house and imports all the equipment and onsen salt from Japan. Packages start at B750 for a 30-minute onsen and 30-minute head-and-shoulder massage. There are also aromatherapy and body scrub services that start from B750 (60 mins) and Thai massage at B400 (60 mins). They formulate their own bathing products, which are also for sale, including body lotion (B270), shampoo (B125) and body scrub (B400). The One Sand Bath Therapy
Looking a little like something out of 1980s Tokyo, this low-key, rooftop health complex combines a sushi restaurant, fitness center, salon, bar and onsen. Open until the unusual hour of 2am, unlimited use of its onsen (hot and cold bath), sauna and Jacuzzi is priced at B400 per day. Other services include Thai massage (B400/60 mins), aroma massage (B1,000) aroma massage with body scrub (B1,500/120 mins), facial mask (B1,500/60 mins) and anti-cellulite slimming massage (B1,500/60 mins). The rooftop bar is also a pretty chill place to have a pint of draught Asahi after your treatment.
Instead of water, this spa offers hot sand tubs which use volcanic Japanese sand selected for its larger than average grains. The spa claims that the 50 essential vitamins and minerals contained within this sand will improve your immune system, stave off signs of aging, detoxify your system and improve blood circulation. Prices start from B2,500 for a one-hour session of sand bathing (15 minutes sand bath followed by a scrub and shower). The therapist will check your pulse before bathing to analyze the proper duration your body can handle. While the experience is super-relaxing, you should be prepared to sweat... a lot. The default temperature for the tub is 55 degrees Celsius, and you shouldn't really stay longer than 20 minutes. In fact, the owners compare it to rigorously excercising for one-and-a-half-hours. Aside from the sand onsen, the spa also offers aromatherapy (from B800/60 mins) and Thai massage (from B500/60 mins).

Opened less than six months ago, Hideyuki Saito's Bronx bar takes the details of its drinks to a whole new level. Now it's got a food menu that's comparatively low-key but no less impressive. Owner-bartender Saito, who previously had a stint in a kitchen before taking up bartending almost 10 years ago, here rolls out a compact menu of snacks inspired by Japan's tavern-like izakaya culture: cold appetizers like seaweed salad (B80) and scallop with kimchi sauce (B100), as well as hot appetizers like gyoza (B120), served grilled or in soup. Le Salon de L’Atelier de Joel Robuchon Tea and sandwiches endorsed by Michelin critics’ favorite chef. The buzz: French chef Joel Robuchon’s restaurant portfolio holds the most Michelin stars in the world. Here though, the signature L’Atelier fine-dining brand is used for a more casual tearoom-style restaurant in a mall. The decor: In contrast to L’Atelier at Mahanakhon’s sultry lighting and hushed atmosphere, Le Salon is plonked in the middle of the mall’s hallway (think TWG), where the signature red leathers and lacquered black surfaces are framed by luxury boutiques. A prep counter sits in the middle of it all, where you can see chefs finish the plating. Nearby, you'll find another counter hidden behind one of the mall's massive columns, where you can buy takeaway baked items like croissants and bread.

The food: Instead of rolling out solely tearoom specialties (like other Le Salon de The branches), this one also carries some items from L’Atelier, mostly light fare that doesn’t require much cooking like Sologne imperial caviar layered with lobster meat and jelly (B2,800) and la betterave (apple and beetroot tartare with guacamole and green mustard sherbet, B550). Apart from that, the menu highlights sandwiches and savory crepes. Expect no less than millefeuille-like, prettily-layered bread and fillings like caviar, lobster, avocado and cocktail sauce (B1,400) or salmon, fennel, dill and sour cream (B350). On the sweet side, they roll out Brussels-style crispy waffles served with dollops of jellies, mousses, custard and sorbets, such as passion fruit custard, caramelized bananas and coconut (B450) or pistachios, chocolate cremeux and confit cherries (B650).
The drinks: Coffee and tea comes at B200 per serving while there are also juices (B230), mocktails (B230), beer (Sapporo and Estrella Damm, B290) and a few wines (B490 by the glass). Why you should care: Though not intended as a Michelin-star experience, Robuchon takes the tearoom experience to the next level with fine-dining attention to detail and elegant presentation. Cheese Please Ratchada Train Market's grilled cheese specialist Holy Cheese has branched out into the city center (4/F, Silom Complex, Silom Rd. BTS Sala Daeng). The second venue features the familiar yellow and black decor with a large see-through preparation counter and a few tables to dine at. The decadently gooey ciabatta grilled cheese still stars, with eight filling options including the newly launched Pop Eye (spinach, B155) and What a Chick (battered chicken, B165). You can also add bacon (B20), egg (B15) or jalapeno (B10) to your sandwich, and order a side of waffle-shaped fries with cheese dip (B99).
Scone Ville Scone specialist Witty Ville (Ari Soi 1, 081-735-6604) fills a petite unit with its goodies. Enjoy daily-baked scones (B55) in flavors like matcha, nutella, bacon and cheese, lemon
and macadamia. The space only sits a couple of people, but they’re willing to warm your scone and serve it with jam, clotted cream and some tea (B65). They also have their own blends you can take home for B280.
Bistro Empire Water Library Brasserie apparently pulls the most consistent crowds at Bangkok’s quietest mall, Central Embassy. Now the Water Library group has taken its French bistro concept on the road, branching way, way out to Raminthra. A spin-off of the longstanding Vie Halong restaurant (near BTS Udom Suk), this chic space looks to take Vietnamese food in a younger, more playful direction. While the hipster wet-dream decor of red bricks, bare concrete and plants might set alarm bells ringing, Muine delivers some seriously satisfying flavors. Despite what’s claiming to be a street foodfocused menu, the dishes here are pretty far removed from what you find on the streets of Saigon. That’s not necessarily a drawback but arguably a reflection of superior produce. Take the mixed pork vermicelli (B210), a version of bun cha with three types of delectable pork. The charcoal-grilled pork shoulder is juicy with just the right fattiness, the fried spring rolls plump with protein and the minced pork patties tinged with sweetness. The mix of pickled carrot and daikon is spot on, too. The place’s main claim to fame, though, are the banh mi (Vietnamese sandwiches), which are up

Now franchised across the US, as well as Japan, Mumbai and New Delhi, Morimoto is not your typical Japanese restaurant. Its founder, Iron Chef America Masaharu Morimoto, is known for harmonizing Japanese ingredients with other food cultures (his training spans classic kaiseki cuisine in Hiroshima and New York’s Nobu), and here in Bangkok is no exception. Even the decor blends cultures with its stylish, wood-paneled booths, Scandinavian-influenced furnishings, wavy ceiling and, at its heart, a sushi bar where diners can see through to the kitchen. A lot of the time, Morimoto’s cultural flavor mix works well. His tuna belly tartare with four varieties of wasabi, seaweed pasted, sour cream, guacamole and soy sauce (B650) and “Ishi Yaki Buri
Bop” (a take on Korea’s hot-stone bibimbap featuring yellowtail fish, B590) perfectly blend Japanese-style sashimi with new flavors and presentation. The tartare is truly addictive thanks to the sweet, sour and salty flavors, while the bibimbap features fish lightly cooked by the hot stone, delicious rice and scent of yuzu citrus. Not everything is so successful, though. A cooked fine de claire oyster with uni (B590) is ruined under the weight of foie gras and a dense teriyaki sauce, while the shrimp tempura with creamy gochujang sauce and wasabi aioli (B320) and Indian-inspired organic half chicken in a curry dressing (B550) are both forgettable. Better work takes place over at the bar, where mixologist Shingo Gokan (from Shanghai’s Speak Low, second place in Asia’s Best Bars 2016) pours out deliciously fresh creations like the Yuzu (B380), which features shochu, yuzu, shiso and plum salt. Desserts are also both playful and tasty. Their s’more (B350) sees a shard of hardened kuromitsu sugar syrup served with a slightly salty, smoked soy-infused chocolate mousse, melted Graham cracker ice cream and toasted marshmallow. Clever and delicious! Prices here also aren’t too crazy, and clearly seem to be winning over the international clientele, most of whom sit in front of the sushi bar enjoying a soundtrack of ‘60s70s easy-listening hits.

there with the best in town. Again, don’t expect authenticity with the premium ribeye option (B245) option, though its hoisin -slathered strips of beef don’t disappoint. Even the classic cold cuts banh mi, with its layers of pate, sliced Vietnamese pork sausage and crispy sweet sausage (B185), tastes more buttery than we’re accustomed to (that’s a compliment from us). Muine’s secret weapon is undoubtedly the baguettes which are pre-baked to be finished on-site. The crisp-yet-fluffy bread is a step above the competition, though if pushed we’d probably pick the more traditional sandwich stylings of Banh Mi Crispy (which also happen to be half the price, from B90). The baguette can also be enjoyed with the chicken curry with sweet potato (B200), a heavily spiced coconut curry that’s more like a stew than its rich and heavy Thai counterparts. The beef pho (also available with chicken, both B180) is also a heady mix of cloves and cinnamon, but we can’t help but feel it lacks the depth of flavor that comes with a slow-simmered broth. However, we do appreciate the side of crisp greens. Muine may not be Bangkok’s most authentic Vietnamese experience, but that’s not really its mission. Throw in some well-priced Thai craft beers from Golden Coins (B165) or a super-strong Vietnamese drip coffee (B165) and you’ve got one cool little space that’s probably your best reason to venture to Sansiri’s out-of-the-way Habito mall.

The band's classic lineup of Axl Rose (vocals), Slash (lead guitar) and Duff McKagan (bass) will take to the Bangkok stage as part of their Not In This Lifetime world tour.
