A checklist of BK Magazine’s most important discoveries this week A Michelin-starred sushi restaurant from the US just opened in Bangkok Sushi Zo was started by Japanese chef Keizo Seiki in Los Angeles in 2006, and awarded a Michelin star in 2009. After establishing a second branch in L.A., he expanded to New York City with an omakase-only restaurant in 2015 that Michelin awarded one star in its 2017 guide. The Bangkok branch accommodates about 10 diners per seating, with prices falling at B6,000-8,000 for about 18 courses. www. sushizobangkok.com One month after closing, Flow House is back Last November, Bangkok’s only surf park announced it was closing down due to financial difficulties, causing a great outpouring of disappointment on social media. Full location details are expected to be announced next month. BTS and MRT stations might be getting the same name It’s only taken a decade of confused tourists, but transport officials will soon conduct an online public hearing to determine whether adjacent Skytrain and subway stations should share the same name. Those interchanges under scrutiny include BTS Asoke and MRT Sukhumvit, and BTS Sala Daeng and MRT Silom. In the future, all stations located less than 50 meters away from each other must be called by the same name. We now have a restaurant dedicated to poke A couple of months ago Shari Shari introduced Bangkok to the classic Hawaiian fish dish that took New York and L.A. by storm. Now Asoke’s Hunter Poke has gone one step further, dedicating its entire menu to marinated raw fish bowls. Well, almost entirely. Assoc. Prof. Varaporn Suravadee, 81, was at the center of one of 2016’s most inspirational stories. After learning that an eight-story building would be constructed next to Bangkokian Museum, a compound of century-old wooden houses she gifted to the Bangkok Metropolitan Administration (BMA) in 2004, she donated B30 million and called on the public to come up with another B10 million to purchase the adjacent plot of land. Despite a tight two-month deadline, the campaign achieved its goal in only three weeks. As she prepares to release three books detailing the history of the museum, Varaporn opens up to BK about the future of this tiny treasure of Bangkok. What compelled you to buy the land? The old owner had already contacted me to buy the land—approximately 400 sq. meters—and we’d agreed a sum of B30 million. Perhaps there was some sort of miscommunication, but they eventually decided to sell it to someone else. I didn’t realize until the contractor started preparing for work that it would be an eight-story building. I tracked down the new owners and it turned out they were actually a business family who lived in the same neighborhood. They wanted to build a permanent home as previously they had been renting. I offered to buy the land back as I personally felt that the lengthy construction process and height of the project would be detrimental to the museum. They told me they would only sell for B70 million. What did you do? I refused, of course. I don’t have that kind of money. I begged them to reduce the price. They showed some understanding and agreed to reduce

the asking price to B50 million, including a donation of B10 million. So that meant we had to pay B40 million. Our foundation, In-Sart-Saang and Francis, only had B30 million so we decided to ask the public for help. I was confident we could hit the target if we asked 100,000 people to donate B100 each. I was only afraid that we would run out of time. Then social media took over. Did you ask for help from the BMA? Of course. I gave them this house to be a museum. But all they could help me with was writing up letters of complaint about the construction, not to actually stop it. I asked them to help buy the land, but bureaucracy meant they weren’t able to assist. Do you think the success of this campaign proved anything? It shows that people understand and care about conservation, but not so much the BMA. Why did you decide to give the house to the BMA in the first place? I was a government officer all my life so I felt I owed the country. I was a

biological scientist, so I learned it’s better to learn through real experience. I have no kids, no family, so I wanted to allow the public to learn about how middle-class Bangkokians lived in the old days. I thought the BMA would be more knowledgeable about running a museum than me, but now I realize they’re not experts either. Anyway, the law clearly states that once you give something to the administration, you can’t take it back, so I just hope I can live here happily until I die. What are you going to do with the new plot? As the new land comes under our foundation’s proprietary rights, we will build a two-story building where the rooftop will be a sky garden while the ground floor will be a small parking lot which can be transformed into an activity area for flea markets or small events. We’re currently calling for new donations as we need B6 million to complete the project. We’re still B3 million short but there’s no rush. Interview by Monruedee Jansuttipan

Telex Telexs Label: Wayfer Records This four-piece’s recent single “Shibuya” took their craftsmanship to a whole new level, with a huge synth-driven sound that blows their dream-pop contemporaries out of the water. While their songs bear plenty of '80s touchstones (those synths, those booming drums), there's plenty of character and confidence to suggest Telex Telexs are a band to watch. Speaking of confidence, we're particularly taken with singer Sorrarat "Aom" Limpanopparat's powerful vocals. Their latest EP, Melt Your Popsicle, came out just last week.

Henri Dunant Label: Rats Records Henri Dunant is the alias of a former contestant on The Voice Thailand. But don’t let that deter you. Nattawut “Max” Jenmana’s debut single "Nick of Time" sounds like nothing else on the local music scene, with its strong trip-hop feel and reverb-soaked vocals that remind us of Lana Del Rey, only more upbeat. The dark and driving track also showcases Max’s impressive guitar playing, which we hope to hear more of on new single “Might Have Been,” due to drop this month. We’re also hearing there might be a full album coming up in 2017, too.

This instrumental five-piece is not your average dull and plodding Thai post-rock band. Aside from electric guitar, the band also incorporates instruments from trumpets and saxophones to sueng (a type of plucked fretted lute from Northern Thailand). Tracks like “After the Storm” and “Under the Witchcraft” have a wonderfully epic, psychedelic quality and keep you guessing with every twist and turn. My Life as Ali Thomas Label: Warner Bros The folk-rock band led by the very talented Kanyapark "Pie" Wuttara have been doing the rounds for a few years now, but their debut album, Paper, released late last year, was more than worth the wait. One listen to the polished lead single, "Cordelia," and it's clear this is not just another whimsical Thai pop band with one-dimensional lovelorn lyrics. While Pie’s husky vocals and cryptic English lyrics take center stage, the album also really benefits from the powerful production of Danai Thongsinthusak, who is better known for his work with Thai heavy rock bands such as Retrospect, Sweet Mullet and Klear. Bomb At Track Label: Independent You won’t find BK writing about anything even vaguely resembling nu-metal very often, but we’ll make an exception for this new band. With their politically-charged lyrics taking aim at Thailand's social and political problems, a decent comparison point might be Rage Against the Machine. They’ve only got two singles to their name so far, but both proved to be powerful anthems for 2016. Debut release “Umnat Charoen” (Powerful) sticks it to the rich and seemingly untouchable, while follow-up "Kattakorn Keyboard” (Trolls) questions the abusive side of anonymity on the internet. However, 2017 looks likely to be their big breakthrough. Their last two singles—“Conversating” and “For Her”—have shot up Cat Radio’s Cat 30 chart through a combination of driving guitars, heartfelt lyrics, deceptively simple melodies, and frontman Daniel Didyasarin’s kooky star power. Sasi Label: Independent This four-piece is one of the more experimental bands on Bangkok’s folk scene, which can feel a little one-paced at times. They come highly regarded—their 2016 debut album Bampola was recorded, mixed and mastered by Pok Stylish Nonsense, no less. Recent single “Day by Day” demonstrates their restless creativity, with dub-like flourishes complementing frontwoman Deun Chongmankhon’s intriguingly off-kilter vocals. X0809 Label: Independent This fashionable electro-pop duo (Note Panayanggool of The Star fame and Anya Muangkote) recently scored the plum support slot for American hip-hop producer Ryan Hemsworth’s Bangkok show. That followed up a big 2016 which saw the release of debut single “-30” and slots at Japan’s Solar Bundokan Festival and Hong Kong’s Clockenflap Festival. So far there’s been little recording substance to match all the style, but there’s an EP in the works and, if their live show is anything to go by, expect it to be jam-packed with ambient synths, dance beats and pitch-shifted vocals. Sarayu Label: Independent Having grown up in the UK, Jay Sriyuksiri is now back home and bringing his outside influences to the Bangkok club scene. In London he performed at the likes of Fabric and Ministry of Sound, now he’s a regular at Beam where his sets have been described as the “sound of the future” by fellow DJ Chote. His multi-layered house mixes are anything but one-dimensional. He’s also one of the instigators of Collect/Save (www. fb.com/collectsave), a project aiming to grow Bangkok's local electronic music community through workshops and production masterclasses.

DOTT (Dogs On The TurnS) Label: Various, including Zoo Studio (Thailand), Shikki Mikki (Switzerland) and Crooked Spine (US) Pakarapol Anantakritayathorn is not only an exciting DJ who plays at Bangkok’s best nightclubs, he’s also a super-talented producer. His recently released EP Second Side is five tracks that blend minimal and deep house with elements of acid jazz. What really stands out, though, are the slinky basslines, so it’s perhaps no surprise to learn he started out as a bass player himself.

This New Zealand-raised singer-songwriter made our list of artists to watch back in 2015. Still only 21, Phum is about to release his debut album of easy-listening folk. The nine tracks will include recent hit “The Art of Detaching One’s Heart” featuring Jenny & The Scallywags, which provides an ironic look at the unavoidability of heartbreak. Of course, Phum’s surprisingly powerful vocals remain front and center offering plenty of 1960s crooner vibes.

Released just last week, the all-girl trio’s long-awaited debut album is 10 tracks of catchy synth-pop, which the band describes as being like their diary. The oldest track included is “How Long,” which is already three years old. Recent single "This is Real" sets the template, reviving '80s synth-pop in all its cheesy glory thanks to girly, loved-up lyrics, cooing vocals and searing synth lines.

Fresh from supporting US indie veterans Yo La Tengo, the rocking four-piece follow up their 2014 debut Thick Mink with new album Kart on Panda Records. If first taste “Semi-Sec” is anything to go by, we can expect an even more ferocious blend of distorted guitars and obscured vocals. The album launch is on Feb 1. Welcome back.

Record collector Suchon Boonkong has followed up his previous stall at Chatuchak weekend market with this bigger, cozier space. The 15-year-old Manhattan-hailing diner is known for its all-day breakfasts and American classics, especially the renowned buttermilk pancakes—which the likes of New York Magazine and Lonely Planet have hailed as the best in the city. These fruity, though not-too-sweet, concoctions come courtesy of Portuguese bar manager Joao Dos Santos, who previously worked as head bartender at the Eastern Mangroves Hotel and Spa by Anantara in Abu Dhabi. The apple and vanilla margarita (B300), for instance, benefits from the addition of lemon juice, which helps cut through the sweetness. Who: French chef-owner Romain Guiot, a jack of all trades whose resume includes stints as a cook, designer, exhibition organizer and yoga instructor. What: Nestled down a small alley connecting Charoenkrung Soi 43 and 45, Outlaw is an absolute hidden gem. Watch Guiot in action in the very open kitchen, with just a tiny wooden bar between it and the diners. There he whips up everything from goat cheese salad (B260) and pasta (from B220) to Argentinian tenderloin steak with truffle mash potato (B550). What: The emphasis is on local ingredients and made-fromscratch elements, backed by Western cooking techniques and some Thai touches. Chef Napol’s knack for making the most of only minimal ingredients is demonstrated in the Number One tea-smoked duck breast (B480), which comprises slices of smoky duck breast and pumpkin in a variety of guises (charred young pumpkin, flower and shoots, puree). La Creperie Crepes and other French delicacies in the heart of Siam. The buzz: There are only a few French crepe houses in Bangkok. Arguably the best, Sukhumvit Soi 39’s La Creperie, has branched out to Siam Paragon, serving not only sweet and savory crepes but also other French comfort dishes. The decor: The new branch can’t match the charm of the original’s white standalone house. Instead, it goes down a Parisian apartment route—mezzanine, checkered floor, friendly gray-scale decor and hanging ferns—that’s pretty welcoming given it’s in a mall.

The food: Of course, the wide variety of buckwheat savory crepes (from B190) and their sister sweet crepes (from B140) remain the stars, with over 30 different fillings on offer. Try the classic ham, cheese and egg with tomato and mushroom (B250) or the crispy-crust savory galette with the sweet finish of butter sugar lemon (B120). Here, they are joined on the menu by French staples not available on Sukhumvit like tartine (openfaced sandwiches, B240), soups (from B150) and salads (from B220). On top of escargot (garlic-butter snails, B450) and tuna steak (B390) served with ratatouille and sweet potato chips, more filling dishes include grilled sole fish in brown butter (B490) and chicken basquaise (B270).

The drinks: Beyond coffee (from B50), chocolate drinks (from B90) and tea (Mariage Freres, B250), you’ll find a few wines (from B250 by the glass) and ciders (from B290) to complement the crepes. Why you should care: Though the setting can’t compare with the original, we’re now slightly less inclined to risk the crazy maze and traffic jams of Sukhumvit Soi 39. Coco Channel One of Bangkok's most-loved coconut ice cream brands has opened its first standalone cafe. Having debuted as a mall counter two years ago, the All Coco (G/F, Major Tower, Thonglor Soi 10) brand is a spin-off of a fresh, young coconut exporter who specializes in the aromatic nam hom breed. We are big fans of their dairy-free treats like coconut shakes (from B89) and soft serve (original, charcoal or swirled, B100) and ice cream (B55/scoop). At this first flagship store, they present some new creations, including coconut waffles (B80), toast with elaborate sweet toppings (B125), sandwiches (three scoops of ice cream in a hotdog bun, B99) and the coco affogato in which you can opt for a shot of espresso or Thai tea on any ice cream (B90) or soft serve (B120).

Matcha Made in Heaven Japan's old-school matcha specialist, Tsujiri (7/F, EmQuartier, Sukhumvit Rd., 091-569-6924) traces its origins back to the green-tea heartland of Uji in 1860. Only in recent years has

the brand launched a spin-off cafe and expanded internationally. Here in Bangkok you can find good ol’ matcha in a bowl (B145) and other hot and cold green tea varieties (from B135), alongside contemporary offerings like ice-blended matcha and houjicha (roasted tea, B145), floats (from B160) and the star matcha soft serve, which comes in a cone (B120) or as a sundae (from B145). There is also kakigori (shaved ice dessert) in matcha and yuzu flavors.

Room for Tea The newly renovated and relaunched Marriott Marquis hotel boasts over 10 food and beverage outlets. Offerings include Thai food, pastries and afternoon tea sets with tea sourced from the North. Authentic yet modern, Indian chef Bharath Bhat’s cooking draws on his experience at five-star hotels like Grosvenor House in Dubai and Armani Hotel in Burj Khalifa building, including stints as a sous chef at the one-Michelinstar Indego by Vineet Bhatia and Simply India by Atul Kochhar. The decor attempts to be fittingly grand but lacks the restrained elegance of the Singapore venue. Drop by on a Friday night and you’ll still find a good buzz in the dining room, as well as chef-patron Philippe Peretti making small-talk with guests—but only after 9pm and in sauce-stained chef’s whites that speak of a man whose real role is in the kitchen. His food is unremittingly traditional, dealing in one-dimensional yet powerful flavors of wine, cream and mushroom—an ingredient that comes diced into sauces, scattered across plates and crowning proteins in just about every dish of the B2,200, five-course set menu. stuffed chicken breast scattered in earthy field mushrooms and doused in a rich, morel cream sauce—could pass as an a la carte main. Were it not cool in the middle we’d be even more filled with praise. The same can’t be said of the other proteins we’ve experienced, which, from a perfectly treated fillet of local white fish (pla boo)— skin deliciously crisp, flakes of white flesh slippery and moist—to a succulently rare beef tenderloin, have been handled expertly. You’re not getting the most inventive meal in town—a dollop of sauce plus prime meat plus sprinkling of microleaves is the format from the second course to the fourth—but the flavors are powerful, the cooking delicate, and the bang for buck readily felt when compared with the price for dinner at J’Aime or Savelberg. We say that in relation to the set menu only—go a la carte and you’re looking at B500-1,000 for starters and B1,000-4,000 for mains. Not everything will knock your socks off. A starter of foie gras torchon is the same kind of competent produce-driven cuisine any neighborhood restaurant can collect on a plate, while the dessert of passion fruit sherbet, meringue and crumble is, once you break through its elaborate chocolate dome, little more than a tasty ice cream. The quality of Philippe’s bread and a piffling six wines by the glass (starting from B350) are further nods to mediocrity. Just like the dining room’s turquoise silk wallpaper and well-worn hardwoods, dinner at Philippe is for the most part aging well—just don’t go looking for total perfection.

has plenty of creative touches, such as the avocado papdi chaat (B220), a take on the classic Indian street-side snack with a taste of Mexico and the look of a California maki—crispy without being oily, the papdi comes as a cone. You’ll also find classics like roasted tiger prawns (B900), chicken tikka (B450) and lamb chops (B900), all cooked in real tandoori ovens. Rubbed and marinated in yogurt and spices, with distinct notes of smokiness from the oven, the tender meats are a highlight. (Too bad the lamb is overcooked.) That same oven is used for a la minute flatbreads (naan and paratha), which have the same beautiful charred aroma along with a pillowy texture. You’ll use them to soak up the rich, spicy curries whose creamy feel manages to be silky smooth without being oily (from B280 for vegetarian options, B650-900 for non-vegetarian). There are also vegetarian and non-veg options for the tasting menus (B990/B1,490 net, or B1,600/B2,100 net with wine pairings), a good deal given the net prices. Buffet brunch on Sunday is B1,300 net (with soft drinks) and offers a laidback alternative to the fine-dining plating of the tasting menu. Punjab Grill was immediately welcomed among top contenders like Rang Mahal, Indus and Charcoal. Still, we’d rank it below the top three. Not unlike the decor, Punjab Grill’s fine-dining tweaks feel a bit gimmicky amid what is otherwise a delicious and authentic meal.
