That the powers behind Il Fumo and Vesper are back with another restaurant Set to open in a couple of weeks, La Dotta ventures away from fine dining to something more down-to-earth. Sitting in a single-unit shop-house on Thonglor Soi 9, the pasta house aims for a fuss-free atmosphere where the plates go for around B300-400 a go. That Spotify could be about to launch in Thailand A new job ad for a Music Editor from Thailand certainly suggests as much. The position is based at the music streaming giant’s Singapore office and is tasked, among other things, with creating “localized Thai music playlists.” Hooray! (But tough luck on the person moving to Singapore.) That the BRT is now B15 for all stations The bus rapid transit system continues to operate, but at an added cost to commuters. Flat fares have been increased from B5 to B15. Back in April, the BMA backtracked on plans to axe the 16km bus service citing annual losses of B200 million. That there’s a new shuttle bus between Suvarnabhumi and Khaosan Launched this month, the new S1 Line runs daily from 6am-8pm, linking the airport with Sanam Luang. Buses leave every 45 minutes, with rides costing B60—or about as much as the aiport taxi surcharge. That Suvarnabhumi has a postal box for sending home stuff at the last minute There’s no longer any need to toss those liquids or sharp objects you mistakenly left in your carry-on luggage, thanks to a new automated postal kiosk situated at Suvarnibhumi’s departure area. Pop in your unwanted items, pay up and let Thailand Post do its job (fingers crossed!).

upfront HOT OR NOT
Hot: Inspectors
Not: Fakers
Bangkok restaurants have been calling themselves “Michelin-starred,” or “Michelin-standard,” or “Michelin-worthy” for years. This hasn’t gone unnoticed by the real inspectors, who recently posted a message on the official Michelin Guide Thailand Facebook page warning diners not to be fooled by fake star-holders. We have about five months left until their work is finally ready.
INTERVIEW
Hot: Blaq Lyte
Not: Dark Bar
This Saturday, you can expect the party to end all parties when Dark Bar throws its final goodbye, two years after revolutionizing Bangkok’ underground club scene. We’d be a whole lot sadder about it if a new place hadn’t already stepped up to take its place. Blaq Lyte at Badmotel isn’t just making the old Thonglor night spot cool again, it’s also donating profit to orphans. Read the interview opposite.
Hot: Masterchef
Not: Iron Chef
It feels like a lifetime ago that every restaurant in town was headed by some guy who once appeared on Iron Chef. Get ready for history to repeat itself once the newly launched Thai version of Masterchef unleashes its outgoing contestants on the Bangkok dining scene. See page 20.
Hot: The ‘Burbs
Not: Central Bangkok
New Ram Intra coffee hotspot Red Diamond has caught Phrom Phong cafes napping with its elaborate new ways of preparing coffee (see page 16), while French synth-pop rockers Phoenix are scheduled to play the outer stretches of Ladprao when they visit Bangkok (see page 26). The BMA has also just announced an elaborate new electric rail system that’ll actually take you to these places, though it won’t be ready for another three years.
THAT’S WHAT SHE SAID
4
On May 19, police raided the opening night of 28-year-old Nick Supreda’s nightclub debut, Blaq Lyte, which has once more transformed Badmotel into Thonglor’s hottest clubbing spot. But Blaq Lyte is a nightclub with a difference: it raises money for Nick’s orphan charity, 32 Foundation. Born in America to Thai parents, Nick was himself adopted at a young age and raised by his aunts in Southern California. Here, he discusses the mission of his social impact nightclub model, as well as the state of Bangkok nightlife. What makes Blaq Lyte different from Bangkok’s other clubs? I want a space for local DJs to play. They don’t have to be well-known on the Bangkok nightlife scene, they just have to be good. I’m hoping that Blaq Lyte will make Bangkok appreciate underground music more. I also donate some of the profit to a foundation for orphans that I founded called 32 Foundation. I was adopted but now I’m in a position to give back. We’ve been helping children in India recently.
tread, but they exposed me to both the good and bad side of things so that I could learn from my own mistakes. That’s the culture I want to create at an orphanage school I hope to create in Nong Khai province.
Oh wow, we didn’t expect that. Have you taken inspiration from other social impact business models from abroad? I just wanted to do it. If I weren’t adopted as a kid, I wouldn’t have had the opportunity to grow up overseas before coming back here to help others.
Have you had much hands-on experience with Thai orphanages? I visit the orphanage in Nong Khai where they have a small school. I can’t remember the name but it’s so bad. The teachers are really mean and have a go at the kids all the time. Their lives are so miserable, it’s hell for them.
How much of your profits will go to the charity? It’s different every month. I’ll donate as much as I can as long as I can survive. I don’t need the luxury life for myself.
How come you chose Nong Khai? Because my [birth] father is originally from there.
Tell us about your childhood. The people who adopted me gave me many opportunities to make mistakes. I could choose to be a good person or I could choose to join a gang. They didn’t tell me which path to
Tell us about that. My goal is to build a school to better educate orphans there. It won’t be a proper school at first, but rather focused on after-school programs so kids can try new activities and figure out what they want to be when they grow up.
We hear you had trouble with the authorities on Blaq Lyte’s opening night? It’s OK, really. They are just doing their job. They were actually lovely to me and advised me on bits and bobs regarding running a bar
in Bangkok, like the closing time, etcetera. It feels like Bangkok nightlife’s been dying a slow death recently, with places closing down. Do you feel that? It’s a possibility, but we’re also currently in a transition between generations. If the young generation believe that the scene is dying, or if we let it, then it probably will. Q Bar and Bed Supperclub had their day and became legends. Do you feel like bars in Bangkok are behind other big cities? Yes, a lot. So much. More than 10 years behind. I feel that the service I get from the bar staff in nightclubs in Bangkok is not good at all. In other countries, I can go to a bar by myself, just chill at the bar and actually have a conversation with the bartender. In Bangkok I don’t get that friendly vibe. I just want to order my drink and leave. Thai culture still sees nightlife as a vice that can ruin your life, when in fact some people don’t even drink when they go to clubs, they just want to listen to music and hang out. LAMPANG
Minimal Magic In a break from all the Lanna-style hotels, Karpenter (www.karpenterlampang.com) takes the form of a minimalist barn. A 30-year-old house has been renovated into a five-room, loft-style abode that puts the emphasis on wood, bare concrete and steel. With a love of DIY, the owner has named each room after carpentry tools—Clamp Room, Hammer Room, Saw Room, Chisel Room and Plane Room—all of which come fully equipped with Wi-Fi and aircon. All rooms here are B1,300, with transfers to and from the airport, train station and bus station available at B100/trip. That price also includes a cute breakfast set of patongko, a main (guay jub, grilled pork satay and sticky rice or kai gata), fresh fruits, soy milk and coffee, served in the semi-outdoor area. There are also plans to expand it into an all-day cafe in the near future.

Stretching Out
Bangkok just welcomed its first station-less bike-sharing service. The Singaporean oBike app (available on iOs and Android) has already earned the ire of BMA bigwigs who’ve called it a “public scam” despite its popularity back home. This service helps you locate any number of bright yellow bicycles parked at spots all around the city. The service requires users to pay a deposit of B899 via credit card in order to unlock a bike via QR code scan, with usage charged at B10 per 15 minutes. Currently the scheme has a limited number of bikes parked near BTS Asoke, MRT Silom and Chulalongkorn University. The BMA’s own Pun Pun bike-sharing system was launched in 2013 to a mixed response.
There’s a stylish new way to muddle curry paste or pound somtam with the launch of new artisanal cookware brand Jua Collection. The brand offers a raw and minimal take on standard kitchenware like mortars and pestles, cutting boards, granite bowls and cleavers. Our top pick is the reversible mortar and pestle set (B5,500) that combines local black granite with polished coconut wood. The mortar can be flipped over for different methods of food preparation. Shop online at www.fb.com/juacollection.
After making its Southeast Asian debut at Erawan Bangkok in 2015, New York’s celeb-endorsed barre studio Physique 57 has now branched out to Thonglor. The new studio sits on the second floor of RQ Residence, also home to the all-inone fitness hub of The Racquet Club. Its ballet-inspired workouts combine intervals of cardio, strength training, stretching and recovery. For newbies, they’re offering a two-class package at B1,000 or an eight-class one at B6,000, to be used in one month. Let Off Some Steam This year’s most exciting coffee opening sits in a far-flung rusty building that serves as a full coffee roaster, cafe and school. Red Diamond doesn’t just have a roasting machine on-site, it also has its own farm in Pha Tang Chiang Rai, which is certified by America's Coffee Quality Institute (CQI) as a specialty coffee producer. Along with their own beans, they also roast coffees from around the world, including varieties with Specialty Coffee Association of America (SCAA) scores of 90+ (an extra B150-200) and Cup of Excellence competition winners (an extra B100). Take your brew of choice either syphoned through their steampunk coffee-making machine, poured from the chic undercounter espresso maker (from B120) or put through the slow-bar process (from B140). Also known as Intercof, their coffee academy offers courses from SCAA and Specialty Coffee Association of Europe certified instructors. 733 Pracha Songkroh Rd., 085-044-2662. Open Tue-Sun 11am-8pm

This Jun 14-17, French chef Alain Passard returns to Bangkok to pay an exclusive visit at Issaya Cooking Studio. Considered one of most important French chefs in the world, the master behind the three-Michelin-starred L'Arpege has led the way for vegetable-focused fine dining since completely ditching red meat from his menu in 2001. Passard also recently topped the 100 Best Chefs in the World 2017 list by France’s Le Chef magazine, which is determined by the votes of Michelin two and three-starred chefs. During his visit, he’ll throw cooking classes from 11am-2pm (B5,900/person) and chef’s tables from 7pm (B12,500 including wine). Seats are very limited; book yours at booking@issayastudio.com. Here you can see the chefs frying your kimchi rice on a teppanyaki pan in the open kitchen, before they finish each dish with a runny fried egg and either spicy pork (B200), bulgogi beef (B220), chicken (B190) or tofu (B160). What’s more, they have some of the best pajeon (Korean pancake, B150) in Bangkok, made with leeks instead of spring onions. G/F, Show DC, Rim Klong Bangkapi Rd., 02-203-1765
Bangkok’s new gin bar hides down the largely residential Thonglor Soi 1. Just a Drink Maybe draws you in with its enormous collection of bottles all lit up behind the bar, while a neon sign bearing the bar's name casts a blue light over the brick-dominated room. This laidback spot serves up drinks like Beauty and Hendrick (B350), an elegant take on the G&T combining Hendrick's gin, the cherry-tasting Thomas Henry Blossom Tonic and Aperol, where the sweetness is balanced out by lemon juice. Heading into yet more creative territory, the AO Show (B300) is a mix of chamomile-infused Brooker's Gin, Carpano Bianco, Creme de Cacao Blanc and simple syrup, shaken with lemon juice. 44/3 Thonglor Soi 1, 02-023-7285

Il Fumo
Fresh, simple and devoid of gimmicks, head chef Arnold Marcella’s small plates showcase New American cuisine at its most inventive. Then there’s Bunker’s brutalist concrete building itself, whose many angles and alcoves spread across three levels all roll into one another.
This grand old villa reborn as an Italian grill restaurant boasts some of Bangkok’s most prized beef. The on-site dry-aging cabinet brims with premium European cuts, while simple Italian-influenced dishes cooked on wood-fired ovens complete the food menu.
The drinks: While dinner here comes at “special-occasion” prices, the cocktails have proven a real reason for returning frequently. New concoctions make it onto the menu every month or so, with bartenders looking to make the most out of the same ingredients currently in use in the kitchen. Fresh flavors abound in the likes of the Yuzu Whiskey Sour (B320), made using Suntory Kakubin whiskey, yuzu puree, passion fruit juice and lemon juice, and the Siam Sipper (B280), which sees Plantation Silver Rum enhanced with lime, aloe vera juice and pandan syrup.
The drinks: Husband-and-wife restaurateurs Choti Leenutaphong and Debby Tang, of Vesper, have enlisted their Soi Convent cocktail institution’s team to create a drinks list that’s far more traditional than Vesper’s. A 10-strong list of “vintage” cocktails draws on old recipe books and classical inspiration, resulting in a Louis Old Fashioned (Bulleit Rye, Licor 43 and orange bitters, B420) devised circa 1906. They’ve also unveiled a new martini line, mixed and served table-side on a trolley—try the Stuzzichino (B490), which features vodka, vermouth, orange bitters, sausage oil and a blue cheesestuffed olive.

Canvas NEW! The team from Thonglor speakeasy Rabbit Hole presents creative locavore flavors at Bangkok’s most exciting new kitchen. Here, Texas-hailing chef Riley Sanders heads a kitchen that paints with the flavors of Thailand as inspired by world cuisine. The drinks: Head bartender Naphat “Yod” Natchachon keeps standards on a par with Rabbit Hole while complementing the local flavors of the restaurant. Sooth Your Soul (B450) utilizes a rare Chiang Mai leaf called bai nium which our grandparents used to burn and eat with Hong Thong Rum back in the day. Here they infuse the leaves with coffee beans in cognac, mix that with sweet vermouth then serve it with star anise smoke. Tropical botanicals also star in the Canvas Martini (B450): gin, aloe vera vinegar, dry vermouth, ylang-ylang flowers, black olive and coriander flower. 113/9-10 Sukhumvit Soi 55 (Thonglor), 099-614-1158. Eat Me Now a regular in Asia’s 50 Best Restaurants, Eat Me has managed to remain relevant for nearly 20 years as a buzzing spot for cocktails and dinner. Chalk it up to its mid-century concrete decor or the sexy staff, but chef Tim Butler’s reliably delicious brand of Pacific Rim and Mediterranean cuisine deserves credit, too. 1

The drinks: The latest concoctions from mixologist Buntanes “Pop” Direkrittikul take Thai flavors to another level. Much like a chef, he uses only fresh ingredients resulting in flavors that are almost too real: the Gaeng Kaew Wan (green curry, B320) cocktail comes fully loaded with garlic. Personally, we drink the Laab Moo (B320), which interprets the minty Northern salad with a crispy strip of Serrano ham and a rim flecked with a crunchy mix of cilantro, rice and mint flakes. Vogue Lounge
Sri Trat Sitting in a contemporized wooden house with a luxurious edge (those richly azure, button-backed leather sofas), this restaurant specializes in one of the lesser-known regions of Thai cuisine: the eastern provinces, especially Trat. The drinks: Chennarong “Jan” Bhumichitr, Thailand’s senior brand ambassador at Diageo Moet Hennessy, looks to ensure that cocktails live up to the regional integrity of the food. The purple-tinged Salacca Fizz (B360) features the pungent, sour taste of salak (aka snake fruit), along with butterfly pea-infused gin, while The Garden (B340) is a mix of Pimm’s No. 1 Cup, lychee liqueur, lime juice, elderflower and rambutan syrup. Bursting with freshness, the results are a full-on and aromatic experience. 90 Sukhumvit Soi 33, 02-088-0968. Open Sun-Mon noon-11pm; Wed noon11pm; Thu noon-11pm; Fri-Sat noon-1am
Vogue Lounge The glam rooftop bar and restaurant at MahaNakhon doesn’t just have chic, ‘20s-meets-modern decor going for it. The kitchen does a super-tasty line of fancy burgers (get the teriyaki burger with wasabi mayo). The drinks: The cocktails here taste as good as they look, mostly taking a floral and refreshing route. One drink with considerable kick is the Aged Aroma Negroni (B360), a blend of gin, coffee bean-infused Campari, Vermouth Rosso, chocolate bitters and vanilla oil infused with Italian herbs, aged in an oak barrel for two months. Despite the glitzy setting, drinking here is actually pretty affordable. Every day from 5-9pm, Fashion Hour gets you buy-one-get-one-free on all standard drinks. There are also 500ml jugs to share between 2-3 people—we recommend the Vogue Lounge Tonic (B850), a mix of chamomile tea-infused gin, apple juice, vermouth, lemon juice and cardamom syrup.

Vesper Upscale tapas bar or restaurant that happens to serve great cocktails? However you view Vesper, you can’t leave without splashing out on some serious drinks as well as Mediterranean cuisine. The drinks: Launched in February by former bartender Milk Palin, the cocktail menu here is called The Art Book and takes the form of a ring-bound tome styled after Phaidon’s cult publication of the same name. This ambitious undertaking charts an ever-growing list of boozy creations inspired by famous works of art. New head bartender Supawit “Palm” Muttarattana, Thailand champion of the World Class Cocktail Competition in 2012 and co-owner of Backstage Bar in Thonglor, has made his own mark on the menu, with must-tries like A Lawn Being Sprinkled (B420), a strong yet refreshing mix of rosemary, thyme and black pepper vodka, rose water, orange blossom, vermouth and celery bitters. 10/15 Convent Rd., 02-235-2777. MASTERCHEF THAILAND
TOP CHEF THAILAND
The first season of MasterChef Thailand premieres this Sunday (Jun 4) from 6:20-7:50pm on Channel 7. The UK-born cooking show started in 1990 on BBC before its popular Australian spin-off transformed the format into the current revamped version. Apart from Australia, MasterChef has had more than 40 adaptations internationally. The Thai version features Piyathida Mittrirarot as the host while celebrity chef Ian Kittichai and food critics M.L. Pasan Svasti and M.L. Kwantip Devakula stand as judges.
After nine episodes, it comes down to four final chefs in the intense culinary battle this June. For those who haven’t tuned in, the Thai version of the American reality cooking competition premiered on Mar 25. Each episode, chefs compete against one another in a Quickfire Challenge (where they cook or complete a task quickly for an advantage on the next challenge) and Elimination Challenge (where they cook for the judges to decide who should leave). Top Chef Thailand is hosted by Pitipat Kootrakul with familiar chefs as judges, namely Thitid Tassanakajohn (of Le Du), Supamongkol Supapipat (of Chef’s Table by Chef Art) Pichaya Utharntharm (of Chef’s Table by Chef Pam) and Willment Leong (of Thailand Culinary Academy). Screens every Saturday from 8:15pm on GMM One Channel.

Hokkaido Ramen Gantetsu HHHH Ramen. 8/4 Soi Anuman Rajdhon, Surawong Rd., 02-634-4381. Open daily 10am10pm. B-BB
When the first things that greet you in a ramen joint are B98 Suntory highballs and garlic crushers on the tables, you know you’re in business. At Hokkaido Ramen Gantetsu, the Silom outpost of a little ramen shop in northern Japan, cheap booze and liberal fresh garlic are backed up by one of the creamiest and most balanced tonkotsu (pork bone) broths this side of Lumpini Park. The miso tonkotsu charshu special (B258) comes with five handsome slices of pork, bamboo shoots and a hearty portion of nicely springy, chunky egg noodles. Throw a perfectly fudgy braised egg (B28) in there for the full works. A word of advice, though: stick with the miso broth. The soy sauce (shoyu) option is intensely salty, and ruins

Brought to Bangkok by the S&P group, Japanese chain Umenohana specializes in Kyoto kaiseki (traditional Japanese set menu dinners). The bamboo-heavy space delivers the full Japanese look—tatami mats, rice paper walls, a decorative stone garden—but not quite the experience. A large a la carte menu supplements the kaiseki sets (which range from B1,250-B3,950). The first section is dedicated to housemade tofu in many forms, including the hiyashi tofu (fresh cold tofu, B240)— three soft, chilled chunks with bonito flakes, ginger, spring onion and soy sauce on the side—and hot tofu skins (B320). Pay B130 extra to have them formed freshly at your table from a
the balance of this store’s delicious tonkotsu underpinnings—something that’s especially felt in the tsukemen (dipping noodle ramen, B238), where the undiluted, salty side soup quickly becomes a chore. Given that the whiskey’s so cheap and the tonkotsu a delight, you might be surprised to find you’re the only people dining in Gantetsu’s poky but pleasant, concrete-clad slice of a Silom side street. We put the lack of customers down to nearby Ramen Tei. Most lunch hours in the week, we’d also plump for Ramen Tei’s reliably gigantic bowls of milky broth or steaming, buttery curries, but there’s an after-hours vibe to Gantetsu that’s lacking from the bright lights and television screens of its popular neighbor. And if you’re looking for a cheap daytime fill, this place can also dish out some excellent fried cutlet sets all at B178 complete with rice, miso soup and other little side nibbles. Outside of its ramen, Gantetsu never really does anything spectacular, whether it’s fried chicken (B118/4 pieces) that seeps slightly too much oil, or gyoza (B118/6 pieces) wrapped in chewy skins, but who really cares when it gets the stuff that matters right? Properly stewed broth, delicious noodles and a pricing policy that begs you to have another each time your glass is empty.
pan of soy milk. Whichever way you choose, the results are refined and well-cooked, if lacking the satisfying freshness you get at Mitsumori or Sustaina. When ordered with the pork sauce, dubbed donabe mabo tofu (B320), it’s tasty, albeit not quite a match for the flavors of a Sichuan mapo tofu from which it seems to take influence. Taraba (king) and zuwai (snow) crabs are available as sushi, sashimi, shabu, tempura, baked with cheese and with rice. Though the king crab chirashi sushi (sushi rice bowl, B850) has well-seasoned rice and is packed with moist, cracked steamed crab, the results are rather bland. Save your cash and go with the unagi seiro (steamed eel rice bowl, B360) which, though on the small side, is packed with tasty soy sauce-seasoned rice and topped with firm and flavorful eel. Despite first impressions, it feels like this local chain has lost its kaiseki soul somewhere along the franchising line. Servers are often out of earshot, while on our last visit, they delivered all our dishes at once rather than in order. Given the prices, we can think of plenty more solid kaiseki contenders, even in the Thonglor area alone.

Stax DIner This new diner serves the only thing better than Daniel Thaiger burgers: bigger Daniel Thaiger burgers. The buzz: Two of the creative forces behind Brew Beer & Ciders bar and Daniel Thaiger burger truck team up to open an American-style diner restaurant at The Commons. The decor: The glass-fronted shop that used to be Jona Waffle has had its twee dangling bulbs and indoor plants replaced by an eye-popping mural of what looks like a burger-ified Where's Wally? scene. They're promising to install a few booths and more retro bric-a-brac to ramp up the character. There's communal outdoor seating, with plans in place to make this floor of the mall more nightlife-oriented. The food: A previous collaboration between the two resulted in a glorious back-to-basics burger at Brew. Also headlining

here, the Classic Stax Burger (B260/two beef patties, B320/ three, B380/four) looks to recapture all that was good about old-school American fast-food burgers with flat patties, oozing cheese, zesty pickles and buns that won't give out on you half-way through. Another winner is the fried chicken burger (B260) featuring bird that's both crisp and juicy due to a process of overnight brining. The burgers are joined by buffalo wings (B180), a variety of fries (B160-240), plus all-day breakfast selections like French toast (brioche with Nutella sauce, banana and ice cream, B200), pancakes (with maple syrup, B200) and guacamole-topped brioche with poached egg and crispy cheddar (B240). You can still get a few types of Jona's waffles, too (from B200).
The drinks: There are beers like Corona (B220), Rogue Amber Ale (B220) and Bacchus Kriek (B250), coffee from Roots (from B80) and soft drinks like Dr Pepper (B90), but we'd go straight for one of the killer milkshakes (B160) in no-nonsense flavors like chocolate, vanilla and strawberry. Why you should care: If there's been one thing lacking at The Commons thus far it's burgers, and they don't come much better than this. They're also vowing to open bright and early for breakfast soon. Carl Dixon 2/F, The Commons, Thonglor Soi 17, 02-185-2472. Open Mon-Fri 11am-midnight; Sat-Sun 10am-midnight
