That the man who revolutionized eating out in Britain is Bangkok-bound Michel Roux founded one of the top restaurants in Great Britain. But don’t hold that against him. In the ‘70s, the French culinary legend was responsible for revolutionizing what fine dining meant on the famously culinary-challenged isle. Today, his restaurant, The Waterside Inn, remains a three-Michelin-star gastronomic temple. Book your seat at Le Normandie when he comes to town this Sep 25-30 for a masterclass in old-school French fine dining. The five-course lunch is B4,900 and sevencourse dinner B8,900. That a horror film has been made about Sathorn Ghost Tower GDH just released the first teaser for its upcoming film, The Promise, directed by Sophon Sakdaphisit (whose credits include Ladda Land and The Swimmers), and featuring prominently is Sathorn Unique Tower, that abandoned monument of economic failure better known as Ghost Tower. It’s still too early say what the plot is exactly about, but the film is said to be set during the 1997 Tom Yum Kung financial crisis. We’ll find out more on Sep 9. That animal cafes are the new cat cafes It started with a place where you could pet fennec foxes. Then came a place out on Ekkamai where cafe hoppers got to sit with raccoons, followed by a spot on Narathiwat with its own line of exotic cats for strokes and cuddles. Now the latest addition to Bangkok’s booming pet cafe scene has opened in Siam Square, Kitties & Bears, complete with its own raccoons and meerkats. That Bangkok has a new gourmet grocery store Rama 4’s teeming market-slash-restaurant El Mercado (490 Soi Phai Singto) has transformed a little room at its front into The Grocery. Here, you’ll find ready-to-go selections of cheese, cold cuts and meats, bread from Amantee, fresh-baked Viennoiseries, fresh fruits and veggies, wine, beer, milk and more. They also have an oil and vinegar refill station. Open daily 8am-10pm. That one of Phuket’s top foodie names is about to invade Bangkok Jamie Wakeford, the Scottish chef behind Chern Talay’s buzzing Bampot bistro, will open a place in Suan Phlu before the end of the year. He won’t go into much more detail for now, but here’s hoping for a similarly spectacular blend of modern European cuisine and top local produce.

Even the bouncers at Havana Social don’t bother with the secret phone thing any more. Last time we were there, they were just holding the door open. But secret bar gimmicks aren’t dead just yet. The latest spot in town (see page 16) hides behind a row of gym lockers, which would be great if the bar was, say, in a gym. But at a Thonglor community mall… you kinda know something’s up.

Nopparat Kulhiran, 65, has earned the nickname “Madame Tank” as the vice president of Chaiseri Metal and Rubber Limited. Her company manufactures stateof-the-art military vehicles capable of withstanding blasts that would tear through a traditional armored vehicle. Born into a conservative family that expected her to get married and raise a family, Nopparat now runs her company with an iron grip, doing deals with top-level military personnel around the world. Here, she shares the story to her success. I started out fixing military vehicles with my husband. We knew we could improve them so just started designing our own. It took us 10 years and five designs to finally get our first military armor approved by the Royal Thai Army.

We thought Changwong Express, a Korean-Mexican fusion craft beer bar, was about as hipster as any restaurant could get. We were wrong. Replacing the Hong Kong-born Little Bao at 72 Courtyard is a new place also doing bao, this time with a Korean slant, alongside tiki-themed cocktails and served on tables which double as retro videogame consoles. Mind. Blown.

Next year marks 50 years since we signed the first contract paper with the Royal Thai Army to fix their military vehicles. I design all the vehicles myself together with two of my sons. The country is only stable when we can build our own military weaponry because when anything bad happens, we have to be able to protect ourselves. No other countries are going to help us.

It was fun seeing Somchai Wongsawat and Big Jiew in news again recently. It made us feel all warm and nostalgic, like when a 10-year-old boyband comes on VH1 that you’d totally forgotten ever existed. What was their name again? The People’s something or other. Those were the days: cigarettes cost B70 a pack, Starbucks was the exciting new coffee shop, and magazines could take the piss out of ruling politicians without getting arrested.

Whenever we have a coup, countries like the US or Germany or Sweden stop exporting spare parts for military vehicle armor to us. I was once investigated by the FBI for visiting too many army bases around the US in two days. I was just checking out what spare parts they had for sale.

I wanted to be a teacher, and after my bachelor’s degree I began working at Assumption Convent School.

He told me to think big, think outside the box. Don’t just fish in a small pond, fish in the ocean.

I had guns pointed at me while helping out at a volunteer camp near the border in Petchabun as a student teacher in the 1970s. I had borrowed a border patrol police car and was stopped by a bunch of armed Hmong people, but came to no harm because they saw I was just a girl with pigtails.

Whatever you do, never get a loan. It makes you worry about money and you can’t work at 100-percent steam. Save money and work with what you have.

After the Thammasat Massacre [Oct 1976], everyone was leaving the city to lay low in the forest. I had connections with the border people, and my father was afraid that I would run away to hide with the Hmong people in Petchabun, so he arranged a marriage for me. My fun life ended after I got married. My mother-in-law said my husband and I would need to make a lot of money. I asked my dad for some advice on that and he said, “It doesn’t matter how much you make, what matters is how much you save.”

Being a wife and mother is an equal responsibility. I like to take care of my husband and my sons. I work less than before now, and spend more time tidying up the house and preparing food. Because I am a woman, whenever I visit army camps around the world, they don’t really show any signs of being threatened by me, so I can walk around quite freely. My advice for modern women is to stand by themselves. Have a solid foundation for yourself first; don’t just rely on men. In my free time, I paint and make flowers from pandan leaves. It relaxes me. If you’re looking for sustainable seafood, look no further than this oyster joint run by seafood importer Bill Marinelli, who handpicks produce that’s then imported twice weekly from Canada and the U.S. The menu focuses on ultimate freshness and bans farmed fish at all costs, meaning what’s on offer depends on the best quality finds that the chef can get his hands on. On top of their signature oysters, you’ll also find mollusks, catchfish, lobsters and snowcrab.

How can custom-made furniture offer more flexibility? Mass furniture production requires a big manufacturer with machines set for a specific purpose that are not flexible for adjustment. The handmade process with a skilled carpenter allows more creativity because a piece of wood can be adjusted in any way. That flexibility also makes your work an original piece with unique character. When you work by hand, it surely comes with less precision, but that’s the charm of one-of-a-kind furniture piece. I think it’s sad to replace all local skilled carpenters with imported machines.

Finally, Chiang Mai's got itself a serious new cocktail bar. Located just outside the Old Town, Drinksmith (064-648-6020, www.fb.com/drinksmithcnx) oozes Parisian charm with its moody lighting and green walls, while its drinks draw on local ingredients and flavors. The magic happens behind a great long wooden bar, where bartenders muddle and shake before beautifully decorated shelves of liquor. Fruity house infusions feature in concoctions like the Flamingo Stomper (B250), which sees vanilla vodka blended with strawberry, lime, hazelnut and coconut milk, or the Oopsie Daisy (B300), where elderflower and vanilla liqueur comes with fresh lychee topped with prosecco. During the day they serve bistro-style brunch items and coffee, while dinner spotlights meaty dishes.

Here’s something a bit different that’s trending up north. From a gorgeous, antique-filled house with lush green garden, Bombay Hut (090-252-0563, www.fb.com/BombayHutByChefChang) offers multi-course meals that chart home-style yet complex Thai and Indian flavors. The restaurant is reservation-only, with lunch starting at B280/person and dinner at B550/person. When you call to book you can request popular dishes like a zesty raw mango salad, liver pate or chicken curry roti; otherwise you’re leaving it up to chef Kroongtana "Chang" Nimnu to craft your menu, which could feature anything from a chicken green korma to wild rice pudding. After shutting down its Ekkamai location in June, Pyongyang Okryu, a controversial chain of eateries operated by the North Korean regime, has returned. A dining room laced with kitschy touches sets the scene for traditional Northern Korean food that’s not dissimilar from the more familiar Southern fare, including bibimbap (B280), bibim myun (mixed cold noodles with sweet chili sauce and boiled egg, B280), so galbi tang (beef rib soup, B300) and Korean barbecue (from B300 for 500g of pork belly). Every night at 8pm, the restaurant comes alive with old-school disco lights as the glittery waitresses perform a 20-minute song and dance. Locker Room Cocktail heavyweights from around Southeast Asia present the city’s most buzzing new “secret” bar. By Choltanutkun Tun-atiruj

The buzz: Hidden away behind a wall of grungy looking lockers at Thonglor’s new late-night foodie mall, JIA, this speakeasy showcases some of Asia’s top mixology talents. At Locker Room, Ronnaporn “Neung” Kanivichaporn from Thonglor’s Backstage Bar teams up with Hidetsugo Ueno from Bar High Five in Tokyo, Colin Chia from Nutmeg & Clover in Singapore and Nick Wu, third in the World Class Cocktail Competition 2016, from East End in Taipei. They’re joined by Fahbeer Sopajaree (formerly of The Owl Society Whiskey Saloon) on head bartender duties. The decor: Finding the lockers is just the beginning; look for the Chinese restaurant named Ping’s Kitchen. You’ll then have to figure out how to open the door (hint: it’s not as complicated as it seems). Step through and you’re greeted by a spacious, moody room with raw concrete walls and black mirrors behind the bar. There’s counter seating where you can watch the bartenders in action, or those seeking more privacy can head behind the dark curtains. The drinks: The menu’s “Past, Present and Future” concept sees classic cocktails like the Bloody Mary and French Connection each given three different spins. Ueno takes charge of the “Past” section, offering mostly faithful renditions of traditional favorites, before Wu and Chia add modern twists in “Present,” and Neung steps things up by incorporating high-wire touches in his “Future” adaptations. While Ueno’s take on the Bloody

Mary (B360) is a fairly straight (though super-smooth) take on the vodka- and tomato juice-based staple, Wu’s Harakiri (B390) instead incorporates tequila and Japanese plum liqueur with various herbs for something considerably different. However, Neung’s version, the Bloodless Maria (B390), is on a whole new level. This clear, martini-style drink uses mezcal instead of vodka and also features tomato sous-vide with vermouth. His take on the French Connection, a cocktail typically made with equal parts cognac and Amaretto liqueur, called Nuts Over Michelin (B390), is another absolute must-try starring foie gras fat-washed cognac as the base with an almond and black sesame syrup, egg white and lemon juice. The music: Big band jazz classics. The crowd: In-the-know cocktail connoisseurs, many of whom are bar owners themselves, and Thonglorites looking to try something different. Why you should care: This is a serious speakeasy bursting with innovation, yet it all comes at thankfully friendly prices (note: they’re all net). After former head bartender Wareewan “Oil” Yodkamol jumped ship for Sathorn’s Bunker, this Australian restaurant recruited Montrey “Win” Kumphai, previously of the St. Regis hotel’s bar. His new drinks keep up with the restaurant’s fresh theme. Get the White Magic (B340) for an aromatic mix of basil, thyme and dehydrated lime. The Corretto Coffee (B360) is perfect for a hungover weekend brunch, a nice balance of espresso, vodka, coffee liqueur and coconut liqueur, topped with milk foam and cocoa powder.

Three months after opening, this Thonglor gin hub has already announced the second, much easier to understand iteration of its menu. Drinks are placed around a wheel divided into four flavor profiles: sweet, sour, smooth and bitter/earthy. Try the well balanced, sweet and sour BBQ Maybe (B350), which features Chinese dried meat-infused gin, lemon juice, Taiwanese black tea syrup, red wine vinegar, egg white and crushed peppercorns, served with barbecue chips. Rum fans should try the deceptively simple Kungfu Tofu, Maybe Not (B350)—tofu-infused rum, coconut water and peanut syrup.

The new menu from this Thonglor speakeasy also aims to make your drink selection simpler. By splitting the menu into categories—Spirit Forward, Dry, Fragranced and Savory—you can know what kind of flavor to expect. Each category contains 7-10 cocktails, both signatures and classics with small twists. For something basic yet very aromatic, we recommend Goma (B380), which includes roasted black sesame sous-vide Nicaragua rum, coconut water and lotus flower syrup.

Palm Muttaratana has been leading the bar at Vesper since Milk Pailin left for St. Regis’s Zuma, and it’s time he launches his own cocktail menu. To go with Milk’s “The Art Book” (each cocktail takes inspiration from a historic painting), Palm reinterprets 15 “modern classic” drinks. Among them you’ll find the White Negroni (B370, invented by Wayne Collins at VinExpo in Bordeaux, 2001), a drink that combines Tanqueray gin, Carpano Bianco Vermouth and Luxardo Bitters Bianco (Italian herb bitters).

That restaurant’s chef, Ruben Gonzalez, teams up with husband-wife duo Manatsanan Charoensuk and Jorge Arnanz to give a three-story space on Soi Thonglor a Spanish makeover through beautiful patterned tiles and yellow accents, and serve authentic flavors. Prices are also cheap for this part of town: small plates start at B130 for the gazpacho and B150 for gambas al ajillo (garlic prawns) and albon-

Taburete Best for: After-work sangria and small plates After a couple of years on Sukhumvit Soi 24, Taburete arrived on Sala Daeng right at the end of 2016, where its petite shophouse offers a Catalan-boho moodiness and tapas close to its back-alley Barcelona best. The Thai chef-owner spent 10 years learning her trade in Spain, experience that shows in delicious tapas staples like patatas bravas (B130) and croquetas de jamon Iberico (B140)—little cheesy flour bombs that we only wish were bigger. Ari Samphan’s quaint pizzeria and wine bar, Cantina, is a big hit with the neighborhood. Even on a weeknight, getting a seat in its rusticated, raw brick and wood interior demands reservation long in advance (in the past, we’ve been unlucky four hours before service). Our tip: make your reservation for the second floor, where the vibe is cozier, in full view of the pizza-making kiosk, and detached from the resonant buzz of downstairs. One of Cantina’s strongest draws has to be the wine list. Sommelier Mathew Milotich has been the head man here since the day it opened in late 2016, and his huge, stunning wine rack straddles two stories with over 60 labels. By the glass, things start at B250 and by the bottle at B950 (Edi Simcic Pinot Grigio 2015). Last time we visited, Milotich was also

Ekkamai’s Cajun and Creole food institution is a guilty-pleasure kind of place. Half the time you’re sitting in that new Korean fusion bao specialist, we bet you wish you were here, shirt covered in a kitsch paper bib, tucking into a sticky full rack and chugging down beers. The dining room, unchanged since forever, is the kind of wood-paneled, red-brick space which even people who only know America’s South through TV will recognize, while the burly, friendly, goateed clientele are equally as in place. The phone book menu presents comfort food at stuck-intime prices—try finding a B150 whiskeysour over on Thonglor—whether it’s burgers, enchiladas or Southern specialties. The full-rack of ribs (B570) is huge, meaty and moist, accompanied by two mountains of mayo-slathered veg. One potato, the other… something else. You can taste all of the near-B300 which you’ve saved from going to

on-site to guide us. The pizza (B280-B520) is good, but not in the same league as the best in town. Our main issue is with the 24 hour-raised pizza dough, which just doesn’t have the texture and crispiness we’d hope for, but the tomato sauce is also so freaking salty we’re not sure if it’s a strategy to make you order more wine. Still, the toppings showcase some excellent produce, like a tantalizingly creamy burrata and excellent parma ham (B490). The kitchen could also do a better job with its over-salted pasta, which, in the case of a squid ink tagiolini (B420), lacks al dente bite despite the fresh, firm seafood. Elsewhere on the menu, things read more like an Ekkamai brewpub than authentic pizzeria. The kurobuta pork steak (B490) is not only expensive, but also accompanied by dehydrated spinach and cold, bland mashed potato. Dressed in an acidic-and-sweet pineapple sauce, the flavor is actually quite pleasant, if not in keeping with the Italian vibe— which elsewhere really shines. The service is professional and helpful, and willing to dish out a complimentary digestif of limoncello. We’d advise against finishing things off with the tiramisu (B200), which is too heavy on the mascarpone, but Cantina definitely has its place. As a wine bar, it’s the best in the neighborhood, and enough reason alone for us to someday return.

Smokin’ Pug, but they still have their own sweet-and-smoky appeal, as well as plenty of tender meat to gnaw at between them bones—the high point of a satisfying if never eye-popping meal. The woefully underseasoned chicken and andouille pork sausage gumbo (B140/small, B195/large) only comes alive once you add a dash of table salt, revealing well-stewed meat and a smokily moreish flavor. Don’t, however, go digging for the kind of intense andouille you’d find in the best Creole kitchen. This stuff’s more like a spicy hotdog weiner. It’s a sign that, at Bourbon Street, reasonable prices and consistently good-enough flavors are a priority over produce. Same story with the cash-and-carry-style burger bun, same story with the pleasingly crisp but almost certainly frozen French fries. The burger (starting at B220) itself, though, is a fine thing, juicy and thick and cooked to a medium pink, as ordered (just don’t bother with the lackluster chili option, B245). The Cajun-style boiled shrimp (B370/0.5kg, B720/1kg) are another safe bet. Not because of the reappearance of that andouille hotdog weiner, but because the broth is a triumph of tangy, Cajun herbs and spices. Have them with a glass of the B220 house chardonnay, which is surprisingly crisp and balanced. Come dessert, signs of that it’ll-do produce reappear in the airy vanilla ice cream, but with apple pie this tasty, who cares? Much like Bourbon Street overall, a few cut corners don’t spoil everything.

The buzz: Following the closure of Thonglor Soi 13's Bellino Wine Room and Boutique, effervescent owner Jay Boccia is back with this mostly-outdoor bar spotlighting well-priced wine and tapas at the petite 49 Terrace mall. The decor: Located just below La Bottega di Luca, at first glance Chez Jay looks little more than a boho collection of sofas, stools and low tables blending with the trees and string lighting of the open-air mall. There are a few throwbacks to the gypsy-bordello stylings of Bellino in the form of tasseled rugs and distressed wooden accents. The bar sits outside while inside has barely enough room for a single dining table and a small kitchen. The food: Simple Mediterranean small plates made for drinking, in which top quality imported and local produce does most

of the talking. Burrata is flown in from Italy every Friday and served up with local tomatoes at B400, while the marinated anchovies (B200) from Sicily are delectable with a squeeze of lemon on top. On top of cold cuts (starting from B395 for a meat platter or B725 if you also want cheese), there are also homespun cooked bites such as lasagna (B325) and pork meatballs (B295). Conkey’s ciabatta bread also goes excellently with Vivin’s pork terrine and duck liver mousse (B325).

Indie concert promoter Have You Heard? follows up its sold-out Phoenix concert (Aug 17) by welcoming Brooklyn noise-pop band DIIV. British singer-songwriter James Blunt, best known for his chart-topping 2004 hit "You're Beautiful," is set to serenade Bangkok once more. Action. This live-action take on the popular manga sees a young samurai try to survive as best he can after aliens invade feudal Japan.

Action. Two car thief half-brothers travel to the south of France to seek new opportunities, but end up messing with the wrong guy and putting their girlfriends’ lives in jeopardy.
