Nahm’s former head chef shines light on his new project INTERVIEW

Prin Polsuk, the former head chef at Nahm, has quietly carried the torch for Thai cuisine and young Thai chefs. Recently, Prin stepped out of David Thompson’s sizable shadow and opened Samrub for Thai, a semi-private cooking studio behind 100 Mahaseth. We asked Prin about inspiration, his obsession with ancient cookbooks and where the future of Thai food is going.

Was cooking always in your plans? No, I only wanted to eat. I became a chef by accident. I studied engineering, [but] I didn’t really excel in the subject. I ended up working at the Mandarin Oriental with chef Vichit [Mukura], who gave me an opportunity. I worked in the butcher’s room for three years, cleaning everything, butchering everything. When I started to cook, I met David [Thompson]. I don’t know if it was destiny, but I found a job application looking for Thai chefs to work in London in the newspaper, and I tore it out and sent my CV. What have you been doing since you left Nahm? At that time, I had recently met Mint, my partner and my boss, and we had a lot of conversations about how can we make great Thai food more accessible. We did our first pop-up at Jack’s, a shitty riverside bar near the Shangri-La hotel. It was kind of an experiment to see whether we could serve great, clean, delicious food in an atmosphere where people would value the food more than its surroundings. Then we decided to open a tiny kitchen, make it more regular and invite friends and family to eat and drink together. Tell us about Samrub for Thai.

“I don't watch chefs on Netflix or Youtube.” FASHION MEETS PRACTICALITY

It’s about sharing knowledge… and also because I like to drink after work. We want everyone to have a more personal approach with us while also making it educational through the experience. We also want to save lost ingredients. You’re a collector of old cookbooks. How do you use ancient recipes in your cooking? Most of the books I read don’t have measurements, and so it challenges me, and my taste

buds. This inspires me to cook at least one dish that I’ve never cooked before. We change the menu every month, so it gets interesting for us because we always have something new to create. Every single dish I make is inspired by the past, from street food to local home-cooking that not many people experience. I don't want these recipes to disappear.

XENOPHOBIA Yes, the coronavirus outbreak is awful, but it’s no zombie apocalypse, either. So why are we treating every Chinese citizen in Bangkok as if they were patient zero? If you shop at IconSiam or get cheek-by-jowl with Chinese passengers on the BTS, odds are you’ll be just fine. Let’s not stoop to the level of other countries and start uninviting Chinese exchange students or refusing Chinese customers.

Where do you eat when you’re not working? We love going to Eat Me; it’s [my partner] Mint’s favorite. We also spend time at 100 Mahaseth, Jua and Sake no Mise. We love the somtam in Suan Phlu, opposite the police station. But the most comforting food is always our home cooking. Sometimes I cook, sometimes Mint cooks. Are there any chefs in Thailand that inspire you? David, for sure, my mom and the amazing people in the Thai countryside. I don’t watch chefs on Netflix or YouTube—I follow the chefs that live in the country, the ones that grow their own ingredients, the ones that wake up every day to prepare the same things, and the ones who cook in their homes and use what’s available. What are your thoughts on the future of Thai cuisine? There’s really nothing new now, I guess. Everything has been done—molecular Thai, innovative Thai, now everyone is coming back to the original. I think the future is about the ingredients. The future will get better if the food and restaurant industries work together to preserve ingredients, techniques and styles. It’s not about Thai food. It’s

As of this writing, there’s no word on who will be participating, but if the last two editions are anything to go by, expect plenty of culinary firepower. Seafood importer Thammachart Seafood (The Dock; Seafood Mahanakorn) has opened a second Lobster Lab kiosk at the new Commons. Straying from their namesake, they’ve diversified with bloody Mary oyster shooters (B100 each) and pocket-friendly lunch sets like herb-crusted salmon with kale-carrot slaw, green pea guacamole and lime crema sauce (B255). Elements has just revealed a new menu for winter. 12 Clara lives up to lofty expectations The buzz: Four-month-long pop-up Waiting for Clara acted as a prolonged drumroll for this hotly anticipated opening, where powerhouse couple chef Christian Martena and Clara del Corso, formerly of Opus and Sensi, run the show. The vibe: Taking over Yenakart Villa art gallery’s former digs, the venue is jaw-dropping. A perfectly manicured garden dotted with Val-style sculptures surrounds the restaurant. The spacious interior is equally impressive, its two stories imbued with a warm vibe through white walls, white table linens and high ceilings, all bathed in romantic lighting designed by Matteo Messervy. Paying homage to its past life, the restaurant also serves as a backdrop to abstract works by local artist Somboon Hormtientong, who represented Thailand at the Venice Biennale. The upstairs mezzanine offers a cozier, more private dining experience, though we prefer the buzzy vibe downstairs. The restaurant also offers a semi-private chef’s table that overlooks the kitchen, featuring unique “tattooed” chairs by Tantai and intricate decor by P. Tendercool. The food: Those familiar with chef Martena’s work already understand the passion he pours into his native Italian cuisine, which he injects with modern yet approachable touches. Using both European and local ingredients, he whips up two menu options: seven courses (B2,280) and nine courses (B2,580), both of

which may shift daily depending on the availability of ingredients. They might include the refreshing yet soothing caprese—in this case, a creamy burrata soup with tomato sorbet and crisp bread crumbs— and a punchy risotto served with black lemon and coffee. Utilizing local beef tenderloin, the wagyu is cooked to rosy perfection and served with daikon and a red wine sauce. For something lighter, you can opt for the three-course a la carte menu (B2,180), which includes a starter, main and dessert. The drinks: Wine pairing is available priced at an additional B1,680 and B1,980, or you can select from the wide-ranging wine list, which includes labels from Italian wine producer Primosic. Start the night with a glass of Ferrari Maximum Brut (B380), a bubbly from Trentino, followed by the Ribolla Gialla (B400) or the Gmajne Chardonnay (B420), both from Friuli. If you prefer reds, try the La Carraia Tizzonero (B380/glass) from Umbria or the Banfi Chianti Classico (B1,880/ bottle) from Tuscany. Why we’d come back: Clara is heartfelt, approachable and reasonably priced, with near perfect service, an exquisite space and food that feeds the soul. Expect to hear this name often in 2020. Currently in soft opening, with a grand opening scheduled for Feb 12, Konkord (18 Sukhumvit Soi 11, 064709-9817) is an intimate cocktail bar and club from the founders of Tropic City and Sugar Ray’s Sitthan “Turk” Sa-Nguankun. Cocktails here are refreshing and easy drinking—ideal partners for getting down on the compact dancefloor to cosmic electronic beats. Try the cinnamon-laced Young Folk (Jameson whiskey, spiced apple cordial and soda; B330) or the potent Poetic Justice (B390) with caramelized pear-infused Jameson whiskey, pear eau de vie, absinthe, raspberry cordial and chocolate bitters. There are also plans to turn the front of the bar into a coffee-and-cocktails hangout.

From one of the owners of BKK Bagel Bakery, Kenn’s (163/2 Sathorn Soi 7, 066-149-5451) takes on the tried and tested formula of simplicity. Tucked down a Sathorn backstreet, the petite cafe has your mornings covered with its straightforward menu of plain (B70), chocolate (B70), almond (B80) and bacon-cheese flaky croissants (B105), along with espressos (B60), cappuccinos (B70) and iced Thai coffee (B80). French bistro chairs and black furnishings are given a splash of color with a bright red door and giant metallic mixer on display, while large windows usher in greenery from the small backyard. Everything from the cheese to the chocolate is imported from France.

Fronted by a colorful secret door, The Shot Bangkok (Yaowarat Soi 11, 095-551-7988) brings the mini golfand-cocktails craze to Bangkok. Two nine-hole courses across two floors are scattered with Chinese lanterns and murals (B350 for nine holes or B600 for 18 holes—book in advance for discounts of up to B300), with terraces offering views over Chinatown. Drinks here are infused with herbs, spices and teas found in Moh Mee’s creations. 18 Chiang Mai’s burger specialist comes to Thonglor From a small yellow food truck to an open-air bistro on Chiang Mai’s Nimmanhaemin Road, Beast Burger has now made its way to Bangkok with Beast & Butter (Thonglor Soi 10, 065-441-1145). Housed in a narrow, bright yellow shop in Thonglor, the restaurant features eight beer taps pouring everything from Italian larger to English IPA, and signature American-style burgers by chef Panthakit “Bond” Sadudeewong, with soft brioche buns, juicy patties, caramelized onions, cheese, bacon, organic lettuce and “beast sauce” (B230). Under the reign of David Thompson and Prin Polsuk, Nahm became essential eating. It won awards, ignited movements, became known worldwide. How do you take over and put your own stamp on such a commanding presence? That’s exactly the question Bangkok-born chef Pim Techamuanvivit is trying to answer. First things first: Pim is as decorated as Thompson, even if not as well-known on the Bangkok dining scene. Before she joined Nahm in 2018, she transitioned from Silicon Valley to successful food blogger and then chef-owner of San Francisco’s Michelin-starred Kin Khao, a restaurant that NY Times food critic Mark Bittman called “the most exacting Thai restaurant in which I’ve ever eaten.” Then, she came to Bangkok as a “consultant chef” and helped Nahm retain its Michelin star in the 2020 guide. It’s somewhat surprising, then, that there has been so little buzz around the work Pim is doing at Nahm. We popped in recently and found the restaurant was practically empty. Its black booths, polished black-tiled floors, gilded accent wall and synthesized easy-listening soundtrack suddenly seemed so spa-like. But then the food comes (available in set menus; from B740/person at lunch and B2,500/ person at dinner). Gone are the bold, in-yourface flavors you might remember. The restaurant’s identity now asserts itself through technique and balance. The ngob talay—served here with blue swimmer crab, chunks of prawn, red

grouper, wild ginger and red curry paste—is one of the best takes on grilled ho mok we’ve ever had: rich, creamy, smoky and spicy, all flavors perfectly complementing one another. The tom gati gai (savory coconut soup with chicken), which uses green mango to impart sweetness and sourness, is divine. So is the earthy, smoky grilled squid stir-fried with cardamom shoots and salted egg yolk. In these, home-cooking meets carefully sourced ingredients and the deft hands of chefs who carry on Nahm’s detailoriented legacy. Yet while some dishes really nail it, others leave you wanting more. Or less. With the gaeng bon (sour Isaan curry with snakehead fish) and beef massaman curry, the kitchen team is heavy-handed with the fish sauce. And desserts like “temptations of rice” (featuring rice five ways) are curious notes to end on, neither vibrant nor very memorable. It’s hard to say if Nahm is still essential eating. We can’t help but think the place would benefit from having Pim around every day, further crafting the restaurant in her own image.

Five years ago, when O’Glee first arrived in Ari, its rustic-chic industrial decor, cozy vibe and superb beer selection easily made it one of the neighborhood’s best bars. Spanish hotel chain Meliá made its Thailand debut last month with Meliá Koh Samui, an elegant 159-room and 41-suite luxury resort located on the north coast’s Choeng Mon Beach. Facilities include two restaurants, a fitness center, a spa, a 200-capacity ballroom, a mini water park, a beach club and two outdoor pools with a swim-up bar. Rates for a 51-sq-meter Duluxe Room start from around B4,800 per night including breakfast. The opening kicks off the brand’s Thailand rollout, which is set to include at least two more hotels, including INNSiDE by Meliá Bangkok Sukhumvit and one in Chiang Mai.

Following meticulous renovations, Kiti Panit General Store has just opened in Chiang Mai. The restaurant takes over a 130-year-old teakwood mansion that used to house the city’s first general store. After 70 years of disuse, the building and its original woodwork has been lovingly restored by local artists and craftsmen. SURAT THANI Two hours by boat from Surat Thani, Koh Phaluai is the largest of the 42 islands in the Angthong Marine Park. The southern half of this undiscovered gem doesn’t belong to the national park, however, and that means there are a few bungalows and eco resorts among the fishermen villages where you can spend the night. Expect to hear little more than the sound of waves as you sunbathe, spot hornbills and picture what life was like before mass tourism.

Far smaller and quieter than nearby Koh Lanta and Koh Phi Phi, this little gem makes for the perfect Andaman escape.

Koh Jum Located right between Krabi town and Koh Lanta, this peaceful little island is the perfect place to unwind. The vibe is lowkey, its beaches lined with trees and palm-roofed shelters with the odd monkey playing around. There isn’t a whole lot to do here except for sunbathing, water sports, and strolling along the beach, followed by a beer or two at a chilled-out reggae bar. The slow pace of Koh Jum will give you the chance to take a real break from the madness of modern life in a beautiful environment.

Koh Phayam This remote, kangaroo-shaped island has a tiny rural population and has been hailed by some as the new Koh Samui (pre-Chinese invasion). It may not be “undiscovered,” per se, but it’s far enough from the typical tourist trails to avoid being overrun. Its winning combo of lush jungles, clear waters and amazing beaches like Ao Khao Kwai and Ao Yai make it a surefire hit. Koh Phayam is about as peaceful, quiet and relaxing an island as you can find in Thailand.

Koh Munnork It’s a bit easier to find serenity when you’re visiting an island with only one privately owned resort on it, like Koh Munnork. Located east of Koh Samet, this tiny sanctuary is only accessible by the beach resort’s boat. When you arrive, you’ll find “achingly beautiful beaches,” according to the property brochure, as well as 22 boutique bungalows (from around B3,000/night) backed up against the island’s native forest.

Little Koh Lipe gets all the attention, but neighboring Koh Rawi is where you really want to go. The beaches are like fine white sugar, the waters a very bright blue, and it’s almost completely uninhabited, apart from a couple of ranger stations. Hike through wildlife-rich jungle, cool off in one of the bays and, if you’re so smitten you don’t want to leave, pitch a tent.
