Open Wed-Sun 5pm-late. | BBBB-BBBBB H F E The buzz: Few Bangkok fine-dining restaurants have evolved to the same degree as Baan Tepa over the past three years. What started as a humble 12-seat chef’s table in a previously abandoned ancestral house is now a sprawling urban farm, cafe, and elite fine-dining restaurant. Chef Chudaree “Tam” Debhakam’s almost zealous approach to zero waste and local produce (much of it sourced from the back yard, more still from farms around Thailand), combined with a menu that is both unique and familiar, put her restaurant in a category of one. There is just nothing else like Baan Tepa this year. The food: The core objective of Tam’s menu, whether you order the introductory six-course offering or the full nine-course experience, is to give diners a taste of Thailand top to bottom—and let the flavors do the heavy lifting. Tangy noom chili relish topped with tiny bits of pork cracking and fermented mushrooms immediately bring your palate to Northern Thailand. The thick Senna Siamea curry with delicately fried pomfret fish instantly evokes Isaan without any prepping from the service team, although the quick-footed servers are excellent at giving you background info behind nearly every ingredient on the plate. Every dish is handled with remarkable tact—uncompromising on flavors, and spicy heat, but understanding that highwire cooking is often delicate. The place: The refurbished family home where the farm, cafe, and restaurant are located is sprawling in size, but cozy and intimate on the inside. Muted browns dominate the interior, accented by soft lighting and splashes of green to drive home the urban farm philosophy. Dinner starts with a tour of the kitchen, where guests eat a pre-starter at the original chef’s table and learn about the venue’s zero-waste philosophy directly from the chefs working away in the kitchen.

Open Wed-Sun noon-2pm, 6-10pm. | BBBB - BBBBB H F E The buzz: Last year, Côte by Mauro Colagreco took home Top Tables’ top honor, and the restaurant has continued to impress. Only on the city’s dining scene since 2020, the eponymous Italian-Argentine chef Mauro Colagreco and team built the lush space inside Capella Bangkok on the river to become one of the city’s most talked about restaurants. Helmed by chef Davide Garavaglia and crew, Côte will be on Bangkok fine-dining lists for years to come. The food: The menu ranges from four- to nine-course options that take diners from the Chao Phraya riverside to the French and Italian riviera, from the Escapade Lunch to the Carte Blanche. On the menu, diners will find a host of signature dishes made from the available produce at the time—so be sure to go more than once. At Côte, everything starts with the ingredients—fresh and local where it’s needed, careful and chic where it matters. The place: When Capella blew into town, it brought fresh life to the riverside. Côte sits above the hotel lobby and adds a discreet European style, complete with halls laden with dark woods. The dining area morphs the feel into fresh white walls and light browns, complete with floor-to-ceiling windows overlooking the Chao Phraya to add a little extra vim to the riviera theme. Open Tue-Sun 6-11pm. | BBBBB H F E The buzz: Maintaining its reputation as one of the hardest-to-book restaurants in Bangkok, Sorn has held a hallowed spot in the city’s fine dining scene since 2018. Baan Ice founder Supaksorn “Ice” Jongsiri turned decades of Southern Thai culinary knowledge into a fine-dining experience like no other. Plaudits have rolled in for this stylish space ever since, creating one of the city’s most celebrated restaurants for elevated, and fiery, food. The food: It’s Southern Thai cuisine here—done in a way no one else can. The 20-course menu takes regional favorites to new heights without sacrificing the heat and homey feel of old-school comfort food. These plates aren’t made; they’re constructed. From the “prelude” to the last bite, the expertly crafted dishes are a culinary tour through the south that allow themselves to be exacting without being pretentious—all with an eye to unique, careful ingredients that bring a fresh, nourishing flavor to Thai cuisine. The place: The renovated 90-year-old townhouse found hidden in a Phrom Phong soi is decorated with the charm of Thailand’s southern rainforests, featuring arched-metal works reflective of palms, and the space itself is adorned in wood accents with rich brown tones that play with lush plants amongst the art deco style dining rooms.

4 Sühring 10, Yen Akat Soi 3, 02-107-2777. Wed 5:30-9pm; Thu-Sun 12-1:30pm, 5:30-9pm. | BBBBB H F E The buzz: Bangkok’s culinary landscape was forever changed by these German twins, Thomas and Mathias Sühring. Through their meticulously crafted tasting menu, the pair created a food journey that was both adventurous and welcoming. Since its launch in 2017, Sühring has consistently garnered international plaudits in a way that takes Bangkok’s entire dining scene up a notch.It's also the first and only time the city has seen German food handled with the surgical eye for detail and careful hand required of elite-level fine-dining food. The food: The Sühring Erlebnis, a tasting menu of three "chapters" and nine individual courses, plays with traditional German comfort food, whether it's a northern specialty of blue swimmer crab, rainbow trout, and langoustine or a comic reinterpretation of the classic currywurst sausage. There is also a German take on fondue in the whimsical kasefondue and likorwein (a type of fortified wine). For dessert, they feature omas eierlikor and feine schokolade (eggnog and pralines) inspired by their grandmother’s recipe. The finesse of their immaculate plating and extraordinary produce paired this with a selection of regional wines have put this restaurant on the map for years and will continue to do so for years to come. The place: The elegant setting in a generously proportioned mid-century home off Yen Akat Road retains its residential charm—note warm details like the framed rendition of the Sühring family farm hanging on the wall—but there’s also a striking open kitchen where the brothers work. We recommend guests request seats at the back of the house, but the glass-walled main dining room has its own charms.

5 Samrub Samrub Thai 39/11, Yommarat Alley, Saladaeng Rd. Open Tue-Sat 5:30-8pm. | BB - BBB H The buzz: Headed by Prin Polsuk, formerly Nahm and Mandarin Oriental’s Sala Rim Naam, Samrub Samrub Thai is a place for people who want to take Thai food seriously. The space serves two rounds— and it’s not always easy to get a seat—at 5:30 and 8pm featuring a friendly atmosphere and new menus that keep diners coming back again and again. The food: Samrub Samrub Thai made waves this year with its seafood menu through October, putting a focus on unique ingredients like hairy eggplant and Burmese grapes for a fulsome flavor profile. The dishes here are cobbled together from old Thai cookbooks and made with care in the open kitchen; staff are quick to bring you a platter of the ingredients on the night and explain how they work in each dish. Attempts at elevated Thai food can often be a little stuffy, but this is a spot that doesn’t compromise on bold flavors and, occasionally, the spicy heat—not fine-dining heat, real heat. Here, you’ll find simple, unpretentious dishes that require a high degree of care and creativity. The place: You walk to a stainless steel door that seems out of place in the hi-so neighborhood to a renovated four-story white house in Silom. The long black wood serving counter follows to a few more intimate seats in the back for dates and families. Entering, you find an open kitchen to your left filled with busy chefs plating and chatting over Thai pop music. It’s a friendly space that’s not quite communal—and it really lets you concentrate on the food.

6 Haawm 290, On Nut 25, Suan Luang. Open Tue-Fri 6pm-11pm. | BBBB-BBBBB H The buzz: Haawm made a big impression when it debuted in 2020. Founded by the self-taught Thai-American chef Dylan Eitharong, Haawm has become the talk of Bangkok. The supper club turned intimate dining experience is where the host, chef, and waiter, Dylan himself, curates a menu emphasizing Thai family-style cooking. The food: Dylan takes inspiration from 1970s and 1980s-era cookbooks to create seven-course sharing menus. The starters include a cured scallop with young ginger and citrus, for a fun interplay between the fish sauce, chilis, and sour citrus—with an eye-wateringly tart kick. For the mains, the dishes are engineered for sharing, complete with a taste of Hat Yai-style fried chicken with sweet dried chili sauce and crispy turmeric sticky rice accompanied by the crack of crispy skin. You’ll find a rare home-cooking experience here, accompanied by a list of ever-changing dishes. The place: The space here belongs to Dylan’s aunt, and guests are welcomed into a cozy dining room adorned with antique furniture. In the middle of the dining room is a singular rectangular table draped in the restaurant’s distinctive floral tablecloth, a Haawm hallmark.

7 Clara 69, Soi Prasat Suk, 083-496-3663. Mon-Fri 5-11pm; Sat noon-3pm, 6-11pm. | BBBBB H F E The buzz: Chef power couple Christian Martena and Clara del Corso were the brains behind beloved Italian fine-dining institution Sensi nearly a decade ago. When they previewed Clara via a four-month pop-up restaurant in 2019, Bangkok’s dining scene was all abuzz for the official launch of their next venture. Since the opening of the standalone Clara in 2020, the restaurant has gone from strength to strength, becoming celebration of modern, regional Italian cuisine in Bangkok. The food: Those acquainted with Chef Martena's work know how much love he puts into his Italian fare, infused with contemporary but accessible touches. Using both European and local ingredients, their seasonal "regions" menus feature five and seven courses, taking diners from the central coast of Marche through the hillsides of Piedmont and Mediterranean waters of Sicily. Impressively, the third menu option, a nine-course signature menu, doesn’t simply borrow from the previous two and stands alone as another entirely unique experience. The place: This restaurant takes over an area formerly occupied by the white, cubic Yenakart Villa art gallery, encircled by a well-kept garden filled with sculptures and a sitting area to take it all in. The two-story interior features remarkable white walls, white table linens, and high ceilings bathed in romantic lighting designed by Matteo Messervy. In addition to paying homage to its previous incarnation, the restaurant serves as a backdrop for striking abstract art by both resident and visiting artists. Although the top mezzanine is cozier and more private, we prefer the vibe downstairs.

8 Aksorn 5/F, Central: The Original Store, 1266, Charoenkrung Rd., 02-116-8662. Open Tue-Sun 6-10pm. | BBBBB The buzz: Through Aksorn, David Thompson’s unique take on Thai cuisine birthed a menu scoured from forgotten recipes of the mid-20th century. The novel and academic approach to cuisine here has garnered awards the world over since opening in the pandemic, and the stress on innovation never seems to stop. There’s a thin line between academic and authentic, and nowhere does it quite like Aksorn. The food: The menu is a fulsome tribute to Thai heritage cooking. It received a revamp in August of this year, maintaining a focus on cookbooks from 1940 to 1970 and featuring a unique range of methods and ingredients. Here, simple dishes like fiddleheads with bean curd are elevated to fine-dining heights. The river prawn broth with herbs is made with a water mimosa curry paste, an ideal example of how traditional dishes can be made extraordinary. It’s a theme that follows through to the mussel salad with salak pears as well as the green chicken curry of chicken with shampoo ginger. The place: The sleek venue on the fifth floor of Central: The Original Store on Charoenkrung embraces the building’s mid-century bookstore history. With a 40-seat space, the restaurant’s stone-tiled floor mixes with the red-orange brick walls and the granite countertop of the open kitchen. Get the balcony for the best seats in the house.

9 Jhol 7/2, Sukhumvit Soi 18, 02-004-7174. Open daily noon-2:30pm; 5:30pm-9:30pm. | BBB-BBBB H F The buzz: India-born, New York-trained chef and worldwide restaurateur Hari Nayak opened Jhol in early 2020. Regarded as one of the forefathers of modern Indian cuisine, Hari created Jhol as a contemporary southern Indian restaurant in the heart of Sukhumvit that delivers haute cuisine. The food: The new menu from Jhol this year, launched in October, hits the coast hard. The journey kicks off with a “prelude” celebration of India’s 7,516 kilometers of coastline, featuring a crab pachadi with pineapple and caviar, beet chop and a delectable pani puri with a twist of avocado and passionfruit. The menu explores the shore with dishes taking inspiration from Gujarat to Goa, featuring the likes of Alleppey fish curry that might well be the best in the city as well as kitschy dishes like the Calamansi sorbet, with an explosion of cardamom you won’t soon forget. The place: The understated atmosphere here exudes a sense of ease—like walking into a friend’s place—with a tasteful blend of vintage charm. The interior is predominantly modern featuring light-coloured wood that blends with classic elements, such as ornate lamps, intricate tiles, decorative patterned walls, and a gallery of antique Indian photographs. Guests are also greeted by a stylish bar close to the entrance, serving an eclectic mix of Thai-Indian fusion drinks. Open Tue-Sun 6-10:30pm. | BBBBB H F E The buzz: With more than a decade serving diners down south, Acqua is a relatively new spot on the fine-dining scene, opening just last year with a passion for Sardinian flavors. Led by chef Alessandro Frau, the spot has made a quick splash in Bangkok and around the world for its style, creative flavors, and stellar wine list. The food: Acqua’s chef inspires carefully plated, unique dishes like the 72-hour sous vide burrata stuffed tortelli with wagyu beef cheek ragou topped with 25 years aged balsamic vinegar. Look for ingredient and location influenced dishes, like their simple seasonal wild mushroom risotto with foie gras and snails. It’s all about authenticity at this chic spot, but that doesn’t mean the menu doesn’t get creative. Acqua’s a la carte has been a reason to stop by since they came on the scene, and they began offering lunch earlier this year. When it comes to this spot, it's hard not to mention the wine list, so be prepared to sort through some of the best labels in the city. The place: With 60 seats, this is a stylish space decked out in bright whites, silvers, and golds. It’s bougie vibes—which you’d expect from Soi Somkid— but there’s also a touch of magic in the white wall accents juxtaposed to the marble and metal aesthetic.

Open daily 5pm-10pm. | BBBBB H F This 120-year-old, five-story shophouse in lively Sampeng represents the heritage of a five-generation Thai-Chinese family and their historic medicinal shop. Glass jars with fermenting ingredients line the shelves on the way to a wooden elevator originally used by Chef Pitchaya "Pam" Utarntham's family to transport herbs to upstairs. Each floor of the shophouse has a story to tell. Pam caters to all five senses in her 20-course dinner, from a garland of mixed herbs and fresh sea bass to the 14-day fivespiced aged duck and the fun palate cleanser of chrysanthemum and cacao nibs.

The artsy spot launched a new menu earlier this year, with yet another new one coming December 2023, turning color into flavor. Their new 20 serving tasting menu (and art) from chef Riley Sanders features a focus on seasonal ingredients and high-end techniques. The development of the menu took nearly four months, with some dishes going through over a hundred attempts before getting the green light. Opening six years ago, this spot comes from the masterminds behind Rabbit Hole and is known for its devotion to domestic ingredients yet happily strays outside Thai flavor definitions to mesh local bites with artistic flair.

The novelty of Haoma’s bold, urban farm and zero-waste dining is accompanied by Deepanker "DK" Khosla, previously of Charcoal Tandoor Grill & Mixology. Haoma has persisted on the Bangkok dining scene for its comfort food as well as its haute cuisine. The ten-course tasting menu features inventive foods like the Samudra with squid and sea urchin; "Lobster Two Ways" with ghee roast, idli, pulissery; and the "Chicken or the Egg" where they grow all the ingredients of this dish in Haoma farms.

After leaving 80/20, star chef duo Napol "Joe" Jantraget and Saki Hoshino opened Samlor, a restaurant free of the normal formalities of fine dining. Serving no-frills comfort cuisine as well as gap glaem (Thai bar snacks). It’s elevated, but not arrogantly so. The menu is posted on the walls and changes as fresh local ingredients become available. Respect for locally caught Thai fish is one of the distinguishing features here as well as the Joe’s crab omelet.

Open Wed-Mon 6-11pm. | BBBB H E Nusara, which overlooks Wat Pho and is led by chef Thitid "Ton" Tassanakajohn, is all heart, inspired by Ton's grandmother. With just 10 seats and a twelvecourse meal that puts a contemporary twist on Thai classics, Chef Ton refers to the cuisine as "Colorful Thai Cuisine." You can’t really put this food in a box, either, as it’s neither traditional nor contemporary. The 12-course tasting menu is jam-packed with earthy ingredients served with Instagram-worthy platings. On your way out, don't forget to stop by May Rai for a natty wine or yadong nightcap. It showcased some of the best visual work seen yet—along with a careful attention to quality Thai ingredients, all delicately plated. BEST WINE LIST Acqua (Bangkok) Hailing all the way from Sardinia, the elevated Italian restaurant Acqua has been around for 14 years in Phuket—with its new Bangkok outlet taking the city by storm in 2022. With chef Davide Garavaglia, a former Chef de Cuisine of Mirazur, at the helm, Côte is a rare experience, one in which the meal is accompanied by an atmosphere of absolute professionalism and efficiency. Amongst the warm, reddish brown furniture and blends of cream and light gray palettes, the staff at Côte provide clockwork-like service amongst an abundance of natural light above the Chao Phraya.

B E S T VA L U E Jhol It’s bad news for every fine dining restaurant in town when it comes to value: Jhol wins. The Phrom Phong spot launched a diverse new tasting menu earlier this year (B1,999), complete with holistically coastal Indian dishes from chef Hari Nayak. In Bangkok, it’s a table at Shinji Inoue’s 11-seat, reservations-only ramen shop. Inoue, whose mother ran a ramen cart in Fukuoka, serves just 58 bowls of ramen each day at last count—either shio soba or shoyu tsuke soba, salt-based broth or soy sauce-based broth with the noodles separate. Remarkably, Inoue uses 30-plus ingredients to make them. Needless to say, the results speak for themselves.

Despite only arriving on the scene with the Four Seasons Bangkok a few years ago, Yu Ting Yuan became Bangkok’s very first (and only) Chinese restaurant to earn a Michelin star. The restaurant added heavyweight Chef Tommy Cheung to its roster this year, serving Cantonese cuisine for lunch and dinner spots featuring long time favorites on his new meticulously prepared seven-course dining menu featuring the likes of fish maw soup and wok-fried Canadian lobster with abalone. The setting amongst the lush grounds with floor-to-ceiling windows is not to be missed.

Opened by the illustrious chef Björn Frantzén, owner of Stockholm’s three-Michelin-starred Frantzén, brings a taste of his Nordic greatness to Bangkok. The open kitchen and elm-hued tables would transport you to Sweden, if not for views of the lush gardens outside. Be sure to get a nightcap at the bar—the cocktails alone merit a trip.

There are multiple kinds of pla ra here, including one that has been aged for two years. Whatever is fresh from the Warin Chamrap market in Ubon appears on your plate here, whether it’s Kalasin river prawns or hairy eggplant. There are 50-plus dishes to try. Expect to come back often.
