This was not how things were meant to be. Restaurateurs, chefs, sommeliers, consumers—we all pegged our hopes to 2021. We would have weathered the worst of the storm, and the city’s electric dining scene would come roaring back to life. You could almost feel it: The clinking of glasses and hiss of the grill. Wait staff flitting from table to table. Laughter, conversation, real human connection. Not to bury the lede, but this has been an excruciating year, and the idea of publishing an authoritative guide to the city’s best restaurants struck us as absurd. So we didn’t do that. There are no rankings this year. Frankly, there’s nothing to rank. The restaurant that had the most resources in reserve to survive a year with little income? Please.

Sustainability, seasonality, community support and engagement. These aren’t trends. They’re the way forward. While many restaurants may have closed in the past two years, Odtomato escaped that fate and instead moved down the road, opening at the Ad Lib hotel on Sukhumvit Soi 1, from which it now takes its name. The menu still offers elevated Aussie favorites—beef Wellington made with Hokkaido wagyu, grilled pork chops, and racks of lamb—but now there are fresh touches, from char-grilled pizzas to fried rice, providing more of a globe-spanning appeal.

Now you can find spots across Thailand, but the quality remains the same.

An unpretentious private table sitting at the end of Sukhumvit Soi 49, the restaurant reflects chef Vishanu “Bank” Prempuk’s heritage with lively Malay music and food served family-style on banana leaves.

The result is a steakhouse that offers tableside carving, high-end beef, and hearty sides, but with a personal touch hotels can’t compete with. The meat, too, often outdoes them, thanks to Artur’s unerring eye in selecting only the best produce. Open Wed-Sun noon-2pm, 5-8pm | BB H There’s no air con, you pay in cash, and you sit at one of just two tables, dining to a soundtrack of old Thai songs. This place is a throwback in every sense of the word—and it remains one of the hardest restaurants to book in the city. That’s largely thanks to a menu of simple but excellent dishes like stir-fried pork neck, yum dokkajorn (cowslip creeper salad), and marinated beef with stir-fried chilies.

Open Thu-Sun 5-9pm | BBBBB HF Led by chef Chudaree “Tam” Debhakam, winner of the first “Top Chef Thailand,” Baan Tepa is part urban farm, part restaurant shooting for zero waste across creative, seasonal tasting menus rooted in Thai culinary traditions. Tam transformed her grandmother’s home to build this idyllic restaurant. It features one of the most expansive open kitchens in the city, as well as several private nooks and a lush garden space.

Open daily 11am-10pm | BB HF This family-run restaurant was where it all began for Sorn chef Supaksorn “Ice” Jongsiri, but make no mistake: this treasured institution eschews stardom. The menu centers on fiery Southern Thai fare, like melinjo leaves stir-fried with egg, stir-fried sataw beans in shrimp paste with crispy pork, and the local favorite khao yum (a colorful Southern rice salad).

The dreamy space is led by Davide Garavaglia, a former top chef at Colagreco’s Mirazur, which currently holds three Michelin stars.

DAG treats diners to casual meals fueled by local ingredients, with menus that change on the regular. An industrial vibe pervades a spacious dining room dominated by black walls and an exposed warehouse-style ceiling, all thinly veiled in smoke. From ramen to grilled skewers and wagyu burgers, everything is on point and unexpected, and the drinks are no afterthought.

HOW CHEFS AND RESTAURANTS GAVE BACK TO THE COMMUNITY The pandemic might have taken a lot from Thailand’s buzzing food scene, but it did not stop the industry from giving back.

Na Cafe at Bangkok 1899

As restaurants were forced to shut their doors, leaving cooks and staff furloughed, some chefs transformed their spaces into community kitchens. This model, seen nationwide, not only gave work to those affected, but also supplied meals to hard-hit communities. Na Cafe, for example, became a soup kitchen during the height of the pandemic, in partnership with non-profit Sati Foundation and Scholars of Sustenance (SOS). Together they prepared hundreds of meals and care packages per day, then used demographics data to identify and locate the people most in-need based on age and income, ensuring their efforts were targeted and impactful. “We turned Na into a distribution, drop off, and packaging center,” says Na Cafe co-founder Saks Rouypirom. The Na Cafe kitchen also opened up for chefs like Garima Arora of Gaa, who prepared hot meals with surplus food from her restaurant and passed them out to nearby locals in need.

100 Smiles

Deepanker “DK” Khosla, Haoma

While Na Cafe gathered the culinary community in a collective humanitarian effort, chef Deepanker “DK” Khosla of Haoma was expanding his social outreach program, “No One Hungry.” What started as a way to assist his predominantly Burmese staff soon became a full-throttle campaign to feed anyone in need of a hot meal. “During the pandemic, we pivoted my Nutrichef business to distributing meals for anyone who had lost their jobs because we knew that the backbone of the industry [like kitchen teams and janitors] needed support,” DK said. No One Hungry gave out around 300 meals a day, and DK even teamed up with a Thai rice fortification firm to use rice loaded with nutrients like vitamin B12 complex and folic acid. Meanwhile, Thai favorite 100 Mahaseth started the “100 Smiles” initiative, which saw chef Chalee Kader partnering with non-profits and other efforts like SOS, Covid Thailand Aid, and No One Hungry to offer hot meals to those in need. It also allowed Kader to keep his entire restaurant staff employed. They produced 6,000 meals in the first seven weeks, but the efforts continued much longer, aiding affected communities and frontliners alike. 100 Smiles also helped Kader maintain connections with local farmers and his restaurants’ suppliers, who were struggling to sell their produce as demand dropped. By keeping these relationships alive, 100 Smiles became a circle of hope for all affected.

Open Wed-Sun 6-10.30pm | BBBBB HF The name has changed over the years—now it’s Elements, inspired by Ciel Bleu (Elements’ sister restaurant in Amsterdam)—but the concept hasn’t. You’re still in for French fine dining underpinned by Japanese cooking traditions: seasonality, precision, a cult-like devotion to ingredients. From the lofty setting to the artful plating, Elements makes for a consistently special experience.

Enoteca 39 Sukhumvit Soi 27, 02-258-4386. Open Wed-Mon noon-3pm, 5:30-10pm | BBBB HF Since opening in 2004, Enoteca has served as a sort of incubator for top chefs. Currently, Stefano Borra (formerly chef-owner of one-Michelin-starred Ristorante VO) runs the show, delivering dishes bursting with Piedemontese flavors. MOVERS AND SHAKERS Jutamas "Som" Theantae

Thailand’s culinary world saw seismic shifts during the last year, but it also came with a few exciting changes. Here’s a recap. Late in the year, chef Arnaud Dunand of French fine dining powerhouse Le Normandie left his longtime post to open his first restaurant, Maison Dunand. Here, Dunand says he will put forth a more adventurous and personal menu that honors his upbringing in the French Alps. The evolving menu will change by the season, or even Dunand’s mood, but you’ll find only the crème de la crème as far as ingredients go. Think Mieral pigeon from Bresse and an earthy consommé infused with fresh pine from Savoie. The new space will open in residential Yen Akat in spring 2022. Chef Jutamas “Som” Theantae of Karmakamet closed up shop and relocated to seaside Hua Hin. Her new restaurant, Som’s Table, takes over a two-story, 80-year-old, wooden heritage house facing out at a flurry of fisherman boats. Unlike the boundary-defying menus Som is known for, the new retreat focuses on comfort food—fresh pasta, homemade bread, succulent beef dishes—across a menu that changes weekly, and sometimes daily, based on product availability. Diners can also eat al fresco overlooking the sea and the flourishing edible garden.

Chef duo Napol “Joe” Jantraget and Saki Hoshino shook things up with their departure from lauded 80/20 and headed straight into their own project, Samlor, just down the street on Charoenkrung. Moving away from the formalities of fine dining, Samlor aims for no-frills comfort food—classic Thai fare, crispy chicken wings, loaded wagyu burgers that pair perfectly with your drink of choice. In addition, the restaurant acts as a culinary hub for dining events led by the couple, including tasting menus highlighting Hoshino’s dessert brand Yora and the “coalescent” menu, which highlights urban Thai recipes through a global lens. One of the biggest blows was the closure of Bo.lan, but chefs Duangporn “Bo” Songvisava and Dylan Jones have renewed their focus on building a better planet. The couple are gearing up to launch The Food Trust, based in Chiang Mai and at the old Bo.lan in Bangkok. To paraphrase, the Food Trust will be a community-focused, multifunctional space rooted in sustainability, with the ultimate goal of supporting and promoting ethical food systems. The Chiang Mai space will be in partnership with chefs Paolo Vitaletti and Andy Ricker, and across both outlets The Food Trust will have a grocer, cooking school, event space, and production facilities available for food communities. Both are slated to open in 2022.

Table 38 moved from its Sukhumvit Soi 38 spot to Siam Discovery shopping mall.

Gaggan Anand moved to the quiet end of Sukhumvit Soi 31, offering the full-on experience on the first floor and a quieter affair on the second.

Chef Dan Bark closed his refined Upstairs restaurant and debuted two-in-one Cadence and Caper— the former fine dining, the latter everyday dining.

Modern Indian restaurant Gaa moved from glitzy Langsuan to the residential side of Sukhumvit Soi 53, moving into a beautiful, 60-year old traditional house.

Chef Chudaree “Tam” Debhakam might have gained fame for being the first winner of “Top Chef Thailand,” but to her peers she’s a eco-visionary. Before competing on the TV show, Tam went to culinary school in New York. Later, she landed a job at worldrenowned farmstead restaurant Blue Hill by Chef Dan Barber, piquing her interest in the sustainable movement and farming. After returning to Thailand, she spent three years immersing herself in Thai culinary culture, researching hyperlocal ingredients, and advancing her gardening skills.

Weerwat “Num” Triyasenawat

Chef Weerwat “Num” Triyasenawat is the owner and head chef of Samuay and Sons, the highly regarded, contemporary Isaan-Thai restaurant located in agricultural hub Udon Thani. He is also an ambassador for traditional northeastern Thai culinary culture, specifically foraging. “Foraging is a big part of living in Thailand, especially for Isaan people,” Num says. Num began his culinary career at 30, spending nearly a decade in various farm-to-table restaurants in California, including Michelin-starred Commonwealth in San Francisco. Now, he uses that elite-level training to champion a holistic philosophy that encompasses seasonal wild plants and herbs that he forages himself. And it’s not just plants he searches for—he sets out to build relationships with farmers and producers across Isaan, hoping to share their wisdom with the world. “Whenever I go foraging, there’s a connection between me, nature, and the local people. This is how I learn the story of a place and its communities—by eating and cooking. I want to preserve this knowledge,” Num says.

The future of Thai cuisine is certainly bright. But a lot of what’s occurring now comes from ancient traditions, some so old we forget when or how they even began. Chef Prin Polsuk is working to keep those traditions fresh in our memories. Prin Polsuk

The highly regarded chef, who once ran the kitchens of Nahm in London and Bangkok, opened his own place, Samrub Samrub Thai, to critical acclaim in 2019. LONG TIME COMING After two years of hard work and uncertainty, chef Pitchaya “Pam” Utarntham’s patience and perseverance pay off at Potong.

“People usually look bewildered when I tell them we serve progressive Thai-Chinese cuisine,” chef Pitchaya “Pam” Utarntham told BK while guiding us through her new restaurant, Potong, which opened in bustling Sampeng at the tail end of 2021. “When Chinese people moved here centuries ago, they brought their food and culture with them, and as time passed, the two cultures merged and created something new,” she went on. Now, she is creating something new from the two time-honored cuisines. But it wasn’t always certain she would be able to do this. Pam’s family immigrated from China generations ago and settled in Bangkok. They bought land in Sampeng and opened a Chinese pharmacy named after her great-grandfather, Potong. Her family’s traditional shop thrived for over a century and remained active until the family decided to move their business to Sukhumvit Soi 33, leaving the old space out of sight and out of mind.

“I knew that our family owned this building but never had a chance to see what was inside,” Pam said. “The moment I arrived, I was awe-struck by its beauty.”


In 2019, Pam began renovating the property, rebuilding or preserving as many historic features as possible. The lively ground shop was converted into a sleek bar, an elevator that was used to transport herbal concoctions upstairs was fixed up, and the rooftop was overhauled to serve as another social space. Potong was set to open in early 2021, but like so many others in Bangkok, the restaurant was forcibly closed for months, prompting Pam and her team to rethink their strategy.

In an effort to keep as many workers employed as possible, Pam and her senior management staff floated ideas that would allow the restaurant to operate. “At first, we were reluctant to sell our food via delivery,” Pam said. “It would be our customers’ first impression of Potong. We were quite hesitant to take that risk.” But they went ahead with it, and to moderate success. From preparing family meal sets for delivery to a dessert collaboration with Taiwan’s two-Michelin-starred Logy, Pam and her crew persevered through the pandemic turmoil while cutting losses to a minimum. Now, Pam captures the essence of her heritage in 20-course menus—a judicious mix of old and new that allow her to present traditional dishes with clever touches. Dumplings are revamped as a modern-looking lamb tart, accompanied by house-made white tea broth infused with white mugwort. Frog meat is wrapped in bamboo lattice and served with a Chinese root and frog bone broth. The highlight, however, is the lazy Susan—a familiar sight for anyone who grew up in a Thai-Chinese household—loaded with 13-day hay-aged duck breast, Angus beef ribs, and rice bowls. Potong represents a true sense of both cultural and collective perseverance. Like the bamboo lattice that holds her frog dish together, the teamwork, trust, and adaptability the Potong team formed through hard times were crucial for overcoming the pandemic. And sometimes it’s not just about stories or where you came from. At the end of the day, as a chef, the only thing that matters is how true you are, which, in my opinion, is the best seasoning for the food you cook.”

RILEY SANDERS, CANVAS “I think we’re going to see more usage of local ingredients next year, although that has already been on the rise over the last three years. But I think we will also see Thai ingredients gain more respect among locals who are keen to know where their food is coming from. There are also many chefs paying respect to the history of Thai cuisine, and we are seeing that in so many new openings, like with Chef Ton [Thitid Tassanakajohn] from Nusara, who leans on grandma’s recipes. History is so vivid now thanks to [chefs] who are really immersing themselves in old Thai recipes and poring over the [archives].”

But it’s the bun bo Hue, a noodle soup made from a family recipe, that you’re after here—and why the place is so packed that reservations are a must.

The ground level lounge that welcomes guests and hungry diners to the Renaissance Bangkok Ratchaprasong has been around for some time, but still gleams with upscale décor and a relaxing ambience. A casual restaurant and bar during the day, the venue transforms to a wine and tapas joint at night.

With floor-to-ceiling windows covering the two-story venue, Baan Ice specializes in southern Thai cuisine with the fiery spice and herbal-inflected flavor. The daily crowd comes for traditional southern ingredients such as sator (stink bean), and khao yum (southern rice salad). Not only are the main courses delightful, but the desserts are also a wonderful guilty pleasure.

Kimpton Maa-Lai Bangkok’s cosmopolitan cocktail bar and restaurant, is easily found tucked within the hotel’s gleaming lobby—and this year is celebrating it’s first birthday. If you have a soft-spot for Italian food, you are going to put this place on your shortlist for the coming year. The Venetian-style ricotta spianata romana (toasted sourdough bread with housemade ricotta cheese, spicy salami and parsley) is a must-try.

Sukhothai Bangkok’s La Scala has long been an icon of hotel fine dining in the city. Led by new Italian head chef Eugenio Cannoni, the restaurant just launched a new menu that leans on his northern Italian roots and simplicity in design. The likes of smoked dry aged beef, oxtail ravioli and langoustines are just a sample of what you can expect.
