SEASONAL NEWS & NOTES ~ SPRING 2019

T H E C ALL O F SP RING When I think about Spring, I think about all the change the season promises to bring, and it fills me with hope. After an introspective Winter spent cozied up indoors, I can’t wait to shed layers—literally and figuratively! Watching as the sun warms the earth and tells the flowers to bloom again, I’m inspired. The thing I can always count on is the joy I’ll find watching everything and everyone come to life. With all its wildflowers, the Farm becomes a world of color, and Lenten roses are my absolute favorite. I feel giddy upon seeing the first delicate rainbow they paint, the harbinger of Spring. The Farm never fails to captivate guests; and I love watching as they surrender to the season that beckons us all to embrace a newfound freedom. This year, we’re looking forward to offering plenty of opportunities for carefree adventure—for reasons to linger just a moment longer in the cool, breezy air. Spend an afternoon cycling through the mountains drenched in green. Learn the art of watercolor painting and pottery. Drink in the sweet smell of daffodils and chives. Tune your ear to the melodic chirp of baby chicks—or to the incredible musicians at the Americana Music Association. The thing about Spring is: no matter what you’re doing, you’re sure to be greeted by an overwhelming sense that life all around, including your own, is being renewed. I’m betting Winter left you rested and inspired to get outdoors. I’m heading into the next few months with my eyes wide open because before you know it, brilliant Spring days will fade into hazy Summer nights. For now, I hope you’ll join me in relishing in the spectacular thrill of waking up to new pops of color and the gentle hum of nature stirring again—maybe even here at Blackberry.

SWEET

& S AV O R Y

From the very first bite to the very last, Executive Chef Cassidee Dabney and Pastry Chef Laurence Faber orchestrate every taste and every flavor brought to life in The Barn kitchen. The duo works to craft a sublime menu that showcases Blackberry Farm’s signature Foothills Cuisine® in harmony.

CASSIDEE:

Laurence and I are really on the same page about where we want to take our food. When you cook with somebody for years, you learn to move together, step by step. It’s like a dance.

LAURENCE: We talk about the ingredients we each want to use in our dishes to keep things fresh and exciting. We never want a guest eating an ingredient the same way twice during a meal.

C:

L:

When we start the meal with an amuse, we highlight something light but interesting— like a spinach leaf paired with wonderful preserved elements. It’s like a little snapshot of what’s happening at the moment in the Garden or the Larder.

We like to end the meal on a lighter note, too—for a cohesive feel. Our seasonal desserts feature bright notes with less sweetness, more acidity and less fat. In Winter, we highlight things we’ve preserved, and in Spring, fruit steals the show.

Visit blackberryfarm.com/friends to read the full conversation with Cassidee and Laurence.
