Michelin stars fall like rain in the Principality, where the hottest table in town is at the Hotel de Parisí three-star restaurant, the Louis XV - Alain Ducasse. No visit to Monaco would be complete without a visit to the Casino de Monte Carlo, before finishing the night off at the iconic A-list nightclub, Jimmyíz.
As you cruise along the steep coast, you can drop anchor off the exclusive Cap Ferrat, where Paloma Beach Restaurant sits pretty beneath its backdrop of villas and pines. Or you can savour lunch with a view in the clifftop village of Eze, where the dining terrace of Château de la Chèvre d’Or perches thousands of feet above the cobalt-blue Mediterranean. Eco-chic credentials are increasingly common on board yachts too. Many guests aspire to sail away from the 21st century, as well as from industrial noise pollution and other modern stress. A luxury sailing yacht offers the best way to reduce oneís footprints and go off-grid. For example, 62m S/Y ATHOS flies through the water at motor yacht speeds, and wonít scare the wildlife on arrival. You can forget the Jet Skis too. Her toys are comprised of two Lasers and two Optimists, the no-noise dinghies on which Sir Ben Ainslie learnt to sail. 40m sailing yacht RAINBOW is another case in point. It pairs intricate marquetry and oak floors with stand-up
paddleboards for tranquil island exploration. Her entire compliment of 8 guests can follow her divemaster for a mask
and snorkel safari. Hungry? A range of fishing rods can lure a tuna up for lunch.
Indeed food tastes better when it isn’t motorised. The chilometro zero (0km) movement started in my native Italy as a riposte to factory-grown all-seasons produce. Its adherents choose to eat regionally sourced delights – be they mozzarella in Napoli or a bottle of DOC Binissalem in Mallorca – rather than flying in salmon from Norway or Cheval
Blanc from Bordeaux. Eating native on a luxury yacht is hardly arduous. Ask to follow your chef on a market tour to select a bespoke local dégustation. My sailing favourites include Göcek’s alfresco bazaar and Palermo’s seething Mercato Vucciria. The street food at both is as Instagramable as it is tasty.
Carbon-free activities can make up a daily routine. I know a dozen yachts offering daybreak yoga. And several offering
SUP sun salutations an inch above the waves. Inter-island swimming has become popular in Croatia (1,200 islands) and the Bahamas (700). Kayaking in for coastal hikes in Turkey or on the French Riviera islands – followed by a massage on
board – carries evergreen allure.
In fact, it’s possible to be spoiled by serenity. While captaining my own petite yacht each summer I’ve been known to
haul anchor after sunset then drift away from a neighbouring motor yacht’s hum. That’s the best thing about sailing.

Explorer and author Bruce Chatwin settled down to write In Patagonia in Punta Arenas, the Chilean gateway to the beautiful south. His work describes a phantasmagorical world of strange creatures and Tolkienesque landscapes –
Patagonia to a tee. An expert pilot will guide your yacht down the Cockburn Channel. Expect 40 miles of tinkling glaciers, elephant seals and pods of dusky dolphins. UNESCO has declared the adjoining Cape Horn and Agostini National Parks as a Biosphere Reserve. Ever wondered why few travellers have spied humpbacks, royal albatross or the rare Andean Fox? That’s because the entire area is only accessible by private boat.
The passage south reinforces the fact that you are sailing off the map. Cruise down the Strait of Magellan, Beagle Channel
or Drake Passage, each one made famous by a maritime pioneer. Landfalls don’t come more welcoming than Antarctica’s
Deception Island. It’s an active volcano that has sunk into the sea, allowing guests to anchor inside, then bathe in
geothermal rock pools. For another Instagram of the century, climb up to Neptune's Window.The panoramic gap between two rock pillars is the place to spot impossibly cute Chinstrap penguins.They survive on a diet of prawns, squid and raw
fish, ingredients served as sushi or ceviche on board ship.
For deeper ocean denizens, meander down the Lemaire Channel.The seven-mile gorge is a highway for migrating whales. Ride the tender as curious orcas pop up to face the camera. To understand life on the 65th southern parallel, visit the
Argentine Antarctic Institute’s Almirante Brown Base. In return for a week’s supply of Parmesan and Pouilly-Fuissé, scientists at the remote outpost will trade stories of midnight sun parties and kayaking with Minke whales. The best part? Anyone who sails this far south is welcome to join in the fun.

Sail through the Bahamas today and itís the colour that hits you. Coral reefs form a retaining wall around the archipelago, ensuring warm shallows that tint from light cerulean to peacock blue, by way of sapphire, topaz and aquamarine. Winter days are also azure bright, like Yves Klein and Henri Matisse had a paint fight in the sky. Add emerald iguanas and Cuban rose-throated parrots, and you have the whole palette. The only question left is which of the 700 islands to choose?
Sybarites, sun-seekers and all-out-lovers of luxury should set the GPS for Eleuthera. A favourite escape for royalty and celebrities, it’s nonetheless a boho backwater. Travellers would get more use from a salt-bleached swimsuit than a Balenciaga gown. That said, a yacht versant vibe means that the local seafood – conch, snapper and lobster – is diced into ceviche with homegrown coriander on the side. Dessert may be an entire pineapple per person, as Eleuthera’s are said to be the sweetest on earth. A Friday night out means even more food. All-comers, from captains of industry to barefoot fishermen, backslap one another at Governor’s Harbour communal fish fry. Finding anchorage in Eleuthera is easier than sinking a sundown daiquiri. The 100-mile island – less than a mile across in parts – is skinnier than a Bahamian tree snake and squiggles around creeks, beaches and bays. In the south, the tranquil mooring at Rock Sound is near Ocean Hole. This bottomless swimming circle formed by limestone erosion was explored by Jacques Cousteau. In the centre, tie up at Hatchet Bay to visit Glass Window Bridge. Here a yacht-length of rock separates the crashing blue Atlantic with the calm cobalt Gulf. Escapees should sail on to the Out Islands. Abaco, a 120-mile chain of mangoes and coconuts, is a case in point.The dock in Hope Town, where locals cruise in golf carts between al fresco restaurants inside pastel cottages, can tie up yachts of up to 130ft (40m). Save room for Treasure Cay, a former pirate haunt. It features what is generally considered to be one of the top ten beaches in the world, a seven-mile tickle-your-toes swoosh that melts into golden sandbars – before fading into turquoise seas and even bluer skies.

These extremities of temperature exposure really play with the body’s temperature gauge, which means you’re consistently losing water.
So, drink regularly on charter, starting first thing, when your body is a dry sponge after 8 hours of fasting. Also, if you’re drinking lots of water throughout the day, ask the stewardess to add a squeeze of lemon and a tiny bit of Himalayan salt into the water, because you’re literally diluting your mineral base by flushing your system with water’.

The surrounding Admiralty Bay typifies the Grenadines’ hippy chic style. The most splendid superyachts anchor here, yet all tune into VHF Channel 66 for a kooky morning newscast that details island weddings and an ever-sunny meteorological report. The coast hosts powdered sugar sands where yacht crews set up extravagent barbecues with cricket and chilled Sancerre.Yet the interior is a tropical trail through a wild choke of knotted almond and papaya trees. Foodies can also follow a foraging tour for granadillas, soursop and other indigenous fruits. Tamarind trees provide the key ingredient for Worcestershire Sauce, a must-have for guests who want to make like Princess Margaret with a Bloody Mary at breakfast. A short sail south, Palm Island and Union Island are as dissimilar as Queen Elizabeth II and Princess Margaret.The former is a royal flush of sandbars and swinging palms. Imagine a private island where 90% of the coast is sand, and 90% of its beach-goers are sea turtles and hermit crabs. Like almost all of the 32 Grenadine Islands, it’s only accessible by boat.
Union Island is the wilder sister. A barely-understood treasure soaked with sun, fun and Six Saints island rum. Sunset beaches like Chatham Bay are patrolled not by lifeguards, but by sandpipers and tropical mockingbirds. A notable exception is Kite Beach near Union Island’s tiny airport (where Mustique Airways is the sole carrier). Surfers can ride the breeze on topaz seas as they barrel back into shore. Moor at the main island of St Vincent for a final volcanic blast. Seismic activity has coloured the rainforest peak lime green, and the sandy beaches black. Delights include the Falls of Baleine, a natural swimming pool fed by a crashing waterfall. A final anchorage should be the boat-only beach of Petit Byahaut. But beware: the only divers allowed to drift through sea canyons and schools of snapper are those on private yachts.
