COUNTRY STAR DONATES SKATEPARK TO SAN MARCOS Kip Moore shows heart when it comes to helping out others and soul when it comes to making music. He is in the first phase of opening up skateparks around the country while he gets set to launch a tour for his sophomore album. Country music and skateboard parks – an unexpected mash-up that has come to San Marcos, thanks to the multi-platinum country recording artist and his charitable initiative “Comeback Kid Skatepark Project.” Kip Moore recently stopped by Veterans Park to dedicate his skateboard park to the city of San Marcos and all the “comeback kids.” As he stepped to the podium, he humbly pointed out that the focus should not be on him but instead on all the kids that need a safe and engaging place to play. Moore’s background extends beyond country music to include such activities as surfing and skating. Through these interests he came to understand the value of shared time and the sense of family that comes with it. His charitable efforts contain a desire 8

to provide as many places as possible for kids to form a healthy community of peers while engaging in a dynamic activity. The city of San Marcos is one of four cities included in Phase I of Moore’s initiative. While the other three are located in larger cities (Nashville, Boston, Annapolis), it was through the shared goals of Moore’s charity and the city’s willing government that San Marcos was chosen. The singer feels “called to give back” and is determined to build more skateboard parks throughout the nation’s inner cities. These are ambitious and noble goals coming from a man who stays incredibly busy with his music career. Moore is currently touring non-stop, playing music from his first album “Up All Night,” a wildly successful album that generated three #1, multi-platinum hits. He released his sophomore album “Wild Ones” on August 21st and launched a new tour

October 28th in Bethlehem, PA. “Wild Ones” is a supersized record inspired by all the grit, grind, and glamor of his live shows. His current single “I’m To Blame” steadily climbed the charts and was the second most added song during its debut week at country radio. Talking to Moore before the skateboard park dedication ceremony, he mentioned how excited he was to incorporate the music from his new album into his live show. “We’ll start putting the show together in early September. We’ve been playing songs off of the ‘Up All Night’ album for a while now, so I’m excited to play some new music.” Meanwhile, as Kip Moore continues his country music adventures, the skater kids of San Marcos can rejoice in having a new scene to shred.

Kohl Kills (and Blocks) for Bobcats Volleyball Texas State sophomore Jordan Kohl was surprised when she won Sun Belt Conference Freshman of the year last season. After missing the first month of the season with a dislocated knee, she felt it took her a while to just get back in rhythm. Apparently, what Kohl calls “getting back in rhythm” is a lot more like “kicking butt and taking names” to everyone else. “I had a lot of catching up to do,” Kohl said. “I was out of shape… The day I got cleared they were like, ‘All right, go put a jersey on.’ I was like, ‘I have not jumped or hit a volleyball in about a month.’ So I was a little nervous, but I knew I was in good hands with my setter because we had a good connection from the start. “As the season went on my stats just kept going up and up because I kept getting more comfortable with everyone, so it was actually a really fun process.” Kohl finished the year on a tear, notching double-digit kills in seven of her last 11 matches and totaling a season-high 20 in the team’s second-to-last match against Arkansas State. She ended up leading the Bobcats in kills during conference play with 152, while finishing third in blocks with 62. Those numbers are certain to go up during her sophomore year, especially the blocks. Texas State’s squad is loaded with height and this year, Kohl gets to form the wall with her best friend and high school teammate from San Angelo Central, middle blocker Ally Standard. “She was my next door neighbor. We were pretty attached at the hip. A fence divided our houses and I could just look over and say, ‘Hey, I’m coming over!’” Kohl said. “It’s a blessing (having her around)… and I hope it continues that way throughout the years when we are old and wrinkly.” A unique fact about Kohl that would be tough to catch when talking to her is that she was born with a hearing impairment. She lives her life like any normal person, but needs to wear hearing aids in order to fully understand what others are saying. “I don’t notice it, honestly. I have to remind the setter just every once in a while to repeat the play or use hand signals, but when I got here they were like, ‘No big deal, we can work with it.’” Kohl said. “They’re very aware of my hearing impairment and they don’t treat me differently, which is what I love.” TexasStateVball txstatebobcats.com 12 BOB CATFANS | 11.15

Former Bobcat Dad becomes All-Pro barber. San Marcos’ own world-class barber boasts celebrity athlete clients who have spread the word of his exceptional work. Former Bobcats and now professional athletes Joplo Bartu of the Atlanta Falcons, Craig Mager of the San Diego Chargers, Joel Wright of the Utah Jazz all have a barbershop of preference. Current TXST athletes Jafus Gaines and Emani Gant attest to his great work. Even Boko considers Mo Betta Cutz his barbershop of preference. Mario Wiggins Sr., or as his clientele and associates call him, “Mo Betta,” runs a barbershop unlike any other around. “Mo Betta came from my friends because I was better than anyone else,” the father of former TXST football player Mario Wiggins Jr. confidently said as he discussed his knack for cutting hair and how he got the nickname.

Originally from Ohio, “Mo Betta” came all the way down to the Hill Country in 2011 for one reason, but it wasn’t to just cut hair. “I wanted to help my son Mario due to his schedule as a student athlete.” His son was then a safety for the Texas State football team. As a loving father and businessman, “Mo Betta” also found himself cutting hair and gaining quite the clientele. Besides San Marcos locals, he got the attention of Bobcat athletes as well. As they began to spread the word of his great work and displayed his craft on social media, he quickly blew up. With his customer base getting bigger by the day, “Mo Betta” decided to open his own shop this past February. With his own shop and his son already graduated, he found another role to

take on. Student-athletes looked to “Mo” as a mentor. They opened up to him and found a haven within his barbershop. His open ears and experience dealing with athletes helped alleviate the stress and pressures that student-athletes face. When asked what his relationships with the athletes meant to him he replied, “I love having these young men come in and feel comfortable talking to me. It brings me happiness getting to know [them] then watching them perform on the field or on the court.” Wiggins has one mantra he reiterates to the athletes that come in to his shop. ”Never allow anything to get in between your goals and aspirations. I constantly tell these kids to go out there, have fun and enjoy this phase of their life.” With “Mo” and his shop, “Everyone is welcome.” Athletes, students and everyone in between is invited to come in to discuss and watch sports and enjoy some video games, all while obtaining a quality cut. All the trends from the “Duke Fade” to the “Combover Taper” or simply the style you enjoy are available.

Company President Credits His Success To Texas Rod Keller learned the importance of work ethic the hard way. After a freshman year that included a whole lot of fun and not much studying, the young man who would go on to become President of Segway was banished to the Gulf of Mexico, working on a production platform while serving academic probation. “After working in the Gulf for a while, I quickly realized that I didn’t want to do that for the rest of my life,” Keller said, ”so when I returned to school I focused and made good grades.” Keller took that newfound work ethic and used it to not only get a college degree, but to ascend to a role as president of one of America’s most promising companies, Segway. Keller feels Texas State was the perfect University to springboard his career, believing the school’s diversity benefited him in a way a more so-called “prominent” business school never could have. 16 BOB CATFANS | 11.15

“When you graduate and move into the real world, you need to be able to converse, inspire and motivate people from all walks of life,” Keller said. “That’s what is great about Texas State. Its community is very diverse.” Two professors who had a profound impact on Keller were Marketing Professor Dr. Larry Patterson and Business Law Professor Dr. Donald Sanders. “Dr. Sanders had that unique and wonderful ability to make any subject matter interesting,” Keller said. “Dr. Patterson suggested I consider marketing. He thought it would be a great fit for my strengths, interests and personality. Clearly, he was right.” Keller graduated from the McCoy College of Business in 1981 and quickly got into the personal computer industry. He spent 25 years working for Dell, Compaq and Epson before becoming CEO of T3Motion, a company that manufactures electronic standing vehicles. From there he caught the attention of Segway, who brought him on as President in May of 2013.

“When I was recruited to join Segway, I knew the personal transportation market was growing, which reminded me of the PC industry’s early days,” Keller said. “I was excited to help a new industry grow.” As Segway president, Keller has overseen major changes. Last September, he filed a complaint with the International Trade Commission that named 21 Chinese companies he felt were infringing on Segway’s intellectual property. After the commission served notice to the companies, the largest one, Ninebot, asked Keller if he’d be interested in a joint venture. Instead, Keller counter-offered: why not buy Segway? Segway is now owned by Ninebot, though Keller is still president. The marriage was a match made in heaven, as Ninebot’s relationship with Asian parts suppliers has helped Segway bring down its product costs. “Our vision is to be the largest electric (non-automotive) vehicle transportation company in the world, and we’re on track to achieve that,” Keller said. “I believe that most of the market’s growth will come from consumers, but price

He goes back at least twice a year and has a son going to Texas State. “I couldn’t be more proud of the university,” Keller said. “I think what the school’s president (Dr. Denise Trauth) has accomplished is outstanding…It’s reflected in the number of applicants to the university. The state has invested resources in the school and it’s had a very positive impact. I’m proud to say that my son is currently attending.”

Each semester Texas State University welcomes hundreds of returning Veterans to their new home, earning Texas State quite the reputation for its Veterans. Last year Texas State University was named by Military Times as the 14th most Veteran Friendly School in the Nation. Located between Ft. Hood and the several bases in San Antonio, San Marcos has attracted many Veterans over the years. With the beautiful San Marcos River, fun night life, friendly people and the laid back vibe, it’s no surprise why Veterans move to San Marcos. Even going back to the Vietnam Era, Texas State saw an influx of Veterans coming to San Marcos and using their GI Bill. One of those Veterans using his GI Bill was the King of Texas Country himself, George Strait. Today we have a new generation of post 9-11 Bobcat Veterans living in San Marcos. A recently chartered student organization, the Veterans Alliance of Texas State (VATS) has become an important group for Texas State Veterans by organizing tailgating, social and civic events here on campus. The San Marcos VFW Post has a large percentage of Iraq & Afghan Veterans from Texas State as members. Just walk around the Square or campus and you can spot the Texas State Veterans. They’re usually about ten years older than the standard freshmen, likely sporting a beard, some with sleeve tats, others not. In the service Veterans use phrases like “Watch my six,” because Soldiers watch each other’s back. It’s important now in the civilian world that we continue to watch each other’s back. Since returning home from the Iraq War in 2009 it has been my mission to help my fellow Brothers and Sisters. In 2011, working with my fellow Council colleagues, I authored a program which waives San Marcos utility deposits for Veterans moving here, just a small token of recognition that Veterans have already “paid” their deposit when they took an Oath to defend our Country. It’s an honor that San Marcos every year recognizes Veterans Day with its largest Parade through the downtown Square. On the second floor of the Hays County Historic Court House I established

a Veterans Resource Center in 2012 to help Veterans and their families get the benefits they have earned. In 2013 working with the Hays County Sheriff, the District Attorney’s Office, Judges and others I helped found the Hays County Veterans Treatment Court, which helps our Combat Veterans get their life back on track if they find themselves in the Court Systems. After the Memorial Day Floods, I worked with local Veterans groups providing emergency assistance to Veterans and recently announced that, working with the Texas Veterans Land Board, they will provide zero interest home improvement loans to Veterans affected by floods. Veterans aren’t looking for a hand out, but sometimes they may need a helping hand, someone to “watch their six.” Texas State University, Hays County, the City of San Marcos and our community cares about our Veterans and it shows. This Veterans Day, thank a Veteran for their service and be proud to live in a community that supports its Veterans.

FIG MANHATTAN FIZZ This off-menu cocktail was developed on the spot for a master mixologist dining in. He asked for something totally unique that he’d never seen before, and this was the result. Cody’s Bistro & Lounge, $10

1 egg white ½ oz Fresh squeezed lime 1 Calimyrna fig, sliced ½ oz Simple syrup 2 dashes Fig bitters 1 oz Carpano Antica sweet vermouth 2 oz Buffalo Trace Bourbon 2 DashesAngostura bitters

PREPARATION

Separate egg white and discard yolk and shell. Add lime juice, fig and simple syrup. Muddle and shake without ice to create a meringue-like froth. Add fig bitters, vermouth, & bourbon. Shake with ice. Double strain. Spray stencil with Angostura bitters using an atomizer.

Now it has an official designation, as the Texas Film Commission has named the city a “Film Friendly Community.” The distinction means the Commission will offer guidance in how San Marcos can lure more filmmakers to the area.

Old Garage Becomes Artistic Inspiration When Barbara Trepagnier moved into her bungalow in San Marcos’ historic district 19 years ago, people told her to demolish the dilapidated garage in the backyard.

Across from the cottage in her manicured backyard is a small greenhouse where she stores materials for her mosaic and ceramic projects.

Here, Trepagnier creates colorful mosaics and ceramics. The 74-year-old began teaching workshops on the craft in 2011, after retiring as a Texas State sociology professor.

Bits of tile are contained in Mason jars lining the sides of the greenhouse. Plates, mostly from Goodwill, lay stacked on the ground, anticipating their transformation; pieces might become pendants or part of a figure’s face.

“Okay, I know how to teach; I can teach people mosaics,” says Trepagnier on why she started the workshops the day she retired as a Texas State professor. For about two years the workshops took place in the cottage, until Trepagnier, who also used the space as her studio, found the clean-up too time consuming. Now she only focuses on her work.

Word of mouth has helped Trepagnier find an audience for her quirky designs. “I often look up and see people in my yard,” she said of her open backyard gate policy. It’s a “Secret Garden,” a place for kindred spirits to mold conversation on the porch or clay inside the cottage.

Mosaic fish and crosses hang on the cottage’s wall. Trepagnier says the most time intensive part of creating a mosaic is coming up with a design. From there it takes two-to-three hours to glue the tiles on the form, two days to grout and another day to finish. But she’s quick to point out that it’s not hard work – and that most people, like her, don’t need to attend a workshop or class to learn the craft.

Barb’s Cottage has been a transformative experience. “I’ve never been ‘Barb’ in my life, only until recently; I’ve always been ‘Barbara,’” Trepagnier says of the nickname she’s been christened with as an artist.

“Barb” sells mosaics and ceramics on Etsy and jewelry at Paper Bear. She only recently started con-

sidering herself an artist. It’s been a somewhat difficult title to embrace because it just sounded pretentious, Trepagnier said. It was easier for her to call herself a teacher, a professor; those titles had a dollar amount and educational degrees attached to them. The title of artist gives her more freedom because she doesn’t have to make a living at it. Or, as Trepagnier states, “Now I’m playing every day.”

y mom & dad cooked, but it was my great-grandmothers who truly influenced me. We always had a garden and grew our own produce. We learned how to clean and prepare the food we harvested. The whole process has fascinated me since childhood.

Dirty Work My dad’s family is from Louisiana, so a lot of Creole dishes were prepared in my family. It is tradition that whoever gets the bay leaf at the bottom of the pot of gumbo has to do the dishes. How I Cook I am partial to more rustic traditional ways of doing things like pickling & canning. I prefer old school techniques to preserve food, to grow produce by natural and organic means, and to serve food farm to table style. My world revolves around food & cooking. Most Proud Getting to work in all types of restaurants from the Salt Lick making barbeque to the Austin Woman’s Club doing large private events. I have volunteered at the Driskill, Omni, and Four Seasons hotels in Austin. This has allowed me to see the different areas of chef work and be extremely creative in the dishes I cook. Home Cook Advice Use ingredients that are in season to get the fullest and freshest flavor in your cooking.

Mushroom & Sun-Dried Tomato Omelette Ingredients 2 eggs (local, pasture-raised preferred) 1 tbsp whipping cream 1 tbsp oyster mushrooms, small dice 1 tsp sun-dried tomatoes, small dice 1 tsp asparagus, small dice 1 tsp bell peppers, small dice 1 tbsp baby Swiss cheese, grated Pinch of salt & pepper

Preparation Heat skillet on medium high heat with one teaspoon of oil or butter. Tilt the pan to coat the bottom and sauté mushrooms, sun-dried tomatoes, asparagus and bell peppers until soft and set aside. Lightly beat eggs, whipping cream, salt and pepper. Pour egg mixture into the skillet making sure to pull the sides of the eggs away from the skillet so that that uncooked eggs can reach the hot pan surface. Continue cooking and gently moving cooked portions as needed. When the top surface is thickened and no liquid egg mixture remains, place sautéed vegetable and Swiss cheese on one side of the omelet. Fold the other half over. Slide onto plate and serve immediately.

Bacon, Spinach & Potato Hash Ingredients 2 tbsp oil or butter 1 small Idaho potato, small dice ½ small shallot, small dice ¼ cup spinach 2 slices cooked bacon, small dice Salt and pepper to taste

Preparation Heat butter in skillet over medium high heat. Sauté diced potatoes and shallots until golden brown. Add spinach and cooked sausage to the potatoes and turn off heat. Toss a couple of times to heat up bacon. Salt & pepper to taste.

Preparation Preheat oven to 400. In a small bowl, whisk glaze ingredients together. Heat a large, ovenproof skillet over high heat with olive oil until shimmering. Sprinkle salmon with salt, pepper and garlic and place skin side up in the hot skillet. Cook until a crisp brown crust forms—about 2-3 minutes. Remove skillet from heat, flip salmon and coat with the glaze. Transfer skillet to the oven and bake until the salmon is warm when a knife is inserted through the side into the middle—about 2 minutes. While salmon is cooking, heat a splash of olive oil in a skillet on the stove. Add garlic, stir quickly. Add spinach, a splash of lemon juice, and salt and pepper. Toss the spinach with a pair of tongs just until it is barely wilted. Place spinach on plate and lay salmon on top. Serve with a lemon wedge.

A Funny Thing Happened At Work During the holiday season years ago, I was balancing several catering jobs at once and directing a diverse crew. After a number of misunderstandings or misinterpretations of what I wanted, I gave into my impulse for theater of the absurd, called on my years as a theater major and fell to the floor, pounding it with my fists and crying “No, no, no, no, no!” My crew was shocked into complete silence, followed by panic. It took me years to convince them I wasn’t serious. Some of them, I think, aren’t entirely convinced. But they humor me. enjoy any opportunity to utilize a lesser known cut of meat. Everyone loves a good ribeye or New York strip but I want people to see that there is so much more to the cow. Also, Brussels sprouts rock my world!

Where’s The Beef This cut is from the top sirloin butt and it has a very unique flavor. It’s a 10 ounce Akaushi steak topped with housemade paprika butter. Akaushi is a Japanese Wagyū breed of cattle that produces beef richly marbled with fat, resulting in a very tender and flavorful steak. Served with French fries and bacon roasted Brussels sprouts. Life Changing Taquitos I was working at Fork and Spoon and my chef, Mark Segovia, took us out to eat after a catering event. We went to a little taqueria where no one spoke English. At the time I didn’t speak Spanish well, so I told Mark to just order me something good. The taquitos al pastor changed my life. It was like seeing my first blues concert or reading Bukowski for the first time. I had never tasted something so complex. With every bite I found a new flavor. That night I made the decision to become a chef. Preping Ain’t Easy At my first cooking job I was easily the worst person in the kitchen. I consistently burned everything I touched and spilled half of what I was trying to carry. I’m sure management discussed whether or not to fire me on a regular basis. I thought about quitting every day before I went into work but I pushed through it and, after a couple months, became the guy who only burned things half of the time and

only spilled a quarter of what I was trying to carry. I eventually learned what I was doing and worked my way up to lead line cook. Later I was classically trained at the Texas Culinary Academy. I tell that story to all my trainees when I see them struggling because it really is that hard to get into this industry. Soup & Strangers A few years ago, when I was living in San Francisco, I decided I wanted to eat a bowl of pho at 2am. I went to my favorite Vietnamese restaurant expecting to sit at my normal bench at the bar and eat alone. I had always thought of this place as “my spot”. It was run by an old Vietnamese woman, who kind of looked like the crypt keeper, and her daughter. It was normally a quiet place with only one or two people eating there but this night it was packed. The only space available was at one of the benches that a group of strangers was sharing. They were kind enough to let me join them and I stayed with them for the next two hours. The food was great, the coffee was strong, and the conversations were exciting. I still keep in contact with people I met that night over pho and spring rolls. It reminded me of why I love what I do so much. Good food can bring anyone together. Home Cooks, Listen Up Anyone can cook! The only difference between you and a chef, is a chef practices every day. Stop wasting your money on silly gadgets and learn how to use a knife.

Ingredients 8 oz Kennebec potatoes 2 lbs lard 10 oz Akaushi top butt steak 2 oz unsalted butter, soft 1 lemon, juiced ½ tsp smoked paprika 1 tsp fresh oregano, chopped Salt & pepper, to taste

Preparation Cut Kennebec potatoes into desired French fry size and fry them in lard at 350 degrees until crisp on the outside and fluffy on the inside. Toss with salt and pepper. Season steak with salt and pepper and sear both sides in a hot cast iron pan. Cook to desired temperature. Let steak rest for at least 3 minutes then slice against the grain. In a separate bowl mix soft butter, lemon juice, smoked paprika, salt, pepper, and chopped oregano. Scoop desired amount of paprika butter onto steak.

Bacon Roasted Brussels Sprouts Ingredients 8 oz Brussels sprouts 2 oz bacon 1 tsp sugar 1 tbsp fish sauce

Preparation Cut the tips off of the Brussels sprouts and then cut them in half. Slice bacon into small pieces. In a hot pan cook off bacon until crisp and fat has been rendered. Remove bacon from pan and add Brussels sprouts flat side down. Cook sprouts until ¾ of the way done and then add sugar, fish sauce, and bacon. Cook until tender all the way through.

was trained at the school of hard knocks. I fell in love with the business from the front of house side and then started spending more time with fantastic cooks over the years. I have learned from people from all walks of life in the business.

Ingredients 4 large shrimp 2 slices peppered bacon, room temperature, cut in 1/2 2 jalapeno cheese sausage links (Green’s Sausage House, Temple, TX)

Olive oil (as needed)

Preparation Peel and devein shrimp, leaving the tails on. Preheat griddle to medium low with olive oil. Wrap ½ slice bacon around shrimp, skewering in pairs. Cook sausage 1 minute, add shrimp, cover and cook for 4 minutes. Turn sausage and shrimp, cover and cook for an additional 4 minutes.

At Palmer’s you will never find foods such as Blue Point oysters (native to the East Coast). 2) Do something guests will not do at home and can’t get anywhere else. 3) Do something that takes a guest back to childhood, vacation, or special memories.

Tender Beef Medallions Ingredients 8-10 oz tenderloin or sirloin

Favorite Part Every day is an event where guests are choosing us to be their host.

Preparation Season meat with favorite blend and let rest at room temperature for 20 minutes. Preheat grill to medium high heat. Place meat on hottest part of grill and cook 2-3 minutes. Turn meat to cross mark and 2 minutes. Flip and repeat. Check for desired doneness. Cut meat on a bias or in chunks.

Preparation Drain water. Add ingredients and mash to desired consistency. Season to taste.

he musical theater program at Texas State is today one of the top 10 programs in the country. I am the first MFA student ever to direct a Main Stage Musical at Texas State University,” Moore said. Moore has a lot to be proud of. Over the last fifteen years, he has earned production and performance credits in theaters across the globe, from Madison Square Garden to the Royal Shakespeare Company in Stratford, England. After obtaining a BFA in Production and Performance, cum laude, from Texas State University, Moore worked as an actor and special events coordinator in New York City. Now back at his alma mater, Moore is ambitiously producing groundbreaking theater through his production of Evita with the help of an already outstanding theater program. The highly acclaimed TXST musical theatre program is helmed by award-winning Broadway actress/director Kaitlin Hopkins and all the performance classes are taught by Broadway professionals. Captivating the intricate character of Eva Duarte Peron is a task Director Moore is well prepared to undertake. Eva, a woman born of poverty and deemed illegitimate by birth right, miraculously rose to become one of the most powerful and controversial political figures in Latin American history. By the time of her death at the young age of 33,

Eva Peron had developed such notoriety amongst her Argentinian countrymen that she became regarded as “the spiritual leader of the nation,” as well as the core of a ruthless and crippling Dictatorship. She captivated the hearts and minds of spectators across the globe. “There is tremendous weight in the fact that Eva, unlike most dramatic characters, actually lived, and walked, and caused such a controversy. The audience should be prepared for a roller-coaster of an evening,” Moore said. A musical is nothing, however, without a strong cast. Moore is confident in the abilities of the theater students of Texas State. “The students here are literally mind-blowing in their artistry and technical skill. I’ve spent a lot of time looking not for people who could play these characters, but for people who feel like they are these characters. I can’t do this show alone, and it is amazing watching these characters come to life via our talented musical theater performers,” Moore said. With Moore at the helm, Evita is sure to be a dazzling spectacle and another example of what makes Texas State University tremendous. The epic saga of Eva Peron is sure to sweep the audience off their feet. “As with most of my work, I aim to produce a show that I would love to see as an audience member,” Moore said. “After the final curtain, I hope the audience is asking themselves the questions, ’How do I feel about Eva Peron?
