The sites we chose were based on current youth demographic patterns in Columbus and Chicago. The Columbus site situated near the Ohio State campus and also downtown. People of different occupations and different dining needs will pass by. The Chicago site is located in the middle of downtown at a major intersection. We tried to redesign Bob Evans so it is more suitable for customers that want to eat quickly. To serve this need, both projects were designed to have two restaurants in them. The Columbus project emphasized on the notion of performance spaces in the restaurant. There were two performance spaces: one attracting people from the street into the restaurant and the other attracting people in the restaurant to sit down at a table. A pit is dug into the ground and is pushed out onto the sidewalk. It holds a set of puzzle shaped tables that can rearranged to create personalized experiences. This creates a continuously changing seating arrangement. The other performance space, the kitchen which allows the seated guests to watch chefs prepare their meals. The customer can choose to either take away their food or dine in. This decision is made at the cash register at the point of entry. To connect the restaurant back to Bob Evans, the rolling hills of the majestic natural landscape of Rio Grande is mimicked in the ceiling. It brings back nostalgic emotions of being in the farm listening to cows moo and pigs oink while starring off into the sun stetting over the distant Ohio horizon. The ceiling starts from the ground and slowly rolls up along the wall to create an intricate ceiling. It also creates different seating zones and connects the dining spaces to the kitchen. The Chicago project was designed with the intent to create two distinct restaurants within the same project. The facades reflect the duality of the restaurant, but at the same time they are cohesive. The “restaurant” side of the facade uses wooden slats to hold on the rustic feel of the farm and it pops out in several places to create private pockets of seating. The wood slats are also used for an awning that then wraps around to the “café” side, joining the two facades. Upon entry, there is a rounded soffit that guides people to either move left into the café, or to move right into the restaurant for a longer stay. The café is designed with grab-and-go options for people who need to be in and out in a few minutes. The counter is designed to smoothly guide people to the exit. For people who prefer to sit and enjoy their meal, they move to the other side of the restaurant. This side is designed for minimal interaction with employees. There are user-friendly touch screen systems for ordering so that people can choose exactly what they want and review it before they place their order. Moving towards the back of the restaurant, the soffit is reflected in plan to create a space to hold “Bob’s table” (Bob Evans original table was a big round wooden table). There are a few different seating options to accommodate both large and small parties, as well as individual customers.
