Juniper Cherry Sauce
1 Cup Dried Cherries
2/3 Cup Water

2/3 Cup red wine vinegar
1/4 Cup homemade or store bought gin
1/4 Cup sugar
1 Tbs juniper berries
1 Tbs black peppercorns
Combine all ingredients in a saucepan and bring to a boil, reduce heat.
Let cool then blend until smooth.
Use as a glaze for roasting game or other meats or as a mop sauce & grilling glaze or a chutney to accompany vegetable dishes.
