DESTINATION INSPIRATION

CÁDIZ Cádiz is an anomaly. Sure, it’s historic and curated in the way you expect an Andalusian city to be, all sun-warmed oyster stone, gazed upon with a mouthful of paper-thin jamón iberíco as you do when you’re on holiday around these parts. But the local feel runs deep. It means the heart-wrenching flamenco plays to a raucous crowd of regulars. And that the plates of fried fish, devoured with your toes in the sand at a beachfront chiringuito, are dished up the same way they’ve been dished up to locals on a Friday night since the day dot. SHORE EXPLORER MEET HARRY MCNULTY:

When Royal Caribbean announced the ultimate apprenticeship (with extra emphasis on the ship), tens of thousands of people battled it out to experience everything the adrenaline-fuelled cruise line has to offer over three weeks of unfathomable fun. Harry McNulty reigned supreme and our editor Rebecca Martin caught up with the Instagram star, better known to his 10,500 followers as @SaltyNuts, when he returned.

H A R R Y, HOWZIT! Thanks for making time to chat to us amidst a busy travel and rugby schedule. A pretty action-packed Instagram suggests that you’ve barely stopped since becoming Royal Caribbean’s ‘Shore Explorer’ back in July. The experience is up there in the dream jobs category and you beat off competition from over 37,000 hopefuls to win ‘the world’s best apprenticeship’; how did you find it? It was an amazing experience that I still find hard to describe. As I’ve said before, I was delighted to be nominated for the top 20 with so many great entries, so to win was crazy! The trip flew by and I had such a great time in each destination. Every port of call was completely different and offered so many amazing experiences – and the highs really were high! I did everything from the highest waterslide in North America at Perfect Day at CocoCay (Royal Caribbean’s private island), to a helicopter ride over a glacier in Alaska. A trip I’ll never forget, that’s for sure.

BAHAMAS / MIAMI Let’s rewind to the beginning when you caught the travel bug as a kid; what sparked your love for adventure? I grew up travelling with my family which started me off on that track, and I also watched Nat Geo and the Discovery channel all the time! I loved learning about the animals and the people associated with each country. Steve Irwin was, and still is, an idol of mine. So basically I’m now just a bigger version of my child self! Navigator of the Seas was your first cruise and you sampled some of the best excursions on earth as Royal Caribbean’s ‘Shore Explorer’. How did your perception of cruising change? People often think that cruises are not for young people, but I would dispute that immediately. When I boarded Navigator of the Seas, I was blown away by the amount there is to do for people of all ages and really surprised by how full the schedule was; one night there was laser tag and the next night that same room was an ice skating rink, can you believe it? I loved The Blaster, which is the longest waterslide at sea, and then you’ve got theatre shows, outdoor movies, a night club, rooftop cocktail bars, the list goes on! There was so much to do and it really was a lot of fun. You started your trip in Miami, the sun-soaked starting point of many a Caribbean cruise itinerary. Tell us how we should spend a day there before our next cruise? Wake up for sunrise and go down to South Beach to watch the sky fill with stunning colours. You’ll also be able to take in the amazing Art Deco buildings that fill the streets. If you can, have a swim and then head to Under the Mango Tree for breakfast. Around lunch, head to Wynwood walls and enjoy all the amazing art, cafés, restaurants and hip bars. From there, head to Little Havana and try some of the staples; Café Con Leche, a Cuban sandwich, Cuban cigar, and of course a Mojito. I guarantee you’ll feel transported straight to the heart of Cuba. Be sure to enjoy some live music and dancing!

LISBON Cruising is unique in the way it allows people to see so many destinations in such a short space of time but six totally unique countries in a little over three weeks is no mean feat! How did you make the most of your time in each place and how do you plan your travels to make sure you see as much as possible? I had a great team behind me who helped to organise and book my shore excursions in each destination. It worked out to be roughly one excursion per day; as they were mostly in the morning, it gave me the opportunity to still go on an adventure on my own. For me, that was the perfect way to travel because I saw and experienced so much, but I also had the freedom to try and find my own experiences. When planning I try and research where I will be based, and then what the area has to offer. From there, I can decide on the best way to get around and plan my route. As a rugby player, eating well and keeping fit goes with the territory. How did you find the gym on Navigator of the Seas and how do you fit in exercise when travelling? The gym was great and actually a beneficial change for me on my trip. My goal was to exercise every other day so I was doing 20-30 minute body weight workouts in my room. To have access to a fully-fledged gym with all the bells and whistles was fantastic, and allowed me to have a session that I would do on a daily basis with rugby.

It worked out to be roughly one excursion per day; as they were mostly in the morning, it gave me the opportunity to still go on an adventure on my own. 50

DUBAI & ABU DHABI You became a fledgling Samurai in Kyoto, took a helicopter flight over glaciers in Alaska, embarked on a desert safari in Dubai and more. Which experience stood out as your most memorable? I have to say the helicopter ride to the top of a glacier in Alaska to do dog sledding was incredible. We had blue skies and the sun was shining, which is not that common in that part of the world. I also had the opportunity to drive the sled and then meet all the huskies after! All of the activities I did in Juneau (Alaska) were amazing – I also experienced a sea plane glacier tour, zip lining and axe throwing! When you visit a destination, you delve right into it, going beneath the surface by trying local dishes and getting to know the people. Why do you think it’s so important to travel like this? At the end of the day, it’s the locals who make the destination. I make meeting them a big part of my experience and always find myself having a much better time when I get to learn new ways of life. It’s a nice way to get out your comfort zone.

NORWAY You live in Dublin, another popular cruise port. Can you give us some secret tips for seeing the city like a local? Head to the area with Fade Street, South William Street and Georges Street, where you’ll find a lot of really amazing food spots, local filled bars, antique shops and Georges Arcade Market. Spend some time at The Bernard Shaw bar; it’s a really hip place that has an amazing food yard attached – Eat Yard. One of my favourite spots to go! Dublin is also ideal for sport, so depending on the season head to a GAA, rugby or soccer match, either in Croke Park or the Aviva Stadium. You’ve spoken in the past about your ambition to eventually combine photography and video with conservation to help ‘educate and inspire change’. What steps do you take to be a more environmentally conscious traveller? I aim to do everything I can when I’m home to be environmentally friendly, to try and offset some of the impact I have when I’m travelling. Public transport is much more efficient, so it’s great to use that when in a new destination. I bring reusable straws and cutlery with me to try and avoid using plastic and have also started using Raw Elements sun screen which is skin-safe and reef-safe. It’s a product that most people don’t think much about, but the chemicals in common sunscreen is harmful to you and the waters you enjoy.

TOKYO Which destination sits right at the top of your wish list for the next few years? Tonga, to swim with humpback whales, and also Mount Kilimanjaro. Rebecca Martin sailed from Hamburg to sample high life and high tea on a new, altogether more grown-up version of the classic girls’ getaway.

T

here’s a transitional quality to weekend getaways with the girls. We start young in UK cities chosen for their propensity to party and cheap-as-chips hotels. Next comes the mini break abroad, a bit of sun and a smattering of cultural sights as obligatory as Aperol when it comes to the prerequisites of a good trip. Adulting proper sees a gradual drop in numbers, marriage and kids clawing away at the time and money once reserved for afternoon tea and spa days. And then we arrive here; all grown up and desperately seeking somewhere new to convene on that weekend once a year when the stars align and you’re all free at the same time. Which is exactly how a friend and I came to be wheeling our cases onto the Queen Mary 2; a day in Hamburg behind us and two frivolous nights at sea ahead.

sophisticated affair, thanks to cavernous dining rooms reminiscent of those on the ocean liners of old. Tonight’s dress code was more casual than tomorrow’s black tie, but we were on holiday, so the heels and dresses were on regardless and we toasted the loss of Wi-Fi with a bottle of bubbly that had been generously left in our room for doing just that.

Similarly, the CanyonRanch Spa Club is akin to the most esteemed luxury retreats hidden away in Kensington, though the cost of our passes to its Aqua Therapy Centre paled in comparison at just $40 a day. Better still, book a treatment and access to the facilities is free. Late in the afternoon, full of the deliciously guilt-inducing carbs no girl’s weekend is complete without, we made our way up on deck to watch as the ship left Hamburg behind. The next day, our only sea day, passed by in a haze of breakfast in Kings Court, followed by window shopping in the jewellers, stargazing in the planetarium, then a whistle stop visit to the kennels; there are 24 on the Queen Mary 2 and seeing a crowd of bichon frises jostling for space at the fire hydrant with a bemused husky was a novel way to pass ten minutes in the sea air. It was cold for June and we decided that the only possible way to warm up was with warm, gooey Godiva chocolate fondue at Sir Samuel’s. The special Godiva Afternoon Tea is the ultimate indulgence here, but plates of flaky croissant, strawberries, handmade marshmallow and glutinous melted chocolate did the job just fine. Never ones to leave that last piece of croissant behind, we left feeling a little too full and conscious that we had indeed ruined our lunch with too much sugar.

A visit to the Cunard bookshop saw ‘Charles’ Grand Adventure’ bound for two-year-old Beyer’s book collection, joining an adorable plush bulldog decked out in his own QM2 dog coat and some trinkets sourced in Hamburg on the pile of presents filling mum’s case. The gym had impressed us when we called in to take a look the day before, so we did something absolutely unthinkable on a weekend away; we worked out before dinner. Oddly, time seems to pass more slowly at sea and

It just so happened that our time in Hamburg had coincided with sale season on some of the best shopping streets in Europe, something that inevitably led to the outfits we had planned for gala night being relegated. Instead, it was an oyster satin halterneck for me and a Seventies-style lamé maxi that would have had the whole of Studio 54 swooning for Lauren. There were heels and shoulder-skimming earrings, plus enough hairspray to sink a ship (excuse the pun), but this is black tie night on the Queen Mary 2; there is no such thing as overdressed. Dress codes on cruise ships divide opinion but there is something about Cunard’s British sensibilities and classic design that makes wearing your most OTT evening dress feel perfectly acceptable, if not expected. And let’s be honest, chances to ‘don your finery’ like the darlings of Downton are in desperately short supply.

We resumed our routine of nibbles and drinks in the Golden Lion, before a show in the Royal Court Theatre and a special gala dinner. From here on in, Queen Mary 2 let her hair down and took her guests with her. Karaoke brought down the house in the Golden Lion, the traditional pub barely containing the crowd. After an encore, the party relocated to G32, QM2’s resident nightclub where shapes were thrown and appetites worked up for the midnight buffet. So, how did a Cunard cruise fare for a girl’s weekend? The answer is rather well actually. Having ticked the usual city break spots off the list over the years, often-overlooked Hamburg was an unexpected success story of great

shopping, a lively waterfront with fab food and drink options ranging from farm fresh and local to stodgy German signatures, plus architectural highlights that left us wondering why Berlin and Munich hog the limelight. Of course, Hamburg was just the aperitif. Queen Mary 2 was the main event and what a host the flagship of the Cunard fleet proved to be. This was to be a grown-up weekend away and Cunard’s signature experience was indulgent and extravagant enough to be just that, without the eye-watering price tag you might expect to come with it. here’s a name for the way Oslo makes you feel. The Norwegians call it ‘kos’ but it’s less a word than a state of mind, an instant happiness that comes with feeling safe, warm and good together. Akin to that feeling on a cold morning when everything just feels right with the world, kos lingers in the air when you’re cradling hot coffee and cinnamon buns on the cushioned window ledge of a café (those Scandinavians really are the space-saving experts…) It’s there when you pause to take in the view of the islands from a bench in the Ekebergparken and when you realise that the world seems to have fallen silent as you watch the sun drop into the Oslofjord before dinner.

But don’t be fooled into thinking it’s all sheepskin and cosy; Oslo is cool. Admittedly, it’s a word thrown around with wild abandon, but the city that feels a lot like the future sure does the term justice with its so-hip-it-hurts locals and electric-powered everything. From electric scooters that are a fast-track to child-like excitement and futuristic Teslas at every stop sign – Oslo is the electric vehicle capital of the world – the European Green Capital 2019 is leading the way with innovations in sustainability and ways to protect the planet. Biting cold is a fact of life here at times, but Norwegians were never ones to let a little thing like sub-zero temperatures deter them from living their best life. Hike to the top of the Opera House and look towards the Langkaia pier for the fjordside saunas that are a sign of an urban sauna culture taking the city by storm. Ancient and ritualistic, winter ice bathing is nothing new to Norway but KOK Oslo’s wood-fired sauna boats are; each eco-friendly hut cruises the inner fjord to combine sightseeing with cold-water swimming. Further around the waterfront is SALT, a cluster of nomadic wooden pyramids that wouldn’t look out of place at Glastonbury. SALT’s steam baths vary in size, from the Árdna, one of the biggest in the world, to the Barrel, a smaller sauna built inside a 100-year-old, 7,000-litre aquavit barrel. With food shacks and a bar, art projects, improv theatre and live music, plus daytime activities for the kids, SALT has turned the ritual of sauna into something worth taking up a whole weekend. Cold water swimming is the tip of the iceberg as far as Norway’s obsession 78

with being at one with Mother Nature goes and you needn’t strap on your skis to experience it. Friluftsliv is a term first coined by Norwegian playwright Henrik Ibsen in 1859, but the concept it describes – of time spent outdoors, reconnecting with nature – is one that has been intrinsic to the culture here for hundreds of years. Best of all, it’s free. We’re going to level with you here; Oslo isn’t cheap. Norwegian salaries are some of the highest in the world and sticker shock can hit hard on things like food, drink and activities. That’s not to say the city isn’t worth every penny and, fortunately, an inclination towards time spent outdoors means plenty of urban parks on the outskirts of the city centre, all of which are within walking distance of the port, open all hours and free to visit. There’s an eeriness to the sculptures in Ekebergparken, where views overlook either the peaceful fjord islands or the space-age Barcode District, depending where you stand. On the other side of town, Vigeland is the largest sculpture park in the world by a single artist. Gustav Vigeland created more than 200 works in bronze, granite and cast iron, charting the circle of life from birth to death in various, often bizarre, manners. The installation celebrated 150 years since Vigeland’s birth in 2019 and remains one of Norway’s top tourist attractions. Even with parks excluded, Oslo’s proximity to nature is unique. Whether it’s a bowl of oysters in creamy broth at Vulkanfisk, Asian street food but not as you know it at Hitchhiker, duck confit on crusty bread at Galopin, or all of the above, shared with friends at one of the long communal tables, the amount of choice alone makes it too tasty an option to miss. Finish up with drinks at Smelteverket in

Oslo has taken a while to catch up with its more culinary-inclined neighbours like Copenhagen and Stockholm, but a penchant for new Nordic cuisine has seen the city gain traction on the foodie front in recent years. PECAN PIE Holland America Line’s divine pecan pie is a taste of New England in the fall. SERVES 12 INGREDIENTS For the pie crust: 190g plain flour 1tsp sugar ½tsp salt 6tbsp unsalted butter, chilled and cut into pieces

3tbsp vegetable shortening (cooking fat), chilled and cut into pieces 250ml water A few ice cubes For the filling: 200g pecan halves 200g dark chocolate, chopped into small pieces 3tbsp plain flour 12tbsp unsalted butter, softened 220g dark brown sugar 6 eggs (at room temperature) 250ml light corn syrup 85ml molasses 1.5tbsp Cointreau 2tsp vanilla extract ½tsp salt Lightly sweetened whipped cream for serving

INSTRUCTIONS For the pie crust:

For the filling:

1. In a large bowl, whisk together the flour, sugar and salt. Using your fingertips, work the butter and shortening into the mixture until it resembles coarse crumbs. Alternatively, combine the ingredients in a food processor, using short pulses.

1. Reduce the oven temperature to 175ºc/160ºc fan. Spread the pecans on a baking sheet and bake for 7 to 10 minutes, until fragrant. Leave to cool, before chopping roughly, then place them in a medium mixing bowl. Add the chopped chocolate and flour, then stir to mix. Set aside.

2. In a small bowl, add a few cubes of ice to 250ml of water. Using a fork, stir the water into the flour mixture a tablespoon at a time, using only as much as needed to gather the mixture into a soft ball. Pat the dough into a disc, cover it with clingfilm, and refrigerate for at least 1 hour. 3. Heat the oven to 200ºc /180ºc fan. On a lightly-floured surface, roll out the dough into a round shape about 1/8 inch thick. Drape the dough over a rolling pin and fit it into a 10-inch pie dish. Fold the edge under and crimp. Place the pie shell in the freezer for 20 minutes. 4. Prick the dough all over with a fork to prevent bubbling during baking. Place a piece of foil over it and fill it with pie weights or dried beans. Place the pie shell in the oven and bake for 10 to 12 minutes. Remove the foil and weights and continue baking for an additional 8 to 10 minutes. Remove from the oven and place it on a wire rack to cool completely.

2. In a large mixing bowl, beat the butter and brown sugar with an electric whisk until light and fluffy. Gradually beat in the eggs, one at a time, stopping two or three times to scrape down the sides of the bowl. Beat in the corn syrup, molasses, Cointreau, vanilla, and salt until fully incorporated. 3. Add the chocolate mixture to the egg mixture and stir until well combined. Pour the filling into the prepared pie shell and bake for 1 hour or until lightly set in the centre. Transfer the pie to a wire rack and allow to cool completely before serving. Serve at room temperature, topped with lightly sweetened whipped cream.
