ltra-luxury cruise line Seabourn has announced the launch of its new private chartered jet service, Seabourn Private Air. Designed for guests who prefer the luxury and convenience of private jet travel to commercial airlines, Seabourn Private Air will be able to accommodate groups of any size on a variety of aircraft. Guests will pay for the aircraft, rather than the seat, so the more passengers on board, the lower the cost per person. Flight costs will be in addition to cruise fares.

CELEBRITY APEX TO LAUNCH EARLY WITH UK PREVIEW Celebrity Cruises has announced that new Edge-class ship, Celebrity Apex, will launch ahead of schedule and enter service in April 2020.

A special four-night preview sailing will depart Southampton on 1 April 2020, calling at Bruges and Amsterdam. The cruise will mark the beginning of a mini-season of five sailings from Southampton for Celebrity Apex following its launch, before she spends the summer in the Mediterranean.

Edge-class ship, vice president and managing director of Celebrity Cruises UK, Ireland & Asia, Jo Rzymowska said: “After a phenomenal response to our game-changing ship Celebrity Edge last year, we couldn’t be more excited that sister ship, Celebrity Apex, will take to the water earlier than expected.

The four-night ‘Preview Sailing’ is the perfect introduction to luxury holidays at sea on a ship that breaks all the rules.”

PRINCESS CRUISES TO ATTEMPT VALENTINE’S DAY RECORD Princess Cruises will attempt to set the world record for largest number of vow renewals at sea next year, with a ceremony onboard Regal Princess’ Valentine’s Day sailing.

The event will be part of a special seven-night sailing and will be officiated by Gavin MacLeod, who played Captain Stubing in popular ‘70s TV show ‘The Love Boat’, filmed on a Princess Ship.

Other ‘romantic touches’ are expected to be announced for the sailing from Fort Lauderdale on 9 February 2020 over the coming months. The itinerary will visit Ocho Rios, Grand Cayman, Cozumel and Princess Cays.

ohemian Cochin is the cultural capital of India and visitors have been welcomed portside here for over 600 years, ever since the spice trade put the then Portuguese settlement on the map. Over time, the city has only gotten more charming, an amalgamation of influences meaning Chinese fishing nets suspended against sunset skies, India’s oldest synagogue giving a nod to Jewish culture and colonial buildings standing as regal reminders of Portuguese and Dutch occupation.

Cochin offers much to its guests, but its star attraction are the backwaters, meandering canals and lagoons shaded with coconut palms and with a shoreline scattered with tiny communities. Most excursions board in Alleppey and navigate the waterways that cut through lush paddy fields and jungle vegetation, often calling at historic Fort Kochi to visit St. Francis Church, India’s oldest European church and the burial place of explorer Vasco da Gama.

Following AmaDouro’s introduction to one of the oldest wine countries in the world, Into The Blue’s Rebecca Martin embarked the namesake AmaWaterways ship that is bringing a touch of gold to Portugal’s Douro River.

T

here are certain things that can’t help but make a town feel like fun.

Having experienced Porto, I can confirm that riversides lined with port wine merchants and cavernous cellars converted into divine dining spots are amongst those things. For those first few hours in Portugal’s second city, AmaDouro becomes a haven-like place in which to retreat after sampling the wares of a place that is intoxicating in every sense.

And then, after a day and a night, it is beneath the Louis I iron bridge from which the local lads swan-dived the afternoon before we go.

We’re bound for a week of wine on the ‘River of Gold’, so called by the Romans because the sun setting on its water reflects with a golden glow that means AmaWaterways’ gilded AmaDouro blends seamlessly with her surroundings. So much so, in fact, that you can’t help but feel like nobody else in the world could show you the Alta Douro region quite so well.

By the time Fortunata has refilled my glass and I’ve made myself comfortable in one of the rocking chairs that sit front and centre at the bow of the ship, the scenery has already started to change.

Porto’s riverside bairro of Ribeiro gives way in a colourful blur to plumes of eucalyptus trees and greenery that grows to the very edge of the river, give or take a beach or two. On a Sunday in the summer, those sandy slips and their cherry-red parasols break up the great panels of green hillside, simultaneously breaking the silence with little kids playing and big kids living it up on the back of boats. It’s a reminder that a good life is lived on the banks of the Douro.

The nature of the river and a lack of artificial light means that all sailing is done during the day. This means you don’t miss a thing, whether you position yourself in the lounge with your book or by the pool with a drink. With only 100 passengers, the ship feels utterly serene, the quiet giving way only to the toot of a horn at a passing pleasure boat or to birdsong, the singer heard but rarely seen. Quintas and villas emerge at the end of roads to nowhere as you roll on by. Some are charmingly unassuming, timeworn white with olive shutters and washing flapping in the wind. Tipsy travel - or enotourism, to give it its ‘proper’ name – has become big business here in Portugal, following in the footsteps of California and South Africa. While the country might have

been late to the wine tourism party, its demarcated wine region is the oldest in the world, dating back to around 1756. The Douro Valley is the only place in the world which produces those divine port wine grapes, but the region’s expertise extends to table wines too. Over the course of my week on AmaDouro, I enjoy an education on both, some of the most esteemed wineries in the region serving as my classroom and generations of winemaker my teacher. My ‘classmates’ have travelled from around the world.

There are Brits and Brits abroad, including a couple who upped sticks to start a new life and winery in the hills of El Dorado. Fast forward a few years and those seedlings have grown into grapes that scoop awards on the California wine scene, something that’s no mean feat given the region’s accolade-heavy appellations.

Californian wine aficionados are a common theme amongst AmaDouro’s guests, confirming that Portugal’s tipples have a reputation for being worth travelling for. The wine-mad aside, the passenger demographic is varied, from the young South African family dabbling in the Douro as part of an extended trip to Europe, to the dashing Scandinavian teen holidaying with his uber-glamorous grandma and taking an air of aristocracy with him on every excursion. Such a varied crowd – and the most fun and friendly crew I’ve come across on any of Europe’s river cruise ships – meant a lively atmosphere on board and a real team spirit ashore. For such a small ship, it’s easy to spend time alone on AmaDouro, but with a group of guests and crew like this, you really don’t want to.

We bond over wine tastings ashore and slices of almond cake aboard, catching up at the coffee machines with a wink of unspoken understanding as

another cookie falls from the jar with less than an hour until lunch.

Excursions on AmaDouro offer a choice of active levels, although even the most strenuous break only a light sweat. Mostly, they serve to showcase the region’s allure

of Quinta da Aveleda, with seven regal peacocks for company and the sun setting over the vines, we learn about Portugal’s Vinho verde from the family whose estate is known as one of the very best. Walking under centuries-old trees, having sampled the produce over a traditional Portuguese dinner, is a real pinch-yourself moment.

The next day, our arrival into port at Régua brings us to the Shrine of Our Lady of Remedies in Lamego. Fronted by 686 steps and decked in azulejos, it’s a sight to behold. Some scale the steps, others do it twice (what a way to burn off all that cheese and wine!) and others enjoy a leisurely saunter down to the foot of them, where Lamego sparkling wine and delicious Bolas de Lamego rewards everyone’s efforts regardless.

Just the one wine tasting a day won’t possibly do, so it’s onto Quinta da Roeda for a port wine education in its old stable building. As you’d expect from one of the famous Port Croft estates, the vintages hit the spot and see a lengthy queue for souvenir bottles to be enjoyed at home.

The next day, Pinhão brings sweet ginjinha liquor and sugar-crusted almonds at the baking-hot hilltop town of Castelo Rodrigo. It’s our most leisurely day of the week and everyone laps up the opportunity to relax and soak up some of that Mediterranean sun back on board.

The Douro becomes impassable once you reach the Spanish border, but there’s time for a jaunt into Salamanca before doubling back along the river.

‘The Golden City’ is a sea of sandstone and an academic powerhouse with the fourth-oldest university in the world.

There’s a youthful energy and regal history in a place where adventurers like Christopher Columbus and Hernán Cortés concocted grand plans to explore. In the studious surrounds of Salamanca University, you can be forgiven for thinking that the sound of footsteps on flagstones is you stepping into a Dan Brown novel.

Our final day is a favourite, starting with a pastéis de nata demo with sous chef Raúl in the lounge and rounding off with visits to two quintas, naturally. Quinta de Avessada sits pretty in the village of Favaios, where views from a wine-glass shaped infinity pool stretch for miles. Dinner is a Portuguese feast of local dishes, each served with a glass of its Muscatel produce and introduced with a story of how the estate at the heart of the region kept wine production alive during tough times. This, combined with our animated host and the poached pear with red wine, cinnamon and brown sugar dessert, saw it deemed by many as a standout experience of the trip.

Last, but not least, was Mateus Palace and Gardens, creator of the Mateus rosé that kept a generation refreshed from its flask-like bottle during the summers of the ‘70s and is experiencing a revival after a recipe tweak.

And then, after a slow and fond farewell to those vineyard-stacked valleys from the decks of the AmaDouro, it was back to Porto to end the trip with an afternoon and evening in the city where it started. Cork souvenirs were purchased, and one last glass of port was raised to new friends brought together by booze and leaving with plans and promises of winery visits and international catch-ups.

AmaDouro is resolutely local, with the crew, the food, even the furniture all hailing from Portugal. But while all of the above was fabulous, not to mention the ship itself, for all the food and wine that played a part in our week, the real star was the river. Meandering along in all its golden glory.

Amongst them are 400 original works from British artists such as Evelyn Binns, Helen Amy Murray and David Harber, part of a collection commissioned over a number of years and curated to showcase the landscapes and colours of the British Isles. It’s a bold statement that confirms this is an unashamedly British ship, built consciously to reflect that by its British cruise line. The result is enough to have you redesigning every room in your house within an hour of being on board.

amburg has a history and identity tied inextricably to the sea, so there’s little wonder that the destination is a clear winner with cruisers.

Germany’s second-largest city and biggest port has been a major player in maritime terms since its role in the Hanseatic League back in the Middle Ages, and its port area remains the place to be if you want to really get a feel for the place. From the eccentric to the extravagant, Hamburg promises it all in the confines of its diverse neighbourhoods. Here’s what to see in your 36 hours there.

A

s you might expect from the second busiest port in Europe and a place with maritime links that have stood strong for centuries, much of what there is to do in Hamburg is centred around the water.

The HafenCity waterside quarter has only been around a decade but The view from it is in that time, it has as impressive as become a hub of activity that of it, with an for tourists and locals observation deck alike. Hamburg’s tallest building is topped with thousands of curved reflective windows that imitate the waves and shimmer in the sunlight. The view from it is as impressive as that of it, with an observation deck and excellent café featured in the Plaza on the top floor. Inside, the Great Concert Hall is considered one of the most acoustically advanced venues ever built and the Elbphilharmonie Orchestra mustn’t be missed if the timings are right for your visit.

The HafenCity waterside quarter

Encompassed within the boundaries of HafenCity is Hamburg’s Speicherstadt, or the ‘City of Warehouses’. With gabled red-brick facades and criss-crossed canals, the Speicherstadt is the most photogenic part of town, particularly when lit up at night, and it’s where you’ll find some of Hamburg’s best museums. Miniatur Wunderland fills an entire warehouse with the largest model railway in the world and it’s a must for model train fans or anyone visiting Hamburg with kids. Be sure to watch the technicians at work as they continue to grow the exhibit; it’s set to expand right through to 2028, with new parts of the world added all the time.

Equally fascinating and only a short walk away from Miniatur Wunderland is the International Maritime Museum, distinguishable by the huge propeller that sits out front. All kinds of curiosities reside inside, from letters written by Admiral Nelson to a 3,000-year-old canoe discovered in Hamburg harbour. It’s a must for any keen cruiser.

A little further along the river is the Elbe Tunnel. Cruise ships sail from the opposite side of the water to the city centre and this epic feat of engineering connects the two from 24-metres below surface level. When it opened in 1911, the 426m tunnel was unlike anything ever seen before and its vintage signage, wrought iron staircase and maritime motifs alone are worth the trip.

hile the Reeperbahn might be mentioned in the guide books as a highlight of the city, we found it to err on the wrong side of seedy. Instead, stop just short of the area at the Spielbudenplatz of St Pauli. An urban beer garden in summer and Winterdeck with mulled wine and hot cocktails in winter, street food sessions here are a highlight of short breaks in Hamburg at any time of year. Food trucks roll in under various guises, from farmers markets to Hamburg currywurst-heavy beer festivals and has enough even vegan street food parties. signature dishes to see Hamburg has enough signature you through a dishes to see you through a whole whole day of day of dining. Start your morning dining. with a fronzbrötchen at Klein Konditiorei. Found nowhere but Hamburg and translating simply as ‘French roll’, the doughy buns see flaky pastry wrapped around a divine concoction of sugar, butter and cinnamon. Walking along the waterfront, it quickly becomes apparent that there is only one dish taking pride of place on the menu; fischbrötchen are found everywhere in Hamburg but they taste best by the river, where kiosks called fischbrötchenbude serve various versions of pickled, fried and smoked fish in a crusty roll. Another place to get your fill is Hamburg Fish Market, an institution since 1703

and a place where the night owls and early birds meet at 5am for fish sandwiches as the sun rises over the Elbe. Don’t worry if you’re less keen on a dawn start, they’re open until 9.30am.

ne of the most memorable drinks you’ll have in Hamburg follows one of the most memorable experiences.

Dialogue in the Dark is an experiential exhibition that sees visitors led by blind guides in absolute darkness, negotiating the everyday situations anyone with 20/20 vision takes for granted, like crossing a busy road or walking in the park. You can’t help but feel affected after the experience, which has now been rolled out from its original Hamburg location to 41 countries around the world, and drinks at the Dark Bar afterwards are a great place to discuss it.

Anyone with a penchant for gin and a fancy for something a bit special should pay a visit to Clockers Bar. It isn’t easy to come by – you’ll find nothing more than a door marked with the number 27 – but the out-there bar inside is seriously cool, with moss on the walls and a tree spreading its branches across the bar.

Clockers produces its own gin and has come to be known as one of Hamburg’s best bars.

It’s best Indulged upon in the opulence of a Viennese coffeehouse, the sounds of a Strauss waltz in the air, but Austria’s delectable signature dessert is to die for anytime, anywhere.

INGREDIENTS

DIRECTIONS

FOR THE CAKE:

• Preheat the oven to 190c.

145g softened butter

• Cream together the butter and icing sugar until smooth.

65g icing sugar 8 egg yolks 8 egg whites 140g dark chocolate, chopped 80g plain flour 95g sugar 45g apricot jam FOR THE GLAZE: 225g dark chocolate, chopped 30g butter Whipped cream to serve

• Add one egg yolk at a time, mixing until creamy.

• Melt 140g dark chocolate. Once melted, add gradually to the creamed mixture and fold in the plain flour.

• In a separate bowl, beat the egg whites and sugar until stiff. Fold into the chocolate mix.

• Heat the apricot jam and smooth over the entire cake, including around the sides. Alternatively, slice the cake in half crosswise and add jam between the layers.

• Melt the remaining dark chocolate with butter to create the glaze and pour over the cake.

• Allow time for the glaze to set before slicing and serving with whipped cream.

• Pour the batter into a lined 9-inch springform cake tin and bake for 50 to 65 minutes.

• Remove the cake from the tin and cool on a wire rack.
