Did you feel it? That slightly chilly breeze that made you (briefly) second guess your

decision to leave the house in shorts and a tee this morning? That, my friends, is called winter in Orlando and if you’re reading this then that means November is here and the winter holidays are right around the corner. As we pack away the Halloween decorations and start our preThanksgiving dinner diets, let’s also take a look back at the events that kept us busy all Octoberlong! Here’s your monthly recap, just in case you missed it.

Halloween may be the day with the most candy, but a very different sugary celebration was happening in Orlando a few weeks earlier. For this first ICYMI event, we’re rewinding back to September 18th when The America’s Cake & Sugarcraft Fair took over the Orange County Convention Center. For two hours, attendees walked the show floor that had been transformed into a high-fashion haven of chocolate couture and sinfully delectable designs for the Cake Central Sugar Arts Fashion Show & Cocktail Party. The sweet and stylish event featured a fashion show made up of entirely edible designs created by some of the best in the business like Colette Peters, owner of Colette’s Cakes in NYC, who has created cakes for everyone from Kanye West to First Lady Hillary Clinton.

As Scotch, bourbon, rum, rye, and wine were flowing, guests toured inside the elegant showroom where they were surrounded by the world’s newest luxury vehicles. With a maximum capacity of 70 guests, the intimate event proved to be a fabulous evening full of incredible vehicles, fine wines and spirits, VIP gift bags and great company to benefit a worthy cause. 100% of all funds raised from the beautiful evening directly benefitted the Kids Beating Cancer Foundation. The legendary Chef Norman, chef-owner of NORMAN’S at The Ritz-Carlton Orlando, is known internationally as “The Founding Father of New World Cuisine.” His famous cuisine is a celebration of Latin, Caribbean, Asian, African and American flavors. He is an internationally acclaimed author and the only Floridian to ever be inducted into the prestigious “James Beard list of Who’s Who.” Needless to say, Orlando’s very own Chef Norman is a big deal and on October 7th, our city was given yet another reason to brag when Chef Norman Van Aken received the inaugural Torch Award at the Florida Restaurant and Lodging Show! The Food Shows and Ferdinand Metz Foodservice Forum presented the award to Chef Norman Van Aken for his outstanding achievements and contributions to the restaurant and foodservice community. After the awards ceremony, attendees flocked to see Chef Norman join Certified Master Chef Ferdinand Metz for a one-on-one cooking demonstration open to all trade show attendees. Congratulations Chef Norman!

October 1st wasn’t just the beginning of a new month! It was also the grand opening of the Design House of Colour (DHOC), a new multidisciplinary fashion center focused on bringing fashion education and opportunities to the underprivileged and underserved communities in the fashion design and embellishment industry. Based in downtown Orlando, DHOC will feature three fashion focuses under one roof: an education center, a retail shop, and a Designer Showcase Space. The grand opening event featured a ribbon cutting ceremony and a launch party with food, drinks, special showcases, a celebratory toast, and much more! Be sure to swing by DHOC’s brand new location on 595 West Church Street to check out all they have to offer! its 19th event. The Southeast Region of Canine Companions for Independence hosted the evening that seeks to help Canine Companions place assistance dogs, free of charge, for people with disabilities. Last year’s Gala raised more than $285,000 to the delight of show organizers and attendees. This year’s event included great food and drinks as well as silent and live auctions. In addition, the program honored a Canine Companions graduate who took to the stage to describe how her assistance dog has changed her life by providing joy, friendship, independence and unconditional love. Every celebrity needs to be able to laugh at themselves now and then and Mark NeJame is no exception! On October 10th, other local celebrities and public figures raised their glasses high as they roasted and toasted one of Central Florida’s best known residents at IMPOWER’s event: Wine & Wit - A Roast Celebrating Mark NeJame. Uniquely set in a Hangar at Orlando Executive Airport, the event offered a fantastic evening full of wine and live entertainment. Event attendees even had the opportunity to participate in an exciting silent auction and enter a raffle to win a 7-day cruise! Plenty of laughs were had throughout the night as everyone from our very own Sven Bode, XL106.7’s Jonny Magic to Mayor Buddy Dyer came together to celebrate local attorney, entrepreneur, philanthropist and dedicated family man, Mark NeJame. Both La Petite Robe fans and unassuming shoppers were thrilled by an afternoon presentation and personal appearance by the collection’s designer, the one and only Chiara Boni. A COLLEGE With A Legacy

130 years ago, Florida’s oldest college institution, Rollins College, held its first set of classes on November 4, 1885. The post Civil War era renewed New England Congregationalist fervor and led to an onslaught of liberal arts colleges popping up around the country. By the 1880s, the General Congregational Association of Florida was discussing where to construct the state’s first higher education institution. Lucy Cross, one of the members, suggested scenic Winter Park. Cross is known today as the “Mother of Rollins College” and has the Lucy Cross Center for Women on campus named after her. Other influential names you might recognize are New Englanders Alonzo Rollins and Franklin Fairbanks.

Their unique mascot, the Rollins Tars, may be a source of confusion for some. A “Tar” is a traditional nickname referring to British seamen and U.S. Navy sailors due to their slicked back, ‘tar-filled’ hair. But how did the term move from the Atlantic Ocean to Central Florida? The name became popular around campus back in 1917, when World War I sailors used Lake Virginia as their training base, causing the ladies on campus to swoon.

library to a chemistry lab to now a residential and philanthropic community. The other founding buildings were destroyed in a 1909 fire. Interestingly enough, Pinehurst looks like the most modern building on campus, as all subsequent buildings have been designed with an older Spanish architectural feel. That first year, the founding class had only 66 students. Nowadays, matriculating undergraduate classes are just under 500 students. Much has changed, but Rollins’ heart is the same, encouraging all visitors with its motto “Fiat Lux”: Let There Be Light.

Now, imagine greeting your Thanksgiving guests with a delicious bacon infused Pisco Sour to keep them satisfied until it’s time to carve our country’s most beloved bird. So, how does one infuse the delicious taste of bacon into alcohol? Using a technique called “fat-washing” and a little bit of science, you’ll have a drink worthy to kick-off your T-Day traditions. Here’s what you’ll need for your Maple Bacon Pisco Sour: For the cocktail: 2-oz bacon fat-washed Pisco ¾-oz lemon juice ½-oz maple syrup (grade B) 1 egg white Angostura bitters for garnish For the bacon-fat-washed Pisco: 750ml bottle of pisco (preferably aged) 1 1/2 oz bacon fat (liquid volume) Begin by rendering some bacon fat...yes, it’s time to cook some bacon! You’ll need four to five strips of bacon for each drink. Once you’ve cooked your bacon, carefully strain the fat through a fine mesh metal strainer while the bacon fat is still hot. Next, pour some Pisco (ORO Pisco Italia Mosto Verde is a brandy worthy to be used) into a freezer-safe jar with a wide mouth. Now, strain the bacon fat into the Pisco and stir well before placing the liquor into the freezer for 24 hours. Freezing the Pisco causes the bacon fat to solidify while the liquor does not, allowing you to skim the solidified bacon fat off the top before pouring the pisco through a fine mesh strainer to withhold any remaining fat, leaving you with smoky, salty, delicious bacon-pisco. Now that you have your fat-washed Pisco, the rest is simple. Add egg white, lemon juice and maple syrup to a shaker and dry shake for ten seconds - allowing your egg white to foam. Next, fill the shaker with the Pisco mixture and some ice. Shake thoroughly for ten more seconds before double straining the cocktail into a chilled coupe glass and serve with a garnish of Angostura bitters if desired. Enjoy the game, the parade and the day while sipping a hearty Maple Bacon Pisco Sour and chasing it with a full plate of Turkey day fixin’s.

THE CHEF NEXT DOOR Orlando Style sits down with The Next Iron Chef Competitor and Chopped judge, Amanda Freitag to discuss food allergies, cooking secrets and her newest cookbook, The Chef Next Door By Diane Zeise

During her visit to Orlando for Epcot’s food & Wine Fest, Chef Amanda Freitag took the time to share advice and swap recipes with us before hitting the stage for a cooking demonstration. Amanda was a guest chef at the Food & Wine Fest on behalf of Mylan, one of the world’s leading global pharmaceutical companies. Mylan’s mission since 2014, together with Disney, has been to educate families about the importance of preparation in the face of a life-threatening allergic reaction and to enhance access to epinephrine, the first-line treatment for anaphylaxis.

Orlando Style: What was the inspiration for your most recent cookbook, The Chef Next Door?

I always say. I want people to take my recipes and to make twists. I would love it if people reading my book would take instagram pictures of what they’ve changed my recipes to or what my recipes look like in their kitchen.

Amanda Freitag: The inspiration was sort of a love letter in admiration to the home cook. Recently I discovered cooking in my home kitchen in between restaurant projects and just how hard it was. Without a team of chefs, a pile of pots and pans and a stainless steel habitat it’s hard to cook. On the flip-side, what I always tell people about restaurant cooking is that it’s in parts and pieces. You never touch the meal from beginning to end. Everyone has their job and nobody touches every part of one meal like you do at home when you cook. It was an eye opener to me. So, when writing my book, I decided to do what I normally do. And that is to do all the prep first - which is something I really wanted to teach the home cook. Don’t start cooking until you’ve read all the directions and have all the ingredients prepared. Because once all the preparation is done, it’s just cooking. And cooking is no big deal. The recipe is just a guideline, that’s what

OS: When creating the recipes for your cookbook, how did you deal with your personal allergy? AF: Well, I have a hazelnut allergy, so much like the restaurants and locations that I cook and work in, there’s nothing in the book that contains hazelnuts. There are also a lot of recipes that are dairy and gluten free. My oldest niece has Celiac Disease, which means she can’t eat gluten and my brother is also gluten free. Many of the recipes in my book are dishes that we might cook for holidays that they would attend and so I made sure to keep them allergen free. I find that I tend to cook recipes that don’t contain gluten because I’ve just naturally learned to cook without it and other allergens. My youngest niece can’t 30

eat eggs and so my brother has been making delicious dishes that are completely egg-free and I just thought, I don’t need to lean on the same old recipes because they’re easy. Every day I discover new ways to cook some of my favorite dishes to accommodate those who can’t eat many of the foods that these recipes call for. Food is a very social thing, you shouldn’t be cast out because you can’t eat what everybody else can. OS: How does your cookbook differ from others on the market?

AF: I like to think of it as the anti-cookbook cookbook. It doesn’t have master ingredient, pantry or equipment lists. The whole idea of this book is that you can buy the ingredients you need and cook right away. In my kitchen I have one pasta pot, one skillet and a wooden spoon. All the great equipment is at the restaurant. You can cook all of my recipes with the most basic equipment. Sometimes kitchens are ill-equipped and poorly designed and you the cook have to work around that obstacle. It’s okay if you don’t have the same pan I do or if you don’t like some of the ingredients I use in a specific recipe. Substitution and experimentation is encouraged. OS: Would you say you’re a measurer? AF: Well that’s the big reveal, chef ’s don’t read recipes. We have our techniques and we know recipes but we aren’t big measurers or readers. I wanted so much to make recipes like that - a little more rogue than the recipes in my book. But, any question that might come up, we tried to answer so the recipes in my book are much more thorough than they might normally be.

THE WHOLE IDEA OF THIS BOOK IS THAT YOU CAN BUY THE INGREDIENTS YOU NEED AND COOK RIGHT AWAY. OS: What would you say your favorite recipe in your cookbook is? AF: That’s a hard one! There are a lot of recipes in here and my dad is no longer with us so I’ve included two of his recipes in my cookbook. Pop’s Beer Braised Beef Stew and Angel Food Cake are two recipes that are very special to me. He was meticulous about measuring and he loved the science of pastry. Amanda Freitag, who partnered with Mylan to present allergenfree foods to Epcot Food & Wine enthusiasts, actually cooked a recipe from her most recent book during her demonstration. The Eggplant Caponata, served over a Chickpea Pancake was the perfect balance of sweet and salty - and a delicious addition to Epcot’s Food & Wine Fest! Many of the delectable dishes found in The Chef Next Door are free of the top eight food allergens: dairy, wheat, soy, eggs, peanuts, tree nuts, fish and shellfish. Amanda’s best advice to those with food allergies is that more information is better, especially when dining out. A one-minute conversation allows you to relax and enjoy your dinner without worrying about your food allergy.

SILENT ASSASSIN PORSCHE MISSION E

The drive system of the Mission E is entirely new, yet it is typical Porsche, i.e. proven in motor racing. The round instruments are organized according to the driver-relevant themes of Connected Car, Performance, Drive, Energy and Sport Chrono. The controls are just as innovative. An eye-tracking system detects, via camera, which instrument the driver is viewing. The driver can then activate the menu of the instrument in focus by pushing a button

on the steering wheel and navigate in it – which also involves an interplay of eye-tracking and manual activation. But that is not all: the display follows the seat position and body attitude of the driver in what is known as a parallax effect. If the driver sits lower, higher or leans to one side, the 3D display of the round instruments reacts and moves with the driver. This eliminates situations in which the steering wheel blocks the driver’s view of certain key information, for instance. All relevant information such as vehicle speed is always within the driver’s line of sight. Pretty incredible.

“Flight attendants, please prepare the cabin for arrival,” the pilot said over

the intercom. Being a frequent flyer, I knew this message means that the flight is within 15-20 minutes of landing. Looking out my window, there are endless miles of pristine beach, crystal clear ocean water, and a country I was about to discover – Mexico. I’ve traveled to many places, but Mexico was never one of them…yet. I have always read about and heard how beautiful it is to spend a few days in Cancun and Playa del Carmen, but it’s really the kind of destination you have to see to believe. Upon landing at Cancún International Airport, I wasn’t sure what to expect since I don’t speak more than three basic words of Spanish. So, considering that I’m in a foreign country that I’ve never been to and don’t speak the language, I assumed getting to my resort, Grand Velas Riviera Maya, was going to be a challenge until I arrived at the shuttle location and immediately spotted a gentleman holding up a “Grand Velas Riviera Maya” sign with my name on it. It was then that I found out that this gentleman would be driving me (in a luxury SUV) to the worldclass, all-inclusive Grand Velas Riviera Maya. About an hour south of Cancun is where the desirable Riviera Maya is located. The Riviera Maya is situated along the southeastern coast of Mexico in the state of Quintana Roo. Located along 81 miles of Caribbean coastline in Mexico’s Yucatan Peninsula, Riviera Maya is the ultimate getaway spot for aquatic and landbased adventures. The region is home to a variety of adventure-oriented superlatives including the world’s longest underground river network, which has been shaped by the area’s unique porous geological terrain, and neighbors the second largest barrier reef in the world. From Tulum, I was then transported to Jungle Maya, where I had the opportunity to snorkel the beautiful Sac-Actun cenote system and view the millenary stalactites and stalagmites. Our guide then took us on an exhilarating 3 zip-line Canopy circuit throughout the lush forest, the last one is water landing, which was my favorite. To end the experience, we were treated to an authentic Mayan lunch buffet that consisted of homemade traditional food and soft drinks. It’s a one-of-a-kind experience that’s fun for all. The tiny patient is in desperate need of a dangerous operation to replace the area of weak tissue. A medical team at the University of Michigan’s C.S. Mott Children’s Hospital in Ann Arbor is tasked to carry out the operation on the now three-monthold boy. The life-saving hero of this delicate task? A 3-D printer. With the help of this incredible tool, the medical team saves an infant’s life.

Ohio, a baby is born with a rare condition called tracheobronchomalacia. For three months this little boy lives through labored breathing with a portion of his airway collapsed from weak tissue, blocking neighboring

Thinking of 3-D printers as simple tools or toys is history. These machines now have the potential to assist in the creation and maintenance of human life. Using a 3-D printer, doctors were able to map a baby’s airways and design and print a splint, which is a small tube made of the same biocompatible material that goes into sutures, that would snugly hug the weakened section of the boy’s airway and would keep it from collapsing. This splint was strong and flexible enough to expand with the boy as he grew

and within three weeks, the baby was home safe and sound. Since then, 3-D printers have assisted in jaw reconstructions, spinal braces, customized exoskeletons (to restore mobility to people who were paralyzed) as well as several other medical advancements including customized knee implants. Perhaps one of the most advanced and innovative uses for the 3-D printer in the medical field is still on the horizon. The goal of many researchers is the engineering of full organs and tissues, including kidneys and livers, to allow patients immediate transplants. While full-fledged organs have yet to be grown, 3-D printers have assisted the process through the production of polymer scaffolds, where tracheal, cardiac and kidney cells are often grown. Jennifer Lewis, a materials scientist at Harvard, is one of the driving forces behind the emerging field of 3-D printing in medicine. In 2001, she teamed with Scott White, a materials engineer who had worked for years on the creation of materials that

would mend themselves when damaged. When Lewis and White joined forces they realized that the self-healing materials need microchannels so the healing agents could more readily reach the damaged or broken areas. With the help of White, Lewis developed a material called Pluronic Ink, which is gelatinous at room temperature but liquid when cooled to near freezing. This “fugitive ink” as Lewis calls it, “is a bio-inspired approach to creating materials that can heal themselves.” She also says, “my big role in the [development of the ink] was to find ways to use 3-D printing to embed this microvascular network. Once we did that, it was pretty easy for me to see the broader implications.” Lewis now works at Harvard, doing research at the Wyss Institute for Biologically Inspired Engineering, with three

3-D printers and an army of undergraduate and graduate students. Utilizing 3-D printers and her fugitive ink, Lewis and her current team are creating blocks of living tissue permeated with intricate vessels that are capable of carrying nutrients to cells throughout the vessel network. This is a big step for engineering and medicine in the creation of complex tissues. - One of the greatest benefits of Lewis’ work being if bioprinted tissues were easily accessible, experimental drugs could be tested to discover side-effects and threats before the money is spent on animal and human testing. With innovation like Lewis’, 3-D printing will soon change the pharmaceutical industry forever and who’s to say 3-D printed functioning organs aren’t in our future?

exclusions. This is where they get you folks! (And by “they,” I mean the insurance company.) Your insurance company will work hard to draft exclusions that will provide them a reason as to why they are not obligated to defend a particular claim or lawsuit against your business.

Our city has a proud and diverse group of entrepreneurs. From clothing boutiques to juice bars and everything in between, businesses are open to the public around the clock. To business owners, this means money. To lawyers, this means lawsuits! We are paid to protect you, and if necessary, fight for you. We prefer the former (well, some of us do), and a huge tool in our arsenal is a strong commercial general liability policy (CGL).

By way of example, you are having a sale on all summer clothing. You decide to send the following message to your contact list via text “SALE on all summer clothing at Jane’s Boutique!” Next thing you know, you are getting served with a lawsuit, claiming you have violated federal and state consumer protection laws. First call should be to your insurance company (always do this!), who then

General liability policies protect your business from lawsuits against bodily and personal injury claims, property damage, and personal and advertising injuries. CGL policies are extremely broad, but don’t feel comforted by this. When drafting the policy with your agent, the majority of your conversation will revolve around issues you a letter either denying coverage, and citing to the advertising injury exclusion. Hmph, that’s weird, you think. I’ve been paying them $1500 dollars per month for years. Isn’t this what I’ve been paying for? Right, well, in the world of logic, you would be correct. But the Land of Commercial Insurance is silly and nonsensical - coverage of a claim is like spotting a unicorn. You then realize that when you purchased your policy from Todd the Insurance Man, that you had no idea what an “advertising injury” was. And Todd the Insurance Man is not Todd the Lawyer – he is driven by commission and getting that signature. Closing the deal. This does not fare well for Jane’s Boutique years down the road… Folks, this story does not end well. So, pay attention class. Here’s the Cliff’s Notes so you know what to ask your lawyer and Todd the Insurance Man when you call to review your policy (which you are going to do, right?).

There are two key components to CGL policies: to defend and to indemnify. The duty to defend lawsuits filed against your business is far more broad and favorably interpreted than the duty to indemnify. Upon notifying the insurance company of a pending or potential claim, the insurance company will determine whether they have a duty to defend a particular claim. If there is a clear exclusion in the policy for that type of claim, the insurance company may not have the duty to defend – however these areas are hotly litigated, so always fight for coverage! Oftentimes, an insurance company will issue what is called a Reservation of Rights or “ROR” letter, which means they will agree to defend your business, but reserve the right to deny coverage in the future. What does this really mean? That would be impressive enough on its own, but Fanning’s family tree also has a second tie to royalty. Both actresses are the 21st cousins of Kate Middleton, the Duchess of Cambridge. Middleton’s mother Carole Goldsmith is also a granddaughter of King Edward III, which means the Fanning sisters and the future Queen of England are distant relatives. Step aside, Disney! All three are related to each other through a French couple who settled in Quebec in the early 1600s. Bieber and Dion are actually 10th cousins three times removed, and are related through a different French couple who also came to Quebec in the 1600s. She’s earned nine Grammy Awards, received multi-platinum status as a recording artist, and is considered internationally as an R&B legend, but Mary J. Blige is still striving for an achievement that all the accolades in the world cannot provide. As an artist constantly looking beyond the waves of modern music, Blige has set out to create the unexpected. Ever since her 1992 debut with her groundbreaking What’s the 411? album, Blige has always found herself on the edge of the music world’s terrain, looking over the cliff at the horizon of possibilities before her. Even as a young girl trying to find success as a singer, Blige knew she had to push herself to stand out from the crowd of her contemporaries, and this meant the up-and-comer had to find within herself an originality that would make her the trendsetter we know her as today. RECORDING CONVERSATIONS CAN BE A FELONY IN FLORIDA By Mark L. Horwitz | Orlando Criminal Defense Attorney felony punishable by up to five years in prison. The terminology used in the Statute is more complicated and technical but the meaning is clear. Even a faceto-face conversation cannot be recorded without all parties knowing of the recording. We are all familiar with commercial phone calls which begin with a statement that the call may be recorded for quality control or customer service reasons. This announcement gives notice to the parties that a recording may be made and complies with Florida law. If you wish to record a conversation you simply must advise the parties to the conversation that you are doing so. Mark L. Horwitz Many people believe that they have the right to record their conversations when talking with someone in person or over the phone. In Florida, however, it can be a felony. With modern technology it is very easy and tempting to record a conversation either in person or over the phone. Just because modern technology makes the recording easy, it does not make the recording legal in the state of Florida. The interception of any oral, wire or electronic communication without the knowledge of all parties to the conversation, is a

In addition, the law makes it a felony to use, or even attempt to use, an illegally recorded conversation for any purpose. Causing another person, by whatever means, to illegally record a conversation is against the law. It is also a felony to disclose the contents of a conversation obtained through an illegal recording.

by any agency or officer of the State. Law enforcement may, however, authorize a person to record a conversation without notifying the parties of the recording. Before recording a conversation, you should consider your actions carefully. If you believe it is important that the conversation be recorded, I suggest you announce at the beginning of the conversation while the recording device is on, that you are recording the conversation. The other person may say that they do not want to speak with you or that you need to turn off the recording. My suggestion, in that instance, is that you clearly announce that you will not turn off the recording and if there’s going to be any conversation, it will be recorded. The only time that an illegal recording is admissible in court is when the state prosecutes a person for making or using the illegal recording. The end of the year will be here before you know itwe are less than two months away from ringing in 2016! One thing you will want to remember is to make sure to use your dental benefits before they expire! Most dental plans expire at the end of the year so don’t spend all year paying for dental benefits that you don’t use. Some patients are lucky enough to receive a notification letter from their insurance provider about their current dental benefit plans. Generally this letter is given to many who have failed to use their benefits throughout the year, and need to respond to take advantage of these benefits before the year ends. Most insurance providers, not all, allow two dental checkups per year. It’s always best to check with your provider for specifics about your unused heath or dental benefits.
