Wash the fruit. Let the grapes dry. Slice the fresh fruits. Set out a large wooden, slate or marble board to fit everything on. Set out a few small bowls to put jams, honey, mustard, etc. in. Stems may be used for another recipe. Brush mushroom caps with a little dressing and cook them upside down on grill. In the bowl with the yolks, add sugar and beat yolk mixture with an electric mixer until consistency is creamy. Add mascarpone cream cheese and mix thoroughly. In the other mixing bowl, beat egg whites until they turn into fluffy white peaks. Carefully fold white peaks into the creamy yolk mixture. In another bowl, mix together espresso and vermouth. Dip cookies in coffee mixture for a few seconds, making sure they are wet outside but still somewhat dry in the middle. Arrange dipped cookies in one tightly packed layer on the bottom of a cake pan. Pour 1/2 of the mixture on top of the cookies and spread evenly. Add a second layer of soaked lady fingers, then evenly spread the remaining mixture on top. Plastic wrap the cake pan and leave Tiramisu to rest in the fridge for 3-4 hours. Before serving, sprinkle with chocolate shavings. Bocconcini 18

Frozen spinach thawed, squeezed dry • 1 cup Roasted red peppers (thoroughly drained / patted dry and chopped) • 400 g Brie cheese, rind removed, cubed • 1 cup Freshly grated Mozzarella cheese divided • 3/4 cup Freshly grated Monterey Jack cheese divided • 1/2 cup Freshly grated Parmigiano Reggiano cheese divided Directions: Preheat oven to 375°F. Melt butter in a 9” oven proof skillet over medium high heat (OR use any skillet and transfer dip to lightly greased 9” pie pan to bake). Add onions and cook, while stirring for 3 minutes. Add garlic and saute 30 seconds. Stir in flour, and cook, while stirring, for 2 minutes. Turn heat to low and stir in milk, Worcestershire sauce and all spices. Increase heat to medium high and bring to a simmer, while stirring, until thickened (but not too thick). Remove from heat and stir in sour cream until smooth. Stir in spinach and roasted peppers followed by brie, 1/2 cup mozzarella, 1/2 cup Jack cheese, and 1/4 cup Parmigiano Reggiano. Smooth dip into an even layer (or transfer to prepared pie pan and smooth). Top with remaining cheeses and bake 15-20 minutes or until bubbly and brie is melted. Broil until cheese is golden. Caring for Your Cheese
Cheese should be kept optimally between 42ºC and 50ºC. Once received, keep the cheese in the paper and box it comes in. Wrapping it in plastic does not let the cheese breathe. When it comes time to cut your cheese, cut smaller amounts rather than larger amounts so that pieces for sale are fresh.
Soft-ripened, blue-veined and goat cheeses should be wrapped after being cut for sale, preferably cheese paper, wax paper or plastic wrap.
Hard cheeses contain little moisture, so they should be wrapped tightly after being cut, preferably in cheese paper, wax paper or plastic wrap to avoid further moisture loss.
Individual types of cheese vary with age. Pay attention to the differences and evaluate by tasting the cheeses regularly.
If your cheese develops a mold, remove about half an inch back from the mold to ensure it has been entirely removed. This works better on hard, semi-hard or semi-soft cheese. This isn’t always the case for the soft cheeses. Mold on soft cheese such as Brie is difficult to remove as it tends to permeate the whole piece. But remember, some molds are good molds. This is the case for the blue in a blue cheese or Roquefort. These molds add a tasty and unique characteristic.

Roots are very important to us, that’s why all of our production comes from traditions handed down by the people living in these places. Our territory, made of steep slopes and far from the most important trade routes, is still nearly “uncontaminated,” with its economy based mainly on little breeding goats, sheep and cows. Hence the dairy production: because of the small quantity of milk obtained by the everyday milking, people used to produce small size mixed milk cheeses, an example of what we call the “Langarola” tradition.

Tasting it means retracing the steps of the product’s history and origin: from milk to cheese. The creation of the wonderful sensory qualities of the two types of Provolone Valpadana PDO, mild or strong, are all gradually aged for different lengths of time.
At least twenty or so moulds are in use at dairies that produce Provolone Valpadana PDO. This is an evident sign of strong, entrepreneurial creativity, truly unique in the dairy industry, which has since been duly recognised with Protected Denomination of Origin.

The land of production of Provolone Valpadana PDO is a trapezoidal, homogeneous area spanning Lombardy, part of Veneto, the province of Piacenza in Emilia Romagna and part of the Trento province.
TASTING
PROVOLONE VALPADANA PDO
Provolone Valpadana PDO cheese is high in nutritional value, thus making it a primary commodity. It also provides the consumer with a high sensory value, expressed through its balanced flavours pulled directly from the south of Italy and exalted by the fertile lands of the Po Valley, where the sweet flavour is sweeter still and the spicy sensation is even more perceptible. Everyone is aware that good wine requires good grapes: the same goes for Provolone Valpadana PDO, as it is made from good milk sourced from quality dairy farms which operate in accordance with the best farming practices.
Cut the mild Provolone Valpadana PDO into 8 equal slices. Brown them in a heated non-stick pan for 8 minutes, 4 minutes either side, or turn them over when a gold crust forms along the entire surface of the cheese. Place the roasted slices on individual plates, generously drizzle with honey and add a sprinkling of walnuts and rosemary. Serve immediately.

Chop up the fresh and Aged Asiago PDO into small pieces, set aside. Coat a pan with extra virgin olive oil, and place on high heat. Prepare the Tempura: While the pan is preheating, mix the flour and starch flour into the beer until a clear mixture is obtained (about the consistancy of a beaten egg). Filling the Blossoms: First, fill the zucchini blossoms with the chopped fresh and aged Asiago PDO. Once filled, dip them, one by one, into the tempura mixture. Once the oil is hot enough for frying, place the blossoms in the pan until they are crisp. Protected Designation of Origin Mozzarella PDO is produced using exclusively fresh whole buffalo milk, from breeding farms located in the certified area. The Protected Designation of Origin mark identifies the organoleptic and product characteristics of cheese typical to the buffalo mozzarella from Campania, derived from specific environmental conditions and traditional processing methods, existing only in this specific production area. Only dairies that pass the demanding certification process can obtain the PDO mark. Subsequently, these companies are constantly monitored and analysed to ensure compliance with the specification and the high quality standards of the product.
Since its appearance in the PDO area, the Italian water-buffalo is a rare example of purity.
This has rightly contributed to its specific denomination “Mediterranean Italian Buffalo.”
The term “mozzarella” comes from the Italian verb “mozzare,” an operation still practiced today in all the dairies, consisting in forging by hand the piece of filata curd, detaching the single mozzarella balls with the the forefinger and thumb. Heat the olive oil in a large frying pan over high heat. Add the chorizo, garlic salt and pepper to the pan and cook, stirring for 3 - 4 minutes or until golden and crispy. Add the wine and cook for 30 seconds. Add the tomatoes and sugar and bring to a simmer. Reduce the heat to medium, cover with a lid and cook for 5 - 6 minutes or until the liquid has slightly reduced. While the chorizo mixture is cooking, cook the pasta in a large pot of salted boiling water for 6-8 minutes or until “al dente.” Drain while reserving 1/2 cup of the cooking liquid. Add the reserved cooking liquid to the chorizo mixture and stir to combine. Top the pasta with the chorizo mixture, mozzarella, and pepper to serve. that are 1/8 inch (.31 cm) thick, then cut each slice in half, roughly chop about 8 pitted dates, remove the needles from a stem of fresh rosemary and finely chop, and cut 1 baguette into diagonal slices that are 1 inch (2.54 cm) thick, to assemble add 2 slices of cheese over each piece of baguette, then top off with the chopped dates and a sprinkle of the chopped rosemary, add the breads into a baking tray and into a preheated oven, bake + broil option (210 C) 425°F for about 5 minutes or until the cheese is melted, serve at once.
Add the saffron to 1/2 cup warm water and let it sit for 10 minutes to allow it to bloom. Heat the grapeseed oil over medium-high heat in an 8 quart saute pan, brown the chorizo on all sides and remove to a platter. Next, brown the chicken pieces and remove to the same platter. Add the onion to the pan and saute until translucent, then add the garlic and cook until softened. Add the white wine and allow most of it to evaporate. Stir in the paprika, parsley, 1/2 cup of bloomed saffron, and chicken stock, and bring to a gentle boil. Return the chorizo and chick en to the pan. Stir in the rice, salt and pepper and reduce heat to medium. Cook uncovered without stirring for about 20 minutes, then add the mussels and cover. Cook until the mussels open, about 7 minutes, then remove them to a platter. Add the shrimp to the pot, cover, and cook until they turn pink and opaque, about 5 minutes, then remove the shrimp to the platter. Spoon the paella into a large bowl and sprinkle with fresh cilantro. Arrange the shrimp and mussels on top.

Drain the pasta; let cool while you make the sauce. Make the sauce with butter, cheese, spices: Preheat oven to 400°F. As soon as the macaroni is close to being done, melt the butter in a separate saucepan, stir in the grated cheese, black pepper to taste and a pinch of freshly grated nutmeg. Mix the sauce and cooked macaroni: once the cheese has melted, pour the sauce into the macaroni and milk mixture and stir to combine. Taste and add salt if needed. Ingredients: • 2-1/2 cups All purpose flour • 2 tsp Baking powder • 1 tsp Baking soda • 1 tsp Salt Directions: Preheat the oven to 375°F. Grease an 8-inch round cake pan with butter. In a large bowl, whisk together the flour, baking powder, baking soda and salt. Toss in the cold butter. Mix the butter into the flour mixture until the mixture is crumbly, with some pea-size clumps of butter within. Mix in the grated cheese. In a separate bowl, whisk together the buttermilk and the egg. Add to the dry ingredients and stir until everything is just moistened. Do not overmix. Transfer the sticky dough to the prepared pan. Bake the bread for 40-45 minutes. Let the bread cool in the pan for about 5 minutes, then turn out onto a rack to cool. Unlike many other hams, additives such as colorings, nitrites and nitrates are prohibited by the strict rules of the Consorzio. To give an idea of the growing season for California olives, the buds on the trees start sprouting in May. Towards the end of the summer, they reach harvest season, ranging from early September to mid-November. All of these olives are picked by hand-harvesting when ripe and bright green. At this point, these olives are still quite bitter and they need to go through a lengthy curing process. After this step, their famous buttery flavour is brought out and they are ready to reach your table. HOW TO CURECalifornia Olives in Brine
Curing olives is an ancient process that turns the naturally bitter fruit into a deliciously salty, tart snack. The curing method depends on the type of olive you have.

Start with fresh green California olives and a mixture of salt and water. This mix preserves the olives and gives them a salty taste. This method takes longer than water brining, but it’s the best method to use for ripe olives. Inspect the olives to make sure that they are as unbruised as possible and rinse them off before you begin the brining process. Also sort the olives by size. A batch of olives will cure more evenly if all the olives are a similar size

At the end of two months, taste an olive to determine whether the bitterness level suits your taste. If not, change the brine again and store the olives for another month or two. The famous Greek Kalamata olive is a large, dark purple olive with a smooth, meaty texture who’s name is derived from the city of Kalamata, Greece. While they may be used for oil production, they are mostly consumed as table olives. As a table olive, they are commonly used in greek salads, and pair well with barrel-aged feta cheeses. Like most olives, they’re naturally bitter, which is why they’re usually cured or processed. The Greek-style curing practice places the olives directly in brine or salt water, where they are fermented with yeasts to remove their bitter compounds, therefore improving the taste. Finally the olives are preserved in wine vinegar or olive oil prior to consumption.

Next, remove them from the bowl, squeezing out any excess water, keeping the mushroom water in the bowl for later. Transfer the rehydrated mushrooms to a cutting board and finely chop. Next place a strainer over a saucepan. Taking the saved mushroom water, strain it through a paper towel over the pot, discarding the towel when done. Add the beef broth to the mushroom water and place the saucepan on a stove. Bring to a boil then lower the heat to a simmer until ready to use. In a large skillet over medium heat, add in the oil and shallots. Sauté for 2 minutes. Then, add in the rice and stir for 1 minute. Then, add in the porcini mushrooms. Stir in the wine until evaporated. Stir the broth into the skillet, one ladle at a time, until absorbed by the rice. Repeat until rice is cooked al dente. (You may not need all the broth). Add the butter and the Parmigiano Reggiano and mix. Finally, season with salt and pepper and serve immediately!
