Rated 91 Tanzer. This is classified as “Tokubetsu” grade saké which means special. Any saké classified as Tokubetsu has been brewed in a way which leads to a bit more fragrant and refined saké than a regular Junmai classification. This saké has sweet rice aromas surrounded with floral fresh herb spiciness. It is slightly dry, medium-bodied and has mouthwatering apple flavors with an agreeable earthiness on the mid-palate. Clean and focused on the finish that accentuates its rice-like quality.
The sakés produced by Eikun have a reputation for being the finest in the world. Their sakés are rarely found anywhere other than the finest restaurants in Japan but recently a very small amount has been made available for distribution in the United States. Beer & Dessert Holiday season is a time when the family bakers get busy in the kitchen, pull out all the stops, and make their very best desserts. We all have our favorites and usually enjoy them with a cup of coffee, a nice cappuccino or a tall glass of ice cold milk. All good, but there is another option that you may never have considered; beer with your dessert. Some of you may be scratching your head, but hey, why not? Beer goes with everything else, why wouldn’t it go with dessert. We assembled the tasting team again and the results surprised even us. It was pretty much unanimous…This was a good idea. Beer goes great when matched up with the right dessert and it is a great change of pace. For those of us who took it home and tried it out on our families, it was met with some resistance (which is a nice way to say they thought we were out of our minds). As the sampling went on, they were quickly won over and now they are looking forward to what surprises are in store for this holiday season. Here are the basic guidelines for pairing beer with your favorite holiday treats.
Fruit Desserts
Fruit desserts go best with fruit infused beer. There are Fruit Lambics from Belgium and a large number of fruit infused options from the American craft brewers. These offerings include virtually every kind of berry, cherry, and peach. What pairs best is very subjective. Some like matching the flavors of the dessert and beer as closely as possible (Apple Pie with a Peach Lambic) while others prefer to have contrasting flavors (Apple pie with a Blackberry Wheat Beer).
Sweet Dessert
Chocolate and Chocolate Cake pair best with dark, heavy beer. Belgian Trappist Dark Ales, Cream Stout, Oatmeal Stout, Imperial Stout, Double Bock, Scotch Ale and Porters. While all these styles are heavy, they range in taste from sweet to bitter. There was really no consensus on what matched up best. Some liked the bitter to offset the sweetness while others preferred the tastes to be complimentary.

Beer and Onion Soup
Ingredients: • 1/4c olive oil (more if needed) • 3 large onions (sliced thin (6-8 cups) ) • 1t salt • Freshly ground black pepper • 2 bottles dark lager • 6c beef or rich chicken stock • 2 bay leafs • Pinch allspice • 1/2t dried thyme • Croutons • 2 links Aidells Chicken Apple Sausage (chopped)
Directions: In a large soup pot heat the oil over medium-high heat. Stir in the onions, sprinkle lightly with salt and pepper and cover the pot. Cook the onions, stirring occasionally, until light brown, about 30 minutes. Add all the remaining ingredients, except the croutons. Bring to a boil, then reduce to a simmer. Cook for 30 minutes, or until the onions are quite and the broth is infused with the onion flavor. Season with salt and pepper. To serve, garnish with the croutons.
Directions: Preheat oven to 375°F. Mix together 1 Tbsp fig spread & pecans. Spread onto lightly oiled sheet pan; toast in preheated 10 minutes. Remove & cool slightly. Place nut/fig mixture, rosemary and a pinch of salt in food processor; pulse to break up large pieces (should be roughly chopped, not too fine). Transfer mixture to a plate. Place remaining 2 Tbsp fig spread on another plate; roll goat cheese log in fig spread to coat. Holding coated goat cheese log on sides (like an ear of corn), roll cheese in nut mixture. Repeat fig/nut coating process. Chill slightly to set crust. Serve with Mini Toasts or fresh bread.

Martini Rosé ½ oz. of Galliano (or another vanilla liqueur) Vanilla bean, for garnish Pour Martini Rosé and Galliano into Champagne glass. Stir once, garnish with vanilla bean and serve. The Palais Royal ½ oz. Cognac ¼ oz. cherry brandy 1 dash lemon juice Champagne Put a small amount of crushed ice into the bottom of a Champagne flute. Add Cognac, cherry brandy and lemon juice, then top with Champagne. Garnish with a lemon twist.
1 oz. brandy or whiskey 1 tbsp. honey ¼ lemon 1 tea bag (optional) 1 c. hot water Coat the bottom of a mug of Irish coffee glass with honey. Add liquor and juice of ¼ lemon. Steep tea bag in hot water if using and then pour tea into mug or simply pour hot water into mug, and stir. Garnish with a cinnamon stick. Chili Haut Chocolate Ó 1½ parts JDK & Sons Crave Chocolate Chili Liqueur 3 tbsp. Vosges Haut Chocolat Aztec Elixer 4 parts whole milk Bring milk to a boil in small saucepan. Turn heat to low. Add the cocoa, whisking continuously until the chocolate pieces are completely dissolved and velvety smooth. Cover and let the cocoa steep for approximately five minutes. Pour into a warmed mug and stir in Crave Chocolate Chili Liqueur. Serve with marshmallows. Cointreau’s Chocolate Blizzard 1½ oz. Cointreau 3 oz. dark semisweet chocolate ¼ tsp. vanilla 1 c. half-and-half or cream Combine chocolate and vanilla in a double boiler. Stir
until melted and smooth. Add the half-and-half and Cointreau very slowly. Do not let mixture come to a boil. Serve with minimarshmallows in a coffee mug. Garnish with nutmeg if desired. Hot Buttered Fly 2 oz. Mariposa Agave Nectar Liqueur 3 oz. Jamaican light rum 2 oz. warmed apple cider 2 oz. hot water 1 tsp. mulled wine mix 1 tbsp. cocktail butter* Combine boiling water and mulled wine mix in a mug. Stir to dissolve the sugar. Add Mariposa, rum, cider and top with the cocktail butter. *Cocktail butter One stick unsalted sweet cream butter at room temperature 3 tbsp. vanilla ice cream Soften the butter and ice cream and fold together in a bowl. Transfer mixture into a plasticwrap lined mold. Fold extra plastic wrap over the mixture and freeze for about an hour to harden before placing in fridge.
HOW TO MAKE SIMPLE SYRUP Simple syrup lives up to its name: it’s simple to make and indispensable to a bartender as it is featured in so many cocktail recipes… some complex, some simple! 1 cup white sugar 1 cup water Bring water to a boil; dissolve sugar in boiling water and stir constantly. Remove from heat and allow to cool completely before use. Syrup can be stored in a jar for up to a month in a refrigerator. Recipe can be doubled.
Build rum, Grand Marnier, vanilla syrup and cold brewed coffee over ice into a highball glass. Top with fresh whipped cream and dust with ground cinnamon. Sweet Dreams 2 oz. Patrón XO Café Dark Cocoa ¾ oz. Ultimat Vodka 1 oz. caramel syrup Shake all ingredients with ice, then strain into a cocktail glass. Garnish with a caramel rim.

5 cinnamon sticks 1 tbsp. vanilla extract (optional) Gently simmer cloves and cinnamon sticks in water until reduced by half (about 30 minutes). Add 1 cup of milk and bring to a simmer, then stir in and dissolve sugar and coffee. Strain mixture into remaining cold milk and discard cloves and cinnamon sticks. Stir in Kappa Pisco and vanilla extract. Chill in refrigerator until well-chilled (about four hours). Garnish with a cinnamon stick. Holiday Cheers 1 cup Pama Liqueur 2 bottles red wine 1¼ cup water
In a large saucepan over medium-low heat, combine all ingredients. Heat for 15-20 minutes but do not bring to a boil. Remove from heat and strain. Return liquid to pan and serve warm. Serves 8-10. Baileys Peppermint Cream 1½ oz. Baileys with a Hint of Mint Chocolate 4 oz. hot chocolate 2 Tbsp. fresh whipped cream 1 small candy cane (crushed) 1 sprig fresh mint Combine Baileys and hot chocolate in a coffee mug. Top with a dollop of whipped cream. Sprinkle crushed candy cane on top. Garnish with a mint leaf.

Spain’s answer to Champagne, Cava is made from native grapes and undergoes a second fermentation in the bottle. Cava is not a single region in Spain, but can be made in approved areas throughout the country.
France’s sparkling wines are not limited to Champagne. The country’s next largest producer is the Loire Valley and crémant wines are also found from Bordeaux, Bourgogne, Jura, the Rhône, Limoux and Alsace. They typically use regional grapes, but all are made using the traditional Champagne method.
Hailing from Italy’s Veneto region, Prosecco is a fairly gentle sparkling wine made from the Glera grape. By using the bulk, or Charmat, method to introduce the second fermentation in large steel tanks, Prosecco offers a value price.
You’ll also find good value sparkling wines from South Africa (called Cap Classique), Australia and closer to home. Many of the best sparklers in the U.S. are made from the traditional Champagne grape varieties and hail from California, Washington, New York and even New Mexico.

✔ Good Measure. Resist the urge to eyeball a highball. The best drinks result from exact measurements of the finest ingredients. A jigger = 1½ oz.; dash = 1/6 teaspoon, or about 4-6 drops; a splash is a bit more than a dash. ✔ First Things First. Put sugar, fruit juice and other ingredients (except garnishes) in the glass first; add liquor last. When the recipe calls for carbonated soda, start with the ice, liquor, etc. Mix the soda in last, and always use cold soda. ✔ Keep the Ice Nice. Use cracked ice for shaker drinks, lots of cubes for highballs, and make sure it’s fresh to avoid that “icebox taste.” Do not allow a shakerful to stand too long with ice - drinks go flat from excessive dilution. ✔ To Stir or To Shake? James Bond’s martini aside, for drinks made only with clear liquors, only stirring with ice is needed for proper mixing. Shaking as a technique is designed for “cloudy” drinks with hard-to-blend ingredients, such as fruit juice, eggs, cream or sugar. Never shake a cocktail that includes soda or sparking water. And after shaking, don’t let the shaker stand too long with ice, to avoid dilution. ✔ Fresh Fruits Rule. Fruit and fruit juices can go stale faster than you might think, even when refrigerated. Try to slice or squeeze fruit just prior to use.

✔ Sugary Success. Always use fine granulated sugar to avoid caking. Never use confectioners sugar. ✔ Mind the Mess. Parties can be a bit messy, especially when mixed drinks are involved. It’s a good idea to set up your bar in the kitchen or a tiledfloor space. Outside of the kitchen, a small rug under and behind the bar will protect the flooring. ✔ Be Part of the Fun. Hiring a bartender for your home party is the best way to make sure you are able to enjoy the fun along with your guests. Consider making punch ahead of time; use a large chunk of ice (plastic food containers are great for this) and garnish festively. You may also pre-mix a favorite cocktail in a batch, to be served from a pitcher.
