I LOVE MY COUNTRY and I think it’s high time we all come together, white vs black, christians vs muslims, rich vs poor and any other divisions that are propagated by radicals. LET’S RIDE DUDES, we’re burning daylight! With all this being said, I could not think of a more PATRIOTIC DUDE to induct in to the DUDE HALL OF FAME this issue other than, H. ROSS PEROT. Depending on your age and knowledge of relative recent US history, Ross Perot is someone I wish we could have seen as our Commander In Chief. HE GETS IT DUDE! So, let’s pay our tribute to this TRUE BLUE AMERICAN and educate those less knowledgable folks of who exactly this DUDE is! HENRY ROSS PEROT, born June 27, 1930 in Texarkana, Texas to parents, Lula May and Gabriel Ross Perot, who was a commodity broker specializing in cotton contracts. Is this an example of good nuclear family upbringing? You bet DUDE! Ross attended a private school called Patty Hill and graduated from Texas High School in Texarkana in 1947. Perot was the epitome of a young American DUDE. He was and Eagle Scout in the Boy Scouts of America and he is the recipient of the Distinguished Eagle Scout Award. From 1947 to 1949, Perot attended Texarkana Junior College an then entered the US Naval Academy in 1949. While there, he helped establish the honor system. Later in 1956, he married Margot Birmingham. They have five children; Ross Jr., Nancy, Suzanne, Carolyn and Katherine and he has at least 16 grandchildren. On an interesting side note, Ross Perot was the first person to buy a million dollar home on Hilton Head Island, S.C., it was 23 Surf Scooter in Sea Pines Resort, as I recall. Why do I know this? Well, as fate would have it, my friend, Barry Ginn learned of this new earmark real estate transaction and heard they were looking for a caretaker. Enter, MY MOM, Joanne McDonald, as Barry is a long time family friend. After the recommendation, Ross flew her to Dallas and interviewed her for the position. He was a bit miffed as to why a qualified practicing pharmacist would be interested in such a position. Well, Ole Ross has connections and he had already checked my MOM out and she was hired. We got to meet many members of his family including Ross Jr. and most enjoyably his sister Betty Perot. Betty is/was in charge of the Perot Foundation and she came down with a bunch her Texas lady friends to spend some quality time on the island. Well , they wanted a taste of the Lowcountry, so I helped MOM prepare them a Lowcountry Feast, complete with steamed oysters, boiled local blue crabs and Lowcountry Boil. It was a night I will never forget. Those sweet Texas ladies were a bit leery of busting open blue crabs and sucking out all the goodness and dipping it in garlic, lemon butter. Honesty, we ended up imbibing in some bibulous activities, as they had brought down mass quantities of LONE STAR BEER. They were as enamored by me as I was of them. CHEERS LADIES! Well Ross is not only a great family man but he is an off the charts businessman to say the least. In 1957, when Henry left the Navy he became a salesman for International Business Machines, better known as IBM. He hit his annual sales quota in a mere two weeks. Yeah, this DUDE is special! He left IBM in 1962 and founded Electronic Data Systems (EDS) based out of Dallas, Texas. He is a persistent DUDE as he was refused 77 times before he was given his first contract. Persistence pays! In the 60’s EDS received very lucrative contract from the US government basically computerizing the records of Medicare. Well, EDS went public in 1968 and its shares went from $16 a share to $160 within days. The boy was on a roll and in 1984, General Motors bought controlling

interest in EDS for $2.4 billion. Big money DUDE! Once your on the top of the hill, there is only one way to go and that’s down and in 1974, Perot lost $450 million in one day due to the drop in EDS stock. At the time the biggest single day individual loser ever on the New York Stock Exchange. Perot showed his true American colors during the Iranian Revolution in 1979 when Iran imprisoned two EDS employees in a silly contract dispute. Well, Ross wasn’t having any of that and he organized a now legendary rescue. He hired Army Special Forces, Arthur D. “BULL” Simons. This exploit is documented in a book by, On Wings of Eagles. Needless to say, Ross rescued his people via a risky border crossing in to Turkey. Yeah, this DUDE is an AMERICAN HERO! In 1984, Perot bought a very early copy of the Magna Carta, one of the few to leave the United Kingdom at the time. He loaned it to the National Archives in Washington, D.C. where it is currently on display alongside the Declaration of Independence and the United States Constitution. In 2007, the Perot Foundation sold it to to the Carlyle Group to be kept on display at the National Archives for $21.3 million and those funds went directly to medical research,

improving public eduction and assisting wounded warriors and their families. Pretty Special DUDE! And as American history would have it, Steve Jobs was in a power struggle at Apple and Ross invested over $20 million dollars so he could found NeXT, as he did not want to miss out on an opportunity like he did to invest in Bill Gates’ Microsoft. As this all transpired, in 1988 he founded Perot Systems Corporation in Plano, Texas run by his son, Ross Jr. and in 2009 Dell bought him out for $3.9 billion. The man is a visionary for sure and he was heavily involved in the Vietnam POW/MIA issue. In 1990 he funded a series “I’m mad as hell and I’m not going to take it anymore!” denouncing US Congress for voting for a legislative pay raise when normal wages were not increasing. Sound familiar DUDE? This lead to the the founding of THRO “Throw the Hypocritical Rascals Out” Sound familiar DUDE? Well in 1992, Ross Perot started his presidential campaign, better know as the founding of the organization UNITED WE STAND AMERICA. DUDE, I was on that bandwagon and it looked like the REFORM PARTY, a third party actually had a chance. In the summer of 1992 he commanded a lead in the race with 39% of the vote. Hamilton Jordan and Ed Rollins got unenamored and Perot’s poll numbers fell. There were rumors that the Bush campaign threatened to sabotage his daughter’s wedding with digitally altered photos and this was the straw that broke his back and he withdrew from the presidential race. Many of his followers were let down, including myself. Once he decided to come back and named Vice Admiral James Stockdale, a highly decorated former Vietnam POW and his running mate, well his performance in debates still hurts me. Right idea, Wrong choice Ross! This was the end of his political aspirations. It still amazes me at one time the polls showed, Perot 39%, Bush 31% and Clinton 23%. Well, you know the rest of the story Paul Harvey. Though he pulled out, he still received 19% of the vote and 19.7 million votes! In 1996, he formed the REFORM PARTY and made another go of it but Perot was tarnished goods even though, especially now, his strong beliefs against the North American Free Trade Agreement NAFTA was wise indeed. Ever seen, a product saying Assembled in Mexico, Product of China? Manufacturing industries completely disappearing from great American cities has become common place. I can personally attest that furniture and hosiery/textiles have basically disappeared from my back then, thriving hometown of Hickory, North Carolina. Yeah, Ross was right on that one as many American manufacturing jobs have headed to Mexico, our great partner who is harboring Marine, Sergeant Tahmooressi for mistakingly crossing the border. I agree with O’Reilley, Boycott Mexico, they are not a friend of the US and their persistence is sending people across our porous borders is pathetic. Viva La Mexico my ass! We haven’t heard much from Perot since, until most recently where he popped up at Patriots Point in Charleston, home of the USS Yorktown. The story of that ship is legendary DUDE. That ship may very well have saved our US asses. This great location is going to be home of the Medal of Honor Museum located right there in Charleston Harbor. It will enshrine the current 3,489 recipients of our nation’s highest honor and who is the #1 donor to this great American place. You guessed it, HENRY ROSS PEROT DUDE! On his recent visit to Charleston he is quote in saying, “It’s been my privilege to support the military for a long, long time!” Sources say Perot has given over $376 million to veterans and military people. This museum will preserve and tell the story of those individuals who placed service above self to accomplish the extraordinary. WE WILL ALWAYS RESPECT THOSE WHO SERVE US DUDE! I often ponder what our country would look like now with all our economic and international problems if ole H. ROSS PEROT would have actually been able to be our Commander In Chief?! Someone, I think we would all be proud of because you know where this DUDE stands, UNITED! It is my honor, MR. PEROT, to have you in the DUDE HALL OF FAME. Now let’s get to what’s going on this Fall in our lovely piece of paradise, THE LOWCOUNTY OF SOUTH CAROLINA. Yeah, you want to live here DUDE! As we ride in to the Autumnal Equinox period of the year, the summer is gone and it’s time to get back to our roots. Our friends at the South Carolina Department of Natural Resources have done it again DUDE! Their REEF EX program went through another deployment this past Summer. Many (36) stripped National Guard armored personnel vehicles were hauled off the shores of Hilton Head Island on a barge and dumped in to the ocean to help create an even larger artificial reef. This recycling, if you will, is giving our fish some structural habitat to call home. We just don’t have the natural reef they do farther south, so SCDNR is stepping in to help those homeless fish have a place to hang out and call a home of their own. Great successful project! Keep up the good work DUDES! Great Photos! This past Summer DUDE rode his horse in to visit one of favorite group of DUDES, the Parris Island Rod & Gun Club. What a bunch of great Americans, mostly retired Marines. This particular meeting they introduced me to Kierstin Griffith who was the lucky recipient of their generosity, as they sent her to the South Carolina Waterfowl Association’s Camp Woodie. Great thankful well rounded young lady! Now quite the marksman

thanks to some fine shooting training. Ah yes, to be young at Summer Camp. Nice jobs DUDES! While we’re on the subject of our Great Military and those fine Americans who have and are currently serving their country, DUDE was invited to ride in to visit a great program currently going on at the Technical College of the Lowcountry, the Transitioning Military Training Program. Lieutenant Colonel Paul Merritt, USMC (Retired) Program Director and Master Sergeant Warren “DIZ” Disbrow, USMC (Retired) & professor DUDE, were nice enough to spend some time with us this past Summer and let know more about this project. Military (Marines) helping out fellow military (Marines)! These aspiring aviation servicemen and women are getting the necessary training to transition from military life to civilian life. Not as easy as one might think, however once they complete this training they will become valuable assets to companies like Boeing and Gulfstream. THANK YOU FOR YOUR SERVICE Y’ALL and good luck with your future endeavors. Fall is the season for DUDES to HUNT. Deer, Ducks, Turkeys, Gators and even Hogs, YES HOG HUNTING has gotten to be quite the eco-friendly hunt, as it helps farmers cull the out of control herds of hogs destroying many farms out there in the American south-lands. Good eatin too DUDE. Fellow DUDE, O’Neill Outside Williams introduces us to his very able grandson, Travis Johnson who now has is own outdoors show and it is well done. I think Grandpaw is doing a great job of helping his grandson. Great hunting story Travis! Glad to have you aboard DUDE! If you are a faithful follower of DUDE you know how much we love HISTORY and when we were invited to ride over to the campus of USC-Beaufort this Summer to learn about the Santa Elena Foundation, we got pretty excited. Our friend, neighbor and Executive Director of the Santa Elena Foundation, Dr. Andy Beall put together a gathering of 5 historians and archaeologists who had never been together before, to discuss the true timeline of Charlesfort-Santa Elena. If you’ve never heard of Santa Elena, is was one and maybe now arguably the first real settlement in America, by the Spanish, not the French. If you do know of this place (Charlesfort-Santa Elena), you’ll know it is located right here in good ole Beaufort County on Parris Island. About 15 acres near the Legends golf course is currently being researched and the stories coming out of the dirt are pretty cool indeed. Enjoy my article that gives you a great history lesson of what went on right here in the 1500’s. The Santa Elena Foundation has big plans so join us with them and you can sponsor, donate or even volunteer to assist them in their great effort to preserve one, if not, the most important stories in American history. Pedro Menendez, was a DUDE! As we usually do in the Fall, we like to CONGRATULATE ALL THE 59TH ANNUAL BEAUFORT WATER FESTIVAL CONTEST/EVENT WINNERS! Though we had to deal with some weather issues, this year’s festival delivered a FUN TIME had by all and we would like to SALUTE, COMMODORE BRANDY GRAY for doing such a fantastic job and also SALUTE OUR UPCOMING & 60TH WATER FESTIVAL COMMODORE, BILL DAMUDE. Looking forward to next year’s festival already DUDES! Say Cheese Y’all! CHEERS! By now you know we DUDES LOVE TO COOK and we especially like to cook things we can catch, most particularly fish and shrimp. Our pristine waterways here in the Lowcountry are second to none in producing the finest freshest seafood available anywhere in the world. Well, as we dismount our horses and water them down before heading back to the ranch we like to sit down and grab a bite to eat, so we decided to tap in to expert knowledge of two of our favorite chefs here in the Lowcountry, Chef Josh Poticha, owner of BRICKS on BOUNDARY and Executive Chef, Brad Blake of the SKULL CREEK BOATHOUSE. These DUDES know how to cook I can promise you that and Chef Josh shows us how cook those B-line snapper whole and Chef Brad shows us how to make fresh caught shrimp and tomato pie. DUDE, you talk about delicious eats, they be more better than good, I garontee! Of course while we’re out riding our horses we like to challenge you DUDES to test you Local Lowcountry Knowledge via the DUDE QUIZ. We had some nice feedback from this past Summer’s DUDE QUIZ, however NO ONE got all the answers correct and this will certainly be the case this time as well. It’s a haunting DUDE QUIZ and I bet many of you will know some of the answers, but not all. I promise you will learn some scary stuff DUDE! Specters, Ghosts & Goblins...OH MY! All followers of DUDE certainly know about our good buddy and DUDE FAMILY MEMBER, Master Sergeant, Warren “DIZ” Disbrow USMC (Retired) and his very cool DUDE COMPANY, TruckStencils.com. Well, ole DIZ is getting old and he wants to pursue some other endeavors like teaching his fellow Marines how to transition in to civilian life, so he’s decide to put his business up for sale. Please check out this article as this may be the perfect opportunity to that dedicated someone or group of DUDES to take the reigns and ride off in to a very lucrative financial future. As we trot our horses back to the barn, we stopped in to visit one of our very long time friends, Nurse Practitioner Jenny Green-Bazzle, owner of Affordable Health Care in Bluffton. I think her success story is worth telling to possibly help motivate some of you youngsters out there that seem to have lost their ways and think that life revolves around social media and your smart phones. Pay attention youth of America cause you can learn something from this dedicated lady’s determination to make something of herself. Proud of you Jenny! Job well done, WELL DONE! DOES IT AGAIN DUDE! SCDNR ARTIFICIAL REEF PROGRAM “REEF-EX” CONTINUES ITS SUCCESS BY BRAD MCDONALD
T
his past September, SCDNR deployed 36 armored personnel carriers off the coast of Beaufort/Hilton Head at the Betsy Ross Reef and at the Eagle’s Nest Reef. The SCDNR Artificial Reef Program works with S.C. Army National Guard to deploy surplus equipment, such as armored personnel carriers and shipping containers, onto artificial reef sites along the coast. This unique partnership, Reef-Ex, has taken place since 1997. Marine artificial reefs are constructed in South Carolina primarily to enhance saltwater fishing opportunities for recreational anglers, and to provide additional locations of interest for the growing number of sport divers in the state. Nearly 20 square miles of ocean bottom have been permitted for this purpose with the added benefits of adding to the amount of highly productive hard bottom off the coast, as well as potentially enhancing fish stocks which are critically linked to this type of habitat. Thousands of resident and nonresident anglers and sport divers take advantage of the numerous artificial reefs off the state each year. They pursue a wide range of year-round fishing and diving activities which might not be available off South Carolina were it not for artificial reefs. In the pursuit of their interests these individuals generate over $83 million dollars in total economic benefit to the state each year. While not the primary reason for building the state’s marine artificial reefs, this economic benefit from their existence adds significant weight to the overall cost-effectiveness of the efforts involved in maintaining a reef system. While naturally occurring reefs may be common in tropical climates throughout the world, they do not exist in the waters of the continental United States above the southern tip of Florida. Off

the southeastern coastal states from North Carolina to Florida, this type of coral reef habitat is replaced by what biologists and fishermen term “hard-bottom” or “live-bottom” areas. These more temperate reef communities occur only in specific locations on the ocean bottom where nature has provided a suitable hard substrate, usually in the form of limestone rock out-croppings, which serve as a point of attachment and colonization for sponges, corals and a wide assortment of other invertebrates. In some cases where significant rock is exposed through the otherwise sandy bottom, vertical relief and ledges add to the complexity of this habitat and provide additional space and homes for many other reef inhabitants. Off South Carolina, the majority of the continental shelf is covered with sand several feet deep, while only about 5 to 10 percent of the bottom has the appropriate geological makeup to allow for the formation of a reef community. PARRIS ISLAND ROD & GUN CLUB and SOUTH CAROLINA WATERFOWL ASSOCIATION
MAKING CHILDREN’S DREAMS COME TRUE at CAMP WOODIE BY BRAD MCDONALD
T
his past Summer DUDE was invited back to the Parris Island Rod & Gun Club to check in with the group and see what they have been up to recently. To be honest, I was kind of surprised they invited me back after DUDE stopped by and won at their annual fundraising Turkey Shoot last Fall. Enjoyed the ham, Thanks DUDES! Yea these mostly retire military folks like to get together, shoot the breeze and have fun but I was very moved by one of their recent gestures that sent little Kirerstin Griffith to Camp Woodie this past Summer. Camp Woodie is a great Summer Camp for children brought to you by the carrying outdoorsmen and women of the South Carolina Waterfowl Association. People say the one constant in life is change and they are correct. Things do change and what’s more, they change fast. At the SCWA, they realize that change is inevitable, but they also believe there are things that should not be lost along the way. It used to be that water-fowling, hunting and fishing were more than hobbies of the day, it was simply what everyone did. Outdoorsmen & women developed a vital relationship with the land that was unlike anything most young people know today. Their passion for the outdoors sustained them and enriched their lives in many ways. These are the real traditions that Camp Woodie is all about. The fine folks at SCWA feel that a young person cannot go wrong getting into hunting or fishing. For most young people, it is a natural fit once they are taught how to handle firearms safely and responsibly. In time, they see for themselves that conservation is an issue that falls on each hunter to do his/her part and they will in turn, mentor some young person when they are older. This is the natural cycle that Camp Woodie champions; that of preserving our positive traditions of water-fowling and hunting in general. By instilling in young people a passion for the outdoors and teaching them the skills necessary to be successful. This opens the doors for a lifetime of memories. They also, hopefully, close the door on the many negative activities that can fill up a young person’s time if they don’t have positive channels for their energy. This is why they call a Woodie Win Win situation. The motto and wisdom of the South Carolina Waterfowl Association is very noble and with all this being said, the very considerate folks of the Parris Island Rod & Gun Club got

together and funded one lucky youngsters camp this past summer. The lucky person was, Kierstin Griffith and she did a magnificent job with her presentation to the club with a review of her week at Camp Woodie. Nothing makes this DUDE more happy than seeing an appreciative child smiling after enjoying time well spent in the great outdoors. Camp Woodie is located just up I-95 in Pinewood, South Carolina and was established back in 1995. What a great place for this sort of city girl, that is growing up in Orangeburg, South Carolina to become more appreciative and respectful to the great outdoors. Each of the allotted 10 Summer weeks has approximately 50 lucky campers that are taught about wildlife and its conservation. YES, they teach children how to respect and shoot guns! Just saying NO TO GUNS is in my opinion STUPID! These young Americans have the same 2nd Amendment rights as anybody and teaching them firearm safety is really important. Kierstin proudly told the club about the Hunter Safety Education Course they were taught this summer and it was nice to hear she had top marks on the 60 question quiz they were given after the course. Well, it seems Kierstin did a little more than score well on the Hunter’s Safety course. She was taught how to handle, load and shoot a shotgun. They mostly use 4/10’s and 20 gages for these youngsters and I couldn’t help buy smile when Kiersten explained her experience to the PIR&GC members. “They taught us how to shoot skeet including high/low shots at the 5 station range. I hit my first one and received the Master Marksman Award from the camp!”, proudly exclaimed this little deadeye markswomen. NICE SHOOTIN KIERSTIN! This proud little future outdoorswomen got quite the treatment from the fine instructors at Camp Woodie. The happy campers were taught archery and got to shoot at faux animal targets. Swimming, canoeing, playing “Capture The Flag”, one of her favorite events and of course fishing were all part of the fun filled week. I could tell this young lady now has a prideful respect for the great outdoors and will most likely spend more time enjoying the great outdoors rather than having her head buried in a smartphone displaying a lack of manners. She a more rounded person after this well spent week of her life and she has the altruistic members of the Parris Island Rod & Gun Club to thank for it. Way to go DUDES! A nice way to pay it forward and spend some of your funds from the budget.

SANTA ELENA FOUNDATION “W BY BRAD MCDONALD
e can’t know where we are going until we at least once know where we’ve been.” The very sound words of our 35th President, JFK, John Fitzgerald Kennedy. This is the perfect premise for this entire article. DUDE, maybe Beaufort County was were it all began, relatively speaking of course. Let me introduce y’all to the SANTA ELENA FOUNDATION. DUDE, this is our local heritage so pay attention! According to our new sources, the Spanish established a town and a fort on the the shores of Port Royal Sound in Beaufort, South Carolina, prior to Jamestown. The story of Santa Elena, founded in 1566 on Parris Island, is one of religion, geopolitics, cultural clashes, war and struggles to survive. This could very well be one of the most exciting stories in American history! The site, surrounded today by the Parris Island Marine Corps Recruit Depot, most specifically 15 acres on the Legends Golf Course, holds a special history. The deep, natural harbor of Port Royal Sound, strategically located on the Southeast coast, first attracted the French, who established Charlesfort there in 1562. BEGIN HISTORY LESSON HERE DUDE! Their toeholds at Charlesfort and Fort Caroline, near present-day Jacksonville, Fla., alarmed King Phillip II of Spain. The pope had granted to Spain “La Florida,” which encompassed much of what today is the United States, but the Spanish had done little to capitalize on that grant before the 1560s. The French were not long for the area, abandoning Charlesfort in less than a year. The Spanish, eager to stake their claim to La Florida, moved quickly to establish a garrison in 1565 at St. Augustine, Fla., and a permanent settlement in 1566 at Santa Elena, building on the abandoned French fort site. Santa Elena served as the Spanish capital of Florida from 1569 to 1587. A third European power, England, sealed the fate of Santa Elena. Prompted by Sir Francis Drake’s attacks on Spanish holdings in the Caribbean in 1586, Spain — stretched thin financially In the mid-16th century, Spain and France competed for control of North America. The Spanish government believed it had exclusive rights to the continent by the blessing of the Catholic Church, and France disagreed. To protect its Atlantic shipping route from English and French privateers, Spain colonized points along the Southeastern coast, from the Caribbean to the Carolinas. One of these outposts was Santa Elena, the first colonial capital of Spanish Florida. Spanish colonists founded Santa Elena in 1566 on Parris Island in Port Royal Sound in present-day South Caro-

lina. Both French and Spanish colonists occupied the site during the 16th century. Today, the Charlesfort-Santa Elena site is a National Historic Landmark, important for its associations with the 16th-century conflict between Spain and France for control of the New World and with officers Spaniard Pedro Menendez de Aviles and Frenchman Jean Ribault. (Yep DUDE, our historians confirmed the main corredor road in Beaufort is misspelled!) The site is also considered archaeologically significant. After Christopher Columbus opened the Americas to European colonization in 1492, private and royal ships loaded with valuable goods traveled between the colonies and Spain. One of the most important water routes was the Florida Straits between the Bahamas and the Florida coast, where a strong current carries ships east out of the Gulf of Mexico and then straight north up the Atlantic coast. During the colonial era, French and English ships waited in these straits to attack and loot silver-laden Spanish ships. To protect Spain’s interests, King Philip II of Spain decided to build towns on the Florida mainland coast. The king chose Spanish naval officer Pedro Menéndez de Avilés to be the adelantado, or governor, of Spanish Florida in 1565 and ordered him to establish military bases on the mainland. Adelantado was an elite military and administrative position created when the Christian Spaniards took the Iberian Peninsula back from the Muslim Moors. In Europe, the Spanish adelantados built fortified outposts in hostile areas and were responsible for bringing the surrounding region under Spanish control. In return for the adelantado’s work, the Spanish crown granted the individual economic privileges and honors. When it began colonizing the Americas, Spain continued to use this system. Other Spaniards who held the title adelantado of Florida before Menéndez were Ponce de Léon, four men by the name of Lucas Vásquez de Ayllón, Pánfilo de Narváez, Hernando de Soto and Tristan de Luna y Arellano. But Spain failed to establish a permanent settlement in Florida until the Menéndez expedition. Menéndez is best known for founding St. Augustine, the oldest continuously occupied European city in the continental United States. But his first colonial capital was Santa Elena. At the time, “La Florida” was all of the land the Spanish thought to be north of Mexico. Before Menéndez arrived, his French rival, naval officer Jean Ribault, founded Charlesfort on Parris Island in 1562 and claimed the land for Continued on page 16

This Fall issue of DUDE I decided to let a couple of our favorite LOCAL CHEFS turn you on to some of their favorite FRESH SEAFOOD PREPARATIONS. The Lowcountry always has a bounty of fresh seafood and if you don’t like fresh fish and fresh shrimp, turn the page here. Enjoy these great preparations and presentations DUDE. Thanks for sharing Chef Josh Poticha, Owner of BRICKS On Boundary in Beaufort and Chef Brad Blake, Executive Chef of the Skull Creek Boathouse on Hilton Head Island. WHOLE GRILLED SICILIAN STYLE VERMILION “B” LINER SNAPPER BY CHEF JOSH POTICHA (Wolfgang Puck Trained Chef and Owner of BRICKS On Boundary in Beaufort)
South Carolina waters during the fall months, bottom fishing really lights up. We have many natural and artificial bottom reefs within 70 miles of shore that have a abundance and variety of game fish including large trigger fish, many species of grouper, beautiful red snappers that rarely but occasionally go into season, black sea bass and my personal favorite the Vermilion snapper, also known as the “B” Liner snapper. This is one recipe even my niece Olivia couldn’t resist with the head on presentation and all it was so delicious. Fish Preparation • 5 Fresh caught Vermilion Snappers “cleaned and rinsed, scaled, and gill plates removed.” • 1 bottle of good Chardonnay “1/2 cup for the recipe and the rest to drink” • 2 tablespoon of minced garlic • 2 chopped fresh oregano • 2 tablespoon chopped fresh thyme • 3 tablespoon chopped Italian parsley • 3 lemons • 1/4 cup Good virgin olive oil • Fresh ground black pepper • Sea salt White wine, caper fine herb beurre blanc Sauce “AKA bomb ass sauce for the fish” • 1 bottle of good Chardonnay “1 1/2 cup for the recipe and the rest to drink” • 2 table capers • 1 lemon • 3 tablespoon minced shallots • Fresh ground black pepper • Sea salt • 1/2 pound COLD good quality butter • 1 teaspoon chopped fresh oregano • 1 tablespoon chopped fresh thyme • 2 tablespoon chopped Italian parsley Cleaning the fish Clean the fish thoroughly and remove all the insides and gill plates and rinse, rinse, rinse. With the fish held in place, remove the scales with the back of the filet knife from head to tail,. Score the fish in a wide X pattern on both sides, slicing into the meat three quarters of the way to the back bone but not to deep. Now have a glass of wine! For the marinade and fish preparation In a mixing bowl add fine minced thyme, parsley, oregano, olive oil, garlic and mix into a paste. Lay the fish on a sheet pan and generously rub the fish with 3/4 of the mixture on both sides and inside each fish, reserve 1/4 of the mixture for latter use. Once the fish is rubbed with herb paste squeeze 2 lemon over all the fish and season well with sea salt and cracked pepper. Spray oil and wipe down the grill grates and get the grill to 500 degrees.

Gently lay down the fish presentation side down and cook for 5 minutes and gently flip over with a long spatula and continue to cook for a additional 5 minutes. Gently remove the fish and place on a sheet pan and spread the remaining herb mixture on the fish and squeeze the remaining lemon on the fish, drizzle with olive oil and a little white wine and place in a 400 degree oven for 5 to 8 minutes more until the meat is cooked to the bone. Now have your second glass of wine! For the Bomb Sauce In a heavy bottom sauce pan add the shallots, white wine,1 lemon squeezed and begin to reduce, reduce, reduce the mixture until almost ALL the liquid is gone from the pan, now add the capers, finely chopped fresh herbs and slowly whisk in your COLD butter into a sauce like consistency begins to form. Season with sea salt and pepper and set aside but not on the heat or the sauce will separate. Now have a third glass of wine! Place the fish on a platter and drizzle with your caper sauce and finish the bottle of wine or open another one, If you personally do not enjoy eating fish you will be completely inebriated by now and wont know what your having anyways. BY CHEF BRAD BLAKE Executive Chef Skull Creek Boathouse on Hilton Head Island • 2 cups Dukes Mayonnaise • 1/2 cup chopped fresh basil • 1/4 cup fresh squeezed lemon juice • 1 teaspoon kosher salt • 1 teaspoon fresh ground black pepper • 4 vine ripe tomatoes • 1 cup shredded whole milk mozzarella cheese • 1/2 pound Fresh Shrimp • 1 pie crust or puff pastry sheets Prepartation Steps Place mayonnaise in bowl, mix in lemon juice, cheese, salt and pepper, fold in chopped basil. This filling can be used in a variety of applications. To make a classic pie; par bake pie shell or puff pastry, layer sliced tomatoes and filling in alternate layers, and bake at 350 for 15 minutes until cheese melts, or may be served at room temp or chilled. Serving Suggestion or Menu Applications This filling has a variety of uses. It can be baked and served as a pie for hot appetizer. In picture provided, I utilize this as a classic “Lowcountry Shrimp and Tomato Pie”. This serves me well in our location. There can be whatever variations needed depending on geographical location, particular taste and applications. It may be used as a dip, served with toast points or pita chips, sandwich spread for BLT’s, etc.

Dear Harold, This morning I was on Interstate 95, I looked over to my left and there was a Woman in a brand new Cadillac doing 65 mph with her face up next to her rear view mirror putting on her eyeliner. I looked away for a couple seconds to continue shaving and when I looked back, she was halfway over in my lane still working on that makeup. As a REAL DUDE, I don’t scare easily, but she scared me so much, I had to put on my seat belt and I accidentally dropped my electric shaver, which knocked the donut out of my other hand. In all the confusion of trying to straighten out the car, using my knees against the steering wheel, it knocked my cell phone away from my ear, which fell Into my coffee, which was between my legs, Splashed and burned Big Jim and the Twins. Ruined my damn new iPhone 6, soaked my trousers and even disconnected an Important call. Harold, what are we going to do about these darn women drivers!? Compassionate, Friendly Health Care with a Lowcountry SMILE!

’m always impressed by anybody that is brave and ambitious enough to start their own business. It takes risk, nerve, knowledge, patience and determination. I started Mallard Productions over 27 years ago and it was not the easiest decision I ever made, but in hind sight, it’s the best thing I ever did. Well, I have a great success story to share with you about my long time friend, Jenny Green-Bazzle and her creation of Affordable Health Care in Bluffton. She’s as local as you can get DUDE. She was raised on Hilton Head Island, went to Hilton Head Elementary, Sea Pines Montessori and graduated from Hilton Head High School. After that, she went on to get a BA from USC in Columbia. I think one of the best words to describe her is tenacious. Jenny soon realized she had what it takes to be a nurse and that’s compassion. She got her Associate Nursing degree from TCL and went on to work at Hilton Head Hospital for 6 years, spending time in various departments such as Emergency Room and Intensive Care Units. This is where she honed her practical skills and decided that she wanted to take her career to the next level, so off to Armstrong Atlantic State University in Savannah, Georgia she went to obtain her MSN APRN BC (Masters Science Nursing). A shortage of primary care physicians is projected this decade (somewhere in the 40,000 range) and I think we are seeing that shortage increase with Nationalized Health Care Mandates and some doctors deciding to retire early due to these mandates and out of control malpractice insurance rates. The Nurse Practitioner seems to be the way our country will fill this impinging lack of doctors. This was the premise for Jenny to start her own business, Affordable Health Care in Bluffton, South Carolina. She started in a small office in Sherdian Park with just 3 people working independently under her own license. Her compassion and business savvy has lead to her recent re-location of newer larger facility also located in Sherdian Park next to Stooges Cafe visible from Hwy 278. Affordable Health Care now boasts a full time in house spine and pain care doctor, Dr. David Rowe and has 14 employees. This new facility is very well laid out and is obviously set up to comfort those who enter the doors. A lot of people have anxieties about going to the doctor and Jenny realizes that all her employees must have her same care and compassion that she does, not to mention they are trained to be very respectful and friendly. SERVICE WITH A SMILE is very important if you are going to succeed in the business world. The nice thing to know is that Jenny’s, Affordable Health Care can provide the same care as a primary physician, with the only exception of writing prescriptions for Schedule 2 drugs. X-Rays, Blood work, scheduling MRI’s and if they can’t do something In-House, Jenny has quite the local network of specialists to refer her patients to for more specific specialized care. Now with Dr. David Rowe in house, AHC can offer help in chronic pain care including epidurals for serious spinal pain. Dr. Rowe is working to help patients avoid pain pill dependency through procedures such as spinal stimulators and injections. I’ve seen Jenny in action talking to patients as they come in the front door and she’s a great communicator as well as a great listener. They do take appointments but are careful to not over book and walk-ins are welcome. The nurse practitioner is starting to fill the unmet need of fewer available doctors. They take Medicare and Medicaid and she has structured her pricing to very competitive and affordable. I asked her to share a couple memorable stories of patients that were, how do you say, acceptable to write about and one sort of funny story was she got a call that a local Fire-fighter needed to come in immediately. Thinking well he’s probably dealing with smoke inhalation or a burn, she prepared for his arrival, all to find out the DUDE had a fish hook embedded in his leg. YIKES! Another successful compassionate story was when this one patient, older gentleman, came in for treatment of a common cold and through Jenny’s care and observation, she noticed the gentleman had a melanoma that he wasn’t aware of and she saw that he got this treated and most probably save his life.

It’s not surprising to see her business growing with all this compassionate, empathetic, friendly care that makes one feel comfortable. Affordable Health Care now boasts over 7,000 patients from Chatham, Beaufort, Jasper, Hampton and Colleton counties. “Many of our patients, drive quite a way to come see us!”, proudly exclaims Ms. Green-Bazzle. AHC is getting about 10 new patients a day and those who are choosing to be walk-ins should be patient patients, as those with appointments take priority and new patient visits do take a bit of extra time to evaluate and diagnose. AHC is continuing its expansion by bringing on some more Nurse Practitioners to meet their growing demand. Jenny notes, Quality care can’t be rushed! “We don’t just want to write a Rx and send you out the door, our goal is to figure out the problem and take the proper path to curing the patient’s symptoms.”, discerns the warm hearted Nurse Practitioner. They are open Monday through Friday 8:30 am till 5:00 pm and do offer Emergency Services for established patients. Nurse Practitioners seem to the evolving way for future health care and it was interesting when Jenny told us that when she was at one of her Continuing Medical Education CME Conferences recently, that about 75% of them were nurse practitioners. Groups of horses roam the Rhone Delta marshes and are “semi-liberated” much like the horses of the Outer Banks of North Carolina. The Camargue horse is a tough and independent breed used primarily to herd the black bulls of the region, which also roam freely in the delta. The Camargue is a triangular area in the region of Provence encompassing the Rhone River Delta in the east and salt marshes in the west. The Camargue is one of France’s 44 Regional Nature Parks.
