UDE, I am so glad Winter is over and we can now get out more and enjoy all Mother Nature’s Lowcountry Glory that is our Pristine Natural Resources. AH YES! Flowers are blooming, fish are biting, we’re ready go saddle up our horses and go for a nice slow & easy Spring Ride. Run the horses by the watering trough one quick time before we head out, cause we might run in to some warm temperatures. Let’s get going, we’re burnin daylight DUDE! Yeehaah..... Gitty Up! I’ve always loved all the great natural wonders of our very own planet earth. Some times on midnight rides down by the river, I like to sip on a cold brew and stare at the stars, listening to the flow of the tide rolling. Inevitably, you see the moon and gasp in awe, especially when it’s FULL. Even in the year 2015, it’s still pretty amazing that mankind has actually flown to and walked on the MOON. Well, with all that being said, I couldn’t think of a better DUDE HALL of FAME INDUCTION and group of DUDES to dedicate our Spring 2015 issue to, other than, THE MEN WHO WALKED ON THE MOON. Think about it, a quite small, pretty select group of some of our finest Americans are our NASA astronauts, even fewer who have gone to the Moon and even fewer, who have actually WALKED ON THE MOON. There are (12) DUDES who have walked on the moon and they are as follows, in order of their actual walks; Leading off, the First DUDE on the Moon, NEIL ARMSTRONG. I think all of us of age, remember where we were on July 21, 1969, when he and BUZZ ALDRIN first walked on the moon. APOLLO 11 WAS HISTORY MAKING FOR SURE! Following those two DUDE HALL of FAME INDUCTEES; PETE CONRAD and ALAN BEAN on Apollo 12, ALAN SHEPARD & EDGAR MITCHELL on Apollo 14, DAVID SCOTT & JAMES IRWIN on Apollo 15, JOHN YOUNG & CHARLES DUKE on Apollo 16 and finally rounding out this, Not so... Dirty Dozen, EUGENE CERNAN & HARRISON SCHMITT on Apollo 17. Every American should learn about the amazing things, people and stories of great humanity that the United States of America did racing the Soviet Union to the moon. Though they (USSR), had the first satellite with Sputnik, there’s no doubt who won that race DUDE. USA! A couple cool tidbits about the Neil & Buzz’s first visit to the moon on July, 20, 1969; They spent 2 1/2 hours, actually with feet set on the moon and there’s no way they pull this off without their Able Wingman, Michael Collins, who was 45 miles up and circling the moon ever 2 hours, waiting on his privileged, very lucky friends. The name of the lunar module was appropriately named, THE EAGLE. The words, “Houston, The Eagle Has Landed!” will live in infamy. They collected 47.5 pounds of moon-rocks and blasted back off to the command craft, Tranquility. The other and most likely, most awesome quote of all time, occurred on the day after they landed on July, 21st, right before Neil set foot on the moon, “IT’S ONE SMALL STEP FOR MAN, ONE GIANT LEAP FOR MANKIND!” It was a national moment of pride and relief, when our boys splashed down on July 24 and were actually back on board the USS HORNET. Kind hard to believe that was 45 years ago and we have not been back since the Apollo program ended a few years later. To all those MEN WHO WALKED ON THE MOON, this issue for you DUDES and we would like to say to each one of them while we salute them, “WELCOME ABOARD COMMANDER!” Now that we’re out on the trail for our awesome Spring ride, we DUDES simply love being outdoors and enjoying all the great natural wonders of the Lowcountry and Highcountry for that matter. And speaking of the Highcountry, our Naturalist DUDE, Marvin Bouknight who is now the Director of the Nature Museum in Charlotte, North Carolina, spent some time recently “up thar in dem dere hills”,

enjoying all the great wildflowers that the Appalachians offer up each Spring. You really need to see it to believe it. Thanks to Marvin, you can get a great idea of this spectacular painting of the natural landscape by Mother Nature. We appreciate the article and photos Marvin. Spring time means great fishing to many of us DUDES and usually during our Spring rides, we have to take a break and water down the horses. While letting our horses hydrate, we simply can not resist breaking out our fly rods and try to snag a few fish for chow later back at the ranch. Many of you faithful followers of DUDE, know of, O’Neill Williams, who has written many great articles for DUDE. His love for fishing and the great outdoors is a strong one, thus his great nationally televised show O’NEILL OUTSIDE, seen most weekends on Fox Sports South. own outdoors show, Travis Johnson Outdoors. Well, these two DUDES went large mouth bass fishing recently and they swear to me, it’s the best bass fishing they have ever done. DUDE, that’s a pretty strong statement coming from those DUDES! Now that I have read O’s article about King Fisher Society in Laurel Hill, North Carolina, I’m a believer and I just put this place on my bucket list. Bucket mouths DUDE! Thanks for checking in O’Neill. Many DUDES like us, that love to ride our horses out in the country, usually like to take our dogs with us. Man’s best friend is without a doubt a dog. DUDES love DOGS! One of DUDE’s favorite dog people is Rebecca Bass, head of the great group that is Therapy Dogs Inc. Watching elderly folks and young children smile when they interact with these caring, loving dogs, simply puts a smile on my face. Some of these very special dogs best work is with some of our Wounded Warriors, who are either physically disabled or are having trouble transitioning to civilian life or both. Dogs can sense many things humans can not and they give back unrequited love. Rebecca, with her great love for dogs, simply could not resist heading to the Southeastern Wildlife Expo, that is held every February in Charleston, SC, to watch the super dog performances that are DOCK DOGS. This is a great competition of hunting dogs, getting a wide opening running start and leaping many ten’s of feet off a dock. Geronimo Dogs for sure DUDE! Thanks for the great article and photos Rebecca. Since we mentioned our great Veterans and Wounded Warriors, we always think of and thank them while we are out on the trail enjoying our freedom they have provided for us. This past late Winter, DUDE was invited to join the fine ladies of the DAR (Daughters of the American Revolution), as they held a heart felt Commemoration to our Vietnam Veterans of Beaufort County and surrounding areas. All I can say is WOW, what an awesome event held to appreciate these War Fighters, who went to battle to save a nation 50 years ago. I saw and met many proud, emotional, respectful, American Flag & Country Loving individuals. Certainly made me proud to be an American DUDE! When you see an American Armed Forces Veteran, go up to them, look them in the eye, shake their hand and THANK THEM for their service to our great country. Our country did not exactly show it’s true colors when these heroes came back home with scars that will last them for the rest of their natural lives. Thank you to Bonnie Wade Mucia for heading up this great event and inviting DUDE to join and pay my respects to my fellow Americans. Now that the temperatures are starting to climb a bit and getting in to the 80’s and 90’s, we have to water down our horses multiple times and it’s nice to take a break ourselves and have a cold brewski. DUDES LOVE COLD BEER! This Spring ride, we rode our horses in to Fat Patties to throw a couple back and talk to owner, Nick Borreggine about his love for beer. Seems ole Nick and his buddy, James Brown, love craft brews so much, that they have decided to start their own brewery, SALT MARSH BREWERY. Coming soon to Bluffton in the location of the soon to be opened New Fat Patties. Very cool, new craft, home brews coming to Beaufort County very soon, so check out what they got cookin DUDE! CHEERS NICK and Congratulations DUDE! DUDES simply can not learn enough about our pristine Natural Resources here in the Lowcountry, however now that the Port Royal Sound Foundation Maritime Center is NOW OPEN, all of us can stop by from time to time to learn more and get a refresher course on some great knowledge of our GOD BLESSED animals and plants of the Lowcountry. These fine folks have checked in to give us their line up of great Tuesday Talks. For a small donation, every Tuesday, you will be able to stop by and learn from some of our area’s most intellectual teachers. Great programs, Great people, Great displays, Great place, so take a stagecoach full of young curious children and stop by for a visit. Did you know they have a taxidermy version of SNOWBALL, the albino bottle-nose dophin in there DUDE? We love seeing young children and their minds engaged with Mother Nature’s great applications. No smartphone apps here DUDE! This is hands on real, up close and in person knowledge. Speaking of real knowledge, the DUDE QUIZ checks in this issue with some pretty tough questions about the Moon Landing and all the various aspects of it and NASA. What a great American accomplishment and

NO, it was not faked DUDE! If you get all the answers right, call me and I’ll buy you a beer at one of our favorite watering holes. Every two years out on the trail, we get treated to a visit by our Navy’s BLUE ANGELS and in celebration, our good friends and fellow Americans at the Marine Corps Air Station Beaufort put on a magnificent AIR SHOW. This early Spring, they delivered once again and once again, we felt like a kid in awe of our great Armed Forces, especially those that have wings DUDE! Our neighbor, fellow DUDE FAMILY MEMBER and great photographer, Ed Kelly, who took the photo of the awesome Bald Eagle landing in a tree on the cover, decided to ride in to MCAS Beaufort with us one day of the Air Show and he got some fantastic photos to share with y’all. Special Thanks to the USMC for showing DUDE the royal treatment. Being driven out on the run way in a golf cart, does allow a DUDE to get some great shots. Thanks to the Blue Angels and our United States Marine Corps for putting on such a great show. I don’t know about you DUDES, but I’m getting hungry during this long springtime ride. How bout a bowl of Gumbo to get us back to the ranch before we can kick our heels up? Our long time friend and FIRST ADVERTISER IN DUDE, Chef Michael Pressley, owner of ROSIE O’GRADY’S, shares his recipe with us in COOKING DUDE STYLE. This recipe ain’t for sissies DUDE! Pony up and make the jumbo pot full for all the cowboys and cowgirls out on the trail with you. My goodness, that’s a fantastic recipe for some Lowcountry Gumbo, that allows a DUDE to enjoy many of our water’s delectable treasures. Thanks Ole Great Wizard! As we start heading our horses back to the ranch, we stopped in and decided to share some important information from a couple our elected DUDES out there, Senator Tom Davis and Sheriff, PJ Tanner. Tom has introduced an amendment in regards to boat trailer safety, which should be supported by all boat trailering safety, caring DUDES. Call or email your representatives and tell them to support this safety amendment. Sheriff PJ Tanner checks in and he and his fine staff of deputies would like to be able to assist and have us assist and help them in a more helpful and efficient way, so go to their website and sign up for Nixle. Great facebook posts and smartphone texts updates, keep you and I, as Beaufort County citizens, up to date on local law enforcement happenings, as well as giving great public service information on various events in the area. We are lucky to have two great DUDES like them representing us here in Beaufort County. Thank you gentlemen for your continued service and for looking out for our well being and safety. Finally, our long Springtime ride is about to come to an end as we round the bend and catch our first view of the ranch. Home sweet home DUDE! One, quick stop before we get our horses back in the barn is our love for birds. DUDES LOVE BIRDS! This Spring, the fine folks at the Sea Island Fly Fisher’s Club would like to ask you for your help, as they are conducting a Lowcountry Osprey Study Survey, which surveys our area for these majestic creatures that dive bomb fish in our local waters. If you’ve never seen an Osprey dive bomb and catch a fish live, then you might want to put down that smartphone for a bit and get your ass outdoors and enjoy the show. Local boat owners are encouraged to help out, so we can get a good count and see how our local Osprey are maintaining themselves in our immediate area. Whew DUDE, I’m whipped, so let’s get our horses, watered, brushed down, fed and back in their stables so we can kick back by the fire for a few cold ones. How bout a freshly brewed Salt Marsh Brewery selection DUDE?! This is when we like to laugh and tell stories of our adventures on our Spring ride. Harold, Our Largemouth Bass Editor, checks in with his Wild & Crazy Mailbag. That is one funny fish DUDE! We also have some great photos that you DUDES sent to Harold to share with our DUDE FAMILY. WOW! There were some nice fish caught this past Winter, early Spring. There are also some photos of HANGIN WITH THE DUDE, where many of our friends, family and fans come up to us for photos. SPRING WILDFLOWERS Beauty of the Blue Ridge Article and Photos BY MARVIN BOUKNIGHT American Alligator

W

ell, by now, I’m thinking the Atamasco lillies are blooming around the Lowcountry and spring is popping up everywhere. As beautiful as this can be, it pales in comparison to the spectacular display of wildflowers that begin to emerge in the Blue Ridge Mountains. I’ve lived on the coast of South Carolina in both Beaufort and Charleston for almost 20 years, and as much as I love the coast, my heart has always been in the mountains and hiking in the hills during the explosion of wildflowers is simply amazing! The diversity and sheer volume of beautiful colors in the spring baffled and impressed many of the European botanists who first “discovered” and documented the lavish flora they found in “them there hills”. In fact, many of the naturalists and botanists were honored for their early contributions by having flowers and plants named after them, either in common names or scientific names. It started in the 1700’s when Mark Catesby (Catesby’s Trillium) first ventured into the mountains, later followed by William Bartram, who is often called the father of American botany (and is immortalized by having the American Serviceberry named after

him, Amelanchier bartramia). This created an influx of other famous botanists, such as John Fraser, Thomas Nuttall, and of course, Andre` Michaux. Even America’s pre-eminent botanist, Asa Gray, who proclaimed the area as being surpassed in diversity only by the tropics, got into the act of documenting plants throughout the region and earned himself a plant name with one of the area’s most beautiful lilies, Gray’s Lily. What makes the area so unique and diverse? For about 150200 million years, the Appalachian mountains stood tall enough to avoid being covered by ancient seas and these peaks also avoided the destructive forces of glaciers. This era of protection and virtual undisturbed existence, combined with extensive rainfall, rich organic soil and a variety of exposures and habitats created a perfect storm of diversity. By traveling from mountain base to mountain top, you can discover a diversity of plants that can similarly be experienced by driving from the mountains to Canada! In fact, many plants that you can see in the Blue Ridge Mountains aren’t seen anywhere else EXCEPT Canada! That’s pretty amazing if you ask me DUDE... Although these flowers bloom from March to August,

“When you’re near it, you’ll smell it!” Featuring the Lowcountry’s Finest Slow Cooked BBQ • PULLED PORK • SMOKED RIBS & BRISKET there are a couple of peak blooming times, beginning in mid-April. Other times are in May-June and August-September, but it really depends on what flowers you want to see. Personally, I prefer mid-April through May, which is when you can see flowers such as trout lilies (named because their mottled leaves resemble the mountain trout, but more importantly, their blooming coincides with trout season!), bluets, violets, uncommon but spectacular orchids like the showy orchis, 3-leaved, 3-petaled trilliums, and more. Even squirrel corn, a mysterious, non-photosynthetic, parasitic plant is beautiful, as is the ghostly white flowers of the parasitic Indian pipe. It’s a great time to cut loose from the coast, escape the no-see-ums, and head to the hills. Once you get back in the woods a bit, of the beaten path, you’ll find it hard to imagine a more serene, peaceful scenario. Imagine walking along a woodland trail, deep in the Appalachian woods. As your nose inhales the rich, earthy aromas, your ears hone in on the the flute-like call of the wood thrush against the ever-present undertone of a bubbling stream. In the distance, you can hear the echo of a distant woodpecker hammering out a staccato rhythm. Out of the corner of your eye, you catch a furred, blurry glimpse of a chipmunk scampering from rock to rock in a mad dash with its cheeks packed full of food. Your eyes adjust to the shadows created by the canopy of towering trees and you begin to notice bright splashes of color against a mosaic of the greens and browns that carpet the forest floor. It’s spring in the mountains and once again, the emergence of these beautiful wildflowers gives us a sign of renewed growth that begins a celebration of the incredible diversity and amazing beauty that can only be found deep in the Blue Ridge Mountains. DOCK DOGS Must Be DUDES

magine a sport where the contestants take a running start and then leap off the edge of a dock into freezing cold water and then come back to do it again. That is exactly what Dock Dogs do, DUDE! This relatively new dog sport started officially in July 1999 but really came to public attention the following summer at the 1st ESPN Great Outdoor Games. Since that time, several organizations have been created that sponsor dock dog competitions. Here is how it generally works: There is a dock that is approximately 35 to 40 feet long by eight feet wide and is two feet above the surface of the water. Any body of water or pool that is at least four feet deep can be used. For example, it could be a pond, a lake, or an inground or above-ground swimming pool. The dock is covered in artificial turf, carpet, or a rubber mat for better traction and safety for the competitors. The handler may start their dog from any point on the dock when competing. The dog should be on leash while accessing the dock, whereby the leash will be removed before getting set to jump. The handler then tosses a favorite floating toy into the water and releases the dog to run to the end of the dock and leap into the water after the toy. The dog usually does not have to retrieve the object from the water. This is essentially a canine version of the long jump in the Olympics. The score for the jump is based on the dog’s distance as measured from the end of the dock to where the base of the tail breaks the water’s surface. I have been active with my dogs for many years. We have trained and competed in obedience,

agility, and rally obedience, but this is a sport that I had only seen on television and could not wait to see in person. I finally got my chance this year at SEWE (the Southeastern Wildlife Exposition) in Charleston, South Carolina. When this sport first started, most of the competitors were Labrador retrievers. Today all breeds and sizes are eligible to compete in this canine aquatic event. Clubs have sprung up all over the United States including Florida, California, Georgia, and New York and around the world as far away as Australia. In fact, the United Kennel Club (“UKC”) offers dock jumping titles in three different jumping classes and at several levels. They get all revved up, jump into the water after their toy, swim around, and come back for more. This sport, however, is not as easy as it may appear. There were several dogs who ran to the end of the dock at the SEWE competition in February, and then froze with a facial expression that seemed to say to their handler, “It is freezing cold out here. If you want to jump into the frigid water after that toy, go right ahead. I will be waiting for you back home in front of the fire!” Of course, I may have been inferring that reaction from their refusal to jump, since I am positive that my dogs would say something like that to me if asked to perform this trick. The best part about having a dog is discovering new activities to engage in as a team. In the course of the training, the relationship between you and your dog becomes deeper. No matter what scores you may achieve, it is always the fun of performing with your dog that is the ultimate reward.

THERAPY DOGS ARE DUDES TOO! If I asked my dogs to run off the end of a dock and jump into freezing water, they would give me a look that would say, “Forget about it. We are happy being therapy dogs.” My two Doberman pinschers, Mousse (Shown in above photo) and Chloe, have an important job. They share smiles and joy with the elderly in assisted living homes, military veterans, wounded warriors, and the Marines on Parris Island. They started the ARF! (“Animals make Reading Fun!”) Program where local children read aloud to our therapy dogs and improve their reading and public speaking skills. Becoming a therapy dog does not require jumping into the water and swimming. What is necessary is that a dog demonstrate basic obedience skills and a calm, friendly temperament around new people and other dogs. 50th ANNIVERSARY OF THE VIETNAM WAR

everyone was singing, there was a God Blessed Invocation by Charlie Pearson, CPL, SC State Guard. There were ubiquitous teary eyes among all the great Americans in attendance. Yeah! I felt like an American that loves my country. The Honorable Lisa Sulka, Mayor of Bluffton, South Carolina made a proclamation to commemorate this day and honor our Vietnam Veterans, present, those still alive and those that have passed. May we never forget those 58,000 that never came home with their lives DUDE. There were 3 guest speakers: Colonel Neal Pugliese, USMC, David Mitchell, CW2, US Army (Vietnam Helicopter Pilot) and Howard Metcalf, Director of Virginia & South Carolina Vietnam Veterans Administration. David Mitchell gave an unimaginable account of several of his helicopter flights to hot LZ’s (Landing Zones). Upon one return they counted 128 hits on the helicopter and he even had his watch shot off his wrist. Hard to imagine the HELL that is combat warfare! God Bless those that went in there without hesitation to save the lives of their fellow soldiers. Pretty amazing feats of Valor for sure! After these great speakers, there was the very popular Armed Forces Salute, where all of the various divisions of our armed forces songs are played with the members of those particular divisions standing up as their particular song played. Lots of Navy and Marines were on hand for sure. Army, Navy, Air Force and Marines, all were represented on this commemorative day. Proud Americans right there DUDE! You won’t see any of them stomping on the American Flag and cussing our country. Of course there was quite the POW/MIA (Prisoners Of War/ Missing In Action) situation in Vietnam. Lots of our boys were captured and some were never found and are still listed as missing. A nice ceremony for these extra special individuals was presented by Maria Arizmendi, Cadet Major, BN Executive Officer, Bluffton High School JROTC. A skilled Rifle Team Demonstration was also held by the JROTC team from Bluffton High School. Well done DUDES! There is a program called QUILTS OF VALOR and mostly women volunteers get together throughout the year and make quilts for our American Heroes. When Anne Mixon, SC Coor-

his past March the Emily Geiger (Bluffton) Chapter of the DAR held a very special, moving event at the Rotary Community Center at Oscar Frazier Park in Bluffton, South Carolina. I got to meet Commemorative Events Chair, Bonnie Wade Mucia, at the event and since met her for lunch at The Lunch Lady to discuss the success of this very worthwhile, appreciated event. I honestly felt honored to even be invited to this event as I saw and met some of the hundreds of local Vietnam Veterans that were invited and showed up to be appreciated, pay their respects and have some fellowship with their fellow Vietnam Veterans. This is a Proud Group of DUDES! It’s no news flash that the United States of America didn’t show her true colors when this war ended and it was time for these War Fighters to come home and be honored, respected and appreciated. It’s an event like this that makes me have faith that our great country might have learned her lesson. Prior to the event, invitees got to peruse a very cool display that was set up by our friends at the Parris Island Museum that had great memorabilia from the Vietnam era, including weapons, photos, uniforms, soldier’s manuals, MRE’s and there was even a slide show with some vintage classic Vietnam War photos of soldiers being soldiers all backdropped by Vietnam era music and posters. It gave one a real feel for these really tragic years in our American history. Bonnie and her volunteers did a fantastic job of decorating the community center to where it was obvious that this was going to be a very patriotic happening. There was a nice prelude sung by the Port Royal Sound Vocals and a warm welcome by Jane Michel, Regent, Emily Geiger chapter NSDAR. Major General Larry D. Budge (Retired) honored the several hundred strong crowd with some very moving remarks and, as with all military events I attend, there is a Pledge of Allegiance to the American Flag. Damn right it means something to these American Veterans and if you want to protest by burning the American Flag and stomping on it, I’m not sure I’d let one of these DUDES see you doing it. After an awe-inspiring National Anthem, where I’m pretty sure

dinator presented 3 worthwhile DUDES their quilts by wrapping the very patriotically done quilts around them, well, it was hard not to shed a few tears just knowing what these war fighters had been through in their early years of their life when they gave their ALL for their country. Their smiles were Priceless and you could tell that they were very appreciative of the meaningful gifts. Now that the emotions were in full flow, Bonnie got up and read a very moving letter written by Quang Nguyen. His father and brother both fought side by side with our boys in South Vietnam. This respectful young man gets it as he appreciates the fact that there is a country on the face of this earth that traveled over 10,000 miles to fight and die for another country’s freedom and ultimately sacrificed 58,000 lives, whose names are on the Vietnam Veterans Wall in Washington. In the mid 70’s Quang was 2 of 6 children to be flown out of his homeland. He never saw his other family members ever again, however he became a proud naturalized American citizen in 1983. Quang lives with his family in Arizona and travels around speaking about those that fought for his freedom in the Vietnam War. He gratefully thanks the Vietnam Veterans for his life and respects them as his founders. His letter ended, God Bless you all and God Bless the United States of America. There wasn’t a dry eye in the house. This stirring letter really made it all seem very real and somehow worthwhile. With the somber mood in full swing the playing of TAPS by Dorell Fullard was very fitting. The Colors were retired by the Sun City Color Guard and there was a closing benediction. DUDE, I really felt like an American this glorious day and I was proud to be there and pay my respect and appreciation to all those that fought in this very messy confrontation, the Vietnam War. Thanks for the invite Bonnie. To all those VIETNAM VETERANS out there, WE SALUTE YOU and THANK YOU FOR YOUR SERVICE to our GREAT COUNTRY! SERVICE, VALOR, SACRIFICE pretty much says it all DUDE!

UDE is there anything better than a fresh burger and brewski? Well, our good friend and DUDE FAMILY MEMBER, Nick Borreggine, owner of Fat Patties is stepping up to the plate to share this great place with the fine folks south of the Broad River in Bluffton. Fat Patties is definitely one of our favorite watering holes and not only can you get great “build you own” burgers but you can always get a very wide variety of IPA’s and craft beers. Nick has become a real BEER AFICIONADO, since his early years of playing with making his own brew in college. The product of his playful vision is now coming to fruition in the opening of SALT MARSH BREWING. SALT MARSH BREWING is going to be a craft brewery located in the heart of Old Town Bluffton, South Carolina in the soon to be opened NEW FAT PATTIES location on the corner of Hwy 46 and Bruin Road (203 Bluffton Road). Their mission is a simple one; Create and brew innovative beers for their customers, friends & neighbors to enjoy. Nick and James Brown came up with the idea back in 2013 when Nick, beer connoisseur and novice home brewer, met up with James Brown, a seasoned craft brewing veteran of 20 years. These two DUDES want to brew beers invoking True Southern Hospitality that is the Lowcountry Life Style that we all love and enjoy daily. Nick while in college at ODU and Johnson & Wales experimented with home-brews. Seems it was an affordable way for the young DUDES, on a limited budget, to produce some brewskis. He and his buddies fondly named their creation; SBA (S...Brown Ale!) LOL James will be SALT MARSH BREWERY’s head brewer. James is a veteran brewer from the Lowcountry with a couple of brewery start ups under his belt. This surfer DUDE is looking forward to bringing his eclectic style of brewing back to his home town of Bluffton. The surfer/fisher DUDE traveled throughout the Southwest honing his passion for the art of brewing “CRAFT” beer. These two DUDES have big plans for you beer lovers in Beaufort County. Now that they have their ATF “License to Brew and

Manufacture”, LET THE BREWING BEGIN DUDE! Nick tells me that they want to gain a nice market share of the local craft brew and stake their claim with the creation of SALT MARSH BREWING. Nick and James plan on taking it as far as they can with eventually selling to local and regional retailers, via cans, growlers and 22 ounces Bombers. Full blown retail will be the ultimate goal of these aspiring brewmeisters. These BREW DUDES have already come up with 5 “Selections” that they will open with and surely they will grow their varieties and include some seasonal and one time recipes. In the batter’s box is STATE OF MIND SALSON; (5.8%) A funky quirky light bodied farmhouse style ale, that will surely put the quaffer in a Bluffton State of Mind. In the on deck circle is; TABBY ROAD IBA (6.5%) A dark and balance brown ale with a creamy roasted maltiness and a spicy bitter after-bite. That too should produce the Bluffton State of Mind DUDE. Next up is; ROUND TUIT PALE ALE (5%) A simple malt with backbone and a sweet upfront floral hoppy nudge to it. They think you’ll like it, when you get ROUND TUIT DUDE! Batting Clean Up; SHERMAN’S NECKTIE; (9.5%) A bourbon barrel scotch ale that will surely knock it out of the park with its caramelized maltiness that makes this brew a great canvas for the bourbon, vanilla and oak flavors to come out and slap your Mama. And batting last; SAW GRASS PEAR CIDER (5%) A nice refreshing brew made of local Kieffer pears pressed in with a dark candy syrup that will please the palate with it’s sweet dry finish. Quite the line up DUDES! I look forward to trying each one of them multiple times. Ms. Coppola is the Founder and Executive Director of Celebrate Bluffton which is an organization focused on uncovering, preserving, and teaching the history and heritage of Bluffton SC and the larger Lowcountry. Specifically this talk will examine the Gullah-Geechee and Euro-American influences that shaped Bluffton and gave it its distinctive character. After leaving a 22 year career in the software industry in New York and moving to the Lowcountry, Ms. Coppola was quickly captivated by the unique history of the area. In 2013 she received her M.F.A. degree from SCAD in Historic Preservation and quickly put that degree to work by starting Celebrate Bluffton.

COOKING

STYLE! Mikey’s Gumbo

(BY CHEF MICHAEL PRESSLEY)

DA WIZARD & DA DUDE

INGREDIENTS: • Quart of Clam juice • 2 dozen middle sized clams • Pint of shucked oysters • (3) 8-10oz. pieces of white fish • 1 to 2 lb. of med shrimp cleaned • 1/2 to 1 lb. crawfish tails • Small can of chopped clams • Small can of picked crab • 3 to 4 links Andouille sausage • 1 tube spicy country sausage • 1 pack smoked kielbasa • 1/2 lb. bacon • 2 chopped large onions • 3 chopped med. Bell peppers • 1 cup chopped jalapenos • 1 cup chopped pepperoncini • 1 Rutabaga boiled and chopped

• 1 to 2 lb. chopped okra • 1 pt. picante sauce • 1/2 cup chopped garlic • 1 bag frozen corn (I like shoe peg) • 1 can baby peas • 2 cups long grain rice • 3 oz. hot sauce (I like Franks) • Salt & pepper to taste • 3 oz. file gumbo (ground sassafras) • 2 cups AP flour • Juice of 3 lemons • 6 oz. Worcestershire • 2 cups good red wine • Stick of butter • 2 pints of Guinness

PREPARATION:

1. Prep the vegetables, shuck the fresh clams (if you can’t get fresh, double canned), slice the Andouille & kielbasa into ¼ inch pieces. 2. In a large skillet, make a dark roux with the flour and 3 or 4 tablespoons of butter. Melt the butter, add the flour and 1 oz. Worcestershire, with a spatula, continue to work the flour & butter mixture until it’s smooth and begins to darken. You want to do this over med to high heat and darken to a med to dark brown. Then remove from heat and save for later. In a large braising pot; 3. Chop the bacon in small pieces and cook down, then remove so you can cook the Andouille & Kielbasa which has been sliced in ¼ inch pieces. Blacken on one side, then remove to cook the country sausage. 4. Throw all the rendered sausage & bacon back in pot and add all the vegetables except the corn & peas.

5. Stir well and cook for 4 or 5 minutes, then add roux, clams, fish, crab, rice, picante, garlic, hot sauce, file gumbo, lemon juice, 3 oz. Worcestershire, red wine, beer, spices and remaining butter. Stir well, let sit for a moment, then add quart of clam juice. 6. In a separate skillet, pour in frozen corn and 2 oz. of Worcestershire sauce. Cook on high heat to brown one side of the corn kernels (as in roasting), then add to big pot. 7. Add in drained can of peas and let whole mixture get hot & happy on med/high for 5-10 minutes. 8. Add cleaned shrimp last, stir well and cook covered for 20-30 minutes, allowing rice to get done. 9. Now you may want to add more seafood, more spices, more hot sauce, and/or more wine, it’s your pot of gumbo! But I think you have the idea. And remember…anything good is worth waiting for DUDE! HALL NOT BE INFRINGED! Sounds like they meant, in any way, shape or form. I am a bit troubled by an element of our society that thinks the 2nd Amendment should go away. The United States of America does not have a gun problem, it has a people problem. Yes we should do background checks and try to keep guns out of mentally challenged individuals and No, we really don’t need automatic weapons, but banning certain guns and ammo because some whack job used it to wipe out a school is ludicrous. Every law abiding, background checked, American should always have the right to protect themselves and families by being able to BEAR ARMS...PERIOD! Let’s have a quick history lesson. The Second Amendment was adopted on December 15, 1791, as part of the first ten amendments contained in the Bill Of Rights. The Second Amendment was based partially on the right to keep and bear arms in English common-law and was influenced by the English Bill of Rights in 1689. Sir William Blackstone described this right as an auxiliary right, supporting the natural rights of self-defense, resistance to oppression, and the civic duty to act in concert in defense of the state. The right to bear arms in English history is believed to have been regarded in English law as an auxiliary to the long-established NATURAL RIGHT OF SELF-DEFENSE, auxiliary to the natural and legally defensible rights to life. Early English settlers in America viewed the right to arms and the right to bear arms for state militias as important for one or more of these purposes (in no particular order): (1) Enabling the people to organize a militia system, (2) Participating in law enforcement, (3) Deterring tyrannical government, (4) Repelling invasion, suppressing insurrection, allegedly including slave revolts, (5) Facilitating a natural right of self-defense. James Madison the “Father of the Constitution” with George Mason “Father of the Bill of Rights” made the initial proposal for a bill of rights. It was brought to the floor of the House of Representatives on June 8, 1789, during the first session of Congress. The initial proposed passage relating to arms was: The right of the people to keep and bear arms shall not be infringed; a well armed and well regulated militia being the best security of a free country but no person religiously scrupulous of bearing arms shall be compelled to render military service in person. One of my favorite DUDES of all time, President Thomas Jefferson had a great quote about the Second Amendment, “The beauty of the ‘Second Amendment’ is that it will not be needed until they try to take it.” KNOW IT, LEARN IT, LIVE IT DUDE!

ur great state Senator Tom Davis has introduced a bill at the beginning of March that local boaters and DUDES hauling boats with trailers should pay attention to for obvious safety reasons. Senator Tom put this amendment up before the Senate Committee on Transportation. The Amendment is proposed as follows:

AMENDING SECTION 56-5-4030 OF THE 1976 CODE, RELATING TO WIDTH OF VEHICLES, BY ADDING A SUBSECTION TO OMIT BOATS AND BOAT TRAILERS WITH A WIDTH OF LESS THAN 120 INCHES AND USED NON-COMMERCIALLY FROM PERMITTING REQUIREMENTS AND TO SPECIFY CERTAIN TIMES OF DAY WHEN BOATS OR BOAT TRAILERS OF CERTAIN WIDTHS MAY BE TOWED AND TO REQUIRE THE USE OF CERTAIN VISIBILITY MEASURES FOR BOATS AND BOAT TRAILERS. “Boats and boat trailers with an outside width of less than 120 inches in noncommercial use may be towed without a permit. A boat or boat trailer 102 inches to 114 inches in width may be towed at any time. A boat or boat trailer 114 inches to 120 inches in width may be towed from sunrise to sunset. OSPREY POPULATION STUDY SURVEY [ Needs our help DUDE ]

Sea Island Fly Fishers members have helped the Spring Island Institute for the last several years in the job of counting all nesting osprey in Beaufort County. We have a growing data base of past nesting activity and want to continue helping the survey effort. The survey allows SII to gauge the health of the natural environment. Sea Island Fly Fishers from the club have provided about half the volunteers in years past. Please consider helping in this important and fun effort. You will be assigned a segment of water or land to periodically check on nesting activity. You do not necessarily need a boat but it would enhance your effectiveness. I told him I would sleep on it. Six months later, I saw that shrink on the street. “Why didn’t you come to see me about those fears you were having?” he asked. “Well, eighty bucks a visit, three times a week, for a year, is $12,480.00 and to be frank with you doc, a bartender cured me for $10.00!” I was so happy to have saved all that money that I went and bought me a new Toyota pickup truck from Stokes Brown Toyota. “Is that so?” With a bit of an attitude said the doc, “and how, may I ask, did a bartender cure you?” He told me to cut the legs off the bed, And

guys, watch this!”, you think Dom Perignon is a Mafia leader, your wife’s hairdo was once ruined by a ceiling fan, your junior prom offered day care, you think the last words of the Star-Spangled Banner are “Gentlemen, start your engines!”, you lit a match in the bathroom to kill the smell and your house exploded right off its wheels, the Halloween pumpkin on your porch has more teeth than your spouse, you have to go outside to get something from the fridge, one of your kids was born on a pool table, you can’t get married to your sweetheart because there’s a law against it and finally, if you think loading the dishwasher means getting your wife drunk. Here endeth the lesson DUDE. HAROLD Dear Harold Like you, I enjoyed all of the Gullah Festival, most particularly the food. I came home determined to master Gumbo. I came away from my cookbooks confused. Since you can oversee the DUDE’s kitchen in your nice aquarium, I thought you might be able to help me as I know the DUDE knows how to cook. “GUMBO” is the Bantu name for OKRA or a soup thickened with okra pods re: recipes from negro and Cajun recipes from Africa and Louisiana respectively. With that being said, Why does Justin Wilson’s recipe for Gumbo have no okra? Pat Conroy’s recipe for gumbo has no okra either. Pat Branning’s Shrimp Collards & Grits has a gumbo recipe from Charleston and it does have okra. Signed, Sass E. Also make sure you don’t forget the gumbo file powder either. Better yet, check Chef Michael Pressley’s Gumbo recipe in Cooking DUDE Style this issue and there you’ll find one of the best gumbo recipes I ever seen. This photo was shot in Oldfield. It was circling the pond, Ed followed the eagle towards the tree and captured it just before landing. A couple Oldfield resident Bald Eagles had been hanging around for a while. Ed thinks they were interested in eating the cormorants and/or the cormorants fish.
