ummertime is here DUDES and it has been hotter than blazing saddles. It’s time to get our horses out of the barn and go for a nice hot summer ride. Please be mindful of our animals out there, as well as your horse and make sure they have plenty of water and are not exposed to the elements for too long. As we gallop away from the ranch we are going to take the slow ride down by the river where it’s a bit cooler. I’m not going off on any tirades like most people in regards to the Confederate Battle Flag being taken down from the state grounds cause I honestly see both sides. I was definitely proud to our state for the way they handled the terrible murder of those nine wonderful fellow South Carolinians. No liquor stores were robbed and there was no rioting whatsoever. Take note you idiots in Baltimore and Ferguson. There should be more attention paid to that sick screwball’s upbringing, parents, obvious red flags that he is a hater, that he sat around for hours recluse, playing bang bang shot em up video games and well, now it seems that our government messed up on his background check and he never should have had that weapon. It was wonderful and rejoicing to see the GOD LOVING, Christian African American families come out and forgive that psycho, while joining and holding hands with white folks, while attending that emotional church service. Yeah, we roll a bit different down south than they do north of Mason Dixon line. GOD BLESS those families that had to go through that terrible awful tragedy. Now on a much lighter note, with the golf world buzzing about a new super golfer in Jordan Spieth, which I have to say, the boy is impressive for 21 and there were a few others that got off to great early professional starts. When, I decided to induct Arnold Palmer, the King of Golf in to the DUDE HALL of FAME, I immediately thought, of course Arnie is first, but you can’t really have Arnie in any group of DUDES without JACK. So, without further ado, we would like to dedicate this summer issue to THE GOLDEN BEAR, JACK NICKLAUS. Jack WIlliam NIcklaus, born January 21, 1940 in Upper Arlington (Columbus), Ohio to parents Charlie and Helen. Charlie was a pharmacist (with a chain of Nicklaus Drug Stores) and quite the athlete himself. Tutored by Scioto Country Club pro Jack Grout, Nicklaus won the first of five straight Ohio state junior titles at the age of 12, broke 70 when he was 13, won the Ohio Open at age 16 and the International Jaycee Junior Golf Tournament at 17. As a student at Ohio State University (GO BUCKEYES!), studying pre-pharmacy to follow in his father’s foot steps, he won the U.S. Amateur title in 1959 and 1961, as well as the NCAA Championship in ‘61. It was obvious, Jack was going to be a very special player. He married Barbara Bash in 1960 and they have five children, Jack, Steven, Nancy, Gary and Michael. The 1962 U.S. Open was both Nicklaus’ first major championship victory and his first professional win. This is where his rivalry with Arnie began. Well, THE GOLDEN BEAR went on to win 73 PGA Tour victories (3rd to Ben Hogan and Tiger) with a still unmatched, 18 majors; 6 Masters, ’63, ’65, ’66, ’72, ’75 & ’86, 4 US Opens, ’62, ’67, ’72 & ’80, 3 Open Championships, ’66, ’70 & ’78 and 5 PGA Championships, ’63, ’71, ’73, ’75 & ’80. After moving on from the regular tour, Jack went on to win 10 Seniors tour events. Nicklaus devotes much of his time to golf course design and operates one of the largest golf design practices in the world. His first design was the Harbour Town Golf Links, co-credited with Pete Dye, was opened for play in 1969 with Arnie winning the very first Heritage. His very successful design company is credited for well over 300 courses. Nicklaus continues to manage the Memorial Tournament he created in his home state of Ohio, which is played at Muirfield Village, a course which he co-designed with Desmond Muirhead and opened in 1974.

One of my favorite Golden Bear quotes was when a golf reporter asked him if Tiger Woods would beat his record of 18 majors, (Tiger has 14, his last one in 2008, 7 years ago) Jack replied, “Well at this rate he should, But he still has it to do, doesn’t he?!” Chuckling, mind you! Gotta love that. Jack, you are forever THE GOLDEN BEAR and without a doubt, the Greatest Professional Golfer to ever live. Welcome to the DUDE HALL of FAME Jack, YOU DA MAN! Now that we have Jack saddled up with us DUDES, we can start making a few stops on our hot summer ride. Gitty Up! Let’s get goin, we’re burnin daylight. First up, is of course, all the fun that is the 60th Annual Beaufort Water Festival. while listening to some great live music. Also, new to the Water Festival this year is the Official Cocktail. Yeah buddy, our friend Amy Harper and new DUDE FAMILY MEMBERS, Ben Arnold Distributors and Bacardi Rum have joined the Water Festival Admiral’s Sponsors list and came up with a great cocktail contest that pitted 15 local restaurants against each other for the title of first official cocktail of the Water Festival. While out on the trail, we have to be mindful of our wildlife and our WILD LIFE, LOL. Though this DUDE loves all animals, I ain’t real crazy about spiders and snakes, but the more we know about them, the more we realize they are an important part of our ecosystem. They keep lots of bugs and rodents in check. Well, I guess by now you’ve seen our official Naturalist DUDE, brotha Marvin Bouknight’s, Wolf Spider photo on the cover. YIKES! Looks like something out of horror movie. Marvin was nice enough to take time and teach us a bit more about the spiders of the Lowcountry between his duties as head naturalist of the Nature Museum in Charlotte. Many of you faithful followers of DUDE have been introduced to the Santa Elena Foundation and our friend and Executive Director, Dr. Andy Beall and his fine group of volunteers. This entire effort, which will soon be a huge local and tourist attraction, keeps getting better and better. After introducing y’all to the foundation, we got to meet the Count of Guemes, Alvaro Armada Bercaiztegui from Spain (direct descendant) and gave you a brief history of the amazing man that was Pedro Menendez de Aviles. A deal has been done with the wonderful people of our Beaufort County government for the foundation to secure the old Federal Courthouse on Bay Street in downtown Beaufort to be the new home for the Santa Elena Center. This place is awesome inside and I can’t wait to see what it’s like when they open the center some time this fall. Congratulations Andy and thanks to the many folks in your group; Chris Allen, Megan Meyer and Sandy Dimke that helped us put together this auspicious article. No DUDE ride is complete without a visit to our WONDERFUL AMERICAN VETERANS. DUDE attended a great tribute this past Spring, brought to you by a great group of American Veterans, the Veterans Cemetery Committee of Beaufort (VCCOB) at the Beaufort National Cemetery. Thanks to these DUDES, the BNC now has 20 more acres for our heroes and their families to have a nice beautiful place to rest in peace. Job well done gentlemen. Thank you for your service! DUDE is proud to now be a honored member of the Lowcountry Military Officers Association of America (LCMOAA). Thanks for the invite gentlemen. It is truly an honor to be just in your presence, much less me part of your great association. Well, these DUDES do a lot for our active duty military in the form of support for legislation, helping with transitioning to civilian life and even helping out deserving local future officers. This past spring, we had a wonderful dinner at the Traditons Officers Club on Parris Island Marine Recruit Depot, where they presented a JR ROTC scholarship to Cadet Captain Brooke Everly. Congratulations young lady! Talk about someone you’d be proud to have your daughter be like....She’s the real deal, so take note youngsters of America. Also thanks to Lieutenant Colonel, Paul Merritt USMC (Retired) who we introduced you too several issues back, for his presentation of the Technical College of The Lowcountry’s Military Transitioning Training Program he conducts. Thanks for a great evening ladies and gentlemen. It was a privilege to be in your company and thank you for your service and leadership to our country. The respect DUDE has for our military is about as strong as you can get, but when we get to be in their presence, it’s like being in proximity to a professional sports team or some famous musical group. This past spring, DUDE was invited as a member of the LCMOAA, to ride in to the Marine Corps Air Station (Beaufort) aka Fightertown, to enjoy the company of some of America’s finest, our Marine Corps pilots, as they had an officers call, professional military education program, that was held at the Officer’s Club. After enjoying the fellowship, camaraderie and a few cold ones, we were all honored

to hear the personal survival story of downed Air Force pilots, Major Kenneth Harney and Captain Tyler Stark, who’s F-15E Strike Eagle went down over the hostile territory of Libya. Talk about American Heroes...this room was full of them. It was a great honor to be invited to this meeting. A very memorable afternoon I will never forget. GOD BLESS you officers and gentlemen and thank you for your service to our great country. One of the main reasons DUDE always is thanking our military for their service to our country is because they protect us and give us the FREEDOM to get out and enjoy all our wonderful Mother Nature creations, that are our natural resources and wildlife. Many of you regular readers of DUDE know how much we like nature and wildlife photography, so on this hot summer ride, we have some cool stops for you to enjoy, while watering down your horses and letting them take in some shade. The Photography Club of Beaufort is a great group of shutterbugs that have the same love of the outdoors as this DUDE. Once again, I invited them to be my guests at OLDFIELD and cut them loose on this magnificent piece of Lowcountry land. This time they had a creative mission, which I think they all accomplished with honors. Enjoyed the visit y’all and thanks for sharing your favorite shots. Special thanks to DUDE FAMILY MEMBER, Rebecca Bass for organizing this fun enjoyable outing. While we’re taking a break down by the river and letting our horses have a chill, let’s talk more about wildlife photography. Many of you know and will remember the great photos from Sue Jarrett from her African Safari photo spread a while back. We met Sue out on the trail when she took photos for the Water Festival several years back. This accomplished shutterbug has blessed us once again with a photography spread of a recent trip she took to Costa Rica. WOW! You talk about some beautiful animals. See the end of the article, as Sue is going back next year and if you are an aspiring wildlife photographer, you can go with her. Can’t wait to see those photos next year. Thanks for sharing Sue. Ah Yes! Take a deep breath and look around. We truly are lucky to live in one of the most beautiful places on the face of this good earth. If you’d like to get up close, live and more personal, then stop by and visit the great place that is the Port Royal Sound Foundation Maritime Center, located at the Lemon Island landing. This place is really delivering the goods. Many great displays and talks to enjoy and learn from, not to mention, they now have excursions on the water. Juxtaposed and located out back of the center, is a dock, where they are now doing eco tours, as well as kayaking. So, get a group of youngsters together (leave the smart-phones at home) and ride over to this great place, learn some Lowcountry history and get to know more about the glorious entire pristine Port Royal Sound ecosystem. Thanks for the info Geri Kinton! All this DUDE ridin is making me hungry. This summer with everyone catching the beautiful Brownies, aka Lowcountry Cobia, we asked Chef Michael Pressley, owner of DUDE’s very first advertiser, Rosie O’Grady’s, to cook us some up. Banana Rum Cobia sound good to you? WOW! You talk about good......SON! I garontee you gonna like dis recipe fo sho. Thanks Great Wizard! As we turn our horses back towards the ranch, we like to test each other and see how smart you are and this issue’s DUDE QUIZ is about golf. With Jordan Spieth becoming the new prodigy and making Tiger take a back seat, DUDE quizzes you on your knowledge for this fun and very frustrating sport. If you get all the answers right, call me, I’ll buy you a beer. Finally, the barn and stables are in sight, we’re sweating our buns off and we simply can’t wait to get the horses hosed and watered down, so we can kick back. DUDE, this is what life is all about. Hangin with family and friends, laughing and acting like Harolds, is one of our favorite things to do, but no fire this summer. It’s hot enough. We’re parking it under some shade trees, checking out the upcoming regional shows in THAT’S ENTERTAINMENT, while laughing at the Wild and Crazy Harold’s Mailbag. That is one funny fish. Also, there are many great photos that he was sent this past spring. Lots of happy anglers out there for sure. Y’all know you can always bring the DUDE some of that fish by my house, so I can cook us up some grub. Thanks for joining us on this hot summer ride DUDES and DUDETTES. It won’t be long before we start seeing those temperatures drop and we start thinking about tailgating and football season. Kind of wish it was here now, as the heat index has been in the well above 100 degrees range too long. Lowcountry Spiders

he Lowcountry of South Carolina is a beautiful place to live and visit. Most of the time, rent to keep birds from flying through and destroying the web. These active terrestrial spiders hunt their prey by stalking, ambushing, and pursuing a web that can span 1-2 feet, with an obvious zig-zag pattern in the center that was once thought along the ground, not by ensnaring in webs. Large eyes allow this spider to see much better than to keep the web taut (thus it was called a stabilimenta), but now is thought to be a visual deter- many other spiders, giving the wolf spider a very distinct looking face, with four small eyes in a

“When you’re near it, you’ll smell it!” Argiope Spinning Web

row, two large eyes, and then two smaller eyes on top. They are very interesting spiders and are one of only a few species that actually exhibit parental care, which is unusual in spiders. The female will carry the egg case around with her until the spiders hatch, and upon emerging, the babies will climb up Black and Yello w on the back of the female, where she will carry them around Srgiope for 3-4 weeks, until they are large enough to survive on their own. With their large eyes, the spiders also have a reflective membrane on the back of the eye (called a tapetum lucidum) that reflects light around the inside of the eye, helping to improve night vision. Due to this, you can use a flashlight to “sniff” out wolf spiders at night! By taking a flashlight or headlamp and holding it close to your eyes, you can see tiny blue-green twinkling lights and upon closer inspection, will discover that the eye shine belongs to a wolf spider! Go ahead, you know you want der Golden Silk Spi to try it… with Cicada It’s important that we realize that spiders are a vital part of the ecosystem and are so much more beneficial than they are dangerous to people. Because of the sheer number of spiders out there, they are responsible for helping moderate explosive and destructive insect outbreaks. Spiders get blamed for a lot of things including getting blamed for bites. In fact, a majority of bumps, bites, etc. that get blamed on spider bites are actually not spider bites at all. It is rare that people get bit by spiders, usually only when handled or when they feel threatened, like when you put on a shoe that has a spider in it, or a glove, etc. With the exception of two spiders (brown recluse and black widow), none of our spiders pose a significant threat, but it is important to know that all spiders have venom and you may be allergic to it, so it is best not to handle or pick up. If you come across a spider in your home, try taking a cup, put it over the spider, slide a card underneath the cup and take the spider outside to release. They are incredible predators of insects, including those we all don’t like in our homes, cockroaches! So put aside that arachnophobia and take a closer look at the spiders that call the Lowcountry home. Hopefully, the role they play in the environment will take over that urge to smack and stomp them and you may even appreciate the beauty and behavior of these amazing arachnids… DUDE PROFILE: Marvin Bouknight is a South Carolina native and has lived in the Lowcountry for over 15 years. VETERANS CEMETERY COMMITTEE OF BEAUFORT (VCCOB) DELIVERS BY BRAD MCDONALD

T

his past June I joined some of my fellow Lowcountry Military Officers Association of America (MOAA) members along with some dignitaries and other honorable GOD & country loving veterans for a very heartfelt event at the Beaufort National Cemetery. I love seeing veterans respected and honored in any way shape or form and this dedication had some extra special auspicious local meaning. A VETERANS’ PLAQUE was dedicated on the hallowed grounds of the Beaufort National Cemetery by Director, Craig Arsell. Also on hand with fellow LCMOAA members were various Veterans Cycle Groups, local Veterans from all branches, as well as our good State Senator, Tom Davis and our Honorable Mayor of Beaufort, Billy Keyserling. The Veterans’ Plaque honors the great efforts of the Veterans Cemetery Committee of Beaufort. The VCCOB was formed in 1994 by local veterans and other concerned citizens to expand the Beaufort National Cemetery. The committee secured essential adjacent land for BNC in 2007. Keeping America’s sacred promise to her defenders for an eternal resting place is very important to all American Veterans and should be to all the legal citizens of the United States of America.

THE PLAQUE READS AS FOLLOWS; This memorial plaque honors the hard work and dedication of the Veterans Cemetery Committee of Beaufort (VCCOB). The Committee formed in 1994 with the sole purpose of acquiring land adjacent to Beaufort National Cemetery for an expansion area that would ensure that Veterans and their loved ones had a place of rest for decades to come. Through their diligence and perseverance, the VCCOB succeeded in acquiring more than 20 acres which were presented to the Cemetery and dedicated in May 2007. T

his past spring members of the Lowcountry Chapter of the Military Officers Association gathered at the absolutely gorgeous scenic Traditions Club on Parris Island Marine Recruit Depot for a delectable dinner and some memorable camaraderie. It’s always enjoyable getting together with fine group of Americans to hear their stories of valor and service to our great country. It’s also intriguing to hear their opinions on the state of our military as it currently pertains to different foreign policy affairs. After some delectable cuisine prepared by the staff and chefs of Traditions, it was time for this proud group to acknowledge, pay tribute to and award a fine outstanding member of our community, who is surely to become an accomplished military officer herself. Not only does the MOAA fight for veterans rights in the legislature, but they are also very involved in military transitioning to civilian life. Another one of their great annual achievements is to award a JRTOC scholarship to a local outstanding deserving individual and this year’s hard working individual is Cadet Captain Brooke Everly from Whale Branch Early College High School. She graciously accepted her MOAA JROTC Award From Major General Mike Akey, Low Country Chapter President. A proud moment for all involved indeed. Brooke’s goal is to attend a military academy with sights on the Naval Academy. She is also considering the Citadel but is just going SARGEANT MAJOR into her Senior year. A very impressive young lady for sure. Here is DWAYNE FARR, USMC a quote from her, “In middle school, I was very shy and I had a really (Retired) PRAISES hard time making friends. That all changed once I joined my JROTC BROOKE program. JROTC has and still is changing me into the character I never thought I could be. I have become more outgoing and the leadership skills I never knew I had are coming out better every day. I also like JROTC because it has helped me focus on what I want to do after high school and every day I push myself harder.” A very admirable young woman that I think many teenagers out there should take a look at, that in my opinion are lacking in confidence, manners, social skills and direction in life. It really makes you feel good about the future of this country, especially if we are going to have leaders and future role models such as Brooke. Congratulations Young Lady! You deserve it and keep up the great work. Somehow I feel certain we’ll be hearing more from her as she continues to grow in to a fine young military officer. Also attending the dinner and making a presentation was Lieutenant Colonel, Paul Merritt USMC (Retired) who you may remember from the article I did about him and Master Sargent Warren Disbrow USMC (Retired), who have successfully started the Military Transitioning Training Program through the Technical College of The Lowcountry. It is so gratifying to see how successful this program has become and how many transitioning Marine aviators it is helping obtain the FAA certification and training that is getting them placed in great jobs with local aerospace companies such as Boeing in Charleston, South Carolina and Gulfstream in Savannah, Georgia. Keep up the great work gentlemen, I know your efforts are much appreciated by these young up and coming aviation professionals. Thanks to all my fellow Lowcountry MOAA members for making feel like part of the association, even though I never served my country, much less became an officer. All of you do inspire me and make me proud to be an American. THANK YOU FOR YOUR SERVICE TO THIS GREAT COUNTRY OF OURS!

AMERICAN EAGLE GOING DOWN

his is a DUDE account of the very amazing and harrowing story of Major Kenneth Harney and Captain Tyler Stark of the United States of America AIR FORCE. These two DUDES’ F-15E STRIKE EAGLE went down during a combat mission in the very hostile land of Libya in 2011 when we were going after Gaddafi. Earlier this year, I was very honored to be invited to join the Lowcountry Military Officers Association (LCMOAA) as an honorary member. To be a part of this amazing group of DUDES is one of the nicest honors of my life. These are the BEST of the BEST DUDE. Active duty and retired Officers, Captains, Colonels and Generals abound. Meeting them, hearing their stories, being able to look them in the eye, shake their hands and THANK THEM FOR THEIR LEADERSHIP AND SERVICE TO OUR GREAT COUNTRY has really been an enjoyable experience. Well, now being of part of these GREAT DUDES and yes, there are some LADIES as well that lead us in the fine group, I was informed that the LCMOAA was going to be providing (sponsoring) the food and drink for a very special Officers Call/PME (Professional Military Education) being held at the Officer Club on the Marine Corps Air Station (MCAS), Beaufort. Being that I was not really sure what that meant, I was very intrigued by the very thoughtful cordial invitation to join in on this very private, seemingly auspicious event where these two amazing DUDES were going to speak to all the active duty Marine Corps Pilots serving on MCAS Beaufort aka FIGHTERTOWN. ALL HANDS ON DECK DUDE! The Officers Club on the MCAS Beaufort is a very cool place and I enjoyed being there before at a MOAA luncheon meeting and listening to Lieutenant Colonel Brian Foster USMC and Major Duncan French USMC and hearing their FA/18

SUPER HORNET and F-35B LIGHTNING II stories. So, I already knew what a cool place this is, but when I walked in and saw a couple hundred of America’s Finest, Marine Corps Pilots in full uniform having cold ones, drinking out of their very own private personalized ceramic mugs in the bar, I was a bit taken back. Well, I joined right in and had some fellowship with my fellow Americans and had a chilly cold one prior to the main event, OFFICERS CALL PROFESSIONAL MILITARY EDUCATION. We were all welcomed by the MCAS BEAUFORT COMMANDER, Colonel Peter D. Buck and soon we were introduced to Major Harney and Captain Stark. To be in a room with so many amazing American Heroes was truly awe-inspiring. These casual heroes addressed the Marine Corps Pilots by giving them a bit of a jab about how the Air Force goes in and executes flawlessly, so the Marines can come in and sweep up. It was a great anecdotal beginning to their amazing story of a jet crash and the search and rescue mission that followed. For hours on March 21, 2011, Pilot, Major Kenneth Harney (USAF) of Lexington, Kentucky, and Weapons Systems Officer, Captain Tyler Stark (USAF) of Littleton, Colorado, were the focus of nearly every United States of America service member in the Mediterranean Sea region. You see, we don’t or shouldn’t leave service members behind, in Iran, Mexico or any damn where, so at least a dozen aircraft, a platoon of Marines and even Libyan civilians worked to rescue Harney and Stark after their F-15E crashed in eastern Libya. These two DUDES truly had their audience of fellow pilots captivated immediately by the up close and personal tales of their heroic survival. They, among others, were involved in Operations Odyssey Dawn in Libya. Information and the story of their crash and rescue were a closely guarded secret for quite a while and

he Dudes and Dudettes of the Photography Club of Beaufort love to be invited by Brad, The DUDE, to shoot images in the iconic Lowcountry community of OLDFIELD. This plantation exudes phenomenal natural beauty year round, but it is especially striking in the Spring. The photographers were given a challenging assignment when visiting OLDFIELD in May: Instead of simply shooting snapshots that any ordinary photographer might capture, this time the goal was to be especially creative and illustrate life at the OLDFIELD plantation through the camera lens. It is particularly striking to see the photos displayed here, since

In conjunction with their Flagship Admiral’s Sponsorship, there was a cocktail competition held during the month of June and it was brought to you by Ben Arnold Beverage Company, distributor of Bacardi in South Carolina. In 1956, Beaufort held the first water festival. Four years later, in 1960, Bacardi was exiled from Cuba. In 2015, the two are teaming up together with Bacardi being the first ever spirits sponsor. o meet the growing demand for critical care services, Beaufort Memorial Hospital has opened a new, expanded Intensive Care Unit (ICU) able to accommodate 50 percent more patients. As part of an extensive $5 million ICU renovation project, the number of rooms dedicated to patients with life-threatening injuries or illnesses was increased from eight to 12. Equipped with state-of-the-art cardiac monitors, lift equipment and special beds, the rooms are now larger, making it easier for medical staff to perform procedures and move equipment around as needed. “Having extra space to maneuver is vital when you have several people in a room treating a patient,” said Diane Razo, Beaufort Memorial’s director of critical care. “With the upgraded equipment we’re able to provide the best care possible to our patients.” Unlike the old ICU rooms that had no natural light, every room in the new department now has a window to the outside. The rooms also were designed with a second window facing a central work alcove, allowing the staff to visually monitor patients from their nursing stations. Four of the rooms are equipped with an overhead boom system that holds attachments and accessories needed to support critical patient care. With medical gases connected to the ceiling-mounted boom

rather than a wall, the bed can be moved easily to allow access to the patient’s head and airway during a code situation. “An overhead boom offers the greatest flexibility,” Razo said. “We can move the bed anywhere in the room and not have to climb over wires and lines attached to the wall.” Along with a thoughtfully designed family waiting room, the ICU now has a separate consultation room where doctors can speak to their patient’s family in privacy. Located on the second floor of the main hospital building, the space for the new ICU was created during the renovation of the Emergency Department three years ago. Now completed, the staff moved into the new quarters in early July. Board-certified pulmonologist and critical care specialist Dr. Peter Manos is the unit’s medical director. Community support underwrote nearly $450,000 of the cost of the new ICU. “We are grateful to everyone who attended or otherwise supported the BMH Foundation’s 2014 and 2015 Valentine Balls which helped spearhead this effort,” Beaufort Memorial Foundation Executive Director Alice Moss said.

Banana Rum Painted Cobia Grilled or Sautéed

DA WIZARD & DA DUDE

In a medium sauté pan, take 1 medium RIPE banana and mash it up well, then pour over two cups of Spiced Rum, the juice of 1 lemon, 2 tablespoons of butter, 1 tablespoon of brown sugar, 1oz. of Hot sauce and a big pinch of sea salt. Sautee until mixture has reduced by 1/3 and thickened a bit. Drain off remaining liquid to use as marinade and discard the mash. Pour the marinade over a couple of freshly filleted Cobia Steaks. Let them marinade a couple of hours in the Fridge. Then, you may want to pan-sear the Cobia in a sauté pan on hot heat for a couple minutes, and then finish in the oven which has been pre-heated to 350 degrees for approximately 10 minutes, or desired doneness. While the fish is marinating, you may want to cut up some fresh pineapple, papaya and cantaloupe into equal sized pieces and marinate with 1/2 cup of Spiced Rum & 1/2oz. of Balsamic vinegar. This can be used as a “Fresh Fruit Compote” over your Cobia at serving time. This fish would be great with a Red Rice dish, or even a Dirty Rice dish and some grilled vegetables. I love to take Zucchini and Yellow Squash, cut them into steaks lengthwise about a 1/4 inch thick and marinade them in a mixture of virgin olive oil, chopped garlic and Balsamic vinegar. Then grill them on the grill next to the Cobia. Mix those cooked squashes together and lay over your Dirty Rice with a big ole piece of Banana Rum Painted Cobia. If you would like an appropriate garnish, you might want to quick-fry some banana medallions which you dipped in cream and spiced bread crumbs, and then sautéed until golden brown. Make sure to add a little salt to cut the sugar. Yummmmh. Dirty Rice - render down (cook) in a medium sauce pan, 1/2 pound of

NASTY, DIRTY RICE! spicy country breakfast sausage and keep it loose. Pour in 2 cups of long grain rice, a teaspoon of chopped garlic, 1 small chopped scallion and stir well. After a couple minutes, stir in 3 & 3/4 cups of chicken stock, or clam juice. A little lemon zest, salt & pepper as you like. Then before you cover it, dump in a small can of Leseur baby peas, stir well, then cover. Let it cook on medium heat covered for about ten minutes. Until the rice has absorbed all the liquid. Then you’ve got Greasy Peasy Rice. Ain’t nothin’ better DUDE. Go a step further with your sauce. Add a little of the marinade mixture to you hollandaise for a wild kick on the traditional hollandaise to top of your masterpiece.

Dear Harold, I enjoyed reading your last issue and especially your mailbag. It seemed that it took on a bit of a theme about relationships and marriage. I thought love and marriage is what it’s all about. We’re suppose to get married, have children and raise them so we can eventually have grandchildren. Then, we can all get together during the holidays and be miserable. Am I wrong to assume this? Signed, I Must Crave Reality Although Zoo-life Yearns Dear IMCRAZY, There are some happy marriages out there and there are some unhappy marriages out there. I have no idea what it’s like cause I’ve never been married. I just swim around in the pond and flirt with other fish. When I think about the old days and how the nuclear family structure was so seemingly in tact during the much simpler times in the ’60’s and ’70’s, we used to watch great wholesome family shows like the Andy Griffith Show. But as I thought about that show a bit more, it dawned on me why Mayberry was so peaceful and quiet....nobody was married. Here are the single people that come to mind: Andy, Aunt Bea, Barney, Floyd, Howard, Goober, Gomer, Sam, Ernest T Bass, the Darlin family, Helen, Thelma Lou, Clara, Walter Sprague... In fact, the only one married was Otis and he stayed drunk and locked himself up in jail every night! Here’s Your Sign DUDE! HAROLD Dear Harold, Two local Beaufort policemen called the station on the radio. “Hello, is that you Sarge?” “Yes, how can I help?” answered the Sargent. “We have a case here. A woman has shot her husband for stepping on the floor she had just mopped.” exclaims the officer. “Have you arrested the woman?” questions the Sargent. The officer replied, “No sir. Older Woman: His body parts are in plastic bags in the trunk if you want to see. The traffic cop looks at the woman and slowly backs away to his car while calling for back up. Within minutes 5 police cars circle the car. A senior officer slowly approaches the car, clasping his half drawn gun. Officer 2: Ma’am, could you step out of your vehicle please! The woman steps out of her vehicle. Older woman: Is there a problem sir? Officer 2: My colleague here tells me that you have stolen this car and murdered the owner. Older Woman: Murdered the owner? Are you serious?! Officer 2: Yes, could you please open the trunk of your car, please. The woman opens the trunk, revealing nothing but an empty trunk. Officer 2: Is this your car, ma’am? Older Woman: Yes, here are the registration papers. The traffic cop is quite stunned. Officer 2: My colleague claims that you do not have a driving license. The woman digs into her handbag and pulls out a clutch purse and hands it to the officer. The officer examines the license quizzically. Officer 2: Thank you ma’am, but I am puzzled, as I was told by my officer here that you didn’t have a license, that you stole this car, and that you murdered and hacked up the owner! Older Woman: Bet that lying nut told you I was speeding, too! And off she rode in to the sunset with no speeding ticket. We got a great rate!” “Continental?” exclaimed the hairdresser. “That’s a terrible airline. The planes are old, their flight attendants are ugly, and they’re always late. So, where are you staying in Rome?” “We’ll be at this little place over on Rome’s Tiber River called Teste.” “Don’t go any further. I know that place. Everybody thinks it’s going to be something special and exclusive, but it’s really a dump.” “We’re going to go to see the Vatican and maybe get to see the Pope.” “That’s rich!” laughed the hairdresser. “You and a mil-

lion other people trying to see him. He’ll look the size of an ant. Boy, good luck on this trip of yours. You’re going to need it.” A month later, the woman came in again. The hairdresser asked her about her trip to Rome. “It was wonderful!” explained the woman. “Not only were we on time in one of Continental’s brand new planes, but it was overbooked, and they bumped us up to first class. The food and wine were wonderful, and I had a handsome 28-year-old steward who waited on me hand and foot.... And the hotel was great! They’d just finished a $5 million remodeling job, and now it’s a jewel, the finest hotel in the city. They, too, were overbooked, so they apologized and gave us the penthouse suite at no extra charge!” “M-m-m,” muttered the hairdresser, “that’s all well and good, but I bet you didn’t get to see the Pope.” “Actually, we were quite lucky, because as we toured the Vatican, a Swiss Guard tapped me on the shoulder, and explained that the Pope enjoys meeting some of the visitors, and if I’d be so kind as to step into a private room and wait, the Pope would personally greet us. Sure enough, five minutes later, the Pope walked through the door and shook my hand! I knelt down and he spoke a few words to me.” “Oh, really! This spider is the largest wolf spider in the southeast and one of the largest of over 2,200 species found worldwide. These active terrestrial spiders hunt their prey by stalking, ambushing, and pursuing along the ground, not by ensnaring in webs. Large eyes allow this spider to see much better than many other spiders.
