November 2021 SOUNDBANK DIGITAL ARCHIVE Kuching, 5 November 2021 - Art Platform Borneo Bengkel have brought together a group of international musicians and artists to create a ‘Soundbank’ - a digital archive of sounds, images and videos from their respective countries. The online interactive exhibition explores the theme ‘Divided by Lockdowns and Borders, Can We Still Connect Digitally Across Oceans Through Sound?’ and presents words, songs and photographs from Malaysian, Indonesian and British collaborators. Utilising a newly developed app Living Archive, collaborators uploaded, shared, and re-mixed their audio and visuals. The outcome; Soundbank, a digital archive and playspace of music, visuals and found sound. The soundbank archive features recordings in over five indigenous languages, a number of them highly endangered, Kayan, Dusun and Gaelic to name a few, demonstrating the diversity of the collaborators involved in this international project. Soundbank is supported by the British Council’s Connections Through Culture grant. The Food Basket project is part of #CrocodileFoudationFoodBag - A project by JCI Malaysia, sponsored by Crocodile Foundation. Putting food on tables is vital during this challenging period, due to the COVID-19 pandemic.The objective of this project is to help as many people affected by the pandemic as possible. The ceremony was held at the Kampung Sapatalang Community Hall. Implementation of the water filtering system project in Kampung Sapatalang has been built and upgraded to get cleaner water supply for Kampung Sapatalang residents. Before this, the residents only get gravity water supply from other sources where the water is not filtered and are always clogged due to heavy rain. This project is a step to help the people of Sabah in need. It has benefited Kampung Sapatalang that has 52 families and 40 houses with a total of 245 residents.

Kota Kinabalu, 1 November 2021 – Homegrown eWallet Boost announced a new collaboration with Sabah Tourism Board at the “Mansau Sabah Boostku” launch ceremony held at Le Meridien Kota Kinabalu. astries, breads, and desserts. We all love them and I’m sure it’s part of our daily routine to grab at least one as a snack. Just the smell of the freshly baked goods alone will entice anyone’s appetite. However, with so many amazing bakeries around us to choose from, it can be quite a hassle to pick sometimes. That’s why we recommend some goods from a local bakery called Tuah Bakery Sdn Bhd.
If you’re wondering, Tuah Baker’s best selling products are from their signature series; Butterscotch bread, Chocolate Raisin bread, and Wholemeal bread. Their new Ezy tin tie packaging design has been praised by customers as being a design that easily helps keep the bread fresh and clean throughout its shelf life. This is just one of the innovations they try to implement in order to bring the best for their customers.
Tuah Bakery, or Tuah Baker, was established in October of 2008. It was a humble beginning for them starting with a kiosk in Centre Point’s Palm Square. Now they are more focused on business to business as a halal manufacturing company that specialises in bread and pastries. Their factory is located in KKIP and they provide a supply of products to major local supermarkets, hotels, and chain food service providers in Sabah.

In terms of achievements, Tuah Bakery was nominated by the Ministry of Industrial Development for the Sabah Industry Excellence Award. The work they put in not only ensures great sales but also that customers enjoy their products. It certainly shows from this nomination. However, their success hasn’t come easily as Tuah Bakery did encounter some challenges when it comes to managing the manpower in their factory. It isn’t easy managing different individuals with different traits and skills. But, they have managed to make it work with a system that they have developed. This system ensures that everyone can work together harmoniously all while maximising productivity. It just goes to show that where there’s a will there’s a way, and Tuah Baker certainly found a way to overcome such a challenge. One thing is for sure, there is more to come for Tuah Bakery. In the future, they plan on obtaining a HACCP Certification by 2022. They’ve also planned a blueprint to penetrate international markets in Brunei, Indonesia, and the Philippines in 3 years time.

I
f you happen to be in Tambunan, you might just spot House of Music Arts. The studio is where you will find Arddley Nicholas doing his recordings, music productions and music class. He is basically a singer, songwriter, music producer and music teacher in one. To the public, Arddley is best known for his singing. This powerhouse singer from Tambunan has been singing since 8 years old. His parents have been a big part of his development as a singer as they are both from a musical background as well. They used to sing in church where Arddley’s mother will play the piano and his dad will lead the worship ministry. When this happens, Arddley will be near his mother, watching, listening and copying whatever his parents do. His mother is also his music teacher and the main reason he was really into music. During his early years developing as a singer, Arddley joined vocal masterclasses by the likes of Dato Syafinaz, Prof Bi Bao Yi from China and Hong Kong choral master Kathy Fok. However, singing was at first not something he wanted to do professionally. His original ambition was to be a lawyer but then he started to gain more and more interest in singing and music making. Arddley also found love in song writing. A process where he can find peace and be truly himself with the freedom to express anything at all. He also experience the same in music making. All of Arddley’s songs are about mental health awareness, an awareness that he believes still quite lacking in our society. In 2018, he wrote his first song in Bahasa entitled “Bersamaku”. It is telling a story about someone who is dealing/experiencing with depression; an affirmation to those who felt they’re alone in the lonely horrifying battle with their own mind. “Bersamaku” also acts as a reminder that despite the battle, there is someone out there who care for us. Arddley will be releasing his latest track in Dusun called “Sonsodo” very soon. It was first written in Bahasa under the title “Hidupku”. The song is co-written by Mico Ravellen. Bern from OB Studio arranged and programmed the track. “Sonsodo” is about a person who lost someone they love (passed away), but he/she still remembers sweet memories of their togetherness that stays forever in their heart. Dueting with Arddley on Sonsodo is another powerhouse singer Elica Paujin. The duo has done a few duets before this, thus Arddley is really comfortable working with Elica. For him, Elica fills up the missing elements in Sonsodo that were needed to complete the song.
When it comes to favorite genre of music, Arddley’s taste is quite broad. He loves listening to anything from classical music to modern pop songs. His style of music though is more towards blues, soul and r&b. Sometimes he will go for ballads which is the case for “Bersamaku” and “Sonsodo”. For futures projects, Arddley is currently involved with a big collaboration with Dabra Sia production for a productions called Malaysia Bangga and another another collaboration with New Born Music for their latest single. plato In addition to the name changes, some rules have also been changed to accommodate the copyright laws and also for a more fast paced gameplay. Though, this does provide for a simpler way of playing your favourite board games. Personally, these changes don’t really bother me. What’s mildly infuriating is the lack of voice chat for the app. You’ll have to rely on typing your reactions instead, which takes a bit of time. If you’re hanging out in person, this wouldn’t really be an issue. Another issue I’ve noticed is the inconsistency when it comes to introducing the rules and how to play a game. Not all of the games have this feature. Even with the issues I’ve noticed, the app is definitely worth the try. You can totally pass some time on this app when playing with friends. The simple and intuitive user interface allows for an easy to use setup for everybody, including children.

ecently, I’ve been on a board game kick with my friends. But the usual problem arises that we can’t really hangout in person due to some constraints. It’s a good thing we’ve found an app that can help scratch the itch so we can play whenever or wherever we like. This app is called Plato and it caters to a myriad of popular games, all in the palms of our hands. Downloading the free app and registering is pretty simple with just a few steps. It acts just like any other social media site where you can add friends and create groups for your closest friends. You can also chat with them, either in-game or not, and this goes for both private and group chats. If your friends aren’t available at the moment, you can also play against strangers online. Speaking of games, you have more than 20 choices to choose from. Be it from popular classics like Monopoly and Uno, card games such as Hold’Em and Go Fish, or even darts or pool. It also has Werewolves, a current favourite among larger groups of friends. There is a catch however, due to copyright, some games have had their names changed. A few examples would be Monopoly is called Bankroll, Uno as Ocho, and Cards Against Humanity as Rock Cards.

e-foiling in sabah
I
n this issue’s Destination, the ocean will be our destination. New but getting more popular in Sabah is e-foiling, a water sport which involves surfing through the surface of the ocean with an e-foil (electronic surfboard). In fact, e-foiling is not only new, it is introduced in Malaysia for the first time right here in Sabah; thanks to Waterfly Borneo.

sabah to host 2nd asia parks congress launching
Kota Kinabalu, 26 November 2021 - The State Government of Sabah, through the Ministry of Tourism, Culture and Environment Sabah, is delighted to announce that the 2nd Asia Parks Congress will be held in Kota Kinabalu, Sabah from 24 to 29 May 2022. The announcement was made during the launching ceremony which was held at Sabah International Convention Centre - SICC.

SUPERCARS GALORE
I
t used to be that supercars were a very rare sight on the streets. Now I tend to notice one or two prowling through Kota Kinabalu and Penampang every now and then. I’m sure this observation would be more common in cities like Kuala Lumpur or especially in Western countries. But do you know the “humble” origin of the supercar and the beautiful machine that has birthed the term “supercar” to the world? Introduced in 1992, the Mclaren F1 supercar was the first car that was considered a supercar. It held the title of ‘World’s Fastest Production Car’ for 15 years with a recorded top speed of 240.1 mph (miles per hour). Although its reign is over, it still is the fastest naturally aspirated car in the world, which means it doesn’t need turbos or superchargers to reach its top speed. It’s not all performance though, as the F1 features an elegant design aesthetic. It also has a unique interior with the driver being in the middle, like a jet fighter, flanked by passenger seats on each side. Fun fact, Mr. Bean (Rowan Atkinson) owns one and has crashed it. The F1 might’ve been the car that birthed the supercar category but the Lamborghini Miura is technically the first supercar ever made. With its wedge-like shape and use of a 12-cylinder engine in a production car, it’s the father of the supercars. Since then, the wedge shape has been a staple of supercars, especially for the Lamborghinis we know today. Lamborghini’s legacy as we know it all started from the Miura. The 12-cylinder engine has also been used in all their flagship supercars for 50 years, with the last one being the Murcielago. Here’s another fun fact, Lamborghini used to produce tractors before it was a car company.

It seems that more supercars tend to come from western countries. However, there’s one supercar that not many recognise from the land of the rising sun. The Lexus LFA is a beast of a machine. It’s one of, if not the best sounding car ever produced. If you don’t know, Lexus is the luxury brand for Toyota. This means owners of the LFA not only get great performance but also Toyota reliability at the same time. Unfortunately, it took Lexus too long to develop it. 9 years to be exact. This caused fans to lose interest and not many are seen being driven around. It’s certainly exciting when we get to see supercars on our roads. But knowing the history and background of them makes it that much sweeter when we do witness them in person.

That is what Darren Soon of Tuah Baker does to climb up the ladder in the bread industry of Sabah. Here’s a thing or two you should know about Darren and how he balances his work and family life.
Darren is a 42 year-old who is originally from Labuan. He is a young entrepreneur who is currently venturing in the bread and pastry manufacturing industry. Tuah Baker is a halal certified bread manufacturing company supplying products to local supermarkets, major hotels, as well as chain food service providers. He also has Uncle T Donuts with kiosks located around Sabah. These kiosks serve soft and fluffy donuts topped with different choices of toppings. Darren feels it’s important for the company to give customers choices to either satisfy their sweet tooth or go for the healthier options. He’s proud that the company is able to cater to almost every demographic in Sabah. So, what’s it like in a day of Darren’s life? Well, he admittedly has a hectic routine everyday. He needs to manage the daily production and operations of the company. Some days, he needs to travel in order to set up new outlets in different districts of Sabah. Darren admits, it might be tiring sometimes but it sure is fulfilling when he gets to see an outlet succeeding after all the work is put into it. His biggest challenge is managing the manpower he is in charge of. Not every person is the same, so trying to maximise productivity of different individuals is a tough job. To solve this, Darren and his team have come up with a system to maintain productivity and improve the skills in the company. Through the years, Darren always learns from his experiences in the past. He has experienced a lot of ups and downs in his journey towards success. Even though the most upsetting experience of meeting irresponsible individuals has made things a bit difficult, he learns from his mistakes and moves forward. He’s grateful to have many mentors and the support from government sectors such as MPC, MITI, MaRii, KPDNKK, and many more.
Even when the going gets tough, Darren is always thankful that he has Glenda, his wife, by his side through all the tough times. In his own words, there’s always a strong woman behind a successful man. Glenda has always been supportive to all of Darren’s decisions and direction. They are the definition of a dynamic duo, always by each other’s side in their work and family life. During their free time, both Darren and Glenda love to spend quality time with their children. They prefer to visit the seaside with the kids every now and then to watch the sun set. He also appreciates a tall chilled mug of beer with that sunset as a bonus. Darren cherishes the time away from work to spend time with his family. He believes that family comes first when it comes to everything. And that is Darren Soon for you. It also comes with 600 calories and moderate amounts of sugar. Reduced cholesterol: One study, published in The Journal of Nutrition, suggests that chocolate consumption might help reduce low-density lipoprotein (LDL) cholesterol levels, also known as “bad cholesterol.” The authors concluded: “Regular consumption of chocolate bars containing Plant Sterols (PS) and Cocoa Flavanols (CF), as part of a low-fat diet, may support cardiovascular health by lowering cholesterol and improving blood pressure.” Balances the immune system: Flavonols in chocolates help prevent the immune system from going into overdrive and reduce oxidative stress, which is an imbalance caused by cells fighting against free radicals and a common cause of many diseases. Together with Dr. Sylvia Lim of Phi Dental, let’s explore the effects of pregnancy to a mother’s oral health.
As always, most oral issues are preventable. Dr. Sylvia suggests visiting the dentist at least once during pregnancy. Preferably during the second trimester, when the baby is more stable and the mother has overcome morning sickness. A simple scaling and cleaning is advisable. However, do let your dentist know of your pregnancy, even if you’re not a hundred percent sure. Let them know the details of the medication you’re taking, certain medical conditions, or even any special advice from your physician.
During pregnancy, hormonal changes of progesterone and oestrogen can increase the acidity in the mouth, leading to an increase in cavities. However, this can also be attributed to the increase in sugar intake due to certain craving and a decrease in attention to preventive dental care. The amount of bacteria and plaque that stick to teeth also increase with the body’s inflammatory response. Plus, ligaments and bones in the mouth may temporarily loosen, resulting in teeth wiggling slightly. It can be alarming, but it doesn’t necessarily increase tooth loss.

Christmas at Home
have had Christmas in many countries. In India, where I was born. In Africa. In Brussels. In Sabah. And of course in the UK, where I am at the moment. There’s a lot to be said for experiencing other people’s customs, but there is something very comforting and familiar in your own traditions. We have all sorts of silly things that need doing. For us the tree has to be a real one. It is usually about five or six feet, and decorated with lights and all the baubles that we have collected over the years. When I was younger and trendier, I tried to choose a colour scheme and stick to it with lights and ribbons and all sorts, but now I just put up what has happy memories. We collect holly and ivy from the woods, and string them up all over the banisters and on the mantelshelf, dotted with lights – usually white, sometimes red, never flashing and never multicoloured. Just a lot of them. I buy candles that smell of cloves and cinnamon and orange, and light them each evening (not near the greenery of course!). Christmas is about sights and smells and sounds too, so on the day we put on Carols from Kings on the radio which is a lovely background for opening presents. No longer, thank heavens, do we have children who wake up at 6 am when it is still dark, and invade the bedroom, demanding to know if Father Christmas has been. We used to send them downstairs to check if the mince pie they had so thoughtfully left out the night before had been eaten, or the glass of sherry drunk – thirsty work, all that sleight driving. There would have been a carrot or two left out for the reindeer as well – these, if we had remembered before turning in ourselves would be almost gone, the remain bit with teeth marks clearly outlined. We have never really gone in for stockings – too much trouble, I think – so the presents are always around the tree. When everyone is up, and wearing suitable festive kit (red pyjamas, reindeer ears, flashing earrings, whatever works), we sit expectantly near the fire and thre tree, and someone comes in with smoked salmon blinis, champagne and orange juice. The youngest person is the present distributor, and begins their work. Soon there is paper everywhere, and sounds of rustling and laughing and talking. Honestly. It is never badtempered, although if we aren’t careful that comes later, when the paper has been cleared away, and there is a tiny sense of anticlimax. Not for long, though.

Some go to church, mostly to sing their hearts out, and others don’t, but offer to peel potatoes. An offer always welcomed. This year we are having beef for lunch, which will happen at about 2.30pm. There will be sprouts cooked with pine nuts and onions, roast potatoes, parsnips, another green vegetable if I have remembered, and lots of gravy. If turkey, bread sauce, which is worth its weight in baubles any day. Pudding can be trad plum, with brandy butter or it can be something else – a nod to Xmas spice, or something completely different if people aren’t so keen on the taste of sweet mincemeat (dried fruit, in a dark sticky mass). The table will look lovely, with lights and candles and the best china and silver. Glasses will sparkle and look better and better as the light fades – this is the UK, and it’s dark by 4 o’clock in the afternoon. There will be a walk, if people are not weighted down by the quantities of food by this time, which will clear the head and redden the cheeks. If it’s been snowing, there is the crunch of crystals underfoot, and it’s always lovely in woodland, by the sea where I live, and walking past the lights in all the houses on the way. It’s not a fairy tale. There will be irritations; someone will snap at someone else; people will snooze in front of the telly, or stay around the table and chat. The point is that people WANT it to be a happy day, and in our family we do our best to make it one. It’s only 24 hours, and surely we can all manage to be kind to each other for that long. What’s that sound? Oh Hark the Herald Angels sing. If you listen closely enough. Merry Christmas everyone and may 2022 be a year when we come to terms with all the difficulties we have suffered for the last two years, and move forwards to make the future a happy and healthy one. May your God go with you.

A while back we talked about how during the pandemic many people used the increased time at home to pick up a new hobby or learn a new skill, and one of the things that soared in popularity is baking. From friends, to neighbours, and even the long lost aunty whom you’ve not spoken to in years - it seemed like everyone was eager to hop on the bread-baking bandwagon. Some even realise that they had a knack for baking and turned their newly-found passion into a home business. I mean, who can resist a rich, fudgy chocolate brownie? These enthusiastic new bakers started to clear the baking aisles of grocery stores and bakery shops, to the point where basic ingredients such as flour, butter and sugar were in short supply. But where did this craze come from?

While many people started baking during the pandemic, the trend for home baking goes back much further. One reason for this is the desire for healthier food - if you bake your own bread, you have complete control of what goes into it. The plethora of baking and cooking shows on TV and cooking channels on social media have made it so that everyone can learn to bake from home. Take the wildly popular reality baking show, The Great British Bake Off, for example. It’s been on the air since 2010 and is credited with driving interest in home baking in the UK, with local supermarkets and departmental stores reporting sharp rises in sales of baking tools and ingredients. Even shows like Cake Boss, Zumbo’s Just Desserts, and to a certain extent, MasterChef, became “after dinner must-watch” in so many households. This steady stream of new baking programmes, magazines, blogs, and social media content on Pinterest, Instagram, Facebook, and YouTube have only bolstered people’s passion in home baking. How many eggs are there in a baker’s dozen? If your answer is 12 (it’s not), then maybe you might want to heed our advice: Ready your whisk and grab a bowl, and beat those egg whites to stiff peaks. aunched in September 2021 was Nice Bakes; a home based bakery business in Kota Kinabalu. It was founded by SM Cheong and her two daughters Krys and Sam. Initially the daughters thought their mom’s pastries and cakes were just so good that they deserved to be tasted and appreciated by others. Thus Nice Bakes was born. Nice Bakes’ pastries and cakes eventually really got appreciated by more and more customers as time passed by. Among their hot selling items are Signature Pineapple Rolls (both the pastry and jam made from scratch) and vegan Potato Crackers. Their orders has currently went as far as Sandakan and Tawau. gypt is very iconic for its rich history and fascinating architecture. But the tasty and vibrant cuisine originating from the land of the pharaohs is beginning to bloom here in Kota Kinabalu. My knowledge of Middle Eastern food is limited to hummus and kebabs so I was really excited to be visiting 10 n Go. Initially designed to be an RM10 fast food restaurant concept, 10 n Go serves full Egyptian meals. We were greeted warmly by the Owner of the restaurant, AHMED YOUSRY, and His Wife Shaymaa the chef and even himself are Egyptian so you can bet on having a full authentic Egyptian meal experience here. We were served with huge spreads of aromatic, and might I add beautifully plated, dishes. Starting with their huge Platter for 3 which includes 3 types of rice, 3 beef kebabs, 3 chicken kebabs, 3 chicken shawarma, 2 lamb shawarma, salad and their Egyptian salsa. The rice itself was already flavorful and all the meats were perfectly seasoned. Their salsa is super refreshing and pairs perfectly with any selections of meat from the dish. This dish would feed a group of 3 to 4 easily. Another gigantic platter that they offer is the Family Set C which combines the selection of mandi and bukhari rice together with 2 fall of the bone lamb shanks, 2 braised lamb shoulders, 2 lamb shawarma, salad and not to forget their Egyptian salsa yet 40

again. You only need minimal effort in chewing the lamb as it was extremely tender being cooked for hours with care in their kitchen. They also have selections of smaller portioned dishes if you want to dine by yourself. Might I suggest the Messakaa which is an eggplant-based dish which also includes ground meat in their sauce. The Messakaa from 10 n Go has the consistency of stew and it is cooked in the claypot. Another new addition to their

claypot menu is the Salonat which is a classic Middle Eastern stew that is intentionally brothy. This dish was made with beef, chili peppers, and assortments of vegetables and reminded me a lot of the western beef stew but with a bit more extra spices. Let the hot rice soak up all the broth, eat it while it’s hot and this easily became one of my favorite dishes here at 10 n Go. We were lucky to have sampled Ahmed’s newest creation, the Falafel Pizza. I have never had falafel before so I could not compare, and hearing about falafel; which is a deep-fried ball fritter made from either ground chickpeas or broad beans, this was an interesting combination. I was surprised by how good the pizza was. Once again perfectly seasoned but I would suggest having it while it is fresh out of the oven for full experience. If you are feeling adventurous, dip it in the salsa and the taste will be elevated even more. Now it won’t be quite Middle Eastern without kebabs or shawarma now would it? We were presented with 2 types of different shawarma; Lamb Shawarma and Chicken Shawarma. I myself am a huge fan of lamb and anything that resembles wraps because it is convenient and easy to eat especially when on the go. But it is not easy to get a good shawarma here in KK so I was quite happy to bite into this meat-filled wrap. The lamb was once again incredibly tender, juicy and I am glad that the wrap was not drenched in mayo! It was delicious. Another dish from 10 n Go that is perfect not only as a snack but also a full meal, is the traditional Egyptian dish Hawawshi. Pita bread stuffed with minced beef and spices served with a side of
their homemade garlic sauce. The garlic sauce tasted mild and it did not overpower the original taste of the Hawawshi at all and plus point, this sauce pairs great with their shawarma too. I was really excited to see the coffee pot that they use to make Egyptian or Turkish coffee. I am not a fan of coffee but you guys can definitely order it at 10 n Go. Do opt for their refreshing signature Egyptian Mint Tea. Cooling, refreshing, mildly sweet. The perfect ending to a huge, flavorful and hearty meal. If you are more into fizzy non-alcoholic malt beverages, 10 n Go also serves 8 different flavors of Barbican. Newly opened in March this year, the restaurant is beginning to gain popularity for their authentic Middle Eastern cuisine and friendly staff. It is also a perfect place to just hang out and enjoy a shisha or two.
