ota Kinabalu, 23 November 2023 - Meat and Livestock Australia (MLA) and Trade Investment Queensland (TIQ) presented ‘Food Trends and A Taste of Queensland’ by Aussie Beef Mates, Adrian Chong, Head Chef of Hyatt Regency Kinabalu. Through this event at The Residence, Hyatt Regency Kinabalu, Chef Adrian Chong shared his culinary journey of experience from his recent visit to Queensland introducing fresh food trends with quality Queensland beef. This initiative aims to foster and develop a community of passionate chefs utilising and developing signature beef dishes with quality Queensland beef so that locals and visitors can enjoy these amazing creations - only in Sabah. It has a two-prong approach, firstly to educate the Sabah consumers on the quality of Queensland beef product through the Thanksgiving and Christmas promotion in Hyatt Regency Kinabalu. In these promotions, Chef Adrian Chong crafted unique beef recipes allowing customers to enjoy great tasting high-quality beef with exceptional nutritional value and distinctive flavour. Particularly for the Christmas promotion which started on 1st December, 2023, the highlights were the Wagyu beef butt which was introduced into the Sabah market for the first time. Low temperature roast Wagyu brisket beef and the famous signature oxtail recipe. It’s a 40kg beef leg and has amazing flavours! Secondly, under the Aussie Meat Academy program, there will be an opportunity for an Aussie Meat Academy Masterclass for accomplished Sabah chefs to explore the culinary possibilities of Queensland’s premium-grade beef. Embracing the Spirit of Ukrainian Christmas : TIME-HONORED TRADITIONS
December marks a joyous season worldwide, characterized by diverse customs and traditions. However, for the second consecutive year, Ukrainians find themselves navigating a challenging holiday period due to an ongoing full-scale Russian invasion, persistent shelling, and blackouts. As 2024 approaches, many Ukrainians will welcome the new year on the frontlines, while millions will do so in internally displaced status or as refugees. There are several Christian Churches in Ukraine. Some of them celebrate Christmas on December 25 (Julian calendar) and some of them on January 7 (Gregorian calendar). Central to Ukrainian Christmas celebrations is the Svyata Vecheria, or Holy Supper, held on Christmas Eve. Families gather around a table adorned with the traditional embroidered “rushnyk.” The dinner, comprising twelve lean meals representing the disciples, features the main dish kutia (boiled wheat/rice mixed with poppy seeds, honey, walnuts, raisins), borsch (beet soup), and various varenyky (Ukrainian dumplings). A customary gesture involves bringing dinner to godparents after the feast.

Carolers are often rewarded with sweets, fruits, or small gifts, with the belief that more carolers bring the more prosperity to the family in the upcoming year. A notable fact is that the popular Christmas carol “Carol of the Bells” originated from the traditional Ukrainian song “Shchedryk”, composed by Mykola Leontovych in 1914. Ukrainian National Chorus introduced the song in the USA in 1921, and later, Peter J. Wilhousky, an American composer of Ukrainian descent, rearranged the melody for orchestra and wrote the English lyrics, creating the well-known “Carol of the Bells”. The “didukh,” a symbolic representation of the harvest and connection to ancestral traditions, holds a significant role in Ukrainian Christmas celebrations. This sheaf of wheat or other grains, adorned with ribbons and symbols, is placed in the center of the home to invoke prosperity and good fortune for the coming year. SABAH MAJU JAYA ROADMAP SMJ DEVELOPMENT PLAN 1.0: 2021-2025
On the 29th of March 2021, YAB Datuk Seri Panglima Haji Hajiji Haji Noor, Chief Minister of Sabah, officially launched Sabah Maju Jaya Roadmap (SMJ Development Plan 1.0: 2021-2025) as a comprehensive economic recovery plan in response to the adverse impacts endured by the state of Sabah during the global COVID-19 pandemic from 2019 to 2022.
In addition to the 490 initiatives, the SMJ Roadmap also emphasise on current focus initiatives identified by the state government as having a significant impact on all thrusts of SMJ. These initiatives complement the flagship endeavors spearheaded by the implementing bodies, namely the ministries, departments, and agencies of the state government.
The Sabah Maju Jaya (SMJ) Development Plan has outlined three (3) main thrusts to develop the state from for the first term of its implementation; 2021 to 2025. The three (3) thrusts were based on the S-M-J where “S” refers to the three (3) main economic sectors covering agriculture, industry and tourism; the letter “M” refers to human capital and the well-being of the people; while the letter “J” refers to infrastructural network and green sustainability.
The five (5) implementation objectives of the SMJ Development Plan have also been outlined; to build a united, peaceful and prosperous state and society; to optimize state resources and revenue; stimulate economic recovery; improve the people’s economy and improve human capital.
The three (3) main SMJ thrusts will be driven by five (5) enablers; fiscal sustainability, financial facilities, effective and efficient delivery, excellence in governance with integrity, and digital government. ORDIN.J: THE TWO-MAN BAND What really pushed them into becoming a band this year was their exposure to music from their parents since their younger days, with the likes of Earth, Wind & Fire and Michael Jackson. Inspired by big musical icon such as Blink 182, Twenty-One Pilots, and Michael Jackson, this is where Ordin.J comes in. The way Jordan and Rafi develop their music can be mysterious even to them. Because most of the time they will be busy with their other responsibilities, they don’t have the privilege of fully concentrating on writing a song. They indulge in the development of their music after their working hours. Ideas can pop up randomly and sometimes unexpectedly. Sometimes, all it takes to get the idea to pop out is to take a walk outside with a clear mind and let the inspiration flow in. Their music is available to listen to on all the major digital streaming platforms, which are Apple Music, Spotify, and especially Youtube. Look forward to their upcoming EP next year!

n the melodic realm of Ordin.J, they stand out as a dynamic two-man force based in Kota Kinabalu, Sabah. The duo consists of Jordan as the vocalist and Rafi as the drummer. Their band name, Ordin.J, stands for Ordinary Joe, which means that they are just ordinary human beings. To add to that, Joe is also a hint of how we in Sabah call our friends Joe in our everyday lives. While Ordin.J doesn’t label themselves with any genres, they identify their music as pop and alternative, just like their songs “Kau Selalu” and “Dalam Memori”. These songs, along with others, express grief about their life experiences where they both lost their mothers in the same year of 2022. They wanted to express what they felt, and they wanted the listeners to appreciate their loved ones more while they were still with them. Because of this, their main target audience is teenagers, especially those who are still on the journey to find their true selves. While Jordan started making music early in the year 2009 with his old band Exartmusichicate, Rafi started a bit later as a drummer in the year 2012 with his old band called Riot In Asia. It was this year when they started converging and became more active in the music industry, with the two of them helping out each other in producing the lyrics and finishing out the music. 18

otorola recently introduced their newest concept smartphone to the world. As of writing this, they haven’t mentioned what it’s called, let alone when it’ll be released to the world. However, the prototype certainly has an interesting concept compared to other smartphones. You may ask what the big deal is since foldables have been around a few years now. Let’s talk about it. For simplicity’s sake, I’ll just call this the Moto E-Bend (MEB) for the time being. What sets the MEB apart from other phones, especially foldables, is it can bend or “mould” to a certain shape. In this case, Motorola has designed a phone to not only be your tech accessory but a fashion piece as well. MEB specifically, was showcased to be able to transform into a wrist accessory, maybe becoming a bracelet or watch. Motorola made it possible to still use the MEB while on your wrist, just like how you would normally use your phone. However, another feature Motorola has developed for the MEB is the implementation of Artificial Intelligence (AI) in the software. Alongside the fashion focus, users can take a picture of their outfits and the MEB will be able to generate special matching patterns to suit your fashion style. Now, as cool as the MEB seems, I do have a few things on my mind about the design. I initially wasn’t too enthused. It is pretty fascinating how Motorola managed to develop the whole back 20
panel, along with components that can bend. The focus has always been about flexible screens, but we haven’t really thought about the whole phone being flexible. However, the MEB is just a concept for the time being, so it won’t come out anytime soon. They also need to flesh out all the issues before releasing, so that reviewers, users, and the general public don’t trash it earlier on. Plus, if the main selling point is just the bending and AI implementation, I don’t see many people will be willing to buy this. Now, if the MEB comes with good cameras or the latest chipset, it’ll be a different story altogether. All in all, the MEB is a very interesting device, especially how it’s constructed. With Motorola’s focus to make it a fashion accessory, it’ll be somewhat of a breath of fresh air in the tech and smartphone industry. The last I’ve heard of a fashion centric phone was in the old Nokia, Sony Ericsson, and LG days.

Cult 2023, a collaborative effort supported by the Sabah Tourism Board and Tourism Malaysia, marked a significant milestone in the region’s automotive, motorsport, and tourism industries. The event kicked off with grandeur as YB Datuk Joniston Bangkuai, Sabah Minister of Tourism, Culture & Environment and Chairman of Sabah Tourism Board, inaugurated Cult 2023. The spectacle featured two Monster Trucks, notably the Mitsubishi Triton Extreminator from Johor and the Hilux Black Monster from Tawau, with the latter claiming the coveted title of King of CULT 2023. PUNGITON CAVE When you climb up to the dry surface, the cave starts to get more interesting. You’ll see many natural sculptures created by water, which must have taken thousands of years to form. A BIG NO-NO is touching the rock formations, especially stalagmites and stalactites. Most of them are still growing at a rate of 0.13 mm (0.0051 inches) a year. They would turn dark and stop growing if contaminated by acidic oil from our fingers. Watch your steps too. One foot of stalagmite would need over 2,000 years to grow, but we can destroy it in a split second. Stalagmites and stalactites are the most well-known cave features. They are icicle-shaped deposits that form when water dissolves limestone, and drips through cave roofs and onto the floors. When the upward-growing stalagmites meet and connect with the downward-growing stalactites in the middle, they eventually fuse and form a column, and some columns look like carved pillars. Pungiton means bat in Murut language, thus Pungiton Cave was named because it is a home to a lot of bats. These bats are said to be larger than normal and the locals eat them. Swiftlets also live here. Their edible nest is an expensive delicacy. You can also see some leggy cave centipedes, glow worms, crickets, and Huntsman spiders in the cave. Be sure to have a powerful torch when exploring Pungiton Cave to improve your caving experience and allow you to take better photos.

ungiton Cave is a pristine and marvelous cave to explore. The caving experience there is 100% nature and you can check out various interesting rock formations closely. The cave is located at Sapulut, a small district of Sabah interior, which is 217 km away from Kota Kinabalu City. Sapulut is accessible by highway between Keningau and Tawau. Pungiton Cave is a multi-levelled limestone cave. Hiring a guide is a must so you won’t lose your way in the cave. Exploration of the cave starts from the wet part of the cave on the lower level before moving up to the dry part of the cave. At the cave entrance, you can hear the running water below. It’s a 20-meter descent via a narrow hole. Once below, you’ll discover a winding cave tunnel with a running stream. You will notice whitish walls of limestone upon walking along the stream. The stream contains water that is quite clear and shallow.

N
estled in the tight streets of Ewan Lane in Kota Kinabalu, sits the majestic Hyatt Centric hotel. A beautiful tower modelled after the lush trees in the Sabahan rainforests. Inside, you’ll find more inspirations taken from the beauty that Sabah has on offer. From the textured walls mimicking the granite of Mt. Kinabalu, to the bright and warm lobby welcoming guests from all over, such a magnificent hotel surely needs a dedicated and in sync team to run it like a well-oiled machine. Well, it’s in this very lobby that we meet the leader of said team, one Ruben Schrijver. The admirable Dutch General Manager of Hyatt Centric Kota Kinabalu was on his way to get his daily cup of coffee. As he walked through the lobby, he was in deep thought of what needed to be done that day. As the GM, he sees his job as a supporting role to his team, especially the managers. Day in and day out, Ruben would receive all sorts of comments from guests, and it’s his job to provide direction for his team to run the hotel the best possible way. In no way is this an easy job, as Ruben needs to balance between keeping the guests and his team happy, all the while also considering the best financial outcomes for the hotel. “Good morning, sir! The usual?” Greeted Nor Shafirah, a bright and cheerful waitress at the Lobby Lounge. “Ahh, yes! Thanks!” answered Ruben as he snapped out of his deep thoughts. Shafirah on the other hand concentrated on her craft. The Tuaran-born waitress has been part of the Centric team for a year and a half now. As part of her responsibilities, Shafirah’s main focus is serving coffee and desserts to guests. However, she also does 26
cashiering and assisting hotel guests in the lobby. Plus, being a barista in the Lobby Lounge is part of the responsibilities that come with the work. Recently, Shafirah also has won “Gold for Barista Challenge” at the 23rd Hospitality Fiesta. Just as she was putting the finishing touches on the latte art, Ruben then asked, “How difficult is that to do?” Surprised, Shafirah answered with a smile, “Well, for me, it isn’t that hard, honestly. But beginners might find it a bit challenging at first. Would you like to try, sir?” as she hands the coffee to Ruben. Upon taking his first sip of the day, Ruben looked around, checking his surroundings for hotel guests. Since it’s a downtime, Ruben figured why not. As Shafirah was teaching Ruben some basics, she couldn’t pass on the opportunity to ask “You’re from The Netherlands, correct sir? I’ve always been curious about what you think about Sabah.” Ruben proudly answers, “Yup, I’ve been in KK since 2021, even before this hotel was officially opened. And since then, I’ve been fond of the food and people, but I simply love the hotel’s backdrop, with Mount K. and the hills on one side, while the beautiful sea shimmers on the other.” Ruben loves his time here in Kota Kinabalu managing Hyatt Centric. He’s had a fantastic experience, to be able to hire so many great and talented people and see them grow each month, it’s certainly a fond experience for him. “Wow, I never would’ve guessed you to be a talented barista!” said a familiar voice approaching the counter. Shafirah looked up, they saw the ever energetic Chiara with a big smile on her face. She is the Marketing Communications Coordinator of Hyatt Centric Kota Kinabalu. Chiara is always looking for inspiration in and around the hotel, to craft its brand narratives with both the online and offline world. For her, it’s truly important that the narratives resonate with people and make them feel good about engaging with the hotel. “Hey Chiara!” greeted Ruben, “We were just talking about my time in KK.” “ Yeah, Mr. Ruben told me how he was here even before Centric was opened, “ added Shafirah. Hearing this, Chiara had a sudden flashback to the opening, reminiscing on the unique pre-opening stages, having checked “being part of a pre-opening team” off her professional bucket list. You see, Chiara is very familiar with the Hyatt brand, having interned at Hyatt Regency twice. Joining Hyatt Centric in August 2022, she’s always felt she’s supposed to be here, being naturally drawn to the brand from the start. And being that this is her first full time job, Chiara has certainly grown alongside the hotel. “Here you go!” says Shafirah as she hands Chiara a cup of coffee. Chiara snaps back to reality saying, “Oh my, just what I needed, thanks so much!” “See. This type of hospitality is what our guests love about our hotel. I’ve received a lot of positive comments from guests about our team, and it makes me proud as the GM to hear each and everyone doing their best. It’s you guys who give the hotel such wonderful, authentic energy, and it makes my day everyday!” remarked Ruben. “Anyway, thank you for the lesson and this great cup of coffee” as he tips his cup to Shafirah and waves at Chiara.
“See ya!” “You’re welcome.” answer Chiara and Shafirah in unison as Ruben made his way to the elevator. “Hey Chiara, I’ve heard you’ve been taking beginners’ barista classes. How did it go?” asked Shafirah. “Yeah, it went great! It’s one of the refreshing things I try out during my free time. Last time I took textured sand art and painting workshops too. When I’m not too occupied with work, I just chill at home watching Netflix and spend my time with family, or I would go out for coffee, try out new restaurants, or simply be outdoors.” replied Chiara.
“I get you. I usually do some cooking
for me and the people around me. I really appreciate seeing them eating and enjoying the food I make.” explained Shafirah. “That’s so nice. Oh my, speaking of time, I need to get going. Thanks again for the coffee!” said Chiara as she put her mug down. “See you soon Chiara!” replied Shafirah.

From the ground floor of the lobby, we make our way up to Hyatt Centric’s ON23. Sitting and chatting with the beautiful view of the sea are Mario, Ren’s, and Rizal. “That was a great discussion, wasn’t it?” said Mario. As the HR Manager, Mario’s duty is to handle the day to day human resource department issues. His duties include developing and implementing HR strategies and initiatives aligned with the overall Hyatt philosophy, employee retention & talent development, and developing recruitment strategies. Mario also bridges management and employee relations by addressing demands, grievances, and other issues. “I just love this view, it’s one of the many things I love about Sabah”, continued Mario. “Being in KK since April last year has been a learning experience for me,” he added. You see, the smart and well-dressed Kedah-born Mario was previously from the Park Hyatt Siem Reap Cambodia. Although it’s been challenging for him, it’s always unique to learn more of Hyatt Centric branding and thinking style. “Yeah, the sea is beautiful, isn’t it?” chimed Ren’s Azzrence Badul, as he reminisces about his family and hometown in Kudat’s Pulau Banggi. The 22-year old is currently interning for Hyatt Centric. He’s looking forward to the opportunity to become a permanent member of the Hyatt Centric team soon. As of now, his current routine includes doing rounds to make sure the water metres are working and fix any air conditioning issues that might come up. It’s more or less an ad hoc situation for Ren’s. “How’s your internship going?” asked Rizal, currently wearing Hyatt Centric’s traditionally inspired uniform. “It’s going great! I’ve learned a lot from everyone here. It’s a totally different 28
experience when working on the air conditioning system here. Following strict procedures has opened a whole new perspective for me. The work and results are much cleaner. And the knowledge I’ve gained is slightly different compared to my classmates’,” said Ren’s. “That’s great to hear. You’ll make an amazing member of the team if you continue your hard work!” praised Mario as Rizal nodded in agreement. Nur Ahmad Rizal bin Sakar is a room attendant for Hyatt Centric for the last 6 months. For Rizal, ensuring the hotel’s cleanliness is crucial in guaranteeing guests have a pleasant stay. Being a quick learner, Rizal was initially assigned as a public area attendant, but later challenged himself to take on room sectioning. He quickly progressed and could independently handle room cleaning in just a few days. “I heard you got a silver medal in the recent Sabah Hospitality Fiesta, right Rizal?” asked Mario. “Yeah, joining the bed-making event was an experience I’ll never forget. I learned a lot from the fiesta as well as made a whole lot of new friends. I’m always eager to learn about the hotel business,” replied Rizal. “Anyway, what are you guys up to this weekend?” Rizal asked. “The family and I are going to conduct some literacy classes for underprivileged children,” answered Mario. “Wow, that’s nice. For me, I have a futsal match coming up. We might be a few players short. Do you wanna join us, Rizal?” Ren’s asked. “Sure! I’ve been meaning to dust off my skills for a while now,” answered Rizal as he took a final sip of his drink.
As one of the Team Leaders in the Front Office, Humaira oversees front desk operations, handles queries and complaints, and most importantly, makes sure guests are happy. Although it’s her first time in the hotel industry, her experience so far has been excellent. She gets to know what it takes to keep the hotel running smoothly. “Do you remember the Ewan Lane Festival in 2022?” asked McJovier while tidying up his pink uniform. “Of course! I was amazed that a hotel was organising a festival. It was definitely a first for me at the time. I even got to catch ISOBAHTOS live while I was on duty!” replied Humaira excitedly. McJovier and Kenneth simply chuckled at the sight of Humaira’s smile on her face. McJovier is a Host under the Front Office department, he mainly handles the guests in terms of greeting them, assisting in check-ins, and demonstrating hotel facts. Apart from that, McJovier is also responsible for answering guest inquiries, plus handling and processing payments. He ensures he gives his best service for the guest and is particularly proud when he gets positive feedback from said guests. McJovier certainly feels appreciated when guests offer gifts as a thank you for the service he’s provided.

As the breeze blew softly on ON23’s balcony, we see Kenneth, Humaira, and McJovier enjoying the view during their lunch break. The three stare intently at the sea, as if in search of something. “You know what, I love working here,” started Humaira as she glanced at her watch.
“Working here is just fun, especially
with the supportive people around us. I thought I’d need to get rid of my piercings, but I was surprised our team members have been praising it,” she added.
“Yeah, Humaira’s right. Being part of the pre-opening team and the Ewan Lane Festival last year was awesome,” said Kenneth. Even when he crosses his arms, you can see the beautiful tattoo adorning Kenneth’s right arm. He really does look the part as the calm and collected Bar Manager. Everyday, Kenneth looks after his team’s wellbeing, ensuring they’re happy and are able to work properly. His priorities for a smooth and successful running bar includes bar cleanliness and maintenance, ingredient freshness, consistency with the beverages, and most importantly, good PR with guests. “So how is your team doing, Kenneth?” asked Humaira. “They’re doing great and I’m super proud of them. Without them, I don’t think ON23 would be what it is today. Plus, I’m also thankful for the support given to us by the management,” answered Kenneth calmly. “Anyway, I’m really looking forward to the weekend, can’t wait to spend some quality time with my family, maybe even try some new dishes to cook,” he added. “Nice, I hope you have a good weekend,” said McJovier. Just as their conversation ended, Rizal walks out and noticed them, “Hey, that’s a nice view you guys have behind you!” he exclaimed. “You’re right! Would you mind helping us take a photo?” asked Humaira as she reached for her phone. Rizal agreed and the trio posed for the camera. After a few shots, Kenneth suggested “I know another spot downstairs that’ll be great for a group photo. Why don’t you join us, Rizal? I’ll go grab my tripod so you can be in the picture too.” As Rizal nodded excitedly, they all made their way downstairs.

Dhivakar has been working with Centric for the past 13 months. His experience with the hotel took him to another level of new adventures and really enjoying his work.. Goh Chen Yee or knowingly as CY on the other hand, knew he should’ve gone hunting for Pokemon around the area. You see, CY plays Pokemon Go during his free time. He is also the Director of Finance for the hotel, the Gatekeeper of Hotel Funds and Bookkeeper of Hotel Data, if you will. Although he’s Sabahan, this is his first ever job in Sabah. The Penampangborn CY had been working away for almost 20 years, so he felt wonderful for the chance to be back in Sabah and working for Hyatt Centric. But it’s times like this that he is extra thankful, as Centric has allowed him the freedom to express his ideas and think outside of the box. “You guys gave me a great idea for my time with the kids this weekend,” said Ruben as he broke the sudden pause from all the laughter. “But I have to test this out and see how fun it really is,” he added with a grin on his face. He put his arm around CY and gestured to him to sit down. Ruben then waved at Dhivakar and Audrey, inviting them to help him push.

DING! As the elevator doors slid open, Ruben put his phone back into his pocket and took his first step into the corridor. But before he could think of going straight to his office, he heard some laughter followed by what seemed to be bowling balls rolling down the lane. Curious, he went and investigated what all the commotion was about and made his way to the pantry. The closer he got, the louder the laughter became. Suddenly, whoosh! Dhivakar was zooming past Ruben on an office chair being pushed by Audrey and Goh Chen Yee! ‘What in the world is going on?’ thought Ruben. As soon as the trio reached the end of the corridor, they turned around and noticed Ruben standing there confused. The corridor went silent for a moment, with only the squeak of the office chair being heard as Dhivakar desperately tried to stand up. As Dhivakar stepped forward, he said “Sorry boss, we were just blowing off some steam.” With a stern face, Ruben said, “Come on Dhivakar, you’re an Assistant Manager. You should know better. I mean, you know I’d want to join in on the fun!” said Ruben as he let out a laugh of his own. As soon as they heard this, the trio let out a big sigh of relief and started laughing as well. The Indian-born Assistant Manager was relieved. His life almost came flashing by as he thought, ‘If I was fired, who’s gonna do my job? Who’ll manage the restaurants? Who’ll do the daily training of the team members? The lunch and dinner guests will be overlooked! Thank God boss is cool with this.’ 30
After all was said and done, the group took turns sitting down and pushing each other a few more rounds before Audrey excused himself, saying “Sorry guys, duty calls. I need to prepare the ingredients for some dishes and have some things to set up in the kitchen, as well as getting things cleaned up too.” Audrey Ambrose is the 27-year old Chef De Partie (CDP). He’s been with Centric for almost a year now. Although it’s been a challenge, working for Centric was truly a dream come true for Audrey. “Well, I think all of us have our own tasks for the day, don’t you guys agree?” asked Ruben. “It’s been fun, but let’s all get back to work,” he added. Nodding in agreement, everyone said their goodbyes and went to their respective workstations. As the sun slowly sets into the sea, its bright yellow rays shine upon the tall and magnificent Hyatt Centric hotel. PROJECT CARLSBOT: REVOLUTIONIZING GLASS RECYCLING IN SABAH
G
lass, despite being a recyclable material, faces a recycling crisis in Sabah, Malaysia. The lack of commercial viability and demand has led to the exclusion of glass from many waste management initiatives. However, a groundbreaking solution emerged through the collaborative efforts of Carlsberg, the Sabah Recycling Association (RIPPLE), and various social enterprises. The initiative gained momentum when Carlsberg, through its corporate membership in Climate Governance Malaysia, joined forces with RIPPLE. In 2018, Siung Films and PACOS Trust introduced the concept of glass recycling and upcycling in Sabah. Hyatt Regency Kota Kinabalu sponsored a glass crushing machine from New Zealand, marking a turning point in glass recycling in Sabah. The primary objectives of Project CarlsBot are aligned with Carlsberg’s ESG program, “Together towards ZERO & Beyond,” focusing on leadership in the area of ZERO Packaging Waste. By pioneering glass recycling in East Malaysia, Carlsberg and RIPPLE aim to address the community’s environmental concerns and create social impact through waste reduction, community capacity building, and empowerment. The first phase of the pilot glass recycling project commenced on December 1, 2022, at Tanjung Aru Marine Ecosystem Center (TAME). Subsequent phases, including at Balairaya Madsiang, Penampang, and Shangri-La Rasa Ria, Tuaran, have been launched. Memorandum of Understanding (MoU) signings at these sites in November 2023 solidified collaborations with local authorities and organisations.

Madsiang Site, in collaboration with Penampang District Council, focuses on catering to glass waste from the surrounding community. Similarly, Shangri-La Rasa Ria Site collaborates with the hotel to manage glass waste from the hotel and the public in Tuaran. The impact of Project CarlsBot since December 2022 has been substantial. Approximately 1,468 people have been introduced to the project through volunteering programs, education tours, and workshops. Furthermore, 18.6 tonnes of glass have been diverted from landfills, making a positive contribution to environmental conservation. RIPPLE, the driving force behind the project, is an NGO committed to upcycling waste, particularly glass, to create income for rural communities. The organization emphasizes education to modify behavioural patterns, believing that small actions can lead to significant changes. Additionally, RIPPLE’s focus extends beyond handicrafts, as crushed glass will be repurposed for industrial uses like water filtration and road construction, addressing environmental erosion issues caused by sand dredging. In summary, Project CarlsBot stands as a beacon of change in Sabah, tackling the glass recycling crisis with innovation, collaboration, and a commitment to environmental and social responsibility. HO HO HOLD ON! WHAT’S CHRISTMAS ABOUT AGAIN?
I
love the holidays for real, so much so that I celebrate all the major holidays in Malaysia, especially when my kids were growing up and with my students at school. Yup, all four celebrated with making decorations, wearing the right colours, listening to the stories of the legends and history and learning the meaning of the symbolism. That, in essence, is what I love about the holidays. Christmas is a celebration of epic proportion. It always carried the “go big or go home” feel to it. You can most definitely find great Christmas decorations around town, heck! you could even make your own. Then there is the Christmas tree…again, it’s so easy to lose yourself in a sea of baubles and tinsel. But the price you pay is…the price. Expensive. Food can make or break the holidays too. From the cookies to the fruit cake and homemade feasts and restaurant special meals. Regardless of whether you cook, cater or eat out…all this can cost you an arm and a leg and perhaps your wallet on a pretty platter. Lastly, presents or Christmas cash for every kid in your family can suck you dry. And it gets no easier when you are buying for your loved ones limited edition gift sets and everything on their Christmas list. Even little things add up when you have to buy large quantities and even less gifts means you gotta spend more on each item. Did you even get a Christmas bonus? Cause it disappeared faster than you can spell consumerism. 40
What Christmas should be is a time to celebrate family and friends by giving thanks, remembering the good times and hopefully making new memories for the future. It should be about thoughtful gift giving and not using the materialistic approach. Remember that generosity can bring you joy unlike no other. Don’t neglect those old family traditions and if you didn’t have any, now’s the perfect time to start some. For example, I have a friend who’s family makes it a challenge to find the best gifts under RM30 and another who introduces a new Christmas ornament for their tree with some significance with the year they had. Finally, this is the perfect time to do a little reflection and make being present the key to celebrating this joyous occasion with a sense of gratitude and mindfulness. Spread butter onto a flat pan. Place the paratha on the pan, add tomato sauce ontop and spread the sauce evenly. After that, layered with mozarella cheese then sliced sausages with cheddar cheese last. At a preheated oven of 170C, put the paratha pizza in and bake for 10-15 minutes. Once done, the pizza can be taken out, cut and ready to enjoy every piece of it.

ur Kedai Kupi of the month takes relaxing to a different level. Caturday Studio is a cat studio located at the Lintas Jaya Uptownship, just behind the E-Mart building. The cosy space not only allows for comfy dining, but you could also hang out with 19 cute little furry friends in the cat petting area. From Nyang Nyang the DSH Bengal “Supervisor”, to Haneul the Mix Persian “Partimer”, you’re bound to find a favourite soon enough. Apart from the cat studio, Caturday runs on the concept of fast food, being that your food will be served in takeaway containers. However, don’t let this simple serving method fool you, as the food they serve will leave you wanting more. Their Tomato Chicken Spaghetti is savoury in all the right places while the Creamy Beef Spaghetti lives up to its name. The Korean Popcorn Chicken also dance well in the mouth, be it topped with Cajun or Sweet Chilli sauce. Lastly, Caturday Studio’s serving or drinks include “Catpucinno” cappuccino, Peach Green Sencha, and my personal favourite, Ribena Lychee Soda.

HEARTH: AN OPEN FIRE DINING EXPERIENCE

rue to its name, Hearth brings a fresh culinary perspective in the KK dining scene by making the open fire concept the centre of its dining experience. Located in one of the city’s popular food hubs, Sutera Avenue, Hearth aims to tickle the taste buds of KK foodies and grill enthusiasts. The Breeze team recently got acquainted with Emerson Teoh, the 25 year old behind Hearth with a love for the culinary arts since he was 16. He pursued a formal education in the field at the prestigious Le Cordon Bleu (LCB) Malaysia in Sunway, continued to gain experience at our very own Hyatt Regency Kinabalu before resuming his education in Restaurant Management at the Sydney LCB campus. While in Sydney, Emerson had the opportunity to hone his craft at Park Hyatt Sydney and Sydney Harbour Marriott Hotel during his 4 to 5 years in the bustling city. As the saying goes, there’s no place like home. Emerson had a dream to open his very own restaurant in his home town. When asked why he chose KK, “KK has big potential to grow its dining scene and I hope Hearth can contribute to that by adding variety to what’s already available here. I hope Hearth will be recognized as one of the go-to dining places amongst customers and the hospitality industry,” answered Emerson with a gleam in his eyes.
When asked why he decided on an open fire dining experience, Emerson revealed his passion and appreciation for the grill and his life-long fascination with cooking over open fire and the taste of good food. This technique of cooking offers a unique flavour profile that is hard to replicate with conventional cooking methods, giving that distinct edge especially for those who enjoy barbecue and smoked gastronomical experience.
The interior of the restaurant was built to resonate with the feeling of hearth – an earthy, woodsy touch – with an open kitchen and a modern yet grounded atmosphere on the ground floor and a more private mezzanine suitable for more intimate events and get togethers.
What piqued my interest during the interview was the flavour meets sustainability approach. One may wonder where a business such as this sources for their wood to fuel all that firepower, right? According to Emerson, open fire dining calls for a need for a lot of wood, not just for the fireplace but also to

smoke meat and other ingredients. Hearth gets its local mix of acacia and rubber wood through its working relationship with construction companies and the village folks who supply and cut the wood to specific lengths which is then split by the in house team. The menu at Hearth is a cool fusion of western with various asian influences as well as incorporating ingredients sourced locally for a menu that embraces the elemental nature of fire and the smoky complexities of the ingredients of each dish. In creating the menu, Emerson shared that while he curated the initial menu items, he believes in empowering his staff to experiment and introduce their own creations as well. The top 3 highlighted dishes include their fire grilled Pandan Chicken served with a smoked pandan chutney, a different take on the popular Thai dish, their Duck & Pear which is duck smoked in house paired with roasted pear and served on a tuhau buerre blanc, and of course their signature charcoal grilled steaks sourced locally with their flat iron being their cut of choice. The Breeze team and I had a curated sampling of their lunch and dinner menu items as seen on these pages, inviting you to hop on over to Hearth. We had the Beef Bacon Sandwich which is beef bacon smoked in house that has a tangy-ness to it balanced by refreshing watermelon wedges, Hearth Pandan Chicken, a delectable Smoked Duck Aglio Olio, Roasted Vegetable Salad for the char lovers, Eggplant Tikka with elements that reminded me of my childhood, BBQ Beef Ribs for those who want a little sweetness in their beef dish, and Grilled Fish with okok spicy chilli sauce and rice. Fair warning to my coriander-aversed comrades, dive into the Hearth Pandan Chicken pandan chutney with caution.
