DECEMBER 2023 HILTON KOTA KINABALU EMBRACES THE FESTIVE SPIRIT Kota Kinabalu, 30 November 2023 – Hilton Kota Kinabalu ushered in the holiday season with cheer, hosting a captivating Tree Lighting Ceremony that marked the commencement of joyous festivities. The event, a testament to the spirit of togetherness, warmly welcomed esteemed guests, families, and children of all ages. The heart of the elegant Hilton Kota Kinabalu lobby was transformed into a scene of enchantment as attendees, dressed in vibrant red attire, gathered in anticipation. The ceremonious lighting of the tree illuminated the surroundings, encapsulating the essence of this joyous season. Following this mesmerizing spectacle, the celebration continued with a Christmas Carol performance by the talented members of the Seventh-Day Adventist Church, Likas. Their melodious renditions filled the air, weaving an atmosphere of festive harmony and joy. The evening culminated in a gastronomic feast at Urban Kitchen, where Hilton Kota Kinabalu’s culinary artisans crafted a sumptuous dinner buffet showcasing an array of seasonal delights.

CAHAYA IN THE CITY Kota Kinabalu, 16 December 2023 - Christmas lit up in Kota Kinabalu City with Cahaya In The City, a special two-day festival held at Shangri-La Tanjung Aru. Set against the backdrop of a Christmas market, the festival featured a diverse array of local vendors, family-friendly games, and holidaythemed workshops to enjoy in the daytime, followed by an enchanting display of live music and performances. Cahaya in the City was held in support of Cahaya Society, a pro-advocacy and community group developing alternative education programmes targeted towards illiterate children, orphans, and less affluent communities in Sandakan, Sabah. That is why Pn. Norhanida continued learning about the plants and herbs around her; undertstanding the benefits they have as an alternative to modern medicine. She aims to share these herbal knowledge to those whom are willing to learn, especially the younger generation. So as the years went by, she started growing, documenting and researching herbs. She has established a herb garden for guests and visitors to learn and experience the therapeutic wonders of local herbs. The Kibabaig Therapeutic Herbal Garden features varieties of herbs such as bandicoot berry, crepe ginger, dill, patchouli, and many others that have their own health benefits. Pn. Norhanida even encourages visitors to pluck and smell the herbs, plus implementing them into their salads that they make during their visits. She understands not everyone shares the same opinion as she does; as in herbs being altenatives or complementory medicine, but all she hopes is if all medical treatments or options fail, giving herbal treatment a try can’t hurt.

eflecting back on my interview with Pn. Norhanida Annol earlier, I found myself delving deep into the knowledge and value of nature I never thought before. And once we finished the interview, I was left in awe on many things as well. Pn. Norhanida Annol’s achievements too are very impressive, to say the least. She has honourably received the “Wanita Cemerlang” award in 2009, “Tokoh Sukarelawan Wanita Veteran” award in 2016 and her latest award was the “Ahli Setia Darjah Kinabalu” in year 2022 among many other awards.

Apart from her garden, she also produces products from herbs such as soap and tea. The herbal product industries are currently on the rise, and Pn. Norhanida sees a big potential for Sabahans to benefit from it. She also notices increase of interest among the youths on marketing herbal products, which is certainly a good sign for our community. As I wrapped up the interview with her, I can’t help but view her in admiration of her passion, knowledge and experience on our local herbs. May she continue her calling as such for we as Sabahans have nothing to lose and more to gain from her perspective on the importance and benefits of the herbs around us.

As a retired educator and volunteer for NGO movements of various organizations such as KDCA, PACOS and the current president of North Borneo Herbal Growers Sabah, her experience and knowledge on traditional herbs are fascinating. Coming from a line of Bobohizan (priestess) and village healers, Pn. Norhanida’s knowledge on local herbs stems from learning from her grandmother named Lotunjim, who was a well-versed Bobohizan in Penampang. Lotunjim wanted Pn. Norhanida to become Bobohizan as well, but Pn. Norhanida knew it wasn’t her calling. In today’s day and age, as soon as we mention “Bobohizan”, we immediately associate them with spiritualism, when in fact, they are healers as well. In the past, Bobohizans used nature from their surroundings to heal those in need, because medicinal practices were scarcely or not available. In this era however, though we are blessed with modern medicine, but many are also aware of the healing power nature has.

The SIE Secretariat is a team of individuals who worked tirelessly to orchestrate the spectacular Sabah International Expo 2023 (SIE2023). This monumental event showcased the best of Sabah to the world, bringing together international exhibitors, distinguished guests, and fostering economic growth. Among the unsung heroes who played pivotal roles in the success of SIE2023 are Marie Bernadette Maladau, Ritchie Richard, Jane Tsen, Datu Ahmad Shah Bin Datu Amir Kahar, & Amy Rachel Lai, along with Kee Chiang Kiah. MARIE BERNADETTE MALADAU Marie's journey from a junior personal assistant to the Head of the SIE2023 Secretariat is nothing short of inspiring. As the orchestrator behind the scenes, Marie navigated the complex web of stakeholders with finesse, ensuring seamless coordination and efficient task execution. Her role extended to the floor management of the event, where she exhibited resourcefulness and dedication, overcoming challenges with effective communication and teamwork. For Marie, SIE2023 was more than just an event; it was a transformative learning experience that honed her skills in time management, communication, and delegation. Her story is a testament to the power of determination, growth, and teamwork in the world of event management.

RITCHIE RICHARD Hailing from Penampang, Ritchie's journey from a fresh graduate to an integral part of the SIE Secretariat exemplifies dedication and commitment. As a crucial support to Marie, Ritchie efficiently handled diverse tasks, from exhibitor coordination to overseeing storage rooms and loading bay operations. His versatility and readiness to tackle challenges make him an invaluable asset to the SIE2023 team. Reflecting on his SIE journey, Ritchie cherishes the bonds formed with colleagues and the personal and professional growth he experienced. His story is a testament to the opportunities and growth that SIE provides to young talents in event management. JANE TSEN Jane Tsen, a Sabahan with a diverse background, brought her unique experiences and unwavering enthusiasm to the SIE2023 Secretariat. Leading "The Sabah International Business Luncheon Talk 2023," Jane showcased adaptability and commitment to ensure the success of SIE2023. Her pride in the seamless execution of the expo and the camaraderie within the team highlights the intangible aspects that make SIE memorable. Jane's journey reflects the significance of teamwork, dedication, and the personal growth that comes with being part of a transformative event like SIE.


DATU AHMAD SHAH BIN DATU AMIR KAHAR Shah, a Sabah native with a wealth of experiences, played a crucial role in the SIE2023 Secretariat, ensuring the seamless execution of the event. From welcoming VIP guests to managing logistics and security, Shah's dedication and vigilance made him a pillar of SIE2023. His reflections on SIE emphasize the power of collective action and the significance of each team member's role. Shah's commitment to the success of SIE2023 and his hope for its continued evolution showcase the lasting impact of the event on both its organizers and the community it serves. AMY RACHEL LAI Returning to her Sabahan roots after 16 years in New Zealand, Amy Rachel Lai became a cultural ambassador for SIE2023. Managing accounts and contributing to the publicity committee, Amy's dedication to preserving and promoting Sabahan identity shines through. Her commitment to SIE2023 as a cultural ambassador and her gratitude towards the organizing committee and supporters underscore the event's significance. Amy's journey exemplifies the connection between personal identity and professional commitment, making her an integral part of the SIE2023 success story. KEE CHIANG KIAH (CK) As the Manager of FSI, CK played a vital role in the success of SIE2023. Managing the entire association, CK led the Secretariat in achieving the targets set by the SIE board of directors. Facing challenges in bringing diverse parties together, CK emphasizes the importance of communication and networking in organizing an international event like SIE. His pride in successfully hosting SIE2023 reflects the dedication and hard work of the FSI and SIE teams. CK's thoughts on the significance of SIE for Sabah and Malaysia, as well as his hope for continued collaboration between the government and private sectors, showcase the lasting impact of the event. SABAH’S POTENTIALS IN BLUE ECONOMY

THE CURRENT FOCUS OF SECRETARIAT OF SABAH MAJU JAYA The state of Sabah has a lot of great potentials in venturing blue economy due to its vast sea areas. To note, Sabah's sea areas are double the size of its land areas which amounts to 154,100 square kilometers or equivalent to 15,410,000 hectares of sea areas compared to 73,620 square kilometers or equivalent to 7,362,000 hectares of land areas. However, only 24.2% or 37,300 square kilometers, equivalent to 3,730,000 hectares of sea areas are currently managed and explored, covering activities such as fishing, shipping, tourism, oil and gas activities and research. Sabah is also blessed with 66,321 square kilometers of river length that can potentially be part of an ecosystem that serves as a source and contributes to developing Blue Economy. According to the United Nations, the Blue Economy is one in which the sustainable use of ocean and coastal resources generates equitably and inclusively distributed benefits for people, protects and restores healthy ocean ecosystems, builds resilience, and contributes to the delivery of global ambitions for a sustainable future. As regulated under the United Nations Convention on the Law of the Sea 1982, Sabah has the right to explore the Exclusive Economic Zone (EEZ) estimated to be an area of 116,800 square kilometers or 11,680,000 hectares, following international standards. Realizing the great potentials of Blue Economy in Sabah, the Secretariat of Sabah Maju Jaya, led by Yang Berbahagia Datuk Haji (Datu) Rosmadi Datu Sulai, JP has presented a brief overview of this sector to the Chief Minister of Sabah on the 5th of October 2023 and subsequently, a cabinet paper was submitted to the State Cabinet meeting on the 8th of October 2023. Following that, the initiatives to go into Blue Economy sector was mentioned by the Minister of Finance in his 2024 State Budget Speech. The Chief Minister has also invited and welcomes foreign investors to invest in Blue Economy of Sabah during his visit to China early November this year.


On December 14th, the Secretariat of Sabah Maju Jaya hosted SMJ-EKOB 2023: Exploring New Treasures Through The Blue Economy Concept in Sabah themed “Beyond Limits, Unleashing Economy”. It is a conference gathering stakeholders from government, civil societies, experts and non-profit organizations to share perspectives on blue economy as a sustainable exploration of marine and coastal resources to provide livelihood and economic opportunities to communities. Yang Amat Berhormat Datuk Seri Panglima Haji Hajiji Haji Noor, the Chief Minister of Sabah, represented by Yang Berhormat Datuk Seri Panglima Sr. Haji Safar bin Untong, JP, State Secretary, said that blue economy holds a great potential in various sectors such as fisheries and aquaculture, renewable energy and blue carbon. There are also potentials for the blue economy to be developed in mineral resources, biotechnology and pharmaceuticals, shipping and transport, tourism, waste management, pollution control and marine infrastructure. This is in line with Budget 2024 that aims at economic development, creating job opportunities and raising the living standards of people in Sabah. Moreover, it is also in line with 12th Malaysia Plan that includes Blue Economy as an approach to boost Malaysia’s economy. During the SMJ-EKOB 2023 event, Secretariat of Sabah Maju Jaya has exchanged Letters of Intent with four (4) strategic partners; The Asia Foundation (Malaysia), Institute of Maritime Malaysia (MIMA), University Malaysia Sabah (UMS) and National University of Malaysia (UKM).

MEASMATA: SCORCHING THE STAGE ABLAZE a mutual interest in playing PC games and even doing sports in their free time. However, no matter how busy they are, they always make sure to reach their goal of being a band known internationally with dedication, commitment, and discipline to get through any hardships and obstacles. With their latest single, “Chapter Ov Decadence,” taken from their album Megalomaniac, the band sets a new standard for themselves for their future renditions with heavy yet melodic instrumentals and grotesque lyrics that are not for the faint of heart. While there are many things for us to look forward to in the year 2024, MEASMATA is currently in the making for their second album to be released in that year. And to add to that, plans for them to tour Japan, Singapore, and other European countries are within their sight.

rom the pressed pits of 2020, MEASMATA emerges to rock Kota Kinabalu with the brutally hellish resonance of their melodic riff. Established in 2014, MEASMATA is a deathcore metal band that consists of five members, each with their own talents to forge the band into brutality. With Kie as the vocalist, accompanied by Apik and Andrian as the guitarists, Ayung as the bassist, and Luther as the drummer, the band rocks the stage with their brutality. The original idea for their band name was taken from a survival video game called “Miasmata.” Inspired by the likes of Thy Art Is a Murder, Shrine of Malice, Shadow of Intent, The Black Dahlia Murder, Lorna Shore, and Deadsquad, MEASMATA doesn’t shy away when it comes to riffing through the musical scene in Kota Kinabalu as a metal band. The meaning of life, obliviousness, and even mythological beings—these are some of the themes in their music to complement the echoes of their blackened riffs, amalgamated waves, and death breakdown in exchange for destructive stage power, sometimes with constant melodic guitar riffing and heavy breakdown. Constantly challenging themselves to push through the limits of songwriting, they wish to prove that the North Borneo band can push through internationally and seek to gain all generations of audiences from the other side of the world. Despite the brutal impression they give off in their music, the band members are actually pretty chill in reality, each with their own life and responsibilities too. Kie is a branch manager at a restaurant; Apik is currently working at a tourism company for a cultural village; Andrian is an audio engineer and graphic designer; Ayung is currently an administrator; and Luther is doing freelancing here and there. Even though they are often occupied with their own responsibilities, each of them shares 16

BATU PUNGGUL animals. The hill used to be so high that it covered the sky until someone chopped it down and only its stump remains. Punggul means stump in Murut language hence Batu Punggul means stump-like rock. Climbing Batu Punggul can be a day trip. The starting point of the tour is at Kampung Tataluan village in Sapulut. It starts with a morning river cruise on a wooden longboat from the Tataluan jetty around 9am. The cruise takes about 10 minutes, and reaches the entrance to Batu Punggul Forest Reserve. From there, there will be a 30 minutes hike to the foothill of Batu Punggul. The climb from the foothill to the summit takes 45 minutes to an hour, with the trail being uneven and nearly vertical most of the time. Most people can reach the peak successfully without many issues. You don’t need to be a trained rock climber, but some hiking experience and upper body strength along with courage would help a lot. The biggest challenge of this climb is not the steepness, but dehydration and heat exhaustion. You are highly advised to bring a good amount of water, apply sunscreen, wear comfortable outdoor clothing, climbing gloves, and a pair of good hiking/ climbing shoes. Climbers will generally arrive at the highest point some time before noon. Batu Punggul has no official height, but it is estimated to be between 200 to 240 Metres high. From the top, you will have a beautiful panoramic view of Labang Valley, Batu Punggul forest reserve, Sungai Sansiang Virgin Forest Reserve, Sapulut River and the forested Batu Tinahas. It is accessible by highway between Keningau and Tawau. Before it’s open to tourists in 1992, Batu Punggul was a sacred hill that is only mentioned in the books of Borneo adventurers. It is the most unique and stunning pinnacle among the 218 limestone outcrops in Sabah. Batu Punggul is a legendary and sacred place to Murut people, the third largest indigenous group of Sabah. Well, Dr. Sylvia has carved another niche for herself as a figure in the world of aromatherapy and perfumery. Originating from Johor, Dr. Sylvia’s journey led her to the shores of Kota Kinabalu, where she not only practises dentistry but also passionately explores the art of scents. Educator and Advocate: With a mission to bridge the gap in understanding aromatherapy, Dr. Sylvia actively participates in talks and educational initiatives. She collaborates with local organisations, universities, and researchers to promote sustainability, environmental stewardship, and the untapped potential of Borneo’s raw materials. Dr. Sylvia’s recent endeavours has led her to Curtin University in Sarawak, where she guided their researchers to produce a scent to accompany their product with the raw materials they have. Her advocacy extends beyond borders, as she shares her insights globally, from Canada to Taiwan.

Journey to Aromatherapy: Dr. Sylvia’s aromatic journey began unexpectedly during the challenging times of the pandemic in 2020. Since dentistry can only be done in her clinic, she was faced with job loss and uncertainties. That’s when she delved into holistic treatments, immersing herself in the study of aromatherapy. Upon deep research and venturing into the rich flora of Sabah, which host agarwood, a highly sought after raw material in the scent industry. From then on, she discovered a world of scents waiting to be explored in Sabah. Driven by a passion to share this knowledge, she founded Phi Aroma, the first aromatherapy academy in Borneo. Aromatherapy and Perfumery Expertise: Certified by the UK Perfumers Association, Dr. Sylvia’s expertise extends beyond conventional aromatherapy. While aromatherapy focuses on healing, perfumery, for her, is about pleasure, creativity, and storytelling. Crafting scents is an art form, a way for her to express herself through the sense of smell. In the scent world, Dr. Sylvia specialises in oriental accords, creating compositions that are sweet, mysterious, and deeply rooted in the herbs and spices unique to Sabah. Scientific and Spiritual Harmony: Dr. Sylvia firmly believes in the harmony between the physical and spiritual aspects of scents. A certified International member of the Canadian Federation of Aromatherapists, she emphasises the complementary nature of aromatherapy and traditional

Beyond Scents: Apart from her aromatic ventures, Dr. Sylvia is a multifaceted personality. A distinguished dental surgeon, she holds various certifications and memberships in dental organisations globally. Her commitment to humanitarian causes is evident through her roles in Mercy Malaysia and her contributions to dental congresses and projects, both locally and internationally. Comparing her dental and aromatherapy careers, Dr. Sylvia noted that both are forms of healing. RUN FOR SOIL 2023

orld Soil Day (WSD), an annual event on December 5, focuses on the importance of healthy soil and advocates for sustainable soil management. In line with this initiative, Save Our Soil (SOS), based in Kota Kinabalu, is committed to raising global awareness about the essential role of soil in carbon removal and climate change mitigation. Dedicated to global food security, SOS advocates for healthy soils against centuries of human-induced pressure. Aligned with the World Soil Day 2023 theme, ‘Soil and Water, a Source of Life,’ SOS partnered with Kompleks Jabatan Kebudayaan dan Kesenian (JKKN) Sabah and Gamuda Land Bukit Bantayan to organize the impactful 2nd Edition of Run For Soil 2023, a 5KM Fun Run held on December 9, 2023. Race pack collection, including 1kg of Enriched Biochar (EBC) sponsored by Verde, a Climate Tech company specializing in Carbon Dioxide Removal Initiatives, took place at the Kompleks JKKN admin building. Biochar is crucial for soil health and carbon storage, enhancing fertility, improving water retention, and sequestering carbon for long-term environmental benefits. The 1kg EBC distributed to 505 participants encourages them to use it in their gardens or flower pots, extending the event’s impact beyond the run. “RUN FOR SOIL” transforms every step into a powerful statement, inspiring collective action for soil conservation. Emphasizing that love and understanding are key to protection,

it highlights that everyone, regardless of expertise, can make a difference by fostering awareness to safeguard the planet’s essential foundation. The Flag-Off held at Kompleks JKKN Sabah, saw 505 participants trailing a 5KM route with support from Cycle Marshals and KK Traffic Police. The event began with an energetic Zumba warm-up led by Zin Esther and the team, followed by the Flag Off initiated by Assistant Director Tuan Mohd Ishak Bin Abdul Rashid. Participants collected exclusive Run For Soil 2023 5KM Fun Run medals upon completion. Post-run, the organizing committee expressed gratitude to sponsors, including Verde, Lapa Plantations Sdn. Bhd., Sabah Credit Corporation, Green Buddy, IMAGO, Uncle Bob, and Vico Malaysia, presenting appreciation gifts. The event concluded with a Zin Esther-led cool down and a lively lucky draw, where 10 participants received exciting hampers. YOU STINK!

S

abah… the majority of the sights in Sabah are amazing. You get to see the sea, mountains, breathtaking sunsets and beautiful people. Our food tastes amazing too, such variety and such colours. This is definitely a great state, a great place to visit and an excellent tourist spot. Unfortunately, I am here to talk about the foul stench that is available in our great state too. Majority of which are avoidable if our people would care more or perhaps, made more of a fuss with our local authorities? I mean seriously, do you all NOT smell it? Let’s start with something totally avoidable. Public toilets. They smell, sometimes it looks clean but it still smells…why? It’s usually wet too and did I mention, it smells? Sometimes, they are dry but they smell. They have people who sit outside the toilets and clean periodically but they usually still smell. We’ve had clean toilet campaigns to see who has the cleanest loo and they are kept clean for that period I’m sure. Does it stay clean, I doubt it. Do they even teach the cleaners how to use cleaning agents and equipment properly? Some blame goes to the users too, not flushing or dripping. Quite pathetic and… totally preventable. There are aromatics we can associate with nature. The scent of rain, fragrant flowers and freshly cut grass are just some of the pleasant smells bestowed upon us. Then, there are those that aren’t like a skunk’s spray, decaying roadkill and the sea. That’s right! We are blessed to be on an island, surrounded by Earth’s 36

most precious resource. The unpleasant odour comes from all the organic compounds and marine life but trust me, we make it smell worse thanks to pollution. I have been to many beach clean ups and the most shocking treasure that stuck in my mind was a computer monitor but what I saw last week near the Anjung Selera area topped it, a baby walker. Some human beings disappoint me so much. But of course, the extra nasty smells come from people disposing food, bodily waste and just the general trash from their homes, cars or outings. Did I mention how disappointed I am in some homo sapiens? Just checking. And finally, my last bit of stink is the stench of corruption! Wait… wrong topic, I’ll save that for another article. Until then, I hope the readers of this article are motivated to do better to make our shared spaces a little more pleasant and perhaps sniff check your armpits before heading out. May 2024 be a bed of roses for you with minimal thorns.

3/4 cup mung beans 10-12 durian flesh (remove the seeds) 200ml coconut milk 200gm palm sugar 1/2 teaspoon salt 2 pandan leaves

Boil the mung beans with at least 500ml of water (add more water if it dries up) till they are softened. In the meantime, boil the palm sugar with 1 pandan leaf with 200ml of water. Drain and add this mixture to the pot of mung beans. Then, add the other pandan leaf and coconut milk. Stir thoroughly over medium heat. Add the durian flesh and salt. Stir for a few more minutes and serve immediately.

omemade baked goods and a fun atmosphere is all it takes for a stellar cafe. Well, if you’re looking for just that, and more, Casey’s Cafe has got you covered. Located in ITCC Mall, Penampang, customers come for its bright & welcoming vibe and stay for the great pastries. It all started with their Korean Garlic Cheese Buns, with their menu slowly growing as they offer more pastries that have become customer favourites. Since the Korean Garlic Cheese Buns are so popular, we unfortunately didn’t have the chance to try some. We did, however, try the Custard Cream Pancake, Buttermilk Bun, and Brownies, which all tasted heavenly. Their New York Cookies are all amazing as well, with a slight crunch on the outer layer and a pillowy soft inner layer. Their Nutella Cookies are fan favourites but I definitely recommend the Red Velvet Cookie too! Casey’s Cafe also sells homemade goods by home-based vendors such as So Good Lee’s and Wannie Wan Homemade as part of their efforts to help promote the amazing food by home-based vendors from around Kota Kinabalu.

C

hef ’s Catch is the latest unique seafood gastronomical experience in the Kota Kinabalu food scene. Nestled in the bustling Plaza 333 complex, it offers a cozy and family friendly atmosphere to enjoy their signature dining experience, Shellout. Shellout is a term used to refer to a seafood spread that consists of various types of seafood including crabs, squid, prawns, mussels, clams, and more (and veggies too!) served with a myriad of sauce options. Typically, Shellouts are done in outdoor settings whether at open air stalls or eateries. 30-year old Chef Nathanael Bony (aka Chef Nat), the mastermind behind this latest food joint, brings a wealth of knowledge and experience in the culinary industry. Chef Nath was serendipitously embarked on his journey in the food and beverage industry after SPM when he helped a friend’s mother to set up Lucy’s Kitchen during its inception at 88 Marketplace and later at Sailors in Millennium Plaza. What started out with what was supposed to be a 3 months gig, ended up taking 2.5 years in the industry. With encouragement from his father, Chef Nat pursued his Bachelor in Culinary Arts and Food Service Management at Taylor’s University and continued to gain invaluable experience in the field working at a 2-Star Michelin restaurant as part of the collaboration programme in Toulouse, France. He’s worked as an outlet chef in Genting and as a sous chef for the Pavillion Group in Kuala Lumpur (KL) building his knowledge and skillset as a chef and restaurant development and operations. 44

A SHELLOUT EXPERIENCE AT CHEF’S CATCH

As part of his role teaching with the Academy of Pastry & Culinary Arts (APCA) Malaysia, an International Pastry and Culinary school based in Petaling Jaya, Chef Nat is well travelled channeling his passion in educating the next generations of chefs and developing them through training and nurturing. Before returning home to vote during the 2020 Sabah elections, he owned a café in KL, Ground Coffee KL which is still in operations today. Following the lockdowns that ensued after the elections, he decided to stay on in KK and let go of his café in KL. Soon thereafter, Bobo was born. Bobo operated for 3 years as a fun dining experience and included exciting collaborations with several different chefs. Despite being an innovative and fresh dining perspective that Bobo brings, Chef Nat realized that a change was due to offer a more sustainable overall restaurant experience and one that addresses the rising cost of quality ingredients. He wanted to look into something that was simple at heart yet provides creative and innovative opportunities. At Chef ’s Catch, Chef Nat is taking a different approach to Shellout, serving fresh seafood with 5 house sauces to choose from and options to eat solo, as a pair, or in groups of 4 or 6 pax enclosed in an airconditioned atmosphere surrounded by art infused with his Kadazan background. Having ingredients sourced from local suppliers, and embracing the uniqueness of the ethnic delicacies as taste profiles such as the delicious modern take on the hinava with flavours like tuna and prawn, as well as cultural favourites of tuhau, bambangan, and Sabah mango salad with dried shrimp.


The Breeze team dived into the delectable Shellout spread sampling 4 of the 5 sauces offered – Chef ’s Catch Signature (Spicy), Black Pepper, Garlic Butter, and Thick Curry. Each sauce presented its own distinct flavours with the consensus from the team being Chef ’s Catch Signature sauce is the clear favourite and a definite must try. The black pepper sauce is well balanced and not overpowering as the chef incorporated whole and cracked black pepper in the sauce. If you prefer a milder simpler taste, garlic butter is the way to go, and if you like a more decadent sauce that has a very mild spice, you will love the thick curry option. One of the main essences of Chef ’s Catch is a culture of sharing and togetherness. Food is meant to be shared and the menu truly reflects this with additional affordable sharing plates including fried cauliflower (another must try!), fried ikan basung, and fried ikan boulu among the listed dishes including soup to share. This writer highly recommends Chef Nat’s Crème Brulee, a delicious delicate dessert with the traditional caramelized sugar crack to the soft and lush custard beneath, to conclude a beautiful meal or as a dessert dish on its own. Chef Nat believes in providing delicious food and exemplary service which was evident during our dining experience. As a restaurant consultant, assisting domestic and international restaurateurs, his commitment to his beliefs shines through. He implores aspiring restaurant owners here to understand what they want to bring to the table and align their expectations and audience with the market to ensure sustainability and value to the locality. He believes KK has a unique opportunity and market for creative and innovative ventures. He sees that the gastronomic scene here has a lot of work to do to further develop and mature in culture and economy, where our food and beverage industry will no longer be fighting to survive, but are able to thrive.
