KEMBARA KOMUNITI PROGRAMME: VERMICOMPOSTING HELPS KOTA BELUD FARMERS

Kota Belud, 20 May 2024 - The Ministry of Science, Technology, and Innovation (MOSTI) through its agency, the Malaysian Bioeconomy Development Corporation (Bioeconomy Corporation), has launched the Kembara Komuniti Programme: “Kecilkan Jejak, Besarkan Impak” (Reduce Footprint, Increase Impact) with the theme ‘Ada Sisa, Jadi Bisnes Bah!’ (Waste to Business!) in Kampung Melangkap Tiong today. Through this programme organised by Bioeconomy Corporation, 30 farmers from Kampung Melangkap Kapa and Kampung Tanginambur under the Kota Belud Farmers Association will undergo a six-month training course to master the skills of recycling agricultural waste into high-quality bio-based fertilisers using bio-based vermicomposting technology. The Kembara Komuniti Programme is conducted in collaboration with Bioxpert Sdn Bhd (Bioxpert), Universiti Malaysia Sabah (UMS), and Bioeconomy Corporation as the industry driver. PENAMPANG 4X4 KAAMATAN CHALLENGE 2024

The 8th Penampang Kaamatan 4x4 Challenge concluded successfully at Kampung Pegandangan, Kopimpinan Kawang in Papar on 19 May, 2024. Ramsay Teo and co-driver Anto Ramlan emerged victorious in the Open Novice category, winning RM12,151 worth of prizes, while Mohd Izzat and Mohd Fairus topped the Super Novice category, receiving RM11,286 worth of prizes.

The three-day event, organized by the Penampang Four-Wheel Drive Recreation Club, featured 35 vehicles—12 in the Open Novice and 23 in the Super Novice categories. Limbahau state assemblyman Datu Juil Nuatim praised the well-organized event for fostering camaraderie and testing participants’ mental and physical strength. Represented by Johnny Juil at the closing ceremony, he noted the event’s role in enhancing the Kaamatan celebrations and expressed his commitment to supporting extreme off-road events in Sabah.

Club president Alex Leong acknowledged the participation of female 4x4 enthusiasts and thanked competitors from the UK, Brunei, Labuan, and Negeri Bumi Kenyalang. Special gratitude was extended to Yih Chang Ming and Yih Kian Kok for providing the venue, contributing significantly to the event’s success.

2024 HYATT REGENCY KINABALU CLASSIC RAISES

52,470 FOR COMMUNITY SUPPORT AND NATURE CONSERVATION

The 2024 Hyatt Regency Kinabalu Classic golf event, “Caring for People through the Game of Golf,” took place at the Sutera Harbour Marina, Golf & Country Club on 27 April 2024. The event, supported by 122 golf enthusiasts and industry partners, featured enjoyable novelty challenges and an 18-hole Texas Scramble tournament. Over the course of the day, MYR 52,470 was raised. The event concluded with a dinner reception, prize awards, a silent auction, and partner announcements at Hyatt Regency Kinabalu.

The event celebrated achievements with eco-friendly trophies made from crushed glass collected from the hotel and the local community, underscoring the importance of environmental preservation.

Thor Gervasi, General Manager of Hyatt Regency Kinabalu, highlighted the event’s success, noting its significance beyond just a golf tournament. He praised the support from partners and

the hotel team for making the event possible and emphasized the hotel’s commitment to giving back to the community and raising awareness of nature conservation through its events and activities.

Since its inception in 1996, the tournament has funded numerous community projects. These include the construction of the Papar Middle School Hostel, supporting Operation Smile Sabah for children’s cleft lip and palate surgeries, contributing to the Bird and Nature Guide Training programme, funding PACOS glass recycling equipment, and raising coral conservation awareness in collaboration with One Ocean Empire.

At the 2024 awards ceremony, Monica Chin from One Ocean Empire presented on conservation projects in partnership with Hyatt Regency Kinabalu. Over the past three years, the hotel has supported coral conservation efforts and the operations of the Nature Conservation Centre. Chin expressed gratitude for the hotel’s tangible contributions and emphasized the impact of supporting meaningful causes.

Hyatt Regency Kinabalu remains dedicated to environmental conservation and actively engages in year-round volunteerism with the local community. The hotel aims to inspire positive change and work towards a sustainable future for generations to come.

Agricultural sector is one of the country’s catalysts of economic growth, especially the oil palm industry. Oil palm plantation technology & management includes the activity of monitoring crops, preparing budget, knowing about pests and diseases as well as ensuring quality of the produce. Trainees will learn about oil palm plantation practices that will equip them to have a career in the oil palm industry.

SMDX: DUSUN POP -

Brace yourself for a new wave of pop with a traditional mix featuring the local Sabahan talents, the SMDX. SMDX, pronounced Sumandaks, is a pop girl group composed of three members. Introducing Crystal Vanessa John, former winner of Unduk Ngadau Labuan; Deveygrayc, former winner of Unduk Ngadau Likas; and Elle Thong, a Sabahan singer and dancer.

Elle is still a student and part-time dancer who dedicates her life to her family and her passion for dancing. Crystal is a dancer for a traditional dance troupe but doubles as a social media influencer, mostly about traveling. Devey works for a modeling agency most of the time, but when she’s not, she’s putting all her energy into singing and dancing.

The three talented members all knew each other from the local dance scene. It was only when they were invited for a vocal audition for the song ‘Original Sabahan’ that they finally got to know each other better. The creativity took place in Sa.tugram’s recording studio, where he also does most of the thinking as a songwriter and a producer. Even so, they work as a team to create the SMDX style by adopting their own style of singing. The plan is to make dance pop music infused with Sumazau beats as well as some traditional instruments, carrying their roots of origin into their music.

With that, they released their first ever single, Original Sabahan, a unique and modern mix of the song with the same title. Even though this is such a huge first step for them to delve into this industry, they will have to see if it is a viable option first due to their other responsibilities. Even so, they still make time to schedule for practice and music development. Another step was when they performed together at the KDCA on the 30th and 31st of May for their sponsors, Hotlink, in conjunction with the Harvest Festival celebration. They also have plans to release a second single after they’re finished with the festivities, with the possibility of it happening by the end of the year.

Original Sabahan is available on all major streaming platforms, such as Spotify, Apple Music, YouTube, Deezer, KKBOX, Amazon Music, and many more, when you search SMDX.

Some issues ago, I’ve talked about a laptop that is modular so you could repair and replace certain parts yourself. This time I’ll be talking about something similar, but in a smaller form factor. I’ll be highlighting the great, the good, and the little concerns I have with the Fairphone 5.

First, let me give a short introduction about the Fairphone themselves. The company started in 2013 with a goal of providing a phone to the masses in an ethical fashion. This means sourcing their components ethically, treating factory assembly workers fairly, and being transparent about everything they do. All the while providing a phone consumers can use for more than the typical 2 or 3 years before moving on to the latest model because of obsolescence (planned or not).

With that said, the Fairphone 5 is their latest phone they’ve put out, and in line with their vision and mission, users can swap out parts of the phone themselves. These include removable batteries, the individual cameras, speaker, and the screen. Fairphone has also made it easy and simple to do so as well, with clear indications of which screws to unscrew and which ribbon cables to unplug in order to replace the specific parts.

Another huge deal, at least for me, is the software updates the Fairphone 5 will receive. They are targeting software updates up to at least 2031, with at least 5 generations of Android OS updates after Android 13. Now this is all possible with the use of a special Qualcomm QCM6490 octa-core chip, a chip that’s intended for IoT (Internet of Things) applications, instead of the usual Snapdragon (or equivalent) chips from the same manufacturer.

Now this leads me to the “good” part. This is a mid-range phone at heart, with almost similar performance to Qualcomm’s Snapdragon 700 series of chips. In fact, because of the modularity, this phone isn’t what I would call premium, especially with the removable plastic back cover. Is this a bad thing? No, as it’s still an attractive looking phone with some added benefits of modularity. Plus, you won’t need to worry about the back being smashed when you drop it. Oh, and in line with being a midrange phone, the cameras are just okay. The three 50mp sensors (including the selfie shooter) take serviceable pictures.

This is a very interesting phone, but there are some downsides. But they’re mainly little nitpicks since we’re used to certain features of sleeker phones from other companies. They include a thicker frame (unavoidable because of the modularity), thicker screen bezels, and the slightly smaller battery capacity (thankfully it has fast charging). I have found other reviewers talking about software issues and bugs being the bigger issues, but I think Fairphone can iron them out.

So if you’re looking for a more ethical phone you could use for more than 5 years, you should definitely consider the Fairphone 5. Just be aware of some of the downsides.

Car enthusiasts from all over gathered at this iconic spot, not just to showcase their beloved vehicles but to reignite the camaraderie that has defined the local car culture since the 1950s.

A Legendary Spot

Tanjung Aru First Beach, known for its stunning sunsets and vibrant street food scene, provided the perfect backdrop for this nostalgic event. From 4:00 PM onwards, the parking lot filled with a diverse array of cars, from classic models to the latest high-performance machines. Participants enjoyed an evening of relaxation, delicious food from local stalls, and the breathtaking views that have made this location a legendary meeting spot.

A Community United

The event was a collaborative effort by Cult, Breeze Magazine, and the Tanjung Aru Eco Development Management Team (TAED). This gathering aimed to strengthen the bonds within the car community and celebrate the shared passion for automobiles. Reserved parking was available on a first-come, first-served basis, and participants gained entry by flashing their digital entry passes, distributed to car club presidents, community leaders, and registered individuals.

Fun-Filled Activities

The Beach Meet 1.0 offered something for everyone. Guests dressed casually for the occasion, indulged in fresh coconut drinks, and mingled with fellow car enthusiasts. The presence of Cult’s supermodels added a touch of glamour, providing photo opportunities for attendees. The media team was on hand to capture the event, ensuring that the memories of this fantastic day were well-documented.

A Bright Future

The successful turnout and positive atmosphere underscored the importance of such gatherings in fostering a strong community spirit. TAED’s support in allowing the use of Tanjung Aru beach for this event highlighted their commitment to enhancing the social well-being of KK residents. Exciting developments are in the pipeline for Tanjung Aru, promising to benefit the local community while maintaining its status as a public beach.

INTREPID TRAVEL LEADERS VISIT RESPECT’S BORNEO PYGMY ELEPHANT PROJECT

Kinabatangan, 4 May 2024 - Key leaders from Intrepid Travel, the world leader in responsible travel, made a special visit to Responsible Elephant Conservation Trust’s (RESPECT) Borneo Pygmy Elephant Project site in Kinabatangan, Sabah.

Intrepid Foundation works with RESPECT to manage the human-elephant conflict through overseeing large-scale habitats in Sabah to protect the pygmy elephants. Borneo pygmy elephants are considered endangered, with only 1,500 remaining in the wild. The primary threat to these elephants is habitat loss as their forests become fragmented due to human encroachment and the elephants can no longer travel along their traditional migration routes.

Intrepid takes many travellers through Sabah, and the Borneo pygmy elephant is often considered one of the ‘Big Five’ wildlife to spot. Those fortunate enough to see these majestic animals in the wild often describe it as a highlight of their trip. Malaysia is a key destination for Intrepid, employing 13 staff, 38 local trip leaders and operating nine trips across the country. In 2023, it supported 3,912 travellers to explore Malaysia in a conscious manner.

The key leaders from Intrepid Travel who visited RESPECT’s Borneo Pygmy Elephant Project included the Managing Director of Asia, Natalie Kidd, the Chief Operating Officer, Tom Beadle and the General Manager of Malaysia, Felice Tseu. They were also joined by the Chairman of RESPECT, Alex Yee.

RESPECT’s Chairman, Alex Yee, remarked “I am pleased to have the Intrepid Foundation walking together with RESPECT and giving us support in both awareness and funding for a food corridor for the pygmy elephants. The weight of carrying a project of this scale is made lighter with genuine partners like Intrepid Foundation.”

Intrepid Travel’s Managing Director of Asia, Natalie Kidd, said ‘Our visit to Malaysia is a great opportunity to develop our relationship further with Intrepid Foundation’s partner RESPECT and see their efforts in protecting the endangered pygmy elephants’

Last month, Intrepid Travel’s Co-Founder and Chairman, Darrell Wade, visited the Malaysia team to share the business’ 2030 strategy. BUYING A LAPTOP (OR ANY GADGET) IS KIND OF A PAIN

Irecently had the “privilege” of having my laptop die on me, with a lot of work still left to be done. Whether or not I’m fixing it is a different question on its own, I definitely still had to find a replacement or backup laptop to finish the current work I had, plus the future work I’ll have to work on. And so, I began to browse through the market, looking for something that is at least half as capable as my broken laptop, a journey of hope and despair.

First of all, I’m a bit picky when it comes to the gadgets I use, so this rant is more of a “me” issue. But the used market isn’t very deep in Kota Kinabalu. Of course, Facebook Marketplace is full of laptops but none of them meet my specific needs. What’s more annoying is, people tend to mislabel their posts, not include the specs, and straight up no details or extra pictures at all.

But it’s not like there aren’t any good options in Marketplace, they’re just a bit harder to find. This isn’t a criticism, but just a fact. Most of us couldn’t, and still can’t, afford the nicer laptops because of the economy. I mean, laptops are expensive here and our wages are low. Even if someone could afford the nicer ones, it doesn’t necessarily mean they’ll be offloading them soon. And sometimes, just not many people bought the “best and niche” laptop when they were new, so not many used models can be seen in the wild.

Why am I looking for used laptops in the first place, you ask? Well to save some money, duh. Plus, I’m just doing my part to ensure at least one laptop doesn’t become e-waste. However, buying used, or refurbished, does come with its caveats. Sometimes,

cosmetic damages can’t be avoided. Other times, short warranty periods can be troublesome. While when worse comes to worst, you just didn’t notice a major issue when buying used. And I’ve experienced the last caveat myself, right after I found the laptop I was looking for. Luckily for me, the shop I bought it from had multiples of the models to replace the one I got. The one I’m using now isn’t in pristine condition, but it’s the most solid of the bunch.

So why not buy new to save me the hassle? Like I said, to save some money. With the amount of money I spent to buy mine, I wouldn’t get half of the features I was looking for from new laptops. Yes, some of the specs might be a bit comparable, but the keyboard, speakers, and screen on this is on a whole other level compared to the newer options. These characteristics especially matter when I limit my choices to specifically smallersized laptops. I admit, there’s a laptop for everyone now in Kota Kinabalu, but if you have certain budgets, specific specs, or certain features you’d like to have, you’ll have to sacrifice somewhere.

That’s why it was a (literal) feverish experience for me looking for a replacement laptop in short notice. But I’m sure, if you do your homework, inspect used options wisely, or save enough for your dream laptop, you’d have a better experience than I did.

DIY FIGURINE AS A HOBBY

Last month, a plastic model kit event was held at the Chocolate Room cafe above the Eminent Hotel called Royal Rumble, where plastic model kit hobbyists and enthusiasts gather together to showcase and share their passion for the

hobby. The event was a joint effort between the people in the community, hosted by 2nd Cut Hobby, a plamo club based in Kota Kinabalu that mainly focuses on Gundam but is not limited to it. I’d like to take this chance to talk a bit about this hobby, especially with the recent rise in its popularity.

For those who are unfamiliar, plastic models, often shortened to plamo, revolve around building a plastic model using parts that are given in a box of that kit, which also includes an instruction manual on putting them together. There are tools necessary for this process, but having a side cutter is usually more than enough for beginners. The most popular product line for this is the one we have all seen before, Gundam. The community often refers to this as gunpla, which is short for Gundam plastic model.

At first, building the model kits by yourself may sound overwhelming and like a huge amount of work to go through, but the process is actually part of the fun. Most hobbyists would even consider it as a form of therapy or meditation. The satisfaction of seeing something you built yourself posing gloriously just feels gratifying, especially on the higher-grade kits. While it can be quite challenging for the first few times, it doesn’t take long before you get the hang of it.

Some kits have their own category to separate the complexity of the builds from the easiest one you can do without tools to the more complex ones that require time and patience. While there are many grades out there, usually it’s just Entry Grade, High Grade, Master Grade, Real Grade, and Perfect Grade.

Of course, plastic model kits aren’t just limited to mecha robots. There are also various other model kits available for enthusiasts of different interests, such as firearms, cars, aircraft, even Pokemon, and many others. There are also builders who would go so far as to customize their own kits to their liking, sometimes even mashing together different kits from different lines of product to create something new. It’s definitely a different form of craftsmanship that deserves respect.

The event that took place is merely a sneak peek at what is to come soon to the plamo community in Kota Kinabalu. There will be another similar event that will take place somewhere around November, but this time it’s more of a chance for the locals to have their place in the Gunpla Builders World Championship representing Malaysia. If you’re interested in getting into this hobby, the community would be more than happy to welcome and guide you to this somewhat niche hobby.

Born in Keningau and raised by a single mother, Sylvia Sandralisa Orow burst into the spotlight at 15 by becoming the youngest contestant to win the Unduk Ngadau State Level competition in 1991. Her winning streak continued with titles like Miss Sabah Chinatown 1991, Miss Sabah Globe 1992, and Miss Sabah-World 1993.

But Sylvia’s story doesn’t stop there. With an associate degree from Kinabalu Commercial College and a BA from University College Birmingham, she soared from the skies with Singapore Airlines to a role with Tourism Malaysia in NYC. Since 2010, she’s been with Brookfield Investment Firm, and now she’s dazzling in Dubai, managing capital raising and road shows for a Trillion-dollar Company in the Middle East. As she approaches 50 next year, Sylvia isn’t just a former beauty queen but a vibrant professional, joyfully married, and a proud mother of a 13-yearold son.

1. How has your beauty routine evolved over the years, and what are the key elements you swear by today?

In my younger days, I’d sometimes crash without removing makeup and sunscreen was an afterthought. By my 20s, I got serious about skincare—cleanse, moisturize, and sunscreen became my mantra. I’ve learned the hard way about the sun’s effects on our skin. For sunscreen, I recommend a water-based option, light, non-greasy, and perfect for sensitive skin.

2. Do you incorporate natural products into your beauty regimen? If so, which ones have made a significant impact? Absolutely! I swear by coconut oil for hair treatments and aloe vera gel for soothing my skin after sun exposure. Rose oil is my go-to makeup remover, and tea tree oil is my breakout buster. I prefer organic and natural products whenever I can, they just feel right.

3. How do you balance inner and outer beauty in your daily life?

Balancing inner and outer beauty is an ongoing adventure. I maintain a healthy lifestyle with good food, regular exercise, and skincare. Makeup and dressing up? Yes, please! They’re for me, not just for others. Internally, I practice mindfulness, selfreflection, and kindness. Expressing gratitude, especially to those who’ve supported me, is deeply meaningful. True beauty shines from within when you’re happy, content, and at peace. Confidence comes from feeling good in your own skin, and when you’re glowing inside, it shows outside.

4. Are there any local beauty products from Dubai that you use and would recommend?

Since moving to Dubai, I’ve been loving the natural oils; Argan and Avocado oils keep my skin hydrated, and experimenting with perfume oils to create my signature scent has been fun. Oud is a local favorite, though a bit strong for me, but I adore some plant and flower blends that last forever.

5. How do you stay active, and what exercises or fitness routines do you find most beneficial for maintaining your health and appearance?

NYC made walking and stairs a way of life. At home, it’s stretching and calisthenics. My son’s activities and weekend biking and rollerblading keep me moving. In Dubai, with more driving, I make a conscious effort to stay active. Evening beach walks are my favorite. High-impact activities? Not my thing. Walking, biking, and stretching are gentle yet effective for staying fit.

6. How has your perception of beauty changed from when you were a beauty queen to now?

Back in my beauty queen days, beauty was all about looks and meeting industry standards. Now, I see beauty in being true to yourself, embracing who you are, and celebrating individuality. Authenticity, kindness, confidence, and supporting others’ uniqueness are what matter most. Real beauty goes way beyond appearances.

7. Can you share any beauty secrets or tips that have contributed to maintaining your youthful appearance?

No magic formulas here, good genetics help, but mindset is crucial. I focus on internal and external self-care. Hydration, nutritious food, sleep, stress management, and skincare are my staples. I avoid sugary drinks and fast food, opting for water, green tea, and healthy snacks. Steering clear of toxic people and environments is vital too. Emotional intelligence is key, let go of what you can’t control and focus on what you can.

8. How do you handle the natural aging process, and what advice would you give to others about aging gracefully?

Aging is a personal journey. Embrace it with grace and focus on what brings joy and fulfillment. My advice is to maintain a healthy lifestyle and nurture your inner well-being. Aging is inevitable, so respect and accept it. The key is to do what makes you genuinely happy.

9. Do you have any favorite traditional or holistic beauty practices from your hometown (Tuaran/Sabah) that you include in your routine?

I remember my childhood in Sabah, my mom used crushed Bunga Raya leaves for my hair and aloe vera for my skin. And those bitter young papaya flowers in our diet were packed with vitamins. I still make chicken with ginger and lihing soup when I feel bloated or under the weather.

10. What advice would you give to younger women regarding self-confidence, self-care, and the use of natural and local beauty products vs. expensive overseas brands? Embrace what makes you unique. Celebrate your quirks and strengths, and treat yourself kindly. Confidence starts from within, so nurture inner strength and resilience. Surround yourself with positivity and supportive people. Step out of your comfort zone to pursue your dreams. Confidence grows with experience, so face challenges with courage.

For skincare, try natural and local options, they’re often gentler and better for the planet. Don’t feel pressured to splurge on pricey brands. Experiment to find what works best for you. Expensive isn’t always better, use what makes you feel great, no matter the origin or price.

LIHING RICE WINE

INGREDIENTS

• 5kg Glutonious rice

• 100g Yeast

METHOD

1. Cook the glutonious rice and let it cool. Scoop rice and place on a cleaned container.

2. Sprinkle the yeast evenly over each layer of cooled rice. Continue layering the rice and yeast until the container is three-quarters full.

3. Seal the container tightly with a lid and label it with the date of preparation. Store for fermentation. After one month, open the container and use a clean spoon to taste the liquid. The rice wine should have a slightly sweet flavour and pleasant aroma.

4. Carefully scoop out the liquid, straining it through a fine mesh strainer to remove any solids. Transfer the strained rice wine into clean, sterilized bottles for storage.

5. Ready to drink or keep for future consumption.

Dig in and sip on your drinks, because Dig & Sip might just be what you’re looking for when it comes to a hearty and wholesome meal. Located in Riverson’s The Walk, the outdoor seating with the fresh air is a perfect way to enjoy your meals. Their cosy indoor section offers you a chance to buy herbal drinks such as tea and barley. They have a “nasi campur” counter to choose the dish you’re interested in.

But we didn’t visit for that, we were there to try out their freshly cooked meals. So we had the chance to try out their Signature Nasi Lemak, Homemade Fish Ball & Fish Cake Meehun Soup, and their Penang Fruits Rojak, along with Coffee Tarik and Teh Tarik. Let me just say this, the drinks pair up with the meals really well. You might not think of refreshing when it comes to coffee or tea, but that’s how I would describe them when paired with Dig & Sip’s meals.

Their Homemade Fish Ball & Fish Cake Meehun Soup was simply delicious. The homemade fish balls and fish cakes felt like they could just bounce off, that’s how fresh they are. The noodles were almost unending, providing for a satisfying mouth feel with every slurp you take. The Penang Fruits Rojak featured slices of apples, sengkuang, pineapple, and cucumber topped with their homemade sauce and crushed peanuts. This Malaysian classic offered a refreshing after meal dessert, especially with the light rojak sauce that is neither too sweet nor too spicy.

There aren’t too many fine dining establishments around Kota Kinabalu, but the choices we do have are honestly top notch! And it isn’t any different with this issue’s feature, Favola. Being part of the Le Meridien dining experience, Favola offers an innovative Italian-Fusion dining experience, all prepared by local talent with Italian techniques and Sabah’s finest homegrown ingredients.

Having been operating since 2015, Favola is renowned for its Venetien influences, taking its name from the Italian translation of “fable”. Guests can expect the dining journey to commence as they tread on the chicly lit stairs leading to Favola’s immersive, charming and intimate dining space with an Italian ambience that features granites blocks adorning the walls representing Sabah’s pride, the Mount Kinabalu. With that said, ambience can only go so far as the food is the most important thing about a dining experience, and Favola doesn’t disappoint.

First off, we were greeted with the Blue Swimmer Crab Tartar as an appetiser. It was finely prepared both visually and in terms of flavour. The soft shell crab is crispy with every bite I took, having the flavours of the crab tantalising my palate. The avocado mousse and mango salsa adds that bit of creaminess and tang to the whole experience.

Next up, we had the Branzino Arrosto, a pan roasted sea bass with olive crushed new potatoes, stewed leeks, baby carrots, and a garlic chives cream. The sea bass was very tender and buttery, with a hint of sweetness from the freshness of the fish itself. Speaking of buttery smooth, the crushed new potatoes were also soft and simply melted in my mouth, pairing well with the overall dish.

Favola also served us Slow Braised Australian Lamb Shank. As with its name, the lamb shank was slowly cooked in a roasted lamb bouillon and served with a Cream of Polenta, garden vegetables, Italian gremolata, and lamb jus. I loved that the meat just fell off the bone effortlessly. While the flavour of the lamb isn’t overpowering, the lamb jus adds just a bit of savoury goodness for both the lamb and the cream of polenta. Speaking of which, the cream of polenta finely accentuates the flavours of the meat perfectly.

On to the star of the show, Favola’s most popular dish, the Grilled Veal Tomahawk which is served with garlic confit, roasted hassleback potatoes, asparagus, baby carrots, and fresh herbs. It isn’t often that we get to try such tender pieces of meat and Favola doesn’t disappoint with this “monster” of a dish. Not only is the meat tender, it also offers a flavourful surprise as the juices oozed

out with every bite I took. And if you ever want to enhance the flavour just that slight bit more, Favola also offers a choice of sauces such as mushroom sauce, Rosemary sauce, red wine jus, and Sarawak peppercorn sauce, along with either mustard or sea salt. I recommend the Rosemary sauce as it offers a more aromatic flavour for the meat.

Last but not least, we have the dessert, which was the Chocolate Balloon. It is a chocolate mousse topped with hazelnut praline and strawberry mint compote. The dessert itself is delightful as it isn’t too sweet for the tastebuds, while the compote adds a burst of flavours towards the chocolate mousse. The experience of being served the dessert is another thing on its own, as it comes with an edible chocolate “balloon” you need to crack to get to your dessert.

The amazing meal was prepared by Favola’s own Chef Kelvin Kilin. A native of Tuaran, Sabah, Chef Kelvin has spent 18 years in the culinary industry, including international experience in Beijing and Shanghai. Notable achievements in his career include working with Michelin Star Chef Theodor Falser, winning the Best Student award at ShangriLa Academy, and earning a Silver Medal at the Penang Chef Challenge. He has worked at top hotels such as Shangri-La, Hilton, DoubleTree, and is now the Executive Sous Chef at Le Meridien Kota Kinabalu.

Kelvin’s “Modern Grill Cuisine” combines classic and modern cooking techniques with local ethnic influences. His dishes are known for their fresh, light flavours, utilising seasonal ingredients to create unique tastes. His favourite dish to prepare at Favola is the Grilled Veal Tomahawk.
