EDITORIAL TEAM Hello Breeze readers,

Hope you are all doing well as we enter the month of May. In this issue in conjunction with Kaamatan, we celebrate some of the success stories of our fellow Sabahans. To kick off, I’m proud to have Shone & Kathie Majimbun gracing the cover of this issue. Born and raised within the district of Inanam, they’re an amazing yet humble power couple that started from scratch in the food & beverage industry. Eventually they expanded to several different outlets under their care including the popular Shoney’s Dining & Bar and Happy Place. Read all about them in Personality. The word success also comes in the amount of positive impact through education and inspiring the public. In Feature, we explore the world of Mama Ita, a lady Tapai maker from Keningau. She doesn’t just make the famous traditional wine for business but also educating people the arts of making it. Her passion is to pass on the knowledge of Tapai making to not just our locals but also to the world. Probably still not known to many, our local farmers have started using apps during the pandemic to connect directly with customers. It has helped greatly in sustaining and improving their income. One such app is Orderla which is featured in Tech. Sticking to the Kaamatan mood, turn to Pop Culture for a look at the ever popular annual Unduk Ngadau contest. Who do you think will be this year’s Harvest Queen? On another note, don’t forget to check out Jon’s Recipe in Restaurant Review. April 2021 BORNEO CULINARY ADVENTURES KICK OFF CEREMONY Kota Kinabalu, 8 April 2021 - YB Phoong Jin Zhe officiated the Borneo Culinary Adventures kick off ceremony at Plaza 333. TAME & OCEAN VIRGO SCUBA DIVE PARTNERED UP TO CREATE A BETTER FUTURE FOR OUR ENVIRONMENT Kota Kinabalu, 10 April 2021 - Japson Wong of Tanjung Aru Marine Ecosystem (TAME) and Monica Chin of Ocean Virgo Scuba Dive have signed a memorandum of understanding and cooperation at TAME centre. The memorandum sealed their partnership to work together to educate the public about waste management, danger of plastic pollution, temporary solution for single-use plastic pollution and basic waste management from home. Among activities that will be established throughout this partnership is to establish an Eco-Brick drop off station at TAME centre and to conduct workshops/training on basic knowledge for coral reefs and marine life through Ocean Quest Global Coral Rehabilitation.

INSTALLATION OF JCI TANJUNG ARU AND JCI KK NEW PRESIDENTS Kota Kinabalu, 17-18 April 2021 - Dr. Jeremy Tong was officially installed as the new 2021 JCI Tanjung Aru President during JCI Tanjung Aru’s 40th Installation & Awards Banquet at Hilton Kota Kinabalu. SONY BIRDING WORKSHOP Kota Kinabalu, 25 April 2021 - Sony Malaysia held a birding workshop at Lok Kawi Wildlife Park to introduce photographers to the world of bird photography and to Sony’s lineup of cameras and lenses. Presentations and demonstrations on the cameras and bird photography were conducted by Sony Product Trainer - Mr. Kenny and Profesional Sony Alpha User - Mr. Zaki. Participants who attended the event were allowed to try out the cameras as they went to the wildlife park’s Jungle trail, Wildlife Trail, and Animal Show. With this, participants were able to get firsthand experience using the cameras and capturing the special moments of the animals in motion.

KYE TAMM: MAKING HIS WAY IN LA-LA LAND

He felt grateful that this was his very 1st show because Good Trouble has a great working environment. Everyone was friendly and always willing to lend a hand. So when it comes to challenges, the biggest thing for Kye would be to get himself out of his own state of mind. With this show being his very 1st production, the need to do a great job is constantly in his mind. Being in a chill production environment really helps. Having lived in the U.S. for almost 4 years, that was where Kye found himself. It was a place where he felt he belonged and when it came to making friends, it was never a problem for him. Although currently due to the pandemic, he does not get out as often other than for work or meeting up with some friends. Kye cheerfully told me that he is still enjoying himself, so all is good. During his free time, Kye along with some of his friends from AMDA had created a company where every week they will write a script based on a selected prompt and stream it every Saturday night. Apart from that, he also sings and loves playing video games.

s a child, Kye Tamm was born and raised in Kota Kinabalu, Sabah. He was given the opportunity to pursue his studies in Saipan, an island off the coast of Guam, U.S. where he lived with his aunt and spent his last 3 years of highschool there. During his last year of school, he applied for AMDA College of the Performing Arts in Los Angeles where he got accepted in summer 2017 and graduated in 2020. Studying in AMDA was a whole different experience for Kye. They had a lot of acting classes, stage combats, dialect classes and more. The best part was, according to Kye, the teachers themselves are industry players who are actually in movies and shows. Currently, Kye is busy shooting for season 3 of Good Trouble. When asked how he landed a role in this binge-able drama series, he replied that it was all pure blessing. Not long after he graduated, he was contacted by a manager who found his profile on a website where Kye submitted his audition videos. Kye admitted that it was not easy to find a person to represent him, especially when he was fresh out of college, so when the opportunity presented itself, he jumped on that chance. After he was signed, his manager found an agent who got Kye an audition for Good Trouble. Kye managed to get in the top 7 finalists of the audition and the rest is history.

His word of advice to those who want to pursue a course similar to his is -to believe in yourself and be optimistic because as cliche as that sounds, that is all it really is. Despite it being harder to get opportunities now due to the pandemic, if it is meant to happen, it will. If you really love acting, do not give up. FUN FACT: He is obsessed with wolves. They are cool, strong and able to work as a team or alone.

Mami ita: sharing culture through tapai

S

o, it’s Kaamatan month again, and this might be an appropriate story for you. What is Kaamatan without the Tapai, or the rice wine. Well here is a fun fact, the other districts in Sabah might not just use rice, other types of harvests can be used to brew the Tapai too. Sugar cane, pineapples, bananas, and tapioca are as great. Meet Christa Mayon Ungkas, or fondly called “Mami Ita” by everyone around her. Mami Ita is a Tapai Maker, who comes from a lineage of Tapai makers. So, she has been doing this ever since she was little. Her mother was an English teacher who brewed, her grandmother was a bobohizan who brewed, so you can imagine the amount of knowledge that has been passed down to this here Keningau Lady. The place where Mami Ita is residing has constant irrigation problems for rice farming, so, making rice wine was challenging to her, but this opened a door for a more hands on collaboration of brewers and farmers. When Mami Ita has orders for her Tapais, it means that the rice farmers, the yeast makers and also the Tajau makers will have some kind of a financial gain from this. Rice wine is a drink that is served with a small buffet of

side dishes such as soups, grilled or smoked meat (sinalau), and various types of pan fried veggies and whatevers… you name it, it might go well with the Tapai. Oh, these dishes when served with the Tapai, are called “pusas”. Some take home info so you don’t look like a newbie this coming Kaamatan. Back to Mami Ita, so one day she was approached by 3 ladies from South Korea, asking that she teach them how to make Tapai, long story short, she agreed and history was made. You see, it’s very seldom that a Tapai maker would tell or even teach outsiders (outside of his/her family) on the processes of Tapai Making. So you can regard people like Mami Ita, as someone who is a rebel, going against her customs. But her rationality was, even her children, nephews and nieces have no interest in learning this craft, and so does most of the younger people of Keningau. She worries that this skill will die with her like it died with most of the older people she knew. So, the Mami Ita Tapai Workshop started. At first it was in Keningau, then in Kota Kinabalu, and then Mami Ita went to Sandakan for the Sandakan Food Festival 2019, where she did her workshop there, hosted by San Da Gen Kopitiam, awesome people. If it wasn’t for the pandemic, she was supposed to conduct another workshop in Kuala Lumpur post Kaamatan 2020. Kuala Lumpur will just have to wait.


Other than the processes of Tapai making, Mami Ita also imparts lore knowledges, tips and tricks and also Tapai drinking etiquettes to her workshop participants. For example, when you go to someone’s house where there is a Tapai drinking session undergoing, it is very rude to tell the others or the host that you are thirsty (saya haus). You have to be invited officially to sit near the Tajau as the next to drink, they will call you “biris”. Another one for you Tapai newbies out there. So, yes, Mami Ita will not only equip you with the recipe, but also with the culture too. She also advocates for the appropriate use of traditional alcoholic beverages. Some communities blame the Tapai for domestic violence, criminality and other negative happenings, for Mami Ita, understanding the real use of tapai is the key control to these unwanted happenings. The Dusunic people from the interiors of Sabah have discovered the goodness to the rice wine, one of the usage of Tapai is as a drinking water filter. Back in the day, farmers and land pioneers will bring a tajau or two with them deep in the jungles. Rather than drinking straight from streams, they would pour the water they found in the Tapai, the alcohol

in the Tapai will kill germs, and the water would be safe to be consumed, but the down side is (or up) you will get drunk. Through Tapai making, one will see how the people of Sabah are not only connected to other people in their community, but also how they are also connected with their natural surroundings the land, water, everything that grows and lives and even those beyond our logical understanding. The Tapai sees beyond race, skin color and the whatevers that divide us humans. In Mami Ita’s Tapai Making Workshop (and also at her home) all are welcomed, all are family, and I guess there is only one word that can describe this, Aramaitii! Genie wong's comeback is where she discovered her online crush, Aylextv, with his life goals that inspire people to pursue their dreams. That was how Genie’s passion for music was reignited. At the same time, a Kuala Lumpur based record label called Manship noticed and approached her to produce a few songs. Genie is very excited with the opportunity as it is a rare thing to happen. Since making her comeback, Genie has produced a few songs such as the Chinese Pop number “Ni Rang Wo Xiang Qi Le” (You Remind Me), which was initially in English. Based on true events, it’s the tale of Genie’s experience through TikTok. On the other hand, her Latin English song, Papichulo, is about getting a guy to be more open to his girl. Genie has more music planned for the future but she can’t reveal anything yet. Besides her number 1 hits, her biggest achievement is actually being able to still pursue her childhood dream of making music till this day. She’s played at a Jazz Fest with outstanding musicians, made friends with people all around the world, and is still passionate in doing so. She wants to inspire and create a path for future musicians who are serious in pursuing their music dreams.

he best thing about the music industry is the stories we hear. Whether it’s how a band began, how an artist struggled through hardships for success, or even how one makes an inspiring comeback into the music scene. Well, this time, we’ll be featuring an artist who is making a comeback into the music industry, the one and only, Genie Wong. Genie is a Labuan native who used to be active in the music scene in Malaysia. She studied Music Technology and Composition in the United Kingdom and was very engaged in church music in her youth. Genie was a regular in the music scene from 2011 until 2015, actively performing in front of live audiences at the time. During said period, she had two songs that hit number 1 on HitzKK’s Borneo English Top 10 chart. She then decided to take a break from the scene to focus more on her family. So, what inspired Genie to make a comeback? In her own words, the comeback was pure luck and chance. When the pandemic hit and people were forced to stay home, she found herself with too much time on her hands. This fueled her curiosity to explore TikTok and randomly sing songs with strangers. R

aya is almost here and the excitement is just getting started. Shops are playing Raya songs in anticipation of the holidays while most of us are already humming our favourite Raya tunes. Well, get ready to hum to a new tune as a few talented artists have collaborated to present everyone a new song called, Aidilfitri Yang Mulia. A total of 4 artists worked together in order to make this collaboration a success. Aldean is a 30 year-old emcee turned singer from Semporna, with a song of his own coming soon. Burhan Ayub is a Bongawan native and also a finalist for Bintang P. Ramlee Zon Sabah. Also in the lineup are Asz Marzuki, runner-up of the 2018 Bintang P. Ramlee for the national level, and Ayien, who was the national champion of the 2009 Bintang Irama Malaysia.

Aidilfitri Yang Mulia is the brainchild of Burhan. He came up with collaborating with other artists to produce a song for Raya in 2020. Unfortunately, due to the pandemic, he had to put it on hold. It was only in January 2021 when the cogs started spinning and the music production process began. With the help of Kenzo Matakaji (recording studio), Burhan and Ayien composed the concept, melody, and music of the single. The lyrics were written by Mamat Joy, detailing the worry free times of celebrating Raya with friends and family before the pandemic. There’s one word to describe the whole production process swift. The team had to race against time and complete the whole production before Ramadan. In the span of just a few months, they produced the lyrics, music recording and music video shoot. Of course, the MCO did pose a challenge as the artists were all from different parts of Sabah. So, each artist had to record their parts individually at their own time. For Aldean, the best part of the process was by the end of it all. The excitement to share the song to the world compares to nothing, especially with all the hard work and dedication they put into the song. With everyone’s support, the group plans to produce more songs in the future to keep entertaining everyone, not only during the holidays.

or the longest time, I’ve had the impression that online business would take almost twice as much effort in order to succeed. love nasi lemak. It’s the classic Malaysian dish that anyone can enjoy. My favourite nasi lemak would always be those made by small business owners. Not only do you taste the authenticity of the dish, but you can see the innovativeness of those before us through packing and storing their food in banana leaves. It’s amazing that this type of “container” has stood the test of time. But what about today?

I’m not saying we need to move away from plastic containers entirely. They still have their place in our world. Maybe we should rely on them less? The thing is, we use them excessively and don’t recycle them when we are done with them. I’m also not saying that traditional containers are the only way to go. They certainly have their impracticalities in terms of durability or leaks.

Now, we mainly use plastic containers. It isn’t the end of the world, plastics do have their place in the world. The only thing wrong is how we tend to dispose of plastic, especially ones that are purposed for single-use. Why not implement the old “nasi lemak method”? Plant leaves are the perfect single-use containers. They’re accessible, renewable, and biodegradable. So, even if you randomly dispose of them after enjoying your meal, they’ll naturally decompose and won’t take millions of years to do so.

It is fun to see people try something new though or rather, something traditional and see if it sticks. It’s also great to see people reusing their old containers for years, only to replace them when they need to. At the end of the day, whether you’re using plastic containers or traditional containers, try to consider the health of the world in your decision making. I’m sure your actions will have a positive impact on our environment.

The fun part about “traditional” and natural containers is they’re unique and one of a kind. You won’t get the two with the exact shape, size, or pattern from natural containers such as bamboo shoots, gourds, or even coconut shells. Pottery was also used as containers back in the day. I believe the intimacy of moulding and crafting clay have made people care more about what they have, because they need to make it last as long as possible. These days, that type of mentality and meaning is close to nonexistent. We tend to move on to something new, even when our containers are still usable.

The state of our roads

A

ll roads lead to Rome. Yet not all roads are created equal. Just look at our own roads, I mean, you have to admit we don’t have the best roads. Though not the worst, most of the roads we drive on are pretty nasty. Don’t even get me started on the roads that lead to rural villages. We deserve better and everyone should be aware of this. Our city and suburban roads are littered with potholes while our highways are paved inconsistently. One second you’re driving on smooth asphalt, another second the surface is as rough as sandpaper that you could feel every pebble on the road. That isn’t even the worst part however, as we constantly encounter random bumps of asphalt. That’s because the proper authorities are just fixing individual potholes rather than servicing the whole highway itself. When you go deeper into the heart of Sabah, the roads do get tougher to deal with while some are non-existent at all. Sometimes, the best piece road would only be paved with loose gravel. Big four-wheel drive cars are necessary to navigate the tight muddy paths we call roads in order to reach villages and communities in the rural areas. This easily turns casual visits into off-road adventures into these villages. The thing is, safety should be the number one priority when it comes to establishing a good road network. be able to withstand the dangers of landslides while potholes should be fixed not just for the sake of fixing them, but for the safety of the road user in mind. Why not service the roads every few years and don’t start unnecessary road work that we aren’t prepared to maintain for years to come. Am I saying the authorities aren’t doing anything about our roads? Of course not. I know they’re doing their best. Though, I feel like their priorities just aren’t set straight. All of us need to care enough in order for things to improve. If you notice issues regarding your roads, get the attention of the proper authorities and don't just gossip about it. Don’t simply blame others because we are all responsible for how comfortable we want our roads to be.

Full Body-weight Squat

EXECUTION • As you go down, keep the shoulders depressed and maintain the elbows at a stable 45 degree angle away from the body. • As you go back up, squeeze the chest and make sure to move the whole upper body as a single unit.

(20 reps, 4 sets, 20 seconds rest in between sets)

The good old squat is no stranger to everyone but it is undeniably one of the most effective workout for the glutes and lower body IF YOU DO IT RIGHT and getting it right is a whole different story. SETUP • Stand with feet shoulder width apart. • Toes turned out slightly. • Keep your core tight & spine neutral. EXECUTION • Before going down, perform a hip hinge by. • As you go down, push your butt back and lead your knee forward at the same. • Align your knees to the 2nd/3rd toe of your feet. • Make sure that your spine is parallel to the shin. • Try to go down as low as you can without compensation of form. • Come back up to starting position by moving the hip and knee joints together. • As you come up, squeeze your glutes at the top.

Thread the needle side plank (4 Sets, 10 Reps each side – No rest; alternate immediately) SETUP • Come to a side lying position. • Place your elbows under your shoulders and push your body up to a side plank position. • Align your elbow, hip, knee and heel in a straight line. EXECUTION • Keeping your core stable, slightly rotate your thoracic spine and thread your top arm into the hanging gap between your supporting elbow and ribcage. • With control, slowly thread the arm out and stretch it up overhead.

umble beginnings are usually what successful people go through; but to maintain that humble motto and staying true to it is a challenge itself. Power couple Shone & Kathie Majimbun juggle 6 brands including popular eateries Shoney’s Dining & Bar and Happy Place while managing 4 kids on a daily basis. ‘Stay Humble and be Truthful to yourself ’ has been the constant principle for this lovely couple that led them to success.


Kathie is a simple and kind girl who originated from Kg. Dambai, Inanam. She initially aspired to be in the beauty industry, but she pursued hospitality education in ATI Sabah after receiving scholarships to pursue higher education. The rest, as we call it was history. Currently a mother of 4, time management was a juggle, but with Shone by her side, they were lucky to have great support and were able to manage family time with a balance of social projects as well as getting hands on with work. The amount of physical and emotional weights of what they do might scare you, but to Kathie, a positive spirit and by taking on life with the flow is what kept her standing strong to this day. “We can’t change unexpected life challenges, just embrace it, and learn from it along the way,” said Kathie. Shone also hails from Inanam in Kg Pomotodon, a cosy neighbouring hometown just nearby to Kathie’s. An adventurer and risk taker himself, he is also humble with an approachable personality. His success is from his drive to never give up and a constant will to improve. Cooking has always been his passion and his determination took him to New Orleans, USA where he worked with Marriott group for 2 years and learned new culinary skills. He later came back to Kota Kinabalu to start his own business. Before the Shoney’s Dining & Bar -as we know it today, Shone himself went through a couple of failed attempts in starting his own business. It then got reignited from a little boost of motivation and encouragement - through a thoughtful little recipe experimenting for a group of Vegan Yoga enthusiasts at Nuluhon Garden Retreat one day, and it became a candle of hope with excitement to tackle the food & beverage industry again. What goes around comes around is among the top life principles embedded in him in everything he does – from cooking behind the scenes, training the team and running the business in general, he does it in a down-to-earth way and makes sure it is sustainable long-term. This is also applicable to his personal passion for outdoor activities, as he is one of the leading committee members for Sabah Land Rover Club which involves heading out to expeditions, and occasionally for family camping trips with the kids to enjoy what mother nature has to offer. Coming back as a couple, their first successful business was Shoney’s Dining & Bar at Gaya Street. It quickly became a popular eatery and caterer in Kota Kinabalu. Their growing number of customers constantly gave good reviews. When asked what’s the secret? The couple replied, nothing fancy. Just great chemistry and good coordination between the couple’s responsibility and getting the right team. It was down to getting hands on and training the people with patience. Shone and Kathie encourage people from the rural areas to work with them and train them with the skills needed. Empowering their team with the right

attitude and seeing them grow and earn for their own family has been a great accomplishment as a boss, no matter where they come from. Until today, hardships are still undeniably there, but are manageable. Running reputable F&B brands like Shoney’s Dining & Bar and Happy Place was not only the beginning of their journey, but they have also undergone learning experiences in managing the team, building a great work environment and most importantly, sustaining the business. Currently they are also running F&B outlets like Sumibiya which focuses on Japanese cuisine, and an upcoming Halal Café, as well as precooked food is down the pipeline for the future. Kathie and Shone are looking forward to taking things slower to focus more on auto-piloting their outlets through training and quality control for their foods to serve their customers better. They are also actively giving back to the community through off-road expeditions with Sabah Land Rover Club, as Ex-co and regular members for Corporate Social Responsibility (CSR) projects of the club, as well as working with various NGOs such as Malaysia Red Crescent Society (PBSM), Rotary Club and Yayasan Dakwah Islamiah Malaysia (YADiM). It goes to show that they try to give back to the community through service contributions as well as growing the rural community as much as they can. And these thoughtful initiatives are the ones making differences, a step at a time. Still more to come for this couple. Until then, one thing is for sure, always remember to ‘Stay Humble and be Truthful to yourself ’. Cavities, also known as tooth decay or caries, are permanently damaged areas in the hard surface of your teeth that will develop into tiny holes. It’s caused by a combination of factors including bacteria, frequent snacking, sugary drinks, and not cleaning your teeth well. It’s also caused by plaque build up, which is a sticky substance that binds to teeth. Everyone is at risk of having cavities but some have a higher risk of developing it. Those risk factors are dry mouths, eating disorders, lack of fluoride, and acid reflux disease. More often, cavities develop in the back teeth as they can trap food particles and are harder to reach when brushing or flossing. There are a few treatments to help treat cavities. You have the option of getting an early stage treatment, tooth fillings, crowns, or even root canals. Each of these options depends on when and how severe the situation is. Harvest - a festival of thanks

H

arvest is a time of plenty – and it is celebrated all over the world to give thanks for a successful crop as the season approaches its end. It is a happy time, when people give thanks for positive things. In the UK there is a Harvest Festival which happens on the Sunday closest to the harvest full moon, around the end of September or the beginning of October, called St Michael’s Mass or Michaelmas. I remember bringing food to put near the altar at church when I was little – I think because we weren’t farmers I brought a can of baked beans! Didn’t matter. It was all given to people who needed it. The Jewish Harvest Festival is called Sukkot, which means the Feast of Ingathering or the Feast of Tabernacles. It is celebrated after, the third of the great Annual Festivals, Rosh Hashanah, at the end of the year. It is a very old festival, dating back to pagan times, bringing villages together in an essentially agricultural community. It can be traced to the fifth century when the cult of St Michael spread to Western Christianity. In the Middle Ages it was a huge religious feast, and the harvest traditions we know now grew from there although they are much muted today. Then there were fairs with market stalls and games, and churches decorated in autumnal gold. People also ate geese on this day, said to bring financial protection for the next year. A great procession would lead in the last wagon-load of corn from the fields, with a band, banners and decorations. From Saxon times, (more than a thousand years ago) straw corn dollies were made out of the last sheaf of the harvest – it was believed that this contained the spirit of the corn. The spirit was supposed to be descended from the Roman goddess Ceres (think cereal) and was called The Maiden, The Neck and the Mare. The dollies decorated the banqueting tables and were kept until the next spring to make sure that year’s crop was good.

I attended a Kaamatan in my first year in Sabah and was thrilled to be included in such a heartwarming and fascinating day. There was lots of food and drink, and I almost like tapai now! Dancing (my sumazau is legendary, believe me!) and chat. I watched rituals led by bobohizans, and appreciated beautiful traditional clothes (and the beautiful women in the Unduk Ngadau pageant, even though this is not something that is part of my culture today). An uplifting and for me completely unusual day. This comes out of ancient indigenous animism, which few people believe in today, I understand. Nevertheless, the old traditions are still respected and valued. I salute Sabah for being a state that celebrates difference of this kind and allows all faiths to flourish. Real communication, in fact. Long may it last.

People took care not to anger the spirit so they would line up at a distance and throw their sickles until the corn was cut, so it could not see whose did the actual cutting. In the Welsh Borders the straws would be tied into four bunches, to represent the legs of a horse, before the sickle-throwing commenced. In Devon and Cornwall the corn dolls would often be kept above the hearth and ploughed back into the land the following Plough Monday. Then there was a harvest tea or supper, which everyone attended. Food and drink was followed by dancing and merrymaking, which often got out of hand and was disapproved of by

hat’s the first thing you think about when someone mentions modern living? Technology perhaps? Technology that we once thought was impossible or considered magic. You might have thought about our modern age and how different this generation is compared to the last. Well, for me, the first thing that popped into my head when I saw the word modern living, was quite literally modern design. I thought about modern designs in a home and what it feels like to live in

a modern home! Please tell me I’m not the only one! Oh well, since modern interior design was the first thing I thought of, that’s exactly what I’m going to talk about! When you search up aesthetics on pinterest, how often do you feel drawn or end up picking a modern house design? With so many different aesthetics such as cottage core, dark academia, Y2K and more, most people seem to be more drawn to fantasy. Almost everyone would end up picking the castle looking house or a cutesy, adorable house. Modern home designs seem to have become the new basics. Modern interior designs are all about a sleek and clean look. Making your home look more like art than an actual home. Of course, who hasn’t seen those modern Japanese home channels. I used to wish every home could have a smart system to control everything from the lights to the TV! Well, I guess we technically have it now as a lot of new condos have incorporated smart systems into their locks as well! But, when you focus on making your house look like a fancy art museum, you end up creating something less homey. Sometimes, living in such a modern setting can feel cold and lonely. While others fill their home with memories and handmade arts and crafts; you’ve tried to perfect your home into something for display. We are already surrounded with so much modernity in our lives. Why not make our home the only place we can relive the past?

unduk ngadau: sabah's beauty queen

I

n Sabah, Kaamatan is one of the biggest celebrations the state celebrates annually. If you ask anyone what makes it special they’ll definitely say the atmosphere and the time spent with friends. Though, there is one more thing that completes the modern Kaamatan festival. This is the Unduk Ngadau. But, what is the Unduk Ngadau? It’s basically the beauty queen of the Unduk Ngadau beauty pageant that is held annually. It’s held to commemorate Huminodun’s spirit, a maiden said to be of total beauty of heart, mind, and soul. As the myth goes, Ponompuan, the daughter of Kinoingan and Sumundu, sacrificed herself to save her famine-stricken people. From that, her flesh gave rise into rice while other parts of her body also became edible food for her people. She was then called Huminodun which means “transferred sacrifice”.

The pageant is unique to Sabah and is the most recognisable cultural event. Ask any Sabahan about it, they’ll surely know what it is. The first ever pageant was held in 1960 in Penampang. 25 contestants participated in it and was ultimately won by Mui Lan. Initially, a big number of contestants were mainly from Penampang, but as it grew in popularity, other districts had their own representatives as well. In 1995, Sabahans residing in Peninsular Malaysia were also invited to participate in the pageant. The way the pageant works is, contestants will participate in district level competitions first. The winner of each district competition will then represent their respective districts in the state level pageant. The winner of it all will be crowned the Unduk Ngadau. As she is commemorating Huminodun, fans of the pageant believe she is supposed to exude a high level of moral and become a role model to the younger generation of the community. The Unduk Ngadau pageant has evolved through the years to become not only more competitive but also more entertaining. An example would be the reformed question-and-answer round in 2012. In 2020, it was suggested that the pageant would be held online due to the pandemic but was then canceled, marking the first time that no winner was crowned.

Personally, I don’t think going fully digital is the way to go for the pageant. Organizers should innovate with the system and add a round where contestants are asked to accomplish traditional tasks. Maybe it’ll bring excitement to the pageant while exploring the significance of Kaamatan itself and the culture we came from. At the end of the day, the Unduk Ngadau will always be the reminder of our roots.

e don't often see restaurants serving traditional Sabahan food, while most of those who do are missing an “authenticity” factor. Well, HOUSia has got the said factor dialed in. HOUSia, a combination of “house” and “saya” (my), is one of the many food kiosks located in Funky Farm Food Court in Kepayan and was established by friends Casey, Mackdowell, and Oziel. Once you walk into the food court, you’ll easily spot the charming stall in green. While only being in operation for a month, they’ve already massed regulars who enjoy their selection of dishes. Apart from the authentic taste of the food, HOUSia also differentiates itself from other restaurants by serving their dishes in bamboo “plates”. The main dish they serve is the Tavantang Set. It includes a serving of brown rice, fried basung (mackerel), salted fish and egg, plus tuhau, hinava, losun, and pickled mango/bambangan (depending on the season). They complement each other through the different flavours that each has to offer. Apart from the set, they also serve Pandan Chicken and Tuhau Fried Chicken. The Pandan Chicken has a hint of sweetness to it while the Tuhau Fried Chicken has a generous serving of tuhau on each piece of chicken wing. Lastly, you can wash the food down with a refreshing mug of lemon grass. In the future, they’re planning to include more dishes from other Sabahan cultures, and not just centred on Kadazan Dusun Murut food. Jon’s Recipes: Where Sweet Met Savory

ewly relocated to one of the Inner Corners of Damai Plaza, Jon’s Recipes (JRs) was founded by two food passionate friends Marcus and Jonathan who saw an opportunity and took the risk in the midst of a pandemic lockdown to set-up their little café. What started out as a café serving just coffee, other beverages and desserts, their customers began requesting for savory dishes. Today, Jon’s Recipes kitchen is bustling trying to keep up with customer’s orders of both savory and sweet treats.

Their Midnight Brownies are also made to order and yes, they’re as superbly gooey on the inside – scouts honor!

As we entered the café, its small but charming interior gave us with a warm welcome with a reading chair paired with a minimalist lamp on the left corner and a few tables and chairs strategically located. If you are there with friends, a cozy couch with a large table and chairs are located at a private corner.

Everyone loves a classic pasta dish because they do not disappoint and the utmost popular would be the spaghetti Bolognese. At Jon’s Recipes, their Aussie Beef Bolognese is slow cooked to perfection. Now whenever you slow-cook anything, you would know it will melt in your mouth and this dish does! The sauce is rich and silky, and clings lovingly to the pasta; the beef is tender and soft, it literally melts in your mouth. Slowcooking the Bolognese sauce creates rich browned flavors, while ensuring that the meat stays tender. This traditional red meat sauce requires a long simmer, but it is worth the time to really bring out those flavors.

The main specialty of Jon’s Recipes is their made to order soft cookies. Yes, you get your cookies super freshly baked while you eat, drink and relax; and you cannot get this anywhere else but Jon’s Recipes. This café boasts one of the best homemade cookies I have ever come across. They have a selection of mouthwatering 40

If you’re feeling adventurous, I would suggest trying the Shasouka (also spelled Shashouka). It is a classic North African and Middle Eastern dish and one that’s eaten for breakfast or any meal of the day. It’s made from simple eggs poached in a sauce of tomatoes, usually with olive oil, peppers, onion and garlic, as well as, spices; and is vegetarian. It’s also a runny egg lover’s dream dish, as you dip and lather it with toasted bread. The late celebrity chef Anthony Bourdain once called Sarawak laksa “Breakfast of the Gods” and JRs Sarawak Laksa recipe is from the kitchen of Marcus’s mother. So this dish is the closest as you can get for a scrumptious bowl of laksa. It’s the perfect balance of heat from the laksa paste consisting of sambal belacan, tamarind, lemongrass, herbs and spices with a little coconut milk. This unique fusion is not found in any other type of laksa. Served with rice vermicelli, omelette strips, shredded chicken, beansprouts, prawns, fresh coriander and lime, this bowl of laksa’s broth is thick topped generously with large succulent prawns and chicken chunks, it has the perfect balance of aromatic herbs and spices with a subtle hint of sour-ish and chili note and not overly rich and creamy. JR’s laksa is available in 3 sizes, Try Try (S), Ok Cukupla (M) and Laksa King (L). And then came the Ultimate Polo Bun Burger and melted away all our worries. A classic burger with a twist of the old fashion polo bun that gives a tinge of sweetness as you sink your teeth in it, along with the spot-on balance of flavours from the melted cheese, caramelized onions and an excellent smashed 120g Aussie beef patty. It hit all the right notes and reminded us of the flavour we didn’t even know we were looking for. The other must try burger is the Prawn Burger, made from I promise 99% pure

Lotus Biscoff prawn patty, a signature homemade tartar sauce, perfect fries and sesame side salad. Both dishes have very few ingredients but come together perfectly like a match made in heaven. While or after inhaling their spectacular feast from the humble menu, you should just bloat your tummies more with JRs excellent milkshakes consisting of the Signature Peanut Butter and Biscoff Lotus. If you asked me which was my favorite? BOTH! Another go to place for fantastic milkshakes if you have no idea where to go, be daring, try something different! There’s more to the menu at this friendly neighbourhood makan spot. Don’t let their simple menu fool you, they surely pack a punch and their cookies…will literally make you go crawling back for more.
