EDITORIAL TEAM Hello Breeze readers, September is here and we bring to you another Malaysia Day themed issue. On our Cover is Dymphna Simon, a Sabahan deaf poet who made waves after winning the sign language poetry category at the “American Charm” International Festival Online Competition. She became our country’s pride and proved that disability is not an obstacle to success. Get to know her better in Personality. The pandemic has affected the event industry in Malaysia and has shifted events to be held online. In Feature, we get to read and have a look at Malaysia Carnival Virtual 2021, Malaysia’s first online carnival. The carnival is a taste of more similar events to come and how local products & services will be promoted in the future.
Speaking of going online, the same is happening in the local tourism industry until it fully recovers. In Report, we look at the recently held Sandakan Heritage Trail Virtual Tour, an online tour of the famous trail that showcases interesting historical attractions in Sandakan. Hopefully more virtual tours like these will be held to continue to create awareness of our local attractions. AUGUST 2021 INSTALLATION OF LOUIS TAN AS NEW ROTARY CLUB OF PENAMPANG PRESIDENT Kota Kinabalu, 20 August 2021 - Louis Tan has been officially installed as the new Rotary Club of Penampang President along with his newly appointed 18th Board of Directors. The installation was held online via Zoom during the ‘Installation of President Louis Tan and the 18th Board of Directors of the Rotary Club of Penampang’ on 20 August 2021. KENINGAU LIONS CLUBS & RELA NATIONAL DAY BLOOD DONATION DRIVE Keningau, 31 Aug 2021 - Lions Club of Keningau Mandarin, Lions Club of Keningau Host and RELA Daerah Keningau successfully organized a blood donation drive, in conjunction with 2021 National Day. With the support of Keningau Hospital’s blood bank and Red Crescent Keningau, a total of 132 pints of blood was collected. This is by far the most successful blood donation drive that was organized by the Lions Clubs in Keningau, surpassing all previous records. According to Lions Club of Keningau Mandarin President Mr Wilson Gan, the blood bank in Keningau is in short supply due to the ongoing pandemic. Furthermore, Keningau also has the highest thalassemia patients in the state of Sabah, putting an even greater pressure on the blood bank supply. He hopes that more blood donation campaigns will be organized to help with the blood bank supply. The event was a success thanks to sponsors Cocoa Kingdom, Green Buddy, Tong Fong Coffee, Carlsberg Sabah (t-shirt) and Kapitan Anthony Chong.

Church. It was built in 1890 and was the first stone building erected in Sabah, and also avoided major damage during World War II. The virtual tour also stopped at the Sam Sim Kung Temple, which is believed to be the oldest standing building in Sabah and contains a wealth of information on Sabah’s early history. This tour did unfortunately skip four stops that is normally visited during the physical tours. This was due to the time constraint the team faced during the live shoot. The spots they skipped were the Remains of the Old Stairs, Goddess of Mercy Chinese Temple, the Malaysia Fountain, and Sandakan Heritage Museum. Nevertheless, when we are able to travel again, everyone is invited to join the physical tour and visit the sites in person. This tour not only allows us to “get away” so to speak but also provides a safe space to learn and travel to historic landmarks in Sandakan. Or should I say, “Sabah’s Little Hong Kong”.
27 August 2021, Sandakan - A virtual tour of the Sandakan Heritage Trail was held live on this day at Tourism Malaysia Sabah’s Facebook page. The tour was hosted by CK Teo and Mem Umie as they walk along the trail, visiting the historic sites along the trail. The aim of the virtual tour was to provide a safe space for everyone to experience the trail from the comfort of their homes during this pandemic. Throughout the Sandakan Heritage Virtual Tour, the hosts walked along the 2-hour trail while introducing the historical sites and giving fun facts along the way. They also presented questions to the viewers and offered gifts and prizes to those who commented with the correct answers. The hosts made their first stop at Masjid Jamek, the first mosque in Sandakan built in 1887 and still in use today. The hosts then proceeded to visit the William Pryer Monument, which was built in remembrance of Sandakan’s founder and first Resident of the East Coast under the British North Borneo Chartered Company. The next two stops of the tour are the Stairs with 100 Steps, believed to have been utilized by the Chinese community before or during British rule, and the Agnes Keith House. One famous site among locals and visitors is the St Michael’s and All Angels

MALAYSIA’s first virtual CARNIVAL
T
his past year or so has been tough when it comes to event management. There’s been back and forth on whether events are allowed, plus with the Standard Operating Procedures being changed a lot, not everybody is familiar with which ones are current or outdated. That is why many have opted for online events as it is a much safer bet. Well, one event that recently happened was truly a unique experience compared to most online events we’ve seen. That is the Malaysia Carnival Virtual 2021 which happened on 6 -15 August 2021 at www.malaysiacarnival.com The virtual carnival is the brainchild of Miss Malaysia Kebaya (MMK) spearheaded by its President & Founder Dr Jason Hee Jee Pin and business partner Nicole Fe Lynne. It is the first of its kind in Malaysia and is an innovative idea and concept that highlights unity through diversity and culture. It was created given the ongoing Covid-19 pandemic and has brought vendors, entertainment, and various activities directly to visitors through a newly developed homegrown high-tech virtual platform. The whole project was intended to drive the nation to support local businesses which have been hard hit during these challenging times, especially our local brands and Small-to-Medium Enterprises (SMEs). Online shopping and delivery services have become highly recommended options these days. Changing consumer habits,

with extra screen time faced by everyone these days, Malaysians have discovered more local businesses with quality products to shop online. However, Malaysia Carnival was not only limited to online shopping. The carnival featured flash sales, giveaways, games, online performances, online workshops, beauty, health & fitness activities, online talks, charity, and more. Now, how did this virtual event differ from other events we’ve seen so far? Well, with the help of the technology developed by Virtualtech Frontier, visitors were given a landscape to roam and visit booths set up by SMEs that took part in the event.
Malaysia Carnival Virtual 2021 was truly unique as it brought many of us together even if it’s only through our computer or mobile screens. It has helped introduce many SMEs, especially local Sabahan businesses, to the eyes of a wider consumer base. Plus, it’s given us a glimpse of what’s possible in the virtual world, both in terms of interactivity and safety, especially in these trying times. Let’s hope that more technology such as this gets innovated and implemented for future virtual events to come.
Visitors were also given the chance to customize their personal avatars that will be used to walk about the “event halls”. It looks like a bunch of characters from “The SIMS” are walking about interacting with their surroundings. To put it simply, it looks like video game characters (which they kind of are) interacting in a video game world. These characters can visit booths, live concerts, and even seminars and talks. The booths were organized, or separated, by halls to make it easier to find them rather than having them in one giant landscape. The developers and organizers thought of everything as they implemented a directory for you to easily search a specific booth and directly “teleporting” you to said booth. And to make sure visitors didn’t get overwhelmed, the developers and organizers set up tutorials and goals to achieve as a guide, just like many video games today. Sabahan SMEs were also invited to participate in the week-long virtual event. Among the local businesses that participated were the ones under the Department of Industrial Development and Research (DIDR). These include Lados Lados Sdn Bhd, Heera Enterprise Sdn Bhd, Jenny Collection, Hajah Yanong Frozen, Food Enterprise, Twinine Sdn Bhd, Rosmie Snack Industry Sdn Bhd, Al-Sultan Enterprise, Everlasting Mus Sdn Bhd, Al-Fattah Enterprise, and Chanteek Borneo Gallery. On the 14th of August 2021, Sabah Day was held during the event specifically to highlight Sabah. It was hosted by 2021 Unduk Ngadau, Maya Hejnowska, and featured talks by some local business owners from Sabah’s (DIDR). Also held was the Sabah Cultural Talk Show by Tindarama Dr. Benedict Topin and Tindarama Joanna Datuk Kitingan, in which they shared about the many cultures from Sabah. A talk by Anne Antah of Chanteek Borneo Gallery was also featured as an introduction to the world of Sabah Ethnic Motif in Fashion. As for entertainment, Tagaps Dance Theatre wowed viewers with their fusion of traditional dance.

According to AhBank, his next project along with his team in Foresight Musik will have a retro vibe in nature. They expect it to be released roughly in September, and not only that, they might also release their very own merchandise. For sure, exciting stuff can be expected in due time from AhBank. orn and raised in Tawau, Mohd Fairul Arafad or known as AhBank is a new rapper that has definitely caught our attention! How did he come up with the name? Well, his family members called him ‘abang’ so to make it cooler he decided to change it to ‘AhBank’. Believe it or not, rapping was not a genre that AhBank was used to. Before jumping into the rap scene, he had a band in high school called ‘Foresight’ that later inspired the name for their very own record label. In his teen years with the band, they played mostly Metalcore. He started to venture with rap songs when AhBank and his brother showed a great interest in a Korean reality TV show called ‘Show Me The Money’, where underground Korean rappers gather for a rap battle. That is how he began to learn hip hop music and even though most people would stereotype that hip hop promotes violence, it is not the case for AhBank. He sees it as a medium for him to express his thoughts creatively. “Mostly, everything or anything that happened around me inspired me to write my own lyrics”, said AhBank. So far, AhBank has 17 songs that are produced and sung by him. Recently, on 15th August to be exact, AhBank just released his first very own EP called ‘Masa’. In this extended play, AhBank has included 4 catchy tracks - ‘Bosan’, ‘Mahal’, ‘Masa’ & ‘Okay’. With the help from his team in Foresight Musik, this EP was completed in just 3 weeks. Before his first EP was released, AhBank had produced a few songs such as ‘Keep It Real, Best For You’ & ‘Bawang’, but according to AhBank, his recent song ‘Masa’ had left a great impression on him. AhBank would like to give a shout-out to Focussan, Fez, Mr Ameth, Imanboii, Yungjiks, Luqs, senseDyello, GrizzLee, dimple, N. A. W, Baitisan for the amazing verses for his EP MASA. And also to MIA and RORITRONICS for the visual and artwork. If he had the chance, AhBank would want to collaborate with well known K-pop star Jay Park but that has to wait for now. But

Samsung’s Z Brothers Now onto the bigger Z Fold3, which on paper doesn’t show too much improvement. It’ll sport the same Snapdragon chipset as the Flip3 but with 12GBs of RAM and a choice between 256 or 512 gigabytes of storage. The biggest change made is the display for the cover display, which is now a 6.2” Dynamic AMOLED 2X screen with an adaptive 120Hz refresh rate with the added support for Samsung’s S Pen. It’s also 10 grams lighter and is just a slight bit smaller in form factor compared to the Fold2. However, this does come at a compromise because the battery has 100mAh less capacity at 4400mAh. One concern that many have regarding foldable smartphones and screens is the durability of these devices. Well, Samsung has addressed the said concern by focusing on the durability of both their Flip3 and Fold3. First off, both these devices are IPX8 certified, making it water resistant when submerged into 1 meter of water. The covers for both devices are now made out of Gorilla Glass Victus, improving the shatter and scratch proofing. The hinges are also improved with Armor Aluminum to further enhance the durability. Last but not least, the Infinity Flex Display of both the main screens of both devices ensure 80% more durability compared to past iterations.

ompact, multi-purpose, and even nostalgic. These are just some words I can describe Samsung’s Z line with. Of course I’m talking about the Z Fold and Z Flip, because Samsung has recently introduced the third iterations of both these folding devices. So, let’s find out what are the improvements that Samsung have made to make their already unique smartphones better. Let’s start this off with the smaller of the two. The Z Flip3 5G (Flip3) now sports a better 6.7” Dynamic AMOLED 2X display. As usual with Samsung’s top of the class display, the colours are vibrant with blacks that are very deep. This time, the screen features an adaptive refresh rate of up to 120Hz for a fast and snappy feel when scrolling through your media. Speaking of which, the Qualcomm’s latest Snapdragon 888 is used as the Flip3’s chipset along with 8GBs of RAM and either 128 or 256 gigabytes for storage. Other important specs have not received any significant upgrades though, as the battery and camera are practically the same since the first Z Flip. However, the secondary screen is now bigger at 1.9”.

So, would you be picking up either the Flip3 or Fold3? The Flip3 is personally a favourite for me as it brings back memories of the flip phones. Having the option to turn your phone into a tablet for a bigger display with the Fold3 is also very tempting. However, with price tags starting at RM4000, it sure makes me wonder: are they worth it?

ou know what really grinds my gears? Minor annoyances by road users who don’t see the issue in what they’re doing wrong. I get it, all of us make mistakes, including me. But the fact that there are so many people doing the same thing can get annoying and dangerous to other road users. Here are just some things that I’ve noticed people do that are downright annoying and dangerous. First off, let’s just mention the cyclists. You guys are awesome for taking care of your bodies in ways that not many people do. But to some, please ensure that you obey the rules of the road. You are NOT exempted from these rules. I almost hit a cyclist exiting a roundabout the other day as he cut me off out of nowhere. I’ve also seen cyclists simply making lane changes without signalling their intent. There are also those who run red lights, block a whole lane, and cross the highway at a very slow pace. Speaking of signalling, it still bothers me that some drivers still don’t use their indicators when changing lanes. The worst part is the sudden change in lanes when this does happen. However, those who do use their indicators need to be careful as well. Don’t forget to turn your blinkers off because it can cause confusion and unwanted accidents. Plus, make sure you know where you’re going to turn because some drivers simply put on their blinkers and turn the opposite direction.

To the food delivery riders, I’d like to thank you for your hard work in these hard times. However, to some, please do keep in mind you don’t need to break the law on the roads to deliver the food. Please don’t go against traffic or make illegal U-turns on top of the road dividers because the legal U-turn is a few meters further. The sad thing is, it isn’t only motorcyclists that are doing this, cars and trucks are also guilty of these things as well. Another thing that will affect traffic flow is randomly stopping or parking in the middle of a road or U-turn. If you have an actual problem with your car, turn on your hazard lights and put up the warning triangle. Plus, find a way to immediately move it away from flowing traffic. Look, this isn’t just a random rant. Some of these issues we face on the road will mean life or death when an unfortunate event happens. Please do be safe when you’re on the road for your own safety and others.
Expanding Recycling Efforts

leaning up plastic from our rivers, oceans, and surroundings takes a huge effort from everyone. There’s also the case of what to do with the collected plastic? The best thing we can do is recycle them, right? But what equipment do we need and what type of space is enough to store them? Well, Future Alam Borneo (FAB) is currently working on how to combat these issues and continue engaging the public in keeping Sandakan plastic free. Let’s just introduce FAB before we go into their efforts. They are an organisation that seeks to create opportunities, connections, and platforms to showcase Borneo’s ecological potential to a broad audience. To put it simply, FAB organises events and programmes to bring awareness of environmental issues in accessible and fun ways to get the attention and participation of the public. FAB works with environmental and nature experts to share knowledge with the public as well.

They established the Sandakan Plastics Solutions Project with the goal of collecting floating plastic at sea, recording, and sorting it for processing. From the processing, the rubbish can be converted into much more useful products. FAB is working together with Yayasan Hasanah, which provides financial support, as well as the Sandakan Townhall as community partners. The collection of the plastic uses a litter trap which was designed by a Dutch organisation called Clear Rivers. In addition, the plastic processing machines are built from open source blueprints by Precious Plastics. FAB has continued the effort and recently received a boost when SIMocean, a group of students from the University of St Gallens, Switzerland managed to raise a further RM24,000 - giving FAB a 40-container space to transform into a recycling hub and add

4 Sets (Set 1-10 Reps, Set 2-12 Reps, Set 3-14 Reps, Set 4-16 Reps) SETUP • Come to a full plank position. EXECUTION • Release one palm from the floor, bend the elbow and reach out to the tap the opposite shoulder with your fingers. • Control your movement as much as you can without causing the core and hips to sway around too much. • Repeat on the opposite side.

Dymphna Simon: Poetry in Motion
ymphna Simon is an 18-year-old Sabahan who proves that disability is not an obstacle to success. Dymphna, a hearing - impaired student, recently secured the first prize in the sign language poetry category at the "American Charm" International Festival Online Competition. She delivered a poem about a local ancient tale of a mythical creature known as 'Ngakak,' a mythical creature feared by the locals. The poem was written by Dymphna's teacher, Sirhajwan, who encouraged her to join the competition. Dymphna's first attempt to enter such a competition and won first place showed how talented she is.
Breeze (B): Can you introduce yourself? Dymphna Simon (DS): My name is Dymphna Simon. I'm from Kampung Nuluhon Baru Kiulu. I am the third child among my 8 siblings. I was born in Queen Elizabeth Hospital, Kota Kinabalu on the 24th of March 2003. B: How old were you when you found out that you had a hearing problem? DS: I found that I had a hearing problem when I was just 2 years old. B: Where do you go to school? And are you currently pursuing a degree at any university? DS: I started my study at Kolej Vokasional Keningau in early 2020 and still am studying here. B: What challenges do you face in school? DS: One of the challenges that I face in school is when we have to undergo carpentry tasks where we have to build a shelf, chair, and table from used wooden furniture. Sometimes it could be tiring to do the work. However, I still patiently want to get it done and complete it enthusiastically.
B: What hobbies or interests do you have and is there any curricular activity you have been involved in before? DS: My hobby is playing badminton. Before this, I was also associated with Pandu Puteri. B: When did you start taking an interest in poetry? DS: I became interested in poetry performance when my teacher first introduced it to me. My teacher fully supports me and guides me on how to do poetry performance by using sign language. B: Can you tell us your experience when participating in the “American Charm” International Festival? DS: In my experience, when I participated in the festival, I needed to do many preparations. One thing that is important for me is to get my emotions to be at peace. I have to be calm and be entirely focused before delivering the poem. B: How did you feel when you won the competition? DS: I was extremely touched and happy about my accomplishment in the competition because this was the first time I had participated in such a competition.
B: Will you continue to compete in poetry performances in the future? DS: If I had the chance, of course, I would love to join this kind of competition more. B: Do you think sign language should be taught in school? DS: In my opinion, a school should have made sign language compulsory. So that other students can communicate more effectively with students that have a hearing impairment. B: Any message for those who lacked confidence in what they do? DS: My advice to them is, don't be shy or embarrassed when facing difficult and challenging things for us. We have to keep a high spirit of learning, be brave, and believe that we can definitely do what we love.

ately, we’ve heard startling news of people including friends and relatives testing positive regardless of being fully vaccinated. While it does give a ray of light to be able to move around more freely with current SOPs, achieving herd immunity is still the end goal. Although being fully vaccinated lightens our burden of worries, it does not guarantee your wellbeing. Although the vaccine reduces your chances of contracting the virus, getting vaccinated does not guarantee you won’t contract Covid-19. As a matter of fact, our front liners put their lives at risk on a daily basis as they treat patients directly. Some of them have also contracted the virus again even after recovery! With the increasing number of people doing their part in getting vaccinated and completing their second doses, everyone is still encouraged to practice self-quarantine at home to reduce the spread of the virus. You may have completed your vaccine doses, but just like any common cold, we can still catch it every now and then - especially when cases are still on the rise. WHAT CAN YOU DO WHEN A CLOSE FRIEND OR RELATIVE TESTED POSITIVE FOR COVID-19
1. CONDUCT CONTACT TRACING AND IDENTIFY CLOSE CONTACTS
Any recent meeting with someone is a potential risk for you and those living in the same house. Try to trace back on your movement and who you’ve met the past 14 days. It is highly recommended to self-quarantine whether or not your test kit says positive or negative, this is for the safety of your own family and to avoid exposing the virus to others. 2. INFORM MUTUAL CONTACTS ESPECIALLY THOSE FREQUENTLY MOVING AROUND
It is good practice to inform and remind others when you are on self-quarantine. Do encourage others who are within your circle of friends, colleagues or family to practice similar measures especially if they frequently run errands. This way, we can not only prevent a cluster, but also provide an ease for mind for ourselves and those around us. 3. STAY RESTED AND TAKE NOTE OF SYMPTOMS
Flat out be aware of your own health, if something feels off – get some rest or check in on your temperature. Drink more water and eat nutritious food. If it’s tasteless. Well, we all know what that means. A good remedy to try would be to diffuse Eucalyptus essential oil which is believed to help with cough, ease in respiratory conditions, ease joint pains and a few other benefits that will help you recover along the way. 4. n Britain we have our saints – St George for England, St Andrew for Scotland, St David for Wales and St Patrick for Ireland. Each has a day, although many of us don’t know when it is, and our celebrations are little more than a warm fuzzy feeling inside. And St George, who was the one who slew the dragon, probably didn’t. It’s pretty much acknowledged he is mythical but it’s nice to have him all the same. National days, national costumes – they were useful in their way. We all want to belong. People like national characteristics – things about other countries that are part of their identity. The Germans wear their lederhosen, and wave frothing steins of beer about. The French are smooth and seductive, and know their wines and cheeses, and French women are thin and elegant. Italians eat pasta, wave their arms about, drive too fast. I could go on. But in this day and age, these are dangerous and outdated suppositions. The world is getting smaller and people are travelling far more (Covid excepted, but when we have learnt to live with this, we will start getting about again). The edges are getting blurred as we learn that people are people, and national characteristics are too simplistic to define whole nationalities. I have just come back from France. Yes, the food is lovely. There is something very good about lunch for a small amount of money, cooked well, with three courses and a glass of wine, eaten at a table in the open air in weather that is warm but not suffocating. Yes, they like their cheese and their wine. But they are also interested in reading and writing and watching UK and American imports, and one lot of friends had just come back from two months of yoga in India. Bah dis donc! We Brits, to everyone’s astonishment, aren’t all that polite, not really. There are some wonderful so-called polite expressions which I list here with their translations. I had to learn what Sabahans mean too, of course. Silence doesn’t mean agreement, or that something will happen. It means I am not going to concern myself with that – too much effort, I don’t know where to find out, that sort of thing. It took me a long time to realise when I first came that although people smiled and said we should meet for coffee, it just wasn’t going to happen. Not for a very long time, anyhow. I waited for a phone call or text; I knew hardly anyone and wasn’t sure about life in KK. Locals, who remain always polite, are so nice to be with, charming and interested at dinner or a lunch, simply weren’t forthcoming. It has taken some time for me to understand this as a normal thing, and not to take it personally. National Day is great for celebrating Independence and highlighting achievements and prosperity but national characteristics are far less easy to pin down by an old-fashioned simplistic assumption any more. We are citizens of the world, in that rather hackneyed phrase. We need to get along with each other, appreciate and accept our difference and our similarities, assimilate good things from other countries and celebrate those of our own. We won’t manage Covid until we are all vaccinated, in my opinion, but there are plenty of people who prefer not to have a jab. Personally, I feel this is selfish and unhelpful, but I must also accept that everyone is entitled to their opinion. I just wish that our opinions were backed up by research and facts. We like information that supports our own opinions of course, and come from people we know and like. This is dangerous, but very human. I just hope we can be aware that we are all in this together and try to have a thought for our fellow people. Enjoy your National Day, Malaysia. Relish your independence and your singularity. Feast your eyes on the costumes, the flag, the ceremonies. But remember we all have a place in the world.

erdeka! Merdeka! Merdeka! 31 August 1957 marked the independence day for Malaya. Every nation has their own significant anthem that they are proud of, and for Malaysia it is ‘Negaraku’. Have you ever wondered who composed the melody? Who even wrote the lyrics? The melody of Negaraku wasn’t composed by the locals. In fact, it was composed by a Frenchman named Pierre-Jean de Béranger and the melody is originally called ‘La Rosalie’. The tune La Rosalie is quite popular and before it was chosen as the national anthem it was used by various artists. In Indonesia the tune was used for a song called ‘Terang Boelan’ in the 1920s and there’s even a Cantonese version. Then in the 1930s an English version was created called ‘Mamula Moon’ with a Hawaiian twist by Danny Vaughn. Later, a song called ‘I Shall Return’ by Anne Shelton also used the same melody in the 1940s. Still wonder how it became our national anthem? It goes back to 1888 when the Sultan of Perak was invited as a guest by Queen Victoria. The sultan’s assistant was asked what’s the anthem for Perak, embarrassed that they don’t have an anthem, he then
hummed a familiar tune that he heard in Seychelles and that tune turns out to be La Rosalie. From that moment onwards, the tune became the state anthem of Perak. Later in the 1950s, Malaya was about to gain its independence and in search of an anthem. A competition was organised to compose an anthem for this new nation. Over 500 entries from all over the world but each one of them was rejected. At the end, they tried to choose from the eleven states' anthem and on 5 August 1957 they decided on the Perak Anthem as the new national anthem as it has a “traditional flavour” to it. The lyrics were written by the judges of the official national anthem contest and Tunku Abdul Rahman himself. National anthem ‘Negaraku’ was first sung by our first national choir group on 31st August 1957, during Merdeka Day as portrayed in ‘Getaran Pertama’, a short patriotic film by Celcom with 3.6 Million views. After 64 years the anthem was created, in this present moment we can still feel the spirit of independence when singing the song. It is played in school assembly and in important events. The anthem is also played when Malaysia athletes win sport tournaments such as the Olympics and Football. I’m sure all of us are proud to hear our anthem being played in a national event. As a beautiful nation, we must respect our national anthem because it is not just a song. It is our identity and it is our pride.

CINNAMON ROLL Ingredients 1. 1 cup warm milk. 2. 2 1/2 teaspoons instant dry yeast. 3. 2 large eggs. 4. 1/3 cup salted butter. 5. 1 teaspoon salt. 6. 1/2 cup all purpose flour. Filling 1. 1/2 cup salted butter. 2. 1 cup packed brown sugar. 3. 2 tablespoons cinnamon. 4. 1/2 cup heavy cream.
Frosting 1. 6 ounces cream cheese. 2. 1/3 cup powdered sugar. 3. 1/2 tablespoon maple extract.
Method 1. Pour everything in a bowl. 2. Let dough rise for 2 hours. 3. On a flat surface, dust flour and roll the dough to 0.5’’ into square. 4. Add filling and roll the dough. 5. Cut the dough into 6 pcs. Place the cut dough into the mould. Egg wash the top and bake for 15 to 20 minutes. 6. irst Station Nasi Lemak (FSNL) opened a few months ago in Lintas Plaza. It’s part of other stalls in a shop lot called Kokomo, which is in the same row with Maybank in Lintas. As its name says, this charming stall specializes in nasi lemak. Their nasi lemak features the usual sides of cucumber, peanuts, and anchovies. Though, what differs nasi lemak from each other are the sauce, or sambal, prepared for the dish. Some are too mild while others go for a very spicy sambal. The sambal made by FSNL themselves is right in the middle. The spiciness is paired with a slight sweetness that goes well with the overall dish. For those who can’t stand spicy food, this is a good dish to dip your toes, or tongue, into the world of spicy food. The sambal also pairs well with the spiced chicken thigh that is included with the nasi lemak. The chicken tastes and smells great, especially when you eat it with the sambal. The best thing about the dish is it’s under RM10. So, for that price, you’ll get a full meal that will certainly fill your stomachs. Apart from the nasi lemak and spiced chicken thigh, you can also enjoy juicy fried chicken wings, with or without the nasi lemak. ewly established in May and having opened its doors in June, Times Three café is owned by siblings of 3 which represented their café name. Their humble beginnings began as they have always been interested in the F&B scene and with culinary and hospitality backgrounds among the siblings, it was all set up for reality. As a family-owned business, they are very hands-on and are constantly at the café every day. The food you eat is cooked and prepared by the co-owners, also the head chef who has 4 years culinary experience in Taiwan, while the cakes and tarts we enjoy were made by the lovely sister. Rest assured that heart and soul is definitely put into every meal served. The café houses a simplistic aesthetic yet carries a clean and modern concept for their interior. Located above 1st floor in Lido Plaza, the café is spacious and good for your everyday coffee break, meal for the day and even cozy enough for single work stations for flexible workspace. When we think of Times Three café, their Signature Smoked Duck pasta always come to mind. However, another hidden gem 34

among the variant of menus that is highly recommended, is their Assam Pedas Pasta - a fusion of Malaysian and Western – this tangy flavourful plate will surely leave you appetizing for more! The Assam sauce is entirely made in-house and it packs a punch in flavour to your tastebuds on the first bite yet the sour spicy kick gets you excited for more. Served with plenty of prawns, this aromatic dish is plated out so well, the sauce is coated for every bite. The price and portion are also reasonable, definitely worth a try!

Another new addition to their menu is their Squid Ink Pasta! With flavourful garlic and perfectly seared seafood to top it off. Definitely a personal favourite especially for those who prefer dry sauces yet still getting those satisfying flavourful bites. Another noteworthy dish on the menu is their home-made Meatballs in Gravy. Handmade from scratch, their meat balls are made with their own original recipe mixed with herbs and seasoning that are suitable for pasta. You can also have it on its own from the Snacks Menu. TT Beef Burger is also available for those who prefer a bread option. The main highlight of this burger is the sweet caramelized peach - bursting with sweet juice that tones down the beef patty, a match that surprisingly pairs well with fries on the side. Aside from Pasta and burgers, Times Three café also serves a variety of menus. For rice lovers, their Lamb Stew rice is highly recommended! 3 hours worth of slow-cooked tender lamb, served with warm steamy rice. The Lamb Stew tasted like a warm home, and it’s perfectly portioned and the meat is tender with a light flavourful Asian touch. Of course, not forgetting their bestselling tarts and cakes! With limited freshly baked tarts daily – you’d love to get your hands on their all-time favourite, Signature Indulgence Chocolate Tart for that impactful rich chocolate or Matcha Chocolate tart made with Niko Neko Matcha. The crunchy crust texture is thin yet balances just right with the rich creamy filling, with its own hint of secret recipe that is unique to Times Three café’s tarts. What a wonderful match with the perfect level of sweetness too!

Their cakes are also alternated with Early Grey Lychee, Peach Mango and a few seasonal flavours aside from their daily Matcha Roulade, a matcha cream filled roll cake topped with fruit slices which is also a local favourite. If you’re a fan of Biscoff with the current fave, their Signature Chocolate Biscoff cake is also a good choice with wonderful bites of caramel biscoff cookie crush. While they opened during the lockdown, their major concerns were more on delivery. Prior to signing on delivery platforms, the team hand - delivers their orders, and with restrictions during the past months, managing café orders and deliveries was challenging. Now with delivery platforms running they have more time on their hands. Their chef changes the menu every month, including new dishes and desserts.
