We collect food for the less fortunate, send gifts to children who wouldn’t otherwise receive them and attend fêtes that raise money for worthy causes. Christmas gives us the time and inspiration to take stock of all the things we’re grateful for and to give back. And that’s fantastic. But this issue, Style is celebrating some of the people who take giving back that little bit further. On page 63 we meet members of three non-profits who all dedicate a lot of their time to worthy causes and have helped to change lives for the better. The theme of celebrating those who make a difference continues with our charming cover interviewee Nickie Vella De Fremeaux – a celebrated lawyer who’s known for fighting out against causes that threaten families. She has also spoken about her experience of postnatal depression in the hope of raising awareness. And then there’s the fact that’s she’s a dedicated mum of five! Her story is on page 15. So, with all of them in mind, we’re determined to take our festive desire to make a difference out there into the real world and keep it going all year long. That’s the Style challenge for 2013 – we hope you’ll join us! Here she chats to Jo Caruana about her trademark blend of style, organisedchaos and passionate determination, as well as why being a mum will always come first.

“Work keeps me sane, but being a mummy comes first.”

Imagine the home of Nickie Vella de Fremeaux as we meet to photograph her for our cover. There’s a delightful sense of excitement in the air – her five children (the youngest just over a year old) marvel at the cameras and excitedly get their hair done for their own starring moment, while the latest additions to the family (two sprightly kittens) run all around us. Meanwhile, we add to the chaos with our multitude of equipment and demanding schedule. At the centre, though, Nickie is as calm as can be – choosing her outfits and simultaneously managing the household with a wide smile. It sums her up perfectly – a glam mum and lawyer with a very strong character, coupled with the enviable ability to take everything in her stride. As she smiles for the camera while concurrently ensuring afternoon snacks are handed out to her brood of five, you can’t help but admire her. This, in her words, is her story.

I think of myself as a multi-faceted person – I’m a very serious hands-on mummy, yet I like to have lots of fun with my children and this has kept me young at heart. On the flip side, I am a lawyer dedicated to my work and have a no-nonsense policy. Either way, I have firm values and beliefs, and I go ahead with this no matter what it entails. It hasn’t always been easy, though. Back when I was Appogg’s lawyer for four years, I was physically assaulted in court on a few occasions. It was daunting, but I wasn’t afraid, in fact I couldn’t have cared less. I am perpetually driven by a desire to stick up for the weaker person in any situation. I genuinely care about my clients and try to make a difference. Of course, my most important role is being a wife to my husband Adrian (Delia), also a lawyer but in commercial litigation, and a mum to Alexandra, 9, Francesca, 8, Christian, 6, Benjamin, 4, and Nicholas, who just turned one. I can’t say that I longed for motherhood before it came my way. Adrian and I got married when I was 28, at which point I felt completely fulfilled. I loved my career and my life, adored spending time with my four dogs, and enjoyed travelling at the drop of a hat. I felt complete. But when I had Ally a year-and-a-half later, I became completely addicted to being a mummy and I couldn’t get enough of it! Having five children is crazy and very chaotic, but I absolutely love it. When we knew we were going to have Ally I had to make the decision whether I wanted to leave her with a nanny and go back to work, or be a stay-at-home mum as much as possible. As soon as I got pregnant I knew I didn’t want someone else to raise my children, and while I do get a little bit of help, no one takes over my role as mother. There’s no leaving my children at home sick to go to court, or missing special occasions with my children for the sake of work. They come first and foremost – even if it sometimes comes at a personal price. I believe you reap what you sow and that the solid relationship I have with my children is proof of that fact. Work keeps me sane, but being a mummy comes first and I feel very fortunate to have the people around me to make that happen, such as my parents, my husband’s family and, of course, Adrian himself. Adrian is my complete rock. He’s the only person I know with a stronger character than mine and that’s what works. He knows me so well and does everything he can to make me happy. We niggle like other couples, but I know he loves me to bits. I may have always thought of marriage as being all about love and romance, but in addition we’re such good friends and have so much fun together – that’s what it is really about. It’s a true partnership and works on all angles. When I hit rock bottom – with post-natal depression after the birth of my second daughter – he was there every step of the way. Often people are embarrassed to talk about the condition, but it’s so important to turn to the people around you and to understand

what’s happening. Motherhood is such an incredible transition in your life; you need all the support you can get and post-natal depression is nothing to be ashamed of. It needs to be dealt with and overcome. Even today there are challenging days, when nothing seems to go to plan, but I work on balancing my time as carefully as possible – if I’m late by just five minutes everything goes bonkers! I’m a big believer in finding time for everything, including family meals. We sit around the table every day, to talk, joke and discuss. It’s a huge part of who we are. And that just gets even more wonderful at Christmas time, as I absolutely adore family gatherings. We always hold the

festivities at our house, with around 28 people around the table. I make the turkey and wake up at 4am to ensure it’s just right, and everyone else contributes something lovely. It’s such a fun day and I really do look forward to it. I hope Christmas will be a lovely mix of glamour and comfort – and I think in many ways that sums up my own way of doing things. Even when it comes to fashion, I am just as happy in loungewear as I am dressing up in a designer outfit and heading out to a party. It’s all about my mood, but the older I get, the more I enjoy dressing up. I’ve reached a point in my life when I no longer feel it necessary to try to dress to impress, so I just go with my

own flow. And now that I’m not having any more children, I look forward to increasing our contingent with more wonderful pets – to join our two dogs and two kittens. I can’t wait to travel more and show the children the world, and to watch them grow up and become the people they want to be. In addition, I want to do as much as I can to ensure that children, and other victims of any form of abuse, are adequately protected, both in the legal circle and outside it. Once my kids are grown, I will go back to fighting for victims of society in the fearless way I did in my pre-mummy days! I am very excited, though daunted, by the future.

NICKIE’s My favourite designers are Cavalli and D&G; they’re just very me and I adore their fit, prints and style. I believe a carefree fashion sense comes with age. Venice and New York are my favourite shopping destinations, simply because the atmosphere is so delightful. It’s all there to be explored on foot and very romantic, so you don’t mind spending an extra buck! My wardrobe staples include my Levi’s jeans, the track suits I live in and a really ghastly Etna cardigan that I bought over a decade ago and which keeps me so warm. On the flip side, there are my lovely animal patterned dresses, my Lagerfeld 60s-style prints and Galliano outfits, which I am happy to wear again and again. While I tend towards the designer dress code in the evening, by day it’s a completely different story. When pregnancy adds 38kg – like it did with mine! – clothing can be an issue. But my maternity style advice would be to enjoy it and flaunt it. Being pregnant is so beautiful. What’s my hobby? Sleep! I wish I had more time for it and miss it so much. My husband does give me a lie-in on a Sunday though – it’s such a luxury. My favourite place in the world would have to be Alaska. Adrian and I went there on our honeymoon and I was bowled over by the nature. I wanted to dive right in with the whales! An African safari is next on my dream list. My family is definitely something I can’t live without, though a few years ago I would have said ‘being a lawyer’. I’m also so grateful for my health – I lost a friend recently and it is a huge trauma to this day. She left two young children – Cesco, 9, and Gianni, 6 – behind and they lived with us for a while; watching them go through it is heart-breaking. They have become very important members of our extended family. Health is something we all take for granted until it’s gone, and I really value it every day.

By the time I was 13, I had already started helping out in industrial kitchens and would move from place to place learning as much as

I could. I started training when I was 16 and then travelled and worked in many top kitchens in Europe. They inspired me so much and I have never looked back. In fact, in January an international molecular gastronomy specialist will be joining Tarragon for six months, which will be our next exciting step.

I always try to create something unusual – we think outside the box so as to combine special ingredients and infuse them in ways people wouldn’t have seen before. As a chef patron I ensure the laundry is clean, the kitchen spot on, the tax paid and ingredients top quality. The list is endless! I have a lot of admiration for

international chef patrons, including Ferran Adrià and his brother Albert. I have tasted their food and it was incredible. The local restaurant scene has improved drastically, especially in the last two years. I think we are on par with the rest of Europe now. We may not have the finance or volume, but we have the quality and talent. I absolutely love cooking for anyone who loves food. People who are interested in what we do really inspire me and they encourage me to be my best. Opening Tarragon has been a definite highlight of my career – although refusing Kevin Costner was pretty unique too! We were full, there was nothing I could do. In this job it’s easy to burn the candle at both ends, but I do need to relax to be inspired. That’s when I finally clear my head and disconnect – a bottle of wine helps! Of course that won’t be happening

much over the festive season, although I try to find as much time with my family, wife and three children as possible. After Christmas Day lunch I am all theirs – I’m really looking forward to it! Marvin’s gourmet tip: Never freeze food – it changes its taste, texture and natural oils. Sisters Ramona and Roberta Preca run Palazzo Preca in Valletta, and are involved in the running of family restaurant Tal-Familja in Marsascala. Food is so much to us: satisfaction, love, power, passion, happiness and more. It’s something we both grew up surrounded by. So it comes so naturally to be involved in this business, and our whole world now revolves around it. Our food ethos is always to keep things simple and easy, but we love experimenting with new ingredients. The ‘wow factor’ is vital and we like our food

to excite our patrons as much as possible. Our favourite ingredients are garlic, basil, extra virgin olive oil, rucola, good quality chocolate, good quality butter and nuts. We take our ingredients very seriously and always try to choose the freshest and the best. It’s better to spend a bit more than to buy cheap, lower quality produce. Being a chef patron means taking the restaurant from start to finish – from the maintenance of the place to coming up with practical (yet rousing) recipes. It’s all about blending business with food, but pleasing our clients comes first. Building on the family business and developing it has been a highlight, and we look forward to doing more in the future. We’d love to open some sort of foodie chain. I think Malta has come such a long way recently – it’s almost unbelievable. We’re proud to be part of that. We admire several international

chefs, especially those in the molecular gastronomy movement – such as Heston Blumenthal. We’d also love to cook for Gordon Ramsay, as he’d be sure to give us an honest critique! Foreign chefs inspire us, as does travel. We could never accept that we were good enough and just rest on our laurels. As for Christmas, we’re already looking forward to it by playing carols while we make sweets! Although we’re working, we try to get into the spirit of it. We have never had a full family Christmas (although we make up for it in January), but we are working on that for the future! Ramona and Roberta’s gourmet tip: Use the best ingredients you possibly can – you’ll taste the difference. Michael Diacono is chef patron at Giuseppi’s Restaurant in Mellieha and Rubino’s in Valletta. Aside from family, food means everything to me. I know it’s a bit of a cliché but it’s true. I grew up in a well-known foodie family and it’s always been a major part of my life. I suppose I am addicted to it. When it comes to cooking my style is simple, but good. I believe it’s important to promote our region and I like to use

Maltese produce whenever possible. I love cooking with pasta and fish, but when it comes to the latter we’re not as spoilt for choice as we’d like to be and we’re overfishing. I do think the restaurant industry needs to consider sustainability in its choices; awareness is important. I’m proud to see how the local gourmet scene has changed and improved since I started. The markets have opened up more, people are spending more on food as a form of entertainment and they have become more demanding and discerning. In turn, we are offering better options and venues. As a chef patron the buck really stops with you – it’s not all negative; there’s huge satisfaction that comes from being recognised for the food you create but it is hard. The business side is a killer – and the festive season is especially tough to juggle, though I do take Christmas Day off now. At the end of the day, it’s a genuine comment from a happy customer that really makes it all worthwhile. There are several international chefs I admire, but I was always most drawn to French chef Raymond Blanc who runs Le Manoir aux Quat’Saisons in Oxfordshire, England. He was one of the first chefs I ever saw on TV, and I admired his calm

and collected approach. That’s just what I used to be like – but not so much these days, unfortunately! My own inspiration isn’t always easy to find, but regular breaks help. There’s nothing worse than burnout, as being stale is never a good thing. Travel is a great source of motivation. The people I’d most like to cook for in the world? My father and sister – just one more time. They passed away a while ago, but I’ll never forget how much they loved Jerusalem artichokes, so they’d definitely be on the menu! Michael’s gourmet tip: Don’t overdo it or try to impress. Simplicity is always best. Marvin Schembri is the chef patron at Sicilian eatery Sciacca in St Julian’s. Food is literally my whole life – several of my family members are chefs so it’s in my blood. I appreciate food and love eating it too, probably even more than I enjoy cooking it! In my restaurant we focus on simple flavours and the very best ingredients. I am creating Sicilian food, which is all about the concentration of the finest things that the region has to offer. literally ‘stress’! It takes up 24 hours a day, from the running of the business to the cooking, of course. It’s A-Z, but the flip side is that it is very satisfying. Opening the restaurant has been a real highlight for me, as has been the success I have enjoyed since. I definitely think Malta’s foodie scene has improved no end. Our clients are so much more educated now – they know what they want and are curious about what they’re eating. The standard has shot up and we’re easily on par with the rest of Europe. When it comes to international chefs I admire, my choice falls on Angela Heartner – she was Gordon Ramsay’s protégé and is English with Sicilian roots. I respect her creations – really simple, ingredients-focused dishes. I also really like the owners of the River Café in London. I have eaten there and loved the ‘wow factor’ of their food. Just like me they don’t believe it should be all about plating and the ‘look’, but about the taste and flavour. With that in mind I feel very honoured to have hosted some very special people at Sciacca – although I treat absolutely everyone with equal importance. Recently I was thrilled when President George Abela – a family friend – dined at the restaurant. As for our menu, it just happens – although my fabulous team also provides much of the inspiration. My favourite ingredients are olive oil and good salt; I believe they can transform any recipe. As for Christmas? Well, it’s just like any other period but even busier. We don’t cut corners so we have to work harder, but I do have a lovely family Christmas celebration on 26 December to make up for it! Marvin’s gourmet tip: Inject passion into everything you cook. You can taste it when it’s there! Mark Zerafa is chef patron at Zeri’s in St Julian’s. Food is one of life’s fundamental pleasures – people’s joke that it is as good as sex is for a reason! There’s an art in understanding what flavours work well together and what blends best.

My food ethos revolves around simplicity, because I believe that fresh, delicious ingredients deserve to be given the space to shine. I don’t use butter but am a big believer that the right olive oil can really enhance food and bring out its flavour without overpowering it. As a chef patron I believe in trusting the people around me – knowing they are following up on what you’ve asked them to do and keeping the team together. If you keep your people happy, then they are going to produce something good. Once the chain breaks, it’s time to move on.

Making a success of Zeri’s (both the first, smaller Zeri’s, and this one at Portomaso) has been a definite career highlight. I never went to ITS, but started as a dishwasher in a restaurant and worked my way up. It’s been a long but pleasant journey, with the help of my family and team. Today the whole industry has improved tremendously. It partly stems from the fact that chefs today have gotten their local training at ITS, and then moved on to work at hotels and restaurants around the world. But clients have also become more demanding. They know what they want and are even experimenting more in



STYLE In-DEPtH their own cooking at home. I have a lot of respect for Jamie Oliver on the international scene. He’s on a completely different level and is spurred on by wanting people to eat better. He is casual and aims to please, both in his own kitchen, and by encouraging people to recreate his dishes at home. My own inspiration definitely comes from travelling. I’m a real Mediterranean chef at heart – I love anything from the sea – but there’s a lot out there too. Next up is Zanzibar. I find so much inspiration in the exotic – like being able to buy something unusual at a market and to cook it on a beach. This Christmas will be hectic, but I do enjoy the atmosphere. Knowing you’ve played a part in your guests having a great night makes up for the hard work. I take Christmas Day off though and enjoy it with my family. They are, after all, more important than anything else. Who would I most like to cook for? Obama. I would love to meet him and tell him I think he’s done an amazing job. Mark’s gourmet tip: Don’t use butter if you can help it! Let a food’s real flavours shine through.

A Historical Note Bulgari was founded by Sotirio Bulgari, a Greek silversmith who, having moved to Italy in 1884, opened his first shop on Via Sistina in Rome. At Home in Malta

As the expat community continues to blossom, Style on Sunday meets three sets of successful foreigners who have all chosen to make the islands their home.

“There’s plenty to keep young internationals happy here – and there’s so much bubbling under the surface.” – Ashley Head of writing for TRC, the international family entertainment company, all-American girl Ashley Mansour has made herself at home in Malta. This will be her first Christmas on the island. “I was living in London when I heard about the job at TRC,” smiles Ashley. “I admit I didn’t know much about Malta at all when I signed up, but I quickly fell in love.” Now heading the team responsible for

creating the story behind TRC’s new family entertainment product, which will be launched globally next year, Ashley first made a name for herself writing a young adult book series. “I love writing for young people and that’s what led me to TRC and Malta. I couldn’t resist the chance to write the story that underpins everything this new product will be.” Almost a year later she’s very happy with

her choice, and now lives in Sliema. “I adore the weather. I’m originally from southern California, so I’m used to the heat and feel very much at home. But it was actually the history of the islands that blew my mind most of all! I found it fascinating and have loved exploring the highlights.” Ashley definitely thinks there’s enough to keep young internationals in Malta, especially as the technology and digital

sectors are set to blossom even further. “It’s all bubbling under the surface and I think we’ll see huge changes soon. “It’s also easy to get to know people and I have made great friends. I’m not even slightly bored; in fact I never have the time to do all the things I want to! Of course it’s never going to feel like a big city and I’ve come to accept that things won’t always work perfectly, but you have to get into that vibe and go with it.” This will be Ashley’s first Christmas in Malta and she’ll be spending it here, while also popping to London for a few days. “I went home for Thanksgiving which was great but I’m looking forward to a Maltese Christmas. I love the traditions that underpin life here and can’t wait to experience them. I’m even starting to feel like a real local – ID card and all!”

Although they are both Dutch, Jessica and Remco Slik met and fell in love in Malta around ten years ago. Simultaneously, they also fell in love with the island. They subsequently decided to stay and raise a family here. “It was while on holiday in Malta that I met Remco. We fell in love and that was it. Before long I moved to Malta so that we could be together,” Jessica recalls, as we chat in the kitchen of their new boutique hotel in Birgu, Palazzo Vittoriosa. Some time after they got married (in 2006) Remco sold his business and they had to reassess their situation. “We decided to stay in Malta. Our dream was to restore an old building in Birgu or Valletta – we saw over 100 houses, but nothing we particularly liked. Disheartened, we set off on a ninemonth trip around the world.

“Once back, Remco passed by this house on his way to buy the paper and we checked it out. Empty for 30 years, it was in a disastrous state but we fell in love with it. Built by the Knights, we felt it would be selfish to keep the house to ourselves. So, as we both love entertaining, it seemed natural to rent out some rooms.” After meeting with the Malta Tourism Authority, which “was extremely supportive”, they went ahead and started their new business venture. Both love the island and agree that it is the best place to bring up their young son. “What’s more, the weather is better and our social lives are more spontaneous. “I found it really easy to blend in from day one,” Remco concludes, adding that the weather contributes to a more relaxed atmosphere.

“In our daily life we don’t miss Holland; however there are times when we feel that Malta’s size is a bit restrictive. Back home we could just set off to Paris, which I do miss at times. “At this time of year I also miss the traditionally cold and snowy Christmas; family, friends, the cold weather and dark nights,” Jessica admits. “But our son will have the opportunity to go to a very good school, in a safe environment and be exposed to different languages. The downside is that we can’t really take him over to nanna and nannu for the afternoon. Missing family and friends is definitely the major drawback, as other than that Malta is perfect,” they agree. Martin Pettersson is head of partnerships at Highlight Media Group, as well as a popular event photographer. Originally from Sweden, he now lives in Swieqi with his fiancée Susan Ismajlova and her daughter. “Back in 2007 my business partner and I were planning to open a company in

Barcelona when we popped to Malta for a holiday,” Martin recalls. “We were instantly struck by the islands and our trip changed everything. We loved the fact that we could communicate so easily in English here. Plus we were taken in by the warmth of the people – and the weather! So we set up the office here instead, opening a telecoms business in 2008.” Although that Malta office didn’t stay open for long, and Martin moved back to Sweden for a spell in 2009, it wasn’t long before he was back. “I was miserable,” he says. “Before I knew it I had quit the telecoms industry, moved here and gotten an apartment – even before I had a job! That was four years ago, and everything since has fallen into place.” Now very successful in the gaming industry, Martin is completely immersed in the Maltese way of life. “I have lots of local friends and make the most of what the islands have to offer. I love the fact that you always know someone who knows someone; it makes it so much easier to sort things out.”

Martin also enjoys the easy connections to the rest of Europe. “I know I can pop to Italy or Spain if I want to. But I’m rarely bored, especially as I make the most of life here. I love heading for lunch in Valletta, exploring Senglea or getting lost in Gozo. The culture is also brilliant and there’s so much to do. On the downside, things often don’t go as smoothly as you’d like them to, but I believe the benefits outweigh that. “I’m also a fan of the nightlife, especially in summer when the options are endless. I’d like to see more upmarket outdoor clubs opening their doors, as well as better facilities for those who come here by yacht, but we’re doing OK.” Martin also finds Malta a great place to bring up children. “My fiancée and her daughter are very happy here. It’s safe and there’s lots to entertain children. We do miss the nature and forests, but that’s why we travel – I’ll be off to Stockholm in the New Year and somewhere further afield after that. But in the interim, I’ll be enjoying a great Maltese Christmas – hopefully with lunch outside in the sun!”

The Maltese are often characterised as a generous and giving nation, willing to offer their time and money to help those in a less fortunate situation. Chiara Bonello speaks to five individuals who have found the time to work for a cause close to their hearts. Photography by briangrech

Simon Zammit is a businessman who, in his free time, set up SwimAid – an organisation that encourages individuals to give back. “We’ll do whatever it takes, as long as we enjoy doing it and are helping other people in the process, as that is what keeps us going. We encourage people who have some time to spare to do something they enjoy, while at the same time giving something back to society,” Simon says resolutely.

Last September SwimAid organised a swim to raise funds for Joseph Bugeja, a man who was electrocuted while working on the Cirkewwa bypass. He lost both legs and his right arm, as well as sustaining serious damage to his left arm. “When I heard Joseph’s story it touched me and I wanted to do something to help,” Simon says. “I had already participated in a swim around Gozo, with my friend Sammy Attard, to raise funds for the Malta

Guide Dogs Foundation in 2011. “We immediately spoke to the head of prosthetics and were told that Joseph needed a state-of-the-art prosthetic arm, which would set him back around €40,000. “On 8 September 2012, myself, Sammy Attard, Roberto Demicoli, Gilbert Bartolo, Kurt Arrigo and Josef Cardona set off on our swim around Gozo. Unfortunately I did have to stop, as I had just been unwell, although I did try my hardest to keep going. So far we have raised €33,000. The arm has been ordered and Joseph is receiving therapy. “My ethos is that if we’re lucky enough to be fit and healthy, then we should be helping out – nobody forces me to wake up at 5.30am daily! Hopefully we will find a cause to raise money for next year.” The support Sarah Kennard and Natacha Zammit have found since launching ‘Little Gestures, Great Results’ has been tremendous, so much so that it has encouraged them to continue to work for this cause. Chances are that, if you’re sitting at a table with three other people, three out of four of you will have been affected, directly or indirectly, by cancer. “Our idea is to raise funds on a micro scale, and channel them to various cancer charities and foundations,” Sarah explains. “Both Tacha and I have lost a parent to cancer, and felt the desire to contribute in some small way. After much discussion and visions of major events, we came back to reality and realised there is no need for grand gestures.” Thus, ‘Little Gestures, Great Results’ was born. “We wanted to host small events, as cheaply as possible, so as to make a difference in our community. As a result, our first event was a private party among friends, but rather than bringing a bottle of wine or gift as usual, we asked for a small fee for food.” Fortunately, people responded

immediately; and offers to prepare food and donate raffle gifts came pouring in. “Before we knew it we had enough food and booze for 60 people, who all enjoyed a great night out with friends. We also organised a hilarious raffle, thanks to the gifts donated,” Tacha explains. “Following on from this success, we were invited to host a summer party on a larger scale, again through generous offers from people. At this point we officially roped in Helena (Mamo) and Francesca (Ganado), who had already lent a hand during the first party. Again, the feedback was overwhelming and before we knew it we had a summer porchetta for 200 people,” she smiles. In the three instances a small entrance fee was charged, and a raffle was held at the first two events. “In the time since we set out, our foremost point of pride has been that our overheads were incredibly low – all down to the bigheartedness of people. We recently held our third event, a quiz night for 40 people in conjunction with Chez Philippe, and

plan to hold more. We simply want to do our bit to help ease a painful, exhausting and stressful experience – in whatever small way we can. “We always make a presentation board thanking all our donors. Although our events are small and low key, we have so far managed to buy TVs for the UK flats belonging to Puttinu Cares and helped buy equipment for the Cancer Foundation at Sir Paul Boffa.” Twelve years ago Petra and Peter Ellul Vincenti, who have been married for 28 years, returned to Malta keen to share the benefits of ‘The Marriage Course’. “Many couples say the fun stops after marriage, but this doesn’t have to be the case if they continue to put each other first and make time for fun weekly date nights,” Petra explains. “This is precisely what we insist on with couples following our Relationship Skills course. We try to give them the opportunity to make their marriage work

because we understand how tough it can be. After all, it was after seven years of marriage that myself, and a reluctant Peter, attended the first session of The Marriage Course while living in London. “Despite his unwillingness, Peter’s immediate reaction was that we needed to share what we’d learnt with as many people as possible.” She points out that the course is also open to those who simply want to protect something dear to them. “People were sceptical, as they were afraid the course was akin to attending counselling or Alcoholics Anonymous,

but eventually realised it gave them a bag of skills they could use in their relationship,” Peter explains. “Although men are often dragged along by their wives, by the second or third week, they are often enjoying themselves even more than their spouses! It helps them to get in touch with their feelings and start communicating effectively with their wives.” Petra adds that their first participants were close friends, who they were at school with and who still help them on the course today. As leaders for Cana Marriage Preparation courses held at St Julian’s Parish Church, they also work

closely with Fr Joe Mizzi and Fr Claude Portelli. “Personally, I do it because I really believe marriage is the backbone of a healthy society. I think very little is done to protect the institution of marriage these days,” Peter says, as Petra nods in agreement. “Marrying the right person is not a matter of luck, but something you have to work hard at. Stylish Yet Affordable… Style on Sunday test drives the Hyundai iX35 Gone are the days when sophistication, class and comfort were the exclusive domain of European car manufacturers. Over the past decades, Japanese car manufacturers have made significant inroads by providing reliable and economical cars that cost less than those produced elsewhere, particularly in Europe. Now, even major South Korean manufacturers are making large strides in this segment. It is not simply an issue of producing cheaper and more economical cars. They are also delivering classy, sophisticated vehicles equipped with all the trim and extras that are found in the executive range manufactured by some of Europe’s renowned brands. Certainly, the ix35 is yet another bold

statement by car giant Hyundai that the Korean car manufacturer is not only able to deliver safe, economical and affordable cars – it can also compete on the level of sophistication, quality, road handling and trim level. Hyundai have produced various successful crossovers or SUVs but perhaps their bestever SUV is the ix35… and its achievements are noticeable on many levels. First of all, it is aesthetically an eye catcher – it’s a cool car to be seen in. Secondly, the refinement in the cabin and the quality of its interiors are of a very high standard; the same can be said about the features and the equipment on the ix35. The model comes in three different levels:

All three levels are very well equipped; obviously the level of trim and features reach an optimum level with the Style Pack and it is at this level that the car can also be ordered with a 4x4 transmission. The entry level pack, namely the ix35GL Classic Pack, nonetheless includes many features and is very well equipped with extras – that are frankly still listed as expensive optionals by other brands – including air conditioning, a number of air bags, electric mirrors, sound system with six speakers, steering remote controls, remote control central locking with alarm, trip computer, tinted glass, alloy wheels and many others. The entry level engine is a 1.6-litre petrol and the price tag is indeed more than competitive at a starting price of €21,500. The Hyundai ix35 is available in four line-up engines: 1.6-litre and 2.0-litre petrol engines, and 1.7-litre and 2.0-litre diesel engines. We test drove the second tier level of the ix35,

the GLS Comfort Pack, equipped with a 1.7-litre diesel engine, and the road handling as well as the drive were remarkable. First of all the car takes bumps very well – it really is well suited to the local environment as it handles excellently on turbulent surfaces, even if the car is accelerating. Road handling, even in sharp corners, is also a definitive plus point for the ix35 as notwithstanding the height of the vehicle, it is very much glued to the ground. The acceleration was equally surprising as the ix35 is fast and quiet. Only if you open the windows do you realise that you are indeed driving a diesel engine powered vehicle. The level of sophistication – even at this level – is also commendable: climate control, leather steering wheel and leather and cloth seats, steering remote controls, automatic light controls… all in all the ix35 Comfort Pack gives you the sensation that you are in an executive car. The only difference is the price tag. Again, gone are the days when only the few could afford to buy a luxury and stylish, well-equipped SUV.

This festive season the lips really do have it – and while berry is all the rage for clothing, crimson is the make-up colour to be seen in. Here’s the step-by-step guide to seeing red this Christmas.

STEP 1 Create a flawless finish with foundation and

powder. We achieved this using Givenchy’s Eclat Matissime – a light, liquid foundation that gives a matte, radiant, natural and unified complexion, and is easily applied with your fingertips or a foundation brush. We topped that with Le Prism Visage – a pressed powder with an ultra-fine, light texture.

STEP 2 Next, dust the cheeks with a light coloured blusher, contouring as necessary to bring out those cheekbones. Givenchy’s CROISIÈRE Healthy Glow Powder, which illuminates the skin with light sunlit shades, is ideal for this. STEP 3 Keep the eyes simple, so as not to compete with the bold lips. Use light earth tones and a dash of 78

mascara to get the right definition, without overdoing it. We love Noir Couture, a mascara that conditions, curls, lengthens and gives volume to lashes (available in black and brown). Top tip! For lash perfection, place the brush at the base of your lashes and gently twirl towards the tips for lush curl, volume and length. Repeat for added drama.

STEP 4 This look is all about the lips so let’s get to it. Your perfect crimson pout is just a few steps away… - Make sure your lips are soft and hydrated before applying a heavy pigment. This can be achieved with a good quality lip balm, scrub or lip primer. - In order to enhance the true colour of your lip pigment, block out your natural lip colour by applying concealer over

the lips and blot. - Apply the lipstick using a lip brush, starting at the centre of the lips, working your way to the corners, slowing building both shape and intensity of colour as you go along. - Outline the lips with a matching lip liner, blending it into the lipstick. This will create a defined, precise shape. We absolutely recommend Rouge Interdit – so much more than a lipstick, it’s a must-have accessory, especially in this season’s iconic shades. Top tip! For an even more professional pout, accentuate the threedimensionality of your lips by contouring them with a slightly darker lip liner. For this look we’ve combined two of the hottest trends for winter: the simple, crisp elegance of the equestrian look and the lavish, decadent allure of the baroque trend. Follow our step-by-step guide to achieve it too.

STEP 1

Start with a clean, crisp base. First, use a good concealer to cover any problem areas or pigmentation. Then, apply a really good foundation – such as Guerlain’s Parure de Lumière, which keeps skin smooth and hydrated. Then set with a matte translucent powder.

STEP 2

Accentuate your cheekbones with a bronzer or brown blush applied right along the natural shadow line. We’ve used

Guerlain Duo Blush (in shade number 1 – Peach Boy) – which is made up of two colours that work perfectly together. Bring the shadow upwards for stronger definition.

STEP 3

For the baroque-inspired aspect of the look, use a palette of jewel-toned shimmery eye-shadows in shades such as jade, amethyst, sapphire and topaz. Our favourite is Guerlain 4-Colour Eyeshadow (shade number 11), which looks gorgeous and is long-lasting and crease-proof. Start with the amethyst tones on the innermost

CHRISTMAS With…

The festive season means so many wonderful things to so many different people. Here Style on Sunday chats to three wellknown individuals to discover the intricate nuances, and delightful traditions, that go hand-in-hand with their Christmases.

Wherever I am in the world, I fly back for Christmas to spend time with my family. We always have a lovely sit-down meal that starts at 1pm and goes on long into the night. Traditionally I host New Year, but this year I am doing Christmas. I can’t wait to get into the kitchen to start preparing! Every year I make ravioli stuffed with Jerusalem artichokes and porcini mushrooms in a truffle sauce – it’s my signature dish. I make other things too – everything but the sweets, because I don’t eat them. My advice would always be to plan ahead. A soup is a great starter – I make hopscotch soup, which always seems to be a hit. I also serve duck with pancakes for the children. They may not be Christmas traditions as such, but they’re our traditions.

The entrepreneur behind Orienta balances her time between Malta and Bali, and is about to launch a new jewellery e-business. As always, Christmas for Mariella will be about family – and great food!

I believe Christmas is very personal, as is festive decoration. Nothing is too much or too little when it’s done to your liking. Fairy lights make me happy to go home, so I put them up as early as possible – usually by the 8th, so I can enjoy them for a full month. My favourite Christmas decorations are the crystal ones on the tree because they shimmer so prettily. But I change things a little each year. I choose the festive collection for the shop at a massive fair in Germany every February, and keep a few hand-picked items for myself.

I did spend Christmas in Bali once, but it didn’t feel much like Christmas (especially because of the heat!). The highlight was mass – celebrated with hundreds of Catholics and really evocative of the true meaning of the season. I do get inspired by my travels though – the festivities in both New York and London are incredible. Being dressed in cosy attire, snuggled up by the fire and looking out at the city’s lights is just magical.

STYLE LIVING My father passed away when I was nine, before which I remember Christmas was great fun. My birthday falls on 21 December so it was always a ‘curious’ time – my birthday presents would arrive in Christmas wrapping and my cake was a Christmas one in disguise. I guess I always felt a little hard done by! After Daddy died it was a little dismal, but I’ll never forget one Christmas memory dating back to when I was four. My friends were round but I had gone into the bathroom so I could read quietly. Suddenly my father burst in and furiously started dressing into a red costume. That’s when he spotted me and I realised that Father Christmas was actually Daddy dressed up. After that, it became our little secret. Now the festive season changes year on year. As an only child, I’m never sure what family will be visiting from abroad, so we tend to decide quite late. This year my mother, Mollie, and I plan to host things at home.

The celebrated artist and writer is also a renowned host. He tells us why, for him, Christmas is all about culture, tradition and… timpana.

We certainly have our traditions though. The Rosenthal dinner service makes its annual appearance. Back in the 1950s, when my mother got married, nearly every young lady would have a Rosenthal dinner service on her wedding list, purchased from Balbi on Cathedral Street. Ours – in the Sans Souci design – is very much a treasure. Timpana also goes hand-in-hand and I think I would be shot if I decided to dispense with it! It’s literally death-by-cholesterol but I have been making this cake-like version for years. The recipe is inherited from the Sicilian cucina baroniale, which, sadly, has all but disappeared in its homeland.

“I think I’d be shot if I tried to dispense with the timpana – it’s one of our best-loved Christmas traditions!” Our house is pretty chock-a-block as is, so there’s only so much decorating I can do. The Christmas tree has a designated space and we keep it chic, simple and silver. The large dining table is also a focus. We do have one Christmas ‘touch’ that stays with us all year round. This beautiful wax Baby Jesus was bought by my mother at a house sale decades ago and was given some muchneeded love and attention. It’s one of her favourite pieces.

In our family we’re true to both our British and Italian roots, which sometimes makes for an interesting menu! Christmas dinner will start with smoked salmon or brodu with tortellini, followed by turkey with all the trimmings, and will finish with Christmas pudding and cassatella Siciliana – and then there’s the stuffed dates and date tart! I believe that a real Maltese Christmas lunch embodies so many different places in the most extraordinary way – and that’s wonderful.




STYLE LIVING Christmas is my favourite time of the year. I love the festive season and the excitement that comes with it, especially for the kids. It also evokes such wonderful memories of my childhood. If it were a white Christmas, it would be perfect! We usually spend Christmas with family and friends. Traditionally it’s a big, long Christmas lunch at my parents’ but the last few years have been spent at home. We are usually about 25 in total, with friends popping by throughout the afternoon. It is the one time of year that my husband contributes in the kitchen. He’s in charge of the turkey and does a great job. I usually cook the ham and veg, and that’s where Jamie Oliver comes in.

Christmas Eve mass is a tradition, and all the children come along. Plus we’re usually woken up at 6am to see what Santa’s brought! All six kids get a stocking – including the 17- and 18-year-olds! When it comes to decorations, we plant poinsettias outside, all the way up to the front door, and put fairy lights in the tall trees. Inside an eight-foot Christmas tree takes up most of the front hall… I love the smell of the fresh pine leaves, although they’re a nightmare when the needles drop off. When we lived in Ireland we used to take the kids to the garden nursery to pick the tree out of the ground. They would cut it there and then, and bundle it in the back of the car. I always buy baubles when I travel and each one has a story to tell.

My favourite Christmas item would have to be scented candles with cinnamon, cloves and fresh orange. Another must-have? My mother’s chicken soup – nobody makes it better! She prepares it weeks in advance and freezes it.

Chicken & Port Pâté on Toast Makes 10/12 pieces 400g chicken liver, 150g butter, 1 medium to large onion – diced or finely sliced, thyme – fresh or dried to taste, 5-6 cloves garlic – roughly chopped or crushed, salt and pepper to taste, 100ml port, brioche or French baguette – sliced, handful of berries Melt the butter. Fry the chicken liver in half of the butter along with the onion, garlic, thyme, salt and pepper. Cook for three minutes on each side. Once cooked, whiz the mixture in a food processor, adding the rest of the butter and the port. Mix together and place in a bowl, then leave to chill until set. Lightly toast the bread, top with a spoonful of the mixture and decorate with one of the berries. Serve.

East Meets West Roll with Smoked Eel and Salmon Makes 6/8 pieces 200g cooked sushi rice, 20g smoked eel, 80g thinly sliced salmon, 1tsp salmon roe, 1tsp black tobiko (flying fish roe), 1tsp Japanese mayo, 1 sheet Nori seaweed Lay the seaweed out flat and spread the rice out on the sheet. Carefully place the eel, salmon and mayo in the middle of the sheet and roll, using a bamboo mat. Once rolled, slice horizontally to make individual portions. Top with the two types of roe and serve.

Spicy Salmon with Tempura Batter Flakes on Cucumber Per canapé 1 piece of cucumber – cut to a 1cm thickness, olive oil, salt, 5ml Japanese mayo, 30g minced salmon, dash chilli oil, 5g tempura batter flakes (bought from an Asian food store), 5g black tobiko (flying fish roe) Mix the minced salmon with the chilli oil, salt and Japanese mayo. Take the mixture and place it on top of the cucumber slice. Top with a drizzle of olive oil, the batter flakes and the fish roe. Serve with a dipping sauce made from a tsp of soy sauce, chopped ginger and ½ a tsp of wasabi.

Roast Beef with a Horseradish Cream and Chilli Jam Makes 12 pieces 1 onion baguette – cut in 12 diagonal slices, 12 slices roasted beef, horseradish sauce, fresh basil – finely chopped, chilli jam Toast the bread and lightly heat the roast beef (this should be served pink). When the bread is lightly browned, top with ½ a tsp horseradish sauce, ½ a tsp jam and the beef. Sprinkle with basil and serve.
