“One is not born into the world to do everything but to do something.” - Henry David Thoreau, American author, poet and philosopher I’m reminded of the above quote as I sit and chat to Michelle Muscat over tea, one afternoon in the run up to our cover photo shoot. Everything around her is busy and buzzing – from her ringing phone (with umpteen requests for meetings and events to attend) to her little girls, who flit around their mum just like all little girls do, stopping for kisses and cuddles every few minutes. But the Prime Minister’s wife is resolutely dedicated to her conversation with me; ours is a topic that is high on her agenda. We’re talking about her future five years in her new role and, though extremely humble about her hopes for it, she is as passionate as can be. She wants to make a difference and plans to touch as many lives as she can – whether that’s through charity work or her own, personal projects, she is on a mission that’s already driving her everyday. You can read more about what she wants to achieve – as well as some behind the scenes insights into her life – in our exclusive interview with her on page 11. And from the gorgeous garden featured in our stunning shoot with Mrs Muscat, to other beautiful gardens, Style is really enjoying the great outdoors this issue. Meeting

Michelle From enthusiastically supporting Malta Fashion Week to lending her backing to a whole variety of charities, Michelle Muscat certainly isn’t resting on her laurels. Here she tells Jo Caruana why she’s determined to make a difference through her new position while also maintaining every facet of her role as a truly dedicated wife and mum. Michelle hopes to restore Villa Francia’s ‘secret’ garden, and to open it up to the public.

It’s a surreal moment when you find yourself locked in deep conversation with the Prime Minister’s five-year-old twin daughters. But here I was; discussing princesses, ballet, fairies, football and fashion with little Soleil and Etoile Muscat, and giggling unstoppably at the charismatic duo who have, unknowingly of course, captured hearts with their wide eyes and huge grins. Sitting beside them is their doting mum, who simultaneously prepares child-friendly snacks, checks homework and gets them into their ballet gear. Michelle is every bit the hands-on parent and she loves it; being a mother is clearly something she was born to do. But, as the wife of the recently appointed Prime Minister, Michelle is also stepping into the shoes of another role – that of the Prime Minister’s wife – and it is a responsibility that she is taking very seriously. From working with charities and raising awareness, to putting her heart and soul into the projects she believes in, Michelle is passionate and determined; and she clearly plans to get a lot done. This, in her words, is her story.

“When Joseph and I met he was already involved in politics, so I can’t complain about the way our life has turned out! I knew what I was getting into. “We were students when our paths first crossed, and we met at a Youth Forum event. I was actually working on a university assignment and needed input from someone who worked in a newsroom – so Joseph (who was working as a part-time journalist) seemed like an ideal candidate. As it turned out, he suggested I speak to his friend instead, but we ended up talking for hours afterwards all the same. In some ways, I think it was love at first sight, and he invited me to help him on a future event, followed by dinner as a form of ‘thank you’. We went to an Indian restaurant that has since become our favourite, and the rest, as they say, is history. We have been a team ever since. “It quickly became clear that politics was always going to be an important part of Joseph’s life, but I never had any fears about it. We were both young and I got interested in it myself, too – politics has a way of quickly becoming part of you, and it definitely became part of me. Clothing available at SARTO. “I think there’s only been one point I felt daunted – and that was when the party lost the election five years ago. We were settled in Brussels at the time and I was concentrating on being mum to the two little girls – Soleil and Etoile – we had tried so long to have. “I knew what moving back to Malta would mean, and Joseph and I discussed it for a whole week before taking a joint decision to go for it. He wouldn’t do it if I wasn’t comfortable and, in turn, I knew I would want to participate and be there for him every step of the way. In the end we went for it – with a joint agreement that our family would still come first and, to this day, it does. We’re both very hands on, and my schedule is planned around our girls. We’re in this together, as a couple and as a family.

“I am dedicated to my new role, though. In fact, what I have been doing so far – and what I plan to keep on doing – is really listening to people and letting my husband know what they are thinking, as well as relaying to them what he hopes to achieve. “Of course I could sit back, but that’s just not the way I do things. I am already excited by certain projects – including the rehabilitation of this ‘secret’ garden at Villa Francia, which is currently in quite a sad and dilapidated state. I want to help make it a space that the public can enjoy; it’s a beautiful garden and it deserves some care and attention. “Meanwhile, ensuring that we stay who we are, as a family, is one of the cornerstones for me; we’re very down-to-earth and I intend to keep it that way. dinner together as often as possible and always try to read the girls a story at night. They’re growing up so quickly and it’s fun to watch their personalities develop; Soleil is really girly and loves princesses and dancing, while Etoile shares her dad’s passion for football and is as sporty as can be. “We also enjoy travelling together; New York remains a firm favourite as we have close friends there, and we’re also very at home in Brussels, having lived there for a few years. “Now that life is so busy, our occasional trips give us the time to relax; and of course I do enjoy shopping! I know what I like when it comes to clothes, and try to find items that will suit my style and work with the other things in my wardrobe. That said, I’m also Clothing available at SARTO. willing to try new things; fashion fascinates me and I am always eager to learn about the latest trends. In fact, I really enjoyed the recent Malta Fashion Awards and was so impressed by the talented designers and their incredible collections. The Maltese fashion scene is certainly growing and I hope to lend my support to it in some tangible way. “As for the rest of ‘me’ – my own career, and my other passions like jewellery making – they are on hold right now. Looking at my life at the moment I feel so humbled by this experience – it’s a very exciting time for us. It’s a true honour to be in this position and I don’t intend to waste one minute of it. Who knows what will happen in five years’ time? But, in the meantime, I intend to do all I can to make a difference.”

MICHELLE’S I would describe my style as varied – it changes completely depending on my mood. I am equally happy dressing up for an event – wearing a cocktail dress or evening gown – as well as dressing down to spend time with my girls. My favourite designer would have to be Chanel – both her art and her life are the result of sheer determination. I believe she serves as an inspiration for all women eager to achieve their dreams. Plus, her clothes are beautiful! They’re classic, but they also have a kick.

New York will always be my favourite shopping destination. You can completely lose yourself in that city, exploring the different areas like Downtown and the Garment District. Just walking down Fifth Avenue transports you into a different world. I also love the nooks and crannies of places like China Town, where you can find completely different things from far-flung places. It’s a maze. My absolute wardrobe staple? There’s no such thing! I love to mix, match and change. I would say I’m a bag person, though, and I love jewellery too. They’re the easiest things to shop for as you don’t have to try them on. When I have some down time I enjoy swimming, especially in the sea. I try to swim every morning from May to November, and have done so consistently since I was little; we used to spend the summers in Xemxija when I was growing up, so the beach was right to hand. Now I find that morning dip keeps me going all day. If I had to pick a dream holiday destination it would be South America. I have always been intrigued by it. It feels like a place that’s there to be discovered – so many places to see and dynamic things to do. I think I need one of those famous gap years! If there is one thing that defines my character, it’s that I am a doer. THE CULTURAL Up-AND-COMERS In the run up to Valletta 2018, culture is the buzzword on everyone’s lips. Here Style on Sunday meets five young professionals who, from dance to drama and film to music, are driving our long-overdue cultural revolution. Words by CHIARA BONELLO and Jo Caruana

“We have to get our hands dirty – it’s not just about hosting a performance, but about mixing things up and bringing people together.”

M

arc Cabourdin is one of the V18 Foundation’s programme directors, as well as the artistic director for the recently opened Wignacourt Museum in Rabat. He is also a prolific actor and director. “I’d like to think that I am still developing towards my cultural highlight; there’s been a lot of hard work so far and every step has been a milestone, but there is so much still to be done. I look forward to working on the vision that will move us forward culturally, whether that’s a community project or something on a national level. “Culture can be so broad or so specific. A recent endeavour I was thrilled to be part of was When You Hear My Voice, which engaged some of Malta’s prisoners in an acting project and performance. Culture doesn’t just touch actors, directors and artists, but helps all kinds of people to see themselves in a different light. It develops one’s emotional intelligence because it opens you up to all sorts of facets. “I believe people who want to get involved really need to get out there and discover what is going on; the possibilities for learning are endless. Culture here is all about heritage, which is great, but should also be about sport, art, community and your locality. Being a cultured person doesn’t make you elitist, but it gives you a grounding of life and an awareness of what’s going on around you. “The good news is that culture is becoming more popular; people are talking about it and being inquisitive. I think our remit should be the professionalisation of culture – taking it to the next level. Education is vital and we need to get children involved at a young age so that everything becomes second nature. We have to get our hands dirty – it’s not just about hosting a performance, but about mixing things up and bringing people together. Money and infrastructure shouldn’t hold us back, and conversation should drive us. “Of course there’s no formula… but, if you fail, you can pick yourself up and try again. Trial, error, innovation and community are the pillars of culture, and we mustn’t forget that it should always be great fun, too.”

imone Spiteri is the Manoel Theatre’s drama consultant, as well as an actor, award-winning playwright and producer. We tend to put our heart and soul into something we believe in, especially in my sector, as people definitely aren’t in it for the money, but because they truly love it. “I teach at the University of Malta and privately within various schools but, in truth, I would rather be choreographing and performing. However options are very limited locally and teaching is the best way to earn one’s bread and butter. That said I do travel abroad to perform from time to time. “The local situation is improving, especially with the introduction of the BA and MA degrees at the University, as well as a separate diploma course. A national dance company, funded by the Government, is the next step.

We have a really eclectic calendar, from classics to comedy and some really good foreign acts, and we should aim to strengthen it even further. “It is also vital that such activities become a social habit in Malta. The best feeling is when I have a play on and I look out to the audience and see many faces I don’t know. Although I love having those whose opinion I value present, this means news of the play has reached a number of new people. “Valletta 2018 is admittedly important, but we must really strive to ensure that it is not simply a firework that starts and ends with the time Valletta is Capital of Culture, but lasts well beyond that. It is a great opportunity to expose local work, and I think it came at the right time, as we are on the cusp of change in terms of culture. This will give us that extra push.”

“Since our economy is tourism-based, I think the importance of culture cannot be emphasised enough. ANNE MARIE CAMILLERI PODESTÀ “I believe culture plays a significant role in our economy and should be encouraged to further contribute to its growth.”

A

nne Marie Camilleri Podestà is a harpist with the Malta Philharmonic Orchestra, she has released a solo CD, Gesti, and is a founding member of the Gukulari ensemble, which recorded two CDs of Malta-related music discovered in foreign libraries. Just like her maternal grandfather she is also an anaesthetist. “Culture really does enrich both artist and audience, and I think Malta is doing well on the cultural front; tourists are often amazed to discover the variety on offer here. I believe it plays a significant role in our economy and should be encouraged to further contribute to its growth. “Whether as a soloist or member of an ensemble, I am very involved in the local music

scene. In 2004, for instance, I represented Malta in a Gala Concert entitled ‘Welcome to the Union’, at the Konzerthaus in Vienna. I also performed Gesti’s world premiere at the World Harp Congress held in Dublin in 2005. “Along with the other members of Gukulari, I am keen to revive pieces ranging from the formal dances of the Knights of St John, to the music of the Maltese town dwellers and the ghana melodies. We feel a firm commitment to the revival of Malta’s music and musical instruments, all of which strengthen Malta’s musical identity. After all, our culture contributes so much to our strong national identity; we are blessed with being unique while still being firmly entrenched within a European identity.

“I’m pleased to say that culture in the music sector has developed significantly in recent years, especially with the upgrading of the National Orchestra to a full blown Philharmonic Orchestra. Another recent development was the Valletta International Baroque Festival, which confirmed and enhanced Valletta’s prestige. The next concert series will be in January 2014 and it is hoped that this initiative will continue over the coming years. “V18, meanwhile, provides a golden opportunity to expose Maltese culture to a much wider audience. I hope this will have a positive impact on tourism, as well as on our local population, who will be made more aware of our vast cultural heritage.”

arquis Nicholas de Piro has vivid and fond memories of his teens and 20s in the 60s. Here he shares some of his stories and photos from his private collection within Casa Rocca Piccola. “Yes things were more innocent back then, but that doesn’t mean we didn’t enjoy ourselves. We had a fantastic time! “Courting was different, certainly. You’d take a girl out with five pounds in your pocket – and she never paid for a thing, of course. First we’d go to the cinema – splashing out on the expensive seats for two shillings and six pence – followed by dinner at the Phoenicia Hotel, where Jimmy Dowling would be playing on the piano. “The meal would be stunning – beurek turque (a savoury pastry dish), followed by steak Voronoff and crêpes suzette. From there you’d head to The Griffin to dance and drink brandy and ginger ale, which was one of the most popular drinks back then.

“Dancing was taken very seriously indeed. I remember my first dance at a birthday party in Mdina – it was the tail end of rock and roll. We started the dancing with a ‘Paul Jones’ – we’d form two large circles, with the girls in the middle and the boys on the outside. When the music started we’d move in different directions round the circle and, when it stopped, we’d dance with the person across from us – no excuses! “The first girl I ever danced with was Mila Stilon and I was at a bit of a loss to know what to do; the girls always knew more than we did. But she told me to put my hand on her shoulder and to move two steps one way, and one the other… it seemed to work just fine! Then we’d do the Paul Jones again for the next dance. There was a lot of cheek-to-cheek dancing, as well as the cha cha, and the Barrel and Basket in Rabat was one of our favourite venues. We also loved Oscar Lucas and his band at the Las Vegas bar in Valletta. “Carnival was an important date in the calendar and there were so many parties to attend. But Lent was the clear cut-off point for all the celebrations. I can even remember the final ball, every Shrove Tuesday. The band would stop at midnight on the dot and I recall that that final half an hour was pretty frenetic, with all of us dancing like crazy! At midnight everything came to a close and we would all behave impeccably, marking the start of Lent. “Then there were the bachelors’ dinners – which I suppose developed into today’s bachelors’ parties. When I attended my first one, I was much younger than the others, but just about old enough to be tolerated. All the men present were unmarried – the wives didn’t like their husbands to attend – and it was quite a raucous affair. In fact it pretty much reflected the initiation ceremony that took place when you became an officer in the army. “My first one took place at Ghajn Tuffieha, where the poor victim was stripped, covered in tar and thrown into the sea! It was horrible. So, as the years went by and it was getting closer to my turn in the hot seat, I used my role as best man to change things – I suggested we focus on the food and tone things down a little! In the end they begrudgingly all agreed, but I had to keep things interesting somehow. So I arranged for a bikini-clad girl to jump out of a cake and serve champagne, but that’s as far as it went. It was quite the fitting send off for the groom-to-be and a truly memorable party to boot. “It was a wonderful time to be young.”

M

arylu Coppini is a renowned actress with decades of stage and screen successes behind her. She still treads the boards regularly, and is currently artistic director for the Malta Amateur Dramatics Club. “Back in 1964, when I was 14, I recall that we all started going to Fond Ghadir. If you were from the Sliema area, you and your school friends would hang around the ‘Gabbana’. It was where you went to chat, gossip and meet boys. “On more special occasions we would also go to the Casino Maltese in Valletta, a very popular meeting point at the time. They would host special teenage evenings, especially around Carnival. I recall there would be dancing and a band playing from 4pm to 8pm (with our parents present throughout). “We also had 'gangs' back then – mine was called the Cool Cats, although I was quite on the peripheral of it. Being in a gang simply meant that you hung out together in the same place, or organised things like hikes or trips to the cinema. The cinema was a major feature, too: at 3.45pm every Sunday afternoon everyone would descend on Bonello’s Kiosk in St Anne’s Square, Sliema, and then head to the pictures from there. There were quite a few cinemas to

choose from – the Majestic, the Alhambra, the Gaiety and the Plaza. It was a ritual, followed by a trip to Golden Harvest for a drink or coffee afterwards. Then we all went home at 8.45pm.

“As we got older, Palm Beach in Bahar ic-Caghaq was the place to go. There were also organised dances, often hosted by the university, in other venues too – such as the Phoenicia Ballroom or the building that is now the MITP Theatre in Valletta. The most popular bands back then were The Graduates and The Boys, who played whatever songs were popular in London at the time. The atmosphere was always very lively – we would jive and partner dance, and then finish with a slow ‘il ballo del mattone’. “Carnival was probably the pinnacle of the social calendar – although the August Moon Ball was incredibly special too. Throughout Carnival week groups would get together and theme their costumes, but my gang was quite impromptu. There would be prizes for the best costume, dance and float, but we just dressed up for fun. The parade was a highlight – you would join a float and then wait for your chance to dance in the main square. Finally, every evening throughout Carnival week, there would be a ball – at the Casino Maltese, the Phoenicia or the Civil Service Sports Club. “As for the fashions, I wouldn’t quite say I was a trendsetter but I always had nice clothes. After my mother died, a dear school friend of mine took me to her seamstress and I would get items made there. Back then clothes shops were a rarity and ready-towear pieces were very expensive, so it made more sense to have them made. That said, I do remember buying an outfit from Marks & Spencer for a dance at St Joseph’s School in Sliema, back when it had just opened in 1963. I also bought a pair of trousers from there when I was around 15, but when my father saw them he told me to go home and take them off immediately; trousers weren’t appropriate for girls in those years. “Looking back on the era I do feel we have lost quite a lot when it comes to our social scene. I miss the balls and the dancing, especially as people my age don’t have anywhere to dance now. Eating out is great, but our dances were truly wonderful.” o

Impressively, Audi sells over 40 different types of cars in a large variety of segments. All models are popular in their own way, as they are all the product and bearers of the prestigious Audi brand, offering the quality and reliability synonymous with the distinctive German premium marque. Perhaps it is no surprise that of the extensive range of Audi models, one of the best-selling in Europe is the A3, which comes as a three-door or five-door hatchback, the latter better known as the Sportback. The new A3 Sportback just launched by Audi looks familiar because it has all the characteristics of this prestigious marque but, beyond that familiarity, Audi has managed to come up with a fresh new look that has taken the A3 Sportback to the next gear. Yes, Audi has certainly upped the game in this segment with a car that is undeniably more masculine and sharper looking. The new model also has certain

distinctive sculptural details where light and shadows intersect to create a strong manly look. The new Sportback lives up to its name, that of a sporty hatchback, but at the same time features all the traits of a silky premium compact car, which are reflected on both the exterior and the interior of the car. We test-drove a sleek black Sportback – the 1.6 TDI Ambition (S-Tronic) and experienced what one would expect from a larger premium car – a firm but very enjoyable ride – with a lot of grip and precise steering, and a powerful engine that punches above its weight to produce 105bhp. The diesel engine we drove is subtle and unobtrusive. It very much keeps the noise to itself, yet delivers torque and pace when needed. Among a large range of engines, Audi is offering two particular models that are ideal for Malta – each producing 105bhp – the 1.6TDI

Quite frankly in view of our roads and the size of our country, both the 1.6TDI and the 1.2TFSI fit the bill perfectly and there is not the slightest hint that the car is underpowered. On the contrary, the car accelerates fast, responds quickly and handles incredibly well, as it has very smooth power delivery. The interiors and the cabin also offer a higher level of luxury than most competing models in this segment – and this is one of the main features that make the Sportback stand out. The cabin really sets the pitch… it’s luxurious, uncluttered and smooth. It is indeed very Audi. The advantages of the Sportback cannot be underestimated – it has five doors and is almost 60mm longer than the standard A3. This is enough to make an impact on the rear legroom, rendering it indeed practical and comfortable for adults. The boot is bigger too, and these two factors contribute to the Sportback being a very practical car. In fact buying the Sportback is a pragmatic move – you’re investing in a car that is sporty and on top of that you’re getting a sleek premium compact. in the GARDEN with… This is the time of year when we all embrace whatever outside space we have – whether a balcony or sprawling deck and swimming pool. Here Style on Sunday steps outdoors to discover three truly exceptional gardens, and meets the people behind them.

Robyn Pratt Originally from Australia, Robyn adores spending as much time as possible outdoors – which is why her garden and pool areas are literally an extension of the Madliena home she shares with American husband Brian, and sons Chris, James and Sebastian. PHOTOGRAPHY BY ALAN CARVILLE

We moved to Malta after over a decade in Belgium, so we were eager to enjoy the warm weather. The way we’ve structured our garden means we can really enjoy living in it – whether we’re BBQing, relaxing by the pool or entertaining friends. It’s a lived-in space. We’re a very busy family – James and Sebastian are both at school here, Chris is at university in Australia (but returns for holidays) and Brian and I both work. As a result, any down time is special and the garden gives us a place to relax altogether. Having said that, we also wanted to create individual areas so we could all have different spaces. The boys play football in the drive, Brian – a golf enthusiast – has a putting green on the first floor terrace and I enjoy reading by the pool or BBQing. Until recently, our covers and cushions out here were blue and green, but this season I fancied a change. I chose red and orange because the colour scheme really adds a touch of brightness – and even planted some red geraniums to pull it all together.

STYLE LIVING Michele O’Reilly, from The House Shop, handled the inspiration for our home both inside and out. She gave us some truly fantastic ideas and really made the most of the space. One of my favourite features is the set of wooden steps right off the kitchen, which makes the BBQ area a perfect extension of the house; in fact, we use it all year round. She also suggested the retractable pergola near the pool, which is ideal for creating shade when we want it. I run my consulting business from home and have created a get-away office for myself on the top floor of the house. The terrace up there is another space we make fantastic use of – we sunbathe or dine overlooking the incredible view. My mother, Verlie, was very green-fingered and had a beautiful garden back in Australia, which my father has tried to maintain since she passed away. I remember that she used to grow frangipani, and I was thrilled to recently find some of that in Gozo, which I am now cultivating here.

The bay trees by the pool are quite a feature and they have grown beautifully – they provide plenty of privacy and shade. We’re also very happy with the way the olive trees have come on, and got a small crop of lemons this year too. The longer you live in a house, the more you get to know it. As a result, we recently added a separate lounge and seating area by the BBQ – it gets the sun and shade at different times, which is handy. I’m sure we’ll change other things over the years, allowing the house to evolve around the needs of our family. We absolutely love entertaining and always have people round. Sometimes we start with a drink on the upstairs terrace, followed by starters down here by the BBQ. If the weather is good enough we can then dine near the pool, or go inside to the dining room if it’s too cool. It’s very flexible and we really make the most of that. As Brian and I are both involved in the hotel industry, I think we enjoy entertaining in as creative a way as possible. It’s all part of the fun.

When we bought the house the garden was more of a jungle, and we’ve made steady changes to it over the last 15 years. I believe that a garden evolves as you live with it. There's a lot of trial and error; plants that will struggle in one area of the garden will thrive in another, so we're still determining what works best where! I love colour, so that is one of my prevailing inspirations. The flowerbeds are changed several times during the year, depending on the season – we’ve got bright petunias at the moment, but before them it was stock and marigolds. I love plants that are both colourful and scented. The Brugmansia (or Angel’s Trumpet) is a favourite and I also love lavender. I try to grow these in passages so that their lovely perfume is released as you brush past.

We make use of the various spaces in different ways – bocci on the grass, kicking a ball out back and, of course, just relaxing by the pool. The ponds are two of my favourite features. The gargoyle one, at the top of the garden, has koi fish in it, while the frog pond has both real frogs and a ‘fountain’ frog. If you walk across the grass early morning you’re bound to meet a few frogs out and about…

Our two daughters, Emma and Sarah, have always been keen on horses; they take part in dressage competitions and clinics and are lucky enough to be able to keep and school their horses at home. We currently have three (and a half including Billy the Shetland pony), horses of our own, plus a friend’s staying in the stables too. Then of course there’s our three dogs too. I don’t grow very much for use in the kitchen, although I try to make sure I have herbs and I also manage quite well with lettuce! The orange and lemon trees also seem to do rather well, and last year we had a decent crop of olives too – around 150kg. I try to use the ingredients as much as I can – such as our lemons in this lemon curd cake. With four children making use of the garden, as well as their friends, it can get pretty busy! But we like it that way. It’s very relaxed, though, and we don’t plan too much – sometimes we’ll just strike up the BBQ or pop on a plate of pasta while just sitting out and enjoying each other’s company.

MAURICE MIZZI The word ‘demanding’ doesn’t even begin to describe Maurice’s schedule, so his extensive gardens provide a muchneeded sanctuary to escape to over the weekend, where he can indulge his passion for all things horticulture-related. PHOTOGRAPHY BY TONIO LOMBARDI

Back in 1976 this house belonged to Sarah Bowes-Lyon, cousin to the British Queen Mother, and her husband, Peter Ryder. When their daughter Sandy was on holiday in Malta I would take her out. I loved this house and would joke with Peter that I’d buy it if they were looking to sell. Around three months later Peter called me to ask whether my offer had been made in jest, which it had. Nevertheless, as I had long been looking for something of the sort, he invited me for lunch and we settled on a price! The gardens were a main attraction for me, as my mother was a gardener and I have always enjoyed pottering round the garden. I immediately commissioned horticulturist Sir Harold Hillier to plan the gardens and invited him to stay for a week. Once on the subject of gardens, he simply never stopped talking. I wanted to expand the gardens, which I did. Today they are double the size they were back in 1976. I’m also into intensive planting, crafting the ambience of a small jungle.

At the time I didn't have enough knowledge of what plants to grow, I planted those I thought would survive in Malta. According to the US Agriculture Department Malta is in ‘Zone 10’, which means that Australian, South African and Californian plants thrive in our climate.

This is truly the best climate, as beautiful vibrant flowers, such as delonix, viburnum and pyracantha flourish here. Horticulturalists from abroad visit these gardens and say they’ve never seen some of these trees I have here. Hopefully the garden will live on, long after I’ve departed for the garden in heaven. As it is I will open the gardens to groups of 20 people or more, if I am asked to. Unfortunately the time I have in my gardens is limited, as I’m still very active in the business world. I love spending time here with the gardener on Saturdays, as I truly believe it keeps me healthy. I would love to have more time here, as I find it extremely therapeutic, balancing out the stressful business aspect of my life. One of my favourite spots is right here, this bench, as from here I can see farmers as they go about their work, but I can’t hear a thing. The pergola inside, where we sometimes have lunch, is another favourite spot. The two phoenix statues, symbolising happiness, and a tortoise, the symbol of longevity, are my favourite items in the gardens. I brought them back from the Marble Mountains in Vietnam. I bought them because I wanted to help the Vietnamese there, and I’m glad I did. My favourite tree is the Jacaranda. There are 20 of these trees growing in Plaza del Mayo, Buenos Aires, Argentina. The Flame Tree, with its strong, vivid colours, is another favourite. We are so lucky to be able to grow semi-tropical and tropical trees here. They have such beautiful flowers. o

Pan-Fried Grey Bass

With Lobster set on Ratatouille, Vegetables and a Herb Salad - Serves 4 Ingredients: 1 filleted grey bass; 1 lobster; 150g aubergines; 150g zucchini; 150g red pepper; 200ml tomato sauce; 150g onions; 2 peeled potatoes; 60g cherry tomatoes; 5g fresh mint; 5g fresh parsley; 60g fresh basil; 5g fresh chives; Basil oil (see recipe below); 30ml extra virgin oil To make the basil oil, blanch around 20g of the basil leaves in boiling water for 30 seconds, add ice and then drain well. Add this to the olive oil and blend in a food processor, then pass the mixture through a fine sieve. Add salt to taste. To make the ratatouille, chop the aubergines, onions, zucchini and peppers into cubes, and fry in a hot pan until tender. Add the tomato sauce and 30g of the chopped basil, and season accordingly. To cook the lobster, heat a pan, add a dash of oil and pan-fry the meat. Move to a hot oven and cook for a further 10 minutes. Cool, then slice in half. Clean the head. Next, arrange the herb salad, creating a mix from all the herbs you have. Finally put it all together: start by frying the grey bass in a hot pan with a drizzle of olive oil. Place the ratatouille on the plate and put the lobster on top, adding the cooked fish fillet above that. Lastly, add the potatoes (which can be cooked to your liking – here we have boiled them) and cherry tomatoes, and dress with the basil oil.

Classic Moules Marinière - Serves 4 Ingredients: 1kg black shell mussels; 50g onions; 20ml olive oil; 1 clove of garlic; 50ml white wine; 50ml fresh cream; salt and pepper; 5g chopped parsley; 5g chopped mint; 5g chopped chives In a hot pan, fry the onions and garlic in the olive oil. Add the mussels and cover with a lid, allowing the mussels to cook and open. Pour in the wine and reduce the heat by half, then add the cream and reduce the heat even further. Finally add the chopped herbs and seasoning, and serve with warm bread rolls.

Grilled Salmon

With Sundried Tomatoes, Brandade Potatoes and a Petit Salad - Serves 2 Ingredients: 400g salmon fillet; 200g potatoes; 20g sun-dried tomatoes; 15g fresh parsley; 1 onion; 30ml olive oil; 100g carrots; 100g zucchini; Salt and pepper To make the Brandade potatoes, wash, peel and re-wash the potatoes. Cut them into cubes and boil in salted water until tender. Then, finely slice the onion, chop the sun-dried tomatoes and fry; add the potatoes and chopped parsley to the mixture. Next, slice the salmon into steaks and add four incisions with a knife – season with salt and pepper. Grill the fish on a hot grill pan for four minutes on each side. Wash the carrots and zucchini, and cut into strips, then boil in salted water. In a round mould, add the potato mixture and place on one side of the plate. Finally, put the grilled salmon on the other side of the plate and add the vegetables. Dress with olive oil and a little salad.
